My grandmother, Eloisa Rivera, was an excellent cook who made the most of all of northern New Mexico’s richly varied indigenous ingredients, which feature in the dishes you’ll see on the menu. Other influences in the Santa Fe cocina come from the Native Puebloan peoples including Chaco Canyon, Cochiti, Hopi, and Zuni, and also from Spanish Colonial explorers and Anglo-Western trailblazers.
