Lavender Festival

The well-attended

Roswell Lavender Festival enters its 5th year with the annual event scheduled for Saturday, June 13, 2015. The event takes place on the 7.5 acres of the historic home’s property with distinct sections dedicated to the day’s activities. There are classes and demonstrations in the carriage house, lavender food samples on the porch, sections for arts, crafts, antiques, and local food vendors, children’s activities and the ever popular Zen Zone. The free event features a full day devoted to all things lavender in a festival environment. The 2015 demonstration schedule is still being finalized but previous and popular topics included lavender wand making, creating lavender bath salts, and presentations on cultivating one’s own lavender plantings. Throughout the day, lavender infused specialty foods can be sampled on the hour with previous tastings that included such sweet and savory items as lavender ice cream, lavender cookies, lavender pasta and lavender marshmallows. As festival-goers arrive, they’re greeted by helpful Lavender Queens and provided with a map of the property which highlights the many different areas of the festival: the vendor section featuring unique art and antiques, a pottery exhibit with a local artist presenting wheel demonstrations, plant and herb sales along with other specialty garden items, and a food and picnic area where local food vendors proffer a variety of specialty foods.

Returning again this year is specialty brewed lavender beer from Athens-based brewery and a specialty lavender cocktail created by The Mill Kitchen. The front yard of the historic home is designated for children’s activities with crafts, historic games, and a special visit from the Lavender Fairy. Also popular is “The Zen Zone,” an area solely devoted to the healing properties of lavender, and featuring such techniques as crystal bowl therapy, hypnotherapy and aromatherapy. Festival-goers can participate in a massage session, and outdoor yoga and Pilates classes. A new addition to the popular area this year is a Meditation Tent with guided meditation sessions taking place throughout the day. Local musicians contribute to the festival atmosphere with tunes ranging from Americana, folk, country and independent. Festival attendees enjoy purchasing lunch from one of the many food vendors, sipping a specialty libation, finding a spot under the Great Pecan Tree and taking in all the sights, sounds and smells of the afternoon. The event and activities are free. Parking is offsite and a trolley provides ongoing transportation between parking lots and the festival entrance. Vendor opportunities are still available. Originally, the City

of Roswell was created to house a textile mill and its employees. The community was designed to support the mill and businesses catered to the needs of its families. Obviously, as the City matured and the mill fell dormant, the needs of the community changed. Over the course of more than a century, Roswell has developed into one of the most dynamic and community oriented cities in the country. Suburban families fleshed out the neighborhoods and the schools and parks flourished. The fine arts were celebrated and the historical culture preserved. Roswell became the ideal place to raise a family, and in more recent years, an ideal place to start a successful business endeavor. The last few years have seen enormous growth in 12

the business community and the City has taken great strides to nurture and encourage that growth. The results of these efforts include economic development entities like Roswell Inc. Some of the most prominent participants in this economic upturn are the restaurants. Roswell is now home to close to 200 restaurants, the majority of which are locally owned, independent businesses. Native fine dining enthusiasts, who would previously commute inside the perimeter, now look no further than their own backyards. What’s more, fine diners are traveling from numerous other communities to sample what Roswell has to offer. Roswell is quickly blossoming into a foodie’s paradise. Roswell’s restaurant scene draws its edge from a number of unique factors. On the one hand, many of the restaurants boast a hip, modern flair with innovative food design and preparation techniques. small town setting that offers sanctuary from the hustle, bustle and cold concrete of the big city. The dining experience extends beyond the table to include immersion into a friendly and thriving community. This means that the owner is typically close by and willing to stop for a chat. Fellow diners recognize one another and may have a “regular table.” Business owners know one another and work together to help the entire community succeed. Many are embracing the farm-to-table movement that encourages kitchens to serve food responsibly grown and raised on nearby farms by local farmers. Massi Mekhmoukh, owner of Etris Kitchen and Bar, has taken the farm-to-table movement even further by opening their new restaurant on former farmland. “Where better to have a ‘farm to fork’ restaurant than in Roswell . . . specifically, in an area that was once the Etris family’s farm?” Mekhmoukh said. “The location on former farmland and the intimacy of Sweet Apple Village, not to mention an existing imported Italian wood oven, called to us.” Roswell Inc asked several local restaurateurs, like Mekhmoukh, to comment on their experiences and share their beliefs on what makes a successful restaurant in Roswell. “It’s the people,” Rich Clark, owner of Hugo’s Oyster Bar in Roswell, said. “I mean the people here are some of the best. So community driven and with such a sense of pride. They just want you to succeed.” When asked about his hopes for the future of the restaurant industry in the City, Clark responded, “I hope that the competition only makes us all perform at the top of our game. I worked in restaurants in Buckhead, Atlanta Fish Market, Bluepoint, Blue Ridge Grille, Brassiere Le Coze, La Grotta, the Ritz-Carlton just to name a few and there has always been a feeling that restaurants "OTP" (Outside the Perimeter) were not on par with restaurants in town. I can tell you that stigma is going away and hopefully, with more quality restaurants coming in the area, we will only better our culinary reputation.” David Smedlund, managing partner of Aqua blue Restaurant and Bar, spoke to the continued success of this 12 year old establishment. “Our guests have come to expect affordable luxury when dining with us,” Smedlund said. “Roswell diners are looking 14

