SAUVIGNON BLANC
This wine is made from a blend of fruit grown in the Goulburn Valley Eastern Australia from our own vineyards. Following delivery and crushing of the grapes during the cool of the night, the Sauvignon Blanc juice was cold settled and racked. An aromatic yeast was used for inocculation and this parcel was cool fermented for 7 days. The resulting wine is fresh and vibrant showing lovely tropical fruit flavours with a hint of typical herbaceous Sauvignon Blanc characters.
CHARDONNAY
The fruit for the Kelly’s Patch Chardonnay was sourced from the Goulburn Valley on the vineyards neighbouring the winery. This region has long, warm sunny days and mild evening temperatures which are perfect for the growing of good quality Chardonnay. The grapes were harvested during the cool of the night to maintain fruit freshness and gently pressed to minimise phenolic characters. The wine was fermented in various parcels, with a small portion receiving careful oak treatment, with extended lees contact to build structure yet retain good fruit balance.
PINOT GRIGIO
This wine is made from a blend of fruit grown in the Goulburn Valley and South East Australia from a combination of our own vineyards and our contract growers. Following crushing of the grapes during the cool of the night, the Pinot Grigio juice is cold settled and racked clean ready for fermentation. An aromatic yeast was used for inoculation and the juice is cold fermented in stainless steel tanks. The resulting wine is fresh and vibrant displaying applesand pears with floral spicy notes. The palate is clean, displaying green crunchy fruit with a crisp long finish.
MERLOT
The grapes for this Merlot were picked and crushed during the cool of night, thus ensuring the retention of varietal character, while modern winemaking techniques were employed throughout. Much of Merlot’s popularity is derived from its juicy flavours, and mellow mouth feel. Therefore, this wine was fermented in rotary fermenters, which helped bring out the wonderful colour and flavours, but ensured that the tannins were soft and fine. Minimal oak handling was also an important feature inclusion of the winemaking allowing for the fruit to be the primary feature of this wine. The of some central Victorian fruit in the blend has further intensified both the colour and flavour, creating a wine of increased complexity and quality.
SHIRAZ
The grapes for this Shiraz were picked and crushed during the cool of night, thus ensuring the retention of varietal character, while modern winemaking techniques were employed throughout, all of which help to create the signature McPherson style. Fermentation took place in sweeping arm red fermenters, giving the wine a denser, richer colour and allowing for gentle flavour extraction. Softer tannins are also a result of this process, an important feature of the McPherson Shiraz style. Careful attention was also paid to the oak selection for the Shiraz. This wine was aged on American oak for approximately 8 months, giving the wine a noticeable, but not an excessive oak influence. The inclusion of some central Victorian fruit into the blend has boosted both the colour.

Kelly’s Gang Shiraz is bold and full of flavour. The nose displays sweet plums, cassis, chocolate and spice. The exuberant palate delivers ripe berry fruit along with a touch of pepper and spice. Enjoy now or cellar for up to 3-4 years. Enjoy with pizza, pasta or your favourite BBQ dish.

We meet the young businesswomen who are sharing their skills at Younique in Newry and learning from their talented mums. By Kim Kelly Pictures by Alex Barfoot

Instead of celebrating with friends and traveling to far-flung destinations, Abigail Larkin and Emily Ward found themselves back at home in Newry.
Their mums Aine and Roisin and aunt Bernadine have run the successful, awardwinning businesses for years and the girls always took an interest but had their own career goals.
The girls are now working at their family businesses and loving it! Neither expected to enjoy the experience quite as much but both say they have learned a lot and have been able to use the skills they honed while Abigail was in her final year studying studying at university. ABIGAIL: After I submitted my last university assignment, my graduate scheme got withdrawn and I realised that it was going to be difficult to secure another job during a worldwide pandemic. EMILY: I’ve lived in Belfast since starting university. I would always be up and down as I worked in retail back home at the weekends. When the lockdown first hit and my university closed, I thought that it would be over soon and that I would be back up to Belfast before the start of summer. But weeks turned into months, and when my exams got cancelled, that’s when I realised that this was it; that I wouldn’t be back up until final year.
HOW MUCH DID YOU KNOW ABOUT YOUR MUMS’ BUSINESSES BEFORE YOU STARTED WORK? ABIGAIL: Growing up, I’ve always been partially involved in the business whether it was helping out with social media, admin work, or patient coordination. I had a basic knowledge of the treatments they had to offer but I never saw myself working in this particular industry. EMILY: Like Abigail, I knew the basics. I have worked in the salon as a receptionist for a number of years, this job requires me to know about the different treatments and products we have to offer such as makeup, lashes, nails, massage, and much more. I’ve recently just designed and introduced the new branding for our own clinical skincare range and I’m delighted to be currently working on the design and structure of our new website.
WHAT HAVE YOU LEARNED FROM WORKING WITH YOUR FAMILY? ABIGAIL: Both Emily and I agree that working with family definitely presents a lot of challenges. Once we step into the business world things do become professional and it’s not the same as being comfortable with each other at home. I’ve found the experience very fast-paced as Younique is a multi-faceted organisation with so many different sectors ranging from beauty, medical, to educational. I’ve learned to really organise my time well to ensure that I can perform my role efficiently and at the same time learn from three experienced women in business.
and I have huge admiration for my mum and aunties and see how hard they work. They inspire me and I hope that I too can follow in their footsteps some day.
WHAT HAVE YOU BEEN ABLE TO BRING TO THE BUSINESS? ABIGAIL: I like to think that I have brought a fresh approach with my youth, creativity, innovative ideas, and most importantly hardwork and dedication. I was fortunate enough to use the skills gained from my previous work experience in marketing and knowledge from my degree and apply this to my current role.
DO YOU FEEL YOU HAVE MISSED OUT THIS YEAR? EMILY: I’ve been lucky that Ulster University have set up a module called Civic and Economic Recovery which allows students like me who didn’t get a placement to still get their credits, as long as we gain relevant experience. I’m so thankful that Ulster have set up this module for their students because going straight into final year was something I didn’t feel ready to do. I believe that everything happens for a reason, and I am grateful for my family to have taken me on to work in Younique.
WHAT DO YOU MISS THE MOST ABOUT YOUR OLD LIFE?
DO YOU HAVE A NEWFOUND RESPECT FOR THE WORK THEY DO? ABIGAIL: I miss my friends in Liverpool, the ABIGAIL: Yes, being at the forefront of the business operation has allowed me to appreciate the hard work that goes on behind the scenes.

