rom a young age, Julia's passion was always about making things beautiful—whether it be through art, hair, or makeup. At 21 years old, living in an old farmhouse in a hamlet in Southern Ontario, Canada, it hasn't stopped her from chasing her big dreams.

Julia graduated at the top of her class from the award winning College of Makeup, Art & Design. Having done so, she is a certified makeup artist skilled in all areas; fashion, theatre, SFX, prosthetics and creature design. Since graduating Julia has progressively challenged herself every day. Starting out at the bottom, and slowly working her way up. She volunteered for different films, where she would sometimes commute four hours per day, for little to no money. Nonetheless, Julia's passion for the craft never stopped her from chasing her dreams. Shortly after graduating, Julia began to set up 'creative editorial shoots', where the photographer, model and makeup artist collaborate. Julia did these weekly to build up her portfolio and master different makeup looks. She decided to start her own YouTube channel and Instagram page @juliadantasbeauty to show off all of the mad skills she'd spent hours perfecting. Julia has always wanted to help people look and feel amazing. Knowing that with a few little tricks, makeup can transform your entire look, and in truth, the way
you feel. As people started to recognize her work, she started getting busier and busier. Her latest project was being a contestant on Kim Kardashian West’s TV show Glam Masters, where she went on to the final episode. She created wicked looks in under an hour, all while being filmed by a major Los Angeles film crew and having her work put under a magnifying glass by some of the biggest names in the makeup world. She has been posted on Kim Kardashian’s Instagram, as well as KKW Beauty, Pure Cosmetics, Tarte Cosmetics, Smashbox, Glamglow, MDNA SKIN (Madonna’s skin care line) and dozens more. Julia was recently featured in the July edition of Marie Claire, becoming the youngest makeup artist to ever be featured in the magazine. Apart from her social media presence, Julia creates content for various companies. Her ongoing partnership with CBC Life, consists of creating YouTube videos for their social media accounts. These videos reach thousands, sometimes even hundreds of thousands of views. Recently, she was a model herself for Glam Masters judge, A-list celebrity makeup artist (to Kim Kardashian West among others) and king of makeup, Mario Dedivanovic @makeupbymario. Julia strongly believes that if you work hard and believe in yourself, anything is possible. Never give up on what you believe. The power of the mind is a fantastic thing! A
s a child, waking up on a Sunday morning to the sweet smell of rice slowly cooking in milk and sugar meant we were having guests for lunch. It also meant that once the rice was ready to be plated, my mother would fill two bowls for my sister and I, pinch cinnamon between her fingers and proceed to crookedly write our names on each bowl. My sister would take her bowl and immediately indulge in her warm sweet breakfast. Since I have always preferred my arroz doce to be cold, I would place my bowl in the refrigerator and begin the nearly unbearable wait for it to firm up and cool down—occasionally opening the door to check on the progress by stealing a spoonful. Arroz Doce (rice pudding or sweet rice) is a recipe that has been handed down from mother to daughter throughout Portuguese families for hundreds of years, with very few alterations.

This version was brought to Canada 45 years ago from the Minho region of Portugal via France and currently resides in the kitchen of Rosa Dantas. Rosa grew up poor in rural Portugal at a time when school was not mandatory for girls. They would stay home and tend to livestock, help around the house and of course, cook. During Christmas and Easter celebrations Arroz Doce was cooked up as a special treat for the family. Today, Rosa has four children and eight grandchildren, who all sit around the table at Christmas laughing and wondering why she has prepared so much food, before proceeding to scarf down as many of the homemade delicacies as possible. Each year, the empty platter reinforces Arroz Doce as the fan favourite, and of course makes Rosa smile with satisfaction.

SERVES 10-12
Arroz Doce 3 cups of water
Bring water, lemon rind and salt to a boil.
1 tsp of salt
Add rice and bring it back to a boil.
1 lemon (peel only) Avoid as much of the white pith as possible
Reduce to a simmer for about 10 minutes, until the water is absorbed.
2 cups of white rice 3 cups of hot milk 2 cups of sugar 4 egg yolks (whisked)
While stirring, slowly add hot milk. Let the rice cook for 25-30 minutes. Stir frequently and keep the heat low to prevent the rice from burning at the bottom of the pan. Add sugar and stir. Pour egg yolks into the pot through a strainer and stir well. Stir in the butter. Remove pot from heat and let it rest for 10 minutes. Ladle the rice into dish(es). Sprinkle cinnamon in a design of your choice and enjoy.

Craft beers When I accepted the challenge of reviewing craft beer for Luso Life, I knew the task had to be taken very seriously. Canadians love their beer – it’s a fact. The cold climate of the Great White North made this a perfect environment for the European settlers to start brewing in the 17th century – no refrigeration, no problem. After the first commercial brewery opened in 1786, the floodgates opened and we Canadians have been enjoying suds ever since. With over 250 craft breweries in Ontario alone, I had a huge selection challenge ahead of me. I started by carefully choosing eight local beers which I thought would be exciting and different. From hops to wheat to hemp, IPAs to organic, with the occa-
sional splash of citrus – I decided we needed to represent a wide spectrum. Next I put a plan into action – 1. purchase beer, 2. bring beer home, 3. taste beer, 4. write my report…about beer. Then an old Czech Proverb came to mind: “A fine beer may be judged with only one sip, but it’s better to be thoroughly sure” It was time to readjust the plan, and bring in reinforcements. This new and improved plan involved a group of beer lovers and a designated driver. We sat, we drank and shared our thoughts as I took notes. The evening was a delicious success and we now have eight new favourites which I am delighted to share with you. Saúde e viva! LUSO LIFE

Big Rock Brewery originally started near Calgary, Alberta, Canada in 1985. It is now recognized as a local Ontario Craft Brewery as they have set up a Brewery in Etobicoke and a Brew Pub in Liberty Village. Grasshopper is their signature beer which can be enjoyed all year round. This German Kristalweizen (type of Wheat Ale) has citrussy notes with a crisp, clean finish and depending on your palate you may taste banana. Other noteable Kristalweizen's include: Paulaner, Hacker Pschorr, Weihenstephaner, and Schofferhofer.
This year round Nut Brown Ale is appropriate for fall beer lovers as it has several exciting flavours including hints of chocolate and mocha. It is smooth and dark in colour. Although it looks like a heavy tasting dark beer when poured, due to it;s lower IBU content, it is lighter in taste. Other noteable or similar Nut Brown Ale's include: Amsterdam Downtown Brown Ale, Newcastle Brown Ale, Wellington County Ale.

Flying Monkeys has become one of the most popular choices in Ontario Craft Beer over these past few years. Each beer has their own unique style and creative weird ("Normal is Weird") packaging. The Juicy Ass IPA is not overbearing with hoppiness as it has very citrussy tones. Pine, tangerine and passion fruit seem apparent in taste. It is a clear in colour with a small amount of beer sediment. Other noteable or similar types of Juicy IPA's include: Discover New England Style IPA's, Sour Beers and West Coast IPAs.
Great Lakes Brewery has been a Craft Brewer for over 30 years now. Located just off of the QEW in Etobicoke, Pompous Ass has become a popular English Pale Ale not only due to it's catchy name but because it is a well rounded beer. It is not too bitter, smooth and has a dry finish. Although English Pale Ale's are very popular during the fall and winter, because of it's lower ABV and IBU, it can be enjoyed all year round. Other noteable or similar Pale Ale's include: Old Speckled Hen, Granville Pale Ale and Big Rock Traditional Ale.

