I don't think we're the same person all our lives.” —Steven Spielberg As I get older, "Happy New Year” has taken on a new meaning for me, like so many things in my life. It seems the only way for me to become clearer and more awake to the impermanence of life and the opportunity it provides is to live longer. You could see this as kind of a cruel joke, a life that only allows us to gain wisdom while losing life's breath. I choose to see it differently. Wisdom presents itself only when you are capable of doing something with it. “Happy New Year” to me means "Happy there is more time to create, inspire, shop, travel and eat.” This first issue of 2018 assumes the latter understanding of “Happy New Year.” Our wonderfully creative and fabulous team has resolved to challenge your beliefs of what is available in Orange County. To inspire you to eat better, live better and experience new and more things

than you did this past year; to leave your comfort zone. To align with our goals, we have changed the names of our mini-magazines within our publication to Foodie, Shoppe, Alive and Escape. If you got a new Fitbit this holiday season, please take a second and strap it on because the calorieburning, drool-inducing pages of our first "Foodie" section are sure to get your heart racing. If our Foodie issue is too big to complete in one sitting, may I suggest starting with how the OC Burrito Project is helping fight hunger in Santa Ana (p. 126), an interview with local culinary legend David Wilhelm (p. 86), our guide to the burgeoning OC beer scene (p. 116), our massive first "Foodie" guide (p. 69) and take a doggie bag for the rest when you have more time to digest. ....and I mean this. C’mon, I know you know how the song goes: “Sistah, Sistah! Never knew how I missed ya. Now that everybody knows, I ain't ever gonna let you gooooo.” I remember my sister and I growing up literally LOL-ing at the comedic episodes. We secretly wished we were twins so we could switch places when we didn’t study for a big test.

My conversation with Tia Mowry-Hardrict flowed organically over lunch at Il Tramezzino in Studio City; it was like we were old gal-pals. We talked about her newly announced pregnancy, how sometimes she forgets that she’s famous, our personal health journeys and her undying love for food. Towards the end of our conversation, after we’d finished our paninis, she peers outside to a nearby table, “Oh my god, I didn’t know they had chips here! Are those salt and pepper?” she gasped and her eyes became wide looking at the pesto sauce that accompanied them. She stopped mid-sentence to raise her hand at the waiter as if we were in a classroom. “I just want some chips, girl,” she says rubbing her belly and shaking her head. “That’s the hardest part, when you see a craving, you will cry if you don’t get it. I’m so serious.” We shared yet another laugh. Besides salty chips, I also learned that she loves a lot of other things, too. She loves throwing down in the kitchen. She loves her hubby of almost 10 years. She loves her parents and siblings. She loves fashion. And I know these things because she used the word “love” almost 100 times in our two-hour interview.

With a baby on the way, a new film set to release and her YouTube channel getting off the ground, change is coming soon for Tia. But, we know she’ll be ready for it all. “Change is a beautiful thing,” she says. “It can be scary, but it’s a beautiful thing.”

In the midst of the bustling holidays, it’s important to keep your hair in good condition—just in case there’s a holiday event to attend. That’s where owner Alli Hayes and her team at Waylon Salon & Boutique come in. Nestled in La Jolla, Waylon is the perfect place for a classy, chic and trendy hairstyle. Loved and cherished by their community, the staff at Waylon is ready to take on any hairstyling need that may come their way. Waylon Salon & Boutique offers quite a few services like extensions, hair coloring, men’s styles, smoothing treatments and even teaches clients how to take care of their own hair as well. Hayes, who has been a part of the hair industry for over 15 years, shared some of her top tips for gorgeous, healthy hair.

Without a doubt, one of the most important aspects of hair care is conditioning. “Ask anyone who has met me, and they will tell you that I always preach about using leave-in conditioner. It works and keeps your hair healthy,” said Hayes. Leave-in conditioner helps to keep your hair detangled, and protects it from dryness. It also gives your hair that smooth and silky look everyone desires.

Hayes adds, “It is important, it is necessary, leave-in conditioner will work miracles in your hair.” Although leave-in conditioner is an essential step for personal hair care, it is equally important to have a deep conditioning treatment every once in awhile. “Always condition your hair. I’m not kidding, it works. Sometimes people wonder if it’s necessary and I just tell them that conditioning their hair is the one thing that will keep their hair healthy and give them that glossy look,” she says. Partaking in a deep conditioning treatment adds life to your hair and protects it from damage. “We offer a deep conditioning at Waylon, but we also explain how to properly carry out the process at home.” Last, but certainly not least, is remembering to keep the integrity of the hair intact. “As a stylist, I will never do something that will push a client’s hair too far. I do not want to damage a person’s hair in exchange for achieving a certain look,” explained Hayes. Whether a client wants a specific haircut or even if they’re thinking of giving unicorn hair a try, Hayes and her team will make sure that the client leaves with beautiful, healthy hair.

Marc Mendoza: When Smoqued owner and resident king of the Q, Mike Hernandez, explained to me his idea of ‘California BBQ’ I was instantly on board. He said he loved California because of how much of a melting pot it is. Q: What tips do you have for cooking with meat? MM: Be brave and don't overcook your meat! People seem to have a fear of their meats being under-cooked. Just remember, even when you take your steak or chicken off the heat it is going to continue cooking. Q: What's your favorite carnivore dish and why? MM: A no-frills, perfectly cooked tri-tip, no sauce, no seasoning (other than a bit of salt and pepper) with some garlicky mashed potatoes and whiskey.

