The local cuisine found on the Balearic Islands is another of their main attractions. Delicious, flavour some and healthy, their distinctively Mediterranean flavours are conjured up using zero-mile and seasonal produce sold at the numerous weekly markets held in towns and villages, or at the main gourmet markets.

In winter, the season of tradition, many towns on the islands celebrate their age-old festivals with fire, ancestral dances and food as the main attractions. They’re an ideal opportunity to experience the islands’ popular culture and their people’s way of life. Famous ancestral dances include the ball dels cossiers, the dancing demons spitting fire in Sant Antoni or Sant Sebastià and the song of the Sibyl at Christmas.

The mild, pleasant climate at this time of year is ideal for discovering the islands’ landscapes on foot, by bike or on horseback, and exploring the Serra de Tramuntana mountain range (Mallorca), the Camí de Cavalls trail (Menorca), the Green Routes (Formentera) or the Ses Salines Natural Park (Ibiza and Formentera). It’s also a perfect time to discover their wealth of cultural heritage by strolling through the secluded streets of Palma’s old town, following the white churches route on Ibiza, or visiting some of the best-preserved prehistoric sites in the Mediterranean on Menorca. The islands’ natural beauty is complemented by a packed event programme. At this time of year, the islands welcome visitors to take part in international sporting events and a wide range of culinary, musical, artistic and cultural activities, as well as countless leisure experiences and tours.

LUX GOLF GUIDE 13

During the autumn, winter and spring months, the Balearics turn into the islands of traditional culture, sport, good food, luxury, nature, heritage and art. It’s the best time to discover the true essence of these islands and try a new experience or repeat a past favourite. Because it’s during the season with the fewest tourists that the islands throw open the doors of this Mediterranean paradise so that visitors can enjoy unique experiences. Exclusive and authentic experiences in an incredible setting where discretion is the norm. And this is precisely what sets the Balearic Islands apart from other destinations. Because you cannot enjoy their unparalleled beauty anywhere else in the world.

The islands also offer an extensive range of restaurants with traditional and avant-garde

With eleven Michelin stars and two green star (Maca de Castro), the Balearic Islands have also man aged to position themselves at the pinnacle of modern cuisine and have already become a perfect destination for food enthusiasts. The Balearic Islands are also a paradise for lovers of good wine and olive oil, with many pos sibilities for wine and olive-oil tourism on tours of the islands’ countless wineries and oil mills.

ARABELLA GOLF SON MUNTANER

Inspired by excellence. Golf Son Muntaner is a course designed to exceed your expectations. In 2016 we carried out an ambitious project by completely reseeding its fairways and greens, turning it into a course of reference for any golf lover and one of the best golf courses in Europe. In 2009 Golf Son Muntaner was the host of the “Mallorca Golf Island Skins Game”, with the presence of important players such as Justin Rose, Martin Kaymer or Robert Karlsson. Being the winner Jose Mª Olazábal. An extraordinary design, greens that propose continuous challenges and a careful maintenance to the detail make playing this course as an obligation for the golfers that visit our island. This golf course focus on excellence, has a practice area with driving range and pitching area. In addition, we have the biggest putting green in the island. We recommend that you specially visit the 5th and 6th holes, which have been redesigned following the original design, making the golf course even more competitive. In the second round, it is worth admiring “Na Capitana”, the oldest millenary olive tree in Mallorca and cataloged as a Singular Tree by the Local Government.

One of the most dramatic courses on the island, Real Golf de Bendinat runs through the rugged terrain just outside the city of Palma. Weighing in at just 5,668 metres, this par 70 is one of the shorter courses in Mallorca but what it lacks in distance it makes up for with some truly unique and beautiful holes and no matter how you shoot the scenery makes it well worth a visit. Designed by F.W. Hawtree and opened in 1986, expect the unexpected at Bendinat. From the very first hole the player will get a feel of what Bendinat is all about. The elevated tee, blind shot, tight out of bounds, the bunkerprotected green are all things that the player will have to contend with throughout the round. In other words be prepared for some precision play and a bit of guessing. The good news is once you have played Bendinat and learned its tricks your scoring will certainly improve for this is a course you will want to play more than once.

