Cake and Bake Lemon Curd Cookies Crisp and buttery with a tangy lemon flavour these delicious home-made cookies taste divine. You can change the flavourings if liked, try orange zest with fine shred marmalade or replace 1tbsp of the flour with cocoa powder and fill with chocolate and hazelnut spread for a moreish choc and nut version!

Ingredients: • 50g butter, softened • 1 tsp finely grated lemon zest • 85g caster sugar • 1 medium egg, beaten • 175g plain flour, plus extra for dusting • 4 tbsp good quality lemon curd • Icing sugar, for dusting

TIP The chilled dough will keep in the fridge for 2-3 days. Leave at room temperature for about 20 minutes to allow the dough to soften a little before rolling out otherwise it may crack.

Makes 16 - Ready in 30 minutes plus chilling

1 Place the butter and sugar in a large bowl and

beat together until light and fluffy. Beat in the lemon zest and egg then sift over the flour and mix to a crumbly dough.

2 Gather the mixture together with your hands

and knead on a floured surface until smooth. Flatten to a disc shape, wrap in cling film and chill in the fridge for about 45 minutes.

3 Preheat the oven to 180°C/160°F/gas mark 4.

Line two baking sheets with baking parchment.

4 Roll the dough out on a lightly floured surface to a 5mm thickness and using a 6cm round cookie cutter stamp out 16 circles, re-rolling the dough as necessary.

5 Place the circles of dough on the baking sheets. Spoon about ½ teaspoon of lemon curd in the centre of each circle then pull up two sides of the each circle and pinch together tightly to seal. Chill in the fridge for a further 30 minutes.

6 Bake in the preheated oven for 12-14 minutes

until pale golden. Cool for 5 minutes then transfer to a wire cooling rack and leave to cool completely. Serve dusted with icing sugar.

Plotting a Vegetable Garden by Pippa Greenwood

So you have a small garden – maybe no more than a paved back yard or a balcony. That means you can’t really grow much for kitchen, right? Wrong! Start now and you can feast on delicious home-grown salads all summer long. The truth is that producing useful quantities of your own vegetables doesn’t take up as much space as you might imagine. There’s a lot you can plant out or grow from seed right now that will give you some super-tasty, succulent, and top-quality salads in just a few weeks’ time. And the good news is that salad leaves grown in ornamental pots can be as decorative as they are nutritious. Before you get sowing or planting, choose the right containers. Big ones are easier to maintain than small ones; and of course bigger pots mean more produce. Go for something of at least 30cm (12in) in diameter, larger if possible, and whether seriously stylish or low-budget – even an old bucket with plenty of drainage holes – they’ll do fine.

Compost is important too, but as salad crops tend to be pretty short-term there’s no need to spend a fortune. Ideally choose a good-quality multi-purpose compost, but you can get perfectly acceptable results with the contents of a growing-bag, and save yourself a lot of money in the process. I find the quality of the compost in these isn’t all that brilliant, but for the time you need it – and provided you keep it well-fertilised – it’ll be quite adequate. Salad leaves are all the rage and if you grow your own you can get precisely the mix you like best. They can be as ornamental as your planters, too. There are plenty of eyecatching lettuces such as the frilly Lollo, either a gorgeous bright-green standard Lollo a burgundy-tinged Lollo Rosso or a mixture of both. A look at the seed packets in the garden centre will reveal oak-leaved types, frillies, and all sorts of seriously pretty lettuces in every shade of green and red imaginable. If you treat them as cut-andcome-again crops, snipping off the leaves as you want them but not cutting into to

the base, they’ll put out new shoots and keep cropping for longer. Baby beet leaves are a popular salad ingredient, too. Choose a variety like Bull’s Blood for the prettiest leaves or grow any of the standard varieties, and you’ll also get a great-tasting root crop later on. I generally harvest the young leaves a few at a time but let the plant produce a root too. There are still plenty of tomato plants in the shops now, but you want to hunt carefully to find the ones that are still in top condition. If you choose an outdoor variety (the label will state this clearly) it can be grown in a pot on its own, and if you have a big enough container you can grow some other salad ingredients around the edge of the container too – perhaps a rim of salad leaves, compact lettuce, or even a few herbs? If you’re after some fire in your cooking, a chilli pepper thrives in a pot in a warm and very sheltered spot. Sweet peppers also do well in pots, but again you need as warm and sheltered a spot as

