ALOHA, BEACHES!
®
EDITOR'S NOTE I’ve lived in Orange County my whole life, and although we’re blessed with beautiful weather year round, there’s nothing quite like experiencing OC’s summers. I remember doing Jr. Guards, and while my sister would be placing first in the runs and swims, I would have accumulated a nice collection of seashells to bring home for our mom’s garden. I may not have been a top athlete, but I had a deep appreciation for the beach and the place we’re so fortunate to call home. As I got older, I started to realize that maybe my sister had been on to something, and that fitness might be a positive change to implement into my daily routine—okay, weekly routine. With all the different workouts there are to participate in, Pure Barre was what really hooked me. I was committed to going three times a week, which was a leap from thinking a walk around the block was significant exercise. In this issue, we put together a summer workout guide (p. 75), with tips on how to tone different parts of your body from places like Pure Barre in Orange County, OUE Skyspace in LA and AquaVie Fitness + Wellness
Club in San Diego. And, although fitness is important to stay healthy, we didn’t forget to add in tips on what to snack on post-workout. We also wanted to highlight the women making a difference in our area (p. 63). Local business owners like Taylor Beauchamp of Charlie & Me or professional drag racer, Ashley Sanford, grace these pages with tips on being a successful woman in OC. For all the foodies out there, we didn’t forget about you! Local Mexican-German eatery Taco Brat’s Killer Kielbasa will have your mouth watering (p. 120). Not to mention Duke’s Banana Leaf Steamed Island Fish & Shrimp (p. 125) that we deconstructed. We also included some up-andcoming brands like Puppies Make Me Happy (p. 132) and Mendid (p. 148), as well as a look into a beautifully designed backyard that will make you want to grab your keys and head to your nearest HomeGoods (p. 164). Whether you came here for the fitness guide, female empowerment or your daily dose of fashion inspo, this magazine will have you set for the summer.

Before Yovana Mendoza even arrived on set you could feel people buzzing with anticipation. Bebe Jean, our expert stylist, decidedly flipped through a rack of colorfully bright and trendy athletic wear while photographer Louis Rodiger checked and re-checked his equipment as if he was itching to get that perfect shot.
B
The beach was filled with families, tourists and teenagers running around on the basketball courts, but even with throngs of people, I could feel the energy change the moment Mendoza hit the beach. Making her way through the crowd she moved with the grace and intent of a seasoned professional, walking toward us with a definite purpose. Despite never having met her prior to the shoot, I could tell it was her a mile away. Arriving on set, her demeanor immediately softened and she happily greeted everyone with a hug and a genuine smile. Quickly jumping into her first look, a bright pink two-piece outfit, it was clear that she was most at home in workout gear and swimwear. Running around the beach as Rodiger snapped her picture, she smiled unreservedly,
laughing as she struck pose after pose, the beating sun nor the throngs of tourists tempering her cheerful attitude. Chatting between shots, we discussed her family, her favorite green drinks and her thoughts on current health trends. “Over the five years that I’ve been talking about a healthy lifestyle and how to live it, I’ve seen a lot more people becoming conscious of what they’re eating, of what they’re putting into their body,” she notes as we walk along the boardwalk. “Now you see a lot more juice bars, a lot more healthy spots...the word ‘vegan’ is on a lot more products. It’s definitely an industry that is growing and becoming more and more popular by the day, which is amazing. I’m just excited for the new generations.” Admittedly, I’m excited too. The passion with which Mendoza talks about healthy eating and mental wellness is contagious. Of course, it’s that personality and energy that endears her to millions of dedicated followers who have adopted her fitness routines, meal plans and life advice for a better body and mind. Now, I also count myself among one of her many fans.

FRIDAY ¢ TGIFs are mostly spent at home with a fancy home-cooked meal, but occasionally I like to head over to The Recess Room because their late-night happy hour is the bomb! Great small plates, a very unique drink menu and cool atmosphere make it a great place to unwind. www.therecessroom.com
SATURDAY ¢ Saturday afternoons are often spent working on the garden. Nothing like growing your own food. It's the only way you can truly eat purely organic produce. www.hbcommunitygarden.org
SUNDAY ¢ Sunday Fun Day! Once I'm out of bed, I head over for a late breakfast/ brunch at Caffe Caldo. The best French toast you will ever have, I promise. Once my taste buds have been completely satisfied, I head over to the beach for some R&R, followed by a snack or a late lunch at Pacific City! caffe-caldo.cafe-inspector.com www.gopacificcity.com