A LIFE CHANGING TREATMENT Hair loss expert Mark Smith from DotMicro is giving men and women back their confidence with amazing scalp micropigmentation techniques.
Experiencing hair loss is traumatic, bringing with it feelings of embarrassment and shame. Sadly, today it is at epidemic proportions with over 40 per cent of women experiencing some form of hair loss. Inspired by his own experiences of premature balding, expert Mark Smith from Newtownabbey set up DotMicro offering scalp micropigmentation which treats various types of hair loss due to forms of alopecia, cancer treatment and other hormonal conditions. Over the years he has heard some heart-breaking stories and worked with many clients who have spent years desperately searching for help. His work is skilled and intricate, and he gets amazing results, allowing his clients to look like they have a full head of hair. Mark says the best part of his job is being able to give his clients back their self-esteem. And he hopes that over time he can help more people overcome the stigma of hair loss and let them get on with their lives with confidence.
WHAT EXACTLY IS SCALP MICROPIGMENTATION? By applying a series of dots or flecks to the scalp called impressions, we simulate what looks like hair follicles. This can give a bald man what looks like a shaved but full head of hair. We can add the appearance of more density to thinning hair for both ladies and men. The treatment can also be used to mask or camouflage scalp damage such as scars or burns. It’s also fantastic in combination with a hair transplant. If you suffer with hair loss this is a fast easy and effective long-term solution that can give back confidence and self-esteem.
WHERE DID YOU TRAIN? I originally trained in Brentford, London with two of the world’s best scalp artists. Since then, I’ve completed various training courses in various locations with other artists to enhance my own skills further.
HOW DID THE IDEA FOR YOUR BUSINESS COME ABOUT? I suffered with hair loss for many years and it greatly affected my confidence and self-esteem. I had a few hair transplants over the years to give me back my confidence. I then started working for the hair transplant company that did mine. I was doing consultations with many patients who were considering having hair transplants, but I noticed that in all honesty there were so many people that weren’t great candidates, and the alternatives were limited. I saw scalp micropigmentation around 10 years ago on television, but the hairline design was very fake looking, so I immediately dismissed it. Six years ago, I was asked to train in Greece with a global hair transplant company, 10 | Local Women Magazine
but again the practitioner’s method was terrible and the results I saw were not so good. About four years ago I was at a conference and was chatting with guys with shaved heads, but a cool-looking head of shaved hair. I must have been chatting to them for at least an hour before I brought up my own hair transplant. When they mentioned they were bald but had had scalp micropigmentation I was shocked as I could not tell even with the naked eye. I was sold.
HAIR LOSS IS VERY TRAUMATIC FOR WOMEN AND MEN – WHAT CONDITIONS DO YOUR CLIENTS SUFFER FROM? For the majority of clients, it’s male and female pattern hair loss. Male hair loss tends to be in a pattern (starting in the temples and crown), with the back and sides largely unaffected. Ladies hair loss tend to be all over. I treat men and women who have had cancer and the treatments have left them with thin or little hair. I treat many forms of Alopecia such as Alopecia Totalis, Alopecia Universalis, Alopecia Areata, Scaring Alopecia and much more.
WHY DO YOU THINK HAIR LOSS HAS BECOME SUCH A HEALTH ISSUE RECENTLY? I think one of the main reasons is down to social media .We are addicted to likes and filters and so we now try so hard to portray the ‘perfect us’ on our social feeds and this is leading to large scale mental health issues revolving around how we think we are supposed to look. Hair loss really plays into this affecting our confidence and self-esteem. I also think modern society, stress, pollution, chemicals in processed foods, general diet, lack of sleep, to name just a few problems, can lead to hair loss.
HOW LONG DOES IT TAKE FROM INITIAL CONSULTATION TO END RESULT? It can be as short as six weeks, but I do prefer to spread the treatments out over time as I think this is better for the end result and helps the longevity of the treatment.
HOW LONG DOES THE TREATMENT LAST? A treatment can last many years before needing a top up.
IS IT PAINFUL? Most will say it is mildly uncomfortable but not painful. However, everyone sensitivity varies. I’ve even had clients falling asleep. Different areas on the scalp have different sensations. On a scale of 0-5 (5 being very painful) most only rate it overall at a 2.

This lady suffered with hair loss back in the mid80s and had tried everything including having a couple transplants, but nothing gave her back the hair she wanted. She did not want to go down the road of wearing wigs and so was left with few options. I was able to stop the distress of seeing the bare scalp through the hair with our scalp micropigmentation treatment. Whilst we can’t give back real hair or add real volume, we can give back the appearance of more density. This has had a huge impact on her life and to this day I still get lovely messages of thanks and support.

WORLD MENOPAUSE DAY Menopause is perhaps seen as one of those ‘taboo’ subjects. It is not generally talked about and it certainly isn’t very often addressed in the workplace. It is however something that the majority of women over 45 typically experience some symptoms of, in their lifetime.
A WORD FROM THE HEAD OF OUR HERD Here we are another month, another lockdown. It has been a strange old time and certainly not an easy one for businesses. We continue to be busy helping companies through the steady stream of updates, particularly in relation to the Job Support Scheme which comes into effect on 1st November. We will be covering this in more detail for our December column so keep an eye. I wouldn’t be surprised if there will be further updates in the weeks and months ahead. We also announced new members to the HERD in the last few months - Tracey, Martina, Shannon and Eimear, hopefully you will see more of them going forward. They have all settled in really well despite the move to home working. I hope it won’t be too long where we are all working together again.
Menopause happens once a woman has had no menstrual period for 12 months in a row. It is a natural part of ageing. The symptoms associated with menopause tend to be a result of hormone imbalance and lack of oestrogen. The British Menopause Society has listed more than 30 symptoms associated with menopause, ranging from mild or moderate to severe. These include hot flushes, weight gain, low mood and headaches. According to NHSemployers.org studies have shown that menopause symptoms can have a significant impact on attendance and performance in the workplace. This makes menopause not just a female issue but an organisational issue. In the UK there are 3.5 million people over 50 in the workplace and the average age for a woman to go through
the menopause is 51. Around 1 in 100 women however experience menopause before the age of 40. There are many ways to sensitively support women experience menopausal symptoms in the workplace. This can start with knowing the symptoms and how it can affect women at work. Many women see this as a very personal issue and may not disclose their symptoms at work. As part of World Menopause Day 2020 (which took place on 18th October) we would like you to stop and think about how this issue might impact the women in your organisation and what you can do to help. There are lots of organisations and agencies who can signpost you what to do. We, here at The HR Elephant can also help through training, creating a policy, reviewing workplace conditions and procedures or helping to put in place a menopause champion. The important thing is that we raise awareness of this issue and make sure that this very valuable 3.5 million people in our workforce do not feel like they are going through this on their own.

