he doorbell chimes in my house a lot more these days and, when it does, my family look at each other with a mix of excitement and anticipation but also apprehension and dread. Is it a Christmas gift delivery or the hamper my aunt always sends us? Or is it a rosette-wearing, manifesto-waving political canvasser from any of the eight different parties standing in my London borough? At the time of writing, it’s not known who will be our next Prime Minister, if deals will need to be done for a coalition government and whether Britain will leave or remain in the EU. Will it be Boris or Jeremy who will be enjoying Christmas Day at Chequers? Our cover star however is the ultimate statesman and inside brilliant wildlife photographer David Yarrow tells how he achieved this incredible shot of an adult polar bear in the wilds of Alaska. “What I see in his eyes are wisdom, security and governance. He is totally in control – a bit like a meeting with a therapist. He has all the answers to my none. It’s a fireside chat at the top of the world with a statesman. I think he is telling me that he likes his tea white with no sugar. avid Yarrow’s first encounter with a wild animal wasn’t without its problems. In Amboseli, Kenya, where the flat and arid landscape makes for optimum animalspotting opportunities, the photographer and his guide sought to photograph a lioness they had seen sleeping with her cubs. Just after sunrise, he sprayed his camera with deodorant and dropped it in a metal casing, 200 yards from where the family slept. As predicted, the lioness approached to inspect this unusual object, and Yarrow captured the moment using a PocketWizard remote-control unit. What happened next, however, was less predictable: taking the 22-pound box in her jaw, the lioness made off with both the camera and the card. The money shot – and Yarrow’s equipment – had been pinched, and by one of the world’s most ferocious predators no less. Yarrow was able to recover the box some hours later, his camera and photograph intact. For the photographer, it marked the beginning of a new era – an era in which he would attempt, and succeed, to capture the world’s most dangerous animals on camera. Today, Yarrow’s portfolio features a monochrome menagerie that spans elephants to polar bears to orangutans to cheetahs. His photographs are intimate and at the same time immense, capturing the enormity of nature’s beasts in breathtaking proportions. The best of his work is highlighted in a new book, David Yarrow, published by Rizzoli and featuring some of the photographer’s most recognisable snaps: a scarred and regal lion, a huddle of elephants standing in formation, two penguins embracing one another and a jet black panther mid leap. In one, Cindy Crawford takes the wheel of a convertible, a wolf perched in the passenger seat. “I’m not sure there is any other photographer alive who could have persuaded me to go to Nevada City, Montana, during a

blizzard to sit in a convertible with a very large wolf,” Crawford writes in the afterword. “I assumed these animals would be trained like I imagine movie animals are. I had no idea that their ‘training’ mostly involved pieces of raw chicken being tossed toward us (me and the wolf ) to get our attention. It worked! For someone who is afraid around big dogs, this was way out of my comfort zone. But it was also an incredible experience that I wouldn’t trade.” In isolated locations, Yarrow uses remote-control equipment to get up-close-and-personal with his wilder subjects, allowing him to create intimate portraits of creatures not used to – or fit for – human interaction. Though his subjects are predominantly animals – with the odd famous model thrown in for good measure – Yarrow shrugs off the typical ‘wildlife photography’ label. “I am not a wildlife photographer; I am a photographer,” he argues. “I may not accept wedding assignments and have no appetite for documenting flower or food arrangements, but in the main, I am subject agnostic with just one caveat—the subject must interest me or challenge me. “I want this book to showcase the breadth and magnificence of life on our planet by taking readers on an evocative and immersive journey that is distinctive.” That it certainly does – from the most ferocious to the cutest, nature’s beasts are captured from their best angles in this striking tome, for which all royalties will be donated to conservation efforts around the globe, namely Tusk in the United Kingdom and WildAid in the United States. It’s thanks to these conservation efforts, Yarrow has said, that he is able to have such extraordinary access to animals, and in turn produce the most spectacular wildlife photographs. But it’s not all about right place, right time. David Yarrow reveals the story behind our cover photo I guess on the one hand this is a fairly straightforward portrait of an adult male polar bear – there is nothing dramatic going on and no collapsing iceberg in the background. But the encounter was surreal and it did take some time for it all to sink in. But on the other hand, there is fine detail in this study. He is totally comfortable with my presence and happy merely to observe and continue being who he is – the ultimate alpha mammal. His relaxed demeanour allowed me to inch closer and wait for head-on eye to eye contact. Only then can we stare into his unique world. What do I see in his eyes? Wisdom, security and governance. There are very few places in the world where this shot could be taken and those that know polar bear habitats will probably know that this perspective is most likely to be found on the North Slope of Alaska. It may not be the most beautiful place in the world to photograph polar bears, but it is still – in my humble opinion – the best place in the world to see polar bears. There is a subtle difference between the two, but I confess to playing the numbers game and therefore have an affinity to this barren bleak coastline. In September, the bears are out in force and they are not spooked by humans – we almost co-habit at this time of year. 28

