ore than 120,000 of us work here at Canary Wharf and I’ve no doubt the majority of us rush to work from the train, perhaps buying a coffee enroute, but usually never takeing note of our surroundings. Which is a pity as the area’s rich biodiversity is surely the Estate’s best kept secret. I’ve recently been walking to work through the foot-tunnel from Greenwich and it has been so rewarding (and not just for my waistline). In the past week alone, I’ve seen Canada geese, cormorants, swallows getting ready to migrate, and my favourite sight of all, a stunning heron at the clearly aptly named Heron Quays. I am determined to one day seek out the famous Sammy the Seal, said to frequent the Estate’s waterways. On page 34 we talk to Martin Gittings, Group Head of Sustainability for Canary Wharf Group, about the company’s 10-year Biodiversity Action plan and what we can all do to protect our local environments and the planet. He tells us how, through time, the area’s urban design has created a suitable living environment for native and threatened species of plants and animals. And he reveals we are surrounded by more green space than we may realise, with 8,000 square metres of green rooftops on the office and apartment buildings, and 4,000 more in the pipeline. While they may not be easily accessible for us to sunbathe on, they provide habitats for wildlife, improve air and water quality and reduce pollution. Much of this issue is dedicated to the subject of sustainability, conscious shopping and travel and how many brands are raising their green credentials. As Martin says, small actions can result in big changes.

The London Design Festival The London Design Festival returns this September for a week of installations, design-related events, tours, workshops and themed popups dotted throughout the city. P

enélope Cruz isn’t one to make an entrance. The petite actress slips unnoticed into The Rosebery tearoom at the Mandarin Oriental in Hyde Park, stealthily passing the gaggle of press that awaits her. She announces her arrival with a polite but shy “hello”, and seats herself on the chartreuse chaise longue, self-consciously arranging her ruffled Chanel dress before turning to fix her audience with that doe-eyed look that won over viewers of Vanilla Sky (2001), Nine (2009) and Vicky Cristina Barcelona (2008). This is not the Hollywood actress I was expecting. Far from being the life and soul of the room – she is being somewhat overshadowed by the formidable Nadja Swarovski, more on whom later – Cruz appears reserved. That is, until she speaks. Affable and charismatic, her sultry Spanish lilt still firmly intact, Cruz emits the same charm that has seen her rack up more than 70 cinematic credits. We’re here to discuss her latest synthetic jewellery collection with Atelier Swarovski, and as the tearoom’s fuchsia cushions, gold cake stands and chattering diners are cleared to make way for jewellery display cases, Cruz waxes lyrical about the importance of conscious luxury. “I really care about having a positive impact on the planet, in what I do, what I wear and what my family and I consume,” she says, gesticulating passionately as she explains her commitment to sustainability. Her fervour comes as something of a surprise – Hollywood isn’t the first place I’d look for environmentalists. But Cruz instils a passion into everything she does. From Hollywood to haute joillerie, if she’s involved, she says, she’s in it for the long-haul. “With my message it’s all honest,” she shrugs. “I don’t want to give my name to something if I have not been involved, because that’s fake.” Born in a working-class suburb of Madrid as the eldest of three children to Eduardo, who worked in a hardware shop, and Encara, who ran a hair and beauty salon, Cruz was interested in performance from the off. She initially dreamed of dancing, and studied classical ballet for nine years at Spain’s National Conservatory. Today, she says her years perfecting demi-pliés were crucial to her future acting career, crediting dance with

“I really care about having a positive impact on the planet”

generating the discipline required for a life on screen. Her fascination with film began aged 13, when her father bought home a Betamax video player. In lieu of a nearby cinema, she wore it out, watching the likes of Marilyn Monroe and Sophia Loren storm the screen. “Nobody around me had a job related to the arts, music, anything like that,” the 45-year-old told Esquire in 2017. “The dream was much more humble, but it was big for me. It was: ‘I want to be independent when I’m older and have a job that I love. It’s either going to be a dancer or an actress’. Just to be able to eat from that, that was my dream.” It was watching Spanish director Pedro Almodóvar’s 1989 film Tie Me Up! Tie Me Down! that convinced Cruz acting was the career for her. Aged 14 and alone in a cinema in central Madrid, she was mesmerised, so much so that afterwards she wandered the streets for hours, concocting a plan that would change her life. She decided she needed representation and bugged a talent agency to give her a screen test. She failed three times due to being too young but, at the final hurdle, nabbed a spot thanks to a flawless improvised performance. She still has the same agent 30 years later. Her feature-film debut came in 1992, when she starred in the raunchy comedy Jamón Jamón aged 18. Her performance earned her the first of many Goya awards, the Spanish equivalent of the Oscars. It was a pivotal role, not just for kick-starting her career, but because it was where she met her husband, her co-star Javier Bardem – although the relationship didn’t start until 16 years later (they married in 2010). Today the couple are something of Spanish royalty – to date they are the only Spanish actors to win Academy Awards, the first of which went to Bardem in 2007 for No Country for Old Men, and the second of which went to Cruz for her role as Maria 23

