A NOTE FROM OUR
PUBLISHER Home has never had an address for me. From my earliest recollection, our family was loading up a moving truck nearly every year. Mostly, we moved around the same city, usually less than a few miles from our previous address. We had a couple of larger moves, including a move my senior year of high school that took me from my home state of California to Flagstaff, AZ. The desire to change homes so rapidly must be genetic. My dad was a mover, his dad was a mover and from what I can tell our family has always been on the move. I have carried on with this tradition, and as of writing this, I am now living in my 35th house in the last 38 years. Home has always been more of a feeling. Home is the way you fold your towels, the way the house smells when your mom is cooking and the people you choose to snuggle on the couch with. Home is where the people I care the most about are. On Oct. 20 my definition of a home will change forever. Even though my fiancé Erin and I have lived together for almost five years and been engaged for more than two, the celebration and ceremony on that date in October will make home mean so much more to me. It will be how we fold our towels, the way our cooking makes the house smell and the snuggles on the couch with our family that will mean home to me for the rest of my life. Erin Frances Price did not exist to me before Feb. 5, 2012. I didn't even know the day before that
I needed her, but in those five years since, she has become my cheerleader, support system, travel partner, stepmom to my children, fiancé and now wife. I now cannot imagine existence without her and any day away from her is a day away from home. Erin, if you are reading this for the first time or the fifth, I hope these words I stole from Edward Sharpe ring true to you and become more real as the years wear on, ˮHome is wherever I'm with you.ˮ Now, back to our regularly scheduled programming. MAKING THE ISSUE Up, up and away we drove into the Hollywood Hills, in search of the location for our cover shoot with “Flipping Out” star, Jeff Lewis. Through winding, narrow roads, we drove as though we were seasoned Italians navigating the Tuscan countryside. Peekaboo views of Los Angeles flashed in my peripherals while I made sure to keep my eyes on the road. The house was hidden away, but its discreet facade hid what can only be described as magnificent. When Lewis arrived, he voiced a similar reaction. He said with wide eyes, “These views are insane!” Photographer Ryan Hensley wasted no time snapping shot after shot. While West and Lewis swapped stories about their kids, Lewis’ playful demeanor made for some fantastic photos. “He was great to work with! He was very nice and receptive to our ideas and very collaborative,” said Hensley. With the help of beauty stylists Debbie Carey and Ivonne Herrera, and wardrobe stylist Claudia Alvarado, it only took a few minutes to pull together looks that best mirrored Lewis’ confidence and style, as well as his aim for perfection. The elegant, crisp decor with the backdrop of the bustling mega-city matched Lewis’ refined attire but zero-bullshit attitude. His partner, Gage Edward, was on deck, managing the details like a rolled sleeve or a hair out of place. His attentiveness and their witty banter are nothing short of #relationshipgoals. Within a couple hours, West had captured a solid collection worthy of our subject. And just in the nick of time, Lewis was ready to go on with his busy day of being a new dad and a businessman. “My ADD is kicking in,” he said with a smile. While our time was full of laughs and smiles, that was our cue to wrap it up, but not without a few Insta-pics of that view!

Nearly $130 million will exchange hands on Nov. 3 and 4, and with all that cash on the line, you understand why the Breeders’ Cup is considered the Super Bowl and World Series all rolled into one.
The showcase horse racing event of the year arrives this November in San Diego, and enthusiasts are in for a thrill ride of celebrities, gambling and one of sport's finest events. For the first time, Del Mar Thoroughbred Club has the honor of hosting the annual Breeders’ Cup World Championships.

High fashion will meet a high profile crowd, featuring members of the Breeders’ Cup Celebrity Ambassadors Program like Bobby Flay, Elizabeth Banks and Kate Upton. Nearly $130 million will exchange hands on Nov. 3 and 4, and with all that cash on the line, you understand why the Breeders’ Cup is considered the Super Bowl and World Series all rolled into one. “Because there is so much prestige and so much money on the line, the racing is always the most important aspect of the day,” says Craig Dado, Executive VP and CMO of Del Mar. Thirteen Grade I races over two days will create magic of their own as horses from all over the world
compete for over $28 million in prize money. “I’ve learned to say thank you in many languages,” says Del Mar Mayor Terry Sinnott. Del Mar is readying itself, and sparing no expense to accommodate the cosmopolitan crowd. A $4.5 million facelift will bring in a new 8mm Daktronics video board, an additional 900 box seats and a Trackside Marquee and Chalet housing almost 2,000 guests. Over the course of 2017, 80 races held in 13 countries decide which horses will run in the Breeders’ Cup. “The top horse in the world, Arrogate, is very likely to run,” says Dado. The best of the best are coming to San Diego and there’s plenty for locals to enjoy. With over $75 million in anticipated economic impact, San Diego included a 5k run, golf tournament, Belly Up concerts and food and drink festivals in Del Mar. Festivities will occur all week, mingling San Diego’s finest with visitors from all over the world.

