Letter

from the Publisher Over the past year, I have been forcing healthier eating into my home. What does that mean? No GMOs and organic produce and meat whenever possible. Eating healthy is no easy feat. The GMO food list is comprised of the brands we grew up on and in turn now feed our children. I was a little overwhelmed when I started to transition our diet… but now that we are settled in- it’s great. Controlling food in the home is easy, it’s dining out that becomes a challenge. The best thing we can do is to choose local, independent restaurants when we go out. A fresh steak from Louie’s Prime, perfect salmon sandwich from Frogtown Inn, or a brick-oven pizza from Peppe’s top my favorites list. We wanted to take a different approach to the 2015 Food Issue of Local Flair. A combination of reader favorites and local classics (with little known facts about some of our favorite chefs and restaurant owners) make up our pages this issue. I am always excited to learn about fan favorites and you can find them all throughout the Hidden Gems feature. Pocono ProFoods has been serving up business in the Pocono Mountains for 75 years. From humble beginnings, this family-owned business has grown to serve the east coast all from our own backyard, read about them on pages 14-15. So, whether you’re looking for Thai food or bar food, there is a thriving food business in the Pocono Mountains and as the area grows, we hope our culinary choices grow as well. Keep it local!

Women’s Resources of Monroe County Butterfly Release for

Women’s Resources of Monroe County (WRMC) will celebrate life, hope and healing, and remember victims and survivors of domestic violence and abuse with the release of a profusion of Monarch butterflies. This fifth annual event, designed to raise awareness of the organization’s mission to end domestic and sexual violence for all women, children and men in our community, will take place on Wednesday, September 9, 2015, at 5:00 p.m. at Weiler Corporation, One Weiler Drive, Cresco, PA. In the event of rain, it will take place the next day, same time and place. “Monarch butterflies, seemingly fragile but extremely strong, are a perfect representation of our clients,” said Sharon Griffith, WRMC treasurer, board member and event co-chair. “They are a symbol of change, freedom and joy, possessing the ability to leave the safety of their cocoon to discover they can grow, transform and discover the world in new ways. People come to us frightened and confused, but after experiencing our safe haven, counseling and educational opportunities, they leave us confident, hopeful and ready to begin a new and independent life.” People like Rosa. After enduring years of constant physical and emotional abuse, she knew she had to escape that brutal environment to protect both herself and her infant daughter. She summoned the courage to reach out to Women’s Resources where she found the strength and support to become a contributing member of society. Rosa is no longer afraid or unsure of what lies ahead, and she is proud to be able to give her daughter the safe home and bright future they both deserve. “For 37 years,” Griffith continued, “WRMC has provided safe emergency shelter, a 24 hour crisis hotline, counseling and educational support, legal advocacy and community outreach to victims and survivors of domestic violence and sexual assault – and,” she added, “there is an ever-increasing demand for our services. We are deeply grateful to Karl Weiler and Weiler Corporation for continuing to host the butterfly release, and we invite the community to join us in our mission by purchasing butterflies and attending this inspiring and moving event. So many people will appreciate your concern.” Butterflies may be purchased for $15.00 each, and the deadline for ordering is August 20. Food—we take it for granted. Our favorite restaurants lavish us with sumptuous meals and treats. But for many, hunger amounts to much more than fussing over where to go out for a bite. For many, the worry is whether or not they can afford some meals at all. According to Feeding America, more than 46.5 million Americans turned to their food banks for help in 2014. That’s 1 out of every 7 Americans. 7 million of those were senior citizens, and 12 million were children. Here in Monroe County, hunger poses a significant issue for many every year. While our network of food pantries and outreach programs are crucial to the attempt to alleviate hunger, many new food banks continue to arrive, signaling the growing need for support.

Some have made huge impacts over the years, such as Bushkill Outreach, which has provided food, clothing, and living items to over 1,000 people a month for more than 30 years, and, CAME (Christian Awareness Ministries Ecumenical) in Canadensis, which has served Barrett, Price, and Paradise townships for 25 years. And yet, new food banks continue to add to the growing list.

