Insight into Rotary & the members Rotary members are enthusiastic, fun-loving and active volunteers, who give their time and talents to serve communities, both at home and overseas. We are dedicated people, men and women from all walks of life, who share a common interest in helping others. Rotary International in Great Britain and Ireland (RIBI) has over 55,000 members in 1,840 clubs. It is an integral part of Rotary International, the world’s first service organisation, which today has over 1.2 million members worldwide. Each member enjoys business as well as social networking opportunities, whilst giving something back to those less fortunate, learning new skills and having a huge amount of fun! Rotary runs countless humanitarian projects both locally, nationally and internationally, and
also partners with many charities worldwide. Rotary members organise community projects that address many of today’s most critical issues, such as violence, drug abuse, health, hunger, the environment, and illiteracy. Rotary clubs determine service projects based on local needs. They work for and with young people to address challenges facing the youth of today. Worldwide, Rotarians are enthusiastically committed to the drive to wipe out polio. Since Rotary became involved in polio eradication in 1985, the number of reported polio cases has fallen from 350,000 a year to less than a 1,000; 125 endemic countries have been reduced to just 4 - Afghanistan, India, Nigeria and Pakistan; and two billion children have been protected from the disease.

Supporting independent providers Every exhibitor is passionate about what they do whether it is preserving rare breeds, encouraging us to be adventurous with our taste buds or showing us that we don’t have to compromise on quality for the sake of convenience. Our exhibitors bring with them quality, freshness, uniqueness and variety that you won’t find in supermarkets. There are meats from rare breeds of pigs and native breeds of beef and lamb that have all grazed freely on the hillsides of the eastern edge of the Chilterns. If you prefer beer, then visit the Rotary Beer Stand in the Market Place where you can try and purchase a selection of real ales from Tring Brewery. Experience the richness of ales prepared by the traditional method, using malted barley, hops, water and yeast. The finest ingredients, most of which are home grown.

Ingredients
Preparation & cooking
1 x Pack Gem lettuce 1 x Chicory hearts 50g French Blue Cheese 2 Shallots 4 Sprigs of Rosemary 4tbs of red wine vinegar 1 x Egg Pack of Croutons 4tbs of double cream
Take 1 packet of gem lettuce and chicory hearts. Pick off the leaves down to the hearts and then quarter those. Throw any limp lettuce leaves away and wash, dry and place to one side. Chop up some blue cheese we prefer fourm d`ambert French blue cheese. Peel and slice 2 shallots into thin rings and add 4tbs of red wine vinegar to them, a pinch of sugar and salt also. Lightly poach the egg, mix the leaves with the shallots, add cheese and croutons, add 4tbs of double cream and mix thoroughly, season with salt and pepper.

Poached Apple & Ginger Crumble with vanilla custard (Serves 4) Ingredients
Preparation & cooking
Crumble filling 6-8 cooking apples 100g white sugar thumb of ginger 1/4 tsp cinnamon
Peel, core and slice apples into segments. Place in a pan with sugar, cinnamon and ginger, cover with water and bring to simmer until apples are tender, but not mushy. Remove apples and reduce liquid by 1/3rd.
Crumble topping 50g oats 50g plain 50g unsalted butter 50g unrefined brown sugar 20g ground almonds handful of flaked almonds Custard 1/2pt double cream 1/2pt whole milk 1 vanilla pot 4 egg yolks 50g caster sugar 18
Place all topping ingredients into a baking tray and cook until golden brown and crisp, stirring as necessary then briefly pulse in food processor to remove any large lumps. Gently warm cream, milk and vanilla seeds until warm. Over a gentle bain-marie, whisk the yolks and sugar until thick and creamy, add 1/2 milk mixture to yolks, whisking all the time. Return to remaining milk and stir until the mixture thickens, take care not to let it boil. Divide apples between 4 ramekins and pour over syrup, cover with crumble topping and heat through.

Scott Liversedge, Head Chef (right) & Louis Edington, Junior Sous (left) Scott joined Redcoats Farmhouse back in 1988 as a chef de partie and worked his way up through the ranks until he was promoted to head chef in 2003. Under Scott’s leadership the restaurant has won an AA rosette and retained it for 9 consecutive years.
Berry Meringue Trifle (makes 4) Ingredients
Preparation & cooking
270g Frozen berries 300g Caster sugar 15ml Water Lemon drizzle cake Sweet sherry 100g egg white(approx. 4 eggs) Red food colouring (optional) 1 tablespoon Bird’s custard powder 200ml Milk 3.5ml Vanilla essence ¾ pint Double cream A few fresh berries 4 sprigs of mint to garnish
1. Make the mini meringues by whisking egg whites to stiff peaks – when they reach soft peaks gradually add 200g of the caster sugar. Transfer to piping bag and, if you like, swirl through a few drops of the food colouring with a wooden spoon. Pipe dots of meringue mixture (width of a penny) onto baking paper. Cook at 100°C for 90 minutes.

2. Boil the frozen berries, 60g sugar and the water for 5 minutes and leave to cool. 3. Whisk the double cream together with the vanilla essence and 40g of sugar until stiff. 4. Make a thick custard by following the instructions on the pack but reducing the amount of milk to 200ml per tablespoon custard powder and 2/3 tablespoon sugar. Leave to cool. Alternatively thicken a pre-made custard using cornflour.
5. Build the trifles in tumbler glasses. a) Cut a piece of cake to fit, place in the bottom of the glass and then soak with sherry. b) Cover with a desert spoon of fruit compote. c) Mix together the cream and the custard and pipe all a layer on top of the compote. D d) Fold another spoon of fruit compote into the cream and custard mixture. e) Top the glass with mini meringues, fresh berries and a sprig of mint to garnish.