for a quality meal, extraordinary service and an inviting atmosphere, and we are going to continue making sure they consistently receive all of these elements." The development of Alive After 5 on Canton Street is a large contributing factor to the explosion of restaurant activity in Roswell, particularly in its historic downtown corridor. The event provides invaluable exposure to those who travel from other communities to explore the area. A surprising percentage of the visitors to Alive After 5 are not actually Roswell residents. Many are from other Metro-Atlanta cities and even other states. These visitors provide the ever important word of mouth advertising that independent businesses rely on. The more the word spreads, the busier these restaurants get, both on and off Canton Street. “We know and love Roswell. We saw the strong need for quality restaurants ‘Beyond Canton Street’ - especially now that the surrounding areas see Roswell as a dining destination,” Mekhmoukh said. “Roswell has maintained its small-town feel as it has grown. We love that. We were looking for somewhere to open a comfortable restaurant that locals would frequent and feel at home, yet still have a draw to those out of the area looking for somewhere with character for an evening out. Of course, great food goes without saying.” By all accounts, the negative “OTP” stigma is quickly becoming folklore. With such a wide selection of choices ranging from southern fried chicken to flavorful Cajun, British pub fare to tapas and sushi, or a big juicy burger and fries, there is something for every palate and craving. Roswell is embracing its history to better its future and every bite will be more delicious than the last.

Art Center West is part of the Roswell Parks, Recreation, Historical and Cultural Affairs Department and is where the ceramic classes are taught. The opening ceremony and field day will be held at the Alpharetta Community Center (175 Roswell Street) on Wednesday, April 29, 2015. This is the 21st year of the North Fulton Golden Games. The games will take place from the end of April through May. Shannon Tucker is 52 years old young. With four young children, some still in elementary school, she is the new face of the Golden Games. “I have to stay fit, it’s my priority,” says Tucker. With young kids to care for, I want to stay active and 18

Games will be held at various locations in North Fulton County through the end of May. Activities will include bocce ball, swimming, tennis, golf, bowling, pickle ball, billiards, rock climbing and much more! This year, there is even a trivia tournament for those who want to flex their brain power. For Nelson, it’s also a time to get back to one of her of her true loves. “I used to be pretty good at tennis,” says Nelson. “Tennis anyone? I just need a partner,” jokes the octogenarian. Tucker is excited to to show her children that fitness is a life-long commitment. “It’s the new 50,” says Tucker. “I’ll drop my kids off at school for their field day, then head over to my own. Is My Child Despressed?

Could your irritable

or moody teen be suffering from more than just adolescent angst and hormone havoc? School and social stress, electronic and media overload all play a part. Striving to develop their own identity and find out where they fit in, pulling away from parents, all lead to pendulum-like mood swings. So how can a parent tell if their child is depressed, or just a typical child with ups and downs? Teens may appear depressed at home, but happy around friends – they may appear angry rather than sad don’t let this throw you off the scent. What are some signs of teen depression? 1. Emotional responses that are not usual for him or her, or more extreme? Are they more irritable or angry than normal? Displaying excessive or inappropriate guilt, sadness, anxiety, or feelings of hopelessness? 2. Are moods lasting much longer than usual, or changing far too quickly? If they always had quick, brief temper tantrums, but suddenly seem upset for hours, it can be a sign of depression. So can incessant, rapid changes in mood. 3. Are emotions affecting their functioning on a daily basis? Have teachers reported changes in their focus, motivation or grades? Do they seem disinterested in their hobbies or friends, are they socially withdrawing? Do they seem oversensitive to rejection? Complaining of somatic symptoms – stomachaches, headaches, backache, fatigue, which may result in skipping or leaving school early? Are they overwhelmed and immobilized by stress? 4. Are they using a depressive perspective and phrases of doom and gloom? Pay attention for changes in what 20