possible. Fresh herbs will not only transform your cooking but can make a salad something very special too. Choose your favourites and either grow them in a dedicated herb pot with extra grit in the compost for good drainage, or even consider popping a few in with your main crops. Vegetables, like most plants, do best in a relatively warm spot with plenty of sun, so site your containers carefully. You want them to be easily accessible from the kitchen, but it’s more important to ensure they’re sheltered from the wind but still get enough sun – although sunshine is less critical to salad crops than it is to fruit. You can make your salad pot using crops raised from

seed and sown directly into the compost – root crops such as carrots don’t much like being transplanted, and so are perfect for direct sowing. If you’re growing beetroot for its sweet juicy root, it too tends to perform better if direct-sown. Just make sure that the compost is kept moist at all times but not actually wet: as long as the container has plenty of drainage holes in it you shouldn’t have any problems with over-watering, even if there’s a downpour or two.

Something In The Air The gadgets that promise an end to airborne irritants

The arrival of better weather also means the arrival of airborne pollen and other irritants. That can mean misery for people with hay fever and other allergies. Could gadgets help? One solution promises to relieve symptoms by sticking lights up your nose - and while it may sound odd, many hay fever sufferers swear by it. The £39 Medinose may look ridiculous in use - the red light does a great job of making the user’s nose glow very red - but fans say it does a great job of reducing symptoms. As with many alternative health products, however, there are plenty of disappointed customers on sites such as Amazon who say that it didn’t do anything at all. For many allergy sufferers, staying indoors and cleaning the air can be beneficial. Air purifiers fall into three main categories: standard purifiers, which pass air through special filters to remove small particles; air ionisers, which create negatively charged ions that attach themselves to dust and other airborne particles; and ozone generators, which produce a gas called ozone. Some models combine multiple categories, so for example you’ll often see air purifiers that

also ionise the air. The third category, ozone generators, is the most controversial: while manufacturers rightly claim that ozone can kill bacteria, they neglect to mention that the massive concentrations required to do so would probably kill people and animals too. Unfortunately this is a sector where wild marketing claims abound. Generally speaking air filters and cleaners can help with really big airborne particles - dust, smoke, pollen, pet dander and so on - but they’re useless against viruses, and you can often achieve similar results by addressing the root cause. For example, if you have a pet dander allergy an air cleaner can help, but swapping from carpet to laminated flooring and banning the dog from the sofa might be a better long-term solution. Air purifiers aren’t particularly expensive - expect to pay around £20 to £40 for models suitable for small rooms, rising to £100-plus for heavy duty models. But make sure you’re looking for the acronym HEPA which stands for High Efficiency Particulate Absorption. Filters that meet the HEPA standard are

excellent at filtering airborne irritants and organisms, but watch out for sneaky marketing: filters cannot partly meet the HEPA standard, so claims such as “99% HEPA” are meaningless. Filtering isn’t the only thing you can do in your home. Dehumidifiers remove damp and reduce condensation, which can help reduce or prevent mould and mildew and humidifiers make the air more moist. While it’s possible to make your own humidifier with a bowl of water and a towel, dehumidifiers are more complex: chemical ones use a special gel that draws water from the air and are best suited to very small rooms or vehicles, while electric dehumidifiers use a refrigerant to cool the air and turn it into water. The most powerful models can be connected to a permanent hose that pipes the excess water out of your house - useful if you need to dry a lot of clothes indoors and don’t fancy emptying the water bucket all the time. Expect to pay around £10 for a chemical dehumidifier and from £30 to more than £100 for an electric one. A small group of students from various year groups at Macclesfield Academy meets regularly to discuss ideas, work together and support each other as writers. Our articles look at life from a sometimes refreshingly different perspective! This month, an interesting piece by Maxwell Gilliver from Year 9

