It’s the holiday season already? Wow! There is so much happening throughout the Poconos this time of year. We were so inspired by American Express’ “Shop Small” campaign that we picked as many of our favorite local shops as we could, and we did the shopping for you! Check out the great holiday gift guide in this issue of Local Flair on pages 18 through 34. It is no secret that it is a challenging time to be in business, and there are certainly no bail-outs available for the “mom and pop” shops. These are the small businesses which are the back bone of the country, and employ about half of private sector employees in the United States. We learned, for every $100.00 spent at a local store, 68 of those dollars are regenerated into the local economy. That is one of the reasons why we are shopping small this year. Technology has made it too easy for us to do everything with the “touch of a screen,” that we forget to go experience the delight of actually seeing, feeling and exploring our specialty stores. I personally appreciate the service, and the fact I am not just an order number, but rather, that the shop owners know my name. So we hope you will use these pages as an inspiration for your holiday shopping. Also, The Pocono Manor is hosting their annual Magical Fireside Christmas. As usual, the grounds will be adorned in holiday splendor! This year, make sure to stop by the Inn and check out the renovations. Stroudsmoor will host it’s annual Christmas Tree lighting and tree decorating contest, too. For more information on the many holiday events happening in our area, check out pages 8 through 12. Stroudsmoor holds 23rd annual Tree Lighting

On Sunday, December 4, Stroudsmoor will hold its 23rd annual Tree Lighting Celebration. This Stroudsmoor tradition started in 1988, when the Pirone Family decorated a modest little tree in the center of Stroudsmoor proper. Through the years the event has grown to include various competitions, talented groups of entertainers from the Pocono Community, a lighting display created with over 50,000 twinkling white lights, and a tree nearly five times the size of the original. When Ray Price opened a car dealership in the Poconos in 1913, the year before World War I began, he faced challenges. For one thing, he had to teach many of his customers how to drive. Also, Price did not receive merchandise deliveries shipped on trucks. He picked up crates of automobile parts via railroad, towed them back to his shop and assembled the cars piece by piece. In those days, automobiles played second fiddle to horse-drawn carriages and sleighs on local roads. That caused more challenges. The cars required different wheels for summer and winter driving. In summer, car wheels had to fit in the track of horse-drawn carriages, while in winter, wheels had to fit in the tracks of horsedrawn sleighs. “The sleigh tracks were slightly narrower,” said Price’s grandson, also named Ray Price. “We don’t have to worry about those things today.”

Diane Datesman, signed on even younger. “I started just before I graduated high school in 1962, and I’ve been here ever since,” states Datesman, a bookkeeper and former manager. Datesman’s first boss was the middle Ray Price, son of the company’s founder. She described him as “a very nice person to work for.” Datesman was the sole office employee when she started work at the dealership. “Today, we have six or seven in the office,” she said. “It’s certainly grown a lot.” She seems in no hurry to leave, after almost 50 years. “It’s been nice working here,” she said. “I’m probably going to retire soon, but I don’t know when.” 6

Since Price entered the business, when his father died after a sudden illness, Ray Price Motors has grown, expanded and diversified. “When I started in 1981 there were four of us working at three full-service dealerships: a Ford/Lincoln dealership on Ninth Street in Stroudsburg, a Honda/Mazda/Volvo location off Route 447 in Stroud Township and a Chevrolet/Ford/Suzuki site in Mount Pocono.” But it’s the last one that stands out. “As far as I know, we are the only combined Ford/Chevy dealership in the nation,” Price said. It took “a lot of negotiations with Ford and General Motors” to make the unusual arrangement happen, he added. The arch-rivals eventually agreed to do the deal because they both realized it was in their best interests, according to Price. He cited Mount Pocono as a nearly ideal location to sell a wide range of vehicles, from small gas-sipping cars aimed at commuters, to all-wheel-drive SUVs for customers in the icy upper reaches of the Pocono Plateau. Ray Price Motors weathered the recent recession fairly well, with no layoffs, thanks in large part to a loyal base of repeat customers, said Price. “We did not drop off nearly as much as did some other dealerships. We worked hard for a long time on customer satisfaction.”

