ALOHA, BEACHES!

EDITOR'S NOTE I’ve lived in Orange County my whole life, and although we’re blessed with beautiful weather year round, there’s nothing quite like experiencing OC’s summers. I remember doing Jr. Guards, and while my sister would be placing first in the runs and swims, I would have accumulated a nice collection of seashells to bring home for our mom’s garden. I may not have been a top athlete, but I had a deep appreciation for the beach and the place we’re so fortunate to call home. As I got older, I started to realize that maybe my sister had been on to something, and that fitness might be a positive change to implement into my daily routine—okay, weekly routine. With all the different workouts there are to participate in, Pure Barre was what really hooked me. I was committed to going three times a week, which was a leap from thinking a walk around the block was significant exercise. In this issue, we put together a summer workout guide (p. 75), with tips on how to tone different parts of your body from places like Pure Barre in Orange County, OUE Skyspace in LA and AquaVie Fitness + Wellness

Club in San Diego. And, although fitness is important to stay healthy, we didn’t forget to add in tips on what to snack on post-workout. We also wanted to highlight the women making a difference in our area (p. 63). Local business owners like Taylor Beauchamp of Charlie & Me or professional drag racer, Ashley Sanford, grace these pages with tips on being a successful woman in OC. For all the foodies out there, we didn’t forget about you! Local Mexican-German eatery Taco Brat’s Killer Kielbasa will have your mouth watering (p. 120). Not to mention Duke’s Banana Leaf Steamed Island Fish & Shrimp (p. 125) that we deconstructed. We also included some up-andcoming brands like Puppies Make Me Happy (p. 132) and Mendid (p. 148), as well as a look into a beautifully designed backyard that will make you want to grab your keys and head to your nearest HomeGoods (p. 164). Whether you came here for the fitness guide, female empowerment or your daily dose of fashion inspo, this magazine will have you set for the summer.

Before Yovana Mendoza even arrived on set you could feel people buzzing with anticipation. Bebe Jean, our expert stylist, decidedly flipped through a rack of colorfully bright and trendy athletic wear while photographer Louis Rodiger checked and re-checked his equipment as if he was itching to get that perfect shot.

The beach was filled with families, tourists and teenagers running around on the basketball courts, but even with throngs of people, I could feel the energy change the moment Mendoza hit the beach. Making her way through the crowd she moved with the grace and intent of a seasoned professional, walking toward us with a definite purpose. Despite never having met her prior to the shoot, I could tell it was her a mile away. Arriving on set, her demeanor immediately softened and she happily greeted everyone with a hug and a genuine smile. Quickly jumping into her first look, a bright pink two-piece outfit, it was clear that she was most at home in workout gear and swimwear. Running around the beach as Rodiger snapped her picture, she smiled unreservedly,

laughing as she struck pose after pose, the beating sun nor the throngs of tourists tempering her cheerful attitude. Chatting between shots, we discussed her family, her favorite green drinks and her thoughts on current health trends. “Over the five years that I’ve been talking about a healthy lifestyle and how to live it, I’ve seen a lot more people becoming conscious of what they’re eating, of what they’re putting into their body,” she notes as we walk along the boardwalk. “Now you see a lot more juice bars, a lot more healthy spots...the word ‘vegan’ is on a lot more products. It’s definitely an industry that is growing and becoming more and more popular by the day, which is amazing. I’m just excited for the new generations.” Admittedly, I’m excited too. The passion with which Mendoza talks about healthy eating and mental wellness is contagious. Of course, it’s that personality and energy that endears her to millions of dedicated followers who have adopted her fitness routines, meal plans and life advice for a better body and mind. Now, I also count myself among one of her many fans.

LAZY DAISY Ò We get it. Sometimes you can’t squeeze in a workout. Here are some sneaky ways to work your abs on those days you are stretched for time: 1. When sitting at your desk, contract your ab muscles, pulling your belly button towards your spine. Hold for 10 seconds and repeat 10 times. 2. Another great ab trick to try at the office is to lift your feet off the ground, holding for 10-15 seconds at a time, 10 times. You can start off lifting one foot at a time if needed.

Bring arms back in and lower back down.”

Free to attend, free parking and open for the whole family, this annual music series is about bringing communities together. Running through Aug. 23, the concerts are held at a series of regional parks, allowing plenty of room to stretch your dancing legs! With food trucks and a beer and wine garden open at 5 p.m., and shows running from 6-8 p.m., there’s sure to be a little something for everyone.

