Salmon with Lemon Butter Caper Sauce INGREDIENTS: < 1 Tablespoon Olive Oil < 3 lbs. Skinless Fresh Wild Salmon Filets < Salt and Pepper to taste < 2 Medium Shallots chopped < 1/4 Cup White Wine Vinegar < 1/4 Cup White Wine < 1/2 Cup Butter cut into Cubes < 2 Tablespoons Chopped Parsley < 2 Tablespoons Drained Capers < 1 Tablespoon Lemon Zest DIRECTIONS: Heat oven to 400 degrees. Line a baking sheet with foil and brush with Olive Oil. Season both sides of Salmon filets with Salt and Pepper. Bake till Salmon flakes easily...about 20 minutes. Meanwhile in a heavy saucepan simmer shallots, vinegar and wine until shallots are soft and little liquid remains. Add the butter and 2 tablespoons water, whisking constantly over high heat until the butter is melted and incorporated. Stir in the parsley, capers and lemon zest. Drizzle over the salmon. Accompany with a baby green salad and a vinaigrette of choice.

SHoP receives a $10,000 financial prize, one of the largest in the world of architecture. Some locals did great work, too: The New Mexico-based Architect of Record was Allegretti Architects, and the contractor was Sarcon Construction. Details at sitesantafe.org. Intriguing that you can learn about migration and culture by admiring beadwork at the Museum of International Folk Art’s exhibition Beadwork Adorns the World, opening April 22. Called the “ultimate migrants,” small beads have traveled the world and become part of clothing and culture. Perhaps they originated in the island of Murano or the mountains of Bohemia and ended up in Latin America or Africa. But Khristaan Villela, Ph.D, Director of the Museum of International Folk Art, says, “Even though it’s titled Beadwork Adorns the World, this exhibit is not actually about beads.” With the majority of works dating from the 19th through 21st centuries, it’s clear beadwork reflects important aspects of people’s lives—passages, status and spiritual communication. SANTA FE In this month that celebrates Easter, William R. Talbot Fine Art, Antique Maps & Prints exhibits historic and contemporary artworks with Missions & Moradas: Icons of New Mexico, 1922– 2017 through April 14. And some of the artists, like Gustave Baumann and Ralph M. Pearson, may ring a bell. A favorite subject for artists, massive adobe mission churches and modest, privately pious moradas have been depicted in a form of worship. As Georgia O’Keeffe once noted in regard to the Ranchos de Taos Church, “Most artists who spend any time in Taos have to paint it, I suppose, just as they have to paint a self-portrait.” Details at williamtalbot.com.
Artist john jason phillips exhibits 16 new works as a body called Legends of the Old West that take a different look at American classics—the Anasazi, the American hero and outlaw, and Marilyn Monroe—beginning April 1 at 7Arts Gallery. After a career as a scenic artist for the Metropolitan Opera, the San Francisco Opera and Broadway, the artist is back in Santa Fe with watercolors that retell some classic American character stories in 20-inch by 30-inch canvases. Just a short distance from the big box stores and endless traffic and distracting noise of Cerrillos Road, lies an oasis of peaceful greenery. Time your visit right and you’ll be greeted by the alluring aroma of fabulous foods—stews, soups, sandwiches, ricotta dumplings, frittatas, galettes and other delectable dishes that will warm your heart and soul as much as your stomach. Once you’ve discovered this magical spot, you may never want to leave, and those who have traveled here before have been known to return, again and again. For this is The Kitchen at Plants of the Southwest, an intimate, rustic restaurant housed on the grounds of the longtime Santa Fe nursery devoted to native Southwest plants. Tucked among the wild grasses, herbs, vegetables, shrubs and trees, this unique eatery feels more like a welcoming home than a business, and Chef Olive Tyrrell, who oversees it all, will invite you right in and make you feel as if you’re in her dining room. She cooks only with ingredients that are fresh and available that day, using items sourced from the nursery’s offerings right outside the kitchen door and also delivered by local farms and providers. Hence her prix fixe menu is limited to two courses and it changes daily. It’s also strictly vegetarian, open only during the growing season and hours are kept to lunch, Tuesday through Saturday, from 11:30 a.m. to 2:30 p.m. If the food runs out before then, The Kitchen will close. “Coming from a background of cooking at regular restaurants, this is a dream for me,” says Olive, who spent time working in San Francisco restaurants before moving to Santa Fe. “I get to do whatever I want. I don’t have to make the same steak dish four times a day. Also, this is an open kitchen, so I get to interact with my guests, with the community and with the people who live here. It feels unnatural to me to come out of the kitchen in a white hat and talk to people. Here, it’s a real interaction, and that’s a joy to me.” Depending on what’s seasonal and available, The Kitchen’s menu might include a hearty vegetarian chile with sweet potatoes, black beans and red chile, a fluffy fritatta with fresh vegetables, or ricotta dumplings with fresh tomato sauce and wild oregano, which people often request. Chef Olive likes to incorporate local beans in such dishes as sweet potato chile, white bean stew with chard and potatoes, and tostadas with beans she’s braised for two days. “I’m known for my salads and my vinaigrettes,” she adds. “People really love those.” The Kitchen seats 25 to 30 people at handcrafted wooden tables beneath giant hand-hewn beams in the high-ceilinged dining room. Everything here is handmade, from the adobe bricks to the ceramic plates and serving dishes, which Olive created herself—and that are often purchased by admiring diners. One rectangular plate bears the tracing of a kite, in homage to her father, who was an artist, a kite maker and a vegetarian cook. Growing up, Olive was impressed by his creativity in the kitchen. “He was so experimental, he was very much like I am now,” she says. “I don’t use recipes, except for baking. He was winging it, and I’m doing the same thing.” Winging it she may be, but Olive’s vegetarian fare has earned her fans galore and changed the minds of people who haven’t yet discovered how delicious a plant-based diet can be. “I love turning someone on when they come to the restaurant and they’re really skeptical and they think they’re going to leave hungry,” she says. “It’s very inspiring to me to have someone be inspired after eating here to include more vegetables in their diet. I’m not a strict vegetarian but it’s more interesting to me to eat that way, with all the diversity, the colors, the different textures, and waiting for certain foods to come into season.” For Chef Olive, a meal at The Kitchen should hold more promise than sating hunger. “I hope that people are getting some joy and happiness from this place, and this land and my food, and I hope they take that back out into the world,” she says. “As simple as that sounds, I just want people to feel good.”
