welcome Nostalgia, thrift and cheer are the bywords for this year’s Love Christmas in Cornwall magazine. After all the excitement of the Queen’s Jubilee this summer we wanted to savour the moment and so we have carried the mood over to this Christmas edition. As with our sister publication Love Summer in Cornwall, we have dug out old photos, some dating back to Christmas 1952! We are also focusing firmly on the upsides of life sixty years ago, before all the commercialisation and glitz. With this in mind we have looked at ways of making Christmas simpler, cheaper and more carefree. Whether it’s doing your Christmas shopping in a charity shop, (very thrifty and very chic), making your own decorations or going for a winter’s walk on an empty beach, it’s all here. In the spirit of making your own homemade Christmas, we have a great craft section, full of ideas for a bright and festive home.

And to help you slow down and ease into the contemplative side of Christmas we have a run-down of events at the Cathedral and beyond, as well as our regular Christmas interview with Bishop Tim. If you’re full of creative energy, but lacking a project, why not make your own home-made Christmas this year? There are loads of workshops all over Cornwall where you can go to learn new skills or perfect old ones. Here are some of the county’s tried-and-tested favourites. Cowslip Workshops The great team at Cowslip Workshops near Launceston has organised a wide range of Christmas courses to choose from this year. They start on Friday, November 2nd with a make-your-own Christmas angel course. Other highlights include making Christmas cards, special seasonal quilt making and a willow workshop with one of our favourite contributors, Carol Horsington who has also given us her step-by-step guide for making your own willow heart (See our section on making Christmas decorations p12, completed heart seen left). Stir up Saturday at Tresillian house near Newquay

It’s time to stir things up with a Christmas special at this workshop run by experts Pam ‘the Jam’ Corbin (author of best-selling River Cottage ‘Preserves’ and 'Cakes’) and Liz ‘the Pickle’ Neville (who makes all own-label preserves for River Cottage). The pair will be running a special workshop on how to make delicious Christmas treats on Saturday, November 24th. Highlights include how to make Christmas pudding, sweet and savoury marmalades, gravadlax, and a handful of ideas for making easy delights, both for the table and to give to family and

friends. The workshop at the recently restored regency country house runs from 9.30am until 3.30pm and cost £75 per student with discounts for groups of two or more. Pam has kindly allowed us to print her recipe for plum and russet mincemeat, so everyone can have a go. It’s from her book - Jams, Jellies, Curds – Preserves by Pam Corbin, River Cottage Handbook No 2.

Pam's plum and russet mincemeat "The term ‘mincemeat’ originates in the 15th century, when chopped meat was preserved with a combination of dried fruit, sugar and aromatic spices. During the 17th century, beef or lamb suet replaced the meat and has continued to be used ever since – with vegetarian ‘suet’ becoming an option recently too. This recipe is a departure on several fronts: it uses fresh fruit as well as dried, and contains no suet, meaty or otherwise. In fact, it contains very little fat (only the oil in the walnuts). The result is light and fruity, but with all the rich, warm spiciness of a traditional mincemeat." Makes 4 x 450g jars 1kg plums 200ml orange juice (2-3 oranges) finely grated zest of the oranges 500g russet apples, peeled, cored and chopped into 1cm cubes 200g currants 200g raisins 200g sultanas 100g orange marmalade 250g demerara sugar ½ tsp ground cloves 2 tsp ground ginger Half a nutmeg, grated 50ml ginger wine or ginger cordial (optional) 100g chopped walnuts 50ml brandy or sloe gin

1. Wash and halve the plums and remove the stones. Put the plums in a saucepan with the orange juice. Cook gently until tender - about 15 minutes. Blend to a puree in a liquidiser or push through a sieve. You should end up with about 700ml plum puree. 2. Put the puree in a large bowl. Add all the other ingredients, except the brandy or gin. 3. Mix thoroughly. Cover and leave for 12 hours. 4. The following day, preheat the oven to 130˚C/gas 1/2. Put the mincemeat in a large baking dish and bake, uncovered, for 2-2 ½ hours. Remove from the oven, stir in the brandy or sloe gin, then spoon into warmed jars, making sure there aren’t any air pockets. Seal and store in a dry, dark, cool cupboard until Christmas. Use within 12 months. Variations You can alter the ingredients in this recipe, but remember to keep the fresh fruit puree to around 700ml and the total amount of dried fruit to 600g. I like an apple, pear and ginger mincemeat: replace the plums with Bramley apples, the russet apples with firm pears, and swap 100g of the raisins or sultanas for 100g crystallised stem ginger. You could also exchange the walnuts for almonds and add a couple of teaspoons of ground cinnamon.

Make an iPod cover for a loved one’s Christmas stocking or create a festive table runner on one of the many felt making courses being offered in the run up to Christmas by local St Agnes artist, Jo Pollack at her Hummingbird Workshop.

As ever, the innovative people at The Eden Project are also offering something for the craft-inclined this Christmas. Head over to the reflective area in the Mediterranean Biome café, where members of staff will show you how to make decorative recycled envelopes, and give you the time to write that letter you have always meant to. If the cost of some of the workshops is holding you back, why not try the cheaper option. Across Cornwall there are lots of little craft groups that don’t cost the earth.