erhaps Saoirse Ronan was always destined for greatness. She was making waves in the film industry by the time she was 10 years old. Aged just 13, her precocious turn in sweeping period epic Atonement won her an Academy Award nomination. With a string of successes under her belt, including smash-hit indie flicks Brooklyn in 2015 and Lady Bird in 2017, Ronan will now take the lead as Louisa May Alcott’s semi-autobiographical protagonist Jo March, in the star-studded big-budget new film of Little Women, released this Christmas. “It’s mad lucky to play her,” Ronan says. “You read the book and you watch the other film versions and you realise that she’s an amazing character. There’s so much you can do with her and I think there’s a lot that we explore that hasn’t been explored as much before. It’s been such a treat to delve into all the nooks and crannies of this character – she’s essentially Louisa May Alcott – and learning about Alcott’s life really helped.” Such attention to detail is characteristic. It’s an approach that has already earned Ronan, at 25 years old, a trio of Oscar nods. Little Women may well bring her name to the fore once more come awards season, and it can only be a matter of time before she earns that first big win from the Academy. But even an actor as experienced as she is can find the pressure to deliver from fans and critics alike difficult to handle. “I’m often nervous, just at the start,” she admits. “The first few days on the set I’m thinking, ‘This time I can’t do it. I don’t know how I’m going to manage’. But then I settle down and I feel so much at home and part of the creative process, and I’m

able to find that rhythm working with the other actors.” Little Women sees Ronan reunited with much-praised Lady Bird screenwriter and director Greta Gerwig, and gives them the opportunity to work their magic on a far larger scale. “Greta has been a huge influence on me, and I admire her so much,” smiles Ronan. “It’s been wonderful to watch her take on this huge film – I don’t think any of us realised until we were in it how big it was. There’s a lot of film there! And again, just like in Lady Bird, she knows exactly what she’s going to do with the story; you just know the film is in really safe hands.” Although well-known period pieces are popular fare in Hollywood, Ronan is quick is point out that the underlying themes of Little Women still resonate in today’s world. “It’s an important story for women,” she says. “Maybe it’s more relevant today than at any other time because of the #MeToo movement and how women are demanding that our

voices be heard, and how we need to make more films that reflect women’s lives and tell our stories. “Greta did that with Lady Bird, which was largely based on her own experience growing up in California. She’s always loved Little Women and she wanted to make this film as a way of exploring sisterhood and female friendship and love. Those are timeless things and she’s done an amazing job.” For Little Women, due for release in the UK on 26 December, Gerwig has assembled a stellar cast as the March sisters, with Ronan joined by Emma Watson, Florence Pugh and Australian youngster Eliza Scanlen. Laura Dern and Meryl Streep bring additional heavyweight star power. Ronan is clearly aware of the current opportunities afforded by a Hollywood more open than ever to financing female-led projects and amplifying women’s voices, but this is not a new priority for her. Her back catalogue shows a long association with

a wealth of female directors – from Gerwig to Aussie veteran Gillian Armstrong. “It’s starting to become more of the norm now that women are getting a chance to make their own films, so the sentiment is very sincere and it’s very authentic. That’s fantastic,” she says. “The result, in turn, is that the projects these women want to make are good. First and foremost, for me, I want to make a film because it’s a good project. “I’ve worked with a lot of women throughout my career, since the age of 10; it’s always felt quite normal to me. It’s never felt like something that I’ve had to go out of my way to find. Whenever possible, I would like to work with female directors. Women have to work harder than men, both in front of and behind the camera, and we need to come out of the shadows in all areas in society.” For New York-born, Dublin-raised Ronan, it’s also important to acknowledge her heritage on both sides of the Atlantic. “It’s a real gift that my parents gave me that I can look at two places as home,” she says. “New York is a really huge part of me. That’s where I was born; I lived there until I was three and it very much made my parents into the people that they are. I associate Ireland with my childhood, as a place where I grew up and went to school. It’s the land where my roots lie and where my family lives. Those two worlds are both part of my personality. I see them as being complementary to me and I don’t separate or distinguish them. They are part of my reality and my imagination.”

