In fact, the Maggie Valley Sanitary District was awarded the “Best Tasting Water of North Carolina” in 2023.

Cataloochee Pizza Dough
Makes 6
Ambitious home bakers can take on Cataloochee Ranch’s delectable pizza dough recipe, created by Chef Jeb Aldrich! A baking scale will be useful for this recipe.
First, you will make what’s called the “biga.” This is a portion of pre-ferment dough that will be incorporated into the larger batch of dough, making your pizza lighter and fluffier!
• 750 grams (3 cups + 2 ¾ tbsp) of Caputo Blue Pizza Flour.
• 538 grams (2 ¼ cups) of water.
• 2.75 grams (½ tsp) of instant yeast.
Additional Ingredients
• 250 grams (1 cup) of Caputo Blue Pizza Flour
• 1.5 grams of instant yeast.
• 125 grams + 100 grams ice cold water, divided.
• 30 grams (1tbsp) kosher salt.
Directions
1) In a mixing bowl, dissolve the yeast in water. Add flour to mixer on “stir” setting and mix with the yeast and water until the Biga is formed. Seal and refrigerate overnight.
2) On the 2nd day, dissolve an additional 1.5 grams yeast into 125 grams of ice cold water.
a) Add Biga and incorporate well, then add an additional 250g of Caputo pizza flour.
b) Dissolve 30g kosher salt in 100g of water and add to mixture.
3) Mix well on medium speed (or speed 2). Portion into dough balls weighing about 284 grams each.
a) Coat your dough bin with extra virgin olive oil and sprinkle with semolina to lightly cover the surface. Proof the dough overnight in refrigerator or for at least 4 hours before baking.
4) Roll out your dough balls to desired thickness and bake until golden in a highheat oven (at least 500º F).
5) Spice things up with some unique toppings: Cataloochee Ranch is famed for their sauteed ramps pizza. Visit Haywood’s local farm stands & farmers markets to try out some ramps for yourself!