A one-day course at Jo’s studio overlooking Trevaunance Cove costs £60 and a full weekend course costs £110. Christmas gift & food workshops Roseland Mews Studio runs courses in batik, patchwork, painting, jewellry, celtic designs - and much more from its peaceful HQ in the Lynher Valley near Liskeard. Christmas jewellery From earrings to wedding rings, you can create silver gifts or decorations in whatever style you want at the Mid Cornwall School of Jewellery near Par. Festive Preserves at Bedruthan Steps Staying with preserves, there’s a similar seasonal take at the Bedruthan Steps Hotel near Newquay. Demonstrations on how to make piccalilli, sloe gin and mincemeat along with onion marmalade and bottled mulled pears are all part of this course which is run by the four-star hotel’s head chef. Turning junk in to gems Sweetpea and Betty are renowned for up-cycling furniture and household treasures in their creative workshops run from their shop in the centre of Falmouth. Down in Perranuthnoe near Penzance the ‘Sea Knits’ knitting group meets every Wednesday afternoon at the Cornish Wools gallery in the Lynfield Craft Centre. The group ranges in ability from beginners to experts and all are welcome. An afternoon session costs £3.50 per person. The Craft Centre also supports and sells the work of over 90 local artists and craft workers. On display are original paintings, photography, pottery, jewellery, books, wood art, felted work and lots more. Do try this at home… Creativity, dexterity and mental agility are all needed for knitting, - making it one of the greatest craft activities of all. CRAFT COURSES Make your own Advent calendar, design your own Christmas cards, gift tags and wrapping paper and much more on Saturday mornings with the talented team at Truro Arts. The River Street store, which also boasts a fantastic café is a brilliant place to take children. With loads of workshops on offer, the youngsters get to flex their creative powers and you get change from a fiver. Once they’ve completed their craft project and perhaps downed a delicious milkshake they can head off in to Truro Museum next door to explore the fascinating collections on display there as well. Adults are just as well catered for with further regular workshops. This is also a great place to congregate for the Truro Festival of Lights. The procession passes right in front of the building. For details call 01872 240567. This year Geevor Tin Mine Museum is running six Christmas ornament workshops in the run up to Christmas. They run from 10am until 12 noon and again in the afternoon from 1.30pm until 3.30pm on Sunday, November 25th; Sunday, December 9th and Sunday, December 16th and cost £5 per person per session. The workshops include all the materials needed to make the three individual ornaments you take home at the end. PIRRIP PRESS Pirrip Press, the small design and print studio in Penzance, is a popular choice for The Tate and House and Garden magazine, and this Christmas we have been seduced as well. Alexandra Higlett and Georgina Hounsome, the two-woman team behind the block presses, have combined quirkiness and value for money. Here’s our pick:

how to create your own willow heart Carol Horsington from Cornish Willow also runs her own workshops. Here she shows how to make one of this season’s most popular decorations: a willow heart. (www.cornishwillow.co.uk)

1. These hearts are easy to make from willow or any long lengths of hedgerow material. Willow is very pliable and bends well; if you are using other shrubs then you might find that you have to use florist’s wire to secure the ends. 2. Take four lengths of willow and hold them together in a bunch at the thick ends. Take one length and bend it around to form one half of the heart. Use the thin ends of this length to wrap around the centre stems to secure. 3. Do the same with another length to form the opposite side of the heart. 4. Take a third length and wrap it around the first half of the heart. Repeat with the last length, wrapping it around the other side. 5. Loosely wrap the ends away and trim the thick ends with secateurs. 6. Tie a festive bunch of greenery to the centre and add a simple string hanging. Mischa’s snowflakes This old classic is quick and easy and lots of fun. Mischa made five in about five minutes! And just like the real thing, each paper snowflake is unique. 1. Fold a square sheet of paper on the diagonal. This will give you a triangle.

2. Fold the triangle in half again 3. Now this is slightly trickier – you need to fold this triangle in to thirds. (see diagram) 4. Snip off the fat end of your folded paper wedge. 5. Snip out chunks of the folded paper using straight and curvy lines. 6. Now, unfold and voilà!

If three-year-old Lizzie (with some help from mum) can make these so can you! 1. Cut out a heart-shaped piece of paper as a template and then pin it to your fabric. Lizzie used felt. 2. Cut around the template cutting the fabric as you go. Make two cut-outs. 3. Embellish the side of the fabric you will be displaying with buttons, ribbons, sequins, embroidery – whatever takes your fancy. 4. Pin the right sides together and stitch around the edges leaving a gap at the end so you can stuff the heart with lavender.

Christmas reading Christmas also means holidays, and holidays mean time to curl up with a book. Here are a few notable titles published this year that make for a good read.

Journalist, Alex Watts, jacks in the day job to try to make it as a chef. He recounts his struggle to break in to the pressured world of fine dining with hilarious anecdotes and crisp candour. Some of Padstow’s most famous kitchens have a starring role in this surprise bestseller which stormed to the top of the online cookbook charts.