Andrew Ilsley OWNER OF CANNERY VILLAGE CASEGOODS Q: How did you become a furniture designer? Andrew Ilsley: It was apparent that producing quality work would require a closer relationship between design and fabrication than is achievable in a traditional office setting. I decided to start my own shop in [the] early 2000s in a 100-year-old wood shop in the Cannery Village of Newport Beach. Q: What are your favorite materials to work with? AI: Working with unprocessed raw materials allows unique characteristics to be featured in a design—characteristics that are only present in that particular specimen. It used to be the norm to edit out irregularities but now they are highly valued for their uniqueness. I think we like to see evidence of where things come from and how they are made. Q: What are the emerging trends for homes in Orange County? AI: Now that so little is manufactured in the US, it can
be difficult to know where your products are being sourced from, their effect on the environment and how workers are being treated. Consumers are starting to demand more control over what goes into their homes by proactively choosing products that contribute to the common good. Q: What is your most important piece of advice for people that want to redesign the look of their home? AI: The best results are usually a product of quality-of-attention and time. Don’t be afraid to allow your curiosity and inspiration lead you in surprising directions and give your considerations time to develop. Q: What is your personal favorite piece of furniture? AI: I get excited by a well-placed towel hook! How much I like a piece is usually determined by how well it serves the space and the story it tells. As a general rule, a piece of furniture will only be as good as its fit in the context of the space.

Q: How did you start working for the Irvine Company Apartments? Bruno Viterbo: I led a boutique interior design firm in New York and had the opportunity to work on some of the most iconic luxury hotels in the world. I’ve experienced first hand the way people live and what their aspirations are in places that have incredibly diverse cultures. This knowledge has proven to be very valuable in my work at Irvine Company because Orange County is a destination for people from all over the world, and the success in what we do is the result of understanding how to provide a living experience that fulfills the combined expectations of aesthetics, quality, community, social living and technology. Q: What are your favorite ways to relax and unwind in OC? BV: I grew up in Portugal, which has a coast that is very similar to Southern California—same ocean exposure, similar climate and attitudes. So I feel very much at home with the benefit that I have a whole new region to explore. I do love the opportunities to bike along the trails, and we have discovered some great food destinations! BV: Southern California has a long tradition as a market for high-quality apartment communities. Social media provides an additional layer to enhance the sense of community and how residents interact with one another. Q: What are your favorite ways to relax and unwind in Orange County? EM: I’m a huge fan of Disneyland, there is always something fun and different to explore. It’s one of my favorite places in the whole world.
Q: What has been your absolute favorite part of working at Malden Station Apartments? EM: I love the location, the residents are wonderful and it has been so awesome getting to know them! I’m also new to a mid-rise property so it has been an exciting learning experience.

Tyler Stanaland: Carrying on the family name is an incredible opportunity and responsibility. I have some big shoes to fill, but am lucky enough to be mentored and taught by the best in the business—my dad. Q: What are your favorite places to relax and unwind in Orange County? JS: That's a hard question. There are so many options. My favorites though are the beach and a good sunset, my boat, the Renaissance ClubSport, Cafe Heidelberg and, last but not least, The Montage. TS: My favorite place to unwind has and always will be the beaches of Laguna. It's a really unique and beautiful stretch of coastline and I'm lucky enough to have been born and raised on its shores. dad, and constantly in awe and amazed by the incredible homes our community has to offer. Q: What is the best piece of advice you have ever received? JS: Always stay true to your word. Do what you say you are going to do and put your client’s interests before your own. TS: My dad's always shown me the importance of integrity, both personally and in business. A successful real estate career is about creating long term business relationships with clients and that’s rooted in being trustworthy and hardworking. Q: Laguna Beach just celebrated its 90th year. What is your favorite Laguna Beach memory? JS: Being born and raised here, as well as raising my children here, there are so many. I was fortunate enough to grow up in an ocean front property on Victoria Beach. I grew up and am raising my children and doing all of the same with them. In my opinion, there is no better place to live on the planet. TS: It's hard to narrow down my experiences in Laguna Beach to just one, but like my dad, most of my favorite memories are from the beach as well. He taught me to skimboard and surf basically before I could swim. As I got older I was lucky enough to pursue a professional surf career and travel the world and I can absolutely attribute that success to the early days in the water my dad.

On a typical Los Angeles summer day, the temperature is as hot as the property values and the newest vegan restaurant down the street. While looking back, he stressed that it wasn't necessarily his surroundings that led him to where he is now. “We are influenced by our parents. My dad wanted me to be an attorney,” he said. I couldn’t disagree that he would have been a fantastic lawyer. But, after changing his major multiple times to topics like prelaw and political science, it was an elective that really stuck. In order to fulfill an art requirement, Lewis signed up for an interior design course, figuring that it would be the easiest. Instead, he fell in love with it. The class sparked an interest that he never realized existed.

Still speaking to the past, Lewis’ relationship with his father and the lessons that he learned are pivotal, not only to his success, but how he approaches balancing his career and being a father himself. “My dad had a big influence on me. He is a very hard worker, very smart and adaptable.” Aside from his nine to five, Lewis' dad had three other jobs, and was always emphasizing the value of getting things done and understanding how money works. “I never knew anything else. It is the norm to work late, to work weekends.” In hindsight, Lewis digressed that his dad “could have had a bit more balance. There could have been a little bit more family time.” But he was quick to retrieve the value of his father’s training. “Kids are deprived of important
information,” he explained. With pride, he sat up a bit straighter and expressed with a genuine tone of appreciation that “whatever his faults were, my dad raised three, self-sufficient, independent boys.” When it comes to raising his own little girl, Monroe, the focus has shifted even more so to working smarter as opposed to harder. “Now, we don’t have a choice. There is only so much time in the day. I want to spend time with the baby and be involved. I want to be there when she wakes up in the morning and I want to be there when she goes to bed.” He lovingly recounts moments that have made him realize how important that extra time can be. “I’ve started giving her her morning bottle, and I swear, it’s a bonding process that I didn't realize I was missing until now.” And Monroe is so full of life and baby-blissful joy that it is no wonder that Lewis feels the urge to be with her more often. “I'm trying to pay attention to what her interests are, and right now it's music. She likes to sing. Oh, and she likes books. Maybe she’ll be a librarian,” he joked as he rolled his eyes.