Jan and Nancy Korb of the Loaves and Fishes food pantry, celebrating its first year of service, distribute to an average of 120 to 190 people a month in the East Stroudburg area. In Pocono Pines, the Top of the Mountain Ecumenical Food Pantry gives to over 700 in need every month. Perhaps one of the most notable efforts, The Bushkill Outreach, reaches numbers over 1,000.

While the problem of poverty and hunger exist in the Poconos, many special individuals have stepped up to offer time and donations. However, much help is still needed. A FRESH POCONO PROFOODS

Just outside the conference room of Pocono ProFoods, employees hustle through the hallways, boxes of products whistling around corners. This is a typical morning walk for Kara Snyder, Pocono ProFoods’ culinary specialist, and third-generation member of the Driebe family. “My grandfather founded the company in 1940 when he moved from the family produce market in Scranton to Stroudsburg,” she reflected. For three generations Pocono Profoods has grown and fostered relationships with long-time area establishments like Camelback, Stroudsmoor, and Woodloch, as well as relative newcomers to the area, including Aquatopia and Kalahari Resorts. Kara, however, did not immediately seize the opportunity to work in the family business. “After college I moved to New York City to study opera,” she said. While pursuing her operatic dreams, Kara realized a familiar passion was calling her to return home. Her family’s business and their strong ties to the community led Kara back to the Poconos after culinary school, joining the family enterprise and embracing the passion Pocono ProFoods lives by. Anywhere you look, Pocono ProFoods can be found alongside numerous area establishments, a testament to the relationships the family has formed in the community. “When we were kids, we would play in the kitchen at Woodloch with the Kiesendahl kids,” Kara reminisced. “We’ve worked with them for years; they’re one of our best customers. We are very proud of our relationships.” In an effort to foster such relationships Pocono ProFoods offers chef demos to customers to help them enhance their offerings. “Many restaurateurs and chefs are working so hard at running their establishments that they aren’t able to get out very often. Our demos allow them to get out of the kitchen for a few hours and experience some new ideas.” In doing so, Pocono ProFoods offers insight on popular trends among restaurant goers. “Right now, sustainable practices and locally-grown food are hot,” Kara commented. And so, in keeping with these trends, Pocono ProFoods connects with local farmers to bring clients only the freshest seasonal items, through their local and sustainable produce program Greener Fields Together. GFT is a national program that connects local farmers with local produce and food purveyors. Such locally-grown meals have earned renown for restaurants like Mikuna Kitchen, a Pocono ProFoods client, in East Stroudsburg. Their menu offers delicious gluten free, vegetarian, and vegan friendly dishes all in keeping with what many people are looking for today. If you ask Kara, these efforts are right on the money: “Gluten free is here to stay and vegan isn’t going anywhere.” Home chefs will rejoice at an exciting addition to the Pocono ProFoods lineup: this fall, Pocono ProFoods will be opening its doors to the community hosting culinary classes. “Knife skills… learning how to sous vide… a night in Paris,” Kara says will be some of the classes food enthusiasts can look forward to. Other future plans include a market area where community members can purchase specialty foods directly from Pocono ProFoods. “We want to continue to be a resource for the community. Currently anyone with an account can purchase from us but we are enhancing what we do by making it easier for people to walk in and purchase items,” she said. With an appetite for relationships, culinary innovations, and the best quality, Pocono ProFoods is positioned for another successful 75 years – and more! The watermelon painting which hangs in Kara’s office was a gift from local artist Sterling Srauser to Kara’s grandfather, Edward Driebe, who was an avid supporter of the arts. It was created after Mr. Driebe told Strauser about a dream of a beautiful watermelon.

The Stone Bar Inn in Snydersville, renowned for rustic American fare and elevated game dishes, is the benchmark of fine dining in the Poconos. Chef Andrew Moore goes to his garden for inspiration, a tactic we can attribute to his wife, Carol. She does all the cooking at home, harvesting ingredients from the couple's home garden. Recently, she cooked for us! Her fresh scallions inspired a savory shrimp and scallion pancake… and she's even shared the recipe with Local Flair.