Ronan’s parents are actor Paul Ronan, who had parts in films such as The Devil’s Own and TV series The Tudors, and Monica Ronan, who was a child actor herself, so being on set is almost second nature to her. “I don’t really have any way of comparing my childhood to how other people have grown up,” she says. “Acting has always been this very stable, constant part of life and being on a set and being part of this industry has been a very important and rewarding part of my life.” This also, however, meant that she lived in what she calls a “closed world” for some years. “It was only when I moved to New York and had to cook for myself, take care of my groceries, and pay my bills that I started to emerge out of my cocoon,” she recalls. “That’s the time when I really gained so much respect for my mother and all the things that she has done for me. I am close to my mother in a ridiculous way – I always have been and still she is my best friend – and my dad is incredibly proud of everything that has happened for me. I do feel bad for Mum that she is stuck with two actors!” With Little Women and her starring role opposite Meryl Streep – one of the greatest actresses alive today – there’s a growing sense that Ronan has made it. From early acclaim to indie darling, she will now be able to showcase her hard work, dedication and consummate skill in a big-budget arena – although future projects could well see her honing her craft in far more intimate surroundings. “I want to be able to keep working on stage,” she says. “I love going to the theatre a lot as a spectator and my dad has always told me that a film actor is not a complete performer unless they alternate between the stage and the cinema.” Whatever project she tackles next, it seems certain that Ronan’s star is destined to keep rising. 35

s if the Brexit debacle couldn’t get any more conflicted, a whole new, unforeseen complexity has arisen – and this may be the most dismal of all. A snap election? We’re nonplussed. A potential third Prime Minister in less than six months? OK sure. But a pigs in blankets shortage? These truly are dark days. In October, the British Meat Processors Association announced festive meat treats in short supply. Sixty per cent of the labour force for UK meat production comes from overseas, and a shortage of seasonal EU workers means our beloved Christmas side dish will be scarce. Couple this with an ongoing debate about roast potato portions – sparked by BBC Good Food, which suggested just one potato per person was more than enough – and this year’s Christmas dinner is set to be decidedly more political than we would like. Those tasked with cooking will want to keep the heat confined to the kitchen. From 4am turkey basting wake-up-calls to soggy sprouts, Christmas dinner is a tricky meal to tackle, and not without its mishaps. The pressure is on – and with a house full, you’ll be no short of critics. At Sauce by The Langham, cooking disasters are in short supply. Executive chef Chris King, who fronts the hotel’s entire restaurant offering, is adept at keeping even the clumsiest of cooks in line. For Christmas, he and his team are sharing their expertise in a series of festive-inspired masterclasses, during which guests learn how to perfect the ultimate roast potatoes, the easiest of canapés and the mince pie to end all mince pies.

BEST SPUDS “This is how McDonalds make their chips.” Here I am, in one of London’s most-elite five-star hotels, in the kitchen with the executive chef of not one but four restaurants, and I’m learning the trade secrets behind, er, French fries? A glug of white wine vinegar is added to the pot of boiling potatoes. Just a tablespoon is enough, King says, and your tatties can taste as good as Ronald McDonald’s. ‘The best roast potatoes in the world’ is a bold claim to make, but the team at The Langham are in a good position to make such a statement. At the hotel’s pub, The Wigmore, King’s crew produces 150 kilos of chips a day – and his remarkable roasties are based on the same recipe. They’re also delightfully simple to make and, true to claim, delicious. A slick of vinegar is the secret ingredient, but it begins with the potatoes themselves. Maris Piper or King Edward spuds are the cream of the crop – and don’t even think about using baking potatoes. A high sugar and starch content means they are more likely to caramelise and burn around the edges, King explains. Potatoes shrink, too, so the chunkier your spuds the better. One large potato cut in half should do the trick. While they’re boiling (for 10-15 minutes or, as King puts it, “until they’re cooked”), the second stage begins: olive oil. Olive pomace oil is the chef’s personal choice. It’s essentially olive oil in its purest form – none of this extra virgin malarkey – and can be found in most supermarkets. “In Tesco Bethnal Green, it’s in the Asian section,” King grins. He pours a generous layer onto the bottom of his pan and sticks it in the oven to heat while the potatoes bubble on the stove. Between cooking tips, glasses of champagne are handed out to get us truly into the festive spirit. The Sauce by The Langham kitchen is the stuff that culinary dreams are made of; a rustic, country-style space injected with the best tech money can buy. Cooking stations allow you to get in on the action and we take turns showing off our best (or, in some cases, worst) chef skills, while King leads the class from the head table. Potatoes boiled, the chef lines his oil-coated tray with greaseproof paper and pops his spuds on top. They crackle as they hit the pool of scalding liquid. This is trade secret number three: shallow frying. With a healthy dose of olive oil and the oven turned up as high as it can go, the potatoes fry, rather than roast. Forty minutes should be enough, King says, and make sure to turn them three or four times during cooking. Post-roast, season to taste.