August 2 • Sweet & Tender Hooligans and Childlyke will be playing at Mile Square Regional Park in Fountain Valley. Dubbed the “Mexican Morrissey,” Jose Maldonado leads the Hooligans—a Smiths tribute band. Childlyke is a solo project of songwriter/ producer/ musician Jon Berry. August 9

The last concert of the series will be hosted at Bluff Park at Salt Creek Beach, and a finale calls for a wild, rockin’ party. Alex spent his youth at Grand Prix Performance with his father and mentor, Jerry Palanjian, who taught him all aspects of the family business. The Irvine-based company is offering a new route from John Wayne Airport to Las Vegas beginning in late June. A midweek, one-way ticket runs at $129, with multiple daily flights on semi-private planes. The fleet is made up of Embraer 135s, which feature 30 seats with 36-inches of pitch (aka leg room), comfy leather seats and power outlets at every seat so you can

charge on the go. Your two pieces of checked baggage receive the valet treatment, so no huffing and puffing with overhead bins—they simply don’t exist in Wilcox’s world. “There’s ample room for your carry on in the stylishly-designed and LED-lit interior cabin,” Wilcox reflects. “Much of our motivation and ethos evolved from my own frustrations with commercial carriers.” You had us at standard business class legroom at accessible pricing. The posh selection of lounge snacks and in-flight nibbles may have also tipped the scale. Future destinations available out of Orange County may include Mammoth Lakes, Scottsdale and the Bay Area, as the operation looks to expand. On the technology front, JetSuiteX and sibling private charter company JetSuite recently announced that it will be the first recipient of the Zunum Aero hybrid-electric plane, which could enter service as early as 2022. Wilcox plans to refresh the fleet with up to 100 of the new planes, capable of covering up to an impressive 1,000 miles—think LA to the Bay Area in a snap while eliminating up to 80 percent of the carbon footprint left by a conventional plane. Somewhere between raw green smoothies and quiet meditation s h e h a s l e a r n e d t h e s e c r e t t o l i v i n g a h a p p i e r, h e a l t h i e r a n d more fulfilling life. Finding that balance between physical and spiritual health is what sets Mendoza apart from so many of the other fitness influencers that crowd your Instagram feed. A few m o m e n t s o n h e r s i t e , R a w v a n a , a n d i t ’s e a s y t o s e e t h a t f o r h e r, a journey to better health includes not only raw veggies and side lunges, but a pursuit of mental wellness and spiritual peace.

Mendoza’s journey started five years ago after she made a New Year’s resolution to quit smoking cigarettes and drinking alcohol for three months, a small, but attainable goal. “Six weeks into my detox of no alcohol I began to feel a little down, I guess you can say, just at a low point in my life,” she explains, recalling her past. “I began to ask myself questions like ‘Why am I here, what is my purpose here, what is my passion?’ I would wake up in the mornings and not really feel much passion or ready to take on the day.” On the advice of her father, she checked into San Diego’s Optimum Health Institute in an effort to focus on healing both her body and mind. “I basically ate raw foods and detoxed. I drank green juices, I did a three-day juice cleanse, and I just began to feel amazing benefits like increased energy, my skin cleared. [I had] more peace of mind, mental clarity. I was in this place, and I was experiencing all of these good things, and I said to myself, ‘Well, I’m just going to keep on going, I’m just going to keep doing this.’” Where others have failed, Mendoza prevailed. She began eating raw foods, juicing, meditating, exercising and focusing on herself in a way she hadn’t for years. “I began to feel a connection to myself and to a higher power again that I hadn’t felt in a long time, and it was very powerful for me,” Mendoza says. “I just felt the need to kneel down and ask forgiveness to myself, like forgiveness for not taking care of my body and for not feeding it well, for abusing substances that were

detrimental to my health. I said…I need help, like from the universe, a higher power, whatever it is.” It seems the universe answered her prayers. Five years later Mendoza is still going strong and has built a health empire of fitness programs, apps, e-books, recipes and social media pages that are followed by millions. It can be easy to lose your way when you reach the top, but Mendoza stays grounded, noting that she feels the most successful when she hears how her work positively affects a person’s life. “Honestly, being able to really make an impact by me telling my story and sharing my life, helping someone change their life as well…for me that is huge, and I’m so grateful that I can do that just by sharing my story.” She laughs, explaining that she hears from people almost daily, thanking her for helping them turn their life around. “It’s amazing, it really is amazing,” she adds, smiling. “I’m grateful for that.” Being grateful is a part of the mindfulness that Mendoza practices when she’s working on her mind, body and spirit. Trying to find a balance can be a challenge, but she explains through physical activity and healthy eating, you can improve your mental health, just as meditation and positive thoughts can work to improve your physical wellbeing. “If you’re eating junk you’re going to feel bad. If you’re putting negative thoughts into your mind you’re going to feel just like that,” she explains. “Just like there’s junk food and healthy food, there’s junk thoughts and healthy thoughts.”

