Back then I did wonder whether I had bitten off more than I could chew, setting up a new business in the same year as giving birth to my first child. The all-new Mazda MX-5 rocks and it’s not just me that thinks it - the awesome sports car has already been named Roadster of the Year in Britain. But why? Quite simply, it is a brand icon. It is brilliant fun to drive – and that has been the case in all of its incarnations over the last 25 years.

Having made its British debut at the 2015 Goodwood Festival of Speed, the all-new fourth-generation Mazda MX-5 has an excellent power to weight ratio, rear-wheel drive, perfect 50:50 weight distribution and more comfort & tech than ever before. The MX-5 is offered with a choice of two petrol engines, and with nine models across five trim levels, the mighty yet minute Mazda looks set to repeat the Japanese motor manufacturer’s influence within the reasonably priced sports car sector. Recipe For the sponge yo

u will need;

200g dark chocola te, 300g butter (softened and cubed), 300g light brown sugar, 300g caster sugar, 180g pla in flour, 18 0g self raising flour, 2tsp baking po wder, 80g cocoa powder, 5 eg gs, 150ml water, 6tbsp milk.

Peanut Butter Chocolate Cake...

For the decorations you will need;

100g dark chocolate

For the peanut bu tter frosting you will need;

4 heaped tbsp pean ut butter, 200ml double cream, splas h milk, 600g icing sugar.

Take this recipe, run to your kitchen and get baking ASAP- the ultimate indulgence awaits! I have spent some time perfecting this peanut butter frosting formula to result in the smoothest, creamiest covering to compliment the soft chocolatey sponge, so why not give it a go!

and cool slightly. Spoon into a piping bag and pipe patterns onto greaseproof paper. Set in the fridge while you make the peanut butter frosting.

Method for the Sponge Layers: 1.

Preheat the oven to 180c (fan), grease and line three 18cm tins.

Place your chocolate in a heatproof bowl over a pan of simmering water and heat until melted. Set aside to cool.

Cream together the butter and sugars then add the flours, baking powder, cocoa powder and eggs and whisk until smooth. Add the water and milk then stir slowly together. Add the melted chocolate and mix. Once the cake batter is smooth, divide between the tins and even out. Bake for 40-45 minutes or until a skewer comes out clean when inserted. Leave in the tins for 10 minutes then transfer to a wire rack to cool completely.

To make the decoration: 1.

Melt the chocolate in a bowl over a pan of simmering water then remove from heat

Method for the Peanut Butter Frosting: 1.

Place the ingredients in a mixing bowl and whisk until smooth. You may need to add some milk to create a spreadable and easyto-use consistency. Use your judgment on this.

Sandwich frosting between the three sponges and coat the outside. Use a palette knife to achieve a neat finish. Take your chocolate decorations from the fridge and use as required.

The initial pain could be a result of adhesive capsulitis, bursitis, tendonitis, referred cervical pain etc. The restrictive range of movement can often be self – perpetuating and progressively debilitating. The pain causes a reluctance to use the shoulder, and as a result the shoulder becomes stiff and progressively more inflamed. Adhesions continue to form in the joint capsule, the less movement that takes place the more the inflammation continues – it’s a vicious circle.

How may Bowen Therapy help?

Early treatment, with soft tissue therapy is recommended to, in the first instance, relieve the pain and allow greater range of movement. The Bowen Technique is a remedial and holistic form of ‘hands on’ body work, gentle and effective. common problem, and one that results in frustrating debilitation for many suffers. There can be many reasons for the onset of shoulder pain but in many patients the initial complaint leads to a chronic condition with pain, loss of function and resulting stiffness. Many of my clients report difficulty sleeping, dressing, reaching up to shelves, reaching to the rear of the car, using a kettle and other limitations of lifestyle, daily activities and work – due to pain and limited range of movement.

What a Spectacle...