BUNS OF STEAL 1
USE YOUR LEG
“The same way we lift weights to tone our biceps or other body parts to effectively get every corner of the ‘seat,’ as we call it in Pure Barre, is to let the leg be the weight. You want to effectively use the butt to lift the leg up and down like a weight.”
2
SMALL MOVEMENTS
“Go small when using just the glutes, rather than giving the body the option to have stronger muscles take over.”
3
TUCK YOUR HIPS
“Use opposing forces to get the most out of your glute workout. By tucking your hips under, sliding your leg back and then lifting, you get the most out of the work that is being done. You want to isolate the glutes.”
Photographed By: David A. Hernandez | Hair & Makeup By: Heather Balaam | Model: Madison Ashley of Brand Model & Talent, www.brandtalent.net
4
HEAVY TAILBONE
“By keeping your tailbone heavy you are protecting your back and making sure most of the work goes into the butt instead of the back, which is a common mistake when doing anything related to the seat section.”
5
SUPPORTING LEG
“Most times in seat section, the supporting leg works as much as the working leg. It’s a dual exercise so you are getting work on both sides even though it feels like all the movements are coming from one leg at a time.”
6
KEEP IT IN YOUR CORE
“Core is key for proper alignment and ensures that you are focusing on all the right points of contact. It starts at the core to hold the body in the correct spot so you can just focus on making the movements come from the seat.”
7
STRETCH IT OUT
“Stretching is just as important as all that work. In order to see best results, you need to stretch the glutes after you work them. This will lengthen the muscle and give you the best results. Everyone likes to skip out on stretching but it is so important!”
NATIVE KNOWLEDGE Ò Pure Barre is offering a free week to new clients and if you take three or more classes, you’ll get $20 off your $99 intro month at all four locations.

Abs
The EXPERT Tech TIP
Credentials: Director of Yoga, SoHo Yoga Hermosa Beach and DTLA
LAZY DAISY Ò We get it. Sometimes you can’t squeeze in a workout. Here are some sneaky ways to work your abs on those days you are stretched for time: 1. When sitting at your desk, contract your ab muscles, pulling your belly button towards your spine. Hold for 10 seconds and repeat 10 times. 2. Another great ab trick to try at the office is to lift your feet off the ground, holding for 10-15 seconds at a time, 10 times. You can start off lifting one foot at a time if needed.

HARD CORE 1
“From plank, simply move down to the elbows. Keep the same long line of alignment from your heels out through the crown of your head. If you’re feeling spicy, slowly lift opposite arm and leg. Hold this for three cycles of breath. If that’s too nuts, simply dip your heels and hips to each side, slowly.”
2
"PARIPURNA NAVASANA" BOAT POSE
“Firm your sit bones to the ground. Grab behind your knees and radiate your sternum to the sky. Keep your shoulder blades squeezing together and play with lifting a foot off the floor to the height of your knee. Then try both feet. Now let go with the hands and start to lengthen your legs.”

FOREARM PLANK
CRYOZONE Ò A great way to repair muscles by promoting natural healing is a cryotherapy session at Cryozone Santa Monica. By exposing the body to temperatures around -167 degrees Fahrenheit for three minutes, you can receive many benefits including pain relief, burning of calories, smoother skin, reduction in inflammation and a boost in metabolism.

4
"LOLASANA" PENDANT POSE
“Kneel on both knees and sit upright on your shins with your hands framing your legs on the ground. Push down so hard that your butt lifts up off your heels. Then try lifting one foot off the ground at a time. Eventually, build your way up to lifting both feet off the ground at the same time. You can use free weights, books or yoga blocks underneath the hands to access lifting the legs off the ground more easily.”
5
EXTENDED TABLE TOP
“Start on your hands and knees in tabletop position. Then extend your arm out in front of you, as if you are shaking somebody’s hand and lift the opposite leg. Hold the lift for a minimum of five cycles of breath. As you lower the arm and leg, be mindful of your abdominal movement and attempt to place the hand and knee on the ground at the same time. Repeat on the other side.”

TONE IT UP 1
SHOULDER BLADE RETRACTIONS
“Starting on all fours, shoulders stacked over wrists and hips stacked over knees. Keep core engaged. Without bending the elbows, squeeze your shoulder blades together. Then create the action of pressing the floor away and pull your shoulder blades apart, like you are puffing up your upper back. Then repeat by retracting shoulder blades (squeezing together) then pressing away. To make this exercise harder, come into a plank pose with knees off the ground.”
AquaVie Fitness + Wellness Club: Photographed By: Nick Isabella | Styled By: Janelle Arreola | Hair & Makeup By: Lisa Leedy | Model: Loree Rapp of Brand Model & Talent, www.brandtalent.net
2
PUSH-UPS
“This one is really basic but it’s one of the best. Work on form. Don’t worry about going all the way to the floor, instead focus on [keeping the] core engaged and squeezing your shoulder blades together as you bend your elbows. See how many you can do with perfect form instead of how many total reps you can do. [This] can always be done on the knees to make easier.”
3
EXERCISE BAND CURLS & EXTERNAL ROTATION
“Using an exercise band, place the center of one foot (for easier) or two feet (for harder) on the middle of the band with the handles in each hand. Stand tall, shoulders pulled back. Imagine as if you have a book on your head. Curl the band half way up, pause, then externally rotate arms by pressing thumbs away. Keep elbows close to the body. Bring arms back in and lower back down.”
4
ROW INTO TRICEP EXTENSION
“Using a bench (or two chairs if at home) place the same knee and hand on the bench. Kickstand the other leg so that hips are level. Using a dumbbell, draw elbow in towards ribs, pause there and extend arm straight for the tricep extension, bend back in and return to starting position.”
5
COMBINE ARMS IN FULL-BODY MOVEMENTS
“To get extra arms work, hold weights in hands and do shoulder presses while lunging. Or in between sets of lower body or abs do a small set of push-ups. Yoga is also another way to tone arms. Find different ways to incorporate them into your workouts. One of my favorites is a squat with a bicep curl into a shoulder press.”
DO WORK Ò When it comes to home workouts, Elyssa likes the TRX. “My favorite piece of equipment is the TRX Trainer. It can be pricey, but it’s worth the investment. You can do a whole body workout and take it with you when you travel.”