Poleglass mum Emma Morgan-Laverty tells Local Women how her miracle daughter has won hearts with her incredible resilience as she deals with a series of heart-breaking medical complications.

here are very few mums or dads who can resist showing off photos of their little one’s first day at school or boasting about them taking their first step or uttering their first word. But Emma Morgan-Laverty has more reason than most to be proud of her daughter. Little Myah, from Poleglass on the outskirts of west Belfast, has faced more challenges in her two years than most adults. She was born with hydrocephalus and has endured numerous gruelling brain surgeries, with doctors even uncertain that she would survive. Despite this, and everything she has been through in her short life, she has defied medical predictions, bringing joy to Emma’s heart every day – and winning a famous fan along the way. Myah was diagnosed with hydrocephalus at the 20-week scan. Doctors also warned her devastated parents they believed Myah had Patau’s, Edwards’ or Down’s syndrome and offered Emma and husband, Andrew (35), the chance to abort their baby. The couple was determined to continue with the pregnancy but in that one moment, all of Emma’s hopes and dreams came crashing down. Instead of being able to enjoy her pregnancy and plan for the arrival of her much-loved baby, she was consumed with worry, uncertain over what the future held.

She doesn’t let any of this stand in her way and Emma has watched with delight as Myah has proven the doctors wrong. Emma continued: “I look back now and wonder how we got through it all, I don’t remember much of it, but I think it’s because you go into robot mode. “If you had told us two years ago that Myah would be still with us and doing as well as she is, we would never have believed you. “She’s starting to pull herself up, she’s using a walker, she is starting to talk, she has even started wearing glasses despite being registered blind for the last two years, but the eyes seem to be starting to work again as the pressure on her brain reduces.”

Hydrocephalus is a build-up of fluid in the brain. The excess fluid puts pressure on the brain, which can damage it. If left untreated, hydrocephalus can be fatal. Congenital hydrocephalus is when a baby is born with excess fluid in their brain. It can be caused by a condition such as spina bifida, or an infection the mother develops during pregnancy, such as mumps or rubella (German measles). Many babies born with hydrocephalus (congenital hydrocephalus) have permanent brain damage. •

Hydrocephalus can usually be treated using a thin tube (shunt) that’s surgically implanted in the brain and drains away the excess fluid.
She also developed epilepsy at six-monthsold and doctors have struggled to keep the condition under control.

Her condition has become so unstable on occasions that she has required an intraosseous infusion (IO), a procedure where medics drill into the bone to administer medication - on four occasions to bring her seizures under control.

Hi everyone, The nights are getting darker and colder and I trust everyone is well during these very trying times. To take my mind of things, I have been designing a lot of clients’ homes and also my own new studio with accents of black and gold - and it looks so rich and opulent! I remember when chrome was the trend and of course it is still a popular choice, but now I am finding brass, bronze, black and golden tones making a dramatic comeback. Black and gold is a very elegant combination. This luxury combo lets you transform your living room or your entire home into a sumptuous space. First of all, you need to think of black as being the main colour and gold being just an accent shade. Too much gold will make a space look bad and lacking style. As a result, there are numerous options to explore. You could, for example, paint a wall black and have drapes with golden accents or wallpaper featuring the same characteristics. Luxury curtain design, bespoke headboards and wallpapers all hinting a metallic sheen, give a real desired hotel look! A black wall is also a nice background for black furniture with golden details or for accent features such as golden sconces or lamps golden details. Lighting fixtures with gold accents are also an elegant option on their own. For example, modern pendant lights may have a black exterior and a golden interior or an industrial pendant may simply feature a shade of gold without any other additions. The reason why this colour combination is so elegant and beautiful is that the two shades are very different, so the contrast between them is very strong. “THERE’S REAL ENERGY AROUND WOMEN’S FOOTBALL” Newcastle broadcaster Rigsy has written a novel about female football inspired by the football team he manages, the Belfast Ravens.

e’s best known as a broadcaster, promoter, producer and DJ, but David ‘Rigsy’ O’Reilly has recently added another string to his bow by penning his debut novel – about female football.
“I didn’t set out to write the memoirs of a 14-year-old girl; it was by accident rather than design. But halfway through the novel I thought ‘Poor Lottie. This is me’. I’d lumbered her with my insecurities and anxieties; awkward things that had happened to me during my teenage years. “But who else was I going to write about really?”

“It’s progressed from a kick-about to having two teams playing in the league, which is amazing.” Having seen both his sister and good pal and fellow broadcaster Stuart Bailie publish books, David was inspired to pen his own novel. He’d always wanted to write, and the Ravens gave him a topic which he knew would get the creative juices flowing. Then last year, a number of events in his life meant he finally found the time to get started. His 20-year stint on Radio Ulster music show Across The Line came to an end and he left a promotional job at the Limelight club, although he still DJs there. While their Belfast home was being renovated, David and Lisa, who was pregnant at the time, had to move out. Back in his family home in the shadow of the Mournes, David suddenly found himself with spare time on his hands, so he sat down and started writing. “For four days I locked myself away in the front room and kept writing,” says David. “I didn’t stop until the story was finished.

Action Cancer’s Big Bus screening saved my life Banbridge mum Andrea Quinn says she felt fit and healthy – and then she was diagnosed with breast cancer following a routine screening.