For this reason and everything mentioned above, I have to say that having grown professionally within the same hotel, going from receptionist to 2nd head of reception to head of reception and manager over these years working in this beloved establishment has enriched me extraordinarily since the human team He has always accompanied and followed me faithfully, giving me all his support and making me feel comfortable with the position, while being loved and respected.

LUX GOLF GUIDE 60

All the good that I have always received within Hoteles SantoS has made me always have the need to improve and always give my best at all levels.

We must closely monitor the evolution of the people who make up the human team and share both successes and opportunities to improve jointly, constructively and positively.

The values that are transmitted and the treatment that I have always received in terms of trust and freedom of action within my responsibilities meant that from the first position I held as receptionist to general manager of the hotel, I brought out the best of myself both for the clients as well as for the great human team that I am lucky enough to lead, as well as for my own company.

We take a good work environment into account and it is very important that the team always feel valued and that it is clear about our objectives and the importance that each one of us has in doing our part, so that in the end, all together we can reach the goal and maintain the prestige and good reputation of the Hotel. We are deeply instilled that the main and essential objective to achieve the success that our hotel deserves is the satisfaction of our customers, without this there is no future and nothing would make sense.

LUX GOLF GUIDE 61 EXCELLENCE WITH THE CLIENT

This is very clear to the hotel’s human team and, therefore, they get involved and try to make each client feel unique, anticipating their wishes and requests and giving them a very cordial, hospitable and professional treatment.

I joined the hotel reception team 20 years ago and from day one I knew I was in a very special establishment. The treatment received from the property, the general management and the colleagues themselves has always been very humane and with great respect for people.

The SantoS Nixe Palace Hotel is one of the most emblematic establishments in the Balearic Islands and one of the pioneers in luxury tourism since its opening in 1957.

In its day, the closure of the hotel was very sad news for the sector that had to see this great establishment closed for almost a decade. Therefore, the arrival of Hoteles SantoS meant the recovery of one of the best establishments on the Islands and the rescue of an international hotel benchmark.

WHAT IS THE SECRET TO ACHIEVE THIS MOTIVATION IN THE STAFF THAT WORKS IN THE HOTEL?

My experience over these years has made me evolve and improve as a professional and as a person.

hotelmallorcanixepalace.com

In the first place, the profile of the workers needed for each job must be very well defined, in order to achieve harmony and that, when selecting personnel, it is very clear what they are. people who fit with our philosophy and values.

Good treatment and respect for the human team is the main basis for achieving the motivation to do the job well and for people to get involved with the satisfaction of customers, objectives and the company.

The new, fresh and informal

byPuertoexperiencegastronomicinPortalsFernandoP.Arellano,2MichelinStarsChef

Where everyone can enjoy culinary bites from different parts of the world with a local touch. An informal space designed for our guests to enjoy the finesse of the cuisine of the 2 Michelin star Chef Arellano even through the simplicity of his “Patatas Bravas” beside a cold drafted beer. Serving also Mallorcan grilled fish, homemade pasta, mature meats, “paella” and a daily “lunch menu”.

Itziar Rodríguez ZARANDA “THE STORY TELLERS” At a time when we have more and more material objects within our reach, luxury has become accumulating experiences and that is what we seek to offer our clients. The conjunction of cuisine and service is essential to achieve this goal. Service is the vehicle that brings to the guests the stories that the chef brings to their table through his creations. Cooking is spoken of on many occasions as an art, but in reality it is a craft. The hands of the cooks prepare dishes that the service, converted into storytellers, transmits at each table.

LUX GOLF GUIDE 64

The relationship between the staff and the client will be constant and always marked by closeness so that they feel at all times that they can ask both about the preparation and the history that surrounds each dish.