your child talks about. Are they telling you that nobody likes them, even when their friends are calling them? Also look for expressions of low self-esteem, such as ‘I am no good at anything’, or ‘nothing good ever happens to me’. 5. Have they lost of interest in food, or are they compulsively overeating? This may result in rapid weight gain or loss. Are they over-sleeping, or unable to get to sleep? Isolating, and spending hours on electronics, when they used to socialize? Are they acting irresponsibly, or even criminally? Forgetting obligations, being late for classes, skipping school, a DUI, or shoplifting, use of alcohol or drugs, risk-taking, and promiscuous behavior – all may point to depression, especially if this behavior is markedly different from the norm. One out of 8 adolescents have depression in the teen years. If your child appears unhappy for more than two weeks, it’s time to seek help from a psychotherapist. Treating depression holistically, looking at changing negative cognitions, dysfunctional behavior, negative eating and sleep habits, teaching relaxation and meditation skills, helping with social, family and academic stressors, all play a part in recovery. $2,000 to a random stranger who calls you on the phone? Hopefully, you would not, but the Roswell Police Department has received countless reports where people have been swindled out of their hard earned cash. Phone scams are a huge money-making business for thieves. With new scams popping up every day, trying to keep up with them and the technology that they use is difficult. Your caller I.D. may not display the callerâ&#x20AC;&#x2122;s real number because the scam artists are using Caller I.D. spoofing technology to make their phone number appear as a legitimate number, such as Georgia Power, the Internal Revenue Service, or even a police department. There are many versions of telephone scams. A typical scam that we are seeing in Roswell is where the caller informs you that you have missed jury duty. He will introduce himself as an officer with the Fulton County Court and proceed to tell you that in order to avoid arrest, you can pay a fine. The fake officer will instruct you to go the 24

store and buy a pre-paid visa card, known as a green dot card. These cards are typically hard to trace and will give the caller instant access to the money. These callers can be quite convincing and frightening. They will use scare tactics to convince you that you will be arrested if you do not pay them right away! Another common scam is the tax scam. You may receive an unsolicited phone call where the person on the other end of the line is posing as an agent with the Internal Revenue Service (IRS). Because it is tax season, many people fall prey to this. One victim called the Roswell Police to report that he gave over $4,000 because he had legitimate tax issues, and he believed that the caller was helping him avoid legal action and fines. Finally, local businesses are not immune to these fraudulent phone calls. We have had several restaurants and shops report receiving calls from, what they thought, was the Georgia Power Company. a book by it’s cover — or a restaurant by it’s name. The Peach and the Porkchop was on our list to Scoop for some time, based solely on the name. We were pleasantly surprised that the food and atmosphere were just as cute as we imagined. The Peach and the Porkchop is owned by Chuck and Alyssa Staley. Chuck from “Up North” and Alyssa from “Down South” have had the idea for a restaurant for many years. 16 years ago, Chuck’s future father-in-law casually suggested that if the two were ever to open a restaurant, they call it the Peach and the Porkchop. And so the idea was born.

credited for being the first place we’ve seen to have fresh flowers on display! It was absolutely gorgeous! Most importantly: the menu. The menu is one of those book-style menus that has several pages of choices. The Peach and the Porkchop uses several locally-sourced ingredients and cooks everything to order. They offer everything from traditional southern items like fried chicken and pimento cheese, to northern favorites like a “Pittsburger” and sausage sub sandwiches. If you’re looking for something lighter, no worries — they have a huge selection of lighter dishes and salads. We’re looking forward to going back in the evening to enjoy one of their “Adult” milkshakes.

I can remember watching anxiously on Facebook for them to open their doors, and it seemed to be taking a long time with the build out. Upon finally visiting though, I can tell why!