PREP SCHOOL Aside from full bellies and a new-found appreciation for potatoes, the biggest takeaway from the Sauce by The Langham’s festive cooking class is preparation. As he wows us with tatty trickery, King hammers home the importance of groundwork. Everything he teaches us is designed so it can be started the day before, and finished shortly before you’re ready to eat. His roasties, for example, can be prepared up to the boil, and kept in the fridge until they are ready to be whacked in the oven the next day. We’re shown how to craft a platter of crowd-pleasing crumpet canapés, which are based on a recipe used in The Wigmore. These little pillowing balls of doughy heaven are simple to make but look far more impressive than your typical shop-bought blini – in part thanks to the cookie cutter moulds we pipe our mixture into. These too can be made ahead of time, and finished with a topping of your choice on the day. Ours feature dainty salmon, cream cheese and wasabi crowns and disappear as quickly as they were made. LIFE OF PIE The cherries on top are the game-changing mince pies. Sure to please even the most resolute of mince pie critics, these almondbased treats sway from tradition and are all the better for it. Crispy almond sable biscuits provide the base and lid, while thick almond cream piped into a cupcake mould forms the body. A generous spoonful of mincemeat and a dusting of icing sugar complete the treat. Served warm, they are delicious – and worth the effort. BON APPÉTIT Our work is rewarded with plates piled high with our creations. Fluffy potatoes, perfectly pink beef, Brussels sprouts, carrots and stuffing swim in pools of liberally-poured gravy. We eat in Sauce by The Langham’s private dining room, where a large oak table is dressed with candles, crackers and holly, and glasses of wine are raised to toast our new-found talents. Stomachs full and waistbands considerably looser, we’re gifted a recipe pack so we can share these skills with the rest of the world. Christmas dinner suddenly looks decidedly less daunting. he UK’s craft spirits category is ascending swiftly. While 2016 was hailed the year of gin by the UK’s wine and spirit association, whisky is far from on the rocks. Whisky has seen a surge in both sales and popularity thanks to the value now placed on experiential lifestyles. Journeys that take in production methods, rich heritages and stories about age-old craftsmanship are in demand, and the UK’s whisky distilleries are answering this calling with gusto. When it comes to rich heritage, Scotland takes the crown in the whisky stakes. The earliest record of distillation in Scotland occurred in 1495. Originally only made from malted barley, the commercialisation of whisky in the late 18th century saw the introduction of wheat and rye-based varieties, but the requirement to be aged for a minimum of three years in oak barrels stands (and usually the older the whisky the better the quality, and the higher the price). A combination of malted barley, yeast and water are the only ingredients, but how it’s finished is what affects the final nuances. Sherry casks provide a rounded, fruiter taste, while smoky, peaty whiskies get their flavour from peat fires that are sometimes used in the drying process during barley malting. To date, there are more than 120 whisky distilleries in Scotland alone, spread across five distinct regions: The Highlands, the Lowlands, the Isle of Islay, Campbeltown and Speyside (although the latter is not officially recognised, and grouped in with the Highlands). running from the mountains and counts distilleries, such as Glenkinchie, which is just a stone’s throw from the capital, within its ranks. For something highly memorable, try Glenkinchie’s Behind the Scenes tour (£100 per person). This entails tasting the malt, sampling the wash, then drawing both a 1988 European Oak and a 2001 American oak whisky straight from the cask. In contrast, the Highlands covers the widest expanse of land, and naturally offers the most variation in flavour. The famed Dalwhinnie is the highest distillery in Scotland, while Royal Lochnagar is located just by the Balmoral estate. Hailing from the lush, rain-washed Speyside valley, and competing with Glenfiddich – famously the best-selling whisky in the world – The Balvenie is the only distillery in the Scottish Highlands that maintains the ‘five rare crafts’ of