With an eye towards innovation in both customer experience and technology, JetSuiteX has set out to change the way people view air travel. Here’s how the public charter flight operator plans to do it.

Skip the lines at SNA or BUR and roll into your favorite Las Vegas spa or day club by lunch? Yes, please. Complimentary perks like in-flight texting, cocktails and craft beers? Sign us up. “We are in the business of leveraging time,” says Alex Wilcox, Co-Founder and CEO of JetSuite. “Time is ultimately the most premium, precious commodity for our customers. JetSuiteX allows you to safely bypass the tedious steps that make air travel drag on, the pat-down humiliations evaporating the joy out of the journey.” JetSuiteX is the semiprivate jet charter that gets you to your destination on your schedule. The Irvine-based company is offering a new route from John Wayne Airport to Las Vegas beginning in late June. A midweek, one-way ticket runs at $129, with multiple daily flights on semi-private planes. The fleet is made up of Embraer 135s, which feature 30 seats with 36-inches of pitch (aka leg room), comfy leather seats and power outlets at every seat so you can
charge on the go. Your two pieces of checked baggage receive the valet treatment, so no huffing and puffing with overhead bins—they simply don’t exist in Wilcox’s world. “There’s ample room for your carry on in the stylishly-designed and LED-lit interior cabin,” Wilcox reflects. “Much of our motivation and ethos evolved from my own frustrations with commercial carriers.” You had us at standard business class legroom at accessible pricing. The posh selection of lounge snacks and in-flight nibbles may have also tipped the scale. Future destinations available out of Orange County may include Mammoth Lakes, Scottsdale and the Bay Area, as the operation looks to expand. On the technology front, JetSuiteX and sibling private charter company JetSuite recently announced that it will be the first recipient of the Zunum Aero hybrid-electric plane, which could enter service as early as 2022. Wilcox plans to refresh the fleet with up to 100 of the new planes, capable of covering up to an impressive 1,000 miles—think LA to the Bay Area in a snap while eliminating up to 80 percent of the carbon footprint left by a conventional plane. Finding that balance between physical and spiritual health is what sets Mendoza apart from so many of the other fitness influencers that crowd your Instagram feed. A few m o m e n t s o n h e r s i t e , R a w v a n a , a n d i t ’s e a s y t o s e e t h a t f o r h e r, a journey to better health includes not only raw veggies and side lunges, but a pursuit of mental wellness and spiritual peace.
Mendoza’s journey started five years ago after she made a New Year’s resolution to quit smoking cigarettes and drinking alcohol for three months, a small, but attainable goal. “Six weeks into my detox of no alcohol I began to feel a little down, I guess you can say, just at a low point in my life,” she explains, recalling her past. “I began to ask myself questions like ‘Why am I here, what is my purpose here, what is my passion?’ I would wake up in the mornings and not really feel much passion or ready to take on the day.” On the advice of her father, she checked into San Diego’s Optimum Health Institute in an effort to focus on healing both her body and mind. “I basically ate raw foods and detoxed. I drank green juices, I did a three-day juice cleanse, and I just began to feel amazing benefits like increased energy, my skin cleared. [I had] more peace of mind, mental clarity. I was in this place, and I was experiencing all of these good things, and I said to myself, ‘Well, I’m just going to keep on going, I’m just going to keep doing this.’” Where others have failed, Mendoza prevailed. She began eating raw foods, juicing, meditating, exercising and focusing on herself in a way she hadn’t for years. “I began to feel a connection to myself and to a higher power again that I hadn’t felt in a long time, and it was very powerful for me,” Mendoza says. “I just felt the need to kneel down and ask forgiveness to myself, like forgiveness for not taking care of my body and for not feeding it well, for abusing substances that were
detrimental to my health. I said…I need help, like from the universe, a higher power, whatever it is.” It seems the universe answered her prayers. Five years later Mendoza is still going strong and has built a health empire of fitness programs, apps, e-books, recipes and social media pages that are followed by millions. It can be easy to lose your way when you reach the top, but Mendoza stays grounded, noting that she feels the most successful when she hears how her work positively affects a person’s life. “Honestly, being able to really make an impact by me telling my story and sharing my life, helping someone change their life as well…for me that is huge, and I’m so grateful that I can do that just by sharing my story.” She laughs, explaining that she hears from people almost daily, thanking her for helping them turn their life around. “It’s amazing, it really is amazing,” she adds, smiling. “I’m grateful for that.” Being grateful is a part of the mindfulness that Mendoza practices when she’s working on her mind, body and spirit. Trying to find a balance can be a challenge, but she explains through physical activity and healthy eating, you can improve your mental health, just as meditation and positive thoughts can work to improve your physical wellbeing. “If you’re eating junk you’re going to feel bad. If you’re putting negative thoughts into your mind you’re going to feel just like that,” she explains. “Just like there’s junk food and healthy food, there’s junk thoughts and healthy thoughts.”