“Farewell to the anxieties of the superficial lightning tour, ticking off as many ‘unmissable’ cultural, geographical or gastronomic boxes as possible. y t Shop i r a h C Christmas The joy of finding a discarded treasure in a corner of a charity shop is one of life's great feelings.

If you’re lucky you can come away with a rare vintage item that dusted down has an appeal no amount of brand new shop-bought stuff can match. Or at the very least, you find something you need for far less than it would cost you on the high street. The appeal of charity shopping is increasing and more of us, it now emerges, are doing our Christmas shopping there as well. “It’s been very noticeable this year,” says Truro Oxfam shop manager Rita Benette. “Our sales have been increasing steadily and we are also finding that people are donating more as well. People continue to be generous even in these hard times. It’s really great.” Oxfam’s upsurge is matched by other charity shops in the area. And the trend is repeated at the national level. The Charity Retail Association, the trade body for charity shops, confirms that 38 per cent of people have either already bought a Christmas gift from a charity shop, or are intending to. “Increasing quality of charity store goods, a wider variety of items and the simple fact it costs much less are the main reasons we opt for charity shops,” says Senior Research and Policy Analyst for the CRA, Cristina Osoro Cangas. Then there’s also the added bonus of doing good. “It makes such good sense,” adds Rita. “It’s a case of one man’s unwanted gift is another man’s treasure. When someone buys our donated goods they are also raising money for a useful cause, so everybody is happy.” Over at Save The Children behind The Leats in Truro, volunteer Stephanie Acton shares Rita’s enthusiasm. “I think it’s a wonderful idea, I’m all for it. I buy a lot of my clothes here as well as my husband’s. It all adds up to a huge saving,” she says.

For Christine Stapleton, shop manager at Cancer Research UK in River Street, it’s all about getting the right gift for the right person. “I think doing your Christmas shopping in charity shops is brilliant. Of course you may not want to give somebody something that’s been used for Christmas, but we have some stock – like CDs and books that are brand new and still in their plastic wrapping. “In the run up to the Christmas party season we find a lot of our party wear is popular. We have some fabulous frocks in store; I can’t wait to get the Christmas stuff out and onto the shelves. “After Christmas we find we get a lot of presents that people don’t want, so we have a second wind as people come in to snap up all the New Year bargains!”

TRURO CATHEDRAL

This year Truro Cathedral is celebrating the 125th anniversary since its consecration in 1887. With its distinctive three spires and neo-gothic architecture the iconic cathedral will be the setting for a special birthday party on Saturday, November 3rd. This familyfriendly event, which is open to all, is the forerunner to a packed advent calendar that will light up the festive season. Among the Christmas highlights are concerts, carol services and worship. Musical treats include the choral spectacular, Cloudburst on November 10th and Benjamin Britten’s St Nicholas – sung by St Mary’s Singers and Orchestra by candlelight on December 1st. The Three Spires Singers will perform Handel’s Messiah on December 8th. Up to 1,000 people are expected to pack the aisles for the perennial favourite, Nine Lessons and Carols at 7pm on December 23rd and 24th - a service created by the first Bishop of Truro, Bishop Benson, over 120 years ago. There will be Midnight Mass on Christmas Eve at 11.30pm and the next morning at 10am there will be one of the biggest events in the Cathedral’s year, the Christmas Day service. Bishop Tim will lead the service that will be sung by the Cathedral Choir.

For families and children there is also the ever-popular Children and Pets’ Carol Service on Sunday, December 30th at 2pm. It’s been twelve months since we last spoke to the Bishop of Truro, the Right Reverend Tim Thornton. Since then it’s been an eventful time. As we enter into the spirit of Advent, Bishop Tim shares his personal highlights of 2012 and his Christmas message, and also looks forward to a festive season of contemplation and prayer.

Q: What's been the highlight of your year since our interview for last year’s edition of Love Christmas? The highlights of my year have been the Olympics and the Paralympics. The atmosphere across the whole country was so optimistic and hopeful and the media were full of good news stories. We demonstrated, as a country, that we care and we see people as human beings not as objects, and we have a ‘can do’ mentality. In fact, we demonstrated what the true message of Christmas is – that human beings are wonderful and are made in the image of God! Q: There's a full calendar of events planned over the festive season this year, what do you particularly look forward to? I especially look forward to the excitement of meeting children who are anticipating the great day, going to carol services and joining in the festivities generally. I really appreciate the splendour of the Christmas morning Eucharist in Truro Cathedral. Q: What, if anything, makes Christmas in Cornwall special? Everything makes Christmas in Cornwall special; but perhaps I can single out the Young Farmers’ Carol service which I am privileged to be invited to and which does have a very special feel to it.

Q: What's your Christmas message this year? I would hope and pray we can retain the atmosphere of hope and positivity that was all over the place during the Olympics and the Paralympics. The message of Christmas is that God loves us so much he sent his Son into the world. We are of value and worth and we demonstrated that through the summer. I would also hope that we might be brave enough to throw off our apparently natural cynicism and inhabit an equally natural – yet oddly uncomfortable – sense of value and worth. Christmas shows that we are all ‘special ‘people. Q: What conveys the Christmas message most powerfully to you? The sense of people attending to one another around Christmas time. People spend time with each other and notice each other in ways that, sadly, are not always true throughout the rest of the year. Q: How will you celebrate Christmas? I shall celebrate Christmas in many churches in a variety of ways; and then look forward to being with my family and enjoying the warmth and support and love of my ‘nearest and dearest’ in the days immediately after the great feast.