Elena in Woody Allen’s 2008 hit Vicky Christina Barcelona, in which Bardem also appeared. They live together in Madrid with their two children, a son and a daughter, and while they have an agreement not to speak about one another in the press they are often seen together on screen. In fact, some of their best films independently are the ones in which they star together: The Counselor (2013), Loving Pablo (2017) and Everybody Knows (2018), to name a few. Her second big break came courtesy of her favourite director: Almodóvar’s Live Flesh (1997). So impressed was the director with Cruz that he wrote and expanded the role of Isabel Plaza Caballero especially for her. They’ve since released five more films together. This August, they will release their seventh: the emotionally potent Pain and Glory. The director’s semi-autobiographical flick charts the life of Salvador Mallo (Antonio Banderas), an aging filmmaker at crisis point. Suffering from chronic back pain, Mallo, who is considering retirement, experiences a series of encounters – some of which are real and some remembered – that alter his course. Cruz plays Mallo’s mother in the flashbacks that flit throughout the film. Seven movies in, the buzz of working with her favourite director hasn’t worn off for Cruz. “He is one of the reasons I became an actress, because of his films that I saw growing up,” she tells me. “Whenever I get his blessing I feel like I can breathe, because he can be a very tough judge – but it’s good that he’s honest. If he doesn’t like something, he will say.” The film made its debut at Cannes earlier this year, received a standing ovation at La Croisette and was hotly tipped to take home the much-coveted Palme d’Or, the festival’s top prize (it narrowly missed out to French drama Parasite). France has held a special place in Cruz’s heart after she was awarded an honorary César award (the French equivalent of an Academy Award) for lifetime achievement last year, and being at the nation’s largest film festival was an honour, she says. “I was so happy to be at Cannes with Pedro, for this film that I love so much.” Today, the jewels that she wore to the Pain and Glory screening at the Palais des Festivals glitter from plinths that surround us in The Rosebery. Launched last year, the line of Hollywood glamour-inspired necklaces, bracelets, earrings and rings is exquisite, not just in design but creation too – the entire collection is crafted from Swarovski lab-grown diamonds and gemstones. Married with synthetic rubies and sapphires, as well 24

as sustainably sourced topaz and fair-trade gold, the diamonds sparkle as pendant chokers, pear-cut strings of necklaces and double-drop earrings designed by Cruz. “This has been my dream since I was a little girl; I used to draw on the top of my mother’s magazines and change all of the designs,” she explains. “I wanted this collection to feel a little bit vintage, to feel like some of the jewellery pieces that have had an impact on me from watching movies with Audrey Hepburn and Marilyn Monroe; jewellery seemed more present in cinema in the 1940s and 1950s than it does now.” A family heirloom also provided inspiration. “My grandmother Modesta had a ring that was garnet and gold, and since I was a little girl I was asking her to give me that ring. She gave it to me and my sister but it was lost,” she recalls. “The value was sentimental, but it was the most important thing we had. I was so sad to lose this piece, so I have designed a ring in her honour, which I am very proud of. It is crafted from three rubies surrounded by Swarovski-created diamonds. It’s something I’ve wanted to do for a long time.” The collaboration arose after the Swarovski team sent the actress a few pieces to wear to an awards ceremony, along with a booklet on their sustainable stance. Cruz read it cover to cover. “I feel this collection brings my responsibility to a higher level,” she tells me now. “Sometimes people know what to say to capture the attention of the world, but in this case it is a totally honest message. From now on, if a company like Swarovski is able to work [sustainably], everybody has to make the effort. It raises the bar very high.” As our interview comes to a close, the brand’s creative director Nadja Swarovski begins to rhapsodize about having the actress onboard. “I feel like I’m working with an angel,” she exclaims. “You’re such a role model.” Cruz blushes and brushes off the compliment, but there’s a sense she understands the responsibility her position comes with. A week after we meet, she joins Gwyneth Paltrow at a Goop wellness summit, and unintentionally becomes a spokesperson for women the world over when she criticises the pressures she felt post-childbirth and the stigmas that come with menopause. Conscious luxury, it seems, is just one of many strings to Cruz’s bow. I

