WELCOME It's great to see you again! You made it. We're half way through 2020 and let's face it, it's been six months to forget for most. With the world waking from its hibernation and the inequality we have all witnessed, we hope and pray for positivity. Though the current situation is difficult, we wanted to take the opportunity to share our thoughts using our platform. In this edition, we are of course addressing the drama of travel in a post covid-19 world. From where to travel and what you can do, to staying safe and adapting to a new normal However, there is a more important issue at hand. One that has affected us deeply and we hope our humble content will help us all to address the issue of equality in the world we live in today. So sit back, enjoy this seasons edition and prepare to go back out and explore the world again.

Australia's boarders are set to remain closed for some time, with the expected travel bubble between Australia and New Zealand in the months to come. THAILAND OPENS DOMESTIC TRAVELS; INTERNATIONAL BOARDERS TO REMAIN CLOSED For the first time in more than ten weeks, there is no curfew in Thailand. While life in Thailand will slowly be going back to normal, including the reopening of schools, restaurants, and the return of domestic travel, trains and buses, there are still no immediete plans to accept international flights. Thailand as a whole has a little more than 3,100 cases, with nearly 60 deaths. Authorities said they were able to take the latest steps because the country has now been through six weeks with fewer than ten new cases of COVID-19 on most days.

BRITISH HOLIDAYMAKERS COULD ENJOY OVERSEAS BREAKS SOON Foreign holidays may restart as early as July 4 for British holidaymakers under plans being drawn up by the government. The British PM, Boris Johnson, is expected to announce on June 29 that agreements have been made for socalled air bridges with a “small number” of countries with low levels of coronavirus. BACK TO BALI; TOURISTS MAY BE WELCOME AS EARLY AS OCTOBER Travellers could get a chance to enjoy the paradise like island of Bali as early as October this year. Indonesia's major tourist hub, Bali, has also been successful in containing its coronavirus outbreak, with less than 350 confirmed cases and, at the time of writing, a total of four deaths. The Indonesian island now hopes to welcome tourists back by October, provided its infection rates stay low. Its unclear what the entry requirements will be if restrictions are lifted later this year, or whether Bali will accept travelers from regions badly affected by the pandemic.
Construction for the Universal Hip Hop Museum, a museum dedicated to the history and prominent figures of hip hop music is expected to opening sometime in 2023 in celebration of the musical genre’s 50th anniversary. The museum is a collaboration between Microsoft and the MIT Center for Advanced Virtuality and artists Grand Wizzard Theodore, Kurtis Blow, Ice-T, Nas, Q-Tip, and LL Cool J., among others. There is currently a pop-up museum in the Bronx Terminal Market, but the new location will be permanent.

FAST & FUN FALAFEL BURGERS You Will Need 400g can chickpeas, drained 1 small red onion, roughly chopped 1 garlic clove, Chopped handful of parsley 1 tsp ground cumin 1 tsp ground coriander ⁄ tsp harissa paste 2 tbsp plain flour 2 tbsp Canola oil Toasted pitta bread, to serve 200g tub tomato salsa, to serve Green salad, to serve 1. Drain a 400g can of chickpeas and pat dry with kitchen paper. 2. Tip into a food processor along with the red onion, garlic, parsley, cumin, coriander, harissa paste, plain flour and a little salt. 3. Blend until fairly smooth, then shape into small patties with your hands. 4. Heat the oil in a non-stick frying pan, add the burgers, then quickly fry for 3 mins on each side until lightly golden. .5. Serve with toasted pitta bread with the tomato salsa and a green salad.
PERFECT CAJUN STYLE CHICKEN You Will Need 12 medium sized pieces of chicken (skin on) 2 cups of buttermilk 2 medium eggs 1 tsp paprika 2 cups of plain flour 1 tsp of cayenne pepper 1 tsp of garlic powder 1 tsp of black pepper 3 sprigs of fresh thyme 1. With the chicken in a bowl, add the buttermilk, eggs, paprika and 1 tsp of salt and mix thoroughly. Place the chicken in a freezer bag and leave to marinade overnight or at least 4 hours 2. Now make the magic coating. Combine the plain flour, cayenne pepper, garlic powder, black pepper, thyme and another tsp of paprika and mix together 3. Take your chicken and coat in the flour mixture 4. Deep fry in your choice of oil on a medium heat for at least 15 minutes or until cooked Click HERE for a video tutorial
GOOEY CHOCOLATE CHIP COOKIES You Will Need 250g plain flour 1/2 tsp bicarbonate of soda 1/2 tsp salt 170g unsalted butter, melted 150g dark brown sugar 50g light brown sugar 100g golden caster sugar 1 tbsp vanilla extract 2 eggs 350g chocolate chips or chunks 1. Preheat your oven to 170C and grease three large cookie trays. 2. Whisk the flour salt and bicarbonate of soda in a large bowl. 3. In a smaller bowl, melt the butter and stir in the sugars. Beat until well to a toffee texture. 4. Beat in the eggs and vanilla into the butter sugar mix, and then pour everything into the larger bowl with the flour. Mix until just blended & add your chocolate chips.
5. Place heaped tablespoons on the greased tray 10 cm apart. Sprinkle a little sea salt onto each cookie and cook for 12 minutes. Remove and cool.

DID YOU KNOW? There are exactly 187,888 lakes (which are larger than 500 m²) and 179,584 islands within the territory of Finland! Both are world records. Lake Saimaa is the biggest in Finland, the fourth largest in Europe, and the second largest in the European Union at 1,700 square miles. Finland also has nine more lakes which stretch to over 100 square miles. However, when it comes to their depths, most of Finland’s lakes are surprisingly shallow, having been formed from glaciation during the last ice age. Only three lakes in Finland are deeper than 300. There are also 95,000 islands off Finland’s coast, mostly small, making it a navigational challenge for sailors.

WHEN TO VISIT FINLAND From September to March, visitors are guaranteed a splendid show of the Northern Lights almost every other night, if the sky stays clear. Also in the north of Finland is Utsjoki, where the sun stays above the horizon for more than two months, from mid-May to the start of July, giving the country its nickname, The Land of the Midnight Sun.