At this point in his life, Lewis has developed a greater sense of appreciation, not just for his family, “but for every dollar that comes through my hands,” he admitted. “I do feel very blessed.

I took a good hard look at my success and realized it was all about opportunity. You have to recognize it and take advantage. And, I ask for what I want. I'm not ashamed.” That opportunism and honesty has paid off. “People will posture and pretend that they're more successful. That blocks opportunities. By me asking for help, the opportunities will show up. I'm not embarrassed to say, ‘I don't have all the money to do this deal.’ I find that people are willing to work with you to figure out the solution. They respect someone who comes up and flat out puts it all out on the table. I just pitch and pitch and pitch until somebody bites.” And boy, do they bite. When those projects do take off, Lewis has developed a system that avoids the speed bumps and roadblocks that he has encountered throughout the years. “Every project is different and you are attracted to each project for different reasons.” One major factor that comes into play is the clients. “There are people that are never happy, and when people are unhappy, especially in their marriage, they have a baby or buy a new house. It’s a distraction that they think will help, but it makes it worse.” Having witnessed two clients’ divorces occur as the result of a flip, Lewis and Edward have perfected vetting people. He is a researcher at heart. “I am just naturally inquisitive,” and it makes the job a lot less messy. Lewis’ aesthetic has a definite California vibe. It is somewhat versatile, leaning a bit more contemporary. He calls it “traditional with an edge.” Those who watch his show can attest to his taste. It has led to the development of the Jeff Lewis Company, which has pumped out impressive product lines such as tiles, barn doors, rugs and paint

colors, of which will be relaunched in the fall with 20 more colors and at a lower price. He hopes to get into lighting, but some kinks need to be smoothed out first. As problems are identified, Lewis is quick to search for solutions. He wants to fix what isn't working. Blame it on his Obsessive Compulsive Personality Disorder (OCPD), but it gives him a competitive edge amongst his peers. “My need for cleanliness and order and perfection has helped me build what I think is a good quality product. I see things that other people do not see and it is a little to the extreme.” He is confident, proud and unwavering, and that really is how it should be in this industry. The same cannot be said of some of his past employees. He’s been doing this a long time, so when someone comes in thinking they know all the answers and lacks true grit and passion, Lewis is all about weeding out the weaklings. “I think what is important to me, number one, is work ethic. I had a real problem with young people that don't necessarily have an appreciation for the job or the money.” There is this sense of entitlement that he cannot stand, having worked his tail off for years, day in and day out. “No more millennials. The last two people I hired are in their 50s and 60s. They work hard and will do what it takes. Instead, these kids want to camp for two weeks and make enough money to pursue other interests. I need people that are willing to make concessions. You need people that are on your same wavelength.” Recently, Lewis lost two valuable employees, one of six years (Vanina) and one of 18 years (Zoila). He paused, looking off into the stunning view with a furrowed brow. “Those were two people I really leaned on.” But there is no

time to lament. There are simply not enough hours in the day. A good part of those busy days is documented for the world to see. Filming the show for so many years has allowed for Lewis to grow accustomed to the cameras. “The show is me living my life and running my business. I'm not selfedited. I've said a lot of things that I shouldn't have, and that means I am too comfortable with the cameras.” It takes a lot of energy to edit yourself, and after the initial stress and insecurity wore off, great television ensued. Fast forward to the 10th season, and Lewis seems unphased. However, what makes for good television also makes for typecast judgments. Misconceptions are part of the reason celebrities maintain that allure that makes everyone on the outside think that what they see on screen is reality. Viewers decide, season after season, who they love to hate and who they hate to love. “I think people are always surprised when they meet me that I am a nice person. I think that, unfortunately, there is the person you are at work and the person that you are after work. The show is called ‘Flipping Out,’ so anytime I lose my temper, it is guaranteed to be on screen. People don't realize that I am more rational and nicer than what the show depicts.” He doesn’t believe in trick-editing. “Listen, I can be narcissistic, but I don't think I am the self-obsessed asshole that some people think that I am.” But leave it to Lewis to be unapologetic and real. “Actually, I was kind of a dick 10 years ago, so I’ve had an evolution. It's growing up, it’s maturity.” In this reflection lies a sincerity that can be lost on those who watch the show. “You know, I don't really like confrontation. It's just unfortunate that some people take you there.” With all of the colorful personalities that make up the industry, there are individuals that will not respect you without some push-back. “I worry that one day

I will lose my temper in front of [Monroe], but then, on the other hand, I want her to learn that if people are not treating you well, and you try to respond in a nice way and they don't, and you have to lose your temper, that's life! Like, ‘Oh, you’re gonna continue walking all over me and you're not going to listen to me until I fucking lose it and start screaming at you?’ It happens a lot. It’s a part of life and a part of business.” When I met with Lewis at the start of the interview, I didn’t know what to expect. I had seen the show and had some idea of how this would go. Season 10 was about to air, and the usual flip-outs were all over the promos, promising to keep fans grabbing for the popcorn and cringing at the shade being thrown left and right, and so articulately! In the stillness amidst the Hollywood Hills, I was taken by surprise. The more we spoke, those assumptions I had were made immediately invalid. My nerves were met with a kind attentiveness that made me feel as though I was chatting with an old friend.
HOMING PIGEON • Lewis is obsessed with directions and routes and how to get to your destination quicker. Just like “The Californians” on SNL, he knows the best routes around LA, and is always offering unsolicited directions to anyone that will listen.
As we wrapped things up, I asked Lewis about any upcoming vacation plans. “We literally do not go on vacation!” I couldn’t believe it, but when he explained his reasoning it all made sense. “It’s not the cost of the trip, but more what it costs to leave business for a week. Not to be negative, but I have a window. I feel like the window is open, and I don't know how much longer these opportunities will keep coming through that window. I want to take advantage of as many opportunities as possible. When that window slams shut, then we’ll go on vacation.” I couldn't have imagined a more perfect response from someone who lives and breathes love for what they do, who they are and what they represent. So, when the time comes for Jeff Lewis to call it a day and lounge on a boat in the South of France, I wish him a “Bon Voyage!”