Martin returned home to Alabama from a career in Tropical Medicine to pursue another lifelong ambition – Wildlife Art. He had received a PhD from Tulane and combined tropical medicine research at Walter Reed Army Medical Center with field research in the Amazon rain forests of Colombia and Brazil. But a stronger calling then led him to a career in art and wildlife conservation. After three years as Curator of the Anniston Museum of Natural History, in partnership with C.D. Hancock, he began publishing his wildlife paintings through Wren’s Nest Gallery, Inc. Since that date more than 400 of his paintings have been issued as print editions. His original paintings and prints can be found in major corporate and private collections, including

those of President George H.W. Bush, Vice President Dick Cheney, Bob Hope, Arnold Schwarzenegger, Lee Greenwood and Generals Colin Powell and Norman Schwarzkopf. His works have hung in both Houses of the U.S. Congress, the National Wildlife Federation, and the Audubon Naturalist Society, as well as in governmental offices in his home state. Other public figures and statesmen from many countries throughout the world own works by Mr. Martin. Heavily influenced by the wonders of the natural world, Martin has worked continually in conservation and wildlife art in efforts to ensure that future generations will be able to enjoy the Earth’s natural treasures. His fundraising efforts have extended to Ducks Unlimited, the Audubon Society, The Nature Conservancy, Wildlife Rescue Service and the Cahaba River Society and numerous causes to save threatened species. Larry has more recently returned to the tropics – this time to paint subjects in the rain forests of South America and the dry savannahs of Africa. He has traveled

in the mountains and Amazonian jungles of Colombia, Brazil, Bolivia and Peru and led photographic safaris to Kenya in 2001 through 2014. His plans are to continue to host annual group safaris to Africa, Central and South America. He has led fifteen photography safaris to Kenya, Tanzania, and South Africa between 2001 and 2014. Old Mill Park & Covered Pedestrian Bridge

One of the most beautiful areas in Roswell, this park has an interpretive walk highlighting the old mill ruins 37

and providing access to Vickery Creek and its dam. The Chattahoochee River National Recreation Area is linked by the Vickery Creek Covered Pedestrian Bridge and allows you to enjoy the forest and a hike to the Chattahoochee River. THE PRE-SWING ROUTINE It is important to improve fundamentals. Fundamentals include grip, stance, posture, ball position and alignment. For example, by aligning the clubface square to the target-line, and aligning the body to correspond with the intended path of the swing, the path of the swing will determine whether the ball flies straight, fades or draws toward the target.

shot holds the green, and how well a player plays the wind. A 45-degree angle of trajectory causes a longer ball flight than an angle of trajectory that is more or less than 45 degrees. A low trajectory into a strong wind bores through the wind.

During the pre-swing routine, visualize positive results. That activity of one’s imagination instills confidence, determines club selection, and helps trigger an appropriate swing.

Different factors affect height of trajectory. The primary factor is the angle of approach, an angle that normally corresponds to the slope of the backswing. A steeper backswing causes a higher angle of trajectory. A more upright posture tends to cause a lower angle of trajectory. Maintaining a constant spine angle throughout the swing helps control the angle of trajectory.

MEETING THE BALL SQUARE

THE SHORT GAME

Learning to meet the ball square keeps the ball in play, increases the number of fairways and greens hit in regulation, scores more pars and birdies, and incurs fewer penalty strokes.

The short game includes putting, chipping pitching, bunker shots and lob shots. Spin and height of trajectory influence results; for example, putts and chips are ideally played with over-spin The stroke is a rhythmic back and forth on line movement. The hands lead the clubhead back with a cupped left wrist, causing a slightly closed clubface. The hands again lead the clubhead forward with a cupped right wrist that squares the clubface. The force of a smooth pull through impact determines distance.

The key to meeting the ball square is a slightly closed clubface at the peak of the backswing, caused by a cupped left wrist. Cupping the right wrist during the transition and maintained through impact squares the slightly closed clubface. CONTROLLING THE HEIGHT OF TRAJECTORY The height of trajectory affects distance, the way a 42

on the upswing with a de-lofted clubface to impart over-spin. Memory plays an important part in a sense of distance. One way to develop a sense of distance is to repeatedly putt a ball to a given distance, and then putt another ball a few feet farther, remembering the difference. Memory plays an important part related to ‘reading the green.’ One reads the green prior to stroking a putt or chip and considers how break, grain, slope and other factors influence results. Over time and considerable practice, one memorizes subtle nuances. Another factor determining the level of skill is visualization. A golfer learns to ‘see’ the line, and responds with precise alignment, and what is seen registers a given distance with a corresponding required level of force. The act of seeing a positive result vicariously, prior to stroking a putt or chip, enhances confidence and results. The key to most bunker shots and lob shots is to develop a stroke that imparts height and back-spin. Rather than de-lofting the clubface with the hands ahead of the clubhead, these two shots are played with an extreme laid back or lofted clubface. The palm of the right hand faces the sky at address and through impact. The clubhead swings down and under the ball with the palm of the right hand facing upward. The ball lands softly with little or no roll. A golfer serious about lowering scores should improve the pre-swing routine, the technique of meeting the ball square, control the height of trajectory, and develop a reliable shot. of golf and business will unite for a fourth year at the Judson Collegiate & Legends ProAm Challenge, June 24-29, 2015. Benefiting The JCI Foundation, the event has expanded to six days, with a full day dedicated to the Judson Women’s Leadership Conference presented by AT&T in Atlanta. Two days are scheduled for amateurs to participate with LPGA Legends and collegiate players for the Pro-Am competition in Roswell. The Judson Collegiate & Legends Pro-Am Challenge brings together players from The Legends Tour, the “Official Senior Tour of the LPGA," and the top female college players from around the country in a unique mentoring and educational golfing opportunity for these young players. Based on demand, the Pro-Am will be offered on two days this year, June 25-26, followed by three days of stroke play competition for the collegians. Cohosts for the event are Rosie Jones, 13-time LPGA and seven-time Legends Tour champion, and Lauren Judson, who played golf at Univ. of Southern