Our

faces, like our bodies, come in all shapes and sizes, so if you wear glasses it’s important to choose a pair that will establish a balanced look in order to suit your face. The four most common face shapes are oval, round, square and oblong. If you have an oval shaped face with a rounded chin and forehead, consider yourself lucky! You’ll look good in almost anything, but make sure you select a frame that is wide enough to maintain balance.

A round face needs to look narrower and longer, which can be achieved with soft but angular frames that are not too deep. Geometric shapes and ones with embellished arms also give the face more deďŹ nition. If your face is square with a broad forehead, wide jaw and square chin, soften the angles by wearing oval or round frames that are not

too wide. These will soften the jaw and help emphasise the eyes. A rectangular face is longer with a square chin, deep forehead, high cheekbones and long nose. Large, wide, square frames with a strong top line help shorten the face, and a low bridge will shorten the nose. In addition, ensure that the top edge of the frame is no higher than the eyebrows and that the lower edge does not sit on the cheekbones.

There is no definitive length of time for sleep but the general consensus is that at least six hours of deep, quality sleep is essential for general well-being with the average person requiring just under 8 hours sleep.

created B:Fit in 2012 on the Isle of Wight, with the idea to provide opportunities to help people maintain a healthy, balanced lifestyle and I have been enjoying teaching Pilates classes and one-to-one sessions along with Sports Massage ever since. I practiced Pilates for a number of years before qualifying as an instructor, firstly to help improve my running through strengthening of the core, overall flexibility and mobility, but I soon realised that it was having a positive effect on my day-to-day life as well, so I became an instructor and have shared this positive effect with many clients over the years. But what is Pilates? It is a method of exercise and physical movement designed to stretch, strengthen and balance the body and is now clearly recognised as a positive form of movement-based exercise that truly can be tailored to any level, of not just fitness, but also of health. I also offer Sports Massage, which combined with Pilates helps those who are recovering from injury, trying to stay injury free or just looking to keep there body in tip top condition.

Sports massage is the manipulation and rehabilitation of soft tissues in the body including muscles, tendons and ligaments. News & Events in our region... region... Thame goes for gold in Great British High Street competition

Thame

is in the running to win up to £50,000 in prize money and more as part of a nationwide search for Britain’s best high street.

Thame is applying to win a Great British High Street Award in the market towns category of the Great British High Street Competition, to recognise the town’s efforts to strengthen and improve the facilities and offerings available in the town centre in recent years. These include activities to increase footfall and tourism, such as the Midsomer Murder publicity and walking trails, events such as the Thame Food Festival, the Thame Arts & Literature Festival (TAL), Music in the Park and Open Doors, and community initiatives such as Thame’s ground-breaking Neighbourhood Plan, which won an award for innovation in 2014. Besides the £50,000 prize money, Google have

announced they will be offering digital workshops to 100 retailers in each of the seven winning locations of the Great British High Street Competition. Retailers will learn how to use social media, develop their websites and get one-to-one advice from Google’s expert technicians. There is also a special new prize for towns who have become ‘rising stars’ or for local people who have made an invaluable personal contribution to their local high street. Shortlisting will take place in mid September. The public will then be asked to vote online for their favourite town. The public vote will count for 50% of the final outcome, with the panel of judges making the other 50%. The winners are expected to be announced at the end of October.

SSNAP (Support for the Sick Newborn and their Parents) is an Oxford based Charity who support sick and premature babies in the Neonatal Intensive Care Unit (NICU) at Oxfords John Radcliffe Hospital. The unit, which is a Centre of Excellence in Neonatal Care, comprises of Intensive Care, High Dependency and Low Dependency Nurseries who care for up to 53 babies. Organisers Lara Collen and Andrea Hughes have arranged for this year’s 007 themed Ball to take place at Meadow View Park in Thame. Tickets cost £40.00 per person and include a three course meal, welcome Drink & Disco. THE BIG INTERVIEW with Luis Troyano The Great British Bake Off is once again filling our TV screens with mouth-watering temptations and we watch in anticipation as each baker works hard to impress Mary Berry and Paul Hollywood with their culinary skills. One person who knows only too well how it feels to be in the Bake Off kitchen is last year’s finalist, lovable Lancashire lad, Luis Troyano. Look Local Magazine were lucky enough to interview Luis ahead of his recent book launch ‘Bake it Great’ and his appearance at this years Thame Food Festival to ask him a few questions about his life since finding fame on the BAFTA winning TV series.