Road trips are always a fun way to spend some time away from home. You can always just jump in your car, start blasting some music and make your way out onto the open road, but maybe it’s best to take a step back and have your ride checked out to make sure you don’t find yourself on the side of that road. That’s when popping in to see our friends at Grand Prix Performance is a good idea.

safe journey. We always check the spare as well because there is nothing worse than finding out you have a useless spare tire when you’re stuck in the middle of nowhere,” Rankin said with a smile. Dark, starry nights are wonderful once you’ve set up your tent, but when driving you definitely want to be able to see the road and not have to worry about your car. A quick mechanical and visual check is a good next step. Make sure your fluid levels are topped off, your brakes are working properly and your lights and wiper blades are in good shape. Regarding possible emergencies, Rankin's advice is to “be a good Boy or Girl Scout and make sure you have an emergency kit ready.” She recommends having flashlights, flares, a medical kit and fire extinguisher. “And while you’re in safety mode,” she explained, “make sure you have a tire iron, a phone charger, a blanket or two and plenty of bottled water as well.” You want your trip to feel spontaneous, but you definitely want your route to be solid. So, decide on your preferred navigation tools. Rankin recommends saving Google Maps for offline use, or printing some routes out in advance in case you hit a spot with no cell reception. IF YOU WERE TO DRIVE PAST POTTER’S LANE, YOU MIGHT THINK THAT IT’S A TRENDY SPOT TO PICK UP A COFFEE OR BROWSE FOR CUTE ACCESSORIES. It’s colorful, clean
and has a garden in the middle. It’s bright, contemporary and stylish but Potter’s Lane is one of the most important structures in the country, a groundbreaking humanitarian effort that is the first of it’s kind. This custom development, made entirely of shipping containers, provides housing to homeless veterans. Leave it to Orange County to be the innovators on one of the most pressing issues in the US. 82 LOCALE MAGAZINE
WE HAVE A WINNER Potter’s Lane has won numerous awards including five Awards of Merit for the PCBC’s Golden Nugget Awards showcasing projects across the nation as well as the 2017 award for Best Affordable Housing Project. THE STRONG, SILENT TYPE Structurally, the containers used for Potter’s Lane are 106 times the strength required in residential homes, are top rated for energy-efficiency and are virtually soundproof.
Nonprofit American Family Housing developed Potter’s Lane from single-use, steel shipping containers. There are 16 custom units that were meticulously converted into 480-square-foot studio apartments by GrowthPoint Structures. These homes come furnished and have TVs, a fully equipped kitchen and dining area, linens—everything one needs in the home. There is a common area, a patio with a barbecue and a vegetable garden. In addition, the veterans also receive life-changing services such as case management, counseling, job services and computer training and rents are largely subsidized.
SAFE AND SOUND A UC Irvine study found that providing permanent supportive housing to the chronically homeless—those with a significant history of homelessness and an identified disability— could save the taxpayers of Orange County close to $42 million annually.
Homelessness in Orange County is on the rise, with 340 more homeless counted in 2017 than only two years before. For Steve Harding, a former Captain in the OC Sheriff’s Department who is now Potter’s Lane’s Director of External Relations, the project was not only one of compassion, it is common sense. “Even if your heart doesn’t tell you to help these people, your pocketbook should. It’s very expensive to have folks out on the street. It costs $45,000 per year to put a person in housing as opposed to $85,000 per year in emergency services for those living on the street.” The fact is that Orange County spends $300 million per year for services to the homeless. Many of our unsheltered homeless are veterans and they are more likely to be homeless in Orange County. Potter’s Lane provides a permanent home for those who have served as well as providing a sense of community, which provides a much needed feeling of safety. Pets are also welcome—many homeless would not even consider going anywhere without their beloved companion. As Harding points out,
“There are people that sleep in their clothes because they think that at any moment, they will be told to move on. This is their home for life if they want to stay. All we ask is that you respect the other residents and maintain the environment that is provided.” Like any other communal living situation, there are guidelines that need to be followed but they are drawn with generous strokes. Adds Harding, “Most of these veterans are very service focused, work well with structure and love being part of a team. We have meetings where anyone can bring up any issues they may have. We also have dinners and barbecues and sometimes live music.” Many businesses and individuals have been delighted to come forward to contribute to the project. Wells Fargo, Home Depot, US Bank, Pacific Premier Bank, and others have donated funds, goods and volunteers to the cause. Students from local high schools and UC Irvine and even Eagle Scout groups have come out and volunteered time and muscle to bring it all together. The future will bring more communities like Potter’s Lane and planning is underway to develop similar projects in Los Angeles and Santa Ana. There are an unlimited amount of containers and since the project can be completed so quickly— Potter’s Lane took only six months— it will be considered the ultimate solution for many US cities looking to mitigate the issue of homelessness. Harding put it simply; “Our mission is to house the homeless. We want to see this duplicated whether we do it or not. We are not trying to build an empire—we want to try to find solutions.”