A small gift accompanies all our clients on their departure, a sweet that will make them remember the time they shared with us the next day.

The end will come with a new surprise, the account is presented inside a piggy bank telling them again a story intimately related to the Chef’s family life.

of Arab betrayal, which show us the vestiges of one of the cultures that most marked the Majorcan civilization. The next step is your visit to the kitchen. At the door of the restaurant we explain to them what they see through the glass floor, those ruins that have been mentioned to them in which they can find reflected that first contact in the bar. Their surprise increases even more when they find a fully visible kitchen, where they sit directly in front of Fernando, who will be their host for two steps. The service is responsible for explaining what they are going to see and taste, giving all the prominence to the Chef, so that each person can enjoy living the experience of being in a kitchen in the middle of the dinner service. After their stay in the kitchen, we pick up the baton again, guiding them to their table. Once seated they find their personalized and printed menu. From here they start their dinner, that facet of socialization between diners and gastronomy. Each dish that is brought to the table will be explained by the waiters, giving them the precise instructions to enjoy it in the best way, telling them in many of them what they represent, what is the story behind each one or what has led Fernando to its creation.

LUX GOLF GUIDE 65 EXCELLENCE IN SERVICE

Dinner at Zaranda takes place at 3 different points and with 3 different menus: Our menus are directly related to our location and the personal experiences of Chef Fernando TheArellano. Hipodermis menu is the first layer of our skin, it shows diners the Zaranda classics, the base. The Dermis menu, second skin, extends those classics to the experience of sharing two dishes with the chef and seeing what Zaranda was and is Thetoday.third menu, Epidermis, the last layer the new menu where the seasons are followed and Fernando’s latest creations are shown.  From the point of view of service, we must transmit these 3 visions to our guests from their arrival.  They are received in the bar area, a warm atmosphere where a water infused with herbs and natural fruits refreshes them and accompanies them in a “Preface”. They are welcomed by explaining the vision of the menu that they have chosen prior to their arrival. They are offered to pair it with wine, as soon as the appetizers arrive, which are part of that “Preface”, the story that will be told to them throughout the night begins. The food becomes a link to discover what you will find in the restaurant area, the ruins of the old local tanners zaranda.es

At the end of the day, the feeling of having achieved one more service, being the “story tellers” and that all our guests have traveled with us through those stories.

The best international professional golf returned to Golf Santa Ponsa after 23 years with the Mallorca Golf Open from 21st to 24th October 2021.

The complex inaugurated in 1977 hosted European Tour events on seven previous occasions, and was once again prepared to welcome all players, volunteers and golf lovers to enjoy this great sport.

The Swede Ove Sellberg (in 1989), the South African Gavan Levenson (1991) and the Englishman Jim Payne (1993) also triumphed in Mallorca before the New Zealander Greg Turner finished first in Santa Ponsa II. LUX GOLF GUIDE 68

Santa Ponsa I is the first in a group of three courses, although its sister courses, II and III, are both private member’s only clubs. Number I, of course, was the first built, that back in 1977 with design by Folco Nardi and José Gancedo. Since then it has been the site of numerous tournaments including six Balearic Opens and the European Club Championship. Santa Ponsa I is one of the longest courses on the island. At 6,543 metres from the white tees distance is a major factor here. This is especially true on the 590 metres, par 5, 10th hole, one of the longest in all of Europe. There are also two other par five holes of over 500 metres, five par fours of over 400 metres and a 220 metres par three. The good news is that the fairways are generally wide and allow ample room for you to really go for it off the tees. Then again the numerous water hazards and bunkers will help keep you in line.

