DJ’S BUTCHER BLOCK Bloomfield serves as one of the region’s most nostalgic neighborhoods. With its aging architecture the area has become a prime destination for patrons seeking old fashioned shops and a taste of the old world.

DJ’s Butcher Block, located at 4623 Liberty Avenue, offers up an old school feel with its traditional practices. Owner and creator Dennis Smulick Jr. is a seasoned chef with over 25 years of experience in the food industry under his belt. After going to school in New York City for the Culinary Arts and cooking in New Orleans for a number of years, Dennis found his home in Bloomfield and has been living there for over 13 years. When he decided to expand his love of charcuterie and sausage making into a full blown business, Dennis knew that Bloomfield was the perfect neighborhood. “I was always attracted to the area’s architecture so it seemed like a good place to go into business.” The traditional butcher shop has been running since November 1st, 2012. Almost all of their meats come from local farms and are pasture raised and farm fed. The shop offers a selection of traditional and exotic meats sometimes even including such items as alligator sausage. They also produce pates and stocks made on the premises without the use of salt or msg. The shop also partakes in in house curing of pepperoni and sausages as well as charcuterie practices, which they hope to experiment with even more in the upcoming year. Aside from their meats, DJ’s Butcher Block also carries a variety of eggs, milk and local preserves. When asked what was best about being in this line of business DJ replied “I like being able to provide a butcher shop that doesn’t come off as pretentious and that people won’t be intimidated by. I get to see all different kinds of people interact with each other that probably would never talk to one another on the street”. This October DJ’s Butcher Block will be setting up at the East Liberty Market every Monday and at the West View Route Market every Wednesday. Spaces in the downtown Pittsburgh area by offering free, year-long leases to individuals with innovative business ideas.

52ND STREET MARKET This November Lawrenceville will become home to the 52nd Street Market. This new establishment will serve as an all inclusive grocery store with staples supplied by Paragon Foods, produce supplied by local farmers and a selection of prepared foods including sandwiches and coffee available for shoppers.

Kane and Walmsley are currently looking for kitchens in the Upper Lawrenceville area that will lend out their facilities so they can expand the prepared food options at the market. This project, completely sparked by community outreach, has been able to come to fruition thanks to the hard work of Deirdre Kane and Dora Walmsley. Kane and Walmsley have been working since 2008 to become active members of Upper Lawrenceville by volunteering and becoming involved in community groups dedicated to transforming the neighborhood. Both Kane and Walmsley have since been voted onto the Board of Lawrenceville United and remain active members today. The market’s convenient location will allow Lawrenceville residents an alternative to the larger grocers and give them the opportunity to support local farmers and vendors. Kane and Walmsley, a duo with more than 25 years of experience in the restaurant and food industry between them, have become loyal members to the Upper Lawrenceville community. They hope to see the 52nd Market become a vital part of the


The Public Market, a space nestled amongst the unique and historic architecture of the Strip District, has moved further up Penn Avenue allowing for a more accessible experience for pedestrians exploring the neighborhood. The Public Market re-opened it’s doors this summer, offering a new and exciting shopping experience with their growing collection of local vendors and merchants. The Market has already begun to help small vendors turn into businesses, such as the Crested Duck Charcuterie which started at the Public Market but now resides in Beechview as a small business. The Public Market’s new larger location allows for more merchant space and encourages new businesses to consider the opportunity to work with them.

THE PUBLIC MARKET Neighbors in the Strip (NITS) started developing plans in 2003 to create an indoor market that could operate year round. NITS began this project in an effort to invigorate the growth and expansion of local businesses that promote the best of what Pittsburgh has to offer. In March of 2013, the Public Market finally received the funding it needed in order to stay in the Strip District. Located at 2401 Penn Avenue, the market’s new location has twice the amount of space and several new amenities including public restrooms, heating and cooling. The Urban Redevelopment Authority (URA) provided a $40,000 grant to NIS to support this project’s

development.

THE ART MARKET: Creating A New Artistic Community The Art Market, located in the East End’s Lawrenceville, opened three years as a part of the non-profit agency Milestone Centers. Milestone has been a offering fundamental support to adults with developmental and mental health disabilities in Allegheny County since 1969.

The Art Market’s mission is to provide these individuals with the opportunity to make an income through their artistic abilities which simultaneously educates the public and helps to diffuse the negative stigma surrounding individuals with disabilities. The gallery space on Butler street where The Art Market has found its home had previously only been open 4-5 times a year but is now a full time gallery.