Banbridge mum of two has told how she owes her life to Action Cancer after a Big Bus routine screening detected breast cancer.
Andrea Quinn, a supermarket worker, health fanatic and avid cyclist, got the shock of her life when she was diagnosed with breast cancer aged 49. News of the cancer, detected during a screening in October 2018, came at a difficult time for the family. Only a few months earlier Andrea’s sister Emma, who was 39, was diagnosed with untreatable lung cancer. Although Andrea had always been aware Action Cancer’s screening service was available for women in their 40s, she didn’t think there was a need to be checked as she enjoyed such a healthy lifestyle. As a keen member of Dromore Cycling Club, 120-mile rides and intense time trials were the norm for Andrea. When her sister Paula was diagnosed with breast cancer aged 45, Andrea and her three other sisters decided it was time to get checked out. At that stage Andrea was healthy and obtained a clear result, as did her sisters, giving them peace of mind. Thankfully Paula went on to recover from her breast cancer. However, it was two years later, after receiving a reminder letter from Action Cancer, inviting her to attend a routine screening, that Andrea booked the appointment which she believes saved her life. Following her screening onboard the Big Bus in Portadown, Andrea was sent a letter explaining something had been detected and further assessment was necessary. She attended Craigavon Area Hospital the following month, and although the consultant could not feel anything abnormal on examining her physically, additional x-rays, ultrasound and biopsy identified the abnormality noted by Action Cancer as breast cancer. Because of the nature of her cancer—a stage two lobular—doctors told 24 | Local Women Magazine

“I decided to go ahead with my surgery on December 31 because I was determined to begin the new year cancer free” says Andrea. “I remember the nurses watching the fireworks and my friends Angus and Ruth from cycling club and my son Ryan visited me when I was in recovery—so I didn’t miss out on the party entirely.”

While we all come from different backgrounds, we share common goals. And, as we navigate our way through life, I never cease to be amazed how our readers reach out to each other and try and offer guidance and support, particularly during these difficult days. I am frequently humbled by readers readily sharing very personal stories in a bid to help other women who might be going through something similar. I recently received a lovely email from Debbie Quinn from Comber who like most of us has been on quite a journey! From divorce to depression, menopause and illness, Debbie has been through a lot. But, in spite of the obstacles that were in her way, Debbie is a beacon of positivity and she wants to help other women to find contentment. Through exercise – she’s been teaching aerobics for 42 years – Yoga, meditation and mindfulness, this young grandmother has found an inner strength and just glows with positivity. As she says herself: “I don’t have an ache or pain in my body, and I feel stable because I practise mindfulness. I would love to reach out to other women to give them advice, it’s not about beauty, it’s about inner health.” I always say that if a story can help just one person then it is a good thing. TELL US ABOUT YOUR JOURNEY WITH YOGA?
My journey with Yoga started about 5 years when I was 55. My friend Emma Wasson invited me on a weekend Yoga retreat. I had never done Yoga before but was interested in a nice weekend away. I came away feeling so peaceful, balanced, grounded and energetic that I decided I wanted to do more. I attended more of Emma’s classes and decided to look into training as a Yoga teacher. I did my teacher training four years ago and I couldn’t wait to start teaching classes. My flexibility increased and my posture was so much better especially for dancing. I dealt with stress much better as Yoga helps to reduce stress in the body and mind. A year later I trained as a teacher in Yin Yoga level 1 and shortly afterwards level 2. I highly recommend it for everyone but especially as we age as it is a very peaceful and mainly done on the floor using props like pillows. It has a variety of positive benefits on the mind, body and WHAT POSITIVE STEPS soul. s a happily married woman Claire Hughes didn’t think she knew much about the modern dating
scene. But perhaps the fact that she has found contentment in her own love life, makes Claire from Castlecaulfield, Co Tyrone the perfect person to help others find romance. Instead talk about your interests – work, family, pets, holidays, interests and hobbies especially if they are mutual. To be interesting, be interested in the other person and keep the conversation positive. It can be difficult to get to know someone on a first date, so we encourage second dates. Do try to remain as open-minded as possible to increase your chances of success. There is a bit of a stigma attached to using a dating service - how would you persuade a woman to take the plunge? Now more than ever it is necessary to take action. It is highly unlikely that Prince Charming is going to come knocking on your door, and with current lockdown restrictions there is even less chance of meeting someone. Joining a dating agency and particularly a matchmaking agency is a sign of strength rather than a sign of weakness as you are taking positive action to bring about improvement in your life. Those that employ others usually get significantly better results than doing it on your own, e.g. employing a personal trainer or joining a slimming group. Tell us about your success stories. We recently celebrated five years in matchmaking. In that time, we have matched hundreds of couples, many of whom are in
long term relationships. We have had four weddings and seven engagements, and our second Soirée baby was born in June 2020. What are the costs involved? ART IN A TIME OF LOCKDOWN
President of The Ulster Society of Women Artists Judith Logan from Broughshane explains how Covid-19 has changed the face of art as the 63rd annual show goes online.
J
ust before lockdown in March, artist Judith Logan, who has her own studio/gallery, The BlackSheep, at her home in Broughshane, was elected as the new President of The Ulster Society of Women Artists.

While she was already feeling a mix of excitement and nerves about taking on this role, the onslaught of COVID-19 and lockdown certainly added to the challenge. Organising events for a society with a current membership of around 100, can already be a daunting task, but the forced closures of public venues, and the uncertainty of reopening with everchanging rules and restrictions, makes it doubly difficult. It is so encouraging to see that several artists have been able to set up physical solo exhibitions again, but a larger group show is much more challenging under these new circumstances, and unfortunately previews and opening nights have been affected. Last year the society had a fantastic exhibition held in The Crumlin Road Gaol, Belfast, with a great footfall and several sales. This year, however, their previously booked venue was cancelled, and so it was decided to go online. This is not without its difficulties though. Several older members are understandably not comfortable using social media platforms, and/or have been unable to get guidance in using them. Taking high quality images that show off the artwork as well as possible is also hugely important, and that too has been a challenge for some. It must be emphasised to employees that despite working from home they are still strictly subject to the Company’s Data Protection Policy. There is no doubt that home working has become much more acceptable but with it come challenges and therefore the clear legal advice is that a Home Working Policy be established and signed up to in all instances.
COURT OF APPEAL MAKES AN IMPORTANT DECISION IN RELATION TO HOUSING NEEDS OF PERSONALLY INJURED Rachel Rice LL.B., Solicitor rrice@solicitorsni.net
The Court of Appeal have recently established that seriously injured claimants should receive compensation to purchase accommodation on top of their damages. In this case, Charlotte Swift, had been awarded more than £4m by the High Court in England and Wales 2018 after losing her leg in an RTA seven years ago. But she was told she would not receive the £900,000 needed to fund the costs of larger accommodation required due to her injuries. She will now recover more than £800,000 rather than the zero. Her lawyer has stated that the decision itself is the best and most thorough examination of a problem that has vexed legal practitioners for decades, and so enormous credit must go to the judges in the Court of Appeal for taking it by the horns in the way that they did. The Claimant has said the legal case had been ‘both incredibly stressful and upsetting, but she expressed her relief and thanks for the court’s decision. She added: ‘The insurance company fought me every step of the way from having to pay the proper compensation that thousands of claimants are legally entitled to every year. ‘ For many years, claimant lawyers have argued that the method of calculation employed has resulted in a shortfall in the amount needed to purchase required property, so injured people would have to ‘borrow’ from other parts of their damages originally awarded to cover items of future needs, such as care, loss of earnings and equipment. In his ruling Lord Justice Irwin said he accepted that his guidance should ‘not be regarded as a straitjacket to be applied universally and rigidly’. He added: ‘There may be cases where this guidance is inappropriate. However, for longer lives, during conditions of negative or low positive discount rates, this guidance should be regarded as enduring.’ This decision will be very significant for calculating special damages in personal injury matters and with the Court now taking the view that the previous calculations can prejudice any claimant where there are additional needs to be met and all circumstances must be considered.