Christkindlmarkt Crafting a New Tradition By Karen Tetor Travel and Leisure magazine has taken notice of Bethlehem, Pennsylvania, and in a big way. The publication has described the annual holiday favorite, Christkindlmarkt, as one of the top holiday markets in the world. This honorable distinction will not let organizers remain content, though. In its 19th year, the holiday marketplace plans to soar even higher than usual and celebrate its rich traditions with some old and new aspects. Christkindlmarkt, running from Novemeber 17-December 18, allows visitors to celebrate the season basked in tradition. “Christkindlmarkt is a destination where families can come together and celebrate the holidays,” says Mark Demko, a spokesperson for ArtsQuest, the nonprofit arts organization that presents Christkindlmarkt. With many different activities, it leaves something for the whole family to appreciate. Taking his own five-year-old daughter to sit on St. Nicholas’ lap, bite into warm apple strudel, and listen to costume-clad carolers has become a custom in his own family’s holiday routine. While you make a tradition out of visiting, the market incorporates history and tradition in its own way. This year, the market has moved to a new location, taking up space at the PNC Plaza on the SteelStacks campus. SteelStacks has transformed the area around the former Bethlehem Steel blast furnaces into a year-round arts center that celebrates the city’s industrial past in the midst of its colonial roots. Christkindlmarkt finds a perfect setting in this city, a place who treasures its own tradition of christening the town on Christmas Eve in 1741. Christkindlmarkt combines traditional and contemporary like no other. Last year, over 60,000 visitors attended the market to enjoy glassblowers magically transforming molten glass into Christmas treasures, ice carvers wielding torches and chainsaws to shape frozen holiday scenes, nonstop holiday performances, and myriad food vendors. The marketplace leaves something for both the young and old at heart to enjoy. “Christkindlmarkt is part of the whole Bethlehem Christmas experience,” explains Demko. It provides entertainment in so many different ways. Over 60 events take place in the city over the holidays, including evening walking tours led by historians dressed in 18th century garb and carrying lanterns, nightly lightings of the 70-foot-long “Bridge,” and “Alchemy” fire sculptures on the Air Products Town Square at SteelStacks. Repeat vendors and events keep people coming back, while new twists never leave you bored. “The artisans are always changing,” says Demko. Plus, “This year’s market stretches over five weekends, rather than four, and different vendors will be joining the mix every weekend.”

Folk artist Patricia Cobb, one of the 100+ artists and vendors from over 15 states, is excited about the changes and the new venue. “Having Christkindlmarkt at SteelStacks will give it even more energy,” the Emmaus artist explains. Cobb’s hand-carved Santas, some of which are from the wood of an American Chestnut salvaged from an 1860s Pennsylvania barn, have attracted the market’s shoppers for over 10 years, and this year will be no different.

After their college days ended, Poke-A-Nose Pottery owners Jason and Kelly Camillo wanted the freedom and challenge that comes from creating their own work. The optimistic duo decided to start their own business and follow the trend of contemporary ceramic studios. With a degree in Fine Arts, this was a perfect fit for Kelly. And with no business like it in the Poconos, the setting was ideal. Kelly met Jason when they were students at the University of Tampa. Their exposure to the many art studios all over campus was the genesis for their business plan. After graduation they settled in the Poconos to live near family. Neither desired a traditional nine to five job. “My husband and I wanted to work for ourselves, and we chose Bartonsville as our location to minimize commuting so we could help care for my grandparents,” explains Kelly. With help from a guardian angel, Kelly’s mother, this dream became a reality. Mary Graziano, who passed away in 1999 after a battle with lung cancer, left a bittersweet legacy: life insurance proceeds that Kelly and Jason used to open their studio in August of 2002. “My mom knew I wanted to start this business and she encouraged me to follow my dreams,” shares Kelly. “She told me, ‘Do your best and don’t let anything get in your way.’ My mother always