Aside from offering a unique retail space in which these artists can display and sell their work, The Art Market also offers a series of classes and workshops in which individuals with disabilities can learn other various skills to acclimate them to the workforce. Tirzah DeCaria, a coordinator that has been with the gallery since its incarnation, believes that Lawrenceville’s unique environment of nontraditional retail spaces and their artistic community have played a very important role in The Art Market’s success. DeCaria says that “these kinds of projects are happening all over the country” and it’s important for these types of projects to happen in Pittsburgh so that we can “change the public’s perception of people with disabilities”. In the future, DeCaria hopes to see the gallery working with more non-profit organizations and guest artists in an effort to boost capacity. The Art Market is located at 4128 Butler Street in Lawrenceville and is open Tuesday-Friday from 11am-4pm and by appointment at 412-621-2951.

FRIENDS OF ARSENAL PARK When Randall Sulkin first moved into his home on 40th Street in Lawrenceville he immediately noticed a park across the street that was seemingly unused and desolate.

After talking to his fellow neighbors Sulkin decided he needed to do something to help rejuvenate Arsenal Park. Using the park’s 150th anniversary commemoration of the explosion at the Allegheny Arsenal, Sulkin and a group of other Lawrenceville residents collected 264 signatures for their petition to get the city involved in cleaning up the park. In 2012, a new organization consisting of local residents in partnership with

Lawrenceville United was formed. Friends of Arsenal Park is committed to improving the area by working with the city and performing frequent maintenance. Sulkin has since been able to get Public Works to come out to the park once every two weeks to perform basic upkeep. A growing group of volunteers also comes out to clean up the park and help to repair playgrounds, sidewalks and historic structures. Although the park still needs a lot of work, it now has spaces suitable for hosting music events and small sporting events. Friends of Arsenal Park have begun to offer outdoor classes such as yoga This December the park will be hosting “Winterfest”, a celebration that will involve an assortment of outdoor winter sports and activities for people of all ages.

A Lawrenceville rowhouse serves as the home to Bill and Michelle Larkin who have transformed the first floor into a tasting room for their home brewed cider and wine. Adorned in Civil War inspired decor inspired by the former arsenal located across the street years prior, Arsenal Cider House and Wine Cellar offers a broad selection of ciders and fruit wines. What began as a hobby 10 years ago has blossomed into a successful business that has effortlessly attracted not only walk up customers but also over 25 bar and restaurant clients like Lidia’s Pittsburgh. Last year, Bill and Michelle produced 7,000 gallons of their products and are expected to make 10,000 to 12,000 gallons in the upcoming year. Larkin says that up to 30 varieties of cider and fruit wine can be produced on the premises with up to eight available at a time for tasting and purchase. The Larkin’s use everything from peaches to rhubarb to produce unique and delectable wines and ciders. Arsenal has now begun to make mead and is beginning to produce a hops-style cider similar to a beer called Indian Pale Ale. A selection of

CHEF PROFILE: TJ GUZY FEATURED DINING ESTABLISHMENT: EAST END FOOD CO-OP The East End Food Co-op, Pittsburgh’s only member-owned natural and organic foods grocery store, prioritizes organic products and local sourcing whenever possible. This guideline also holds true in the Co-op’s Vegetarian and Vegan Café, where the ingredients used to produce the fresh, homemade soups, hot entrees, and prepared foods are predominantly organic and locally grown. The Co-op’s buyers work closely with farmers in our area to help them get organic certification when possible. For farming opera-

tions that cannot afford the expensive process of certification, our buyers verify that their growing practices are nonGMO and naturally grown. In order to maximize the use of local ingredients, the Co-op Café revolves its menu around what ingredients are available through their vendors. They work with a number of local suppliers, including Allegro Hearth Bakery, Minerva Dairy, Nu Way Farm, and Smith’s Organic Farm. Their primary suppliers are Wilmington Gardens (located in New Wilmington, PA) and Clarion River Organics (located in Sligo, PA). These farming operations send out weekly emails announcing what recently harvested items are available to order, which the