Mississippi and co-founded the JCI Foundation with her brother Dean to honor the loss of their parents. “Golf is a powerful networking sport. It’s tremendously rewarding to not only have the best players in the history of the LPGA compete here in Georgia, but allow the future stars of women’s golf compete alongside these Legends. The Leadership Conference adds another way for women to mentor each other,” said Rosie Jones, who played on seven U.S. Solheim Cup teams and served as captain for the 2011 team. She is a co-founder of the Judson Collegiate & Legends Pro-Am Challenge. Hall of Famers Amy Alcott, Pat Bradley and Nancy Lopez are a few of the 30 Legends Tour golf professionals who have been confirmed to tee it up with amateurs and collegians in June at the Country Club of Roswell. This is the third stop of the season for the Legends Tour. It continues to be the only event that allows women collegiate golfers to play alongside former stars of the LPGA.

Pet Dental Care Got dog breath?

Many dog and cat owners assume that bad breath is normal. However, it is often a sign of dental infection that can be treated and prevented. Sometimes it is due to foreign material stuck in your pet’s mouth, or can be a sign of oral cancer, diabetes, lung, stomach or kidney problems. The best way to get rid of bad breath and keep your pet healthy is to have your veterinarian do a full oral exam, identify, and then treat any underlying causes. February is National Pet Dental Health Month, and is a perfect time to get your dogs and cats a dental check-up. Visible Symptoms of dental disease: Bad breath, brown teeth, blood on chew toys, red and swollen gums, rubbing the face, a swelling on the cheek, or reluctance to eat hard foods are all symptoms that you may notice with dental disease. Hidden dangers of chronic dental disease: Most importantly...PAIN. Inflamed gums and infections in teeth hurt, whether it is obvious or not. Because dental disease is hidden, it can be hard to tell when your pet is in pain. You have to “lift the lip” to see the teeth. Try to check your pet’s mouth at least monthly for any signs of tartar, redness, odor, or chipped teeth. Chronic periodontal disease has been shown in studies to be associated with inflammation and degeneration in the liver and kidneys. This long term inflammation can also make other diseases like diabetes harder to manage. Damage to the teeth can be irreversible, and the teeth will need to be extracted or corrected with surgery if the infection has gone too far. The reality is that most people do not brush their pet’s teeth (full disclaimer: I don’t either). There are many products on the market that can help reduce the build-up of plaque and tartar and can help keep the teeth healthier between cleanings. Formulated diets, safe chews, oral rinses, water additives, treats, paste and brushes are all good options if used daily. You can check out the Veterinary Oral Health Council website for a complete list (www.vohc.org). Treating Dental Disease Just like in people, regular brushing and home care isn’t enough. Your veterinarian will examine the mouth and look for any problems. If there are any concerns, general anesthesia is used to do a full mouth examination and to take x-rays. Next she will gently remove tartar that is visible on the teeth. Most importantly, she will probe under the delicate gum line (gingiva) to check for gingivitis or periodontal disease and to scrape away the hidden plaque and infection there. The teeth are then polished and the mouth is rinsed. Further dental care (extractions, root canals, surgery) may be needed. Modern anesthesia is safe for almost all pets, and without it you cannot properly treat dental disease. Dr Jennifer Ferrell graduated from the University of Florida veterinary school in 1999. Roswell Cycling Festival have announced a new lineup of activities and partnerships for the 14th annual event, scheduled for April 25-26, 2015. Hennessy Jaguar Land Rover Centres returns this year as the presenting sponsor for the Festival. Mountain bike races have been added at Big Creek Park leading up to the featured road races. In addition, a Craft Beer Tasting will be part of the popular Historic Roswell Criterium event on Sunday in Historic Roswell, with 11 participating restaurants. “The Roswell Cycling Festival has become more than a pleasant afternoon under the shade trees of Historic Roswell for bicycle races. It has become a showcase for the city as a bicycle friendly community and as a dining and shopping destination. Bike Roswell! and corporate partners like Hennessy Land Rover and Hennessy Jaguar have helped this event continue to grow,” said Roswell Mayor Jere Wood. For the first time, the 2015 edition will feature offroad bicycle events to compliment the road races, which attract top male, female and junior cyclists from across the United States. Popular activities returning are the Roswell Mayor’s Ride, Kiwanis Club 50

