Q: Congratulations on the brand new club opening in Las Vegas! How will this club stand out among the other famous clubs and bars in the exciting nightlife scene of Las Vegas? Neil Moffitt: All of our venues are strategically crafted to fit the market they are in. Over the years, the industry has seen changes including redevelopments, and now guests are searching for more options and variety in their nightlife experience. OMNIA will look to bring stateof-the-art technology alongside an opulent and glamorous, yet still approachable environment for each of our guests — a first of its kind in Las Vegas. Q: Is this strictly a nightclub that is only open late-night, or will there be dining and other events that take place? NM: While OMNIA is strictly a nightlife destination, we’ll soon be opening Searsucker Las Vegas this spring alongside celebrity chef Brian Malarkey. Searsucker will be located directly next door to OMNIA at Caesars Palace, where guests can enjoy dinner before heading to OMNIA. Q: What kind of music will OMNIA feature? NM: We are lucky to work with an incredible roster of top-tier, worldrenowned artists. OMNIA is an extremely versatile venue that truly enhances a wide variety of music genres and entertainment formats. You can look forward to seeing resident artists such as Calvin Harris, Afrojack, Armin van Buuren, Krewella, Martin Garrix and NERVO at OMNIA Las Vegas. Q: Is this first of many new locations for OMNIA? Could you possibly be looking for a Los Angeles location? NM: OMNIA has been designed to withstand trends and to translate into many different markets, so expansion is something we look forward to when the timing is right. pon your arrival at Drai’s Beach Club and Nightclub, you are greeted by a vast dance floor surrounded by two tiers of VIP booths decorated in hot pink and black patent leather. Overhead hangs a colossal sphere, encompassed in LED lights that seem to steal the show, making your eyes helplessly drawn to it. As you continue walking across the venue, ahead are the elongated pools, surrounded by dual tiered cabanas and palm trees, transplanting you somewhere tropical; you forget you are 11 floors up from the infamous Las Vegas Strip. I was formally introduced to Ryan Craig, a managing partner at Drai’s, as he walked up the stairs to greet me surrounded by an entourage. When it comes to the nightlife industry, an industry he has been in for over a decade, RMC (as they call him in this town), knows the ins and outs of everything there is to know about this wild city. Q: How did you end up in Las Vegas and when did you realize you wanted to be a part of this nightlife industry? Ryan Craig: I came out here over 12 years ago with my buddy. We packed up a U-Haul and headed out here with nothing. I was going to school playing soccer and one night I was walking around and saw this spot called Tabu. It isn’t open anymore, but it was a place in the MGM. There were well dressed men and beautiful girls;

everyone was waiting to get in there, and I thought it would be fun to work at a place like that. I waited until they closed around 4am (I had soccer practice at 6am), and I started talking to the guys that worked there. They told me about a few people who I should know, and I did everything I could to get in contact with them. I eventually got hired for the graveyard shift at a minimum wage job off The Strip in order to meet the people I needed to, and then when I finally turned 21, I was able to work anywhere I wanted. Q: Where did you start and how did you end up in the position you are in now? RC: I started as a busser at Tabu on my 21st birthday, and within a year, I became a door host — the youngest in the city. When the Wynn NATIVE KNOWLEDGE: They have a full kitchen at the Beach Club and provide an exclusive offer for their guests paying a large sum of money, where they will do a four-course dinner in the rotunda area. No nightclub does that in Las Vegas!
opened up, I went over there, and I was there for 9 years. They didn’t have a “host” position, so even though I left Tabu as a door host, I went back down to a busser at the Wynn. Within 3 days of being there, I met with the executive vice president, and they created the host
position for me. They eventually closed the nightclub because it wasn’t doing very well, and during that transition of Victor Drai coming in, I asked him and his management team he brought over to keep me on as the host. I told him, “If you keep me on, I promise I will be the top host here.” And then I was. From there, I went to a manager, to assistant director, to director of the clubs there and then I left about a year and a half ago to be a partner at Drai’s. Q: When the concept of Drai’s was being discussed, did you have a large input in how Drai’s was going to be set up and in its overall concept? RC: I would say Victor did the majority of the design. Brian and Joe, the other two operating partners, who I have also known for over a decade, along with myself, probably had 10 percent of figuring out the details. Whether it was where to put the stage, the height of the tables, or where to put the lighting, there were a million different things involved, and we applied our knowledge from our different experiences. We each brought something to the table. We wanted to take all of our favorite things from the different nightclubs we have seen around the world and bring them here. Q: How is Drai’s different from the other Las Vegas nightclubs, and what makes this venue so special? RC: Number one is the gorgeous view. More of the educated consumer cares about the view; I don’t think the 21-yearold bachelorette party cares too much about it after they take that one photo. What we think when we open nightclubs is that everyone wants to be closest to the DJ, but what we found out is that, yes, half of everyone does want to be close to the DJ, but the other half wants to be outside looking at Las Vegas Boulevard. We manage the club appropriately to provide the best of both worlds.