Former Miss Belfast Harleigh Lagdon and her boyfriend lost a combined total of eight and a half stone and have now launched a range of work out mats to help you get fit from the comfort of your own home. Mark Skinner and Harleigh Lagdon from Co Down, have just launched their lifestyle brand, Repose. The couple have both been on extensive weight loss journeys over the last five years and have managed to lose a combined total of eight and a half stone. This complete lifestyle transformation encouraged the pair to get their heads together to develop and design a platform for fitness that is accessible to all ages, abilities, and lifestyles from their own home. Due to our current climate, the couple have both been training from home for the past seven months. Gyms closed across the world and it had an impact on many gym-goers daily routine. Local Women meets owners Morgan and Caroline Morrison who have put Newcastle, Co Down on the map for foodies. YOU AND MORGAN ARE ALREADY WELL KNOWN IN THE AREA FOR YOUR SUCCESSFUL TAKEWAY RESTAURANTS – SO, HOW DID THE IDEA FOR A SIT-DOWN RESTAURANT DEVELOP?
My husband Morgan and I began our business in 2006 when we opened a fish and chip takeaway in Downpatrick called Docs. This proved successful for us and was followed by another two establishments in Ardglass and then Newcastle. The Newcastle Docs is a 75-seater bistro restaurant. The Newcastle bistro opened six years ago, and it planted the seed that we could go further and open a licensed seafood and steakhouse. This is a continuation of the seafood theme.
HOW LONG DID IT TAKE FROM HAVING THE INITIAL IDEA TO OPENING YOUR DOORS?
The idea had probably been planted after we opened Docs in Newcastle so probably about five years. It was a natural progression for us.
HOW DID LOCKDOWN AFFECT YOUR BUSINESS?
WHAT ARE YOUR WORK BACKGROUNDS?
Lockdown affected everyone’s business to some degree. Copper was only open for six weeks before lockdown. Lockdown has made us all go back to basics in our businesses. It has shown that you have to be proactive and able to change your operations immediately, should that be changing to a takeaway system or changing your working hours. Everyone has found challenges and we are so grateful to our staff and customers who have shown they have faith in us. Their support has been incredible.
Morgan was in car sales and I did a business degree. We both enjoyed working with the public but had no catering experience in our background. It was just something we felt we had to do.
WHY DID YOU CHOOSE NEWCASTLE FOR THE LOCATION?
We have always liked the vibe in Newcastle. It is a great town to work in. The people are welcoming, and we feel at home there. A seaside location is a great advantage.
WHAT ARE YOUR PLANS FOR THE FUTURE?
WHAT IS THE CONCEPT BEHIND COPPER RESTAURANT?
We holiday quite a bit in Portugal and always enjoyed the simple way that the Portuguese serve fresh fish. It comes straight off a chargrill and is fresh and delicious. It does not need to be dressed up. The ingredients speak for themselves. We have tried to follow this ethos in Copper. We use the best seafood and steak that we can source and let the food do the talking. We have a Josper Grill which we cook on. This gives us the authentic chargrilled taste.
HOW IMPORTANT IS USING LOCALLY SOURCED INGREDIENTS?
This is very important to us. Especially living in the area we do, we are completely spoiled with fabulous produce and local artisan suppliers who operate on the world stage. We love to support these local suppliers who in turn are so supportive to us. 60 | Local Women Magazine
WHAT ARE YOUR CUSTOMERS’ FAVOURITE DISHES?
That’s a good question! At the minute it is difficult to think too far ahead. Any plans we had for this year have not materialised. We hope to get the Loft Bar open. It is based upstairs at Copper and is an amazing space to enjoy pre or post meal drinks or some small plates. It has great views of the sea and has an outside balcony.
HOW DO YOU BALANCE FAMILY LIFE WITH

MOVING HOUSE DURING THE PANDEMIC Mayfair & Morgan advise on the latest safety guidelines for sales and lettings during the Covid-19 restrictions.
2020 has been a very uncertain time for property owners and tenants. The rules and restrictions on viewings, new move ins and property related appointments have changed several times this year.
PROPERTY INSPECTIONS At present property inspections, repair and maintenance work can be carried out at properties.
To help clarify the current adjustments that need to be made, the ladies at Mayfair & Morgan have highlighted the key points to adhere to here in Northern Ireland.
Previous notice must be given, and social distancing must be followed as well as the safe working practices adhered to which include regular hand washing, cleaning surfaces and wearing a face covering when possible.
ESTATE AGENT APPOINTMENTS
At present, you can attend appointments at your estate agent’s office. You must wear a face covering but you must stay home if you have any symptoms or if you have to selfisolate. You will be asked to complete a track and trace form if you make an appointment to meet with your estate agent.
A GUIDE ON VIEWINGS FOR INTERESTED RENTERS OR BUYERS • In the first instance, viewings should be done virtually. • To arrange a viewing in person, you must make an appointment. and arrive on time as there may be other viewings or other appointments the agent needs to attend and the agent needs time to carry out required cleaning before anyone arrives. • At present, (for rentals) we insist on receiving an application for a rental property prior to a physical viewing, and we will only arrange a viewing once the necessary checks have been carried out, this is to limit viewers when the property is still occupied and to keep our staff safe. • For potential buyers, we will obtain sufficient information to ensure they are in a buying position, and offer virtual viewings before a physical viewing is scheduled. • We are currently restricted to two households per property at the time of viewings, if the current occupants are staying in the property, then