f ever contemporary environmentalists feel they’re not being listened to, perhaps they should consider the life and work of Thomas Malthus. Barely known today, and ignored for much of his own career in the first half of the 19th century, this English cleric and economist wrote, in a paper called An Essay on the Principle of Population, that an increase in human population beyond sustainable limits would result in a disastrous collapse in the human population due to disease and famine. In short, the notion of the ecomovement as being the brain child of 1960s idealists with long hair and tie-dye shirts is woefully inaccurate. The problems that Greta Thunberg (pictured right), David Attenborough and the Green Party are wrestling with were diagnosed a long, long time ago. Earlier this year the InterGovernmental Panel on Climate Change (IPCC) report stated that we have to make major cuts in carbon emissions (at least 40 per cent) by 2030 to avoid catastrophic climate change. Finally, it seems that the warnings of human and planetary catastrophe Malthus wrote of more than a century earlier are being absorbed, if not necessarily always acted upon. And while the Victorian era scholar remains shrouded in obscurity, it was through the unlikely voice of an American marine biologist that the thoughts and ideals behind the current eco-movement finally gained something approaching mainstream recognition. Rachel Carson’s Silent Spring book, published back in 1962, made 28

a compelling argument against pesticide use and its impact on mammals and insects. Hardly an issue at the top of many American’s agendas at the time, this was an era of rapid industrialisation with atomic testing and polluting factories running all but unopposed. Yet, against the odds, Carson’s book became a smash hit, reminding readers worldwide of the fragility of the planet and just what a future without a functioning eco-system could look like. The Apollo landings, and the first

With a Swedish schoolgirl, in the form of Gretz Thunberg, becoming just the most recent cause celebre in terms of green protestors, it’s interesting to wonder what Malthus would have thought of her most incendiary line: “I am here to say, our house is on fire. I want you to act as you would in a crisis. I want you to act as if our house is on fire.”

Within what seems like an insanely short amount of time, we’ve gone from basic recycling to wearing bamboo shoes. What happened to us? And has it all really happened as quickly as this? I think what’s happened to us is that the idea of ‘planetary limits’ has become a lot more real and urgent. I think we simply started to wake up. I think we’ve gone beyond where ‘eco-chic’ was some kind of nice-to-have, well-intentioned but ultimately niche market, to where it’s essential. I think it’s all about provenance and story. No one wants a beautiful product concealing hidden ugliness. We saw it with blood diamonds. We’re seeing something similar with fair trade gold now too, where even high end jewellers such as Chopard are committing to 100 per cent ethical gold. But I expect this ‘trend’ to flow ever more strongly through other sectors – particularly fashion, which has a massive global impact, and where classic design, quality and durability using fairly sourced materials is obviously aspirational. The campaign to ban plastic straws now seems very ‘last year’. Does this worry you? Namely the notion that we have our little fads and then forget about them? There is always an element of faddish-ness about the supposedly ‘hot’ environmental issue du jour. Yes, we may have moved on a bit from plastic straw bans, and let’s face it straws are just the tip of the iceberg, but that’s because we have much bigger fish to fry. Each fad is actually the thin end of a wedge for a much bigger question – this is not just about recycled content and recyclability, it’s about how we design this plastic out of the system to reduce the waste and pollution at source. That’s where the real innovation is. Companies like Panda Packaging (pandapackaging.co.uk) are pioneering great and stylish alternatives from bamboo and coconut too. What has shocked you the most in terms of where we’re potentially heading? Flying is the single biggest personal impact we can make on the climate, because its discretionary, and highly