Q: When it comes to flying charter planes,

They don’t even have to request it, we just know! Some people have special dietary needs, and we’ll know that on this flight, everything has to be gluten-free. That even means gluten-free vodka. We have it down to a wellequipped science—tailored specifically to their likes, wishes and wants. Q: When it comes to STAjets, are there some unique features travelers can experience? wo sisters with a vision of producing dance music dropped out of university to pursue their dream. Mim and Liv Nervo went from hustling to songwriting, to becoming household names in the dance music scene, performing all over the world with numerous headliners like Kaskade and Steve Aoki. As they continue hustling, NERVO is making a permanent name for themselves as the top female DJ duo in today’s house movement. With their busy touring schedule, they were able to take a little time to answer a few of our questions about their exciting career, and how it has progressed from the beginning. Q: When did you both realize you wanted to be dance music artists writing your own songs, rather than songwriters for other dance music artists? NERVO: Originally, the goal was to write for other people, but then after a few years, we wanted to make music that spoke to us, so that is why we started releasing our own tracks under NERVO. Once we released music under NERVO, we found a whole new energy. It was incredible to be able to speak directly to

our fans through social media. They inspired us to keep making better tracks, and, of course, we also loved our newfound touring life. There’s no better buzz than playing your own records in front of a crazy crowd. Q: Was dance music and songwriting always your passion? N: We always had a passion for music and knew we wanted somehow to end up doing music for a living. We did what most kids who like music do, which is drop out of university to follow a dream. We hustled and hustled until someone took notice, and we’re still hustling now. We’re very thankful that we are here today living our dream. Q: When was your first major show and who was it with? N: One of the first major shows was Electric Zoo 2011. We remember we were really nervous! It was one of the first festivals we were playing main stage and we debuted one of our singles “Reason,” which then went on to be our first ever Beatport #1. Q: What does your upcoming show lineup look like? N: We don’t always know ahead of time who we
will be playing with, but we just played Electric Daisy Carnival Puerto Rico with Steve Aoki, Kaskade, Bassnectar, and DVBBS. We have a bunch of summer Ibiza shows coming up with David Guetta at Ushuaia, which are always fun. Q: How did #NERVOnation start? N: It was the name we came up with for our radio show that started with Sirius in the US and then went on to be syndicated to about 60 countries around the world. Q: How does it feel to be chosen as a resident for OMNIA? N: Vegas is amazing, and it’s always growing. It‘s a super fun city with a real love for house music and partying in general. OMNIA has new technology that no other club has. We’re super excited to be starting a residency there this year! Q: What is the next step for NERVO? N: We will keep touring and getting back in the studio to work on the music we love. We’re already starting to think about album two, and this album hasn’t even been released yet!

ormer UFC Light Heavyweight Champion Forrest Griffin is enjoying what life has to offer now that he has retired from UFC. Forrest is the first winner of “The Ultimate Fighter,” and the only guy to go on and become a champion. With two published books, Griffin continues living in Las Vegas with his wife and daughter. Q: What’s different about your life from when you were training and fighting every day to your normal day now? Forrest Griffin: I get to eat a lot more, but I hate working out less! Q: I looked online, and it said that you wrote a book, “A Survival Guide to the Apocalypse.” Can you tell me about that? FG: Yeah, I wrote two books. I wrote a couple books because I know important things, and I wanted to share it with people. I have cool stories. I tell them to everybody. Q: Do you see yourself living the rest of your life in Las Vegas? FG: I don’t have any plans to leave. I don’t think my wife and I ever thought we’d end up here or that our daughter would grow up here, but you know, I just can’t think of anywhere better to go. And UFC’s here, and I love that ... so why would I leave? Q: Do you spend any time on The Strip? Do you go to the nightclubs or pool parties? FG: No, I don’t go to

