As the owner of Josie Porter Farm, located on the historic soil of Cherry Valley in Stroud Township, Heidi Secord is a woman carrying on almost a century’s worth of agricultural traditions. Just as her predecessor, Josephine Porter, who is credited with helping to foster the biodynamic agricultural movement in the United States, Secord grows the produce found at the Josie Porter Farm in a method she refers to as, “beyond organic.” Simply put, biodynamic farmers strive to understand the relationships of each part of the growing process to maintain overall health throughout the farm. In doing so, Secord has seen her crops grow and flourish to feed more of the community in each subsequent growing season since the farm’s first season in 2007. “To me, there is nothing better than knowing you are doing something that matters to people,” said Secord of farming, “there is a joy in growing nutritious, wholesome produce for our community.” Secord grew up tending the flowers, herbs and veggies of her family garden in a rural community in Connecticut. After receiving a degree in Business Administration from the University of Rhode Island and spending a few years with the Peace Corps, Secord’s attentions turned primarily to farming in 1997. In 2006 Secord began to look for available farmable land. At the time, the plot of land that had once been owned and managed by Josephine Porter was under the ownership of Stroud Township, purchased through an open space initiative. Along with her husband Gary Bloss, Secord presented a proposal to Stroud Township requesting the option to lease the land to establish the Josie Porter Farm and its first community program, Cherry Valley CSA. “A wonderful collaboration was born out of this and it has really become a triple win situation for the farm, the township 6 Asparagus May - June This low calorie vegetable is a great source of folate, potassium and antioxidants and can be found at its peak during the spring months.

In fact, the endeavor has been so successful that townships throughout Pennsylvania have contacted Secord to find out how they can start similar CSA’s - which stands for Community Supported Agriculture - on their land. At Cherry Valley CSA community is key to a successful operation. “The CSA offers our neighbors the opportunity to vote with their food dollars for a safe, local food system as well as a cleaner environment,” said Secord. Members can volunteer for farm chores, participate in potluck dinners and swap recipes. Now embarking on their fourth growing season, Cherry Valley CSA continues to grow in all aspects, from the amount of shares and products available to the activities hosted at the farm. Recently, Secord’s attentions are turning to the cultivation of the next generation of farmers. “The average U.S. farmer is 60 years old, so knowing that I am part of a movement of new generation of farmers is important to me,” stated Secord. “We our introducing programming that encourages children to grow their own food, learn about farming and participate with the farm. We also have apprenticeship opportunities in collaboration with the North America Biodynamic Apprenticeship Program.” All of which perpetuate the Josie Porter Farm’s long term vision to establish an Agricultural Learning Center on-site.

The Gem and Keystone lies comfortably nestled on the quaint property of the Shawnee Inn. The restaurant, a major asset to the inn, provides great food for its patrons, and has recently taken their expertise to a higher standard, incorporating their own specialized beers into the menu. In the spring of last year, the restaurant began brewing ShawneeCraft ® beers, which are proudly labeled as “Fidelis in Naturam, in Artem Fidelis” or “True to Nature, True to the Craft.” The Gem’s slogan, ‘Beer from here, food from near,’ couldn’t be more perfect. The beer is brewed with as many locally grown and organic ingredients as possible. Some of the wheat used in the process is even grown by Leo Bongiorno, the restaurant’s brewmaster. Interestingly enough, second hand barrels are used

to make and age the beer. It sits in the barrels, which once contained brandy or whiskey, and ages for a set amount of time- depending on the type of beer that is being brewed. Usually, the longer the brew ages, the fuller the flavor. Recent styles available on tap have been Biere Blanche, Session Porter, and India Pale Ale (I.P.A.). Biere Blanche is a yellowish wheat beer, which is made darker in the winter and lighter in the summer. It has hints of citrus and coriander, which are complimented nicely by an orange. The Session Porter is a restaurant favorite. Much like a Guinness, its dark brown color and malty cream flavor make it a sweeter stout with a bit of a kick. The India Pale Ale is one of the more bitter beers on the list. Weighing in at 6.85% alcohol by volume, it is a robust dark orange beer that Bongiorno suggests beer drinkers use to build up an appetite. This beer is half fermented, a quality that lends to the beer’s bitter taste. Dan Rothman, The Gem and Keystone’s General Manager, says there is a lot of flexibility in pairing beer with food. Depending on the type of beer and its ingredients, different tastes can be brought out in the foods the restaurant prepares. For example, the Biere Blanche goes well with certain spicy foods because of the beer’s citrus and coriander spices. As a result, those tastes will liven up the flavor of the meal. In the coming months, the restaurant will feature new varieties of brews. Bongiorno new favorite is V.S.O.P. (Very Special Old Pale). He describes it as “a dry beer that is honey produced.” The V.S.O.P. is one of the strongest beers available, with 8% alcohol by volume. 6