whisky making: Home-grown barley, malting floor, copper stills, cooperage and the all-important malt master. The Balvenie launched The Balvenie Stories whisky range earlier this year, encompassing 12 year old Sweet Toast of American Oak, 14 year old Week of Peat and the 26 year old Day of Dark Barley, each liquid bringing its own unique and interesting story to life. Stewart MBE and have a go at bottling your own tipple in Warehouse 24 on The Balvenie Distillery tour (£50 per person). When we think of Scotland, we often think of an unforgiving climate and the soaring peaks of the Scottish Islands. Talisker is the oldest working distillery on the Isle of Skye, set on the shores of Loch Harport with dramatic views of the Cuillins. Producing an alluring, sweet, full-bodied single malt, it is known for being a whisky made by the sea. Talisker Storm is the distillery’s award-winning whisky, celebrated for its peppery, sweet and salty flavours. Described by Rob Allanson in Whisky Magazine as having “well-balanced waves of smoke and sweetness”, purists like to ‘nose’ and then ‘chew’ the whisky, before drinking it neat.

FROM PALATE TO PLATE Salty maritime whiskies like Talisker are great with seafood. Accompany it with oysters or smoked salmon Peated, earthy and smoky single malts like Lagavulin pair well with the salty, intense flavour of mature cheese. Light, dry and smoky whiskies such as Knockando bring out the notes of savoury dishes, such as vegetarian haggis. Smooth, sweet and dry whiskies, like Glen Ord bring out the rich complexity of character in cured meats 46

This process gives your senses a chance to embrace the myriad of flavours, but for those not well-versed in sipping on straight spirits, the option to soften with water may appeal. Any fresh water, but ideally spring water, can really open up a single malt – especially cask-strength whiskies (which have gone from cask to bottle without being watered down, and tend to be anywhere from 55 to 70 per cent proof ). Likewise, adding ice to a single malt can make it more refreshing, as well as open up some of the more delicate notes. But you’re unlikely to find ice in your glass at a whisky tasting. And then there’s Bowmore, one of Scotland’s oldest distilleries located on the shores of the picturesque Loch Indaal, renowned for experiencing four seasons of weather in one day. If you take a glass of Bowmore 25 Year Old in hand, on first glance you will see a mellow mahogany colour. Breathe in and you may detect an intense hint of sherry and stewed fruits, with a trace of smokiness. On first sip your palate will recognise delicious toffee and hazelnut, woven together with just a hint of sweet peat smoke. And long-after you can savour a mellow, gentle and incredibly complex finish. Of course, whisky is not unique to Scotland. There are some exciting distilleries just across the water in Wales, namely Penderyn Distillery, which celebrates its 20th anniversary in 2020. And whisky is not the reserve of men. In fact, the Welsh variety is so good that Kylie admits to having Penderyn Single Malt Whisky (with a Madeira finish) sent to her dressing room for after every performance.