appreciated my artistic leanings. When I was little, anything that I gave her she praised in some way—even when it was awful.” Today, Kelly is a talented artist, and she can help you create a unique gift for Christmas that will surely be cherished for years to come. “One of our most popular items is the handprint plate,” Kelly revelas. Trace your child’s handprint on a piece of pottery and Kelly will paint it and turn it into a holiday motif—or anything else you request. “Recently, we turned a footprint into a cell phone.” The piece has to be glazed and fired in their kiln, so make sure you get there before December 18 for pick up on Christmas Eve. If you’d prefer to create your own artwork, walk in without an appointment; the studio is open seven days a week. Paint an ornament, snowman, Santa or reindeer. Like something functional instead? There’s a selection of boxes, piggy banks, mugs, bowls and plates. Choose from 70 paint colors and hundreds of stamps and stencils to help you decorate. A large platter suitable for a Thanksgiving turkey might thrill Grandma and become a family heirloom, too. “We also have glass mosaic pieces. You create a design on an indoor wall hanging, like a star or letter, and I’ll grout and seal it for you,” explains Kelly. You can also make a mosaic picture frame, trivet or serving tray. A lot of fun activities will take place at the Poke-A-Nose Pottery studio this holiday season. Take advantage of their “Drop and Shop” service on Black Friday. Drop the kids off at the studio anytime between 11 a.m. and 4 p.m. while you go out Christmas shopping. The kids will enjoy snacks and drinks while they paint pottery, and you’ll enjoy a few hours

Nestled among the many unique shops that encompass Main Street in Stroudsburg lies a gem you certainly don’t want to miss. Kitchen Chemistry has brought the traditional bakery back to life in a way that will leave your mouth watering. Proprietor Lisa Diemer makes her cupcakes fresh everyday, and with different flavors each week, she always has something new for customers to try. Averaging over a thousand cupcakes a week, Diemer is always busy trying to find new ways to satisfy her customers. While she has a standard list of “Classic Cupcakes,” she always has a few new ones to add into the mix. But this change doesn’t satisfy just consumers; it keeps Diemer entertained as well. “It’s fun,” she exclaims. “We make a new cupcake, and people go ballistic. It’s fun to see what cupcakes people go crazy over.” Crazy is an appropriate word. One cupcake Diemer developed, the Fluffernutter, has obtained what she describes as a cult following. “It used to be an occasional cupcake, but people loved it so much we had to add it to our classics.” Diemer also brings the spirit of the Poconos into her creations. “We always try to do a theme cupcake,” she explains. “During the Ironman, we had an Ironman cupcake loaded with healthy ingredients. And when the hurricane came, we had a hurricane berry cupcake. We even did a pink one for the Spirit of Women’s Shop Hop.” She also makes holiday creations, with a sweet potato cupcake for Thanksgiving, and perhaps a fruitcake one in store for Christmas. As if leaving our eyes widening and mouths watering isn’t enough, Diemer also offers many classes enabling her to pass on her knowledge. While many of us stare at fancy bakery creations doubting we could ever make anything resembling the sheer artistry, Diemer is breaking the news to her students that they can stop dreaming and start doing. “I love enabling people so they can see that they can do these things. I take the mystery out of it for them, and suddenly it’s not so hard. My gratification comes from seeing that they’re excited that they learned a new technique,” she reveals. While their excitement is Diemer’s priority, she has an underlying wish as well: that her classes make a real difference in peoples lives.