With society’s current focus on mental health, it’s important to understand that healthy eating and exercise can do wonders to improve one’s mental well-being, and Mendoza has experienced these benefits first hand. Previously suffering from anxiety, she credits her change of life to improvements in her mental health. “Once I began to live healthier, and I stopped drinking and smoking, and I started to sleep well, hydrate and eat plant foods, I stopped taking my anxiety pills,” she explains. “For me, that was huge, and just the mental clarity…I experienced. There are many cases where people are suffering from depression, but they start adopting healthier habits, and they heal. It just naturally disappears.” While Rawvana doesn’t tote recipes for better mental health or claim to improve your spirituality with a green smoothie, the intention is evident in everything Mendoza does. Well-rounded, positive health is at the apex of what she teaches. Fans follow her social media feeds for her personality, her honesty and perhaps, in part, to find some of that harmony within their own lives. “I show them the way that I live my life,” she smiles. “I just share my life with them, and I hope that through them seeing how I live they can apply it to theirs and see what works for them.” Everyone has their own fitness goals—better mental health, spiritual wellness, dropping a few pounds for swimsuit season—but Mendoza stresses the importance of listening to your body, educating yourself on what you need and discovering what is best for you. She admits it was one of her fallacies when she started. “I remember at the beginning I was just wanting to do everything super perfect and do it by the book and I neglected listening to my body and what it wanted and what it needed,” she notes, matter-of-factly. “Listen to your body and eat intuitively.” Mendoza suggests that when we focus on what is best for our bodies and mind, the benefits will naturally
follow. “Food is connected to our body, mind and spirit. What we eat has an impact on how we feel, what we think and even how we act,” she explains. “Everything affects us. What thoughts are we having, are we talking to ourselves, how do we see ourselves—and that has an impact on our performance in life and how we feel.” She believes everything we surround ourselves with, from the food we eat to the people we interact with, is interconnected. “The decisions that we make are not just going to impact our own life—they’re going to impact the world around us. Energetically it has an impact on everyone else, so we are responsible for others in our own thoughts and actions.” She finds that as trends in health and wellness develop, she’s beginning to see this consciousness of character within the people around her. While food trends are ever-evolving, she notes a slow progression of health trends that are focused on understanding not only the change in nutrition but the change in lifestyle. “People [are] eating less processed foods and turning more to plant-based foods—more foods from the earth. People are just becoming more conscious of how they’re talking to themselves,” she explains. “Meditation and exercise are becoming a lot more popular, so I think that the new trends are going to be just conscious people. They’re going to be more conscious of what they’re eating, just more conscious of how to live a healthier lifestyle.” It’s this consciousness of mind, body and spirit that Mendoza tries to live daily. Even with her success, she is always working to improve herself. “My personal goal over the next year [is to be] more conscious every day. Be more assertive in perception checking—checking my perception toward life, or toward anything really, because sometimes I feel like it can be easy to assume things,” she explains. “Just very conscious of how I’m acting. I feel like I’ve had this goal for a while, just becoming the best version of myself every single day in any way that I can.”

SrirachaCha-Cha A FIRST-HAND ENCOUNTER WITH THIS SPOT’S DROOLICIOUS FRIED CHICKEN WRITTEN BY: RAPHAEL MADRID PHOTOGRAPHED BY: MARIVIC DIVINA
The Cannery’s Fried Chicken Sandwich is far from average in its construction. The star of this meal is a generously-sized chicken breast, fried golden brown in a blend of Sriracha and buttermilk batter, coupled with a unique harmony of Asian pear, pickled red onion and radish sprouts in a light miso dressing as a magnificent substitute to the conventional coleslaw. As a self-proclaimed “fried chicken connoisseur,” let
me be the first to tell you how refreshing it is to have a chicken sandwich as enticing as this one. At first bite, you’ll be absolutely hooked! You took the bait so now there is nothing left for you to do but submit your taste buds to the symphony of spices. The immediate impression you get is just how well breaded the breast is, paired in conjunction with the Asian-inspired slaw. You get the crispiness of the chicken and the crunchiness of the slaw, elevating your experience the deeper you dive. With every bite, you’ll feel a persisting heat from the Sriracha buttermilk—a perfectly-balanced blend of sweet and spicy that’s inexplicably alluring. This unique take on the chicken sandwich you know and love is everything you could ever want in an afternoon by the sea. But, before I knew it, I was done—and I wanted more.