The restrictions may change as they have previously, so the best advice we can give is to visit your local government website where they will explain the current guidance in your area and if in doubt send us an email or call us and we can help with any concerns you may have. Everybody’s safety is paramount, and it is best practice to be cautious rather than to risk the health of our loved ones. CURRIED ROOT VEGETABLE PIE INGREDIENTS
SERVES: 4
• 1 tbsp butter • 1 clove of garlic (crushed) • 2cm piece of ginger (grated) • 1 tbsp medium curry powder • 1 tsp. dried chilli flakes • 1 medium carrot, peeled and cut into chunks • 1 medium parsnip, peeled and cut into chunks • 1 medium sweet potato, peeled and cut into chunks • 1 x 400ml tin of low fat coconut milk • 100ml veg stock • 1 tbsp soy sauce • 1 tbsp cashew butter • 2 large handfuls of kale, stalks removed • 3-4 sheets of filo pastry • 1 tbsp black nigella seeds
NEW PRODUCT
METHOD Preheat the oven to 200°C. Melt butter in a large frying pan over medium heat, stir in the garlic, ginger, curry powder, chilli flakes, carrot, parsnip and sweet potato. Cook for 2 minutes giving everything a good stir. Pour in coconut milk and veg stock and allow to simmer for 15 minutes, until the veg is practically soft. Stir in the soy sauce, cashew butter and kale. When the kale has wilted, take the pan off the heat. Transfer the curried veg into 2 small baking dishes (or 1 medium one) Melt 1 tsp butter in the microwave. Lay the filo pastry sheets out. Brush each one with melted butter and scatter with nigella seeds. Take a sheet and roughly crumple in your hand. Place the crumpled sheet on top of the baking dishes, then repeat until the curried veg are completely covered. Place the pie in the over for 10-15 minutes until the pastry is deep golden brown and crisp. Leave to rest for 5 minutes before serving.

Claire met Sahin – or Shane as he is known locally – while on holidays in Turkey 10 years ago and she immediately knew he was the man she was going to marry. Following a whirlwind romance, the pair did indeed wed and two children later, they are happier than ever and enjoying running their own businesses. Sahin is stepdad to Claire’s eldest child Jack who is 22 and they have two children together Lydia, 8 and Alex, 7. “Setting up my own shoe shop was the best thing I have ever done. Obviously with the pandemic, like everyone, there have been a few hurdles. But it is great to work closely with my husband. He is incredibly supportive of me and loves that I am working for myself now. “I am really excited about the future and I have lots of ideas for moving the business forward.”

THE LOCKDOWN HAIR SURVIVAL GUIDE
Hair expert Carol Rooney from Carol & Catty Hairdressing in Hilltown has all the advice you need to keep your hair beautiful during lockdown. Not long before I sat down to write my November hairdressing column I was shocked to learn the hairdressing industry was going back into lockdown. To say I was devastated was an understatement, we were all enjoying some sort of normality and getting our important hair and beauty regimes back into action. November’s column was meant to excite you all about the autumn/winter trends we have coming up, but instead I’ve decided to put together what I believe to be a more important survival hair guide that will hopefully help advise all you guys and gals on how to survive the next four weeks. First off - don’t panic, put down the kitchen scissors and don’t make any home DIY drastic decisions.
FRINGE Your fringe may begin to drive you crazy but PLEASE step away from the scissors. Instead take this opportunity to experiment and have fun with your fringe. Consider sweeping it away from your face using a trendy little hair band, or consider sweeping it to the side creating a side fringe. Use a good strong holding finishing product as your fringe will need held in place to prevent it falling in your eyes and annoying you. One of our tried and tested favorites is Subtil Strong Hold Hairspray - a few sprays of this and you fringe will stay put for a very long time.
CONDITION So, not only are we in another lockdown but we are having to deal with the dreaded cold months ahead. It can be overwhelming yet exciting and yes, we get it, but by not tailoring to your hair type the risk factors are endless and also dangerous. Instead ladies and gentlemen I recommend you be patient and opt for a risk-free routine. Natural gas the perfect backdrop for a bustling family home in the heart of Magheralin If you are part of the burgeoning sewing community in Northern Ireland, simply have an interest in craft, or local fashion design, the name Angeline Murphy might just ring a bell. One of the first contenders in the BBC’s hit programme the Great British Sewing Bee, Angeline currently runs her craft blog, all while juggling a demanding marketing job with firmus energy. Perhaps, more importantly, she also runs a very busy family home with husband Feargal and sons Luke (3) Eoin (11 months).

I also chose smart controls with my system which means I can turn off and on my heating when we were out and about so I always come home to a warm home and I don’t waste energy because I can switch off our heating on demand if we are going to be late home or if our plans change. Indeed this feature was to become critical to the family in the months ahead. Looking back the date of the install was timely too. Fast forward a few months and the Corona Virus hits Northern Ireland, and Angeline, with her sewing skills, finds herself at the centre of an initiative to mobilise the sewing community to make scrubs for hospital and care workers. been sewing but using her contacts to gain sponsorship from the business community to buy fabric. With the help of her family she then delivered it to stitchers all around Northern Ireland, and then collected the scrubs to pass on to health care workers. She says. “Despite having a new born baby I couldn’t just sit still and watch while our health care workers were crying out for protective gear. I began sewing and calling on others who I knew could sew to lend a hand. Then of course the initiative grew in momentum and I was suddenly driving around delivering material and picking up scrubs that had been made. It was a busy time and I was very lucky to have a new baby who was very laid back and I could bring with me and other family support from my mum.” And those smart controls? “Yes they came in very handy indeed, especially when we were heading out for the day and never knew exactly when we would be back. 30 minutes from home we would turn on our heating remotely and would be welcomed to a nice warm home.” She says. “It certainly has been a busy year. AUTUMNAL AUSTRIAN WINES Let’s venture to Autumnal Austria for two cracking wines from award-winning online wine retailer The Wine Society, which recently added to their already impressive haul of awards when they bagged ‘Austria Specialist of the Year’ at the Decanter Retailer Awards. Take a look online at their wide range of wines at brilliant prices and in particular they continue to add to the ‘Society’ ranges of wines which are those that members buy and re-order most often, sourced directly from the producers with great quality and prices. The Society’s Blaufrankisch 2018 at £9.95 is a bright, fruity red with lots of red-fruit flavours, blackberries and spice. We had it with my latest slowcooker creation using Lidl venison steaks, with onions and garlic – it was delish, if I say so myself. Proper warming autumnal food and wine – yum. Check it out at www.thewinesociety.com For a different style of white, try the Society’s Gruner Veltliner 2019 at £8.50. Gruner Veltliner is a dry white only produced in Austria and has green, herbaceous aromas often described as white pepper, typical of the grape variety, along with pear and nectarine. If you normally enjoy Sauvignon Blanc you should try Gruner Veltliner – it’s really good with spicy Asian dishes, Indian food and cheese.
FAIRTRADE CHOCOLATE Now, for my second favourite thing after wine… chocolate! Doesn’t chocolate just make everything better? I found this new rang at my local Lidl, their first ever own-brand super Fairtrade Chocolate bars called ‘Way To Go’. There are four delicious flavours, Milk, Dark, Caramelised Almond & Sea Salt and Dark Chocolate Pecan Coconut – OMG! The bars are wonderfully thick and look at bit like crazy paving with lots of different higgledy piggledy pieces. The dark is rich and delicious, the milk is wonderfully creamy and my absolute favourite