carbon-intensive. And 75 per cent of UK flights are taken by only 15 per cent of the population. So a lot of us are ‘binge-flyers’ and could make a real difference through travelling by train instead of by plane, taking local, slow-travel holidays instead. That steak on the plate is a challenge too. Livestock agriculture is responsible for huge amounts of carbon emissions, and beef is one of the most carbon-intensive meats. A sustainable diet for the UK will likely involve about 90 per cent less meat. So while we don’t all have to be 100 per cent vegan all the time, it’s likely we’ll be eating a lot less meat and dairy in the future. Is it inevitable that we’re going to have to sacrifice things and activities we enjoy? If so, what are they? And what will they be replaced with? Yes. But I’d clarify that by saying things change all the time in terms of what we appreciate, value and enjoy. In the past, poor Londoners subsisting on oysters might look on our high-end veneration of these humble shellfish with a wry eye. Fashions and tastes change. The best restaurant in the world, Noma, prides itself on its highly sustainable menu of low meat, seasonal, largely plant-based and foraged gastronomic delights – that’s perhaps where more of the future is, replacing the ostentatious slightly tawdry ‘luxury’ of great slabs of turf and hulking shells of surf. So will we have to stop eating and travelling? Of course not – the pleasures of both of those things will not be diminished. But those ‘needs’ will likely be met in cleverer, smarter and more ingenious fashions. In your opinion, what needs to be done on a global scale? We do need a shift in consciousness, a shift in mind set. To embrace the changes required rather to resist them, to act like we are in an emergency, because we are, and to use our creativity to find new and better ways of living and thriving well, being occasionally hedonistic and naughty but knowing our instinct and need for celebration and indulgence need not necessarily cost us the earth.

Where did your passion for sustainability begin? I have always been fascinated by waste, so I started to do some research at the British Library and discovered that in 2004, the year I arrived in London, approximately 100 million tonnes of waste went to UK landfills. I was overwhelmed by this eye-watering, inconceivable amount and set out on a tour of landfill sites to try and understand why we were so wasteful and what could be done about it. In 2005 I had a chance meeting with two members of the London Fire Brigade at around the same time that I was completing my tour of landfill sites. I instantly fell in love with their damaged, decommissioned hoses and was determined to rescue them. Initially we had no idea what we would do with them but despite that, on the day I first saw the hose, I promised the London Fire Brigade that if I could generate a profit then I would share 50 per cent with them. It was very much a spontaneous idea and they initially thought it was funny. We have been making increasingly large donations for over a decade now and it truly is a wonderful partnership.

I think he was right because if you aren’t on a pretty serious journey to sustainability that the luxury label might no longer be available to your brand. We don’t think you can create something exceptional if it is made at the expense of the environment or its people. What is your target and how far away are you from reaching it? Our next goal is to solve the 800,000 tonnes of leather waste generated each year. We want to do this through industry collaboration, and in late 2017 we formed our first partnership with the Burberry Foundation. So far this partnership is incredibly successful. In our first year we rescued three tonnes of leather and transformed each tonne into goods worth more than £100,000 – yes, that is correct, we are better than alchemists. elvisandkresse.com

What’s the biggest obstacle to creating a UK full of people wearing sustainable yet luxurious clothing? The biggest obstacle has to be inertia. There is corporate inertia as traditional luxury companies continue to express a desire to be more sustainable but are very slow to change. There is consumer inertia which results in choosing the same old brands despite being able to choose from some unbelievably regenerative newcomers. There is also political inertia; we need a carbon tax, we need social and environmental legislation with teeth, we need goods which exploit people or destroy the environment to be illegal to make or sell. How do you go about combining sustainability and luxury? We are sustainable because we make business decisions based on whether or not a course of action will make the world better for other people’s grandchildren; if it doesn’t, we don’t LU X U R Y L ON D ON .C O.U K

What frightens you about our consumer habits at the moment? Eighty per cent of land use is for food production, and yet 30 per cent of all food grown ends up being thrown away. The system is broken on so many levels. Ultimately, we need to have a serious think about the new stuff we are buying, and ask ourselves whether we really need it and whether there’s a different way of achieving whatever it does for us. One of the most brilliant things I’ve discovered is upcycled furniture, where innovative craftspeople rescue stuff that was literally about to be trashed, and turn it into items such as high-quality furniture or chic clothing. What can the travel industry - and your company - do about all this? Over the past year, I’ve seen a real shift in the number of people who want to travel to the Alps for environmental reasons. But this isn’t met by enough supply of rail-inclusive options. Train companies are woeful in making it easy for people to book travel – the whole online booking system isn’t fit for purpose, and many train companies or booking agencies try their best to not let you phone them. It’s nuts. Meanwhile, when was the last time you saw a rail map of the UK or of Europe, to inspire you or give you some perspective about your options? People love rail travel, but the industry doesn’t make it easy for them to travel by train.