We invented this aioli that’s vegan; we use an emulsifier instead of egg yolk, a little oil, serrano chile, cilantro and garlic. SWISH, SWISH, FISH “We have had a fried octopus dish in San Diego for awhile so we recreated it into something grilled, which was a really fun and really delicious challenge. Octopus occasionally can be fishy tasting so we were trying to appeal to people who don’t necessarily like octopus. So getting a really nice char and smokiness helps. Taco Bout It THIS MEXICAN-GERMAN FUSION RESTAURANT IS ABOUT TO BLOW YOUR MIND WRITTEN BY: KELLI WITHANEYE PHOTOGRAPHED BY: MARIVIC DIVINA
“
Costa Mesa, a city known for its unique restaurants and bars, has added a new taco spot to its list— but not just any taco spot. Chef Thomas Curran and Co-Owner Chance Owen, were originally planning to open a smoked meats restaurant in the Lido Village. When they heard the iconic taco stand was slated to be torn down, they immediately redirected their focus and took action! Thus Taco Brat, a Mexican-German fusion restaurant with smoked meats and excellent beer, was born. Named for its combination of tacos and bratwurst, this eatery offers a variety of Mexican and German-inspired dishes along with an assorted list of craft beers, both bottled and on tap. Can’t decide on what to order? Its well-known Killer Kielbasa, made with smoked Kielbasa slices, bacon, agave lime slaw, spicy glaze, cotija cheese and green onion served on one of their fresh, German pretzel buns, is an excellent choice. What could make this sausage party even better? Pair it with an ice-cold, refreshing Corona Extra. As Thomas explained, it’s the “smokiness and saltiness of sausage and bacon” that goes well with this beer because it doesn’t take away from the bold flavors featured in their dishes. Beyond the tasty food, beer and wine, Taco Brat also has a family and pet-friendly patio that includes Giant Jenga and cornhole, and is also home to monthly events to engage the community. “Since we’re Costa Mesa natives, it was important to us to make a space that would be inclusive to everyone anytime of the year,” Thomas explained. Whether you’re a Mexican-food fiend or a German-cuisine connoisseur, grab your friends and get ready for a dining experience you won’t find anywhere else.

H-2 Whoa! BOTTOMS UP AT OC’S HOT SPOT FOR UPGRADED WATER
WRITTEN BY: KELLI WITHANEYE /// PHOTOGRAPHED BY: HUNTER COLE When entering The Water Brewery in Costa Mesa, it’s like walking into a café in Thailand filled with beautiful earthy smells, art, dim lighting and an ability to draw nature indoors. Known best as “the heart of water and wellness,” the owners Wennifer Lin-Haver and Einar Haver had set out to create a healthy space that brought food and water at its highest potential—together. Wennifer had studied cross-cultural birthing traditions, spiritual midwifery and ecomothering at UCLA and completed her field work on the subjects on the Big Island of Hawaii. “The discussion of water and its cleanliness and potency were fresh in my mind especially with the pregnancy of our third child,” she explained. “We knew in order to make the water we desired, we needed put our heart into it and create it ourselves.”

“
Beyond their bountiful water, they also have a menu from their plantfocused, biodynamic kitchen with all consciously-sourced ingredients that are certified organic and non-GMO.
Mama Knows Best
Their Aquae A.M.O.R.E.® is the top tier water they sell, and it’s intentionally affordable at $2 per gallon. Co-owner Einar, coined the “Water Wizard,” grew up in Oslo drinking pristine glacier water. “A.M.O.R.E. embodies the love that we infuse in the water and it is also an acronym for Alkalized, Mineralized, Oxygenated, Restructured and Energized. It’s a unique and holistic ‘wetter water’ that’s making a
huge difference in the health of many of our customers,” he added. And the process of making their premium water is strenuous. “We purify the water physically and vibrationally, as well as enhance its structural integrity with a broad-spectrum array of 70 plus ocean-ionic electrolyte trace minerals,” Einar said. Beyond their bountiful water, they also have a menu from their biodynamic, plant-focused kitchen with all consciously-sourced ingredients that are certified organic and non-GMO. The mostly vegan kitchen includes flavors from around the world. Their most popular menu items? The tacos! “Our tacos are handmade. [They are] over 95 percent certified organic and the remaining 5 percent is wild, local, biodynamic or from farmers markets that do not use pesticides,” Wennifer said. “We hand make all of our sauces and tortillas, only use mineral sea salts and healthy fats and are constantly striving to create the most nutritionallypotent foods and drinks that also taste great. We’ve set our menu items at an incredible price to make it clean living accessible on a daily basis to as many families as possible.” Once you’ve ordered, take a stroll around the shop and explore their imported tonics, healing crystals and holistic beauty essentials. Wennifer knew that Costa Mesa needed a spot like this; “There’s something about The Water Brewery that attracts old souls. It’s a highvibe vortex.”
• The Water Brewery logo was drawn by Wennifer when she was pregnant. “It represents a mother goddess with a water drop and captures the heart of what we’re doing here,” she said. one where ocean views, tropical vibes, and tantalizing food come together in magical synergy to give you the sweetest escape. Duke’s Huntington
Beach combines all those leisurely elements in a dining experience inspired by the islands of Hawaii. Their quintessential summer dish, the Banana Leaf Steamed Island Fish & Shrimp, takes fresh farm-to-table ingredients paired with Hawaiian snapper and plates them in a stunning presentation that evokes the beauty and enchantment of Hawaii. Executive Chef Randy Gruspe, a native of Oahu, took a culinary time machine back to his childhood to reinterpret the classic lau lau dish.
—RANDY GRUSPE
“The inspiration behind this dish goes to the style of Hawaiian food that is wrapped in banana leaves,” Chef Gruspe said. “It’s seafood, but is inspired by lau lau, which is pork and fish. It reminds me of how we cook this dish in Hawaii and it’s being done right here in our kitchen.” Chef Gruspe deconstructed the Banana Leaf Steamed Island Fish & Shrimp displaying a unique flavor profile with coconut, bamboo rice, fermented black bean sauce, bean sprouts, baby bok choy, Yuzu ponzu, sesame oil, cilantro, ginger, garlic, daikon root, shiitake mushrooms, shrimp and Hawaiian snapper. “I wanted to deconstruct this dish because everything that comes in the dish is wrapped in the banana leaf so we wanted to show what you get in it,” Chef Gruspe said. “It’s kind of a surprise. It’s done in layers, so I wanted to show that it’s not just thrown into the leaf. Layered by protein, fresh ginger, fresh garlic, daikon root and the finish is cilantro and sesame oil. It gives off a nice perfume once it hits the table.” Duke’s Huntington Beach is the closest to Hawaii you will stumble upon in Orange County. The oceanfront location is the ideal place to sip tikistyle cocktails, nibble on fish tacos and catch views of surfers and sun worshippers along the
Pacific Ocean. Duke’s features a large dining room and bar where the style is SoCal meets Waikiki modernism, making it the perfect backdrop for good island eats. The process of creating a dish for Chef Gruspe begins with thinking in terms of season. What fish is available at its peak points? What type of produce is in season? “For summer, we are going to go with a lot of light dishes,” Chef Gruspe said. “It’s going to be hot outside. We’re at the beach. So something floral, easy on the palate...that’s what we look for in the summertime. We don’t want to overload, we want to feature that special protein like in this dish.” Chef Gruspe got the culinary bug early as a child living in Hawaii, staying up past midnight while his parents were asleep to watch episodes of “Iron Chef.” “Living in Hawaii half my life and cooking this style of food makes me feel at home,” Chef Gruspe said of coming to Duke’s a little over a year ago. At Duke’s, it’s a combination of good ingredients and creative approaches to dishes, but also satisfying the beach crowd. “Focus on the particular fish, make it really good so the customer understands and not too far fetched with the flavors,” Chef Gruspe said.