Both historic yet forward-thinking and innovative, the Irish whiskey (note the ‘e’ in Irish whiskey) industry is very much alive and well. Green Spot is a single pot still Irish whiskey produced specifically for Mitchell & Son of Dublin by Irish Distillers at the Midleton Distillery in Cork, Ireland, and is described by whiskey writer Jim Murray as “unquestionably one of the world's great whiskeys”. Writers Tears is a favourite across Ireland and a good option for whiskey amateurs to sample. Rich in honey and fruit, the nose brings a hint of orchard fruit and an introduction of vanilla, while the finish adds baking spices. Even in Blighty, there are now 14 whisky distilleries spread across the land (in various stages of development). Adnams Copper House Distillery in Southwold is one of the most water and energy-efficient distilleries in the UK. The first brewery to cross over to distillery, it uses the same local ingredients to make its spirits – barley, rye, wheat and oats – as it does for its beers. Adnams Triple Malt, which is aged in new American oak barrels, boasts bold, strong flavours of coconut, chocolate and exploding spices. On the West side, the Cotswold Distillery has been producing natural spirits since 2014. Its flagship Cotswolds Single Malt is a rich, fruity and sippable whisky, but for the more mature palate, the distillery has recently launched its cask strength release single malt, Founder's Choice, aged exclusively in its founder Dan's favourite casks: shaved, toasted and re-charred American Oak red wine barriques. This boutique distillery accommodates around 30,000 visitors each year, testament to the popularity of small batch craft spirits here in the UK. In 2019, three more distilleries ‘came of age’, meaning their first batch of threeyear old whiskies are now available for consumption: Dartmoor Whisky Distillery, London Bimber Distillery and Spirit of Yorkshire. And in 2020, both Cooper King Distillery in Yorkshire and Copper Rivet Distillery in the south east will join them. So, while the summer was awash with gin and Aperol Spritz, make sure you hunker down to dram of whisky this winter – it’s sure to warm the cockles of your heart, not to mention put hairs on your chest.

he holiday season is the perfect time to be experimental and playful with make-up, so the best way to achieve a fabulously festive look is to have fun with it. Chanel make-up artist Kay Montano says it’s all about shimmer and shine: “I like shiny eyes, and these days formulas are much softer, meaning the particles aren’t as chunky, which allows them to lie smoothly on the skin.” This year, Chanel global creative make-up and colour designer, Lucia Pica, was inspired by Coco Chanel’s love of ornaments when creating the brand’s 2019 Collection. Chanel artist Montano says: “Achieving a great look is about doing what you feel suits you and makes you feel most comfortable. I would suggest choosing a feature to emphasise and keeping the rest simple. When I’m working with clients, I tend to go light and shiny on the eyes if the lips are a very strong shade of red. “This approach makes getting the look this season something you can take control of by unleashing your personal creativity when experimenting with products. Your make-up can be an extension of your individual style. “The feline look is strong, mischievous and associated with glamour. It also suits most people. You can dial it up a notch for the party season by making it smoky for added intensity. For this I’d suggest using a dark pencil and blendable eyeshadows to create a diffused look.” But it’s all about the base, and creating a luminous look on your skin is a key first step. “Shiny cheeks are gorgeous; no one wants flat cheekbones. When balancing a dramatic eye or bold lip with flawless, glowy skin, I suggest mattifying the T-zone with loose powder to set your make up in place and keep it looking fresh throughout the night, and leaving the cheeks alone. Instead, sweep a dusting of highlighter onto the cheeks with some blusher for added colour and also apply to the centre of eye lids to make them pop. A great trick is to also add shimmer in the tear duct area.” And if there’s ever a time to be bold with a red lip, it’s Christmas. “Wearing a red lip is like adding a handbag to tie everything together. A timeless, polished make up look which combines a light eye and dewy skin with a rose-bud lip is a great accessory to any Christmas outfit. “The lipsticks in the Chanel Holiday 2019 Collection have strong pigments without being intimidating, as they are incredibly flattering and buildable, allowing you to control their intensity to achieve your desired look. “And pay attention to your nails. A great way to amplify a neutral or monochromatic outfit is to be brave with colour. “Overall, the key to achieving the ultimate festive look is to go for glamour by experimenting with what makes you feel most confident, whether this be a bold eye, strong lip or both. The most important thing is to have fun with your look and make it your own.”

o small is Jukkasjärvi that it has just one road. Located in Swedish Lapland, the town is 120 miles north of the Arctic Circle and in the winter, when temperatures can drop to as low as -16˚C, it is sparse. Everything is white. Rustic cottages wear coats of snow and branches bow from the weight of icy tips. Even my eyelashes sport snowflake mascara, and as I shuffle along the road my feet leave tell-tale prints behind me. At the end of the highway, the blood red exterior of the local church brings upset to the blank canvas. A veritable Gingerbread House with a scalloped-trim roof, made all the more twee by its snow white hat, it is the oldest church in the region and has witnessed expansive change to its tiny hometown. In the 1970s, engineer Yngve Bergqvist, who worked for a local

