Son Antem’s two golf courses are located 10 minutes driving away from the airport and 15 from Palma, and they are integrated into a typically Mediterranean landscape and built on flat grounds, making them very pleasant to play on as you walk.

At this moment, they are around 30%, and in a couple of years they will reach 40% of the golf players around the world. Two years ago, we created the Club Ladies Committee to enhance the participation of women in tournaments. We pamper them and we try to create a great club atmosphere for them to feel welcome and comfortable. REAL GOLF BENDINAT One of the most dramatic courses on the island, Real Golf de Bendinat runs through the rugged terrain just outside the city of Palma. Weighing in at just 5,668 metres, this par 70 is one of the shorter courses in Mallorca but what it lacks in distance it makes up for with some truly unique and beautiful holes and no matter how you shoot the scenery makes it well worth a visit. Designed by F.W. Hawtree and opened in 1986, expect the unexpected at Bendinat. From the very first hole the player will get a feel of what Bendinat is all about. The elevated tee, blind shot, tight out of bounds, the bunkerprotected green are all things that the player will have to contend with throughout the round. In other words be prepared for some precision play and a bit of guessing. The good news is once you have played Bendinat and learned its tricks your scoring will certainly improve for this is a course you will want to play more than once.

Every guy who stays for quite some time in my team match that profile… TELL ME ABOUT A DIFFICULT SITUATION AND HOW YOU HANDLED IT? I focus my efforts in keeping as many of my guys busy as I could… I focus on that rather than on my personal income which has been pretty much nothing… I have become very small in my own expenses to try to stretch my savings until better time comes… DESCRIBE THE RELATIONSHIP BETWEEN BACK-OF-THE-HOUSE AND FRONT-OF-THE-HOUSE OPERATIONS. Never an easy task… we are all aware in how much we need each other and how impossible it is to perform at a high level thinking only one sided, but being in most cases so unexperienced in each other’s field, makes it difficult for the guys to stand on each other shoes… ARE YOU ABLE TO WORK FLEXIBLE HOURS? That was never a choice… from the beginning of my career I was well aware of the fact that chefing implies a lifestyle of its own and that includes the irregular shifts.
WHY DID YOU DECIDE TO BECOME A CHEF? WHAT OTHER BACK-OF-THE-HOUSE POSITIONS HAVE YOU PREVIOUSLY HELD? After working as a washer upper for a few months a got seduced by the atmosphere of a professional kitchen and I was enjoying home-cooking in the meantime so decided to give it a go… DID YOU GO TO CULINARY SCHOOL? WHAT CREDENTIALS DID YOU EARN THROUGH YOUR CULINARY STUDIES? I did an apprenticeship during 3 years in the culinary colleage while working full time in Michelin starred restaurants. I got the theory there and the real experience at work. WHERE AND HOW WERE YOU TRAINED? I trained in several 1, 2 and 3 star Michelin restaurants among Ireland, England, Italy, France and Spain before opening my own place. I went through the different sections first as a commie and then moving forward to chef de partie. This natural evolution at a high level in different styled kitchen gave me the confidence to lead my own project. WHAT IS YOUR MANAGEMENT STYLE? WHAT MANAGEMENT STYLE DO YOU PREFER FOR YOUR SUPERVISOR TO HAVE? I am quite close to the guys that work for me becoming a mixture of an older brother, a friend, a mentor and, of course, a boss. I believe in respect being earned by actions. Practice what I preach. Show with example.
WHAT IS YOUR FAVORITE CUISINE? HOW MANY DIFFERENT TYPES OF CUISINE ARE YOU CAPABLE OF PRODUCING? It is hard to tell. I love Italian, Middle Eastern, Southeast Asian, South American, North African and, of course, French and Spanish!! My job has giving me the great opportunity to cook and share culinary experiences all through the Planet and food is always the main leitmotif of most of my trips. My personal cooking is very influenced by the achieved experience on some of those trips. TELL ME ABOUT YOUR WINE KNOWLEDGE I would not say I am a great connaisseur but I did study good basics and enjoy wines in a great way. I am generally involved in the choice of wines for our wine list and pairings… HOW DO YOU TEST THE QUALITY OF YOUR INGREDIENTS? Testing and tasting. WHEN ARE YOU HAPPIEST AT WORK? When I feel that both my staff and customers are satisfied and that somehow I managed to touch their emotions that is just the best ever feeling for any chef. IF YOU WERE TOLD THAT YOUR FOOD COST WAS HIGH, WHAT FIVE THINGS WOULD YOU LOOK AT FIRST? In this order: Price of purchasing, portioning, wastage, price of selling, thieves in the house. We know that golf as a sport has many benefits, both mentally and physically. The sport of golf also has an interesting social part unlike other sports, but today with you we would like to touch more the business and economic part. What benefits does a golf course generate, how many jobs, direct and indirect, we are also very interested in the sustainability and ecological issue that is so current. It is true that Golf, as a sports practice, is beneficial for health. It is a physical activity that is practiced outdoors, which involves walking several kilometers, and which, as you well say, is good for the mind and for the character, among other things because it is usually a humility cure!
SANTA PONSA I Santa Ponsa I is the first in a group of three courses, although its sister courses, II and III, are both private member’s only clubs. Number I, of course, was the first built, that back in 1977 with design by Folco Nardi and José Gancedo. Since then it has been the site of numerous tournaments including six Balearic Opens and the European Club Championship. Santa Ponsa I is one of the longest courses on the island. At 6,543 metres from the white tees distance is a major factor here. This is especially true on the 590 metres, par 5, 10th hole, one of the longest in all of Europe. There are also two other par five holes of over 500 metres, five par fours of over 400 metres and a 220 metres par three. The good news is that the fairways are generally wide and allow ample room for you to really go for it off the tees. Then again the numerous water hazards and bunkers will help keep you in line.