This is the only Hemp based lager in Ontario since 2003 and with the recent legalization of cannabis in Canada you can say that there will be an extra buzz behind this amber lager. Although this beer is made with hemp, it is overbearing or leaves a strong after taste. It has a light taste and with it's amber colour has hints of caramel. It is available through 355ml cans and 4 pack bottles at The Beer Store, LCBO, and grocery store. Other noteable or similar types of Amber Lagers include: Amsterdam Big Wheel Amber, Cameron's Red Bear Amber Ale, Keith's Red Amber Ale and Creemore Lager.
Recently Mill Street have announced that all of their beers are now certified organic. This means all of their Malt, Barley and Wheat ingredients in their beers are organic. This is a big commitment from a brewery which now has brew pubs available from coast to coast. This smooth, creamy, dark beer appears heavy but it is lighter in taste. Other noteable Stouts or Nitro Stouts include: Guiness Draught Stout, Belhaven Scottish Stout, Broadhead Dark Stout, Dragon Stout, Milk Stouts and Oatmeal Stouts.

This Harvest Ale is seasonal and available throughout the fall. Harvest Ale appears in a clear, amber color. Although this Ale has a higher content, it is a smooth, malty ale. There are reminiscents of mango and grapefruit, but appears unfiltered as there is no sediment. Other noteable Ale's include: Collective Arts Rhyme & Reason, Collingwood Downhill Pale Ale and Amsterdam Cruiser All Day Pale Ale.
As Steam Whistle Brewery continues to do "one thing really well" (brew just one beer, Pilsner), in 2018 came the arrival of Von Bugle Brewery, a new brewery created by the founders of Steam Whistle. This Munich Lager is described as a "sessionable dark beer" with hints of caramel and is more of an all year round beer and not so much fall specific. It is a 5% beer which tastes lighter as it is not heavy despite it's darker colour. It is currently only available at specific bars and restaurants and at the brewery on draught and for sale in cans. KubeBath surgiu em Toronto em 2008 e dedica-se em exclusivo à venda de móveis, armários e equipamento de casa de banho. Miguel Braga é o jovem empresário que está por detrás desta marca que promete continuar a revolucionar o conceito de casa de banho. A empresa está presente na América do Norte, do Sul e na Europa e tem um volume de facturação anual na ordem dos $25,000,000. Luso Life: Como é que surgiu esta empresa? Miguel Braga: Foi um bocadinho por acidente. Quando conclui arquitetura fui trabalhar para uma empresa de construção e devido à minha formação criava mobiliário de cozinha. Um dia o meu ex-sócio mostrou-me uma revista com os apartamentos mais modernos do mundo. Depois fizemos estudos de mercado e começámos a desenhar algumas peças para a casa de banho. LL: Quem é que faz o design? MB: Normalmente sou eu, sobretudo mobiliário e equipamento de chuveiro. Em relação às banheiras só faço estudos de mercado para perceber quais são as últimas tendências em matéria de cores. Os produtos têm de ser atraentes, práticos e fáceis de armazenar. O nosso design é inspirado no estilo europeu. Os nossos materiais são

diferentes e à prova de água. Temos lavatórios em acrílico, integrados nos móveis que são muito fáceis de limpar. Temos equipamento para duche feitos em solid brass, um material que nunca enferruja e que tem garantia vitalícia. Não há nada parecido no mercado, a única concorrência que temos é italiana, mas os nossos preços são muito mais acessíveis.

LL: Para onde é que exportam? MB: EUA, Canadá e recentemente América do Sul. Também temos alguns clientes na Europa, mas vendemos sobretudo para os EUA. Apesar de termos começado só em 2016, os americanos têm muito poder de compra. Temos quase 1000 produtos em catálogo e a nossa equipa faz os possíveis para que estejam sempre disponíveis em stock. Entregamos o produto ao cliente em 48 horas, neta área a maioria das empresas demora duas semanas. LL: Portugal pode ser a porta de entrada na Europa? MB: A Holanda seria mais fácil por questões de transporte e de impostos. Mas Portugal também é uma hipótese a considerar porque o transporte é mais barato. Visitei muito Portugal nos últimos anos e o país cresceu muito. Os prédios urbanos que estavam abandonados foram restaurados e os nossos produtos são muito contemporâneos e encaixam bem com estes projetos. Além do mais penso que a qualida-
LL: Já foram convidados para entrar no retalho? MB: Nós não somos muito agressivos nas vendas porque os nossos produtos vendem rápido. Recebemos propostas do Home Depot, do Lowe’s e do Rona, mas não aceitámos porque queremos que continue a ser um produto de boutique store. LL: Como é que podemos comprar estes produtos? MB: Através do nosso website kubebath.com. Na secção find a dealer basta escreverem o vosso código postal e têm acesso à lista de lojas onde podem comprar os nossos produtos. LL: Quais são os objetivos a médio e longo prazo? MB: Quero expandir para o América do Sul e para a Europa. Em breve vamos fazer estudos de mercado em Portugal e depois logo se vê! LL: Se tivesse filhos gostava que a empresa continuasse na família? MB: Quando vou a uma loja gosto de sair de lá com um novo cliente, nem é pelo dinheiro, é pelo gozo. Se tivesse um filho ele ia andar sempre comigo e ia ensiná-lo logo a fazer vendas (risos). Mas como ando sempre a viajar ainda é cedo para pensar nisso. LUSO LIFE

LL: Qual foi a melhor venda que fez até hoje? MB: Era um sábado e a loja estava completamente cheia. Tinha de falar para 20 pessoas ao mesmo tempo e nesse dia batemos um recorde de vendas que se manteve durante dois anos e meio. O segredo de uma boa venda é não pressionar o futuro cliente. Durante os primeiros 5 minutos temos de quebrar o gelo, sobretudo se for um cliente novo, e só depois é que falamos dos benefícios dos nossos produtos. LL: Na escola vendia pulseiras e jeans. Como é que isso funcionava? MB: Primeiro dava as pulseiras para criar uma tendência e depois começava a vender. E com os jeans era igual, primeiro começava a usá-los e depois se os meus colegas gostassem dizia que tinha mais para venda. Tudo sem pressões (risos). LL: Quem é o Miguel Braga? MB: É um workaholic que não consegue ter férias, nem que vá para uma ilha o computador está sempre comigo. Quando acordo faço sempre café ou chá e depois começo a trabalhar. Gosto de viajar e de ajudar pessoas. Sou amigo de toda a gente, não falo nem gosto de ouvir falar mal de ninguém. Sou fanático por carros, gosto de ver um bom jogo e adoro grandes almoços com os amigos. LL: É vaidoso? MB: Bastante. Tenho amigos ligados ao mundo da moda e gosto de personalizar as minhas roupas. Sempre que compro roupa nova faço alterações, gosto de combinar as cores e também adoro sapatos.