The Moores met more than 30 years ago at Shawnee Inn. "I didn’t even really like him at first,” she laughs over lunch. The Andrew Moore of the 1970s was just as tenacious as today's Chef Moore – he wasn't giving up quite so easily. Carol's resistance wore down and they've been building a family and business together successfully ever since. Their family continues to grow with their daughter's wedding right around the corner, an event that's planning has Andrew and Carol traveling back and forth to Maine. Time at home in Sciota is rare, but they maximize it with cozy lunches and the occasional dinner at Momento's on Ninth Street in Stroudsburg. The next big adventure: the open seas. Chef Andrew is building his own boat, a project housed in his barn on their sprawling property. For a taste of The Stone Bar Inn at your home, enjoy the Scallion Pancake and Shrimp recipe below!

TRY CAROL MOORE’S RECIPE:

shrimp & scallion pancake For the Pancake 2 cups of flour 1 cup of cold water 2 eggs Bunch of fresh of scallions 12 Fresh Shrimp peeled Salt

For Dipping Sauce 2 Tbs of soy sauce 1 Tbs of vinegar 1 Tbs of sugar (or honey) A little bit of crushed garlic Chili powder and sesame seeds

Cut the scallions in half then chop into small strips. Clean the shrimp and chop it into large pieces. Combine flour, cold water, eggs, chopped zucchini and salt into a bowl. Heat a non-stick pan with vegetable oil over medium heat, then pour a quarter of the batter into then pan, then add the seafood on top. Pour another quarter of the batter on top, then put the scallions neatly on the batter. Add another 1/4 of flour batter on the top. Fry both sides for 5-8 minutes each until they become golden crisp brown. Cut into 2-3cm portions and serve with dipping sauce. Enjoy!

The 3rd Annual Pink Ribbon Raffle, hosted this year by Peppe’s Bistro, raised close to $3,000. The June 26 event featured themed cocktails, copious appetizers, music by Lee Larson, and fabulous raffle prizes. Funds raised go directly to alleviate financial burdens of rent, transportation, child care, medication, and other living expenses of breast cancer patients undergoing treatment at the Dale and Francis Hughes Cancer Center. The evening was organized by Hope for Strength Breast Cancer Fund under the co-direction of Carole’ Ann Bowyer and Marynell Strunk.

The Pocono Pines based organization hosts a multitude of recreational events to raise money for breast cancer patients in the Pocono community as part of the Linda Creed Breast Cancer Foundation. 2015 boasted the highest participation yet in the 5k Walk/Run held on July 11 as well as record setting fundraising at the Women’s Tennis Tournament on July 15, Women’s Golf Tournament and the Rally Banquet on July 16. It featured all of the modern amenities of the day for its upscale guests: an ice cream parlor, electric lights, running spring water in each room, bowling alleys, a pool, and billiard parlor. The Castle Inn functioned as a hotel until 1952, when it was purchased by Big Band Leader, Fred Waring. Mr. Waring ran his music empire (as well as the Waring Blender business) from the Inn until his death in 1984. Waring Enterprises continued to utilize the space until a dramatic fire forced relocation in 1985. In 2005 Theresa Veltri and Frank Paccione bought the then vacant Castle Inn and began its restoration, hoping to preserve this wonderful piece of American and local history for generations to come. Nowadays, guests of the Castle are customers and clients of the businesses that call it home: boutique office spaces and spa on the upper floors, and antique and gift shoppes on the lower level in what was once the bowling alley. The ice cream parlor has been recreated to Victorian charm and gladly serves those looking to relax with an egg cream or banana split. everything’ s peachy Early fall is the perfect time to pick up fresh, juicy peaches that have arrived at Monroe Farmers Market. Try this simple chutney recipe that pairs perfectly with grilled chicken. Serve over salad greens or pair with another favorite market vegetable. While you’re at the market, take a look around. You can find most of these ingredients from your local farms.

Farmers Market Peach Chutney 1/2 onion, chopped 1 garlic clove, minced 1 cup fresh peaches, coarsely chopped 1/2 lemon, zested and then juiced 1 tablespoon maple syrup or honey 1 teaspoon ground ginger 1 teaspoon cinnamon Salt to taste Saute onion and garlic over medium heat in your choice of fat or oil until slightly softened. Stir in peaches and cook for 2-3 minutes. Add lemon zest and juice, sweetener and spices. Stir and cook until chutney is thickened, about 10 to 15 minutes. Refrigerate until chilled. Serve cold and enjoy!