Café staff examine to create the weekly menu. Through this practice it is often the case that what customers are eating was still in the ground literally just a day or two ago! Another outcome of this process is that the cooks often can’t finalize their recipes until the available ingredients are determined, so the kitchen is a place where creativity is beneficial. There is a regular infusion of new menu items created by members of the cooking staff, who are encouraged to experiment with recipes and variations of popular dishes. One employee who’s particularly flourished as a result of the freedom in the Co-op Kitchen is TJ Guzy, a hot cook who has worked at the Co-op for about

two years and was recently promoted to Kitchen Supervisor. In addition to his appreciation for fresh, local ingredients, TJ also came to work at the Co-op because he wanted to learn more about vegetarian and vegan cooking. Although he’s a meat-eater himself, he felt that learning more about special diets and gaining familiarity with meat alternatives would help him to learn more about cooking in general. It was also a skill set he wanted to expand upon because it’s becoming an increasingly common requirement for chefs to be able to adapt their cooking to accommodate special diets. “The biggest hurdle was, and still is, to

CANDY ONION PARMESAN SOUP Yields approximately 6 servings 6 Candy Onions 3 tablespoons of Olive Oil 1/4 cup Red Miso Paste 6 cups of Vegetable Stock (packaged, or see below for a recipe to make your own!) 1/2 cup of Fresh Parsley (minced) Parmesan Cheese Salt to taste 1. Cut the ends off of the onions and cut in half, then peel 2. Slice the onion into 1/4” slices (cut along the longitude of the onion to get strips instead of half-moon slices) 3. Heat olive oil in a 4-6 quart pot, add onions and cook on medium heat 4. Stir onions occasionally for 15-20 minutes or more, to slowly cook the onions down and caramelize 5. You can mince the parsley while the onions cook 6. Add miso paste and vegetable stock and bring to simmer for 5-10 minutes 7. Add parsley at last minute, reserving some to garnish 8. Season with salt to taste (remembering that adding the parmesan cheese to finish the soup will add some more saltiness) 9. Top with shredded parmesan cheese and parsley Vegetable Stock Yields approximately 2 gallons

dishes, TJ has one piece of advice for people trying to become more comfortable in the kitchen: let yourself be creative. “A lot of people don’t cook unless there’s a recipe, but if you just think about the flavors that you like and experiment with it, you can create all kinds of dishes without needing a recipe!” TJ still hopes to apply his culinary creativity to someday operating his own

restaurant. “Every time I begin to get a menu together, more ideas come that take me in different directions. Finalizing and fitting one menu together and figuring out the aspects of what type of restaurant is quite difficult.” No matter what he settles on, it seems likely that he will not always find himself in front of a stove, so be sure to stop by the Co-op Café to taste his cuisine while you can!

Sherree Goldstein Before opening up Regent Square’s wildly popular restaurant Square Cafe in May of 2003, Sherree Goldstein worked at Gateway Rehabilitation Center where she helped people overcome their drug and alcohol dependencies for over a decade. Having been in the restaurant business for almost ten years, Sherree continues to bring this same attitude of support and nurture to Square Cafe and the community that has supported her endeavours in creating a business environment which puts an emphasis on supporting other local businesses and maintaining a close relationship with its customers.

In their first week of business the Square Cafe had 8 employees and by week 2 had 21 due to it’s overwhelming popularity. The Regent Square clientele has continued to be incredibly supportive over the years, some customers returning almost every day of the week whether it be their morning coffee or a sit down breakfast with the family. In order to promote the community oriented aspect of her business, Sherree turns to local distributors for her restaurant supplies. Kiva Han, one of the original coffee roasters in Pittsburgh, has been supplying Sherree with a unique house blend they worked together to create, for almost ten years. Square Cafe also gets their pastries from Bella Christie and Lil’ Z’s

in Aspinwall, their salsa from Marina’s Tortillas, and their bread from Allegro Hearth in Squirrel Hill. Sherree, in an effort to support her customers, has become involved in a number of organizations over the years. She currently sits on the board for POWER, the Pennsylvania Organization for Women in Early Recovery that helps women struggling with addiction. Because of Sherree’s willingness to be such a prominent member of non-profit organizations, customers at the Square Cafe will often come to her and suggest local organizations that they think the business should become involved in. Over the years, Sherree has supported

several charities including Animal Friends, the LGBTQ Wellness Center (PERSAD), The Jewish Community Center (JCC), Pittsburgh Action Against Rape (PAAR), and the Pittsburgh Aids Task Force (PATF), by sharing restaurant proceeds, attending events, and donating goods. Most recently, Square Cafe donated 25% of their Valentine’s Day proceeds to Grow Pittsburgh, a local agricultural nonprofit dedicated to promoting responsible urban food production. Although Sherree admits that “first 5 years or so of business felt like a start up”, she says that Square Cafe has far exceeded her expectations and turned into something greater than she had ever imagined