Tenho uma grande coleção de sapatos de todas as cores. Já tive uma loja de roupa em Toronto e um dia espero conseguir criar a minha própria marca de roupa. LL: É um homem do Norte? MB: Acho que na minha personalidade não há muito de homem do Norte, mas reconheço que sou agressivo nos negócios e gosto de comer bem. LL: Porquê o Canadá? MB: Vim visitar a minha mãe e quando cheguei detestei logo porque estava muito frio (risos). Mas depois pensei no futuro. Na altura tinha um restaurante em Portugal e estava cansado de trabalhar à noite. Adoro Toronto, é uma cidade segura, limpa e muito multicultural. E aqui não é como nos EUA, lá está tudo segregado. E também tenho cá a minha mãe, por isso metade do meu coração está no Canadá. LL: O Miguel é português e a sua esposa é chinesa, quem é que cozinha lá em casa? MB: Dividimos (risos). Às quartas-feiras é chinês e durante a semana vamos alternando entre restaurantes portugueses. Ela adora leitão, alguns tipos de peixe e arroz de grelos. LL: Qual é o seu prato preferido? MB: Não tenho um, tenho vários. Arroz de cabidela, cozido à portuguesa, arroz de pato e cobra. Na China os restaurantes não têm menus, os cobras e os peixes estão vivos em cestos e nós escolhemos como queremos prepará-los.

gir, stage name for Bernando Correia Ribeiro de Carvalho Costa, is a Portuguese singer, songwriter and producer, born on March 18th, 1988 who has been writing songs since the age of 12. Agir inherited a passion for arts from his parents, singer Paulo de Carvalho and actress Helena Isabel. He chose to follow his father and let music take control of his life. Luso Life: How do you see yourself? Musician? Agir: Yes, I believe musician is the right word. Anyone who knows me knows that I can’t stop. I can’t stay still for too long, so I had to do something else – that’s why I always try to involve myself with the music video process or even in my own career management. I think I’m very fortunate to be able to do what I love – when we do what we like, we get excited, we fall in love, we want to do more. LL: Was there a time when you questioned if this is exactly what you wanted to do? Or you have you always been this determined? Agir: No, not at all. My mom always told me, if the music didn’t work out, I would have to go look for a job. That’s why I tattooed myself from head to toe, so that couldn’t be a possibility (laughs). No, honestly music always was my thing and I was very lucky because it ended up working out. I don’t know what I would do if I wasn’t a singer, but I would probably be in this industry somehow – as a songwriter or as a manager…I would be connected to music, that’s for sure. LL: Which area of music do you feel it fits you best? 52

Agir: I feel I’m good whatever area I’m in. I really, really like to do live shows, but if you tell me to choose just one thing, I would say studio. I really like to produce. The creative process is truly what I like to do the most.

LL: You always play to huge audiences and after your shows, you’ll hang out with the autograph seekers till the wee hours of the morning. This is one of your outstanding characteristics. Do you think this respect you have for people adds to your legion of fans who seem to follow you everywhere? Agir: I think so. As I said, creating in the studio gives me more joy, but then I like to see if what it did works or not – from there, the songs are no longer just mine. They become ours. And it's these people that get me to go to various places - that can take me to Canada… who knows. So, I think it's the least I can do - when I have the opportunity, to be a with the fans for a little bit. LL: Do you think your music needs to be internationalized? Agir: It's a goal. It's something I would like to happen. But it's also not something that’s pressuring me. I think it will happen naturally and I believe that's the way it has to be. I do not know if it will be as a singer or producer, but we are already doing things outside of Portugal. Let's see what happens, without too much pressure. LL: Recently you released some ballads – "Até ao fim" with Diogo Piçarra, and "Minha Flor" dedicated to your wife. These songs are almost at the opposite spectrum of "Falas Demais", in
Agir: Yes. Revolt will not be the term, but yes. There's a very cultural thing about hip-hop that's called egotripping, which basically consists of putting words, puns and funny things a bit more aggressive – it does not mean that I'm at home and that whatever I’m talking about on these songs makes me lose sleep, because it doesn’t. But I feel very coherent. If we listen to my first album, which is from 2010, if we listen to the mixtape I made next, then in 2015 the album "Leva-me a Sério" and now my 2018 album, "No Fame” - everything is in there. There are songs like "Falas Demais", there are ballads, there are songs like "Tempo é Dinheiro" - I don’t feel I have a different posture, I always made a lot different things in music, there are simply songs that I choose for singles and some I don’t. LL: Because your father was very famous in Portugal, a lot of people would refer to you as “Paulo do Carvalho’s son” – do you think today things are different and you’re more “Agir, who happens to be Paulo de Carvalho’s son”? What’s the reality now? You’re even producing his albums. Agir: I believe that, independently of being father or son, we both like music. We recognize each other’s abilities and we want to work together. The fact that we are father and son makes things interesting. I think that if my dad didn’t recognize my capacity to work with him, he wouldn’t just because I’m his son – I like to believe it is like this. I think you can see the results… I’m biased but I believe it was a happy combination.