Green Machine • Standard green sauce calls for tomatillos; but for Dexter, those are better for salsa, not hot sauce. So he had to create a unique recipe that used all green ingredients, while still having the familiar tastes of a standard green sauce.
The Doc is In • At the same time Dexter was touring the world and creating a hot sauce movement, he also put in serious work on a third passion— science. In 2017, Dexter graduated with a PhD in molecular biology from USC’s Keck School of Medicine.
“I grew up eating Mexican food and over the years I just started collecting different hot sauces,” Dexter said. “And then one day, I was like, ‘Gosh, I should make one of these!’” Gringo Bandito was born. This isn’t some celebrity endorsement. Dexter was able to test recipes for a couple years until finally creating the Original Red Sauce. After gifting the first batch to friends, they urged him to bring Gringo to the masses. “When we [The Offspring] first started off, we were totally DIY. No one wanted to sign us,” he explained. “We had to record everything ourselves, call the record pressing plant ourselves, even design our own album covers. And Gringo Bandito was kind of like that. I started by making 10 bottles on my stove and designed the label.” Through a longtime friend who worked at a local Albertsons in Huntington Beach, Dexter was able to get his sauce in-store. As word of the hot sauce grew, popularity and demand triggered an expansion to more Albertsons before being carried in every location. Gringo Bandito is now available online and in countries around the world. With two additional flavors now in the mix, the sizzling Super Hot Sauce and the cult-favorite Green Sauce, Dexter and Gringo Bandito are achieving their dream of bringing new and quality hot sauces to the scene. Native Knowledge • Starting in SoCal and now spreading to multiple states, The Offspring and Gringo Bandito host Sabroso Festival—a music, taco, beer and hot sauce extravaganza. Last year, reigning competitive eating champion Takeru Kobayashi ate 159 tacos in 10 minutes—a world record!

At some point in every woman’s life, she’s stood in the mirror and wondered why she didn’t look a certain way. Be it skin issues or not reaching the unachievable standards set for women, it’s almost impossible not to fall victim to this mindset. Whitney Tingle and Danielle DuBoise, founders of Sakara Life, were no different. “[Sakara Life] didn’t start out as a business, it really started as a solution to our own needs,” Danielle explained.
Native Knowledge WHITNEY TINGLE
• Sakara is sanskrit for “taking form.”
As childhood friends, Danielle moved to New York to study medicine, and Whitney made the move after she finished college to work on Wall Street. “Whitney and I hit rock bottom right around the same time,” Danielle said. Having struggled with severe, cystic acne since she was young, Whitney tried everything from lasers and antibiotics to cutting out foods with no relief. She was hopeful that New York, a city filled with top doctors and dermatologists would provide her with what she needed to rid her of the painful acne, only to find the same answers she was given before. “She just felt like no one was helping her get to the root cause and that was really her lowest low,” Danielle said. Around that same time, Danielle, who struggled with her body image, hit her low as well. “I remember being 9 years old and trying to hide diet pills in the cart at Costco when I was shopping with my mom,” she explained. “I had been informed by those around me and culture 136 LOCALE MAGAZINE