Q: What is your favourite Christmas carol/piece of church music? It varies from moment to moment and depending on how many times I have sung certain things in particular years! But at present it would be O little town of Bethlehem.

Just a stone’s throw away from the Cathedral, the Truro Methodist Church also celebrates the season in style. Perhaps best known for their live Nativity that makes its way around the city complete with donkey, these services and events are hugely popular, drawing ever bigger audiences over the years.

Cornwall has a small but vibrant Greek Orthodox congregation. Their church, a converted Methodist Chapel, is at Laity Moor near to the village of Ponsanooth. The general pattern for services is Orthros or Matins at 9.30am with Divine Liturgy following at 10.30am on most Sundays, and on major feasts such as Christmas Day.

Christmas highlights include: Wednesday, November 14th TMC Lit Up! Truro Methodist Church will be throwing open its doors at 5.15pm for hot chocolate, coffee, cupcakes, hot punch, games, crafts, live music, puppets and more to keep everyone entertained and refuelled in the build-up to the Truro City of Lights event at 7pm. Sunday, December 16th Christingle candlelit celebration at 3.00pm, (a service with children particularly in mind). Wednesday, December 19th Christmas carols in front of the church from 5.15pm. Sunday, December 23rd Carol Service at 6.15pm. Monday, December 24th Live Nativity going from Truro Methodist Church around the City beginning at 3.15pm.

Christmas in Cornish churches The churches of Cornwall come into their own at Christmas. Many have Nativity scenes, a number host Christmas tree festivals with trees exhibited and dressed both by local organisations and by neighbouring churches. Some of the best churches to visit at this time of year are St Morwenna and St John the Baptist at Morwenstow and St Just in Roseland Church near St Mawes for their stunning and atmospheric settings. Other noteworthy churches are St Petroc's in Bodmin, St Columb Major, St Mary Magdalene in Launceston and St Nicholas and St Faith in Saltash for their beautiful Christmas tree festivals.

Celtic Christmas As well as being a Duchy, and a county, Cornwall is also a Celtic nation. Like Ireland, Scotland and Wales we have a language and culture that predate those of much of the rest of Britain.

To get a taste of a Celtic Christmas, try and get to any one of the following:

Tom Bawcock's Eve in Mousehole Celebrated on December 23rd, Mousehole's famous festival is said to commemorate the heroic efforts of local fisherman Tom Bawcock who braved a tempest to bring home a catch and relieve a famine in the village. There are several other theories about the origin of the event, but like Padstow's May Day 'Obby Oss' celebrations it's believed to have Pagan origins. During the festivities the remarkable local delicacy dish?, stargazy pie is eaten (the distinctive dish is characterised by fish heads and tails poking out of the pie crust), and there's also a lantern procession through the village. The Christmas lights in Mousehole are also a renowned for their atmospheric charm.

Whilst pilgrimages to such places tend to occur either on local saints days, or on the four chief feast days of the Celtic Year, they make a rewarding visit, both moving and at times eerie, for a Boxing Day or winter walk. The best examples in Cornwall are at Madron Holy Well near Penzance, Alsia Well near St Buryan, and Sancreed, all in West Penwith.

The Yule Mock The Mock is the traditional Cornish Yule log and has made a come-back at several festivals and in many Cornish homes in recent years. It's customary to chalk a 'man' on the log before throwing it on the fire, to symbolise the 'death' of the year gone by, and the birth of the new. The public chalking and burning of the Mock is an important and dramatic element of the revived midwinter or Montol celebrations in Penzance, as is the tradition of 'guise' or 'Geese' dancing dressed in masks and finery. Winter in the northern hemisphere has always been a time of fun and feasting, firelight and solemn ritual, as the year ends, and nature sleeps, and we wait for the rebirth of Spring. Many parts of Cornwall still preserve festivals that go back to early Christian and even pagan times.

Montol in Penzance Two days before Tom Bawcock's Eve, and just up the road in Penzance, Montol is a recently revived festival with equally old roots. This fire festival celebrates the Winter Solstice (on December 21st), and has been growing in popularity since it was brought back from obscurity just five years ago. Reflecting the 'birth' and 'death' of the sun in midwinter, Montol has become a rowdy and colourful affair, with lantern processions from different parts of Penzance converging on the ancient fortress site of Lescudjack. The 'Lord of Misrule' lights the beacon, with drumming, dancing, wild music and fire play, and then all returning to historic Chapel Street in one 'River of Fire'. It's a real visual spectacle, and great fun to get dressed up for, in old and tattered, or 'mock posh', attire.

Cloughtie Trees and Holy Wells Cloughtie wells, also known elsewhere in Britain and Ireland as cloutie or clootie wells, are 'holy' wells that in the main have had a continuous ritual significance since pre-Christian times, generally with a tree or bush nearby hung with strips or ribbons of cloth, from rags to pieces of fine or brightly coloured garment, as well as other amulets and offerings.