Hotel Paseo, the newest venture in Palm Desert, invites you to check in for a stay at its establishment. Nestled in the Coachella Valley, Hotel Paseo is the first luxury hotel to be built in Palm Desert in 30 years. The Autograph Collection hotel contains an array of amenities and experiences to guarantee that you’ll have an enjoyable time. “[Ten years ago], our owners saw that there was something missing in the El Paseo shopping district; they thought that a luxury hotel could anchor and complement the shopping area,” said General Manager Gil Reyes. Described as an “homage to the effortless style of the Golden Era” by Reyes, the hotel is meant to provide a warm and fun environment that “empower[s] visitors and locals to find their path.” Inside the hotel, guests can check into one of the 150 rooms or the renovated 25-foot vintage 1950s Airstream Cruiser trailer located on the backyard lawn. All rooms are decorated with local artwork and equipped with smart TVs to stream Netflix, Hulu Plus, Pandora and YouTube. “It's uniquely in a position to incorporate modern technology to the overall guest experience,” said Reyes. Along with the lodgings, the hotel boasts a spa, restaurant, fitness center and pool. At the spa, you can relax with couples massages, manicures and pedicures. When I was 18, I always wanted to work on a boat and Catalina Express hired me as a deckhand. I had no experience, but I had a great mentor who took me under his wing. It was my calling. KC: My favorite thing about my job is that working at a boutique hotel we are not very restricted by guidelines. I get to really express myself. I’m in charge of the brand of our hotel, so it feels like my personal hotel. get to work with community leaders, and to be able to have the flexibility to do whatever we want to help the guests is really awesome. Q: What has been the most interesting moment during your time at Avenue of the Arts? KC: Everyday is interesting. One of the things about the hospitality business is that it is always evolving and things are always different. We get rock bands to cast and crews of Broadway shows to royalty from the Middle East to giant parties to small private wine dinners. There’s always something happening. Since we’re in such a unique location in a city that’s a center for cool, it’s really good to be a go-to place for those kinds of things.
WALK THE WALK • Costa Mesa being “the center for cool” as Chouinard says, the Avenue of the Arts Hotel is only about a five-minute walk to the Segerstrom Center of the Arts. WORTHY CONTENDER • Chouinard says the biggest challenge is standing out amongst big names, and with a Marriott and a Westin only a five-minute walk away, the challenge is even more pronounced.

Q: What inspired you to create ResortPass? Amanda Szabo: There are so many resorts in San Diego and all I wanted to do is lie by the pool, have a drink and go in the hot tub at hotels near where I live. I didn’t feel comfortable sneaking in, so I’m thinking these pools are empty a lot of the time; so why can’t I pay just to be there? I hadn’t been able to do that because hotels didn’t have a system, so I connected these two sides by providing that system for hotels to benefit from hotel day-guests. Q: Which hotels have accepted and began selling ResortPass? AS: There are a few. The first one was the Estancia La Jolla Hotel &
Spa. They had a beautiful pool and a really nice spa. They benefitted from locals looking to use their pools and cabanas. Other hotels include the Hilton San Diego Resort & Spa and the Paséa Hotel & Spa, as well as hotels in Hawaii, Texas, Florida and Arizona. Q: What is the best part about creating a way for people to have a “daycation”? AS: It makes me happy that people can enjoy luxury. They don’t have to sneak around, and the pass allows them justifying going to a hotel. It opens up more opportunities to people, and I look forward to allowing them the opportunity to experience it.

IB: I enjoy living the San Diego lifestyle by playing golf, visiting our beautiful beaches and catching sunsets whenever possible. I’m also an animal lover, and start off every morning by walking my dog.

Kathrin and Brian Smirke OWNERS OF WE ARE IN OUR ELEMENT Q: What is the Dome in the Desert? Katherine Smirke: The Dome is a secluded house in Joshua Tree. It is a place of solace and solitude that can be rented through Airbnb. Q: What inspires you to create these spaces? Brian Smirke: Before we had the Dome, we were in LA buying properties and fixing them up in terms of how people were going to live in them. The Dome gave us the ability to create a space totally devoid of what other people wanted. Knowing that it wasn’t a full-time residence, we didn’t have to be totally practical. We could design the spaces in a more interesting way and do it purely to our likes and dislikes. That was what inspired us to continue; it’s such a creative process. Q: What makes you different from other homes on Airbnb? BS: What makes us different is that we buy some of the most run-down
properties and fix them up with budget restrictions. We can reenvision and create the way we like. We like creating an experience for our guests. It’s not a place where people just come to sleep; we try to create a mood and allow the guests to experience the desert in our eyes. Anyone can book a hotel, but we don’t think they would be able to feel as connected. Q: What is your favorite part about the Airbnb business? KS: Doing this stuff is great because it gives us opportunities to be creative. Once it’s done, we have time to pursue other things we’re interested in. Of course, we have to keep in touch and see if everything is flowing smoothly. We give our guests a lot of privacy, but we enjoy hearing about their experiences. Some people even get engaged at the Dome, or have other life altering experiences. Some people have even bought their own places in the desert because they loved it so much; it makes it so special.