A LOVELY EVENING AT RAYANNE HOUSE Normally by this time of the year our social diaries are all filling up with fun things to do… parties, dinners and awards do’s, with everything hotting up as we get nearer to the festive season, but not this year – Covid 19 has put paid to that. In the absence of anything exciting up ahead we decided to treat ourselves to a lovely evening at Rayanne House in Holywood, owned by the lovely Bernie and Conor McClelland for one of their special tasting menus with wine pairings. We have been many times before (pre-Covid) so our excitement was real for all the fabulous flavours we were about to enjoy as chef Conor always excels himself and surprises you with his superb creations. Coupled with their knowledge of wines, the whole experience is a taste explosion. Everything is extremely well set out with the required social distancing and the cosy dining room gives guests space to enjoy their seven courses of deliciousness. Chilled Avocado Soup with Pico de Gallo Salso started things off with a bang, paired with a superb white wine called Sibling Rivalry which is a unique blend of Riesling, Chardonnay and Gewurztraminer. It just got better and better, pasta with truffle, then seared scallop, then rump of lamb, a delicious dessert, topped off by chocolate and cheese. Each course and chosen wine is explained by the friendly and knowledgeable staff who make the whole experience so interesting and enjoyable honestly, you need to try it. A FAB FRIDAY NIGHT After a particularly rubbish week at work we decided a Friday night out was an absolute necessity so having enjoyed a drink in one of our favour haunts, Hell Cat Maggies. By Belfast City Hall, we decided Tapas were required and headed round to Ora, opposite the Grand Opera House on Great Victoria Street, for dinner. A sister of the superb Howard Street restaurant just around the corner, I just love the vibe of this place. Its like a trendy wine bar in Madrid with bare brick walls and lots of wood and rustic crockery – but never mind that, on to the sole purpose of visit, the food. So many of small plate helpings to choose from, it was hard to know where to begin? Breads to start as always for us and they were wonderfully warm and delicious. I then ordered scallops, fat and juicy and served in a shell with fine, curly fries sitting on top – it was a shame to wreck the presentation, but I did. Himself had ribs and fluffy potato croquettes, the flavours were fab and they have an impressive wine and cocktail list – I need to go back and investigate further. Just be warned, the choices are so tempting, you can run up quite a bill, going through the card. Eyes bigger than belly comes to mind.

We can’t ignore what is going on around us at the moment, but we can remain positive. It’s easier said than done but we are all in it together. I have to close for four weeks again and all I was thinking was… Christmas isn’t far away, it will be a struggle… but I shook myself, no more negative thoughts. I’m not alone in this and hopefully this will pass soon, and we will be able to have some sort of Christmas. I have been busy with my online store, updating it for Christmas and getting all the Christmas gift sets in stock. The Luna By Lisa range has flown out - what an amazing selection of gift sets this year. It is a brand getting better and bigger and I’ve loved it from day one. I have a great selection of stock on my website. All the brands are getting better and better, it’s hard for me as a stockist to even keep up at times. WHAT HAPPENS NEXT?
WHAT IS POSTMENOPAUSAL BLEEDING? Menopause is usually diagnosed in women over 45 years old who have not had a period for more than a year. Any bleeding from the vagina after this time needs to be reported to a family doctor.
WHAT ARE THE CAUSES OF POSTMENOPAUSAL BLEEDING? Thinning of the tissues of the vagina (atrophic vaginitis) or the womb lining (endometrial atrophy) – caused by lower oestrogen levels. Polyps of the cervix or the womb lining – these are usually non-cancerous. Thickened womb lining (endometrial hyperplasia) – caused by higher levels of oestrogen. Postmenopausal bleeding is occasionally caused by cancer of the womb, cervix or ovary.

The GP will likely ask you some questions about your symptoms and may examine you. A referral to hospital postmenopausal bleeding clinic will likely be recommended. You should not have to wait more than two weeks to see a specialist. At the hospital appointment, you will meet a specialist who will discuss your symptoms with you. You will be offered an examination of your pelvis in order to detect any abnormalities, this is generally similar to a cervical smear test. It lasts only a very short time and should not be painful. An ultrasound scan is almost always recommended and this can be performed in the clinic. The purpose of this is to assess if your womb lining and the rest of your pelvis appear normal. The best view of your womb is usually picked up using an internal ultrasound probe and you will likely be offered this. The scan is not painful and also does not take long to complete.
WHAT IS A WOMB BIOPSY? Depending on the results of the scan and examination, you may be offered a biopsy of your womb lining. This is an important test in those women deemed suitable for it by the specialist – the purpose is to look
for polyps, abnormal cells or even cancer cells. The biopsy can often be achieved in clinic (without anaesthetic) which causes cramping for a short time during and after the procedure. Some women may need to return to hospital on another day as they require a local anaesthetic or a general anaesthetic in order to complete the biopsy – your doctor will be able to explain this to you. The results of the biopsy will likely be available within a few weeks and you will be informed of the results and what they mean for you.
WHAT IS THE TREATMENT FOR POSTMENOPAUSAL BLEEDING? Many cases of bleeding after the menopause require no action or treatment. Medical treatment may take the form of pessaries or cream to be applied vaginally. Sometimes other hormones, such as a mirena coil, may be recommended. Surgical treatment may involve a minor treatment – possibly with day case surgery or occasionally major surgery is required, such as hysterectomy. All staff are wearing masks and visors. There are a limited number of people in each area to adhere to social distancing and the cleaning is rigorous. I am warmly greeted at the spa reception where I fill in a consultation form before my treatment. Today I am having a full body massage with my therapist George who is so welcoming and friendly. He asks me about any health issues and we choose an aromatherapy oil to suit my mood.
The waiting staff are so attentive, and it is just that little bit different in a world full of wine bars and bistros.
George is wearing full PPE – he must be so warm! He begins the treatment and I have to say it is one of the best massages I have ever had. He really puts me at my ease and the treatment is just amazing.
After dinner we head to the bar where we test out the cocktails – we make sure to give this a rigorous test – and we can confirm they are fantastic, particularly the espresso martinis!
It is honestly the most relaxing experience and he works out all the knots on my shoulders, leaving me feeling absolutely blissful.
It’s a 10.30 curfew so sadly we have to leave the bar and head back to our room. Once again the kind staff at The Slieve demonstrate their customer service excellence as the night porter comes to our rescue when we lock ourselves out of our room. He also brings me my bag that I abandoned in the bar – oh dear!
Afterwards I chill out in the relaxation room before heading into the private spa area for a quick dip in the hot tub. I am the only person in there and I have complete privacy to enjoy the beautiful sea views. At this point I must tell you that I had big plans for the afternoon. I was going to have lunch in the spa restaurant The Lighthouse Lounge and then go to the gym.