Luso Life: Como é que te consideras, acima de tudo? Músico? Agir: Sim, acho que músico é a designação certa. Quem me conhece sabe que eu tenho bicho carpinteiro, não consigo estar quieto muito tempo, tinha que fazer mais qualquer coisa – tanto que tento sempre ter uma palavra a dizer na parte do vídeo, como até na gestão da carreira, não consigo mesmo estar quieto. Acho que é uma sorte poder fazer aquilo que gosto – porque e nós quando fazemos aquilo que gostamos, empolgamo-nos, apaixonamo-nos, queremos fazer mais. LL: Consideras-te, portanto, uma pessoa de ação, tens que estar sempre ativo – mas houve alguma altura da tua vida em que te questionaste se era mesmo isto que querias? Ou tiveste sempre esta determinação? Agir: Não, de todo. Inclusive a minha mãe sempre me disse que, se a música não desse, eu tinha que encontrar trabalho e por isso tatuei-me da cabeça aos pés, para não haver o mínimo perigo disso acontecer. (risos) Realmente, sempre foi música, música, música e tive a sorte de, mais tarde ou mais cedo, resultar. Não sei o que faria se não fosse cantor, mas estaria certamente ligado à música – ou a compor, ou dedicado ao management... de alguma forma eu estaria ligado à música, de certeza.
LL: Em que área te sentes mais tu? Agir: Sinto-me sempre eu em qualquer lado onde esteja. Eu gosto muito, muito, de atuar ao vivo, mas se me dessem a escolher só uma coisa, eu sou “bicho de estúdio”, sou um bocadinho rato de laboratório. Gosto mesmo de produzir. O processo de criar realmente é a parte que eu mais gosto. LL: Arrastas sempre multidões. E uma das características que tens é que, se houver pessoas a pedirem autógrafos até de manhã, tu ficas. É esse respeito pelo público que faz com que, também, tenhas tantos fãs atrás de ti sempre? Agir: Eu penso que sim. Como disse, a parte do estúdio é a que me dá mais gozo, mas depois gosto de perceber o que é que resulta, o que é que não resulta – a partir daí as músicas deixam de ser só minhas e passam a ser também de uma data de pessoas. E são essas pessoas que fazem com que eu vá a vários sítios – que me pode levar ao Canadá, quem sabe. Por isso eu acho que é o mínimo que posso fazer – quando tenho oportunidade, estar um bocadinho com eles. LL: Falta internacionalizar a música do Agir ainda? Agir: É um objetivo. É algo que eu gostava. Mas também não é algo que me faça sentir pressionado. Acho que acontecerá naturalmente e acho que é assim que tem que ser. Não sei se será como cantor ou produtor, mas já nos estamos a virar para coisas fora de Portugal, de facto. Vamos ver o que acontece, sem grande pressão. LL: Muito recentemente fizeste uma série de temas muito dedicados ao amor. “Até ao fim” com Diogo Piçarra, a “Minha flor” dedicada à tua mulher. Esses temas estão quase num polo oposto do “Falas Demais”, em que estás com uma mensagem quase de
revolta com determinada postura que existe nas redes sociais, principalmente. Agir: Sim. Revolta não será o termo, mas sim. Existe uma coisa muito cultural no hip-hop que é aquilo que se chama egotripping, que consiste basicamente em pormos em palavras e com trocadilhos engraçados coisas um bocadinho mais agressivas – não quer dizer que eu esteja em casa e que aquilo que eu estou ali a falar me tirem do sono, porque não tiram. Mas eu sinto-me muito coerente. Se ouvirmos o meu primeiro álbum, que é de 2010, se ouvirmos o mixtape que fiz a seguir, entretanto, em 2015 o álbum “Leva-me a sério” e agora este último “No Fame” - tem lá de tudo. Tem músicas do género da “Falas demais”, tem baladas, tem músicas como o “Tempo é dinheiro” – eu não me sinto com uma postura diferente, eu sempre gostei de fazer muita coisa, simplesmente há temas que escolho para singles e outros não. LL: Hoje já és filho de Paulo de Carvalho, no sentido em que és mais Agir, que por sinal é filho de Paulo de Carvalho, do que eras há uns anos atrás? Há uns anos atrás o Paulo de Carvalho tinha um filho que até cantava umas músicas, era um bocado isso não era? Como é que se está a dar esse processo, em que tu agora até produzes discos do teu pai? Agir: Eu acho que, independentemente de pai ou filho, nós gostamos os dois de música. Se reconhecemos competência um no outro, queremos trabalhar juntos. O facto de ser pai e filho torna as coisas mais engraçadas. Eu acho mesmo que se o meu pai não me reconhecesse competência para trabalhar com ele, eu não trabalharia só porque sou filho dele – gosto de acreditar que é assim. E o resultado acho que está à vista... Eu sou suspeito, mas acho que foi uma junção feliz.

eu Jorge is a musician from head to toe. Singer, composer, instrumentalist, producer and even an actor. He has a brilliant international career with a legion of adoring fans from all over the world, and is one of the few Brazilian artists to have had a major impact on the music industry. Soul and Samba are the rhythms which drives Jorge Mário da Silva. Life started hard for the Rio de Janeiro native. At the age of ten he got his first job, the first of many including a two-year stint in the Brazilian Army, where he became bugler - music was always present. Nothing could darken this passion. The Samba rhythms flowed through his family’s veins. To Jorge Mário, music was his refuge.

Toronto was delighted to receive this phenomenon of Brazilian music this past summer. The MDC Media Group team had the opportunity to talk with Seu Jorge, who made a point of leaving a very special message to the whole community: "I want to give a big hug to the entire Portuguese-speaking community, and thank you very much for your support and care. I know that you’ve promoted, not only my work, but Brazilian music in general, and its culture. Thank you. I wish you much perseverance in the dream, keep persisting. It is extremely important to follow our intuitions and our dreams. Work hard, with love in your heart.”
After the death of one of his three brothers, a series of complications left 19-year-old Seu Jorge homeless. The homeless life was his reality for the next three years. Everything changed when clarinetist Paulo Moura invited Seu Jorge to audition for a musical. He passed with distinction, and went on to participate in over than 20 shows with the University of Rio de Janeiro’s Theatre troupe as singer and actor. He later formed the band Farofa Carioca, which released their first CD in 1998 – a mix of black rhythms from various parts of the world, such as samba, reggae, jongo, funk and rap. From there Seu Jorge saw his career taking off, and began to take on more diverse projects, such as a tribute album to Tim Maia and a tour with the Brazilian band Planet Hemp. He has recorded more than a dozen solo albums, and collaborated with many artists on musical projects in Brazil and abroad. Film and television are also part of his portfolio with appearances in Cidade de Deus (City of God, 2002), The Life Aquatic with Steve Zissou (2004), The Escapist (2008), The Elite Squad 2 (2010), E Ai Comeu ? Natural do Rio de Janeiro, Jorge Mário da Silva, faz do Soul e do Samba os compassos da sua vida. Com dez anos de idade começou a trabalhar – teve uma infância dura, lutadora. Inúmeras foram as suas profissões, chegou a servir o Exército Brasileiro durante dois anos, onde frequentou o curso de corneteiro - a música sempre presente. Nada ofuscava essa paixão. Tudo muda quando o clarinetista Paulo Moura convidou-o a fazer um teste para um musical. Passou com distinção, ao ponto de participar em mais de 20 espetáculos com o Teatro da Universidade do Rio de Janeiro como cantor e ator. Mais tarde formou a banda Farofa Carioca, que lançou o seu primeiro CD em 1998 com uma competente de mistura de ritmos negros de várias partes do mundo, como samba, reggae, jongo, funk e rap. A partir daí Seu Jorge viu a sua carreira engrenada e passou a participar nos mais variados projetos, como um disco de tributo a Tim Maia e na turné da banda brasileira Planet Hemp, em 2000. Já gravou mais de uma dezena de discos a solo, com participações em tantos outros projetos musicais no Brasil e no estrangeiro. Cinema e televisão também fazem parte do portfólio Cidade de Deus, The Life Aquatic, Tropa de Elite 2, The Escapist, E Ai Comeu?, entre outros.