Because when you compare the emissions of a journey, a one way trip from London to a ski resort by plane is around 90kg CO2 per person, 225kg CO2 per car, and around 12kg CO2 per person by rail. How can you ‘sell’ these changes without rebellion from people who don’t want to change their habits? With train travel to the Alps, it’s about the experience. Why would you want to spend 8-10 hours navigating your way through airport queues and then transfers, when you could be sat comfortably with friends, food and bubbly while the landscape glides by at 320kph? People end up fooling themselves into thinking their time is so valuable that they end up wasting it trying to hurry to places. The train is nearly as fast as flying, in many cases, and so much more memorable. snowcarbon.co.uk

Is it inevitable that we’re going to have to sacrifice things and activities we enjoy – like ski holidays? We can keep doing many of the things we love, but we need to be smarter about how we do them. When you add up the carbon emissions of a typical ski resort, for example, a whopping 64 per cent of the emissions are the result of holidaymakers travelling to the resort. All the 32

It would be nearimpossible to ban plastic all together, but Canary Wharf Group has taken steps to reduce the amount of single-use plastic on the Estate. For example, there are seven water refill stations which will save about 150,000 bottles every year. All our tenants – companies and retailers – were asked to remove at least three single-use products each, and eventually it will lead to complete elimination of those unnecessary plastics using sustainable alternatives instead.

t is the year of the electric car. Of course, you might feel that it was a more significant year in 2004, when Tesla launched its Roadster, or in 2000 when Toyota marketed the Prius worldwide – a car that although merely a hybrid, would become a symbol for virtue-signalling ecomotoring. Smart alecs may like to point out that electric cars were invented long before the internal combustion engine in the 1830s, and that along the way we’ve had plenty of electric vehicles, from the humble milk float to the Lunar Rover. But no, 2019 is the year that EVs went mainstream. The majority of big carmakers now have at least one fullyelectric car in their fleet (MercedesBenz’s EQC and Audi’s e-tron kept us waiting, but they’re here now) and it’s the year that Tesla’s ‘electric car for the people’, the Model 3, went on sale. London now has an electric taxi (and doesn’t it look great?) and at the performance end of the market, companies are falling over themselves to launch phenomenal all-electric hypercars like the recently-announced Lotus Evija. By the end of the year we’ll have a battery-powered Porsche, and even that bastion of fossil fuel consumption Ferrari has announced its first series-production hybrid, the SF90. According to data from the Society of Motor Manufacturers and Traders (SMMT) in the UK, EV registrations went up tenfold between 2014 and 2018, and there are now around 250,000 plug-in vehicles on Britain’s roads. Within that, fully electric vehicles are growing fastest, up 70 per cent year on year, and to meet that demand, the

number of public charging points has risen to 24,000 (although there are still issues over standardisation, number of high-speed chargers and lacklustre government investment). It’s entirely possible that you have missed this widespread electrification, however, mostly because the majority of brands have focussed on packaging up their EVs in existing models. With a few exceptions – the Jaguar I-Pace and BMW i3 spring to mind – the mainstream car brands have shied away from establishing a new design language that speaks to the biggest change in their business in a century. As the insurgent, and as the only company making exclusively electric cars at any kind of scale, Tesla has been able to define what an electric car looks

like, and although its models aren’t exactly radically shaped, the lack of front grille, flush-fitting door handles and (in the Model X) ‘falcon wing’ doors have all become recognisable traits. This is where Polestar comes in: the most serious attempt from the established car industry to take the fight to Tesla. Polestar wasn’t always a green initiative; it used to be the name given to Volvo’s racing team and applied to its more performance-oriented models. Two years ago, however, it was spun out as a new brand, owned by Volvo but possessed of its own clear identity with a brief to develop market-leading electric cars as well as functioning as an innovation lab for the wider Volvo group. In 2018 it launched the Polestar 1, a petrol-electric hybrid super-GT in the vein of a BMW 8-series or Bentley Continental GT, to critical acclaim. But it is the follow-up that really matters; the Polestar 2 is where the brand

will start to fulfil its mission. A five-seater, four wheel drive saloon-cum-hatchback (“fastback” is the preferred lingo) with a 311-mile range that will also do 0-62 in under five seconds. It’s almost identicallyspecced to the Tesla Model 3 (338 mile range, 0-62 in 5.1s) and almost identically priced too, at €59,900 to the Tesla’s €58,800 (for the all wheel drive, longrange Model 3). There’s little chance you’ll confuse them on the road, though. Polestar has set out its stall when it comes to design, creating something that’s more overtly futuristic (and more luxurious) than the Tesla. It seems odd to speak of Swedish minimalism when the first word to cross your mind is ‘big’; better to say that the Polestar 2 is an emphatic car, with no extraneous detail for detail’s sake. The full-width rear lights and frame-less wing mirrors are nice touches, while the high stance (made to look higher by the