it could. Over the last ten years Square Cafe has become a fundamental part of the Regent Square community where the business has had the opportunity to “see families grow” and create their own family with a group of nearly 30 employees. When asked what kind of advice she would give to someone trying to open up a business of their own Sherree said that she “started this company with only $20,000 and one of the hardest parts of starting a business is being under capitalized”. After you realize that it may take awhile to get the business on it’s feet you realize that the most important thing is “really getting involved with what your customers are passionate about.” | Issue 1 25

people HEATHER ZICCARELLI Heather Ziccarelli, co-owner of Owl Cleaners, has strived over the last six years to move the company towards a more green dry cleaning facility. In an attempt to decrease the amount of waste caused by traditional dry cleaning methods, Owl Cleaners has adopted the new, eco-friendly method, SystemK4. SystemK4 is a German-engineered solution which enables a better quality of cleaning while significantly decreasing waste output. “We switched to SystemK4” Ziccarelli notes, “not only to decrease the cleaning facility’s environmental footprint, but also to provide our customers the best solution for cleaning out there.

JASON CAPPS Jason Capps, owner and chef at Bella Sera, brings a rich cultural heritage to his role at the catering company infuenced by his years of culinary experience gained in prestigiousestablishments all over the country. His passion for food is countered only by his desire to support other local businesses as he continually makes efforts to decrease his environmental footprint by growing as much of his own produce as possible and buying the rest of the restaurant supplies locally. Capps notes, “If we can’t buy (our products) from a locally grown source, we buy from other local businesses.” Adhering to so many green practices has enabled Bella Sera’s to become the frst GRA (Green Restaurant Association) certifed caterer and venue, as of 2008, in the state of Pennsylvania.

Ever since it was founded in 1904 by Ed Welsh, Natrona Bottling has made sure that every batch of soda is individually mixed with all its premium ingredients measured by hand. Using the same vintage equipment used to produce soda at the turn of the century, Natrona Bottling is the only soda company in the United States to still use a process called “pinpoint carbonation”. It creates small bubbles instead of the large gaseous bubbles used in all contemporary soda production. The tiny bubbles combined with the exclusive use of pure cane sugar create a smooth and unique soda incomparable to anything else on the market. Currently, the company offers ten different flavors of soda pop which are all naturally caffeine free and bottled as needed to ensure freshness. One of the company’s most popular flavor’s is one they’ve been making since the company’s inception; Red Ribbon Original Cherry Supreme. Vito believes that part of what makes their soda so wonderful, aside from their vintage processes, is their attention to unique flavors like Jamaica’s Finest Ginger Beer, a flavor that is made with real ginger root oil and is also available in a “Hot! Hot! Hot!” extra spicy version. Recently, Vito has developed a new flavor for the company, Red Ribbon Almond Cream Soda, that he hopes will gain popularity and become a favorite amongst customers.

Vito said, “Natrona Bottling would’ve closed if someone hadn’t stepped in to take over... the opportunity was too good to not take.” Vito works along side office manager of 15 years, Mary Jane Zdilla, and Master Bottler, Steve Vokish who has been with Natrona Bottling for 39 years.

Natrona Bottling Company, a small but passionate business, continues to stand as a unique gem in Western Pennsylvania, serving as an important historical preservation of vintage processes and techniques that no longer exist anywhere else in our nation.

DREAM CREAM ICE CREAM This small storefront located at 539 Liberty Avenue in downtown Pittsburgh may at first glance appear to be your run of the mill ice cream parlor. But closer examination reveals that Dream Cream Ice Cream does much more than just dish up ice cream. Co-owner, or “Chief Cone� as he has jovially nicknamed himself, Thomas Jamison, grew up in Pittsburgh and had a vision of a business model that would allow for his shop to help the community in a unique way. Dream Cream, originally opening their doors May 25th of 2012, is one of the many businesses made possible because of Project Pop-up, an organization started by Mayor Luke Ravenstahl to fill the multitude of empty retail spaces in the downtown Pittsburgh area by offering free, year-long leases to individuals with innovative business ideas.