Q: What is your inspiration when designing? Kristina Alcocer: We have this amazing showroom with our design studio. It’s beautiful. Once you open up all the different drawers and see all the different colors and materials that we have, you can start pulling it all out and putting it all together to a vignette, which is kind of your drawing board of what you can possibly play with. That’s kind of where my inspiration comes from, and I also just look at other beautiful closet ideas that I see on Pinterest. Q: What is the process for designing a closet? KA: That’s the fun part. During the initial consultation, that’s where we first start off with just talking to the client, understanding their needs and making sure that we are a proper fit for the client. Then we measure the space and we actually sit down on the first consultation with the client, open our laptops and plot it all into our ClosetCad Pro software. It’s a really collaborative process. Q: What is a typical day for you? KA: My day is always different, and that’s what always makes it really interesting and fun. Pretty much, I have one to two 128 LOCALE MAGAZINE
appointments set for the day, and I visit the client’s home and I manage my time around that. So it’s kind of always changing, but it’s what keeps it interesting. [I have] multiple projects that are always going on, so even though I work from home, it feels like I have a very social job because I have so many clients that I’m working with. Q: How would you describe your style? KA: I’d say that my style is that I like to keep the closet very balanced. I want it to look good, and I try to start off with a focal point of that closet and then I work my way out from that point to kind of build the rest of the space around it so it can all fit together. Q: What’s your favorite part of the closet? KA: That is a tough question because my favorite is probably how the closet comes together as a whole. But, if I had to choose a favorite, it would probably be a tie between floor to ceiling angled shoe shelves behind beautiful glass doors or a large island with a quartz countertop. I commonly use these as a main focal point in the closet and then everything else comes together from there.

the kitchen is their domain. They manifest their craft by using kitchen tools and the finest ingredients to make meals. The kitchen is not only a place for work, but it is an environment for experimentation and an opportunity for cooks to express their artistry by developing tasty dishes. As the kitchen operates as their office space, what do chefs eat when they come home after the work day is over? We spoke to Karl Pfleider, Executive Chef of The Blind Pig and The Trough Sandwich Kitchen in Rancho Santa Margarita, to understand the differences between cooking at home and cooking for work.

Pfleider got his start in the culinary world during high school when he joined a new restaurant that was started by his friend’s stepfather. “My curiosity got the best of me and I asked if I could come in and help out,” said Pfleider. “I went in and started staging, which at the time was The Crosby in downtown Santa Ana.” He was eager to learn and enjoyed the work so he kept showing up to assist for months. After the unpaid stage, he worked at an Irvine food truck where he learned short order cooking and then continued building his expertise by cooking at various food establishments in the Orange County area. He joined The Blind Pig as a sous chef to Chef Josh Han, who

he met at The Crosby, and then became the Executive Chef after Han’s departure. As Executive Chef of The Blind Pig and The Trough Sandwich Kitchen, Karl Pfleider spends his time crafting delicious dishes to serve to guests. The Trough focuses on sandwiches and breakfast items while The Blind Pig, a speakeasy-style bar and restaurant, serves progressive American cuisine and eclectic alcoholic drinks. Pfleider’s favorite part about being an Executive Chef at these establishments is the “creative freedom” that allows him and his sous chefs to truly create what they want to. They are always working

MAKE THIS: Steak and Broccolini How to Make Chef Pfleider’s Favorite Meal at Home
STEAK • 10 oz. New York Steak • Kosher Salt • Fresh Cracked Pepper • Rice Oil 1. Dry off the steak and let it come to room temperature. 2. Season both sides generously with kosher salt. 3. Get the pan hot, but smoke means too hot. 4. Add layer of oil to coat the bottom of the pan. 5. Place the steak in the pan. 6. Turn the heat back on to medium and sear for two to four minutes. 7. Keep an eye on the edges that are cooking in the pan; look for nice rich brown color. When ready, the steak should come off with no resistance. 8. Flip and repeat. 9. Use a thermometer to check the internal temperature, then cook to your desired temperature. 10. When the steak is 20 degrees before your desired temperature, add a large nub of cold butter, whole garlic cloves and thyme to the pan and baste the steak until aromatics start to become very fragrant. 11. Pull the steak at 10 degrees before your desired cooking temperature then take out of the pan and place on a grate to let rest.
JASMINE RICE • 1 Cup of Dried Jasmine Rice • 2 Cups of Water • 1 1/2 tsp of Extra Virgin Olive Oil • 3 Pinches of Kosher Salt 1. Add oil and salt to water in a pot. 2. Bring to a boil. 3. Add the rice. 4. Drop the heat to lowest simmer and cover the pot. 5. Start a timer for 20 minutes. 6. Fluff the rice with a fork. 7. Put cover back on and let rest until it’s time to plate. SAUTÉED BROCCOLINI • 1 Bunch of Chopped Broccolini • 1 1/2 Tbsp of Minced Garlic • 1/2 Tbsp of Chili Flakes
on something new and looking for ingredients to experiment with. “As seasons change and things start to appear on the market, [we] bring it in and really experiment. And that’s how things usually find their way onto the menu,” said Pfleider. He describes it as a process. His team communicates with purveyors and watches the farmers market to see what ingredients will be available. Once they obtain the product, the team figures out new techniques that will add to the dishes. Their approach is analytical and strategic and they later reevaluate dishes to see if they can substitute items or improve a dish’s taste. In contrast, Pfleider views cooking at home as a means to provide him sustenance and describes his cooking style at home as “very, very simple.” “I’m at the restaurant so much because of the separate concepts, [therefore] I keep it so simple and really fast,” said Pfleider. Since he spends much of his time being creative at his job, he likes to create food that eschews the bells and whistles. He cooks for one and prefers to make dishes that can be made using one or two pans. Pfleider loves to make meals that draw from Asian flavors and he frequently makes rice, a food that he grew up eating in many childhood meals and appreciates more so now as an adult. “I love rice. That’s my guilty pleasure, I feel like I cheated myself if I have a meal that doesn't have rice in it,” said Pfleider. He usually pairs the rice with a salad and a protein such as chicken, fish or his go-to meat: steak. “[Steak] is my favorite thing to make at home. I just can’t stay away from it,” said Pfleider. The chef’s home kitchen contains only the necessary ingredients and equipment that he “needs to get by.”
He obtains ingredients from grocery stores and tries to avoid cooking vegetables and having leftovers later. “I’ve gotten really good at buying the minimum for myself enough to where I’m not gonna have anything leftover or anything that needs to be cut or cooked up later. I’m really just going per meal at home,” said Pfleider. He truly enjoys crafting the simple dishes, which is reminiscent to when his father would make similar meals for the family. Ultimately, his home cooking approach allows him to have zero waste and easily whip up a meal after a long shift at work. While his home cooked meals may not be as elaborate as the restaurant’s, it’s assuredly delicious, sustaining and satisfying nonetheless.