Congratulations on your book launch Luis. So tell us all about it? I think a lot of recipe books can assume too much knowledge from the baker and often skim over the important bits, such as the exact cooking process of a bake. I wanted to create simple yet detailed recipes. The biggest baking fails happen during the cooking phase with many books simply saying, “place cake on the middle shelf of the oven’ but what they fail to tell you is exactly where, for example ‘towards the back’ ‘near the front’ etc. With this in mind I’ve written some helpful tips offering advise on how to get the best out of your oven and when exactly to take a bake out to achieve optimum results. There are recipes influenced by my Spanish upbringing, and never-seenbefore family recipes handed down the generations.

There’s a section in your book all about honey. Why do you love to use it in your baking?

I am a keen beekeeper so I’m lucky to have access to good stock. I just love how many different flavours you can get from honey and how the taste differs depending on what area of the country the bee’s come from. I use it in my cooking as a sugar substitute as it’s more natural than refined sugar and gives a lovely flavour at the same time.

What got you into baking?

I spent a lot of time in Spain as a child visiting food markets and grew up in a restaurant so food was always a part of my life. But I think my passion for cooking came from my fascination with flour. I always found in amazing how one simple ingredient could produce so many creations. So I decided to play around with it and see what variations I could come up with using flour as my base ingredient.

Any finally, why did you get involved with Thame Food Festival?

I’ve been to many food festivals in the past but Thame is one that’s talked about nationwide and is highly respected in the baking world. I love the fact that although its grown tenfold its stayed close to its roots by supporting local food & drink producers and charities. I’m honoured to be a part of it and really excited about my role as ‘judge’ in the Big Thame Bake Off.

Get your garden in shape for winter...

September 23rd is a special

date in the gardening calendar. The sun is directly above the earth’s equator and day and night are exactly the same length. Because of this, September is a pivotal month in the year: it heralds the end of summer and the start of autumn. It’s also a pivotal month in the garden. It’s a time of endings but also a time for rejuvenation. Summer plants fade and enter their dormant period, while leaves take on autumn hues: yet autumn crocuses push up through the soil, while bushes and trees are laden with fruit. This dual aspect to September means that on the one hand I find myself

preparing my garden for its long winter sleep, but on the other I’m planning ahead for next spring.

some more. While I’m at it I’ll be planting a few in pots so I can be sure of a great spring display on the patio.

So, while cutting down the perennials which have finished flowering I’m also checking to see if any have become too big for the space they’re in. If they have, I’ll divide them now, while the soil is still warm, and move them to another part of the garden, where they’ll flourish when the new growing season begins next year.

Meanwhile I look upon all the weeding, tidying and leaf-raking that I’m doing as an investment in compostable materials for my bin and my leaf-litter pile, which when left over the winter transmogrify into rich, crumbly compost and leaf-mould respectively. When dug into my soil in early spring it will give my garden a much needed shot of energy with which to kick off the growing season.

Likewise, I’m planning where any new trees or shrubs will go. I’ll get them in during September and they’ll be off to a flying start come Spring. My garden is chock-full of Spring bulbs already but I can always find room for

Rake: Use a wire rake to pull out all the dead moss and thatch then add to the compost bin Spike lawn: Push a garden fork right through the lawn into the earth below then

rock it a little to open up the lawn’s surface and allow air in.

Brush with top dressing: This is available from garden centres. Brush it into the holes with a stiff broom. To make your own top dressing, mix 3 parts top soil with one part peat substitute and 6 parts sharp sand.