Tony Monaco: The name The Blind Pig is related to our cocktail program. ‘Blind pig’ is what they used to call speakeasies back during the prohibition era. The operator would charge the patron to see an attraction, such as a pig, and provide a complimentary drink to circumvent the law. We used the name The Blind Pig to pay tribute to that era and bring back the passion for classic craft cocktails as they were done then. Q: How did you get started in the restaurant industry?

TM: I did some hospitality work in Las Vegas for a short period of time for the various clubs at The Hard Rock Casino during the summers of my college years. Back then, I knew I wanted to be in the hospitality industry, and at the time, I was leaning more towards nightlife. The stars aligned, and we ended up having an opportunity to open The Blind Pig. I definitely jumped into it with very little experience and relied on the amazing people I hired and family friends within the industry to help guide me on the way. After four years, I'm happy to say it has been a success and we are in the process of opening a

second Blind Pig in Yorba Linda. I’ve been very blessed to be surrounded by an amazing staff whose knowledge and input has been vital in our growth and success. Q: What tips do you have for cooking with meat? TM: Don't mess with your meat, let it cook. The grill or stove will do its job, and most people flip or move it around too much. Q: What can each guest expect when they dine at your restaurant? TM: A great atmosphere and a unique dining experience. So many restaurants do the same foods, same beers, same cocktails. We try to create dishes and

I love my food, but I generally try to stay pretty healthy during the weekdays and get my kicks in on Sundays. House-made corn tacos and hanger steak isn't a horribly unhealthy option. If I want to feel really carnivorous but still eat something light, I switch things up with our beef tartare for a nice meaty snack.

Frank Gorriceta: Doing a Nobu international off-site event in Rio, Brazil during the World Cup. We had 10 Nobu chefs doing 750 covers during one seating for a five-course Nobu tasting menu. Never forget it. Q: How did you get started in the restaurant industry? FG: I went to Long Beach City College and took an AOS degree in culinary to be sure this was my calling. After two years of school and interning to Queen Mary as a cook, I decided to apply to Culinary Institute of America in Hyde Park, NY. I got accepted, and spent every weekend trying the best New York restaurants with Zagat as my guide. I finally hit Downtown Tribeca and found Nobu and fell in love.

The purpose of resting meat is to allow the juices, which are driven to the center during cooking, to redistribute themselves throughout the meat. At Blue Bowl, they sell bowls in a fun, creative and, most importantly, healthy way. Blue Bowl was founded by Teague Savitch and Ishmael Lozano. Teague is an army veteran who worked in intelligence operations overseas. In these conditions, it was difficult to come across healthy food on a regular basis. Coming back to the US, he found many Californians were also on the hunt to find quick and healthy food options. “Ish” is a veteran of the health food industry. Together, this pair created the Blue Bowl concept from scratch— the same approach they invite the customer to take when creating their own bowl. "There are no blenders here, we want this to be a place where people feel comfortable hanging out,” said Lozano. There isn’t a fixed menu, so you can create the bowl with ingredients you like, exactly as you want

it. "We've created a no rules approach where it's all about options,” Savitch said. Not craving an acai bowl? No problem, you can change out the base—try pitaya, steel cut oats, chia pudding or some of each if you’d like. Then move down the line to choose your toppings—from standards like bananas and blueberries and granola to more exotic options like goji berries, hemp seeds, apple honee (a vegan honey made from apple juice) or cacao nibs. There’s peanut butter, of course, but also almond and cashew butters. Would you like some cinnamon or pumpkin seeds to top it off? The number of combinations are endless. There’s also options when it comes to size so you won’t walk away with a quart of acai—that is, unless you want to! If you walk into the superfood shop and feel overwhelmed by all the options (the toppings are unlimited), Savitch and Lozano offer the Lazy Blue—a premade bowl with your heart's desires. #TBT Chef Wilhelm’s very first cookbook was a Vincent Price cookbook that his mother bought for him in high school. He still has it to this day. Credit Where Credit is Due It was the owners of Le Mouton Noir that purchased Wilhelm his first Cuisinart. He credits much of the development of his early skills to his incessant experimentation with dishes in his home kitchen. Native Knowledge

David Wilhelm’s name is legendary in the culinary world. His prodigious skill and trendsetting foresight has impacted the haute cuisine community for almost 40 years and put coastal towns like Laguna Beach on the map for his creative, yet exceedingly refined dining landmarks. Still, his adventurous spirit lives on, inspiring him to trade the white tablecloths and fresh white orchids for reclaimed wood, lively music and a purely American menu. His newest project, Jimmy’s Famous American Tavern, or JFAT, has yet again set the industry standard. Celebrating the recent opening of the fifth JFAT, Chef Wilhelm sat down with us to share the story of how our favorite tavern came to be.

Far from the sultry Chat Noir, venerable Savannah Chop House or inimitable force of French 75, Chef Wilhelm created JFAT, as a premium casual concept that welcomes board shorts as much as it does bespoke blazers and Louboutin’s. Speaking of his new and most casual concept yet, he said, “I love regional Americana. You know, I’m from the Midwest, so I wanted to have some fun with the recipes that I knew from my youth. I wanted to make comfort food for foodies.” “Family experience,” he said, was the inspiration for JFAT’s menu. Being the eldest of six children raised in Flint, MI, Chef Wilhelm got an early 88 LOCALE MAGAZINE

start in the kitchen from helping his mother prepare family meals. Spending countless hours in the family’s garden and kitchen gave him a deep appreciation for the myriad of mouthwatering flavors that American cuisine had to offer. That appreciation, or perhaps more appropriately, that affection, for folk flavors are unmistakably present throughout JFAT’s sumptuous offerings. But there’s more than just incredible flavor brought out by rich traditional ingredients. There is a palpable vibrancy to each dish that is very obviously distinguished from the familiar dishes that we grew up on. JFAT’s distinctive recipes were created because Wilhelm wanted

people to “get a familiar fix in a creative way.” Of course, his Midwestern modesty notably omitted the fact that he is a fantastically accomplished French chef.