Local Flavor recently visited Franklin Hill’s Tannersville location and tried out the options, below are a few of the exceptional selections you can find at one of their four shop locations. 6 Chardonnay The driest of Franklin Hill Vineyards’ white wines, this full-bodied Chardonnay is made to stand up to dishes that include butter, cream or garlic. The oak of this golden wine is evident and mingles with a bite of green apple. Though dry, this wine is not acidic and has a very silky mouth-feel and buttery finish. White Jade Called the “everyday chardonnay” by Franklin Hill Vineyards, this wine is made from the Vidal Blanc grape. Great for those who are interested in a lightly-oaked white wine with a floral start and a bit more fruit than the straight Chardonnay, this wine finishes with a subtle hint of vanilla. Like many of its white wine counterparts, White Jade would pair well with a light chicken or fish dish. Vidal Blanc The Vidal Blanc is similar to a riesling - falling on the sweeter side of a semidry white wine. Slightly fruity, this wine is agreeable and suited to a gathering that may have guests with varying palates. This wine has a delicate flavor and pairs best with h’o rs d’oeveres, fruit and cheese. Its hint of sweetness is also suitable to pair with spicier fare.

Desire If you’re in the mood to try a really unique wine, check out Franklin Hill’s Desire, a mango-flavored white wine. With its vibrant orange color and fruity punch this wine is perfect for an outdoor barbecue. The staff at Franklin Hill also suggests getting creative with this wine and mixing it with vodka to create a unique martini.

Veg Out this Spring and Summer No longer banished as the sidekick to meat and potatoes, dishes focused on delicious and healthful vegetables seem to be gaining popularity on our plates when we dine out. Perhaps this stems from the ever-expanding dietary choices people are making, wider spread availability of different produce, or maybe it is because vegetables are down right tasty and have so much to offer. Though the Poconos have few strictly vegetarian dining options, several local restaurants do a bang up job of offering an assortment of veggie-based dishes with exceptional flavor. Two local restaurants both small in stature but big on taste, value and friendly service fit the bill when looking for a little vegetable bliss. When dining out for either breakfast or lunch, you can find great grub for affordable prices at Mollies Restaurant, located on Main Street in Downtown Stroudsburg. The locally owned eatery serves up a variety of dishes, with most of the offerings made from scratch on-site. While the menu is full of delicious staples like fresh salads and stacks of fruit filled pancakes, it continues to stays interesting with daily special changes. On a recent visit to Mollies the restaurant served up a fantastic mushroom cassoulet in a portion big enough to get your fill and take home for dinner too. A mixture of macaroni, sweetly sautĂŠed onions and four varieties of mushroom where all topped with a velvety and garlicky cream sauce. Satisfying and tasty - meat was surely not missed. Those looking for a delicious vegetable-filled meal with an Asian flair, should head to Saen Thai Cuisine in Shawnee on Delaware. This cozy nook of a restaurant is owned and operated by married couple Boonchard and Saen Prveptipun, who have been sharing the delicious recipes of Thailand with the Poconos for over two decades. A must try for any diner are their Thai Spring Rolls; this appetizer pairs a fresh, crunchy vegetable filling with a delicious golden-fried wrap. Both light and satisfying, the spring rolls make a great beginning to any meal at Saen. The restaurant also serves a great variety of entrees that feature an assortment of veggies, that can be accompanied by either meat or tofu, in enticingly flavorful broths and curries. Saen is open for both lunch and dinner, serving up a great lunch deal on weekdays that allows diners to choose an appetizer and lunch portion entree for under $10. 6