“I wanted to offer things that people can take home with them and use in their everyday life, because it’s really very gratifying to be able to do this stuff. It’s a giving of yourself. I really encourage that people do it with their family. When you do it together, you create a life long memory.” In fact, many of Diemer’s memories come from her family’s own baking traditions. “My Grandmother made special doughnuts and put a dime in one. Whoever got the dime was thought to be lucky for the year,” she explains, offering insight into just one of her many memories. Diemer thinks it’s important for you to continue these customs or even start your own traditions. “Everybody’s lives today are pulled apart in so many different directions that it’s hard to have traditions. But when you start out with something small you can create that tradition and have a few more special memories.” What special memory does she create every year? “To this day I go down to my nieces and nephews and I let them make gingerbread houses, and they love it. Every time they see me they ask if I have gingerbread houses. I also make cookies with my mom and aunts each Christmas. It’s just nice to get together with them.” Diemer offers you a way to start your own tradition with her many classes. Northampton Community College Breaks Ground By Kaitlin Johnstone Photos by Stephen Lippay On October 18 Northampton Community College held itâ&#x20AC;&#x2122;s groundbreaking ceremony for the new Monroe County Campus. With speakers from the community, faculty, and student body, attendees gained the full insight into what we can expect when the new campus opens in January 2014. The 72-acre lot located at the center of Monroe County will leave no stone unturned. After years of increased enrollment and changing facilities, it was time to permanently accommodate the 26 per cent of enrolled students who claim Monroe county as their home. The building is set to have over 20 classrooms dedicated to the large variety of majors the institution offers. To accompany these classrooms, the facility will also boast five computer labs and state-of-the-art science labs for everything from biology to physics. The school will also possess a student life center to rival any college out there. With access to a bookstore, food court, fitness center and community room, students will hardly be disappointed. They will also be able to access quiet places for study, tutoring facilities, disability and career services, art studios and gallery, and a library boasting an open design with lots of natural light and a 27foot ceiling. Not only will the new campus benefit students, but it will also greatly impact the community. After completion, the school is slated to support over 600 jobs. In addition, many businesses will benefit from the facilityâ&#x20AC;&#x2122;s conference center, as well as its Center for Business and Industry to provide technical and leadership training. Businesses that have taken advantage of this in the past include sanofi Pasteur, Pocono Medical Center, Weiler Corporation and Tobyhanna Army Depot. Many individuals can gain from their lifelong learning classes and their onsite childcare as well. Pocono Mountains Community Fundraiser

sanofi pasteur holds Eight Annual Event Photos by VIP Studios This year marked the eighth annual Pocono Mountains Community Fundraiser. Organized and funded each year by Sanofi Pasteur, the event aids non-profit organizations in Monroe County by providing them with financial support for programs that help establish a safety net for the neediest individuals. The event started in 2004 based on a vision from Damian A. Braga, Senior Vice President, Commercial Operations at Sanofi Pasteur. To qualify for funding, area non-profit organizations complete a rigorous application process, and winners are selected based upon the stability of the organization, intended use of the funds, and alignment with critical needs of the community. Each year, the event has been held at Skytop Lodge in the theme of a traditional New England style lobster bake where guests dance under a chandelier-lit tent. Sanofi Pasteur, along with dozens of corporate sponsors— many local—and thousands of attendees over the years have helped turn this event into this the largest single fundraiser in Monroe County. Additionally, this year marked several milestones for the fundraiser. Attendance and funds raised were at all time highs. The total amount raised over the life of the event surpassed the one million dollar mark, reaching $1,064,896. This year’s recipients are: • The Center for Vision Loss, which will implement a state-of-the-art vision screening to serve more than 3,300 Monroe County children. • Monroe County Youth Employment Services will help area youth obtain leadership skills, career direction, job shadowing, and work experience. • Pocono Area Transitional Housing will provide temporary housing and individualized support services to local homeless families. This year attendees were provided a ballot and asked to vote for one additional winner. Women’s Resources of Monroe County took the honor and is putting the money toward services for Spanish-speaking mothers and children who have been abused. In all, 26 projects, helping 20 non-profit organizations, have been funded since the program’s inception. Funding has been provided for a variety of causes, including enriching food banks, helping low-income residents with basic necessities, and aiding victims of physical and sexual abuse. Hair Salon Hosts Cuts for the Cure On October 23, Jade Hair Salon hosted the second annual Cuts for the Cure event to help benefit the Dale and Frances Hughes Cancer Center. Raising over $3,000, the event aims not only to raise funds, but also to raise awareness and spread the word about what great care you can find at the Dale and Frances Hughes Cancer Center. Andrea Snyder, owner of Jade Hair Salon, is a cancer survivor herself, and knows how much support is needed to make it through such a trying time. As a way to say thanks for all the support she received from so many different sources, Snyder decided to give back by starting the event. With haircuts, manicures, massages, skin care, and make-up all part of the day, it is no wonder Cuts for the Cure has turned into such a great success.