GAINING NOTORIETY AT LIGHT SPEED, CHEF WILHELM THEN TRANSFORMED SORRENTO GRILL AND CREATED THE FAMOUS FRENCH 75 WITHIN JUST A FEW YEARS.

At the age of 18, Wilhelm moved to Manhattan. “I remember that first summer I was trying to find work at a bunch of restaurants, but I didn’t have any experience, so it was hard. “I ended up bluffing my way into a job at Maxwell’s Plum as a captain where I made tableside Caesar salad and steak tartare,” he recalled with a bit of embarrassed laughter. It was there that his passion for cuisine was really ignited. In January of 1976, tired of the frigid East Coast winter—and the semi-frequent muggings in NYC— Chef Wilhelm locked up his apartment, hopped on a plane for California and settled into Laguna Beach. It wouldn’t be long before he would open his own restaurant, Kachina, in Laguna Beach (now occupied by Brussel’s Bistro), and instantly put South Orange County dining on the map. Gaining notoriety at light speed, Chef Wilhelm then bought and transformed Sorrento Grill and

created the famous French 75 within just a few years. Opening as many as 15 successful highend concepts throughout California has made him a restaurant superstar, but despite his winning formula with fine dining, he is also never one to rest on his laurels. Wilhelm continued his penchant for trendsetting when he opened the first JFAT in Point Loma in 2010, and soon after opened one of the most popular restaurants in all of Dana Point. Dishing out creative interpretations of old-school family recipes and rocking hand-picked playlists, JFAT has become the standard for discriminating foodies that want to have a little fun. But it’s more than amazing food; indeed, great food is in ample supply since Wilhelm came to town. Creative, modern and impeccably designed, his tavern is the fun-filled culinary paradise that was missing from the local culinary scene. Tia Mowry-Hardrict has one of those laughs that escalates. Her whole body kind of shakes, her nose scrunches up and, as you listen, you can’t help but follow suit. It’s full of pure joy, happiness and it’s memorable—a laugh that’s good for the soul. The actress, author and entrepreneur expressed that this joyfulness is a choice that she makes every single day. At about eight years old, Tia felt God putting that gift in her; she now feels there’s a spiritual connection to why bringing others joy brings her joy. “I feel like that’s who I am,” she recalls the moment vividly. With stuffed animals surrounding her on her bed, she remembers crying happy tears. “I feel like my job on earth is to put a smile on people’s faces, to inspire, to uplift, to encourage, to get people to forget about their problems…I never told anyone that before.” She put her face in her hands and apologized for seeming corny. Well, Tia, you’ve put your gifts to work and we’re all lucky to be the beneficiaries.

Not only were my cheeks sore from smiling and laughing so much during our two-hour chat over lunch, but she and her twin sister, Tamera, have been entertaining and spreading that joy since she can remember. It started with dancing and modeling, Tia says, even while on base in Hawaii. Tia’s parents were both in the United States Army, her mom a drill sergeant and her dad a first sergeant. Born in Germany, this army brat called numerous places “home” while growing up, but her favorite was the Aloha State. It took Tia and her sister three years to beg their mom to move to Los Angeles. At the time, they were living on the base in Fort Hood, TX. The sisters were performing and doing the local pageant rounds when it got to a point where eyes would roll when they’d sign up for competitions. “I say this with humility, but we were winning everything,” she says matter-offactly. “Sometimes I would take first then [Tamera] would take second or she would take first and I would take second.” When they finally convinced her, their mom gave up her position in the military and moved the girls

and their younger brother, Tahj, to Hollywood. “It was tough because we didn’t have any money. The army really does take care of their soldiers… we never really got that feeling of struggle until we moved to LA,” Tia explained. That house on the base was downgraded to an apartment, rice was eaten for breakfast, lunch and dinner and a once two-parent home became a single-parent home, as her father had to stay enlisted back in Texas. Christmas shopping was done at the 99 Cents Only Stores and they were bullied for their high-water pants in school. But then, chance happened. Producer Irene Dreayer introduced the rising twin stars to Suzanne de Passe, who discovered The Jackson 5 (yes, The Jackson 5) and she said, “You girls are a TV show.” And after numerous meetings with network bigwigs, ABC bought the idea of “Sister, Sister” and it was soon on the network’s family programming block, TGIF. They were only 13 years old. The popular ‘90s sitcom had us all wondering if (and secretly wishing) we had a long lost sister out there. Over 100 episodes of singing along to the theme song, anticipating

Tia spills that they are aiming to turn the beloved book series into a television series.