GUIDE 75 Tech Sculptor LOLO GARNER EXCELLENCE

Lolo Garner is the pseudonym used by the artist Manuel Granero (Palma de Mallorca). With training in industrial design, numerical control and robotics. It reaches the world of art through the cinétic-art movement, which is a current based on the aesthetics of movement, making the most of the possibilities offered by technology and parametric design software, to create extremely complex pieces, generating organic configurations, continuous and harmonic. Garner seeks the participative gaze of the viewer and its integration with the work, creating stable kinetic experiences, the main characteristic being the distribution of the elements that make up the work, these are fixed in such a way that the viewer must surround them to perceive the kinetic effect, normally the theme is the representation of faces and images that come to life with movement, appearing, disappearing or transforming into new images.  Garner’s work takes advantage of the intrinsic effect that exists in the movement of the visual and gives us sculptures that will make the observer be drawn inside, discovering new sensations by interacting with the work, living the experience of being in the fourth dimension and obtaining new perspectives of it. The main material she uses is corten steel, processed with the latest robotic cutting and welding technologies.  PROJECTS Lolo Garner in his constant research and development towards the new techniques of kinetics, are leading him to carry out projects of large-format works both in Spain and internationally (Miami, the Dominican Republic and New York). Garner’s sculptures are widespread in the most diverse areas of society: Institutions, Companies, Individuals, etc... creating unique and exclusive contemporary art concepts that introduce the work into spaces, bursting into and activating them culturally.  THE FACTORY ART  Garner is the creator of a new concept of collaborative art with other artists from different disciplines, bringing technology to his works both in processed and new generation materials, offering new concepts of art creation in facilities with a New York-style work profile. where leisure, art and technology are integrated. LUXGOLF IN ART

‘SOBRASADA DE MALLORCA’ AND THE PROTECTION OF LOCAL VALUE

SOBRASADACOUNCILREGULATORYPRESIDENTOFTHEIGPDEMALLORCAsobrasadademallorca.org

LUX GOLF GUIDE 114

The file that stores the unique flavors and aromas of the ‘Sobrasada de Mallorca’ is located in the brain of each one of us, connected to everything we relate to and evokes sensations and emotions.

It is information that accumulates as a synthesis of filtered experiences in each tasting, thanks to at least three specialized functional physiological systems, three sophisticated biochemical laboratories located in our heads that break down and recognize the details of this exquisite product: in the mouth , receptors for molecules, ions, texture, temperature, etc.; in the olfactory epithelium, the detection of volatile components, floating in aerosols, processing traces of complex molecules; and in between, the less explored vomeronasal organ, which perceives substances such as pheromones and other bioactives, capable of determining changes in mood, activity, sexual and affective desire, and various other behavioral reactions that arise between members of our same species . Often some events or individual cases of super-perception, depending on a multitude of factors, suppose such a sensory impact that we remain momentarily thoughtful, self-absorbed or almost hypnotized, as before a masterpiece or an episode of happiness in tune with nature. It makes a lot of sense to take great care in protecting the peculiarity of Mallorcan sobrasada, which has been generated from the conservation techniques of pork, minced and seasoned with sea salt and spices, which was already known in Mallorca and It extended throughout the Roman Empire bathed by the Mediterranean Sea, two millennia ago. The first written documents date back to 1403, with a letter from King Martin I of Aragon (which included the kingdom of Mallorca) to the Sicilian court, ordering food, among which a command of sobressades stood out, but the truth is that the gastronomic greatness of the ‘Sobrasada de Mallorca’ had to wait two centuries to incorporate paprika, brought from America, and thus consolidate itself as a distinctive component of our Mediterranean diet. Ten years after the incorporation of Spain into the European Union (EU), the sector saw the culmination of its efforts by gaining access to the solid quality protection offered by a PGI (Protected Geographical Indication) (PGI) accreditation, the highest level within geographical indications (GI) in the EU, which Mallorcan sobrasada reached in 1996. Since then it has been part of this select group of PGI products that have a specific link with the place where they are made, a reflection of their culture, traditions and way to relate; possessing excellent specific qualities and enjoying a reputation linked to the territory of production, consolidated in Mallorca over the centuries.
