Lemon, Cinnamon and Sultana Couronne... This crown of bread is sweet dough heaven, and the time it takes to create it only makes the end result all the more delicious. To make the dough: •
400g strong white flour | 2tsp fast action dried yeast | 1/2 tsp salt | 2.5 tbsp golden caster sugar | 250ml milk | 1/2 tsp vanilla extract | 40g butter | zest 2 lemons.
1.
Mix the flour and yeast together in a mixing bowl then add the sugar and salt and stir.
2.
Pop your milk, vanilla essence and lemon zest in a jug and warm in the microwave for 20-30 seconds. Once warmed, add to the flour etc with the very soft butter and mix until all the ingredients are combined.
3.
Turn this dough out onto a very lightly floured surface and knead for at least 10 minutes. The consistency will be a little sticky but it should be a nice dough to work with. When it’s ready to prove it will be stretchy with a slight sheen.
4.
Place the kneaded dough in a lightly oiled bowl covered in a damp cloth and leave for 1 and a half hours. It should double in size during this time.
Next, make the cinnamon and sultana filling. For this, you will need: •
3tsp cinnamon | 70g butter | 50g light brown soft sugar | 2 handfuls sultanas.

Simply beat the cinnamon, butter and sugar together and finely chop the sultanas.
To assemble the couronne: 1.
Once your dough has proved and your filling is prepared, you’re ready to put the couronne together.
2.
Roll out your dough into a long rectangle (about 45cm x 20cm) and spread the cinnamon butter across its surface, then sprinkle with the sultanas.
3.
After this, roll the rectangle firmly into a long sausage (from long side to long side) and seal the long edge with a little water on the tip of your finger.
4.
Now, listen closely. Make a cut (all the way through and out the other side) lengthways along the centre of the sausage until you almost reach one end.You should now have the base of a sausage with two long separate strands. Adjust the strands so that the open filling side is facing upwards (this way you won’t lose any).
5.
Now, transfer carefully onto a floured baking tray. To make the crown shape, take the two strands and twist one over the other until the whole sausage is woven together and no dough remains. Once woven (with the filling sides always facing up) tuck each end of the (now complete again) sausage together to form a circle. The bread should now be in a ring formation with visible filling in places and woven strands making up the pattern.

Hopefully you have achieved the couronne shape at this stage, so now cover with lightly oiled clingfilm and leave for an hour to prove again. Preheat the oven to 180c (fan).
7.
Once proved, wash with 1 beaten egg and bake in the oven for half an hour or until a deep golden colour has been achieved.
For the last decoration you will need: •
200g icing sugar, 2-3 tbsp water and some flaked almonds.

Once your bread has been baked to perfection, mix the icing sugar and water to create an attractive white icing.
2.
Drizzle this over the top of the bread then scatter with almond flakes.

Method: 1.
To make the batter: sift the flour and salt into a large mixing bowl and make a well in the centre. Beat in the egg and a little of the milk until smooth. Gradually beat in the remaining milk and add 4 tablespoons of the melted butter. Cover the bowl and leave to stand for one hour.
2.
In a small non-stick frying pan heat some of the butter until sizzling, but taking care not to let it burn. Pour enough batter into the pan to coat the base evenly. Cook over a moderate heat until the

Here is my own recipe for perfect pancakes. pancake is light golden brown underneath and looks dry on top. Flip over (try to do this with style!) and cook the other side until golden. Continue until all the batter is used. The recipe should make 10-12 pancakes. 3.

You can keep the pancakes warm in the oven (Gas mark 1 / 140C) until they are all cooked, but in our house they’re barely out the frying pan before they’re scoffed.

Shoot over to The Fishes for a top day of sporting fun!
I
f you fancy showing off with the big guns, why not head over to The Fishes in Oxford on Saturday 28th February for the pub’s first ever clay pigeon shoot in what’s set to be a fantastic day of sporting fun. Don your finest field gear and step out early to the North Hinksey pub where manager Owain Llwyd Jones and his team will welcome you with plates of piping hot sausage sarnies and mugs of coffee. Then it’s time to pile into the minibus and make your way to The Oxford Gun Company on Jericho Farm in Oakley, where you’ll take aim after getting a full briefing. Spend the morning shooting with two action-packed sessions, and a welcome break for bacon butties in between, with some friendly competition and prizes for the best shot. After blowing away the cobwebs, you’ll retire to the pub for even more sport along with some hearty fare. Following the shooting, the pub will be giving the rest of the day over to rugby. On the TV in the snug will be the Scotland vs Italy match at 2.30pm, with an Italian inspired meal at half-time, and then the France vs Wales game at 5pm. “We’ve got a great day of sport planned, with the shooting followed by a spot of rugby and I can tell you the atmosphere will be just as charged out in the field as back in the pub afterwards,” says pub manager Owain Llwyd Jones.
“The idea came from our guests, who wanted to do some days out with us this year, shooting being top of the list, and no doubt the girls will be giving the guys a run for their money on the day. Being a Welshman, I’ll also be hoping for a result from the rugby, even if it does mean I risk upsetting Mathias Rouvray our French chef! “And as far as the shooting goes, will it be a bolting rabbit or a dropping duck? We’ll have to wait and see. Why don’t you join us for a cracking day out?” he adds. The Fishes clay pigeon shoot and rugby day takes place on Saturday 28th February starting at the pub at 8.15am. News & Events... Run the Oxford Parks. If you fancy a new outdoor activity this Spring,
why not give orienteering a go. Thames Valley Orienteering Club is organising a series of events around Oxford starting on Saturday 14 February at Hill End Outdoor Centre, west of Botley. You can run, jog or just walk - no experience is necessary to have a go and there will be several courses available, for newcomers, runners, families and children. If you’ve never tried orienteering before, it’s essentially a race to find a series of checkpoints around your chosen course. They’re marked by flags on the ground and you’ll register each one with an electronic timing chip to record your progress, and prove you’ve been to each one! The challenge is to choose your own route between the checkpoints, using a detailed orienteering map. At an elite level, orienteering is a competitive running sport involving long cross country runs across tough terrain. However, there are always shorter courses for all abilities at each event. The introductory Oxford courses will range from 1km to 5km and normally take around 30 to 75 minutes to complete, depending how competitive you want to be. When you return to the finish,
your timing chip will be downloaded and you will receive a print out of your split times between checkpoints. “We’re really excited to be holding our Run the Oxford Parks series of events again” said Mike Shires from TVOC. “Our last series of events around Oxford attracted over 800 people, including runners keen for an extra mental challenge as well as lots of families and children. The courses are ideal for anyone to come and have a go and it’s very easy to take part.” The series of events is supported by Oxford City Council. No experience is necessary and plenty of help will be available for newcomers. The full list of events is: • • • •