nightclubs or pool parties. Sometimes, I’ll actually go to a nightclub after a UFC event if UFC’s having an after party, but I like to go to bed around midnight. My mom told me nothing good ever happens past midnight, and I believe her. All you do is get into trouble. Q: Who’s your favorite guy to watch? FG: There’re so many. That’s tough. I love watching Frankie Edgar, just because he’s such a tremendous heart and has tremendous inner strength. I like watching Cub Swanson a lot, too. Q: What advice would you give to guys starting out that want to get into this sport? FG: Be very athletic. Practice very hard. Be good at it. It’s not a great sport to do if you’re not good. Does that make sense? Q: You’ve got millions of fans on social media. Are you pretty active on it? FG: I tweet just enough to get myself in trouble. I got that going for me. Q: If somebody was coming to Las Vegas and they were coming to have a good time, what advice would you give them? FG: Bring your checkbook. Come with money. Leave with good memories. Las Vegas is a pretty cool place, and nobody’s really trying to give you a hard time. Make sure you pay for whatever you break.

when we are posting things and relating to our guests. When I say social media, it’s not just Facebook or Twitter, but the review sites as well. A lot of times people recommend something or have a critique, and we will take it to heart. We read every single one, and we actually have people to ensure that if we make a mistake, we make sure we don’t do it again. If there’s a service we can consider, we will. Q: How does Trump International Hotel Las Vegas keep in mind its guests and provide the best? JD: When I give tours of the property, no one says anything but “wow” when they walk into the room. They are meant to impress, and they do. I think this building is a good example, and we see that the Trump standard has been incorporated into this town. The outside of the building is very Vegas. It’s gold and has the Trump marquee at the top, which a lot of the properties have, but it still has that sophistication when you are coming here, so if that’s what you like, or that’s what you’re used to, it’s going to feel like home.
Q: How involved was the Trump family when it came to the amazing décor and details? JD: The Trump family are builders and developers. My experience here is that they are incredibly involved in every aspect of the design and are very hands on. They have specific ultra-high standards about the way they want everything to be. Overwhelmingly, that is a very positive response from the guests.

His business partner in that venture introduced him to Andrea Hulihan of Belizean Bronze, and she showed him her new line of amazing products for men. He loved the line so much that he jokingly suggested she name it “Stellar,” after him. It wasn’t long before they were having meetings, and he was testing new products for the line. The next thing they knew, “Stellar” was a go, and now he’s the face and brand ambassador of the line. Q: Tell us about this new line. Dave Stellar: The “Stellar” line actually consists of several all-natural products for the face and body. I love the body scrub and face oils. For any man that takes good care of his skin, these products are perfect. Q: What makes it special? DS: The quality. Our products are handmade with natural, organic

Giada De Laurentiis: It’s the perfect example of “right place, right time.” I always said, “When I see the space, I will know.” And I knew right away that The Cromwell was the place for me. I mean, the view of the fountains ... come on! I am a huge believer in timing. I was nervous, of course, but the time was right. Then you have the added element of Vegas being a crossroad for so many people from all over the world. So, having a restaurant right on the corner of that crossroad, where I could reach so many of my fans, made a lot of sense to me. It just felt right. Q: How did your partnership with The Cromwell come together? GL: In short, we had a parallel vision for what we wanted to bring to
The Strip. They wanted to bring a more specialized, boutique experience to the hotel scene, which was currently dominated by these massive, towering casinos; each one bigger than the next. And I wanted to bring a feminine touch to the food scene that was currently dominated by these great, heavy hitting male chefs — seemed like a fit! Q: GIADA offers an array of beautiful and unique features, from the amazing view of The Strip to an antipasto station. What else can we expect to enjoy while dining at GIADA? GL: Hopefully everything! Hand-crafted cocktails (and mocktails) inspired by my grandfather’s movies, fresh pasta made in-house every day, a wood burning pizza oven we brought in from Italy, a brand new (semi) private dining room we just opened which has its own balcony, the little photo booth in the lobby ... yeah, hopefully everything! Q: In organizing your menu, was it based off a signature Italian favorite