• Tia says her biggest risk she’s ever taken was marrying someone just for love—not for material things

like money, fame or stability. “I married a man that I loved. And when there’s risks, there’s success,” she said. They tied the knot in 2008 after almost seven years of dating.

switcheroo incidents and loving on the oh-so-nineties fashion, we as viewers got to witness Tia grow up on the show. But off camera in the Mowry household, their mom still allowed them to be average teenagers. “Our mom really, really protected us. It was just a job to us,” Tia says that there was a fine line of being a child star and creeping into the dark parts of Hollywood. They weren’t allowed to let their new job as sitcom stars define them as people. Their mom kept them in check and made them check their egos at the door. “We had chores, curfew, we had an allowance. It was like things had changed, but things really hadn’t changed,” Tia said about the experience of the sixyear-long hit series. “But the most incredible thing was that I got to do it with my sister.” After the series ended in 1999, Tia needed to break away for a bit. During one of her semesters studying psychology at Pepperdine University, she studied abroad in Europe, alone, and did some selfreflecting. She concluded that when she would return to the States she would get serious about acting and get serious about her career. “When there’s change and you’re not in your comfort zone, that is when you should realize you’re doing the right thing,” she said. It took seven years to land another starring television role, but when she did, it was a game-changer.

Rising Star

• Tia and Tamera were briefly part of a girls group in 1992 called Voices. Their song “Yeah, Yeah, Yeah” is definitely worth a YouTube search.

Tia loves throwing noteworthy parties! Army Brat

• While living in Hawaii on base as a little girl, Tia recalls the tune “Reveille” playing over loudspeakers across base and every one, including her parents, stopping what they were doing, facing the headquarters and saluting the flag.

When she went to audition for The CW-turned BET “Girlfriends” spinoff “The Game,” even the casting director wanted to make sure that she knew what she was auditioning for; it was quite the different role than kid-friendly Tia Landry. “Uh yeah, I’m a grown ass woman,” she said to the casting director at 24 years old. “I’ve been through everything that this girl Melanie is going through.” Nine seasons later and viewers were still obsessed with the plot line. It was risky, she said, but then again Tia doesn’t shy away from risks: “I feel like I’m giving away my secret, but why I am where I am in my career is because whatever I am afraid of, I say, ‘Bring it on,’” she said. “I’m kind of addicted to looking at things that are risks, or that I am afraid of, and embracing it.”

“When I realized that I really loved cooking was when I started to dream about it. And that was after I got married,” Tia has an elongated grin on her face as we talk about one of her fave topics: food. “I would go to bed and I would dream about what I was going to make the next day. Literally, I would dream about food!” Can we all raise our hand in solidarity that we’ve done this too? She confesses to fangirling over Food Network stars like Giada De Laurentiis to Bobby Flay to Ina Garten and after “Sister, Sister” she admits the thought of culinary school crept into her mind. “It has always been in me,” she said adding that she started cooking at about 12. “When I cooked chicken piccata for the first time, I was like, ‘Damn this is good. This is a gift.’” And she isn’t the only one who thinks so. She can’t get rid of her husband’s friends; they’ve become dinner table groupies, showing up for every gathering to take selfies with Tia’s dishes and take home the leftovers: “I am a nurturer at heart, and I feel like when you feed people, it’s like you’re nurturing them.” Let her upgrade you, and your shelves, with her jam-packed cookbook “Whole New You.” She wanted to not only inspire fans to choose a healthy lifestyle but be vulnerable, real and share her story of how her passion for food turned into a life-saving change. In her book, Tia talks about being diagnosed with endometriosis in 2006, an abnormal growth of cells from the lining of your uterus that appears outside of the uterine cavity, after years of symptoms and abdominal pain. This lead to a multitude of emergency room visits and two severe surgeries, but then her doctor declared that if she was planning on having kids and if she wanted the surgeries to stop, she simply needed to do one thing: change her diet. “I used to say it was like for years you’ve been putting on your pants a certain way, without even thinking about it, and now all of a sudden you have to change the way you put on pants,” like swapping out the dairy for vegan cheese and pushing the carb-filled pizza dough aside to use cauliflower crust; expect

this and more in over 200 recipes curated for her cookbook. “The audience that I really wanted to touch was the African American community,” she says about the bestseller that was two years in the making. “I feel like in our community we don’t know a lot about how food can be medicine—until something happens.” When she started to change her diet, her aunties, grandmother and close family members were confused by this new-school ideology: Ain’t nothing wrong with a little soul food! What are you doing? She then began to list off stats in regards to African American women: Heart disease is the leading cause of death and 56.9 percent of those 20 years or older are obese, according to the CDC. Plus, endometriosis targets 15 percent of women, with growing numbers in the African American community. “I’m so blessed to be able to be creative in that space and that we live in a day and age where you don’t have to go to culinary school to be accepted in that world,” she said. We think appearing on Food Network and her former show “Tia Mowry at Home” on the Cooking Channel has definitely given her some kitchen cred. “I’m having loads of fun with [cooking]. I love it.” She holds her tongue to the roof of her mouth for a couple seconds for more emphasis on the “love.” “Love it, love it, love it.” There’s that laugh again. I definitely believe her, and it shows.

“I’m very proud to say that I am a feminist,” Tia said. We were talking about the importance of this ‘sisterhood’ in the industry. She stated that you have to combat society’s view of women that we were only put here to be sexualized and raise children. She calls BS. “You can do anything that you want to do. No matter what.” She continues, “I feel like just because I am a mom doesn’t necessarily mean that I have to give up who I am or who I was. I can still dream, I can still feel and be sexy. What’s wrong with a mom taking a burlesque class?” I nod my head and “Mmhm” in agreement. Tia explained how she’s had to turn down numerous roles in her career that play into stereotypes, whether it perpetuates being black or being a woman. She flat out said, “That’s not my calling.”