of Historic Roswell Kid’s Bicycle Safety Rodeo and festival expo. This is also the inaugural year for the Craft Beer Tasting. I visited Georgia as a college sophomore, I have had a fascination with the traditions of the South…the Masters, the Kentucky Derby and SEC football games. After having an amazing appetizer and drinks at one restaurant called Cypress and then having an even better dinner at its sister restaurant Magnolia’s, I began channeling my “inner” Miss Truvie (Dolly Parton from Steel Magnolia’s) as I yearned to learn more about the amazing ingredients I had just had and the Southern influence by which it was all prepared. At the suggestion of one of our dinner companions, I inquired about a cooking lesson taking place the next day and decided to skip golf and explore my culinary “chops”. The class was called Grits Gravies and Roux and included lunch and a history of cooking in the South. The class started with a lesson on seafood and local fare in coastal Carolina and then slowly told the story of the impact of grits, gravies, and roux in low country cooking. Little did I know, my life would be forever changed by something called…a “grit”.

GRITS ARE NOT JUST FOR BREAKFAST ANYMORE. In my opinion, Grits are probably the most misunderstood food in the world. They are simply dried, ground grains of corn and though many Yankees will never admit to eating or liking grits, the fact is that they are used to make everything from polenta to corn flakes. Unfortunately for many outside the South, your first experience with grits was while traveling on I-75 or I-85 heading south for vacation and stopping at a roadside chain for breakfast. These grits are generally boiled “to death” in water and need to be buried in butter and salt in order to consume. As much as I love Cracker Barrel or Shoney’s, please do not let these tasteless, roadside grits skew your thoughts about this misunderstood Southern “super food”. After a delightful cooking lesson and meal, I became inspired and quite honestly, have never been the same. My wife and mother will tell you that until that trip, I couldn’t make a hot dog without screwing it up. After nearly 15 years of practicing on my family and friends, I have amassed an arsenal of recipes and created a few myself using Grits as the foundation for many “Southern fusion” dishes such as: Rack of Lamb with Rosemary Grit Cakes and Cabernet syrup (beef stock with fresh rosemary for the grits, a bottle of Cab reduced for about 45 minutes roswellinc.com • visitroswellga.com

Country Ham, Eggs, and Grits with Red Eye Espresso Gravy (half milk/half chicken stock in grits) Grilled Salmon with Jalapeno Cheddar Cheese Grit Cakes (chicken stock for grits and just add cheese and chopped fresh jalapeno before you chill then sear). As part of my ongoing education and as a helpful tool for a few friends, I have developed what I call my Grit Tips, which are simply my three laws of cooking with Grits: Tip #1…Never, EVER use water while making Grits. I don’t care what the package says. Try using one of the following when making grits or grit dishes depending on your protein and veggies…Chicken Stock, Beef Stock, Fish Stock, Milk, Cream, Wine, Juice or your favorite liquid. Tip #2…Even though, different recipes call for different amounts, I have found that using a one to three ratio for grits to liquid works in most cases. Bring the liquid to a rolling boil, slowly stir in the grits and simmer uncovered while stirring for approximately 25-30 minutes. Remember to always finish with a couple tablespoons of butter or cream.

These Grit Cakes will be your “go to” accompaniment either with some eggs the next morning or as a side dish for dinner that night. The flexibility and variety of flavors that you can create and infuse into your grits is as vast as your culinary imagination. Grits can be your rice or your risotto, your mashed potato or your potato cake, your dinner “pasta” or your breakfast side dish. As a self-proclaimed Southern Man and Yankee transplant, I take my manners, my family, my Faith and my Grits very personally and I hope that with some of these tips and further understanding of Grit-lore, you will grow to appreciate and enjoy Grits as much as I do.