and magazines that I didn’t look like I should in a way that manifested over the years to come and I [started to rely] on diets. It was never really about my nutrition or my health; it was really about my waistline.” Before she was about to graduate, Danielle decided to participate in a 21-day-long retreat in Arizona that included a one-week water fast, followed by eating only raw foods for the duration. Once she returned, she was diagnosed with gut issues, pneumonia and a low immune system. “That was really my ‘ah-ha’ moment where I just realized that I was so willing to go to these extremes because of this body I thought I had to have or that I didn’t have,” she said. “I had strayed so far from this idea that food is nourishment and food is medicine.” Although she had been studying medicine, she was never required to take a nutrition class, so she switched paths and changed her focus. Doing so gave Danielle the opportunity to learn about the gut and microbiome, the bacteria in your gut that dictates everything about your health from your hormonal balance and energy levels, to how many calories you absorb from your food. “The way to eat for a healthy gut and microbiome is to get as many fresh plants into your diet every single day and to get a variety of color, which means a variety of nutrients,” Danielle explained. After learning about the importance of the microbiome, she and Whitney devised a meal plan for each other based on the science behind it, which helped form Sakara’s nine pillars of nutrition. After just two weeks, they started to see results. “It was the first time in 12 years that [Whitney’s] skin finally started to clear after trying so many things. And for me, my transition was realizing I spent a lifetime counting
calories and carbs and always worrying about what not to eat, when really the solution was I needed to focus on what I should eat.” After seeing tangible results, Whitney and Danielle shared this newfound information with their friends, who obviously wanted to get in on it. Once they had several clients, they took note of the importance of providing a ready-to-eat product, rather than offering just recipes. “We decided to try and make it a business. We had no idea what we were doing. We were really broke. We threw a dinner party and we sold tickets that raised about $700...that’s really how we got started,” Danielle recalled. Once word got out, Sakara Life took off. “If you create a product that really changes lives, it spreads like wildfire,” Danielle said. And spread it did! Organically reaching celebrities like Lily Aldridge, the company grew from the founders cooking in their kitchen in 2012 to now employing 100 people and delivering to all 48 continental states. “We deliver fresh so nothing is frozen. Everything has to look beautiful, it has to taste really good and it has to deliver results,” she said. In fact, within just three to five days, you can expect to see your skin glowing and a reduction in bloat, and within three weeks you’ll experience a biological and sociological change that will last for weeks to come. The best part? There’s no calorie counting and no guilt—all they ask is that you put your trust into Sakara Life and you will see real results that customers across the nation have experienced. “It’s really a personal journey. For me, the empowering part of this journey is [that] food is supposed to make you feel better, not worse,” Danielle said. “We invite you to get to know your body a little bit better and really learn how to listen.” LOCALE MAGAZINE 137

I love how they take French fashion and mix it with a little California rock 'n’ roll. I’ve always loved shoes and they always have the raddest designs! They even make sneakers with studs and patches to make my athleisure next level. 825 Newport Center Dr Newport Beach, CA 92660 949.759.1978 www.zadig-et-voltaire.com
12 P.M. REBECCA TAYLOR
• My style always changes a little with the seasons, and spring and summer is all about Rebecca Taylor! I headed there next to stock up for all the summer parties I have this month. She mixes flirty silhouettes with a femme-cool edge. I absolutely love their fun prints and patterns to help me break up my leggings and sports bra-filled days. My favorite thing about this shop is that they are all about sneakers with dresses, which is a win in this fitness girl’s book. 567 Newport Center Dr Newport Beach, CA 92660 949.610.0922 www.rebeccataylor.com

You can absolutely reach your fitness goals and still have fun along the way! CUCINA was one of the first restaurants I ever ate at when I moved from San Diego to the OC, and it’s still one of my absolute favorites! MALCOLM MCCASSY WANTS MENDID TO BRING THE WORLD TOGETHER, ONE BAG AT A TIME
Multipurpose
“Understanding your ‘why’ is one of the biggest, most powerful things [we can do] as individuals,” Malcolm McCassy began, as he tried to find the words to explain how Mendid came to be. “To understand how we are going to rise in life and build our purpose…[that’s] what’s important to us.” And that’s exactly what he’s trying to accomplish with his latest brand, Mendid—create bags that mold to your purpose. Founder of Mendid, McCassy believes that people are their own driving force; clothes and accessories do not make the person, they only play a part in their journey. "This bag is not going to literally change the person you are. Your face, your expressions, your dimples, your glow...the type of people that you gravitate around and the type of inspiration and excitement you can carry with you," he explained. Rather than trying to sell you an idea or a label, McCassey wants the brand to be part of your journey where you can use the bag for whatever you need. “Mendid is...my passion for inspiring others and developing products around that to help tell the story.”
Wrap it around your waist or carry it on one arm; Mendid bags are multi-functional and can be tailored to your needs and lifestyle. Native Knowledge With his own design in mind, McCassy recruited pro designers to help bring the product to life.
“Mendid is...my passion for inspiring others and developing products around that to help tell the story.”
It all started with his first brand, Ethika. Wanting to create what people needed while still being able to collaborate with his friends in the apparel industry, he thought outside of the box. While others were focusing on general apparel, he focused specifically on underwear. “Ethika is something that can symbolize unisex, equality, all ethnics, all ethnicities and athletics,” he explained. Connecting people from all around the world through his designs is a personal mission for McCassy. To him, it’s not just selling merchandise or having a successful business—he likes to see people embrace their purpose and become who they are meant to be. Growing up within a not-so-perfect childhood, McCassy knows his experiences have shaped who he is. More than just selling bags and accessories to people, he hopes his experiences make a real impact on his customers. Ethika, and now Mendid, were born in his garage out of his desire to want to help people realize who they are meant to be. “The world is shifting so much right now. I don't claim that I know it all. But I do believe that...this bag can inspire someone's journey."