“I feel like we need to build a community where we can uplift, where we can support, where we can inspire and where we can say, ‘I got you.’” She’s already started building said community with her new YouTube channel “Tia Mowry’s Quick Fix”, where she’s taken the reins of her career and is making content that she loves. “I have so much fun on these damn YouTube [videos], you have no idea,” she wanted to create a hub for all her fans from the other social networks to meet in one place. With over 160K subscribers in just over four months, we think it’s working. In partnership with the Kin Community, every Friday she drops a new video detailing a life hack that you didn’t know you needed. Hair tutorials, sheet pan-cooking demos, marriage advice—you name it. The best part? There are no limitations, no script; she can do whatever she wants, and she does. “Life’s all about finding those quick fixes, those easy life hacks that just kind of get you through [it].” She creates her content off of what her fans are interested in, commenting on and questioning about; this dialogue is what being a community is all about. “I want to inspire other women. I want them to say, ‘Wow, if Tia can do it, I can do it too,’” she said. “I think the key to sisterhood and being a woman in general is that we need each other, instead of being competitive with one another.” Major key alert. On Tia’s right wrist is a pink and purple butterfly, located, purposefully, to be in constant sight. A representation of an insect that evolves into something beautiful. A reminder that it doesn’t happen overnight; it takes time. You know, like a 20-plus-year career timeline. “I don’t like change. But the older I get, I’m learning to embrace change because [it] is actually your friend. It doesn’t have to mean it’s a bad thing. It’s just a new beginning to something amazing. But, I had to learn that,” she said. The tattoo serves as a reminder to always be like a butterfly: to fly with the wind, not against it, or, as Tia translates, to let go, and let God. “I think we are always evolving,” whether as an actress, a cook, a mom (or new mommy-to-be) or simply as a woman, within it’s ink, this butterfly encompasses that change is okay; take the risks and worry about them later; just fly with the wind, and laugh along the way.

Letter to Teenage Tia

We asked Tia what she would tell her teenage self. Here’s her advice: •“Don’t worry. What’s meant to be will be. Continue to stay focused, and continue to stay true to whom you are. Embrace change; change is your best friend. God’s got you. • Don’t be such a ‘worrywart.’ Don’t worry about what you’re going to do next, what you’re going to be, if you’re going to get married, if you’re going to have kids—things happen for a reason. Let go and go with the flow. Continue to work hard, continue to dream, but don’t be afraid that if the plan that you had doesn’t work the way that you had it in your head to work, just let go.”

Q: ThunderKing is known for its cold-brew coffee. What makes the process and the taste unique? GD: The process is slow, very slow. And the yield is low, very low. Which in turn produces a product that is good, very good. More or less, the labor of love that goes into the ThunderKing cold-brew makes the little bit of juice totally worth the squeeze.

Orion Strongman: Toby’s is a severely outstanding coffee and when combined with the Vacancy team’s knowhow, it’s simply a magical array of drinks. Toby’s itself is so outstandingly well thought out that when combined with our operational practice, it’s turned out to be something that the people really enjoyed. Q: What is the most rewarding aspect of your job? OS: I say this often, it never gets old seeing someone with a smile from ear to ear when they finally get a coffee that just really hits the

spot. I’ve been working in hospitality for a few decades now and to this day, when someone says, ‘This is the best mocha I’ve ever had,’ never gets old. Q: What makes Vacancy stand apart from the other coffee shops in Newport Beach? OS: No frills, intensively good coffee like you’ve never had before, an environment that has no pretension and gets to the point of the product and the good feeling that you would have come to expect when you walk into a coffee store or a café to relax, whatever the time. Q: What is something unique about Vacancy that most visitors don't know? OS: That everyone working there is Australian. [Laughs]. No, I’m joking. Not

everyone is but the large proportion of us are. A lot of people don’t even know we’re there. They stumble upon us and then are very pleasantly surprised. What’s something unique about us [is that] we bring a new perspective on coffee to Southern California, if not all of California. Our company culture is pretty much imported into California from across the Pacific where incredible welldeveloped knowhow for the brewing and service of coffee and connected products comes across in an environment that is more true to form to tried and tested hospitality principles of making you, the customer, extremely happy. Q: What attracted you to work at Vacancy? OS: The partners who

came together to build Vacancy were looking for someone with depth of knowledge to grow Vacancy’s roots in Orange County, and to allow the company to propel into the future. I was drawn to being able to do both of those, and to see how the non product mix I’ve been dealing with for quite some time now would translate here in California. Q: As lead barista, what does a typical day look like for you? OS: You come in to open the store and you get things warmed up. And usually in the morning, you get the same faces that come in, your regulars. It’s usually an awesome vibe, there’s a lot of laughing and smiling [as] the community comes together.

O S CA R A N D J E N I CA ST R O CREDENTIALS: OWNERS OF COFFEE DOSE Q: What inspired you to create Coffee Dose? Jeni Castro: Basically, just our love of coffee. But my biggest thing about the coffee shops in Costa Mesa is that they are lacking the really fresh ingredients and I really wanted to try to improve that [by] making things like fresh in-house nut milk more available in our area. Oscar Castro: Not only is coffee part of our daily routine; we often seek out different coffee experiences and we’re not shy about traveling to them.