Tate St Ives at Christmas The Tate St Ives is a revelation any time of the year, but at Christmas the famed art gallery goes the extra mile. green tips Christmas Tree, Oh Christmas Tree. It’s the centre piece of your Christmas décor, so you don’t want to be wrestling with a misshapen horror or endlessly Hoovering up brown needles from a rapidly wilting tree. Follow these great tips from our brilliant contributor, Claire Carpenter at Sconner Wood Christmas Tree Farm. What she doesn’t know about our evergreen friends isn’t worth knowing! (www.sconnerwood.com) 1) Measure the space where your tree is to go and take the tape measure with you when you go to choose it. It is a shame to spend a long time over choosing a nice shaped tree only to discover that you have to hack pieces off it when you get home to make it fit! 2) Select your species. Do you like a scented tree? Do you need one with strong branches for heavy decorations? Do you prefer the traditional sharp needled smaller tree (Norway spruce) or the 'low-needle drop' soft needled variety (such as Nordman fir, Lodgepole pine, Noble fir)? Do you want a cut tree or one with roots on that you may be able to plant on after the season has ended? What is your budget? The low-needle drop varieties are slow growing and are so more expensive than the faster growing traditional spruce. Cut trees are usually cheaper than potted ones. 3) Check for freshness. Don't be embarrassed to ask the retailer when the tree was cut. Check there are no brown needles and that the green ones do not fall off by giving it a gentle tap on the ground. 4) Visit your retailer and choose early. Never buy a pre netted tree unless the retailer is happy to take it out of the net for you to inspect - otherwise you risk taking home a badly shaped, stale, smelly tree! 5) Visit the British Christmas Tree Growers Association (BCTGA) website for members growing in your area. The association offers advice to growers on all aspects of tree care and as result many have good quality trees for sale. Caring for your tree 1) Leave it outside in a cool sheltered place out of the sun and wind until you are ready to bring it into the house. Always take it out of the netting as soon as you get home so air can circulate around the branches and it can drop into shape. 2) Cut trees need water in the same way as a bunch of cut flowers. Keep it stored in a bucket of water outside and always use a water retaining stand inside. Check the water level regularly and top up as required. If you are able to, cut a slice off the bottom of the trunk prior to securing it in the stand. 3) Never place your tree near a source of heat such as an open fire or radiator. It will dry out very quickly and you will have needles all over the carpet!

The Padstow Christmas Festival Now in its fifth year, the festival is a pre-Christmas celebration of music and the arts and, above all, food and drink, with live cookery demonstrations and entertainment. The three-day event, which runs from Friday, December 7th to Sunday 9th takes place around the atmospheric harbourside. Along with all the festive cookery demonstrations and culinary delights there’s live music, a lantern parade and Santa’s grotto. Organisers have unveiled a line-up featuring a who’s who of Cornish food and other big name chefs. Among them are Rick Stein and his son Jack; Nathan Outlaw, the two Michelin starred chef from Restaurant Nathan Outlaw in Rock; Mitch Tonks, the award winning restaurateur, chef and food writer; Mark Sargeant, chef and owner of RockSalt in Folkestone; Cornwall’s newest Michelin star holder, Paul Ainsworth, chef patron of No 6 in Padstow; and Chris Eden from the Michelin starred Driftwood Hotel near Portscatho. A traditional Christmas market will be held on the quayside bustling with local producers and Cornish crafts. Alongside ales, meats, jams and cheeses, restaurants including Fifteen Cornwall and The Seafood Restaurant will be tempting festival goers with tasty treats and Christmas puds. Children will be able to take part in special festive workshops, including cake decorating and face painting throughout the weekend. In addition there’ll be plenty of live music including an appearance from Port Isaac’s Fisherman’s Friends, famous for their sea shanties and Cornish folk songs. The Cornish Venison Company Look out for Chris Perkins and his Cornish Venison stand at the various markets and festivals in the run up to Christmas. His wild game burgers are delicious – and very warming on a cold winter’s day. Chris knows where all his meat comes from and prepares it himself. “I work on a small scale which means I can assure provenance and quality,” he says. “'It’s sustainable wild game from field to fork. KERNOW SASHIMI What could be better on Boxing Day than a nice crab sandwich? Kernowsashimi Fishmonger is renowned nationwide for its fantastic fish. If you fancy a lovely festive glazed finish then once your gammon is cooked you should try the following recipe: Ingredients (for a 4kg gammon) 2 tbsp of good quality marmalade (we like the chunky sort as the little pieces of peel work into the fat). A dash of sherry. 1 tsp of allspice. • Place your marmalade and a dash of sherry in a sauce pan and thin it down a little over a medium heat. • Sprinkle the allspice over the joint. • Spread the sauce liberally over the gammon working it into all the gaps. • Place the glazed joint in a preheated oven at 180°C for 15-20 minutes. Dressing Finally we dress our gammon with clementine oranges, bay leaves & cloves for a proper festive flavour.