or was it a collection of great eats that you wanted to incorporate? GL: My approach was more about taking a combination of my classics, family recipes and dishes I knew were fan favorites and giving them an elevated twist. So, it’s still authentic to what my style of cooking is all about, but becomes more of an experience. Q: Opening a new restaurant, especially in Las Vegas, has to be both challenging and exciting at the same time. What did you do to make this process fun and see that your vision came to life? GL: I love going off The Strip and exploring all the places the locals go — finding little spots tucked away from the lights of The Strip. But I also love taking advantage of so many awesome shows in town! It’s never-ending.
Q: What has been the biggest thing you’ve learned about yourself during this process? GL: My biggest critic is me. My biggest fan is me. Both are equally important. The kitchen is all about balance — trusting your instincts, demanding the best of yourself, and expecting the worst case scenarios (kitchen drama). That way you are prepared. And, much like a new mother, a few sleepless nights. Q: I can’t imagine you will be slowing down anytime soon. Are there any new exciting plans in the works? What’s next for Giada De Laurentiis? GL: There are plans, and plans to make plans. I am super grateful to be so blessed with opportunities. But, if I told you what they were or what comes next, it wouldn’t be a surprise. And where’s the fun in that for me?

Billy Richardson: No, it doesn’t get easier, especially when you are coming up with new concepts. It’s a lot harder, especially sitting around and coming up with a concept for a pizza place and keeping in mind that everyone likes a certain kind of pizza. You have to figure out the market that you want to do. Everyone thinks just because you are on The Strip, you are going to have business all the time. This is true,
but if you don’t put a good product out, then people won’t come, unless you are a big chain that everyone knows about or is used to. When you are opening up a new place, no one has ever heard of you and you have to go off your reputation and knowledge of the market and see what they want.
every kid loves cheese pizza. The thing that we try to do is have people try things they are not used to trying, such as doing a charcuterie board with meats and cheeses on it, to trying the Bianca pizza — a white pizza which you wouldn’t get at your normal pizza place in your town.
Q: Did you always know The LINQ would be the spot to open Flour & Barley? BR: It’s something new for Las Vegas, such as having an open mall that doesn’t have a bunch of slot machines running, plus an iconic wheel at the end which has now changed the skyline of Las Vegas. You notice that throughout the years, the skyline changes with buildings coming up and buildings going down. So now you have this big observation wheel, and it’s nice. I was just talking to the chef, and when you sit outside, you don’t feel like you’re in Las Vegas because there’s not all that noise of being in Las Vegas. It’s actually nice out, not too cold or too hot.
Q: What do feel makes brick oven pizza better than the rest? BR: It’s an even cooking surface on the bottom with the temperature at a constant because you are always stoking the fire. You get this nice wood aroma coming through the pizza, and it’s very quick and easy. It’s not just coming out of one of those baker ovens. Everything is not uniform and doesn’t look the same, and it’s quick.
Q: For those visiting Flour & Barley for the first time, what do you hope they leave with in regards to experience? BR: We are affordable, and anyone can come! Mom and Dad can come and have a nice meal with some adult beverages, as well as the kids can come. We have cheese pizza, and
Q: At this time are there any new plans for future projects? BR: We are going to expand to Southern California with our Holsteins brand from Cosmopolitan, which will be opening sometime at the end of 2015. We are excited about that! We are working on expanding Flour & Barley, taking it to Southern California as well. We are very excited to expand these two concepts. It will be our first time leaving Nevada and trying somewhere else. We will be in Orange County, which will be our first one.