With society’s current focus on mental health, it’s important to understand that healthy eating and exercise can do wonders to improve one’s mental well-being, and Mendoza has experienced these benefits first hand. Previously suffering from anxiety, she credits her change of life to improvements in her mental health. “Once I began to live healthier, and I stopped drinking and smoking, and I started to sleep well, hydrate and eat plant foods, I stopped taking my anxiety pills,” she explains. “For me, that was huge, and just the mental clarity…I experienced. There are many cases where people are suffering from depression, but they start adopting healthier habits, and they heal. It just naturally disappears.” While Rawvana doesn’t tote recipes for better mental health or claim to improve your spirituality with a green smoothie, the intention is evident in everything Mendoza does. Well-rounded, positive health is at the apex of what she teaches. Fans follow her social media feeds for her personality, her honesty and perhaps, in part, to find some of that harmony within their own lives. “I show them the way that I live my life,” she smiles. “I just share my life with them, and I hope that through them seeing how I live they can apply it to theirs and see what works for them.” Everyone has their own fitness goals—better mental health, spiritual wellness, dropping a few pounds for swimsuit season—but Mendoza stresses the importance of listening to your body, educating yourself on what you need and discovering what is best for you. She admits it was one of her fallacies when she started. “I remember at the beginning I was just wanting to do everything super perfect and do it by the book and I neglected listening to my body and what it wanted and what it needed,” she notes, matter-of-factly. “Listen to your body and eat intuitively.” Mendoza suggests that when we focus on what is best for our bodies and mind, the benefits will naturally

follow. “Food is connected to our body, mind and spirit. What we eat has an impact on how we feel, what we think and even how we act,” she explains. “Everything affects us. What thoughts are we having, are we talking to ourselves, how do we see ourselves—and that has an impact on our performance in life and how we feel.” She believes everything we surround ourselves with, from the food we eat to the people we interact with, is interconnected. “The decisions that we make are not just going to impact our own life—they’re going to impact the world around us. Energetically it has an impact on everyone else, so we are responsible for others in our own thoughts and actions.” She finds that as trends in health and wellness develop, she’s beginning to see this consciousness of character within the people around her. While food trends are ever-evolving, she notes a slow progression of health trends that are focused on understanding not only the change in nutrition but the change in lifestyle. “People [are] eating less processed foods and turning more to plant-based foods—more foods from the earth. People are just becoming more conscious of how they’re talking to themselves,” she explains. “Meditation and exercise are becoming a lot more popular, so I think that the new trends are going to be just conscious people. They’re going to be more conscious of what they’re eating, just more conscious of how to live a healthier lifestyle.” It’s this consciousness of mind, body and spirit that Mendoza tries to live daily. Even with her success, she is always working to improve herself. “My personal goal over the next year [is to be] more conscious every day. Be more assertive in perception checking—checking my perception toward life, or toward anything really, because sometimes I feel like it can be easy to assume things,” she explains. “Just very conscious of how I’m acting. I feel like I’ve had this goal for a while, just becoming the best version of myself every single day in any way that I can.”

We are trying to eat healthier at the restaurant so we came up with this aioli recipe. It’s really nice, and gives a brightness to the grilled octopus.”

