Make resolutions that will last beyond the new year Stu Niebergall It is that time of the year when many of us are contemplating our New Year’s resolutions, like go to the gym, or a whole host of others. Then, like many people, we abandon these goals within a month or two. This year I am proposing some resolutions you can make that will benefit not only you, but also your family, your community and your world. Improve Your Home’s Safety — Home electrical problems account for a large number of fires during a typical year (In the U.S., home electrical problems account on average per year for 67,800 fires). Many of these risks can be mitigated by in-
specting appliance cords and immediately replacing any that are worn, old or damaged. Keep clothes, curtains and other potentially combustible items at least three feet from all heaters. Make sure electrical appliances are used and stored away from wet floors and counters. Your home’s windows need to be accessible in case your family has to use them as an escape route. Make sure they are not nailed or painted shut, and if they have guards, security bars, grills or grates, test the release mechanism to make sure it works. On the other hand, windows can pose a falling hazard. Make sure screens are secure, and keep furniture — or anything children can climb — away from window ledges. Save money by going green — prices for natural gas and electricity are rising, so even the smallest improvements could help your family’s budget. Replacing incandescent light bulbs with compact
fluorescents can save you up to three-quarters of the electricity previously used by incandescent bulbs. LED lights will save you even more. Put an insulating blanket on your water heater. This can reduce standby heat loss by 25 to 45 per cent, and save four to nine per cent in water heating costs. The blankets can be purchased at Rona or Lowes for under $35. Add a programmable thermostat to lower temperature four to five degrees during the night or at times when you are not at home. On average, this can save two per cent on your heating bill when you lower the average temperature in your home by one degree. Conserve water, and reduce your water bill, by making simple changes, such as running dishwashers and clothes washers only when they are full and taking short showers instead of baths and turning off the water when you are shampooing or soaping. Invest in a low-flow shower
head and use up to 70 per cent less water. If you are looking at a new furnace, ensure it has a variable speed DC motor. This can save more than 15 per cent on heating costs. Your central air conditioner will not need to run as much with this solution. Replace your furnace filter. When the air flow is restricted due to a clogged filter, your furnace runs longer, using more power and gas. Furnace filters should be changed every three months. That lamp, toaster or set of dishes gathering dust in the garage could help furnish a home for a needy family. When you redecorate or remodel, don’t put out-of-style-but-usable home furnishings such as light fixtures, bathroom vanities, and even door knobs in the garbage. Habitat for Humanity ReStore will take and re-sell them at a fraction of the cost of new, and the proceeds help build Habitat for Humanity homes. Like so many resolutions you can make in the New Year, remember that if you make a resolution to take care of your home, your home will take care of you. Sweep chimney for little problems before they become big mIKE HOLMES Make it Right
Nothing says the holidays like the smell of a burning fire — it’s one of my favourite scents during this season. But before the first log starts to crackle we need to make sure our chimneys are up for the job. A fireplace that doesn’t function properly is a serious safety risk to our families. Ideally, we want smoke going out and heat coming in — and maybe Santa too. There are plenty of different types of fireplaces: traditional masonry wood-burning fireplaces; gas; electric; wood pellet; even fireplaces that run on alcohol. But no matter what type of fireplace you have, it needs proper maintenance — and so does the chimney. Annual fireplace and chimney inspections should be part of your home’s regular maintenance schedule. Among the problems you can run into if your chimney isn’t maintained is a chimney fire, which can spread in a matter of moments to your entire home. Every working chimney’s flue must be inspected and cleaned every year — no exception. This will help make sure there isn’t a block or a crack in the flue that can lead
to toxic fumes — like carbon monoxide — entering your home. Even a hairline crack once heated can open up as much as a full centimetre. A cracked flue also lets heat and smoke travel to other areas in your home, which is dangerous. A woodburning fireplace with a cracked flue causes creosote to build up a lot quicker. Creosote, or soot for short, is extremely combustible. It’s basically tiny unburned flammable particles that accumulate inside your chimney’s walls. If creosote builds up all you need is a tiny spark to start a chimney fire, which chimneys aren’t built to withstand. A proper inspection of your fireplace can also reveal if the damper has a tight seal. Sometimes bits of mortar fall from inside the chimney. This can stop the damper from completely sealing. If it doesn’t seal properly you’ll lose heat. That’s a big waste if energy efficiency is what you’re after. Your fireplace’s ash pit also needs to be checked; once every other year is enough. But if the ashes seem soggy and hard to remove, you might have a leak. If that’s the case it’s better to fix this sooner rather
than later. Chimneys are prime spots for water damage and leaks. The masonry and mortar can absorb moisture. If there’s anything screwed to the chimney, like an old television aerial, it just gives more points where water and moisture can come in. When they do, the mortar and brick will deteriorate over time. A good inspector will check the bricks, mortar, chimney cap and flashing. If your chimney’s mortar is deteriorating the bricks will get loose — a huge vulnerability to more water penetrating into your home’s structure. To fix this the mortar needs to be repointed, which means scraping out the old and refilling it with new mortar. It might sound like an easy job but you need to find someone with a bit of skill and practice. A bad job will be obvious — and it won’t be pretty. Proper sealing is crucial where the chimney’s base meets the roofing material. There should be metal flashing here. If it’s missing, poorly installed or needs repair, water can get under the shingles and rot the roof deck underneath. Most routine chimney repairs