The remodel is all about clean lines. The colors are still red and white, Coca-Cola posters from past generations adorn the walls and while the “flying” planes have been removed, several model WWII fighter jets hover from the ceiling. The polished chrome counter’s swivel seats beckons you to take a seat and partake in an American pastime. And nothing will set the mood like the Hickory Burger. This behemoth is a stacked burger with thick cut bacon,
onion rings and doused in a sweet and tangy barbecue sauce. When the burger is placed in front of your now widened eyes, each layer gives you a wink. Biting into it, you get the hearty, smoky bacon, then comes the crispy onion rings and the bite of the barbecue sauce. Of course, there is no Hickory Burger without the meat. This recipe is a fan favorite; the same high quality burger patty, juicy meat you’ve come to know and love. With each distinct flavor comes a pleasant harmony that does not bombard the senses. It’s a millennial paradise with an inviting ambiance allowing them to share food and socialize in a fun and modern setting. It’s also the first restaurant in Costa Mesa to dedicate the majority of their menu to just skewers along with dumplings, noodles, salads and rice.

Chef Breana Thomas’ patio is surrounded by wood and greenery elements. With a large green bush wall that blocks her yard from the outside world, the cozy space is filled with plants on trellises, succulents in ceramics and a larger wooden table-bench underneath fairy lights. Near the bench is a blue sign that says “be grateful” with an image of a kitchen grater. These charming details in the chef’s yard reflect how important nature is to the feel and look of the patio. Plant-based is not just an aspect that characterizes her home, but it is an integral part of the food she serves in her culinary business Nutrivenience.

Thomas' culinary roots began in her childhood where she developed a passion for cooking after her parents always created tasty and extravagant meals. However, it wasn’t until she started working at True Food Kitchen where she began to focus on health, nutrition and wellness. “It added purpose to something that was already my hobby,” said Thomas.
She turned her hobby into a career by going to culinary school at The Art Institute and studying holistic nutrition. She embarked on a career as a personal chef where she noticed a recurring request that her clients all wanted—meals that would help them to lose weight. Thomas experimented with her clients by trying various fads, most of which ended up being unsuccessful and unhealthy. Nonetheless, she found that a diet based on plants and whole foods worked best for herself and her clients. Not only did they lose weight, but felt great while doing it. After recommending and serving this food to a few of her clients, she received more requests as more individuals were referred and drawn to her service. In January 2016, she took the leap to help even more people live healthy lifestyles with her meal program 160 LOCALE MAGAZINE
Nutrivenience. Since day one, her goal has been to “make health readily available” through plant-based, whole foods. Nutrivenience “nourishes the entire body with whole, live, nutrientdense meals and cold-pressed, organic juice.” The meals are 100 percent vegan and omit all animal products and processed foods. The program focuses on boosting energy, immunity and overall health through a combination of cleansing and fasting. Customers can choose a three-day or five-day cleanse in which they receive breakfast, lunch, dinner, a snack, green juice or almond milk and vegetable broth each day. Each meal comes in a plant-based container or a recyclable glass bottle denoting the day, mealtime, dish name, ingredient list and other nutritional guidelines. To provide convenience, customers have the option to receive home deliveries or pick up their meals at indoor cycling studio UNION Ryde in Newport Beach. Thomas carefully crafts the vegan meals in a tasty and fun way so it’s not solely salads, whole grains or raw vegetables. “We try to be creative. Like take a salad and construct it in a different way. We’ll do burritos wrapped in greens instead of a

Order Up Thomas’ all time favorite dish on the Nutrivenience menu is the Chili Cheese Fries made with mixed root vegetables and a vegan cheese sauce. She also loves the strawberry rhubarb granola. Just Keep Spinning Thomas has been a spin class instructor for over two years. Spin helps clear her mind and she loves that she can be 100 percent present and be herself.

We’re trying to break the healthy food stigma by making our meals approachable as well as delicious,” said Thomas. She switches up the menu each month and plans it by considering what produce is in season as well as aspects like the weather and habits in those months. “We focus on things that are going to support your lifestyle during those months essentially. For example, in the summer we use ingredients that are cooling, hydrating, and give extra support to your skin because of increased sun exposure.” said Thomas. While most individuals initially try Nutrivenience to lose weight, they are pleasantly surprised to find that what they receive is more than just weight loss. Customers have told Thomas that they have not only lost weight, but feel refreshed with healthier skin, better digestion, increased mental clarity, higher quality sleep and more energy after a cleanse. To continue seeing these effects, she recommends that customers complete a five-day cleanse each month. In her business, Thomas values building personal relationships especially with the nature of her

product and service. “I think feeding people is really personal. It’s not like you’re selling an article of clothing or a piece of jewelry. You’re giving someone something that they're going to put inside their body that can affect their health, good or bad,” said Thomas. She likes to play a hand in every aspect from planning the menu, making meals from scratch, checking in with customers through their cleanse and delivering meals with her team every Sunday and Wednesday. Since her goal is to continue building a community, Thomas would love to do wellness retreats involving fitness and nutrition in the future. As her business continues to grow, she has learned the value of patience and gained the knowledge that she’s making a difference in people’s lives through customer’s emails, messages and feedback. “Sometimes it brings me to tears reading those. It’s just so rewarding,” said Thomas with a smile.