mining company in the neighbouring Kiruna, founded a canoe centre on the banks of Jukkasjärvi’s Torne River, which, during the summer, attracted more than 5,000 visitors a year. It put the village on the map, but only for a few months at a time. Come winter, which in Swedish Lapland stretches across five months, Jukkasjärvi would become an arctic desert land once again, with the lake transformed into an ice block 60cm thick and strong enough to hold the weight of a car. It was while on a trip to Japan in 1989 that Bergqvist found a solution for Jukkasjärvi’s winter wasteland. He happened upon two sculptors who crafted brilliant figures out of the very commodity the Arctic Circle produces in droves: ice. That year, the sculptors set up shop in Sweden, hosting an art workshop at the request of Bergqvist – and so began the Icehotel story. For the next 11 years, the workshops gained traction and a legion of loyal art fans. Such was the furore surrounding it that in 1992, Arctic Hall opened – a 250 square metre igloo-cumart gallery perched on the banks of the Torne. A year later, by chance, the gallery hosted its first overnight visitors – a group of colleagues on a business trip, who found themselves without a place to stay. Armed with sleeping bags and reindeer skins, they bedded down in the igloo and lived to tell the tale. 99

Today, 50,000 visitors descend on Jukkasjärvi each year to visit what is now known as the Icehotel. Crafted anew every November from 2,000 ice blocks harvested from the Torne River, Icehotel comprises a series of Art Suites – individually designed by different artists each year – and a selection of standard ice rooms. There are also a number of permanent rooms – some of which are en-suite – which are located in Icehotel 365, an all-year round, solar-powered space that you can visit during the warmer months (there’s also an adjoining Ice Bar for cocktails in the rocks). But it’s the temporary installation that provides the biggest thrill. Each design is unique and more impressive than the next. If you’re willing to brave the -5˚C temperature, you may find yourself snoozing next to a glacial life-sized campervan, below the belly of a whale carved from snow or under the watchful eye of two scarily realistic, and somewhat unnerving, crystalline clowns. My room is an icicle ode to religion, designed by Spanish architects Josu Gonzalez Ruiz and Emiliano Lorenzo, with cathedral-inspired spires and towering shards that circle the central bed. LED lights omit a purple glow and a chorus of choir singers provides the backing track (which, thankfully, can be turned off when it’s time to catch some shut eye). It is eerie and beautiful at once, the sub-zero temperatures making it all the more ethereal. To sleep in such conditions, all you need is one base layer, a pair of socks and a hat. It seems remarkably little, but your own body heat keeps the sleeping bag warm, which is Everest-standard and thus equipped for temperatures as low as -30˚C. Artistry aside, it is, admittedly, not the most glamorous of sleeping quarters. A reindeer skin is all that separates you from your ice block mattress and there are no toilets in the temporary hotel, lest you wish to brave the dash outside to the heated reception building. But there’s a reason

Icehotel tops many a bucket list – there is simply no experience quite like it. In 2018, it featured on BBC’s Amazing Hotels: Life Beyond the Lobby, vying with towering Singapore skyscrapers and Moroccan mansions as the best hotel in the world. Now in its 30th year, the Icehotel thrives. Such is its success that it is no longer visited for unique sleeping arrangements alone. Bergqvist’s madcap idea provided the catalyst for what is now a winter playground, complete with winter sports, delicious feasts and some quirky Swedish traditions.

WINTER WONDERLAND My hands are so cold I’m truly doubting whether my fingertips will survive the journey. Gripping the handlebars of my snowmobile I navigate my steed over a mound and speed up to catch the tail-end of the convoy. It’s night-time and we’re driving through a canopy of trees dripping with icicles in search of the Northern Lights. At one point, I think I can see them and enjoy the effervescent glow above for a blissful 10 minutes, before our group

The clouds are not on our side and our search is to no avail, but the journey isn’t without rewards. Our destination is a log cabin in the middle of the woods and, inside, a roaring fire brings life back to my limbs. Soon the welcome smell of dinner fills the hut and we gorge on a feast of bellywarming moose goulash, hot lingonberry juice and blueberry cake. The Lapland palate is limited thanks to the region’s climate, but the Icehotel’s wizard chefs are well-versed in the art of crafting delectable dishes all the same, and some of the best food is served during the activities. A cross country skiing tour across the surface of the lake is paused to devour a feast of sausage and flatbread, roasted over an open fire and enjoyed in a private enclave on the surface of a miniature island. It’s well-deserved fuel after the surprisingly strenuous shuffle across the Torne. Even a sauna experience is nourished with charcuterie boards and glasses of wine. Unlike your traditional hot box, a Swedish sauna (pronounced LU X U R Y L ON D ON .C O.U K