Dream Cream selects 12 different members of the community every month who want to raise money for a viable need. These “dreamers” submit essays via Dream Cream’s website explaining what it is they’d like to raise money for. Jamison has seen everything from an individual wanting to raise money to help rebuild a local church to a volunteer wanting to start up their own t-shirt company. Each dreamer that gets selected then chooses one of Dream Creams unique flavors and volunteers at the shop for 7 hours 2 times per week to help sell their flavor. 25% of the proceeds made at the end of that month from the dreamer’s flavor automatically go to their cause. Jamison believes that this relationship is beneficial for both parties: Dream Cream saves on expenses and the dreamer is able to reach out to potential supporters for their cause.

Thomas Jamison, a Pittsburgh native, has always strived to find a way to give something back to the city that raised him. Although the desire to open the shop originally sprang from a passion for ice cream, Thomas Jamison opened up Dream Cream in hopes of disproving the stigma that often comes along with the ideas of “for- profit” and “non-profit” business models. Jamison believes that “you can do both. You can do good for the community and build wealth at the same time”. Jamison makes efforts on a weekly basis to reach out to local businesses in hopes of inspiring larger businesses to take this same approach. He has recently been corresponding with businesses in the surrounding area to give their employees discounts for Dream Cream as a gesture of goodwill.

More than a year after opening Dream Cream is thriving in the always growing and rejuvenating downtown Pittsburgh. Applications for monthly dreamers have been flooding in and Jamison even admits that he’s lost count of the amount he gets on a weekly basis but encourages everyone to keep applying regardless. In the next few years he hopes to expand Dream Cream into the towns surrounding Pittsburgh in order to extend the business’ reach to potential dreamers. This unconventional ice cream shop proves that innovation and risks can pay off. STREETHEART:

A Journey Through Pittsburgh’s Distinctive Streetwear Scene When 18 year old Katie Maillis first arrived in Pittsburgh in 2001, the Youngstown, OH native had admittedly never even heard of graffiti. It wasn’t until she began attending art school for graphic design that she suddenly found herself immersed in Pittsburgh’s unique streetwear scene. In the years since Maillis has become a fashion coordinator for RAW Pittsburgh and, as of the Spring of 2012, launched her own streetwear lifestyle brand Streetheart. Streetheart is an edgy collection meant to inspire those who wear it. Maillis says that she hopes “people who connect with [her] clothing can use it to identify with their own experiences, choices and likes”. The collection consists of a variety of tees, tanks and hoodies that employ leading-edge slogans and images. The simplicity of Streethearts clothing is counteracted by it’s attention to unique screen prints and verbiage. “Streethearts mission is to help girls look good while they act bad.” Maillis first began her venture into Pittsburgh’s fashion scene when she was attending art school in the city. “Honestly I didn’t grow up thinking I would be a part of the fashion industry. It all just kind of happened.” In the midst of her college years, Maillis was much like any other 20 something. She spent her time working at a pizza shop and going out dancing. During this time the owner of a local Streetwear store approached her and said he liked the

way she dressed. This individual was Brian Brick, president of Timebomb, now known as an essential player in Pittsburgh’s music, art, and fashion community. When they first met Brick told Maillis that he wanted to start getting women’s clothes into his store and wanted her to be the store’s buyer. Maillis says “that’s really where it all started. The combination of working at Timebomb and being around these amazing designs sparked my interest of starting my own brand. This is basically how Streetheart came to be.” After graduating, Maillis worked with Timebomb as both a buyer and graphic designer. Maillis produced flyers and CD covers and says that she eventually realized “[she] could

make money designing for local musicians and promoters doing something [she] loved”. This passion fueled Maillis to start her own brand, Streetheart. It was at this point that she was approached by the independent art organization RAW Pittsburgh who asked to feature some of her work in their upcoming show. Maillis now serves as their fashion coordinator, a position she has held for over a year. Maillis says that Pittsburgh has been a huge source of inspiration for her. “Pittsburgh is where it’s at right now! I’ve experienced and learned so much about design, city life and myself.” Maillis believes that the vast array of sub-cultures, diverse architecture, street art, music scenes and “the ever growing feeling

of Pittsburgh” serve as her main inspirations. She says that since coming to this city her “esthetic has definitely changed, or maybe grown would be a better word. Pulling from my experiences to make art that people can relate to. Because in the end you want your customer to relate with your clothing, so they feel they can express their true

selves by wearing your brand”.