Toronto native Andrew Coimbra’s designs have taken the fashion world by storm. His self-titled brand, Andrew Coimbra, was established 2015, designing lifestyle and ready-to-wear menswear. It has since expanded to include women fashions. The brand was recognized at Toronto Men’s Fashion Week and was one of five finalists in the Emerging New Labels competition. In 2017, the label was a finalist in the TFI New Labels Competition and in April 2018, Andrew was nominated for the Swarovski Award for Emerging Talent in Design at the 2018 Canadian Arts and Fashion Awards. After dedicating most of his life to working in the financial sector, Carlos Leitão entered politics in 2014 and was elected MP in the for the riding of Robert-Baldwin in Quebec and appointed Minister of Finance for the province. Born in Peniche, Portugal he moved to Canada in 1975 with his family at age 17. He went on to attain a Bachelor’s degree in economic sciences from McGill University. He has over 30 years of experience in Canadian banking and financial services including working for Laurentian Bank Securities as the Chief Economist in 2003 and being appointed to the Risk Management Committee in 2006. He continues to be a member of the Bank of Canada’s Quebec Panel since 2007. Charles Sousa is a former politician who served as the Ontario Minister of Finance from 2013 to 2018. Before politics, Sousa worked at RBC Financial Group for more than 20 years in commercial banking and he owned and operated a financing company supporting small businesses. He has served as a member of the Canadian Chamber of Commerce, the Toronto Board of Trade, and as a director of the American Chamber of Commerce. Charles’ commitment to community service earned him the Queen’s Golden Jubilee Medal in 2003 and the Queen’s Diamond Jubilee Medal in 2012. Young, passionate and driven, Chiara Picão is a teenager who climbs physical mountains to represent her metaphorically climbing mountains of injustice, specifically, to support equal access to education for girls around the world. She started her “Literally Climbing Mountains for Girls Education” campaign after a sequence of fateful events when she was 12 – an inspiring experience at WE Day, the shooting of female education advocate Malala Yousafzai and a trip to Pico Island, Portugal. At 16, Chiara with her father, Joe Picão has conquered three of the world’s highest peaks – Mount Kilimanjaro, Mount Elbrus and Ponta do Pico and has raised over $17,000 to donate to two girls’ schools in rural Kenya. She will continue to fight for equality, fight to create a better world and continue to conquer the largest mountains for those who cannot fight. Jovem, apaixonada e motivada, Chiara Picão é uma adolescente que sobe montanhas como forma de representar a sua escalada metafórica das “montanhas da injustiça” - especificamente para apoiar a igualdade de acesso à educação para meninas no mundo inteiro. Jack Prazeres was born in Portugal and immigrated to Canada at the age of 12. He is now married with two children residing in Streetsville. He has been in the masonry business since the 1980s and has been the owner/president of Senso Group since 2011. Alongside being a respected businessman, Prazeres finds it extremely important to be connected to the Portuguese community. He has served as chair of the Carassauga cultural festival and president of the Portuguese Cultural Centre of Mississauga. He is the founder and executive board member of the Luso Canadian Charitable Society and is extremely involved with community organizations such as Portuguese Support Services for Quality Living. He has received numerous awards for his continuous community involvement and leadership including the Commendation of the Order of Merit of Portugal. Jerry Dias is a Canadian trade unionist who was elected the first president of the Unifor union, a merger between the Canadian Auto Workers and the Communications, Energy and Paperworkers Union of Canada. This private-sector union represents about 300,000 workers in almost every sector of the economy from manufacturing and mining to forestry and fishing. Dias worked at de Havilland’s facilities in Downsview where his father, Jerry Dias. Sr., led the plant’s United Auto Workers Local 112 from 1967-1978. He won the Local 112 presidency in 1987 until he was appointed staff representative for the Canadian Auto Workers’ national office in 1993. Dias has been active in the labour movement for nearly four decades. He continues to lead Unifor’s ambitious efforts to help change the country into one in which we can all benefit from good jobs, safe communities and a prosperous, inclusive economy.

John Tavares is a professional ice hockey player who currently signed with the Toronto Maple Leafs. He was selected first overall by the New York Islanders in the 2009 National Hockey League (NHL) Entry Draft. Tavares was born on September 20, 1990 in Mississauga, Ontario, to Barbara and Joe Tavares, who are of Polish and Portuguese descent, respectively. Tavares has represented Canada at five International Ice Hockey Federation (IIHF)-sanctioned events, including the 2010 and 2011 World Championships. At the under-20 level, he won gold medals at the 2008 and 2009 World Junior Ice Hockey Championships where he was named the most valuable player of the 2009 tournament after scoring eight goals and 15 points in six games. In 2014, he was named to the 2014 Canadian Olympic Hockey Team, winning a gold medal at Sochi 2014. He was inducted into the Portuguese Canadian Walk of Fame in 2016.
José Carlos Teixeira holds a Ph.d in Geography and is currently a professor at University of British Columbia Okanagan. Over the years, he has been committed to putting contemporary issues in the urban and social geography of Canadian cities at the centre of his teaching. His early research focused on Portuguese settlement in Canada and evolved to research on settlement experiences of different immigrant groups. His current research explores the changing social geography of Canadian cities, ethnic entrepreneurship through comparative cases studies of immigrants and the structure and evolution of the Portuguese communities in Canada. He has received many awards including the Professional Excellence Award – Federation of Portuguese Canadian Business and Professionals in 2017. He was awarded with the Medal for Professional Merit in 2009 from the Autonomous Region of Azores and he is “Comendador – Ordem do Infante D. Henrique” since 2006.

A native of Montreal, Meaghan Benfeito was born on March 2, 1989, to Portuguese parents, Arthur Benfeito and Margarida Correia. The Olympic medalist originally competed as a swimmer but switched to diving after watching fellow Canadian divers Emilie Heymans and Alexandre Despatie. Her Olympic debut was at Beijing 2008 with her partner Roseline Filion. Although, they placed seventh in synchronized diving, this set her up for future appearances. Benfeito and Filion won bronze in the 10m synchronized dive at the London 2012 and Rio 2016 where Benfeito also won bronze in the 10m individual platform event. She has also participated in World Championship competitions, Commonwealth Games and the Pan American Games. Benfeito was named as Canada's flag bearer for the 2018 Commonwealth Games in Gold Coast, Australia. She currently has her sights set on competing in the 2020 Olympic Games in Tokyo. Nancy Silva-Gagliardi has a PhD in Molecular Biology and for many years the laboratory was her desk. She’s now a Research Operations Program Manager in the Research Institute at SickKids. In her current role, she provides oversight within the Research Institute on facilities management, building operations, renovation and construction projects, research safety, security and emergency preparedness and research core facilities. Nancy has a distinguished academic career and professional life. She is described by her peers as an extremely competent and meticulous professional, with a positive attitude and friendly demeanor. She is able to balance the demands of being a mother of two and the owner of a life marked by determination and the belief that everything is achievable, if one is willing to work hard for it. Pedro Gil Vieira is a theoretical physicist and professor who has done significant work in the area of Quantum Field Theory and Quantum Gravity. A graduate of the Universidade do Porto, Portugal, Dr. Vieira earned his masters and PHD at the Ecole Normale Superieure in Paris, France and joined the Perimeter Institute of Theoretical Physics in 2009. Pedro Vieira is one of 24 Canadian winners of major international research awards in 2015 featured in the publication, Canadian Excellence. He has also received the Alfred P. Sloan Foundation Fellowship, and the Gribov Medal. In January 2018, Viera was the first Portuguese to receive a prize of $100,000 from the University of Tel Aviv, Israel, for contributions in the area of physics. He was awarded The Raymond and Beverly Sackler International Prize which recognizes researchers under 40 with important contributions to their fields. He is also a dedicated mentor of postdoctoral fellows and graduate students – and is the founder of the popular Mathematica Summer School. She is the founder of the AMOR Foundation which is dedicated reduce the rate of maternal mortality in Malawi, and the transmission of AIDS from mother to child in Africa. AMOR has notably opened four hospitals in Malawi (Kasese, Zomba Machinga and Thyolo). In 2016, she was appointed as a UN Women Global Champion for Planet 50-50 by 2030. She continues to travel the world to assist on many humanitarian missions and is an ambassador for many organizations.