Q: What is your favorite Coffee Dose drink? JC: I love them all, but I would say the top two that I know are going to do the best [are] the Beauty [Latte and The Burner]. OC: My favorite by far would have to be the one I prepare for myself daily, The Burner. This concoction will have your productivity level at an all time high without the crash because it doesn’t contain sugar(s). Just a little grass-fed butter and MCT oil. 106 LOCALE MAGAZINE

Q: What has been your favorite memory so far creating Coffee Dose? JC: The logo is really fun because coffee is a drug that we can legally take all day long, which is great. But for the most part, I know for me, I need my coffee. And if I don’t get my coffee, bad things will happen in my day. OC: So far just being able to collaborate side-by-side with Jeni. We both have our businesses separate from Coffee Dose, which has allowed us to learn how to work closer together in business and our at-home life. Q: What’s something unique about Coffee Dose that most people wouldn’t know? JC: So Oscar and I have absolutely no experience in the coffee business. We don’t know the first thing about the coffee business, all we know is that we are fully addicted to coffee and we’ve visited coffee shops all over the world. OC: For people that are just finding out about Coffee Dose, they’d be interested to know that we’re located inside East Eighteenth, a cozy-chic hair salon we share space with.

Gabe Venegas: Espresso Republic is the parent company of Dripp. Both companies operate as separate entities and independently. Espresso Republic is the roasting company and focuses on wholesale and production, while Dripp is the retail branch of the company where customers can be part of the coffee shop experience.

Q: What makes Espresso Republic stand apart from other coffees? GV: Particularly, I think Espresso Republic just does a really good job at being all about the details. In everything that we do, the approach is all the little things matter. [Such as] for sourcing the coffee, our owner goes out and directs trades with these farmers. Q: What is your favorite item on the Dripp menu? GV: My favorite indulgent drink is our Spanish Latte, made with sweetened

condensed milk, espresso, steamed milk and lightly dusted with cinnamon. Q: What makes Dripp Coffee Bar unique from other coffee shops? GV: Approachable by both young and old, whether new to coffee or veteran coffee snob. Dripp focuses on its environment with attention to detail in the decor, providing a bright and lively experience. So, I think that’s why coconut water is becoming attractive to everyone of all ages.

Starfish, located in South Laguna, is the ultimate hot spot with a versatile menu that speaks “come as you are.” Kayli Luz, the Manager and Event Coordinator, admires the clientele that fills their tables each night. “We have the artists, the wealthy business people, people who have come right off the beach and the families that vacation here,” Luz said. No matter the background, they love their whiskey. To much of the populace, whiskey is the faceless drink that people like Ron Swanson sip on. While this is a perfectly serviceable beverage, it needed a little modern-day touch to bring it back to life. Enter the Whiskey Blossom! The roots of the Whiskey Blossom are connected to the well-known whiskey sour, but with an added twist that caters to every taste. The key ingredients include Kentucky Straight Bourbon, fresh lemon, clover blossom honey, sweet and sour, egg whites, dashes of orange bitters and Angostura bitters and finished with an orange twist. “The intention of using the fresh egg whites is to give it the velvety mouthfeel that

is oftentimes omitted from modern-day cocktails,” Luz explained. What makes the Whiskey Blossom hip and happenin’? There are few locations that make cocktails in their traditional form, so Starfish is throwing it back—way back to the 1920s with all the bells and whistles. To add their own flair, they serve the drink in a martini glass. “With the martini glasses, there’s no chance that it will get watered down like it could with ice cubes, and the presentation of a martini glass is a bit more sleek and sexy.” The Whiskey Blossom has a muted sweetness and hint of bourbon spice, making it a perfect post-holiday treat to sip on and warm up with friends. Starfish is also a great location for booking events like a whiskey-themed bachelor party, a birthday party or even a rehearsal dinner. They have a well-versed staff on the menu and drink options. “We want everyone who comes in to feel comfortable trusting their server. Our servers will give them a tour of the menu and guide them based on what they like,” Luz said. Bottoms up!

When I walk into the 4th Street Market kitchen to interview Garrett Dunbar, all is quiet. The preparations for the evening’s OC Burrito Project are just starting and the volunteers have not yet begun to arrive. Little do I know that in just a few short minutes, I will see this unassuming, sweet, young man transform into a modern-day superhero. I’m sure Garrett would probably cringe at that analogy, but I saw it with my own eyes—he is a powerhouse; a force to be reckoned with and his vision just might change how the world views solutions to the homeless crisis.

The OC Burrito Project began in 2015 when Garrett—who was in law school gearing up to follow in his father’s footsteps—was a County Counsel intern. Going to the Civic Center daily meant getting an up-close look at Orange County’s homeless, and also seeing that the county wasn’t doing much about it. “I asked the sheriff’s department who their homeless liaison officer was and they told me to contact the OC Department of Mental Health, who then referred me to their website and all the links on the website were broken. It was clear that the issue was not a priority,” said Garrett.