phonetically in this part of the world, and all the better for it) is a 10-step ritual that takes the body from cold to warm to cold again – and when they say cold, they mean it. A 20-minute stint in the coal-heated sauna is followed by a snow angel competition in our swimming costumes, and a mad dash back inside for a second sauna hit. Once we’ve reheated, we’re taken down to the river, where a section of the ice has been broken for our dipping pleasure. Plunged into water so cold they have to circulate it to stop it freezing over, we then sprint to the outdoor hot tub to recuperate under the stars, a cup of hot lingonberry juice in hand. The process is designed to rejuvenate, and that it certainly does. Our reward is dinner at the neighbouring Homestead restaurant, a timber building from the 1600s where buttery mashed potato, Swedish meatballs and tangy lingonberry sauce is heaped high on plates and smothered in gravy. It’s ultimate comfort food, the sort that warms you from the inside out and readies you for a deep sleep – the perfect feast, in fact, to prep you for a night on a mattress made of ice. 101

MEET THE ARTIST: PARKER HEYL Parker Heyl is a designer, roboticist and teaching fellow at the Interactive Architecture Lab at The Bartlett in London whose works voluntarily relinquish computerised regulation in favour of an analogue aesthetic.

Tell us a little bit about yourself. I trained as a carpenter at the Eli Whitney Museum and Workshop in New Haven, under director Bill Brown. He introduced me to woodworking as a kinetic medium. I designed experiments and toys using raw materials – wood scraps, thumb tacks, DC motors, telephone wire, AA batteries. These objects conduct electricity (and wood is an insulator) which together generates an electro-mechanical system. That’s how I began as a designer of automatons. Now, I always use sustainably sourced wood in my projects. Many do not realize that timber is the only sustainable architectural material – it has a neutral carbon footprint when every tree harvested is regrown. Tell us about the name, 16 Bits? There will be 16 small wooden boxes on display at Jubilee Place in Canary Wharf this January. Each has a mechanical toggle switch, with two positions: on and off. Visitors can interact with a large sculptural display using the switches. A ‘bit’ is the smallest amount of data in a digital computer, thus the amount of data being processed is extremely small for an interactive art installation (only 16 bits or 2 bytes). Why did Canary Wharf feel like a good home for the piece? The strong hand crafted aesthetic will contrast nicely inside the Jubilee Place shopping centre; I’ve avoided materials like metal and glass which surround Canary Wharf, to create a warm aura. The objects in London are not typically unique – coffee cups, napkins, bank card machines, cell phones – they are all objects which exist in many thousands of identical copies. My installation celebrates the imperfections of a handmade object, where the traces of labour have not been intentionally hidden. What’s next for you? I’m working on a robotic installation for Fold nightclub, redirecting the light at sunrise, I’m helping artist Rosana Antoli with a small piece for her upcoming exhibition at CentroCentro in Madrid and I’m work on a set design for the Brooklyn based pysrock band Crumb. 16 Bits by Parker Heyl, Jubilee Place; , 4-10pm, 16-25th January

YOUNG @ ARTS & SOCIAL CARE GROUP, BROMLEY BY BOW CENTRE Community Gallery, Canada Place Until Tuesday 7 Jan 2020 Lancelot Ribeiro’s oil cityscapes were influenced by his ancestral home of Goa, and this year were used as a stimulus for the ‘Young @ Arts’ Over 50s group. Artist Mürüde Mehmet had the group carve and paint ceramic tiles of places or buildings that had a personal resonance for them which acted as a reminiscent catalyst to draw out their stories. One lady revealed how she had been a child evacuee that was “just told to turn up at either Euston or Kings Cross” with no idea of where they were being sent. Gesturing outside, she revealed that bombs had been falling everywhere. Another, carving out Bow Church, recalled her friend’s wartime wedding there, in a dress made from reused parachute silk. The Social Care group was tasked by artist Mürüde Mehmet to paint portraits or townscapes on ceramic plates, referring to their choice of Ribeiro’s artwork that aligned with their own sense of identity. Several opted for the only realistic oil portrait he ever did in 1963 – that of his wife. Part of the V&A Ribeiro Community Arts Project.