I get a high from making people laugh, making people feel and relate to my characters,” said Mattfeld.

Día De Los Muertos (Day of the Dead) is a cultural holiday that honors exactly that. The Mexican tradition suggests that on Nov. 1-2, the dead awaken to share in their feast and join in on the celebration. Día De Los Muertos is a celebration of life; not just our own, but those who have come before us. It is believed that new life comes from death and celebrating the dearly departed’s life with festivities rather than grieving would be a more proper way to pay our respects. The tradition of Día De Los Muertos includes one fundamental component called the ofrenda (altar). These ofrendas are usually beautifully decorated with several symbols and offerings that help welcome back lost loved ones: candles to light the journey, petals of marigold flowers to leave a trail to follow home, Monarch butterflies symbolizing the belief that they carry the souls of the departed and sugar skulls, which harness the color and joy of life. With the vigor of old traditions and modern fiesta, Modelo Especial embodies the spirit of Día De Los Muertos. to 23 restaurants and boutiques, which are all arranged to fit in a puzzle shape.

Q: What about The District at Tustin Legacy drew you to open your first Union Market there? Andrea Young: Actually, they approached me. But when I went to visit the mall to see the space, I just knew it was a perfect fit. The feeling I got from the management/landlord, which is key, was fantastic and I still feel the same three years later.

Q: What makes the Union Market Tustin different from other retail and restaurant concepts? AY: We are not just a food hall, we have it all: retail, restaurants, bar, specialty shops, live music and a music producing venue. We are an experience!

The Center Andrea Young co-owns The Central Bar in the middle of the market. With its close proximity to the stage, it allows visitors to eat and drink while listening to live music. What’s in a Name: The Union Market’s name derives from the definition of union (“the act of being joined”), which best describes its purpose—to work together to be successful and bring the community together.
Q: What was your inspiration when designing the aesthetic of Union Market Tustin? AY: I wanted a warm and hip environment that’s pretty neutral with some small design aspects. Nothing over the top so when the tenants design their own spaces, they stand out. Q: The marketplace is set up as a close-knit community. How did you decide to divide the space to accommodate a variety of different restaurants and shops? AY: When we reached out to prospective tenants, we knew that we wanted 50 percent food and 50 percent other shops. So based on our tenant list, we designed the layout and what worked best for everyone. Q: How has the Union Market grown and developed since opening in 2014?
AY: We have definitely come into our own, all the tenants are flourishing and we have constant foot traffic. It takes time but we did it! Q: What is your favorite item that you've purchased from a boutique here in the center? AY: I love my small retailers so much, I bought the Grand Bazaar from Spice & Tulips—I use it daily. I also love the jewelry from The Shangri-La, I think I wear her earrings every day. I bought the cutest baby outfit at The Treehouse for my niece. She loved it. And I never go wrong at Luella Boutique when I need a cute new outfit. Q: What is something unique about the Union Market Tustin that most visitors don't know about? AY: Well, what is so exciting for me is that my grandfather was stationed on this exact land in the Marine Corps Air Station in the ‘40s and 80 years later I'm ‘stationed’ here. Q: What is the most rewarding part about owning and developing concepts? AY: I just love when I walk around and hear all the amazing comments from our shoppers. Sometimes I sit at the bar just to listen to the chatter.

Orange County knows how to have a good time. There are the beaches for the day and nightlife galore—especially for the music lovers out there. When you think of the Orange County music scene, a lot of alternative, surf and reggae rock comes to mind. And you would be correct. WeAreTreo (We Are Tree-oh) is here to get that sand out of your ears. The DJ collective consists of Ace Future, Trevor Shawn and John-Gregory. Ace and John met Trevor at a RVCA event and the rest is history. After coming together, a vision began to take shape with not only their music, but signature Orange County good vibes, a “cruisey” lifestyle. Part of that is increasing the brand beyond just electronic music. It’s a lifestyle. WeAreTreo collaborated with DVS in creating a shoe that you “can wear while scoping waves, or while playing a show.” And it’s this kind of dedication that is causing heads to turn and gigs to fill up. When people come to see WeAreTreo, they expect an unforgettable party.

As Ace puts it, “We spend our time surfin’ and just makin’ great tunes.” These OC boys may surf by day, but by night, they are one of the most sought after DJ acts in Southern California. And that love has permeated the state’s borders. WeAreTreo has had residencies at Hakkasan, Jewel and Wet Republic in Las Vegas, OMNIA San Diego and E11even Miami. You can still catch them at these and other clubs across the US. Back when they were still trying to make a name for themselves, they were lucky enough to play certain smaller venues on a consistent basis. It was there they learned about limits on good times. After one friend was banned from that club on two separate occasions, WeAreTreo learned good times are all about balance. WeAreTreo even brought their movement to Asia during August and September. As the guys say, “People are hungry for it and we are happy to bring it to them.”