Garrett and his then fiancé started out with just six people making burritos in his apartment with a goal to feed those in need. Burritos are a simple, delicious and cost-effective way to accomplish this goal, and after the first night, Garrett knew that it was not only doable but also a great way to bring people together. The project grew through social media and word of mouth, and eventually, the number of volunteers jumped to over 100. Success meant a bigger space was required and the 4th Street Market turned out to be the perfect spot. “We make about 350 burritos and we just walk directly into the Civic Center and help everyone that we can. They are our neighbors and need to know that we care and want to engage with them.” The OC Burrito Project may be about feeding people, but it’s also about providing a few basic 128 LOCALE MAGAZINE

Donations of socks, blankets, clothing, shoes and even pet food are also highly encouraged. “We bring some short-term solutions out to the people while we wait for more permanent solutions to develop,” Garrett said. These outreach events happen monthly and have become so popular that there are not only civicminded individuals participating, but groups and corporate teams as well. Assembly lines are formed for making the burritos, organizing and making the goodie bags as well as sorting clothes. The process usually takes about two hours before the group walks out to the Civic Center to distribute what has been created, “It really opens people’s eyes and it’s wonderful to see how it changes their perceptions of what ‘homeless’ really is,” Garrett explained. With his law degree and her degree in social work, Garrett and his wife have great plans for the future that will make for an unbeatable combination to make some much-needed changes happen. One day, they would like to go into developing their own housing program, combining a shelter with wraparound services like mental health counseling, job training, placement and basic life skills. With all the good he is doing, Garrett keeps it simple; “We just go by the old saying ‘treat people the way you, yourself would like to be treated.’ If you can do that, then that’s the best that you could possibly do.”

With six locations spread throughout Los Angeles, Orange and San Diego counties, it’s never been easier to find a space that inspires and cultivates a creative culture.

During a time when there was no such thing as a “sneaker boutique,” Blends paved the way when they opened their first concept location in Costa Mesa in 2003. They were one of the first to bridge the gap of different aesthetics, “blending” street cultures and bringing them under one roof. Like any company, Blends started small. They were just a small storefront with big things in mind. “When we open each store, we usually go into areas that aren’t very popular, so we try to develop together with the community,” says Blends General Manager, Nobu Ichimura. This concept of growing with and within the community has proved to be a great decision. Their downtown Los Angeles location for example, first opened their doors in 2006, in an area particularly close to Skid Row, and has since worked with other like-minded businesses to create something worthwhile.

Each Blends location is as unique as the communities they serve. Unlike most retail chains that have the same standard set up, Blends is unrivaled in their creativity in constructing remarkable retail spaces. “The owners, Mike [Toe] and Tak [Kato] designed and built each store themselves,” says Nobu. “Each location has a unique concept and design.” With an overarching minimalist effort throughout their locations, no effort is wasted in bringing a unique shopping experience to all that visit. Their San Diego store is modeled after a traditional Japanese Zen garden, the Downtown LA location was inspired by an art gallery and Costa Mesa displays all their footwear within large grocery aisle-style freezer doors. For the last 15 years, Blends has dedicated itself to curating the best of the best from brands like Nike, adidas and Vans, but also has been known to spotlight the new, upcoming brands that show excellent potential. They’ve linked up with a plethora of fantastic brands to create special exclusives that fans have come to seek out. They’ve collaborated with Ralph Lauren on denim in 2010, Red Wing on a pair of boots in 2011, Disney on a Winnie the Pooh collection in 2012 and so on.

In particular, the collaborations between Blends and Vans have been known to cause quite a bit of excitement. Nobu recalls that “Vans is like our family and we have a really good partnership with them because they are also SoCal based.” Since their first collab in 2010, the two footwear giants in their respective spaces have put together 12 successful projects including their rare and highly sought after “Bones” collection of silhouettes—which alters the classic Vans ‘Old Skool’ and ‘Sk8-Hi’ stripe to a bone-shaped reimagination. Blends is a brand that elevates taste, and transforms your expectations on what a retail space should look like.

Q: What do you love most about your job? Dr. Stephen Alfano: I love completing a

complex case. Many times it's fixing something that was done elsewhere and the patient had given up hope. Seeing them smile at the end of treatment is very rewarding. 160 LOCALE MAGAZINE

Q: As a fixture of the local community, what does being something of a local "go-to" mean to you? SA: I'm very happy to be working in a small town atmosphere. It's nice seeing familiar faces every day. That being said, many patients come from off the island and enjoy walking up and down Marine Avenue before and after their appointments.

Q

Q: In addition to dental hygiene, what other types of services does your practice offer? SA: We provide all your basic dental needs and prosthodontic specialty needs. That includes everything from simple fillings to full mouth reconstruction and dental implants. Q: What are some of the lesser-known ailments that patients should know might mean a trip to the dentist is in order? SA: Snoring is a major symptom of sleep apnea. Sleep apnea is a common disorder in which you have pauses in your breathing while sleeping. It is usually chronic and can increase the risk of high blood pressure, heart attack, stroke, obesity and diabetes. There are some oral signs and symptoms that can be seen during your dental exam. Q: Sedation dentistry… what is it? SA: Sedation dentistry is sometimes referred to as sleep dentistry. We use a method properly termed, ‘oral conscious sedation.’

This involves taking a pill to help you relax prior to coming in for your appointment and then receiving additional medication as-needed during your visit. While you may feel that you have slept during the entire procedure, you were actually able to respond to verbal commands. Q: Can you tell us a little about the cosmetic dentistry options you offer and some of the differences between them? SA: There are two basic types of cosmetic restorations: those that are placed directly in the mouth, and those that are fabricated outside of the mouth, and then cemented in. That is the basic difference between composite restorations and crowns, veneers and bridges. The shape and color of your teeth can be altered with these restorations, [whereas] whitening does just that—it makes the teeth whiter. Q: With such high ratings, how is it that you keep your patients happy? SA: Nobody is perfect, but I try to deliver perfection and exceed every patient's expectations. I don't settle for less, and the patient shouldn't either. Q: If you could give OC readers one dental health tip, what would it be? SA: Brush and floss—and don't skip that cleaning appointment.