SWISH, SWISH, FISH “We have had a fried octopus dish in San Diego for awhile so we recreated it into something grilled, which was a really fun and really delicious challenge. Octopus occasionally can be fishy tasting so we were trying to appeal to people who don’t necessarily like octopus. So getting a really nice char and smokiness helps. Then, I slow roasted the cherry tomatoes with brown sugar, salt, pepper, chipotle powder, garlic, and grapeseed oil at 275 degrees for four hours. Costa Mesa, a city known for its unique restaurants and bars, has added a new taco spot to its list— but not just any taco spot. Chef Thomas Curran and Co-Owner Chance Owen, were originally planning to open a smoked meats restaurant in the Lido Village. When they heard the iconic taco stand was slated to be torn down, they immediately redirected their focus and took action! Thus Taco Brat, a Mexican-German fusion restaurant with smoked meats and excellent beer, was born. Named for its combination of tacos and bratwurst, this eatery offers a variety of Mexican and German-inspired dishes along with an assorted list of craft beers, both bottled and on tap. Can’t decide on what to order? Its well-known Killer Kielbasa, made with smoked Kielbasa slices, bacon, agave lime slaw, spicy glaze, cotija cheese and green onion served on one of their fresh, German pretzel buns, is an excellent choice. As Thomas explained, it’s the “smokiness and saltiness of sausage and bacon” that goes well with this beer because it doesn’t take away from the bold flavors featured in their dishes. Known best as “the heart of water and wellness,” the owners Wennifer Lin-Haver and Einar Haver had set out to create a healthy space that brought food and water at its highest potential—together. Wennifer had studied cross-cultural birthing traditions, spiritual midwifery and ecomothering at UCLA and completed her field work on the subjects on the Big Island of Hawaii. “The discussion of water and its cleanliness and potency were fresh in my mind especially with the pregnancy of our third child,” she explained. “We knew in order to make the water we desired, we needed put our heart into it and create it ourselves.”

Their quintessential summer dish, the Banana Leaf Steamed Island Fish & Shrimp, takes fresh farm-to-table ingredients paired with Hawaiian snapper and plates them in a stunning presentation that evokes the beauty and enchantment of Hawaii. Executive Chef Randy Gruspe, a native of Oahu, took a culinary time machine back to his childhood to reinterpret the classic lau lau dish.

“The inspiration behind this dish goes to the style of Hawaiian food that is wrapped in banana leaves,” Chef Gruspe said. “It’s seafood, but is inspired by lau lau, which is pork and fish. It reminds me of how we cook this dish in Hawaii and it’s being done right here in our kitchen.” Chef Gruspe deconstructed the Banana Leaf Steamed Island Fish & Shrimp displaying a unique flavor profile with coconut, bamboo rice, fermented black bean sauce, bean sprouts, baby bok choy, Yuzu ponzu, sesame oil, cilantro, ginger, garlic, daikon root, shiitake mushrooms, shrimp and Hawaiian snapper. “I wanted to deconstruct this dish because everything that comes in the dish is wrapped in the banana leaf so we wanted to show what you get in it,” Chef Gruspe said. “It’s kind of a surprise. It’s done in layers, so I wanted to show that it’s not just thrown into the leaf. Layered by protein, fresh ginger, fresh garlic, daikon root and the finish is cilantro and sesame oil. It gives off a nice perfume once it hits the table.” Duke’s Huntington Beach is the closest to Hawaii you will stumble upon in Orange County. The oceanfront location is the ideal place to sip tikistyle cocktails, nibble on fish tacos and catch views of surfers and sun worshippers along the

Pacific Ocean. Duke’s features a large dining room and bar where the style is SoCal meets Waikiki modernism, making it the perfect backdrop for good island eats. The process of creating a dish for Chef Gruspe begins with thinking in terms of season. What fish is available at its peak points? What type of produce is in season? “For summer, we are going to go with a lot of light dishes,” Chef Gruspe said. “It’s going to be hot outside. We’re at the beach. So something floral, easy on the palate...that’s what we look for in the summertime. We don’t want to overload, we want to feature that special protein like in this dish.” Chef Gruspe got the culinary bug early as a child living in Hawaii, staying up past midnight while his parents were asleep to watch episodes of “Iron Chef.” “Living in Hawaii half my life and cooking this style of food makes me feel at home,” Chef Gruspe said of coming to Duke’s a little over a year ago. At Duke’s, it’s a combination of good ingredients and creative approaches to dishes, but also satisfying the beach crowd. “Focus on the particular fish, make it really good so the customer understands and not too far fetched with the flavors,” Chef Gruspe said.

Best known as the lead singer of Southern California alt-rockers, The Offspring, Dexter Holland and his band aren’t shy about having a little bite. While he has never considered himself a cook, growing up in Southern California, brought the world of hot sauce straight to his lips.

Green Machine • Standard green sauce calls for tomatillos; but for Dexter, those are better for salsa, not hot sauce. So he had to create a unique recipe that used all green ingredients, while still having the familiar tastes of a standard green sauce.

The Doc is In • At the same time Dexter was touring the world and creating a hot sauce movement, he also put in serious work on a third passion— science. In 2017, Dexter graduated with a PhD in molecular biology from USC’s Keck School of Medicine.

