CNS-SCN ANNUAL MEETING
Welcome to Guelph!
Education on the Guelph campus has a long tradition, beginning over one hundred years ago when the Ontario government purchased a five hundred acre farm from Frederick William Stone for its new School of Agriculture. In this promising location, the Ontario School of Agriculture opened its doors on May 1, 1874. On May 8, 1964 the University of Guelph Act was passed by the Ontario legislature, bringing these three full-fledged colleges together as a single institution. In October 1964, the Senate of the University of Guelph created Wellington College which offered degree programs in arts and sciences. Five years later, the college's three departments were divided into three new colleges: the College of Arts, the College of Physical Science and the College Social Science. The Macdonald Institute formally became the College of Family and Consumer Studies at this time as well. Guelph is considered one of the first planned towns in Canada and was chosen as the headquarters of a British development firm known as the "Canada Company". The location was picked by the Company's Superintendent in Canada, a popular Scottish novelist named John Galt. Galt chose the name "Guelph" for the new town because it was one of the family names of the British royal family, and it had apparently never been used as a place name before. Guelph has a population of approximately 114,943.
Climate:
The weather and climate of Guelph is moderate in both summer and winter with no considerable extremes in either temperature or the type of weather that might be associated with locations that are in close proximity to a landmass such as a body of water or a mountain range. Summers are warm with an average temperature of 23ยบC/73ยบF (high) and 12ยบC/54ยบF (low).
Time Zone:
Guelph is in the Eastern Time Zone, 3 hours ahead of Pacific Time, 2 hours ahead of Mountain Time, 1 hour ahead of Central Time, and 1 hour behind Atlantic Time.

Dr. Ming Fan, PhD University of Guelph Guelph, ON This mini-symposium will be featured with a keynote speech by Dr. Thomas Wolever from the University of Toronto to update on recent understanding of how exogenous and intrinsic sources of dietary fibre influence in vivo starch digestion and absorption and health parameters such as glycaemic index, systemic inflammatory responses and oxidative stress status with implications for the nutritional prevention/management of type-II diabetes and cardiovascular disease. CONCURRENT SESSION: 7 CNS/CCFN Symposium: Consumers & Sodium - A Shake-Down For Change CHAIR:
Ms. Francy Pillo-Blocka, RD, FDC The Canadian Council of Food and Nutrition (CCFN) Mississauga, ON It is well documented that Canadians eat too much sodium. The Sodium Reduction Strategy released in July 2010 is an excellent starting point to promote positive change on this public health issue. The comprehensive Strategy outlined three main areas of focus - food supply, consumer and research. The food industry needs to act on lowering sodium in foods; consumers need to make better choices and retrain their palate while we study all aspects of this issue over time. This session will highlight evidence to get consumers started in making positive changes in their diets to reduce sodium and eat better. This will address where consumers are on this issue and highlight opportunities to get them to make better choices more often.
SPEAKERS: • Behind Closed Doors - A Glimpse of What Consumers are Doing Using data from the CCFN unique Ethnographic Survey to complement Tracking Nutrition Trends 20 Year History Report, the speaker will reveal home-based food and eating habits of consumers, their impressions of food labels and the emergence of convenience as an important factor on food choice. CONCURRENT SESSION: 8 Nutrition Therapy in the ICU: The Clock is Ticking CHAIR:
Ms. Rupinder Dhaliwal, RD Kingston General Hospital Kingston, ON This program will provide a comprehensive review of importance of nutrition therapy in the ICU and how the provision of the right nutrient at the right time and in the right dose can affect outcomes in the critically ill patient. The underlying pathophysiology of critical illness and the effect of feeding the hypotensive patient will be discussed. The challenges associated with implementing these ‘best practices’ will be highlighted. Baseline results from an ongoing quality improvement project will be presented, identifying some of the gaps between guideline recommendations and current nutrition practices and the main barriers practitioners face in providing enteral nutrition to critically ill patients. Potential strategies to optimize nutrition practices will be proposed. Lastly, a novel method for quantifying risk of adverse outcomes that may be modified by nutrition therapy in the critical care setting will be discussed.

Imbalances in methy nutrients caused by both deficiency and excess has been implicated in the etiology of several health conditions including birth defects, cardiovascular disease and cancer. This symposium is designed to advance our knowledge of current research related to methyl nutrients in health and disease.
