Rosé All Day SUMMER PAIRINGS WITH JARED FISCHER
It’s
80 degrees and muggy in NYC, and the only cure is a healthy pour of rosé. We sat down with The Peninsula’s head sommelier and wine expert, Jared Fischer, for the lowdown on how to sip this season. LA: What are some of your favorite producers this season as far as rosé is concerned? JF: I gravitate more toward the cool climate rosés, whereas everyone’s usually hot for Provence, which is understandable because it’s got the beautiful garigue elements and aromatics that are absorbed into the wine. But I like the acidity and the aroma you find in Germany, for example. There’s one in particular from Austria called Jurtschitsch vom Zwiegelt, which is also very good. LA: Tell us about a few current trends in the wine industry about rosé specifically. JF: I would say there’s more of an attraction nowadays to the age-worthy rosés, like López de Heredia, which has been sold out for a couple vintages now. It hasn’t even been on the market. And the Rebholz Spätburgunder, which ages very well but is still bright, fresh, and youthful. So I would say it’s really about things that you don’t have to drink right away. LA: What’s your methodology behind pairings? JF: Essentially what I do is I have Chef put up the dish, and then I make myself a mental list of things that could
possibly work based on the structure of the dish, its acidity, fattiness, sweetness, things like that. And then I find wines in my head that either complement or contrast through similarity, which I’ll taste one by one and figure out what’s best. If I don’t find something that’s spot on, I’ll keep looking until I find it. LA: What’s your favorite pairing on the menu right now? JF: I would say the octopus with tangerine and harissa over yogurt with an Assyrtiko from Macedonia. LA: For those who want to pair at home, how would you recommend they go about doing so, even with little to no experience? JF: I would say don’t focus on the protein -- focus on the sauce. Or if there’s no protein in the dish, don’t focus on the main component. It’s really all about the sauce, because that’s what changes everything. That’s where you get most of your flavor and what the wine will play with and interact with the most. LA: What is it that you look for in the wine itself? JF: Well, a great pairing is when the food and wine together are greater than the sum of their parts. Ideally, the wine will almost always need to have acidity. And I think in terms of the flavors of the dish, to find the similarities of the dish and the wine, that’s a good way to build the harmony of flavors. Rich Torrisi, Mario Carbone, and Jeff Zalaznick along with renowned architect Renzo Piano bring this glass-ensconced beauty to the High Line, drawing inspiration from the neighborhood’s rich history and featuring signature dishes Italian in spirit and modern in execution. BARBUTO Jonathan Waxman’s refreshingly airy garage-doored space and market-driven menu is the reason for the outdoor dining season. This industrial, barebones West Village gem features an open kitchen, a wood-burning brick oven, white brick walls, and nofrills Italian cuisine exude coolness...figuratively and literally. CHARLIE BIRD A menu reflective of the restaurant’s commitment to organic approach and delivery makes Charlie Bird a true pioneer in the farm-to-table movement. With an edge, of course. Take in the eclectic scene, rife with elements inspired by the likes of Warhol, Basquiat, and Haring, standing up to the strong flavors coming from the kitchen. 5 King Street at Sixth Avenue
NARCISSA Ah, Narcissa. Queen of Cuteness of the Outdoor Dining Sovereignty. We made that up, but it might as well be real. Think lush greenery, chambray banquettes, lounge chairs, and ample outdoor space (not taken for granted ‘round these parts). Michelin-star studded Chef John Fraser helms the open kitchen, serving up farm-fresh and artisanal dishes with ingredients sourced directly from André Balazs’s Hudson Valley farm. CLAUDETTE Downtown meets Provence with a touch of North African flavor at Fifth Avenue’s quaintest coastal brasserie. Executive Chef Wade Moises and Chef de Cuisine Koren Grieveson bring exquisite market-driven dishes to the table in a warm, inviting atmosphere reminiscent of travels through the Côte d’Azur. Take in the rosé selection and grab a seat overlooking the sidewalk. And come hungry...the small “du jardin” plates are to die for, starring as the perfect opening act to a standout collection of entrées, including a chicken tagine that’s as gorgeous as it is mouthwatering. Trouble choosing? Let the impeccable brigade of hand-selected wait staff take the reins. The bottom line is this: one simply can’t go wrong at Claudette. MONTMARTRE NYC’s latest French import has arrived in the form of a contemporary Parisian bistro in the heart of Chelsea, complete with a bi-level garden at the head of the running for the neighborhood’s best outdoor space. The courtyard features its very own bar and ample seating, as well as an herb garden tended by Brooklyn Grange. Head here for a leisurely lunch, dinner al fresco, or a round of summer-inspired cocktails. Where do we even begin? NYC’s one and only popsicle lab has captured our hearts with its inventive frozen treat selection, serving its West Village patrons with a smile and what are arguably the world’s most aesthetically pleasing pops. From gelato, sorbetto, and frozen yogurt on a stick to a design-your-own pop station, the possibilities are endless at Popbar. Bonus: for those looking for a bit of a change, take the road less traveled with premium frozen hot chocolate, hot chocolate on a stick, a “Popaccino,” or a pack of PopBites with praline-sized Popsorbetto and Popgelato bites dipped in chocolate and sprinkles. Scooping in both Brooklyn and Manhattan, this homemade ice cream maven serves up eight constantly rotating flavors and an old school soda selection for the real deal when it comes to floats. OddFellows’ in-house pasteurization process and locally sourced additive-free dairy products, along with a little heart and soul, go into the inventive concoctions made from scratch in their Williamsburg flagship. And those crunchy, perfectly crisscrossed waffle cones stacked on the counter? They make those, too. OddFellows seals the deal with an otherworldly Mast Brothers hot fudge sauce, making this dessert destination even sweeter. 75 East 4th Street between the Bowery and Second Avenue

These guys came rolling into town (literally) back in 2009, serving up inventive flavor pairings with flair from a brightly colored truck. Lauded by critics as “a cross between Mister Softee and Mario Batali” the Big Gay team opened two brick and mortar outposts, catering to adoring
fans with traditional soft serve loaded up with fun, eclectic toppings, from wasabi pea dust and ‘Nilla wafers to olive oil and Nutella. Lines form quickly, so be sure to arrive early for a taste of NYC’s finest. Bonus: Big Gay Ice Cream now serves gluten free cones. Multiple Locations
4. MOMOFUKU MILK BAR
A proud member of David Chang’s iconic NYC restaurant empire -- a tour de force of whole duck dinners, uncommon tasting menus and fire-blazing cocktails to boot -- this café/dessert destination raises the bar with one-of-a-kind creations from acclaimed sweet maven Christina Tosi. Sweet tooths rejoice with their uber-famous (now trademarked) cereal-milk soft serve, which tastes exactly as it sounds, and now even travels with its own trademark. Yes, it’s that good.
