From Our Publisher Anyone else out there working and teaching at the same time? Welcome to September 2020! Hopefully by now the kids are back to school, and life is getting somewhat back to normal--but if it’s not and we’re all still home schooling, here are a few ideas to help keep you and the kiddos from going crazy. Like many of you, I’m working from home. In addition, this fall finds me settling into my role as a 4th grade teacher, which got me thinking: what was I learning in 4th grade and how did I absorb what I learned? Well, I’ll tell you, it wasn’t from staring at a computer all day. I loved hands-on activities and field trips, so that’s what the Kasprzak 4th grade class has been doing. For instance, the Sam Houston Memorial Museum is a great place to start. You’ll learn not just historical events, but also our own local history. Next, try Space Center Houston where there is plenty to do all day that’s both educational and hands on. To top it off, if you get the Houston CityPASS, you save money on the Space Center, the Aquarium, and the Houston Museum. These are just a few ideas that are fun for the whole family. Importantly, these hot spots are practicing social distancing and keeping facilities clean and sanitized. Until next month, keep your head up and remember time and patience will take care of everything.

Mini Chicken Tacos I love to make quick and easy meals and this one fits in great. I typically get a rotisserie chicken from my local grocery store and we often have leftovers. Reinventing leftovers is key to making my life easier and reducing food waste. For this recipe I used leftover chicken and diced it really small, mix with taco seasoning, add juice of one lime. Next I make the cheese taco shells by adding shredded cheddar in small piles on a sheet pan and cook at 350 degrees until the edges start to brown. Add chicken, top with a little queso and guacamole and enjoy!

Makes 6 mini chicken tacos Ingredients 1 1/ 2 cups of leftover chicken(depending on how many you want to make) 1 Lime 1 tsp Chili Powder 1 tsp Onion Powder 2 tsp Cumin Powder 1 tsp Salt( I use Himalayan pink salt, be forewarned that if you table salt or kosher salt it will take less) 2 TBL of Bacon Fat Heat bacon fat in a pan, add spices to fat(this allows seasonings to bloom and activate naturally occurring oils), then add chicken. Heat chicken to 145 degrees, squeeze lime juice and mix well and set aside. Cheese Tacos I use cheddar but you could use any kind. I take about 1/8 cup (or about .25 to .33 ounces) of cheese and make 6 separate piles on a non stick pan. Bake at 350 until the edges are turning brown. While the cheese tacos are still hot, add 1/4 cup of chicken, drizzle with queso. I use a pre made queso. You can serve these with sour cream, guacamole, or ranch.

By: Taylor Smith Sciatic pain, knee pain and neck pain- these are just a few symptoms we’ve all experienced at least once in our lives. The medical field’s answer to these, and many similar problems, is to prescribe a medication to alleviate the pain. But, once the medication wears off, we’re left again with the symptoms because we haven’t addressed the cause of the issue. Going to the root cause is the only way to rid ourselves of these issues permanently. The body is an interconnected web. Pain in one area may be the result of a problem in another. Understanding that web and the interplay between the various muscles, bones, nerves, and trigger points is vital to properly diagnosing a problem, but more importantly, in fixing it. This is Dr. Paul Harris’s specialty! Dr. Harris is the owner of Delta V Chiropractic and Sports Medicine, located in The Woodlands off of Sawdust Road. Lone Star Local Guide Page 6

Dr. Harris’ office is welcoming, warm and friendly- just like him. On your first visit, Dr. Harris will sit down with you to review your medical history, listen to you explain your symptoms, and diagnose and treat the cause of them. For me, I was having some pain in my knee, especially during squats. By engaging me with dialogue, and listening to me, he learned that I regularly do Olympic weightlifting. This helped him identify what could be the cause of my knee pain and provided him with valuable insight into how I might have injured myself. Next, he asked me to per-

form some bodyweight squats and other movements as he continued to probe for identifying where exactly the pain was located and what movements specifically were causing the pain. At this point, he was fairly certain of the cause of the issue and knew exactly how to attack a treat-


ment plan. He utilized a scraper (also called an IASTM tool) on the muscles above my knee and applied suction cups in the area to draw blood flow to the muscles, reducing soreness and helping to loosen tight muscles. After that, Dr. Harris provided me with several stretches and foam rolling techniques to institute into my regular warm-up, or just to do at home to help the muscles around my knee relax and recover. The whole process with him took about 40 minutes. After this, I felt as

good as new! “I do whatever I can to make my patients feel better, and I try to give them at least one homework exercise movement the first day so that they can be sure that the muscles are being worked or stretched properly. I also personally try to follow up with my patients within the next couple of days. I text, email or call to find out how it went. I want to make sure they actually got what they were looking for in our visit. Delta V was started to help you move better and feel better. I think movement is essential and I want to help my clients get moving, in the right ways, as soon as I can.” But you may be thinking, I don’t work out, I just need to be adjusted or I was in a car wreck and I have horrible neck pain all the time.