Remove drippings from turkey pan and transfer to non-stick sauce pan. On medium/high heat brown the drippings stirring continuously while slowly wisking in flour, should be forming a pasty mixture but not clumpy. Add vegetable liquid, oxo/stock, bay leaves and stir until boils, then lower heat and continue stirring until thickens . If not using vegetable liquid use more chicken stock. Can season with a little pepper, sage and addition chicken oxo to taste. If gravy is too watery, then make a mixture with a tbsp of flour and 1/2 cup cold water (mixed well with no clumps) and stir slowly into gravy until desired thickness is achieved.

This will add flavor & moisture while cooking and to be discarded after turkey is cooked, not served. • Lightly brush the turkey with olive oil and lightly season the entire outside with pepper, garlic powder, rosemary & sage (or any other herbs that you wish, try basil, oregano or marjoram) • Bake uncovered according to weight chart instructions on packaging, usually 4-5 hrs at 350 but this depends on size/weight of turkey • Baste frequently with drippings. Cover with foil for the last hour of cooking if getting too browned.

The secret to this great stuffing is lots of onion and celery. Chop or cube bread into large bowl. Saute onions & celery in a generous amount of butter until tender crisp (not browned). Season onion mixture generously with salt, pepper, sage or savory and rosemary. Add onion mixture to bread crumbs/cubes and toss until bread is well mixed, add oxo or stock sparingly to moisten but do not make soggy. Transfer into buttered slow cooker or casserole. Slow cooker on high for 1 hr, then low for 2-3 hrs, stirring occasionally or bake in oven.

The Nutcracker and his kin a holiday collectible Wood dolls come in all kinds of dress Samantha Critchell THE ASSOCIATED PRESS NEW CANAAN, Conn. — The gang’s all here: the football fan, the chef, the teacher and the skier. And there’s the Nutcracker prince from E.T.A. Hoffmann’s classic Christmas story, who inspired them all. The quaint Whitney Shop here is just one of so many home-goods stores filled with this granddaddy and all his offspring that people are collecting and turning into family traditions of their own. Some become an annual gift — Whitney Shop owner Karen Stinchfield and her grown children make sure there is a new version of the Nutcracker under the tree each year for her husband to enjoy — while other people come in to the store during the holiday season to see which new characters have joined the pack. They start calling before Halloween to find out when the display is going up. The wooden dolls, many of which will really crack your walnuts and macadamias, are increasingly popular in holiday decor, although they are hardly new. The classic Nutcracker soldier, with sword in hand and a prominent moustache, comes from Hoffmann’s early 19th-century tale The Nutcracker and the Mouse King. Soon there were kings and policemen as carvers sought to embrace normally stern authority figures, according to Wade Bassett, director of operations for Yankee Candle’s flagship store.

Legend has it those toughguy exteriors were intended to ward off evil, while deep down, as in Hoffmann’s story, the Nutcracker is most interested in his owner’s happiness. In 1892, at the request of the Moscow Imperial Theatres, Peter Illyich Tchaikovsky set the story to music and Marius Petipa choreographed the dances to create one of the world’s most famous and beloved ballets, The Nutcracker. But beyond the ballet, decorative nutcracker characters, often with high-top hats and square jawlines, have become a sign of the season. And there’s a little more room to have fun with them than with, say, Santa Claus, who is always expected to