As for golf as a business and economic activity, the reality is that in Spain the Golf industry is a tourist product since the industry has been sized to receive the 1,200,000 Golf tourists that Spain receives. Regarding the benefits that you ask me generated by a golf course, I understand that it refers to the general benefits generated by the activity at a social level, not to the accounting of the companies, since that depends on each case. I can tell you that Golf is one of the tourist activities that brings the most benefits to the Spanish economy and society. To begin with, our high season is in spring and autumn, so we are a powerful tool for the desired seasonal adjustment and what this means in terms of sustainability. On the other hand, Golf attracts a tourist with a
higher purchasing power than the average tourist. Golf tourists also usually have a longer stay, since they stay an average of 11.9 days, compared to 7.4 days of stay for non-golf tourists, and spend 7 out of every 8 euros outside the golf course. The three hundred-odd Golf courses in Spain have a turnover of around 770 million euros. Another advantage of the Golf activity is that we provide stable and quality employment. The sector has direct employment data that I believe are very important, employing 12,000 people with 95.5% of permanent contracts (the national average is 73.2%), and 94.1% of permanent contracts. full time. If we take into account indirect and induced employment, we would be talking about 121,400 jobs. With regard to the environment, to say that in Spain 70% of golf courses irrigate with recycled water, and 30% that still do not, is mostly because they do not have access to it. And 88% have water saving systems for irrigation. For years we have seen that many fields are changing the varieties of grass they use, looking for varieties that need less water. Most of the courses are refuges where we can find a great variety of migratory birds that use the golf courses and their lagoons to rest a few weeks before continuing their trip. 15 10 SANTA PONSA II Built in 1991, with design by José Gancedo, the Golf Santa Ponsa II course is 6.053 meters, 18 holes (Par 72). Golf Santa Ponsa II is the only private use Golf Course in Mallorca for it’s members. The holes of Golf Santa Ponsa II are situated between a big pine woods forest and large lakes. In the first part the golf player have to be careful and precise through all those pines woods and in the second part the golf player can risk a little more with long and powerful strokes between great lakes. The 18th hole is a very interesting Par 3 where the green is situated in a piece of land which is the shape of the island of Mallorca. Is a peacefull and enjoyable Golf Course which respects the natural environment. Proof of this is that you could enjoy seeing more than 400 birds and one of the most distinctive is the “Porrón Pardo” or “Aythya Nyroca”, endangered species, the “Somormujo Lavanco” or “Podiceps Cristatus” so difficult to see in the Balearic Island, and also the “Martín Pescador” or “Alcedo Atthis” among many others. This course also offers the facilities to improve the game, with a driving range 350 meters in length with tees at both ends of 100 meters each, putting green and chipping area. This eighteen-hole golf course near the town of the same name is the perfect place to get in a quick round before visiting the village or any of the fabulous beaches of the northern coast of Mallorca. At Pollensa it’s amazing to see what designer José Gancedo was able to fit into just nine holes. In Winter 2018 – 2019 the course undertook major improvement works, changing the grass of all 18 greens, improving the drainage system, as well as changing the sand in the bunkers.

My father Pedro Ferrá, my brother and I form the Group’s Family Council. And in my case, I am also part of the Executive Committee as Marketing and Communication Director of the company. THE FERRÁ GROUP TURNS 130 YEARS OLD WHO WAS ITS FOUNDER? Our great-grandfather, Pedro Francisco Ferrá Mir, was the one who started our company in 1890. At that time, the masonry trade was very traditional, so a lot of labor was used. HOW HAS IT EVOLVED UNTIL TODAY? Our great-grandfather worked from Calle Portella in Palma, where families belonging to the socalled nobility lived and who used to need labor. Even then, the quality and dedication to achieve the total satisfaction of our customers were part of our day to day.
TALK A BIT ABOUT IBIZA Our intention is to stay and consolidate on the island. As part of our normal way of working, our intention is to establish long-lasting and stable relationships with local companies and suppliers, taking advantage of the opportunities that will surely present themselves to us together.