contrast paint job on the launch model), aggressive alloy wheels and muscular front end (especially those T-shaped bars of light, a recurring motif across the car) let you know that it’s capable of high performance. The launch model is the raciest, with gold seatbelts and valve caps to let you know you’re in ‘the fast one’, and Brembo brakes inside those 20-inch wheels. The 2 is more virtuous than that would make it seem, however. Most buyers will be more drawn to some of the other, more on-trend options, such as the all-vegan interior, free from any animal products. THE IVY IN THE PARK WORDS ANNA PRENDERGAST

T

he first time I ever ate at The Ivy, there were two uninspiring vegetarian options – risotto, or salad. Now, there’s an entire vegetarian/vegan menu with fresh, alternative ingredients, served alongside the instution's traditional dishes, such as the signature shepherd’s pie. The steak is another classic, best ordered with green peppercorn sauce and a side of thick cut chips (with truffle and parmesan if you can handle it). The restaurants – of which there are now 14 in London – have spread across the capital quicker than the eponymous evergreen, which cascades over walls and climbs into corners at The Ivy in the Park in Canary Wharf. Built by the same architects as The Shard, using high-performance FSC Accoya® wood, The Ivy in the Park planted its roots in the northeast corner of Canada Square in late 2018, and has since grown to become a place where table talk ranges from the FSTE 100 to family holidays. The restaurant's calling card is its consistency – across the board, Ivy brasseries offer up the same high quality food and satisfying portions. Service, too, is traditional but not trite, and embossed linen napkins are of a higher quality than most people’s bathroom towels. Touches such as these have survived the stripped-back (or is it just bare?), industrial (or is it just lazy?) ‘bricks and bulbs’ movement that has dominated the restaurant scene for the past few years. Ivy establishments have eschewed trends and fads to remain classic, despite employing the maximalist interior designer du jour Martin Brudnizki’s team to redesign the West End flagship. His playful influence can be found in the park outpost, too. Inside, wall-to-wall mirrors reflect the proximity to the river and the surrounding glass architecture, while corner-to-corner canvases depict tropical paintings of flora and fauna. Warm orange banquettes are draped in potted plants, and the vibrant art juxtaposes London’s concrete jungle. We sat in the orangery to eat, and the terrace is popular for pre-dinner drinks. Our appetisers – hot, crispy zucchini without a trace of grease; bite-sized truffle arancini; mozzarella and sweet peach salad – arrived after an impressive seven minutes, and no sooner were they whisked away, our mains arrived. The miso cod was tender but a little lacking in the customary umami flavour, while the Keralan curry with sweet potato, broccolini and chickpeas made up for it with crunchy vegetables, fluffy rice, layers of heat and creamy turmeric sauce. Talk to the team at the bevelled glass bar to help navigate the drinks menu – they’ve mastered cocktail classics, but will make to your specifications, too. This summer’s must-try has been the grapefruit negroni, and don’t bother asking for the bill until you’ve tried a spoonful of the chocolate bombe desert.

n 1660, Samuel Pepys wrote that he asked “for a cup of tea (a China drink) of which I never drank before”. Since then, things have changed rather a lot, and despite its origins in Asia, tea has become a national treasure in the UK. According to a report in 2018, we drink around 165 million cups of tea a day, in comparison to 70 million cups of coffee per day - to say that we can’t get enough would be an understatement. But the last few years have seen a new take shaking up our tea-drinking habits. Bubble tea is the latest trend from Taiwan, and has eschewed tradition in place of alternative flavours, innovative textures and fun visuals. On Instagram, there are over 1.3million images hashtagged #boba, and another 1.5million with #bubbletea, 50

all depicting colourful cups with contrasting bubbles, ombre-effect liquid and sugary toppings. Those with a sweet tooth are hooked, and many are leaving their usual breakfast tea behind. Now, bubble tea has arrived in Canary Wharf with T4 opening a new store in Canada Place this August. The name comes from the ceremony of sharing a cuppa - ‘tea for you’ - and the drinks are prepared using high-quality, whole tea leaves grown at specific altitudes in the mountains of Taiwan. So where do the bubbles come in? You can still get the country’s most famous flavours - oolong tea, black tea, green tea and white tea - but at T4 you can infuse them with tapioca pearls. The translucent ‘bubbles’ come in various fruit and milk flavours, which are