As the 43rd annual Toronto International Film Festival sadly came to a close, so did another year of drama, another year of controversy, and another year of great films. The surprising bit is that some individuals are completely unaware of what I am referring to. As someone who has indulged themselves in these festivities for the past three years, it’s hard to believe that many people still don’t know what the festival is or what it even has to offer. With that being said, what is it that keeps this 21-year-old aspiring filmmaker returning to the festival year after year? Sure it’s the movies (seeing them a few months in advance is quite the perk) and yeah, the celebrities (seeing Emma Stone last year was a highlight), but it’s the community that Toronto encapsulates year after year, that has had the biggest effect on me; this time was no different.
This year I was attended three film screenings: Vox Lux, The Old Man & The Gun and First Man. I would have liked to have seen more, but I guess I’ve learned my lesson from trying to buy tickets online; if you’re going to do it, buy festival packages! This will give you a bundle of tickets— usually guaranteeing 6, 10, 12, or 20 tickets. From there, you may choose the movies you desire based on availability, which considering you get to choose a week prior to members and two weeks before the public, there is a good chance of seeing the films you want. In hindsight, this would have been my best move but oh well, we all have to learn somehow. There’s no need to dwell on the past, so let’s look at my choices and whether they lived up to the hype. My festival officially kicked off with Vox Lux, a movie that snuck into scheduling last minute but still had the promise to deliver, thanks to the talent of Academy Award Winner, Natalie Portman (Black Swan 2010). There was no other movie on the festival circuit that stirred up more controversy than this. On the surface, Vox Lux is the tragic uprising of a child’s talent that turns her into a glamorous pop star. The director, 80

In many ways, I like to look at it as this year’s Mother!, which was Darron Aronofsky’s metaphorical telling of the Bible (premiered at last year’s festival). Many reviews criticized the overly preachy themes, yet some (including myself) praised it. There’s no denying that people spoke about it though, and even if you didn’t appreciate the direction, you have to congratulate it for that. I think the same will go for Vox Lux. Whether it be for the strong fascist motifs, the dramatic shift in tone halfway through the movie, or the controversy of the entire film itself, Vox Lux is a definitive must see. It’s a modern-day thinking piece of where the world has gone today, and whether you like to admit it or not, it shows just how far we still have to go. Next up was The Old Man & The Gun (the sole premiere I was able to attend this year). Although, as stated above, much of this year’s talk surrounded Vox Lux, this movie had quite the buzz around it as well, albeit for a different reason. This was rumored to be the last work of the famous Robert Redford, so as you can imagine, I took advantage of the opportunity to attend a potentially historic event, and not only watch, but experience everything from the third row—I guess seeing a movie on your own does have some perks. The film is as charming of a swan song as it’s lead. Robert is truly the standout here, playing the charismatic lead in a heist movie… where he never even fires a gun. That’s no easy task for an actor, yet he does
it as though it's second nature. When a movie like this (something with very little ‘literal’ action) can keep you interested from start to finish, you have to give it credit. It doesn’t just belong to the incredibly well-rounded cast, but also to the director, David Lowery. What I respect so much about David is that he can bounce back and forth between genres depending on what the film or story desires. His previous work, A Ghost Story (2017), which initially put him on my radar, has a drastically different mood compared to the smooth-talking entertainment of his latest work. David’s range is perhaps his most useful talent, making me look forward to his work for years to come. A great aspect of premieres is that not only do you get to enjoy the film, you also get the red-carpet experience, which is packed to the brim with camera crews, interviewers/ interviewees and insightful Q&As with the cast following the movie. Seeing these ‘stars’, as not only the big onscreen presence but as real-life creatives, is incredibly humbling. As an aspiring filmmaker, there is nothing more satisfying than listening to the words of industry professionals. To me, the premieres are the ideal way to see a movie at the festival.

here’s something enticing about the atmosphere of the festival. Seeing a film premiere in a room packed full of strangers may seem daunting, but everyone at the festival is joined through their love of movies, so chatting to the stranger next to you prior to the screening, is normal, in fact, I encourage it. And all of this is of course, culminating with the movies themselves; the real stars of the show.
Bradley Corbet, turns this into a social satire on our ‘celebrity’ run lives and shows us just how much power we give to those in the media. Sounds somewhat pretentious, right? For some, it will certainly come across as such, but with the film surrounded in such a dark, immensely disturbing tone, yet at the same time being glamorous and thought-provoking, you can’t do anything but continue to watch. Corbet’s work does something that can’t be said about many films nowadays; it stirs up conversation. Honestly, I think it’s just what the festival and film industry need.
Naturally, it helps if the film itself is great, but the premiere is the full package—a must for any movie buff. If you’re still trying to justify that extra bit of money for a premiere ticket, I’ll add this; being there for potentially the final standing ovation of the great Robert Redford is something that no one can ever take away from me, so thank you TIFF.