“I grew up eating Mexican food and over the years I just started collecting different hot sauces,” Dexter said. “And then one day, I was like, ‘Gosh, I should make one of these!’” Gringo Bandito was born. This isn’t some celebrity endorsement. Dexter was able to test recipes for a couple years until finally creating the Original Red Sauce. After gifting the first batch to friends, they urged him to bring Gringo to the masses. “When we [The Offspring] first started off, we were totally DIY. No one wanted to sign us,” he explained. “We had to record everything ourselves, call the record pressing plant ourselves, even design our own album covers. And Gringo Bandito was kind of like that. I started by making 10 bottles on my stove and designed the label.” Through a longtime friend who worked at a local Albertsons in Huntington Beach, Dexter was able to get his sauce in-store. As word of the hot sauce grew, popularity and demand triggered an expansion to more Albertsons before being carried in every location. Gringo Bandito is now available online and in countries around the world. With two additional flavors now in the mix, the sizzling Super Hot Sauce and the cult-favorite Green Sauce, Dexter and Gringo Bandito are achieving their dream of bringing new and quality hot sauces to the scene. At some point in every woman’s life, she’s stood in the mirror and wondered why she didn’t look a certain way. Be it skin issues or not reaching the unachievable standards set for women, it’s almost impossible not to fall victim to this mindset. Whitney Tingle and Danielle DuBoise, founders of Sakara Life, were no different. “[Sakara Life] didn’t start out as a business, it really started as a solution to our own needs,” Danielle explained.

As childhood friends, Danielle moved to New York to study medicine, and Whitney made the move after she finished college to work on Wall Street. “Whitney and I hit rock bottom right around the same time,” Danielle said. Having struggled with severe, cystic acne since she was young, Whitney tried everything from lasers and antibiotics to cutting out foods with no relief. She was hopeful that New York, a city filled with top doctors and dermatologists would provide her with what she needed to rid her of the painful acne, only to find the same answers she was given before. “She just felt like no one was helping her get to the root cause and that was really her lowest low,” Danielle said. Around that same time, Danielle, who struggled with her body image, hit her low as well. “I remember being 9 years old and trying to hide diet pills in the cart at Costco when I was shopping with my mom,” she explained. “I had been informed by those around me and culture 136 LOCALE MAGAZINE

and magazines that I didn’t look like I should in a way that manifested over the years to come and I [started to rely] on diets. It was never really about my nutrition or my health; it was really about my waistline.” Before she was about to graduate, Danielle decided to participate in a 21-day-long retreat in Arizona that included a one-week water fast, followed by eating only raw foods for the duration. Once she returned, she was diagnosed with gut issues, pneumonia and a low immune system. “That was really my ‘ah-ha’ moment where I just realized that I was so willing to go to these extremes because of this body I thought I had to have or that I didn’t have,” she said. “I had strayed so far from this idea that food is nourishment and food is medicine.” Although she had been studying medicine, she was never required to take a nutrition class, so she switched paths and changed her focus. Doing so gave Danielle the opportunity to learn about the gut and microbiome, the bacteria in your gut that dictates everything about your health from your hormonal balance and energy levels, to how many calories you absorb from your food. “The way to eat for a healthy gut and microbiome is to get as many fresh plants into your diet every single day and to get a variety of color, which means a variety of nutrients,” Danielle explained. After learning about the importance of the microbiome, she and Whitney devised a meal plan for each other based on the science behind it, which helped form Sakara’s nine pillars of nutrition. After just two weeks, they started to see results. “It was the first time in 12 years that [Whitney’s] skin finally started to clear after trying so many things. And for me, my transition was realizing I spent a lifetime counting

calories and carbs and always worrying about what not to eat, when really the solution was I needed to focus on what I should eat.” After seeing tangible results, Whitney and Danielle shared this newfound information with their friends, who obviously wanted to get in on it. Once they had several clients, they took note of the importance of providing a ready-to-eat product, rather than offering just recipes. “We decided to try and make it a business. We had no idea what we were doing. We were really broke. We threw a dinner party and we sold tickets that raised about $700...that’s really how we got started,” Danielle recalled. Once word got out, Sakara Life took off. “If you create a product that really changes lives, it spreads like wildfire,” Danielle said. And spread it did! Organically reaching celebrities like Lily Aldridge, the company grew from the founders cooking in their kitchen in 2012 to now employing 100 people and delivering to all 48 continental states. “We deliver fresh so nothing is frozen.