added to your individually-brewed tea. The gelatinous texture is similar to passionfruit, which T4 plays with in their menu. The ‘flower and fruit’ section includes tropical flavours such as passionfruit, pineapple, mango and lychee. T4 uses sugarcane extract and has a wide variety of vegan options such as their best-seller, Elegant Lady Rose, which requires the petals of more than a thousand roses to extract 1ml of essence. When it comes to sustainable fashion, traditional denim production methods are a huge bump in the road. Enter Levi’s, which unveiled its Water<Less collection in 2012. The range is made using 96 per cent less water than traditional denim, and since its launch has saved 172m litres of water. In the world of fast fashion, it’s no secret that Zara is a key player — you only need to look at Instagram account @hot4thespot (which is dedicated to that polka dot dress) to see how its influence can spread far, wide and into the wardrobes of every woman this side of the M25. Happily for us, the brand has just announced its pledge to ensure all of the cotton, linen and polyester it uses will be organic, sustainable or recycled by 2025. Hurrah!

Another high-street brand committing itself to sustainable denim production is Mango. Last season, the label reduced its water consumption by up to 10 litres per garment — and for styles such as the Boy and Straight jeans, water consumption was decreased by up to 16.5 litres. In partnership with companies such as Jeanologia and Better Cotton Initiative, the brand has rapidly reduced the amount of water, energy and chemicals it uses, and ensured it is working with sustainable cotton farming initiatives. Expect more than half of the brand’s denim to be sustainable for AW19.

om, 29, and Phil Beahon, 26, aren’t afraid to admit that their success only came after a round of joint failure. ‘Both of us played sports professionally, but we realised we just weren’t quite good enough to turn our love of football and cricket into sustainable careers,’ explains older brother Tom. Instead of becoming athletes, they decided they could dress them instead – and founded premium sportswear brand Castore in 2016. Ambassador Andy Murray fell for the quality of the products and the technical construction, and boxers Callum Smith and Joel Cassells have both had Castore’s kit in their corner. The Beahons know 72

their customer because they are their customer – young, athletic men who want gym kit that is as performance-driven as they are. It made sense, then, when the opportunity arose to be stocked in slick city club Third Space. ‘It’s one of the best gyms in London,’ says Tom, who worked in finance while he set up the brand. ‘It’s got incredible facilities, and the staff really look after you – plus you get to meet some really cool people there. It was our first partnership so it will always hold a special place in our hearts.’ In between business meetings and July’s Wimbledon championships, Tom made time in his itinerary long enough to tell us a little more about Castore’s journey.

CW: Let’s start from the beginning – can you tell us how you came up with the name? TB: The name was actually one of the last things we came up with, about two weeks before the launch date. We came across the story of Castor and Pollux in Greek mythology – they were brothers and the sons of Zeus, and it just made perfect sense. CW: Your sports career not working out was obviously a huge catalyst for change and inspiration. How would you describe your relationship with failure? TB: The way we see it, you can sit and feel sorry for yourself or you can learn from it and come back stronger. We’re not very good at failing in the UK – business people in the USA see it almost as necessary in the process of starting something new. Being in a sporty environment for so long also gave us both drive and discipline; we’re pretty competitive and goal-orientated.

CW: What’s your approach to the womenswear sector?

CW: So tell us what it’s like working with your brother?

CW: Any brand collaborations coming up?

TB: We’re very compatible – my weaknesses are balanced by his strengths, and vice versa. I’m the oldest, so naturally I’m superior at everything… [laughing]. I’m definitely more aggressive in the way I work – if we have an idea, I want to get going straight away, work it out as we go along. Phil is much more methodical and strategic, which means we strike a good balance.

TB: We’d love to work with more British heritage brands. We did a sunglasses collaboration with Kirk Originals, who are great, and we got a lot of advice from Savile Row tailor Richard James – no one had ever really considered fit when it comes to sportswear. It’s so important and they’re experts.

CW: And how did you get Andy Murray involved? TB: To get to the top level of athletes, you have to get through all the people that surround them – coaches, trainers, nutritionists, managers. So that’s what we did. Once a few of them began to genuinely appreciate what we were doing, it opened up a channel. Andy’s got a brother and is always trying to champion young tennis players and British brands, so I think he connected with our story as well. CW: Once Murray retires, will anyone replace him as an ambassador? TB: We’ve got a few ideas – people we’d love to involve. We’re working on our first womenswear collection and it would be great to have an elite female athlete to collaborate with. But it’s all top secret at the moment, I’m afraid... TB: We’re very conscious that so many brands get it wrong – they ‘shrink it and pink it’ and not only does it never work, but it’s damaging. We’ve talked about hiring a specialist, because it’s a challenge we’re so excited about.