Luckily our room is very spacious, so we have lots of room to enjoy the evening further. We chat and drink and laugh (quietly) – and have the perfect girly catch up.
Unlike most hotel gyms, The Slieve Donard has a fully equipped facility. It has everything however I can’t give you a review as instead I retreat back to my room.
Coronavirus seems a world away and it’s lovely to be looked after in the hotel, to feel safe and not to have to worry about the real world for a while.
If you have every stayed at a Hastings Hotel you will know about their beds. Quite simply it is like sleeping on a cloud - so I can’t resist climbing in for a nap – a two-hour nap!
Just before midnight we have a brainwave and order our breakfast to be delivered to the room the next morning.
When I wake up it’s time for Lesley to arrive. Poor Lesley had to work so she’s ready for a little spa time! Armed with some Prosecco we head to the spa where we splash about for a good hour. The social distancing measures actually work really well and it’s lovely to have lots of space. We make the most of hot tubs, sauna and swimming pool and lie about in our robes chatting. After a great night’s sleep, we wake up delighted when we hear a knock on the door and breakfast arrives. We probably ticked every box on the list and are presented with an amazing array of breakfast dishes, from a full fry to pastries, porridge and even some kippers! Hastings breakfasts are exceptional, and I can’t recommend having it in your room enough – it’s such a luxury. In fact, I can’t recommend a stay at The Slieve Donard enough. We had such a fun night and leave the hotel fully relaxed. Casual wear has never been so popular as we spend more time at home, but fashion expert Ann Doyle from Gasp believes we should keep on dressing up – just for ourselves! During our normal everyday lives, we have to dress up for weddings etc. Since March, all weddings and special occasions have been put on hold. Occasion wear sales have dropped by 50 per cent and retailers have had to adjust and switch to selling casual clothing online as there is nowhere to go and no one to see. On a positive note, brides all over the country are now deciding to go ahead with their big days. Although smaller because of the limit on guests, this will still be the biggest day of their lives and they want their mums to look their best. Mums are still purchasing mother of the bride and groom outďŹ ts. After all you have to look at the photos for a long time to come.
Will the experience of lockdown change the way we dress? We are living through a period of time like no other. The global corona virus pandemic has dramatically changed the way in which we go about our day to day lives, and there is little doubt that going forward at least parts of our existence will change forever. When it comes to the fashion industry, we as consumers shop and choose what we pull out of our wardrobes each morning. The experience of living through a 132 | Local Women Magazine
government-imposed lockdown could very well alter our perspective on dressing for the foreseeable future. After finding comfort in loungewear, will we pivot towards it in the long term or will we go the other way and dress up more than we ever did before? We at Gasp are focusing on more on casual clothes for now. Although our occasion wear and mother of the bride and groom outfits are still the biggest part of our business, moving forward to 2021 and praying we will be back to normal - we have the most amazing wedding stock and hopefully weddings will get back to normal. I do believe dressing up lifts your mood. That is why all we ladies must continue to dress up at home even though in a more casual way. Science says that the clothes we wear affect our behaviour, attitudes, personality, mood, confidence and even the way we interact with others. So, ladies keep dressing up even at home! This month we are talking self-care - and I can tell you, we need it more than ever at the moment. Looking after our own wellbeing is at the heart of what we do in MM Mamma Mia Hair and Beauty. We like to think that when people come into the salon, they leave their worries at the door. We encourage our clients to take a little bit of time to themselves to reinvigorate and revitalise themselves. I always say, “you can’t pour from an empty cup.” We have to practice what we preach though. I have started to pay more attention to how I look after myself. When you are always busy it can be hard to be disciplined and find that little bit of ‘me’ time. I have started taking time out on a Monday to do something for myself. It started during lockdown when I was looking at how I could recreate the salon experience at home. With potential for further lockdowns I want to share some of my tips with you so you too can practice self-care, even if salons are closed.
When you are doing a home facial you should always think about your eyes. Spending more time at home inside in the winter with the central heating on can make our eyes dry and more sensitive than usual. Heat can cause dehydration around the eyes and we need to pay particular attention to this sensitive area. I absolutely love the ‘Ageless Peptide Eye Complex’ again from Skinician. This tiny little bottle certainly packs a punch. It instantly reduces the appearance of fine lines and wrinkles with super skin hydration, perfect for the winter days. I call it my little ‘Botox in a bottle’. It can also be dabbed around the forehead and the mouth area for an instant moisture boost.

Self-care allows you to maintain a healthy body and a healthy mind which radiates from every pore making you feel happier, more confident, and ready to face your challenges. So, there you have it, if you can’t get to the salon, take the salon to you. I promise you once you start to see the benefits you will feel happier and healthier. 2lbs Steak Pieces
Pre heat the oven to 105C/ Gas Mark 1/4
50g Plain Flour
Season the Beef with Salt and Pepper & dust with Flour.
100ml Red Wine
Heat 1 tablespoon of Oil in a pan at medium heat.
2 Carrots Medium Diced
Sear the beef for 1 minute on each side until golden.
1 Red Onion Small Diced
Remove the beef and set aside in the oven dish, add 175ml wine to

Once ready, remove meat and pass the sauce through a sieve into a

Cut the Beef into 4, serve on with the truffle and herb mashed
Sea Salt and Black Pepper for Seasoning

Place the cooked veg around the plate and drizzle with the sauce