Heart-warming honey Golden honey on a grey day seems like a match made in Christmas heaven and a jar from Gwenen Apiaries certainly goes a long way to banishing winter blues. Mulled cider How about a warming tipple for the festive season. Healey’s Classic Reserve Cyder is matured in whisky barrels and makes a good base for mulled cider. Paul Ainsworth Keeping things simple, savouring beautiful, old flavours and relishing root vegetables are at the heart of the traditional Christmas roast for Cornwall’s latest Michelin-starred chef. Paul Ainsworth at Number 6 in Padstow was awarded the prestigious accolade at the end of September this year. The news took Cornwall’s tally of Michelin starred establishments to three (the other two being the two-starred Restaurant Nathan Outlaw in nearby Rock, and Chris Eden’s the Driftwood at Portscatho) and cemented Paul’s place in the county’s growing firmament of culinary superstars. In this special interview for Love Christmas he talks a lot about food, a bit about the future and shares his sure fire tip for a successful Christmas meal (here’s a hint – it involves mums).

CELEBRITY INTERVIEW You are originally from Southampton, what brought you to Cornwall? It all started when my business partner - who I rent No6 from (we both also own the freehold on my other restaurant in Padstow, Rojanos in the Square) – told me Padstow was a great place and that I should come down. He’d always loved the building at No6 so he bought it and set it up for his son to run - with me as the head chef. Things didn’t quite go to plan as it emerged his son didn’t want to be in catering anymore, so an opportunity emerged for me to go it alone. I’ve been down here seven years this November. We opened our doors on December, 10 2005 and I’ve loved every minute of the journey. As I said, setting up a business from scratch is a lot of blood, sweat and tears and a lot of heartache and lots of highs and lows. Initially the building was a B&B, but it just didn’t work, so it became a restaurant and over the years we’ve built the business up. It’s been an incredible journey and now to crown it with a Michelin star is just amazing. I don’t think I can put into words how I feel inside. Does being in Cornwall play a part in how you cook?

You’ve just been awarded a Michelin star, how are you feeling? I feel absolutely ecstatic. It’s just amazing. I put it up there with my wedding day. It’s something I’ve always wanted to achieve for Padstow and, importantly, for my team and my wife. She is an unsung heroine in all of this. She’s not only involved in the businesses but she’s behind the scenes. She keeps me sane through all the highs and lows. It’s been extremely hard because we work for ourselves and it’s a demanding business. So it’s wonderful to get the recognition. Without her and the rest of the team we would never have achieved this milestone- and it’s just brilliant. For us, for Padstow, and for Cornwall – it lets the world know there are lots of people doing good things down here. So where do you go from here? Lots of people are asking me that question, for us the most important thing is for our customers to also think we are worthy of these accolades. Michelin think we are worthy of it, but for me and my team we’ll be focused on staying consistent in what we do and just enjoying what we do. Our customers are the most important part of the equation to us and as long as they love and enjoy the food that we’re cooking that's our first and foremost priority. What do you think tipped the Michelin judges in your favour this year? I think maybe we were more consistent and I think maybe they’ve also seen that I’ve grown up as a chef. I started my first business when I was 26 years old. That’s quite a young age and I’m quite young at heart myself. I would never ever have described myself as a really mature 26 year old! Also, I think that your personality shows through. I cook from the heart and I think over the years they have seen my personality, they’ve seen me grown up and mature and home in to a style now that is me. That style is about beautiful, old flavours. We’ve simplified a lot of what we do. I like the diners to have fun and we have just tried to make it a great place to come and eat without any pretentiousness.

Yes, absolutely. When I started people said “you’re brave setting up next to Rick (Stein)”. But I think no, not really. I hold Rick in the highest regard, I think he is an absolute legend – I always say if people come down and visit his restaurant then please pop in and visit my restaurant. And that’s been our approach right from the beginning. I never moved down saying, “oh I’ve worked for Gordon Ramsay and Marcus Wareing and I’m going to do this and that,” no not at all. I moved down full of respect for Rick knowing what he’s done for Padstow. Also since then, in my seven years of living here, the local producers have gone from strength to strength and I try to showcase that on the menu the whole way through. For example the duck – we use Grampound Road duck from The Cornish Duck Company, the Porthilly Oysters, obviously all our fish from Jonny Godden, the day boat specialist, the pork belly from Warrens – we use the Cornish Saddleback. All the vegetables, Mevagissey strawberries, Cornish blackberries, we try to showcase Cornwall as best we can. Is Cornwall somewhere you spend Christmas? As both our families are from Southampton, at Christmas we have to divide our time, but I love the Padstow Christmas Festival. It is like a winter wonderland. It’s beautiful and it just keeps getting better. The organisers, like Tina Evans, put so much work into it - this year she’s pulled together a cookbook with recipes from all the local chefs and it’s selling really well. This year’s festival line-up is also looking great - we’ve got chefs like Angela Harnett coming, along with Mitch Tonks, Mark Hix, Matthew Fort to name a few. It’s absolutely brilliant. What’s your favourite Christmas meal? I like to keep it simple. I love roast dinners anyway – so to have a roast at Christmas is just that bit more special. I love Brussels sprouts, my wife cooks them with shallots, pancetta and crème fraîche and a little bit of cumin. And I also enjoy winter vegetables. Everyone always talks about the meat, but for me I just love vegetables -they play an important part in the meal for me. I’d eat a turkey, but it wouldn’t be my first choice, but something like a nice roast duck from say the Cornish Duck Company, or roast beef from Warrens in Launceston or even roast lamb. A proper cauliflower cheese with Parmesan is another favourite of mine, maybe make it a bit special with a little bit of grated truffle. Just simple things like carrots work wonders - if you get a carrot that’s been grown properly it’s one of the most delicious things in the world.