Stinchfield sees all types
of holiday nutcrackers, from kitschy to elegant, and all types of fans. There are the customers drawn in because their daughter once wore a sugar
plum tutu on the school stage; the Civil War buff looking for the Union soldier; the Disney aficionado in search of the Geppetto/Pinocchiothemed nutcracker; and the biker come for the HarleyDavidson dude. Bari Murdock has a baker, but hers holds a miniature gingerbread house. She also has a skier nutcracker, purchased two decades ago in Austria, which has moved around the world with her. Murdock, an interior stylist, is having her first Christmas in Chile after living in Connecticut for years. She was happy to unpack the nutcrackers. “It’s not quite like an ornament, some inanimate object. It’s like a little man. You open
the box and say, ‘Oh hi, I’m glad you made the move and I’m glad you made it in one piece,’” Murdock says. She wants her children to remember them as part of their holiday celebration. Mackenzie-Childs wants to make a new holiday nutcracker an annual tradition, offering a limited-edition one each year. Proctor went this season with a royal-court jester theme. Elsewhere, the Nutcracker has inspired ornaments, paper goods and even dish towels. At Yankee Candle’s flagship store in South Deerfield, Mass., in its Bavarian-castle room, there’s a nutcracker section complemented by beer steins and cuckoo clocks. “Nutcrackers are for someone who has spirit,” Proctor says. “I’m sure a lot of people who collect nutcrackers have no idea where they come from, where they’re made or where the tradition started, but we’ve studied them!” Many of the most traditional ones are made in Germany in the type of snowy mountain towns you’d imagine, she says. “We are convinced the people working on them are descendants of Santa Claus. They pay incredible attention to detail and quality.” Sales, however, are just as strong in warm-weather places, says Proctor. Some decorative nutcrackers are gifts, but she suspects just as many go right into personal collections. “Some people have dozens of their own. They love them to death for a few weeks and then tuck them away,” Proctor says. “It’s the best of both worlds.” The Stinchfield family collection, however, stays up year-round. “T hey just make you smile,” Stinchfield says.

Celebrating 100 years with style Edmonton home gets a loving facelift Scott McKeen For Postmedia News EDMONTON — It was a surprise to find Faith Farthing living in such conditions. We worked together years ago. I was a newspaper weekend assignment editor. Faith worked part time on the support staff. On weekends, she answered phones. So that’s where memory left her — as a university student, working part-time. So yes, it was a bit of a shock when I first visited this historic, grand house of hers in tony Groat Estates, part of the Edmonton neighbourhood called Westmount. A shock, at least, to a longtime journalist living in a wee downtown condo. Yet Faith earned every square foot of this home. While I was out golfing, or practising guitar — perhaps napping — she was working, building up a successful communications firm. The timing is perfect for her home reveal. Faith sunk considerable money into the place these last few months. Why? The house was built in 1912. A 100th birthday demands to be celebrated. New hardwood floors were installed on the main floor. Most of the home was repainted and the light fixtures replaced. The home’s facelift wasn’t its first, though. The previous owners did a significant update to the home. They also added a front garage and topped it with a gorgeous loft space. In fact, it was the bonus room above the garage that sold Faith on the house. She was looking in 2004 for a home that could double as an office for her communications business. She wandered into this house, saw the upstairs room and was hooked. The bonus room, with its angled ceiling, fireplace, wood floors and ample, natural light is spacious, yet warm and cosy. But it was the luxurious, sofa-like window seat that closed the deal. Faith pictured herself with a hot mug of tea, lounging by the window and reading manuscripts or editing documents — something she’s done many times since. The house is 1,800 square feet. The basement is partially finished. Out front is a lovely enclosed porch, with room enough for a small

Faith Farthing uses this loft addition as her home office. party. Inside, the feel is more formal. The living room is open to the dining area, which is open to the kitchen, tucked behind a serving counter. With the old-style hot-water radiators, gas fireplace and traditional decor — including her grandfather’s 130-year-old piano — the main floor evokes a sense of warmth and welcome. Upstairs is the aforementioned office-loft, as well as a guest room, master bedroom and loo, with a vintage clawfoot tub. When Faith bought the home she researched it in city archives. She learned it was first owned by a Sir Edmund Trowbridge. The Trowbridge home, she also lear ned, was equipped in 1918 with one of those newfangled communications devices, a telephone.
Now it is equipped with d i g i t a l t e ch n o l o g y a n d owned by a woman who parlayed a gift for communications nitpickery into a successful business. Farthing is one hell of a proofreader and editor. She tells the story of driving one day in town and suddenly feeling a bit antsy. Something was bothering her. She looked around and discovered the cause: A typo on a portable sign. She can spot mistakes in her peripheral vision. “It’s a gift, though some people might see it as a curse,” Faith says with a laugh. Her company, FinalEyes Communications, became a going concern on Faith’s talent and work ethic. It was nothing for Faith to still be working late on a Friday or Saturday evening.
A recent passion is book publishing. Faith has published three books and has four in the works under her publishing business, Roadie Books. She works tirelessly to promote her authors. I know this because she’s picked my brain and twisted my arm on their behalf. Returning the favour, I demanded to write about her and her home. She agreed, mostly because she loves the old house. “It’s cosy and it’s got character,” Faith says. Yet she’s not done with the facelift. She’s built a patio along one side of the house. Now she plans to install garden doors to open up to that patio from the dining room. Man, that looks like a lot of work. Apparently, not to Faith.