DR. KEVIN SADATI FACIAL PLASTIC SURGEON
EVERYTHING YOU NEED TO KNOW FOR PRE-FACIAL SURGERY WRITTEN BY: SABRINA AZADI PHOTOGRAPHED BY: ROBERTO CERINI & MATHEW MARTINEZ
Beauty may be in the eye of the beholder, but that doesn’t mean we can’t give it a boost. And that’s what Dr. Kevin Sadati specializes in—he gives nature a helping hand. Having performed over 3,000 facelifts with his own method, which combines the best of traditional techniques along with his own less invasive and more holistic approach, he creates natural results.
B
Major Key Alert Dr. Sadati recommends patients use Platinum Performance, Neocutis, SkinBetter and Elta MD. “It’s the combination of the supplemental nutrition, proper skin care and correct sunscreen that will enhance the patients' post-surgical results and beyond,” he said.

“AFTER DISCUSSING THE PATIENTS’ EXPECTATIONS, I give realistic answers to their questions and goals. I show examples of their desired treatment results from my past patients and thoroughly explain the details of the process from pre-surgery to post-operative recovery. I'm with them every step of the way,” says Dr. Sadati. He also wants to destroy the myths that you have to be a certain age to get this work done. “There is no ‘right’ age for a facelift. Patients in their 40s may see results that last longer and qualify for a simpler procedure or minifacelift compared to someone in their 70s or even 80s.” But, regardless of age, it’s a big step to take. “Patients need to be emotionally ready and properly motivated for any plastic surgery. I suggest they
research the various treatment options and consult with two to three different plastic surgeons to find the right one!” He continues, “Some nonsurgical options do not produce the results that surgical options can achieve. For example, when the neck begins to sag and the muscles become weaker due to aging and environmental exposure, surgery is the only option for rejuvenation and tighter skin.” After your surgery was a success, here’s what to expect, according to Dr. Sadati: “Most of the bruising will dissipate after seven to eight days and the swelling decreases throughout one month. Normal activities can usually resume after two weeks. I advise patients that they must refrain from heavy lifting and straining for 30 days after surgery.”

Cruising on PCH up the coast of California, the glowing sun, palm trees swaying and the ocean air hitting your face makes for the perfect summer road trip—especially when you are behind the wheel of the 2018 Mercedes-Benz E 400 Cabriolet. “It’s a stunning car with or without the top down,” says General Manager of Mercedes-Benz of Laguna Niguel, Pat Bolter. “Everyone will look at you while you’re driving this car. It looks great, has plenty of power, safety and great storage in the trunk for road trip essentials and beach accessories.”

The Cabriolet has features that were made for long road trips, providing comfort and convenience while giving you the option of having the top down to take in all the stunning natural beauty that Southern California has to offer. “The roof goes up or down in 20 seconds at any speed up to 31 mph,” says Bolter.
“The E 400 is a very spacious car that’s great for road trips. It’s extremely comfortable. It has much more leg space and headroom compared to its predecessor, the E 300,” says Bolter. Adding to the comfort are the hand-stitched seats and an air scarf on the headrest. “The air scarf is a great feature because it keeps the passenger warm if you have the top down and there are chillier winds,” says Bolter. Whether you are traveling a long distance or a short trip to the beach, the MercedesBenz E 400 will take you there with ease, safety and convenience. And with 329 horsepower, it will take you there fast. “This car is the ultimate road trip vehicle,” says Bolter. “There are radars in this car to guide you along roads at whatever speed you wish to drive, so when you’re looking off the coast at the incredible views, you won’t swerve off into another lane.” Sounds like a sweet summer ride, Cali-style.

A MODERN GETAWAY at Sunset Cove Villas
Sunset Cove Villas luxury oceanfront rentals present an innovative twist on the traditional girls-night-bar-crawl.
Set atop the spellbinding coastline of Laguna Beach, Sunset Cove Villasʼ luxury oceanfront rentals present an innovative twist on the traditional girls-nightbar-crawl. This is an Orange County insider’s venue, where bachelorette guests with enough sense to stay off Facebook chase a bit of anonymity. What happens at Sunset Cove stays private, in keeping with this charming coastal town known for its art galleries and restaurant scene. Lavish and intimate all at once, eight stylish and contemporary villas allow you to walk to your new favorite sushi spot or hear the waves roll in at night.
NATIVE KNOWLEDGE • Sunset Cove features private access to sleepy Hollow Beach, and convenient garage parking so coming and going is a breeze.
• The largest villa in the collection is The Laguna, the most ideal for your bachelorette, featuring three bedrooms and sweeping panoramic ocean views of Catalina Island.
STOCK UP! • The villas' kitchens are fully equipped. All that you need to bring are groceries or call delivery to serve up a feast.
DINNER AND A SHOW • A big upside of Sunset Villas is the option to hire a private chef and entertainment to liven up the festivities. 178 LOCALE MAGAZINE