My final movie at this year’s festival was perhaps my most anticipated. With Damien Chazelle at the helm, who is quickly becoming one of my favourite directors (Whiplash and La La Land), and the star power of Golden Globe Winners, Ryan Gosling and Claire Foy, this movie had everything to make it one of the year’s best, and it did not disappoint. Most people know the story of the first ever moon landing. In fact whenever anyone brings it up, the famous words, “That’s one small step for man, and one giant leap for mankind.”, come to mind. What First Man does is not only tell the captivating story widely known, but adds layers of sacrifice and accomplishment to it that makes you look at this historic event in a new light. Both Ryan and Claire demonstrate a subtle level of intensity in every scene, with such ease. The confrontations between
the two characters have you siding with both arguments, which is a challenge, but with the incredible script and superb performances, the movie captivates from beginning to end. In my opinion however, the true star is Damien, who's directing choices of using close-up shots in conjuntion with shaky and handheld camera work literally puts you in the pilot’s seat—apologies, I mean the astronaut’s seat. At the mere age of 33 (just 32 when he won the Academy Award for Best Director, which made him the youngest to do so), Damien knows how to approach each of his works from a unique perspective, gratefully it’s the angle that helps his audience get the most out of every scene. First Man has everything, which makes me believe there will be significant Oscar buzz coming its way, and rightly deserved. Although the movie did not win the Grosh’s People Choice Award (the noblest award at the circuit—best film of the festival voted by the people), it earned my vote and the votes of countless others around me in the packed auditorium… if that counts for something. That was my festival, just the three films this year, would have liked to
see more, but there’s always next year. I will say though, I was thoroughly impressed with all my choices, they all brought something unique to the table and all left me with something to think about – that’s more than I can say about previous years. I think that’s what makes TIFF as successful as it is, the sum of all its parts. From the creatives that bring their work there each year, to the generosity of the volunteers, and to the setup of each venue, it encapsulates everything the film industry strives to be. And that is why I will continue to go for many years to come. So, I’ll leave you with this, the promise of celebrities and world-class films may entice you to give the Toronto International Film Festival a try, but trust me, it’ll be the community of film lovers that will keep you going year after year. YOU PAY TO BE PICKY
Coffee cult-ure in Toronto Traditional. Ritualistic. Full-Sensory. Highly Addictive. Coffee’s more than just a beverage in Toronto, it’s a culture. And a cult of many it is. From the actual bean product to the wi-fi speed, to the staff’s vibe, music, and overall ambiance, the array of options are seemingly endless. With every new indie shop opening it’s doors, the paradox of choice has never been more in play. That said, here’s a play by play of the scene and what it does and in some cases, doesn't offer. From the masters of mass customization to the “everybody knows your name” mom and pops and every craft and indie in-between, the culture of coffee extends far beyond the “just a hot fresh cuppa joe” it used to be. With a bevy of choices to choose from, let’s start with the big guy. While coffee shops come and go from every corner in Toronto, Starbucks has remained a staple in every hood since it opened it’s doors with five stores in 1996. Forget about the stock price dropping or rising, the sheer number of them today and their longevity in a saturated market speaks for itself. Why? Because at Starbucks, you pay to be picky. The entire brand premise and promise is that you’ll get the exact drink of your choice to your exact liking. The milk, the temperature, the foam, the flavour - you name it - they make it and even write your name on the cup along with the novel that often results on the side of it as an added level of personalization. As to say to the crowds “hey look, this is Danny’s drink.” Talk about a personalized, customized, "if you’re
not satisfied we’ll make it again and again until you are" policy. This is the Starbucks mantra. With zero attitude from the staff - and if there is, they’re way off brand and won’t be there long. Which is a pity because this is a brand that sure knows how to treat its eclectic and often eccentric group of employees right. The founder, Howard Schultz grew up in a blue collar family and his father had no medical and dental coverage for the family. So he pledged that if he ever founded his own company he’d be sure to include these perks. So he did and it shines through in the service with a smile vibe you’re guaranteed when you walk through the designed for your neighbourhood interior door. The experience is also always satisfying because they know you can go down the street and either get a beverage for half the price at Tim Horton’s or deal with the oft snobbery of craft competitors. Loyalty’s another reward here with free coffee re-fills for card carrying members to encourage them to stay awhile - unlike some of the grab-and go’s like Jimmy’s or Portland Variety. Starbucks also knows a staple to their business is solid, reliable wi-fi. Like many other shops around the city, Starbucks knows there's an office or second home to many of their patrons. The routine of coming in, setting up your computer, and making sure you can connect to their network often precedes even ordering a drink. This is a no-go at places like Early Bird Coffee. During the day they have a communal table for laptop
users but the individual tables have little signs that say something like “reserved for no-laptops.” They take up 50 percent of the space as which to say “socialize people look up from your screens.” I back this concept. After-all, not all of us have a perma-coffee date with our laptops or desire to be glued to our phones screens 24/7. It’s a great concept I can get behind. Fun fact - in 1997, Starbucks formed an alliance with Chapters - now Indigo - creating what has become the ultimate Canadian book and coffee lover’s experience. From the jazz music, to the tactility of an actual book or magazine, it’s a ritual for many even in this day and age to spend a weekend morning or afternoon at Indigo with a caffeinated beverage and great read in their hands. Then there’s the pioneers of the double-double since 1964, tried and true quintessentially Canadian Tim Hortons. At least until the fiasco when they decided to take away their employee’s breaks when minimum wage raise was announced and enforced as part of the Ontario Labour Laws. I bring this up because the happiness of employees has a huge effect on the overall brand experience for patrons - or as Tim’s call you - a guest. Anyways, a solid Canadian staple that has worked hard to keep up with changing tastes and dark roast demands. From the interior decor to labelling themselves “your neighbourhood coffee house” to offering soy milk at NO extra charge - a huge bonus compared to the surcharge you pay at most every other venue. But too much sugar and sodium are still on LUSO LIFE

the menu here. So too are digital screens that tell fun facts, horoscopes, trivia, sports updates and more - so the notion of a neighbourhood coffee house includes watching a TV screen. Overall however, if you’re looking for an economical cuppa coffee this is still the place that reigns supreme from a price stand point only. That said, you don’t get to choose the temperature or foaminess of your latte - it comes standardized to their’s. As for the wifi, it doesn’t offer Second home or out of office security like many of the other hot spots do. Next up is Second Cup. Worth a mention because they’re one of the only shops in town that still serve flavoured coffee. While my beloved other flavoured bean brew, Timothy’s are nearly impossible to find, you can still find a Second Cup in most neighbourhoods. Price wise, it’s comparable to Starbucks and you get four to five choices of roasts versus three. Vibe wise, there’s not much of one unless you consider the pop-ups they host inside of them. Kiva’s bagels - the quintessential Jewish bagel and Pinkberry Frozen yogurt being two examples of them. If you ask me, this place owns the Hot Chocolate game with their Vanilla Bean exclusive. At 4+bucks it’s not cheap, but it’s well worth it if you have a soft spot for the nostalgic beverage and wanna cozy up with something non-caffeinated for a change. Also, if you do fancy a flavoured coffee, you can always hit up my per84

sonal favourite Brioche Doree for their Hazelnut Cream brew. A pseudo French cafe, their roasts are high quality and priced competitively with Second Cup. It also always smells delicious with freshly baked croissants and the butter-based pastries. Which brings us to the fourth and last of the chains you’ll find throughout the city; Aroma. With healthy, if not a little pricey for the portion size fare, great wi-fi, decent curated cafe playlists and coffee that comes with a free piece of chocolate, it leaves a good taste in generic’s mouth. I tend to put my piece in the actual coffee to give it a mocha like taste as a quarter of the price. Now it’s time to talk about the so called “craft” coffee shops that fancy themselves indie even though many of them serve the same Pilot coffee roast that has a very distinct flavour Toronto has come to love. Many are also the anti-thesis of Starbucks. You pay a premium for what they’ve connoisseured (I made up that word) as your ideal taste. They have one roast - often highly acidic and often not even in a steel vat - which I’m convinced keeps the coffee taste, and body, better longer. Instead, it’s in a cheap plastic canister and they look at you like you’re beneath a basement level suite if you order it. Why? Because it’s three dollars so they just want you to prescribe to their snobbery and order an Americano instead for
One of the more interesting and authentic craft shops is Strange Love. They actually offer by-invite hosted coffee tastings in their backrooms. Just like wine and scotch tasting, you get the pleasure of smelling and trying different blends and are educated on the craftsmanship that goes into the final brew. From the bean, to the processing, to the acid levels - the whole shebang. It epitomizes the art of coffee and captures the obsession we have with it in a not so strange way. Their lover’s latte is to die for - complete with the craft touch of a latte art heart on top. They elevate the game here. Believe it or not, there’s also room for department stores in this conversation. Yes. They’ve managed to slide themselves into this equation with all the at home brewing options that now exists. That’s how deep our obsession with coffee goes. Those of us who love it don’t just drink it out, we want the same sensory and taste experience as a ritual at home. Enter Nespresso, Tassimo and the likes. Hit up the bottom floor of the Bay for your free samples of coffee & espresso based beverages made every which way under the sun at one of the booths selling hundred dollar machines that require an individual packet or ‘pod’ for each cup you desire once you bring your new baby home. According to them, gone are the days of just brewing a pot of coffee with a re-usable filter. It’s all cup by cup servings here. Even though they have a recycling program - talk about waste. What’s more, is that after you have your free samples at the Nespresso stations and crave a bigger cup, there’s at least three locales on the same bottom floor you can grab a real-size cup to stay or go. How telling is that?
three-fifty. Seriously. A coffee shop that goes out of it’s way to not serve coffee should change it’s name to the Americano or Espresso Shop. This is the opposite of how a so called coffee shop or house should roll. Also worth a mention are the indies that have moved beyond accepting cash. A cash-free coffee shop - who’d ever conceived of that. A place that charges more than a few bucks for one is the answer. Now this is certainly not the case for all craft shops but I’ve had the experience too many times to not vent-i about it. Sorry, I just had to! But let’s move on to the positives - because there are a great selection of them. The first being that while you are still paying a premium for drinks, paying to be picky extends into the non-generic nature of the joint as well. Original decor, a curated collection of limited-run niche magazines and even board games make you feel like you're somewhere unique. One of my favourite touches is some shops use of spaghetti as stir sticks to save on waste. How savvy is that? This is the local flavour that’s made craft coffee shops pop-up like wildfire in the past few years. Supporting small locals, rather than the big guys is a big thing in our bustling city. That and catering to the more health conscious and vegan community has been on the up for the past year in particular.
Finally, we have the true originals. The mom and pops. The solids that have been around since before Starbucks, and perhaps even you, me and Timmies. They don’t need to write your name on the side of your cup because they know it. They’re the little bakeries in the little Portugal's and Italy that haven’t and aren't going anywhere anytime soon. Speaking of going, asking for your java to go is a no no at one of these heritage sites. Be it an espresso, cappuccino, latte or bottomless drip, you sit down, take a breather and enjoy your beverage in a glass mug knowing the value you got it for. You’re with family here and it’s old school all the way. From lotto ticket sales, to 50 cent ciabattas, to a yard sale at a back table courtesy of elderly women and they’re retired jewelry, this is the original coffee culture in our city. Lastly, if you happen to be in any of the aforementioned places when they cut open a fresh bag of coffee or espresso beans, you’re in luck because the smell is truly heavenly. So while trends may come and go, coffee’s one that has no end. Even in a saturated, over caffeinated market like Toronto. from the farmer's table in Portugal to fine dining in Canada, youve come a long way baby