Royal icing makes frosted cookies keep easier Reena Nerbas For Postmedia News Q: I read on your blog a Royal Icing recipe for cookies. Why should I use Royal Icing instead of Buttercream Icing for decorating my homemade sugar cookies? A: Both icings serve a purpose: while Buttercream tastes delicious because it is made with the ever popular ingredient — butter — Royal Icing is long lasting and easy to store. You can add flavouring such as peppermint, lemon, vanilla or almond to both Royal and Buttercream Icing. Royal Icing quickly hardens, making cookies easy to stack and carry to Christmas parties. As well, cookies iced with Royal Icing can be frozen without separating and kept for at least two weeks, so you can make them ahead of time. Buttercream cookies are also freezable but a little trickier to stack because of the icing being softer. One of my favourite attributes of Royal Icing is that it can be thinned out with a little water; the icing will flow onto your cookies, giving them a smooth, professionally decorated appearance. Note: Create a border on cookies with regular consistency Royal Icing before adding water for the filling icing. Q: I look forward to your column in our paper each week. I live in a condo and at Christmastime I bake tons of tourtiere pies, which are in big demand with my colleagues. However, the onion and garlic smells remain in my home for days. The smells linger in my clothing, coats and hair. It’s disgusting as it clashes terribly with my perfume. My Lamp Berger works wonderfully to eliminate the odours, however, I am looking for a cheaper option, especially now it’s winter so opening the windows isn’t the best solution. A: It is normal for cooking odours to attach to clothing, hair and the immediate atmosphere. Your first step is to run the hood fan while
cooking with garlic and onions, and open a window whenever possible. To prevent hair from smelling, you can wear either a shower cap or cotton hairnet while cooking, and wash your hair before going out for the day. As with hair, clothes often carry a distinct smell after working with powerful ingredients and the easiest solution for
this (short of wearing coveralls) is to change your clothing before heading out to visit with friends. Whenever I cook a food with a strong odour such as curry, I like to overtake that odour with another that freshens the kitchen. My favourite solution is to make your own air freshener using vinegar or water and 15 drops of your favourite essential oils such as
the delightful combination of; cinnamon, orange or grapefruit and peppermint. Simmer the water and oils on the stove for 15 minutes following cooking. Other than that you can light fragrant candles such as soy blueberry or cinnamon. Always put soy candles in a container as they will spread out when they melt. Or light a few of my absolute favou-
rites, beeswax candles. However since you already own a Lamp Berger, you can delight in the wonderful appliance for killing odours from sources such as cooking, pets, cigarette smoke and paint fumes. I enjoy your questions and tips, keep them coming! Check out my brand new blog/website: reena.ca

Look in your cupboard for cleaners and stain removers Stefanie Gabrych Fraser For Postmedia News Everything you need to make your own non-toxic natural cleaners is in your cupboards. You’ll save money using these common household products, especially if you buy generic brands. Your home will not only smell clean and fresh, it will also be less toxic. 1. Mayonnaise: Great at removing water marks on wooden tables. Just smear a little on the
spot, leave on for a few hours and then wipe clean. 2. White bread: Remove crust from stale bread and it becomes a surprisingly effective magic scourer perfect for removing grubby finger marks from white walls. 3. Aluminum foil: If you have problems with static cling, toss a scrunched-up ball of aluminum foil into the dryer with your wet laundry. It removes the static and never has to be changed. 4. Vine g ar: For freshersmelling, softer clothes plus a happy washing machine, add
½ cup vinegar to the liquid fabric softener dispenser in your washer. Adding vinegar to your wash will also clean the hoses and unclog soap scum. 5. Tea: Use a black tea solution to produce a wonderful shine on your hardwood floors. Steep three tea bags in one litre of boiling water for 15 minutes. Pour into a bucket and dip your cleaning rags (or mop) into the solution to wipe down your floor. You don’t want the floor to be overly wet, just damp. Rinsing is not necessary for this process. 6. Oatmeal: Use oatmeal (the instant kind is fine) as a
scratch-free bathtub cleaner. Make a thick paste with water and apply with a soft sponge or cloth. Rinse thoroughly for a shiny clean bathtub. 7. Cornstarch: Don’t worry if your carpets are smelling stale. Vacuum the carpet and then sprinkle cornstarch powder on it. Let it sit overnight and then vacuum the carpet again. Your car pet will be odourless. 8. Lemon: Dip a cloth in straight lemon juice and rub it onto the stained area to remove stains on vinyl items such as recliners or tile flooring.