Warm Bistro Salad with Tiny Roasted Root Vegetables and Bacon Dressing Ingredients: • 6 C. torn curly endive, arugula, and/or mixed greens, washed and dried • 1 lb. root vegetables (Choose a mix of turnips, carrots, orange or white sweet potatoes, parsnips, red potatoes, and Yukon gold potatoes.) Cut into ¼ inch cubes. • 2 tbsp. plus 1 tsp extra virgin olive oil, more if needed • Kosher salt • 3 oz. shallots (about 4 medium), trimmed, peeled and cut into ¼ inch thick slices For Dressing: • 2-3 oz. smoked turkey bacon, cut into medium-small dice • 2 ½-3 tbsp. olive oil • 1 ¼ tsp. Dijon mustard (Use a good Dijon. It makes a difference!) • Pepper • Fresh herb salt • ½ tsp. chopped fresh rosemary or thyme • ½ tsp. kosher salt

Preheat oven to 475 degrees F. Line a large, heavy-duty rimmed sheet pan with a piece of parchment paper. This keeps veggies from sticking to the sheet pan. In a mixing bowl, toss the diced vegetables, not the shallots, with 2 tbsp. olive oil and ½ tsp. of kosher salt. In a smaller bowl, coat the shallot slices, without breaking them apart, with the remaining 1 tsp. olive oil and a pinch of salt. Spread out the vegetables and the shallots (keeping the rings together) in one layer on the sheet pan. They will be somewhat crowded. Roast until all of the vegetables are tender and some are beginning to brown around the edges (the shallots will be browned on the bottom) about 22-24 minutes. Let cool a little. To make the Fresh Herb Salt, combine the herbs and salt in a small brown bag and mix well with your fingers. Let sit for a few minutes before using. Toss all the vegetables together, breaking up the shallot rings, and season with up to ½ tsp. of the Fresh Herb Salt. Drizzle a tiny bit of olive oil over the vegetables, if you like, and toss again. In a small non-stick skillet, cook the bacon over a medium heat until crisp. Remove bacon and place on a paper towel. Remove the pan from the heat and let cool for just a minute or two. Using pork bacon, you will have plenty of drippings, but turkey bacon doesn’t provide you with this, so you can add a few tbsp. of olive oil. Add enough to make about 3 tbsp. total. Add 1 tbsp. of the red-wine vinegar and 1 ½ tsp. Dijon mustard. Whisk to combine. Don’t worry if the warm vinaigrette looks broken; that is fine, and it will blend. Watch for splattering. In a large mixing bowl season the greens with salt and pepper. Stir the warm vinaigrette again and pour over the greens. Toss the greens to coat well. Portion onto plates or platter. In the same bowl, add 1 tbsp. olive oil, 1 tsp. vinegar, the remaining ¼ tsp. Dijon and a pinch of salt. Stir to roughly combine. Add the roasted vegetables to the bowl and toss them breaking up the shallots. Portion the vegetables on top of and around the greens. Garnish the salad with crisp bacon pieces. Serve immediately.