Into The Concrete Jungle Trash-filled pavements, grey and black monoliths, the smell of smoke creeping into every corner of the cold unforgiving city streets . . . Welcome to the concrete jungle. Many people who have grown up in Macclesfield have lived here for their entire lives, thriving in the peace and tranquillity which the town has to offer. The fresh air and quiet streets, which we so easily take for granted, are what we’ve grown up with, and are what have become the true essence of our hometown. However, this means that when we venture out to unknown lands, we never truly know what to expect. Despite Macclesfield’s green pastures and warm community, young people still crave the industrialised grey landscapes of the urban city. They leave Macclesfield’s shopping squares and move to the urban streets to fulfil their needs. A few weeks ago, I decided to crawl out of my comfort zone and drag myself on a trip to the city. As a local teen and raised in a rural area, I can safely say that it was not what I expected. I’ve been to Manchester before with groups of people; however, going alone made me reconsider what I was actually doing. I walked down the street, past the piles of trash overflowing from neglected bins and glancing over to the equally neglected people who have been forced to beg for help. At one point I turned a corner and found myself in an alley; the darkness creeping in around the endlessly rising walls and the heartless eyes of hoodies glaring at me like a pack of wolves. The experience wasn’t scary, it was eye-opening and it made me realise that I was out there alone in the mists of the city. People who have lived and grown up in urban areas are used to the hidden dangers that litter their streets, but coming from a rural community we tend to forget the dangers we are in. Arguably, the thieves, convicts, dealers and vandals who once struck fear into the hearts of teenagers have suddenly lost their edge. This new society has raised us to take no notice of such dangers, making us ignorant of the fact that we are just naïve teenagers in a land filled with hidden dangers. Whilst not every street-dweller is going to be a hidden menace, and the strangers you pass in the street will most likely just be every-day people, why take the chance? We see stories on the news all of the time about people in dark places picking out prey in the city streets and see them as just that: stories. However, as you walk down those city streets with those people from dark places surrounding you, remember that, in the concrete jungle, stories come to life.

Maxwell is a music loving animal fanatic, who enjoys practicing Karate. He is currently a brown belt 1st Kyu, and is preparing for his black belt. He spends most of his spare time reading and social networking. He is interested in cooking and eating the results!!

The old adage says that “everyone has at least one novel in them” but for some inexperienced writers the thought of writing a novel is a bit like climbing Everest in carpet slippers with only a length of washing line to keep you from falling. For that reason many aspiring authors give up before they’ve even started, and that’s regrettable as these days there are so many other routes writers can take if they want to flex their creative muscles. Writing for pleasure is a low-cost, easily manageable activity that may even –on occasion - offer financial rewards. Flexibility is the keyword and it’s up to you to decide how much time you spend writing, what subjects you write about and whether you invest any money to support your endeavours. So where should you start? The internet has revolutionised the way writers interact with their readership and blogging has

If you are happy to direct your blog to friends and acquaintances alone, that’s fine, but if you have ambitions to become a star blogger with a following of thousands then you’ll need to offer something truly original that gives inspiration or help to others. If you’re not driven to write about a particular topic or cause, then you might want to try your hand at composing short stories. Flash Fiction – a genre of ultra-short fiction that applies to stories of up to 1,000 words – has recently grown in popularity. If you want to have a go at writing Flash Fiction there are a number of online competitions you can enter, but beware those sites that charge exorbitant fees to participate. Finally, it goes without saying that the best way to gain literary skills is to soak up the work of high quality writers such as Charles Dickens or Virginia Woolf. If you’re not sure where to start with contemporary authors then you could search through the lists of nominees for high profile fiction awards such as the Man Booker Prize. MACCLESFIELD REFLECTS‌ on the First World War

Over one thousand servicemen from Macclesfield and surrounding villages lost their lives during the First World War, and thousands of lives were irrevocably changed. A series of events is planned over the next four years to commemorate the centenary of the conflict with the first Macclesfield events taking place in June during the Barnaby Festival. The exhibition reflects on those who were affected by WW1, whether as servicemen, volunteers or civilians, and focuses on the start of the war. Visitors can learn about the men whose names are inscribed on war memorials in Macclesfield and surrounding villages, and what happened in the Macclesfield area during 1914. Visitors can enquire about relatives who served in the war, and are encouraged to bring photographs and memorabilia associated with WW1 for researchers to photograph and document. This information will be added to the Macclesfield area WW1 research archive, and, with permission, may be used in future exhibitions. Donations of photographs and memorabilia for future use will also be very welcome.

Whilst most residents are familiar with their local public war memorial, few are aware of the amazing variety of ways in which communities chose to remember their loved ones who served or lost their lives during WW1. Artist and art historian Geoff Archer has made a study of those memorials, resulting in this poignant exhibition of photographs. The types of memorial to be seen include sculpture, stained glass windows, wall plaques, Rolls of Honour, lych-gate, crosses and headstones. Examples have been drawn from across East Cheshire, including Macclesfield, Bollington, Wilmslow, Knutsford, Biddulph and surrounding villages.