A
t its core, feijoada is pork and beans. In fact, its name is derived from feijão, which is Portuguese for beans. It is considered Luso soul food and is served in Portuguese speaking households throughout the world – Macau, Angola, Cape Verde, Guinea-Bissau, Mozambique, Goa, India and Brazil. So delicious, that it is considered Brazil’s national dish. So versatile that there are countless variations which use local ingredients – the Trás-os-Montes region of Portugal uses red kidney beans and cabbage, where Minho uses white beans and chouriço (Portuguese smoked sausage), and Brazil’s version is famous for using black beans. This rustic meal was born in the rural areas of northern Portugal during the 15th century. Unlike the rich, who were privy to daily intakes of fresh meat, the common folk 88

needed to salvage all parts of the animals they raised. After rationing it over time by means of salting and curing, meat would then be stewed with vegetables giving origin to the feijoada we know today. Although it is considered by many to be one of Portugal’s finest gifts to the taste buds of the world, it is rarely considered a delicacy pristine enough for fine restaurants. Cristina Da Costa, owner of Flor de Sal Restaurant has set out to change that. After inheriting her mother’s recipe, she has spent the past 15 years experimenting with different beans, meats and techniques to bring us the most refined, light version of what is typically a very heavy meal. When asked about her feijoada, Cristina was naturally very tight lipped, but did offer some insight, “The smoked pork is very important, as is the slow roasting process I use for the vegetables. Actually, the
entire process is quite time consuming. From start to finish the feijoada takes 24 hours before it is ready to be served.” These are the types of things that set Cristina and Flor de Sal apart from many other Toronto restaurants. The originality of the recipes – a delicious fusion of Mediterranean flavours, the patience to make every meal perfect and the freshness. “Every ingredient we use is fresh, and every herb we use is from our garden. We refuse to compromise on taste or quality.” After finishing my meal, I take a sip from my wine and make one final attempt at cracking the feijoada code. “Well, let’s just say there are only two places where you will ever eat this meal and the second is at my home.” Flor de Sal Restaurant 501 Davenport Rd, Toronto flordesalrestaurant.ca

Feijoada à portuguesa I will never be able to reproduce the secret Flor de Sal recipe and I’ve slowly come to terms with that, but how do I handle a feijoada emergency? The boys are coming over on a Saturday night to watch John Tavares and the Leafs (hopefully) beat up on Le Habs, a Portuguese Chili should be on the menu. Problem solved. I challenged Rosa Bandeira, the unofficial “chef” at MDC Media Group and asked her to create a simplified version that I could easily make in an hour and she delivered. Bom apetite.
1.5 kg of ham hock 200 g of Portuguese chouriço sausage (sliced 1/4-inch thick) 250 g of carrots (cubed) 2 onions 2 cloves of garlic 1 large can of white beans 1 small can of crushed tomatoes 1 dL of white wine 0.5 dL of olive oil 1 bay leaf
Clean hocks and place in pressure cooker with one whole onion. Cover with water, season with salt and let cook for 25 minutes. Remove meat from pressure cooker, strain the broth and reserve. Remove meat from bone and cut into small pieces. Peel and chop the garlic cloves and the other onion. Heat olive oil in a large heavy-based saucepan. Once hot, add onion, garlic and bay leaf. Sauté for 5 minutes then add the crushed tomatoes with the sliced chouriço. Add the cubed carrots and let it cook for 10 minutes. Add the white wine and let it evaporate.
Salt
Add 2 L of the reserved pork broth and the cut meat and let it boil for 10 minutes.
White pepper
Stir in the beans and let cook for an additional 5 minutes.
Parsley
Garnish with chopped parsley and serve over white rice.

"Music brings people together. So my function in anything I do is to help bring people closer in." Gord Downie This past October 17, 2018 marked two milestones in Canadian history: 1 - The legalization of marijuana which everyone was anticipating. 2 - The first anniversary of Gord Downie’s death which nobody was expecting. Sure we had heard the reports that Gord was diagnosed with glioblastoma, a highly complex form of brain cancer that is almost always terminal, but we all felt he was doing well. He took his band The Tragically Hip on the road, released a solo album called “Secret Path” which was accompanied by a graphic novel and animated film of the same name, and we heard rumors that he was working on a sixth solo album – what could be wrong? Unfortunately, we were in denial and death was eminent. When the news was finally announced, our Prime Minister, Justin Trudeau, openly cried as he addressed the na102

tion and spoke about “our buddy Gord” who “wanted to make Canada better”. We can only assume that JT chose October 17 to honour his friend, why else would they pick a Wednesday to introduce a new law? We choose to honour Gord with a photo taken at WE Day in Toronto on October 19, 2016, one year before he left us. His multimedia performance of “The Stranger” from his album “Secret Path” left the audience full of emotion. The song and album tell the story of 12-year-old Chanie (Charlie) Wenjack, who in 1967 escaped from a residential school in Kenora, Ontario, and tried to walk the 600 km to his home in Ogoki Post, Ontario. Twenty thousand students watched as Downie’s moves mimicked what it might have been like for Chanie as he walked alone on the railroad tracks only to eventually die in the cold. Gord refused to quit and his lyrics are an encyclopedia of Canadiana. He was a voice for Canadians whose stories needed to be told, and to many people of my generation, he is the greatest Canadian that has ever lived.