XS Nightclub at the Wynn is known for its extravagant drinks with the matching extravagant price. For their most expensive cocktail, XS wanted to create a beverage that was exclusive, exorbitant and a combination that would please every palate. Their collaboration on this cocktail was between the Operation Managers and the Southern Wine and Spirits Mixologist, Francesco Lafranconi, producing a $10,000 cocktail that comes with more than just the expensive spirit. They named this cocktail the Ono Cocktail using the rare Louis XIII Black Pearl cognac, which is made by Remy Martin. With it, they combined Charles Heidsieck 1981 Champagne Charlie, fresh squeezed orange juice, apricot puree and Sence rose nectar. This ornamental drink is mixed tableside and poured into two signature Baccarat glasses, meant to be a gift for the guest, letting them keep the gold-rimmed glasses as a thank you. After the drink is mixed and topped with the decadent Champagne, they leave the bottle of the 1981 Champagne Charlie for you to enjoy. Along with the Champagne, they gift you men’s sterling silver cufflinks adorned with a stingray and the raised XS logo
along with a woman’s 18K white gold necklace, with a black pearl pendant and XS logo, to create a lasting memory with a special keepsake. When a person orders the Ono Cocktail, everybody in the room knows it; that person is given the Louis XIII service ritual. The bottle of Louis XIII Black Pearl cognac is brought out on a red throne by four individuals, as music, specially made for this event, begins to play. Sparklers, lights and confetti begin to make way for the celebration. If that wasn’t enough to capture people’s attention, the entire production is also shown on a giant screen, so everyone can lay eyes on this spectacular parade. Although this item is incredibly special, it is always available to be ordered. The majority of people who order this $10,000 libation are those that are celebrating a business venture, a man wanting to impress a woman, or that lucky gambler that just hit it big. The collaborators did exactly what they intended, creating an exclusionary beverage, as XS is the only one of its kind in Las Vegas creating this style and presentation.

When you walk into Nobu, you can’t help but stare at the design and architecture. The smooth shapes, booths designed after wicker baskets, and dim lighting make you instantly drawn into this bar, sushi lounge and fine dining restaurant located in Caesars Palace. The elongated bar is the statement piece; the first thing you see as you walk in, with people lined up tasting wine, and the craft cocktails brought to you by the swanky bartenders. It’s the perfect place to sit and wait for your reservation time. The one item you must ask about is their Monkfish Pâté with Caviar, also called Karashi Su Miso, in Japanese. Karashi is Japanese mustard; su means vinegar and, of course, miso is the sauce they use. For this dish, they clean the liver with sake, cure it with salt, roll it out to shape it into its final round shape, and steam it, creating an indulgent, creamy plate. It is finished with green onions, fried shiso leaf (Japanese mint leaf), and Yama momo (mountain peach from Japan). It is served on a crisp white plate and topped with Osetra Caviar, for the finishing, fancy touch.

