The washed-rind variety, which ages 3-4 months, has a brevi bacteria growing on the outside. With its orange-red color, the bacteria add a strong pungency to the cheese. “I’m going to try to keep it so it’s not
too pungent,” Malling said. “You can control that by the way you age it. I’m looking at the milder end, but the inside is going to be nice, semi-firm and creamy, and the outside will have some earthiness and pungency to it.” Malling is also making mold-ripened cheese. A white mold will grow on the

A familiar face to many, Linda Reynaud of Felt is the newest edition to the TVN team, and the staff is excited to have her on board. “With our staff being so limited I wanted to make sure to hire someone we could trust, who really cares about doing a great job, and Linda was that person,” TVN Publisher Scott Anderson said. “Ever since starting at the TVN a few months ago, I have come to find out, through the community, that our circulation and billing has been one of our weak points,” Anderson said. “Decisions and changes have been
made to correct these issues, and I have no doubt Linda is the perfect choice for the circulation manager position.” Reynaud is a mother of two, a wife and a nine-year Linda Reynaud Valley resident. Originally from Virginia, Reynaud has a master’s in industrial psychology from George Mason University, and she has an undergraduate degree from James

Art and longboards: Valley residents combine passions Kate Reynolds Yaskot TVN Contributing Writer Kody Remala, 23, has loved longboarding since he was in high school and recently formed a new business that combines the art of making a longboard with the actual artwork of artists here in Teton Valley and other western states. A former Teton Valley resident, Remala has teamed up with some of his friends in the Valley and around the west to make oneof-a-kind longboards. He said that the Web site of his company, jahloveproductions. com, is being built by Matt Prindle, and his friend Katie Evans, an artist in Victor, has been helping him connect with other artists