What’s your ideal Christmas morning breakfast?

Back in Southampton normally the mums do it.

Being in the chef world you get to meet some really talented cooks. One of my best friends, Tom Kerridge, once made me an omelette with lots of wild mushrooms, sautéed, not rubbery, then he put dollops of crème fraîche all over it and then grated truffle all over it. Just delicious. Now that would be my ultimate special Christmas treat breakfast.

Fantastic, you’ve won a Michelin star and yet the mums do the cooking! Yeah, you don’t mess with the mums. Mums rock when it comes to roasts. They don’t need Michelin stars to know what to do. What do you like about Cornwall around Christmas time? Cornwall has to be up there as one of the most beautiful parts of Great Britain - whether or not the sun’s shining. When the sun is shining you could be anywhere in the world. Greece, Spain, anywhere. But it’s when the sun isn’t shining that I probably love Cornwall the most. It has a rugged, mysterious quality. I go down to Constantine or Trevone Bay and I just fall in love with it. Like now, at this time of year it’s a bit moody and dark and I love it, I think it’s stunning, and when you go and look at the landscape and how it forms – there’s something very special about Cornwall. Any Cornish delicacies you’ll be putting on the Christmas table this year? I love Camel Valley wines. I just love what the guys there are doing. And we have beautiful smokeries down here. My mother always likes to start off with some smoked salmon, so somewhere like Cornish Cuisine in Penryn is a great place to go for that.

And to drink at breakfast? Mum does the Bucks Fizz thing, but I prefer a good cup of coffee. Alternatively we’ve just got some really, really lovely beers at the restaurant at the moment, so it would probably be a nice cold IPA from the small North Cornwall craft brewery, Harbour Brewing Co. That - with a nice rich truffle omelette would be my ultimate Christmas indulgence. How will you be spending Christmas this year? We will be with family and hopefully Mr and Mrs Kerridge from The Hand and Flowers in Marlow, Buckinghamshire. Tom was my sous-chef when we worked for Gary Rhodes 15 years ago and we were reunited when we did the Great British Menu together. He runs the only two Michelin star pub in the world! He’s a great guy and it will be great to be together again.

christmas kitchen One Christmas tradition that I always adhere to in our house is making the Christmas cake. Although it's not strictly traditional, nowadays I bake a lighter cake, based on an American recipe that's packed with cranberries, apricots, sour cherries and pecans. You too can create your own tradition and swap the classic fruitcake, which I find can be a little heavy, for something new. This super-simple cupcake recipe can be taken in two directions, both inspired by the classic tastes of Christmas.

The chocolate orange spice cakes echo the scents we associate with this time of year; full of rich, warm spice but with a hint of a citrusy tang. They're full of flavour, and reminiscent of the much beloved chocolate orange, or the Satsuma in the toe of the stocking. The chocolate peppermint cupcake is fresher and more frivolous, based on the candy cane - dark chocolate sponge and a creamy icing on top, both laced with a cool hit of peppermint. Depending on your level of skill, these can either be piped with butter cream on top, or simply swirled. Why not have a go at the simple candy cane fondant decorations, or let your own creativity run wild with the festive sprinkles and decorations that are currently in abundance?

Jo's christmas chocolate cupcakes - two ways! Makes 12-14 cupcakes For the Sponge Cake 6oz/175g soft butter 6oz/175g caster sugar 3 large eggs 6oz/175g self-raising flour 3 tbsp cocoa powder mixed to a paste with 3 tbsp water (or more if it’s too thick to stir) For the cake flavourings Option 1: 2 tsp peppermint extract Option 2: zest of a small orange, 1 tsp mixed spice, ½ tsp cinnamon For the buttercream topping 6oz/175g soft butter 12oz/350g icing sugar 1tbsp hot boiled water For the buttercream flavourings Option 1: 2 tsp peppermint extract (to taste) Option 2: zest of a small orange plus half the juice To decorate Red and white ready-made fondant icing Selection of sprinkles or silver balls