hef Jermaine Jonas grew up in the West Indies, where he would see where his food was truly from and how it was being made. Here in the United States, we often forget that creating thoughtful, healthy food is crucial for nourishing our bodies. Now a transplant from the Big Apple, Chef Jermaine is leading Juice NV in the Vegas raw food movement. He creates numerous juice and smoothie concoctions filled with superfoods and organic fruits and vegetables, along with raw organic food items — feeding the public with conscious, thoughtful cuisine. Focusing on seasonal organics, you will always get the freshest beverage or food item, with the menu items changing depending on the time of year. Q: What made you want to open up the Juice NV concept? Jermaine Jonas: Juice NV is a collaboration between myself and my partners to offer a place for people to come replenish and rejuvenate themselves from all of the excesses of Las Vegas. Q: How long have you been juicing/eating raw foods? JJ: I have been juicing for over 15 years and have been a vegan for 20 years. I grew up with many different food allergies and found that eating this way, along
with consuming whole, unprocessed foods was the best thing for my health. Q: What are the health benefits? JJ: The main health benefits of this type of eating and lifestyle are to give your digestive system a break while capturing the enzymes that some say are the building blocks of life. Enzymes and other nutrients in food are usually destroyed by cooking them. Q: What would you consider the healthiest and most necessary superfood? JJ: The most important superfood is a tough question, but I would say my favorite would have to be avocado, which is a superfood and also a source of good cholesterol. Q: If you were stranded on a desert island and could take one superfood with you, what would it be? JJ: The coconut. It provides water, you can eat it, and you can make tools and build shelter with it. It also has antibacterial properties and is the closest thing to your blood plasma. Q: What are the most popular juices, smoothies and raw food items? JJ: Our most popular drink changes by season. During the spring and summer months, it’s our Unicorn’s Blood (pineapple, watermelon, lemon and ginger). And during the fall/winter
months it’s the Beets by Waits (carrot, apple, beets and lemon). The most popular smoothie is our Maca’s Paradise (banana, pineapple, almond milk, ginger, coconut oil, maca and maple syrup). Maca is a Peruvian superfood that is known for its energizing and mood enchanting qualities. As for food items, I would say that our Avocado Pesto Sandwich (toasted sprouted grain bread, a rich walnut pesto, arugula, avocado, and micro greens) is the customer favorite. Q: How do you prepare your gourmet raw food items? JJ: We prepare our gourmet raw food items by first choosing only the finest quality organic fruits and vegetables. We also incorporate every superfood you can think of: cacao, acai powder, dates and chia seeds, along with our carefully selected seeds and nuts, which are Brazil nuts, hemp seeds and pistachios. Q: What are the benefits from doing a juice cleanse? JJ: Juice cleanses give your digestive system a break. he new LINQ Hotel & Casino boasts modernism, attracting those who want to experience something new and innovative. The lobby bar, Bar 3535, feeds into this same idea, being the first infusion bar on the Las Vegas Strip. As you walk through the lobby past the gaming, there is a large, circular centerpiece in the middle of the bar that constantly changes colors, reminiscent of a tree that holds multi-colored bottles filled with your favorite spirits. The music is Top 40 mixed in with House, creating that “party vibe” we all seek when we come to Las Vegas. Bar 3535 hopes to change your mind when it comes to ordering that vodka soda, and broaden your horizons, figuring out your profile and customizing a drink that fits your needs, incorporating their house made infused spirits. The Beverage Operations Manager, TJ McNally, walked me through their concept and what it takes to be the best (and only) infusion bar on The Strip. Q: How did you get into the position you are in today with The LINQ Hotel and Bar 3535? TJ McNally: I have been in the business for about 15 years, from nightclubs to bars and entering the casino world in 2007. I have been in Las Vegas for about 2 years now, and I got lucky and ended
up here as the Beverage Operations Manager. Q: What was the idea behind creating Bar 3535? TM: We wanted to create a new experience for Las Vegas, something that nobody was doing. At the time we were actually opening up and planning Bar 3535, I was in Boston, so it was a lot of phone calls trying to collaborate on different ideas to create this drink menu. Q: What exactly is an “Infusion Bar”? TM: Bar 3535 is all about creating different flavors that are unique and odd, yet appealing to the guest, making them want to try something different rather than ordering a vodka soda. We like to create the unexpected, whether it is our Skittles infused vodka, vanilla bean infused rum or espresso infused whiskey. We enjoy making an unforgettable experience from start to finish. Q: What was the first infusion you came up with for the Bar 3535 drink menu? TM: Our first infusion was for our Thin Mint cocktail, which tastes just like the Girl Scout cookie. We take mint Oreos and chop them up very fine, put the crumbles in a large carafe along with vodka and let it soak, tasting it, of course, to perfect the flavor. We wanted to do a twist on the classic Grasshopper cocktail, so we added crème de
menthe, crème de cocoa, and regular cream. We shake it up and strain it into a martini glass rimmed with crushed Oreo cookies. Q: What made you realize you wanted to be in this industry and create these kind of infusions? TM: I love dealing with people. There is so much one-on-one action with guests — a lot of talking and different conversations that come up. When it is a guest sitting at the bar, and they want you to make them a drink, you can ask what their profile is and create a one of a kind beverage for them. Last week I asked a woman at the pool what she would like to drink, and she said, “I don’t know. Make me a drink.” I asked her what her profile was and was able to go behind the bar and make a cocktail she loved. Q: Where do you source your ingredients? TM: We utilize Squeezed, our fresh juice bar we have here at The LINQ. Everything is fresh squeezed every day and extremely fresh, so it is easy to go over there and have them juice us fresh juice to use in our cocktails or utilize the fresh fruit they get to make our purees and syrups.