National Nest Box Week, 14th-21st February Did you know that there is a National Nest Box Week? This year it takes place from 14th-21st February. The event is organised by the British Trust for Ornithology. The idea started in 1997 following fears about birds losing their natural nest sites because of lots of trees being cut down, old buildings disappearing, gardens being ‘tidied’ and old houses being repaired.
The Trust wants us to put up nest boxes so that
we can protect the wildlife we have, and encourage even more birds to come into our gardens. It is estimated that there are now over 5 million nest boxes in the UK designed to help everything from Robins to Owls. Different types of nesting box attract different birds. So in a box with small holes, you might get Blue Tit’s, Nuthatches, Redstarts or House Sparrows. Boxes with larger holes may encourage Starlings, Spotted Woodpeckers and perhaps even Little Owls; and in very big boxes you might see Kestrels, Jackdaws, Stock Doves and Tawny Owls. There are also open fronted boxes which appeal to Robins, Spotted Flycatcher and Pied Wagtails.
February is an ideal time to put boxes up, because pairs of small birds prosper towards the end of the month.You are also helping however if you put boxes up at any time of year, although 1 August to the 31 January is the time under Bird Protection Law when nests can be cleaned out, and any dead eggs found destroyed.
Handy Hints for siting your nest boxes: Do not put nest boxes of the same type close to each other. Open fronted boxes should be hidden from view. Make sure cats cannot get into the boxes. Boxes should be sheltered from the weather. Keep the boxes away from bird feeders. Place between 1 and 5 metres high Use screws that will not rust Consider putting a metal plate around the hole to deter squirrels.
Imagine how lovely it would be to watch the birds going in and out of your boxes and hopefully some young ones hatching there. If you are careful and quiet, you can even peek inside the box from time to time when the eggs are incubating, as most birds will sit tight. If you want to count the eggs, observe in the early morning and wait until the female bird flies off for a quick meal. You can choose to buy some nest boxes from your local pet store or garden centre, or make some. Love Rach are going to look at giving ael x yourself a proper ‘at home’ manicure. So many people simply slap on some nail varnish and when in a real hurry there is always a time and a place for that. However, by taking a bit of time to properly prepare your nails before painting the result will be a much nicer finish and also a manicure that lasts longer. A Step by Step guide t the perfect ‘at home manicure’: 1) Cleanse the nail with nail varnish remover even if you don’t have any nail varnish on the nail. Make sure you get into the corners to remove all trace of varnish. 2) File the nail, from the outside to the middle and then repeat on the other side of each nail. 3) Buff the nails with a buffer to improve circulation to the nail as well as add shine. 4) Apply a cuticle cream. Rub this into the cuticles and then soak one hand at a time in warm water. This is to help soften the cuticle area which makes the next step easier. 5) Dry your hands with a clean towel and apply cuticle remover. Then with a hoof stick gently push back the cuticles. 6) Next, carefully use a pair of nippers to remove the excess cuticle that has been pushed back. Be careful at this stage not to totally remove all the cuticle around the nail as it performs an important function of keeping bacteria out of the nail. 7) You should then apply cuticle oil to the area and rub in well. Remove any excess oil or grease from then nail with a cotton wool pad soaked in nail polish remover. 8) You are now ready to apply the nail polish. Firstly apply a good base coat, this helps to avoid staining the nail and also improves the appearance of the finished effect.When applying your chosen colour wipe of any excess polish and start in the middle of the nail plate. Push the brush up to the cuticle but leave a small gap so the colour is not touching it. Then do the same to the left side and the right. Apply 2 coats of your chosen colour (you may need another coat for a particularly dark colour) then apply a clear top coat. This gives a really professional finish and helps to protect against chipping and peeling, so your manicure will last longer.

Many of my clients make an appointment in desperation, usually presenting with a painful back, shoulder or neck for example, or with a specific concern that has not been resolved despite constant visits to the doctors.