To make the sponge cake 1) Preheat the oven to 180˚C/350˚F/Gas Mark 4 and prepare a deep muffin tray with paper cases 2) Cream the butter and sugar together until light and fluffy - you can either use an electric mixer for this, or beat by hand with a wooden spoon. 3) Add the eggs and half of the flour (this will stop the eggs from curdling) and beat until smooth. Scrape down the sides of the bowl with a spatula to make sure all the ingredients are incorporated. 4) Add the remaining flour, the cocoa mix and the mint flavouring or orange zest and spices (depending on which you've chosen) and beat until the mixture is thoroughly combined and even in colour. Be careful not to over mix at this stage or the cakes will be firm when baked. 5) Spoon the mixture into the prepared tin until the paper cases are approximately half to two thirds filled. Depending on the size of your cases the mixture should make 12-14 cakes. 6) Bake in the oven for 15-20 minutes until the cakes are springy to the touch and an inserted skewer comes out clean. Leave in the tins to cool for 10 minutes then transfer to a wire rack. To make the Buttercream Topping & Decorate the Cakes 1) Beat together the butter, icing sugar and hot water until light and fluffy. 2) Add the mint extract or orange zest and juice and beat until you have a nice pale creamy icing. 3) Depending on your level of skill, either pipe the icing on top of the cakes or swirl with the back of a spoon. The amount of icing specified is enough to pipe all of the cakes, this could be halved if you'd prefer to swirl them (or have a less sweet tooth!) 4) Top with your chosen decorations - I've used mixed size silver balls and candy canes made from fondant icing (see instructions opposite), but festive sprinkles, chocolate orange segments or mint thin slices would work equally as well.

to make the candy cane decorations 1) Take two small pieces of red and white readymade fondant icing, both around the size of a £2 coin, and knead until soft. 2) Be careful as the red colour will transfer easily to the white if you don't keep your hands and surfaces clean. 3) Divide each ball into two and roll each piece into a long round lace shape approximately 3-5mm in diameter.

4) Join the two laces at the top by gently pinching them together, and twist so they form a rope like pattern as shown. 5) Once the sections are even, roll them together again until they form a single lace approximately 3-5mm in diameter. 6) Cut the lace into sections that are 50-60mm in length, and bend the top of each section round to form a candy cane shape.

The thatched Pandora with its pontoon on Restronguet Creek must be known to every sailor who's ever launched from Cornwall's south coast, and will be a familiar pub to most people in mid Cornwall. After a catastrophic fire in March 2011, St Austell Brewery and tenants John Milan and Steve Bellman have restored the pub to its full former glory. In fact, if anything, it may be even better than before! The ground floor is identical, with all of the original fittings spared from the fire; upstairs, where the damage was severe, restoration has been both respectful and imaginative with a stunning vaulted-ceiling dining room with exposed green oak beams and oak flooring. The Blisland Inn, Blisland The wilds of Bodmin Moor lie all around but Blisland is pretty, sedate and with a thing rare in Cornwall, a proper village green. Rashleigh Inn, Polkerris The 'inn on the beach' at Polkerris between Par and Fowey can get rather busy in summertime, but really comes into its own in winter. Close to Menabilly, this is the quintessence of Daphne du Maurier's Cornwall. A quiet, green valley leads to the pub at the head of this classic Cornish sandy cove with its encircling harbour wall, a great place for rock pooling or for watching boats and birds. BOXING DAY BEACH WALKS

Between the woods and the water Cornwall may be best known for its summer-time beach scene, but there are many hidden corners of the county that shine equally on a dramatic winter’s day. From intimate woodland and creek-side walks to lonely moorlands, from sheltered coves to the bracing windswept cliffs and beaches of the north coast, it's all out there to explore. After the excesses of Christmas Day what could be better than a Boxing Day Walk to blow out the cobwebs, and hopefully trim the waist? And what nicer than a café to hole up in for a warming hot chocolate afterwards? Here are some wonderful walks that lead to places that will be open this Boxing Day.

Boxing Day Beach and Lunch walks Pentire Point and Polzeath Pentire Point, the north easternmost part of the mouth of the Camel estuary, gives the walker great views across to Stepper Point and Padstow and out to the Atlantic, as well as back along the Camel to Rock. While not quite as spectacular as the Iron Age cliff fort of the Rumps, just around the coast to the north, it has the benefit of being an easy walk on fairly level ground to and from Polzeath, where the Galleon Beachside Café can provide hearty sustenance throughout the day. (01208 862362) Watergate Bay One of the great north coast beaches, great for surfers and a stone's throw from Newquay. It's where they host the Polo on the Beach event every autumn, and it's also home to the fabulous Beach Hut, Watergate Bay - much more than the name suggests, it's actually a sophisticated café and restaurant attached to the Watergate Bay Hotel, offering smart food year round from 8.30am, closing at dusk in the winter months. (www.watergatebay.co.uk; 01637 860877) Perranporth A familiar beach to thousands of holidaymakers and anyone from mid Cornwall, Perran Sands comes into its own on a bright winter's day at low tide, when a walk along its three miles of sand, backed by dunes and caves, can seem like a real adventure. Gyllyngvase/Swanpool A sedate and gentle south coast walk that has a café to stop in at either end can be enjoyed starting at either Gyllyngvase Beach in Falmouth or at Swanpool, just a little westwards along the coast past Swanpool Point. There are good views of Pendennis Point, and both beaches are a good vantage point for watching shipping out in Falmouth Bay. Down on the Lizard, the fantastic Polpeor Café at Lizard Point enjoys some of the best coastal views of any café in Britain. This small traditional outfit produces great, wholesome breakfasts and lunches that draw walkers from miles around. This one-day festival is held in honour of local resident ,Tom Bawcock, who fished in the teeth of a storm and brought home a catch that lifted a famine in the village.