Facing Fears • Dr. Alfano had a patient who had a bad experience in the dentist’s chair as a child and was terrified of returning as an adult. She tried sedation dentistry at Dr. Alfano’s office for multiple crown preparations and was able to have a wonderful experience.

Stranded • If Dr. Alfano was stranded on a desert island and could only bring either a toothbrush, dental floss or a dental pick, he would choose a toothbrush.

For artist Kelsey Montague, art has always been a part of her life since the beginning. Growing up with artists on her mom's side of the family and later pursuing art in college, Montague was always exposed to the world of creativity and expression. For her first street art piece, she decided to create a pair of angel wings, an important motif to her family as many members draw birds and wings.

Since creating that first set of wings, her artwork has become a global phenomenon online and offline. Montague’s art is created specifically to encourage viewers to participate. The angel wings are embedded with detailed, multi-layered images and are situated on the wall to allow someone to pose for a photo in between the wings. These photographs can be shared virtually through the #WhatLiftsYou hashtag, which she created to “use social media in a positive way.” Her latest artwork in Southern California is located in Brea’s Village at La Floresta. The piece is a pair of wings that are comprised of pastel-colored flowers, leaves, swirls and geometric patterns. As she mainly focuses on black and white, this Orange County piece is the second set of brightcolored flower wings she’s ever created, and her only artwork presently displayed in Orange County. The vibrant colors and the floral accents are inspired by how Montague

sees California, and by the centers name and hashtag. “It’s such a good fit because, to me, California is just sunny, beautiful and the colors are vibrant,” said Montague. “Kelsey Montague’s work is beautiful and provides a unique experience through each design,” commented John Mehigan, Senior Vice President & Senior Market Officer with Regency Centers. “We’re pleased to watch as her Village at La Floresta mural creates positive engagement between our Village at La Floresta shops and restaurants and the greater Brea community.” She started and completed this mural on the same day. When starting a concept, she goes into it with a general shape and idea in mind, but the details of the piece ultimately come to her in the moments when her pen connects to the wall. Especially with the accessible nature of her art, Montague loves seeing how other people express their own creativity by interacting with her work. With this piece in Brea, she looks forward to seeing people enjoy it and make it their own. “I hope people come out, share what lifts you; just really enjoy this piece and take ownership of it because it is for the people here,” said Montague.

Q: How is KILO different than other gyms? AB: You can spend a lot of money on a personal trainer but you really need to have multiple sessions a week to see the benefits. We offer that one-on-one training in a group setting. There are two types of sessions: PRIMEIGHT and Conditioning. Each PRIMEIGHT session focuses on one of the eight primary lifts: squat, front squat, deadlift, overhead press, incline press, bench press, dip and chin-up.

Q: WHAT INSPIRED YOU TO START KILO? Stéphane Cazeault: We had moved around a lot working in the fitness industry, mostly training other trainers and coaches. We came across Huntington Beach and liked it, so we decided to open the gym here.

Q: How often do you recommend people come to KILO? AB: It’s designed for clients to take four PRIMEIGHT and two condition sessions per week. Over two weeks, we work through all of the PRIMEIGHT lifts. We track how much people are lifting each time so they can use this as a starting point the next time they come back to a

particular lift. However, we also have a handful of clients that only train with us once or twice a week. We can find something that works for everyone. Q: What is something we can look forward to in the future from KILO Strength Society? AB: We are very excited to grow over the next year and introduce our concept to many new members in our local community. Starting in 2018, we will be hosting free technique workshops and nutrition talks that anyone will be welcome to attend! We also offer education for strength coaches and personal trainers. In 2017, we had coaches from Australia, Finland, Denmark, Germany, United Kingdom, Ireland, Canada, United Arab Emirates and India travel to learn our unique philosophies and methodologies on strength training. We have added a few more courses onto our schedule for the future and we are excited to meet many more passionate coaches and grow our "Strength Society" family!

For owners Bill and Diane Staggs, renovating these wagons has been like traveling back in time. Bill’s dad bought his first van in 1958, allowing him to explore the coast of Southern California at ease. By the time Bill met Diane, he had two buses in his collection. It wasn’t until a trip to Hawaii when Bill and Diane decided to rent a VW bus that they got

the idea for Vintage Surfari Wagons. With just two vehicles, Diane started up a website for their new business. With his passion for rebuilding cars and her interior design background, Vintage Surfari Wagons has become the incredible and unique business we know and love today. “I remember the first time we put people in one and it went driving down the road and we stood there and watched it go away, we both had this ‘holy crap’ moment, like we wondered if we’d ever see this car again,” Bill said. With these vehicles becoming more and more unique, as well as the idea of being able to slow things down, people have taken quite a liking to them. Maybe a trip up the coast to Ventura is your thing, or maybe you’re looking to warm up in the desert. Wherever you go, you’ll be riding in style and turning heads. “You can spend the entire day in the van, in various locations, and you're got everything you need,” says Bill.

There is just something about taking trips outside of your comfort zone and pushing your body to its boundaries that invigorates and motivates you to further selfimprove. It’s never easy to start something new, but the discipline to propel yourself forward, sailing into uncharted waters and coming out better than you came in is an accomplishment you will always take with you. For one week, I had the opportunity to take three very different workout classes—each pushing my body in different ways, testing my will, focus and perseverance more than I really expected. As someone that isn’t all that enthusiastic about doing cardio, but enjoys physical activity, these classes were both a trial and a triumph.