CW: Where do you stay when you’re in London? TB: We always stay at the Corinthia Hotel, because it’s so central and Thomas Kochs runs such a slick operation there. We also sell our kit in the spa, so we’ve got a really good relationship. CW: You shot your last campaign in Mallorca, was there any particular reason you chose that island? TB: Yes, in fact I used to go and do my pre-season training there when I was a footballer – it’s got these incredible mountain landscapes which are perfect for pushing yourself and focusing. Central Park is, no doubt, one of New York’s main attractions. From walking the trails and paths that criss-cross the 36 acres to taking a gondola from the Loeb Boathouse – there’s always so much to discover in the epic green space. Found close to the High Line, it offers New Yorkers some much needed additional green space with 14 acres of public gardens and plazas. It’s also the home of 50ft-tall art installation The Vessel. Designed by Thomas Heatherwick , the coppercoloured beehive-like structure can be climbed via 2,500 steps and offers cityscape views from 80 different ‘landings’. You can’t come to New York and not visit a classic diner, and it doesn’t get more classic than the legendary Lexington Candy Store. The subterranean space has accents of scarlet, black lacquer and a gold-leafed ceiling, making for the perfect after-hours dining spot. T

he places I dream of visiting are many, but Cambodia was never one of them. The total of what I knew about this small Asian country was drawn from the harrowing film The Killing Fields and vague schoolgirl memories of the Cambodian-Vietnamese war. So upon arrival at Siem Reap airport, I had no expectations, nor did I ever envision losing my heart to this captivating kingdom. Once considered a mere stopover, with travellers staying just long enough to see Angkor Wat, one of the world’s largest religious monuments, before moving onto the beaches of Thailand or jungles of Vietnam, Cambodia is now the destination rather than the sideshow. Forty years on from the end of the Khmer Rouge’s reign of terror, this country is undergoing momentous change, driven by the vigour and energy of the younger generation – 65 per cent of the population is under 30. Cambodia’s greatest national treasure is not the temples of Angkor but its people, with their indomitable spirit and optimism. Though the advent of three new five-star resorts in the south has earned Cambodia its place on the lists of ‘Where to Go in 2019’, Angkor Wat and its surrounding glories must be seen, so I began my Cambodian adventure in Siem Reap. I stayed at Phum Baitang (the hotel that Angelina Jolie booked exclusively for three months while she was filming First They Killed My Father) just a few miles – but worlds away – from the frenetic scramble of 92

the city centre. Together, the 45 wooden, stilted, thatched-roofed villas, clustered over eight glorious acres of rice paddies, evoke a traditional countryside village. Inside, the design is understated and elegant, with neutral linens, dark wood and Asian antiques dotted all around. As if by magic, the grounds are manicured, the villas serviced, and the flowers and fruit refreshed by the unobtrusive, smiling staff. After my first day of damp and dusty sightseeing in claustrophobic heat, I took myself off to the Spa Temple – which features seven treatment rooms and is inspired by the carvings and columns of Angkor Wat – for a traditional Khmer massage. The therapist kneaded and pummelled out every kink and knot in my temple-fatigued body. After a swim in the rough-hewn 50m black stone infinity pool, with a ginger, basil and lemongrass martini in hand, I was temple-ready once again. Three days later, replete with Cambodian culture and history, I flew to Sihanoukville –a city of casinos, congestion and construction, and best avoided. Just a 20-minute drive from the airport is the jumping-off point for the Koh Rong archipelago, a chain of 15 tropical islands and also the mainland reception for Six Senses Krabey Island. With the check-in formalities sorted, I boarded a sleek speedboat and glided across the glistening Gulf of Thailand. From a distance, this tiny dot of an island looks uninhabited.

However, as we got closer, I could see – woven into the tapestry of dense wilderness – the newest Six Senses property. A smiling welcome, complete with lemongrass-infused flannels and cold drinks, was followed by an electric buggy ride up to Villa 18, my home for the next three days. Most of the 40 grey stone, wood and glass residences (each with its own opalescent-tiled private pool and a green living roof ) are set in the hillside, with a few opening onto the water. Inside there’s golden Tasmanian oak, a calming pastel palette and windows that overlook the the blue sea below. At every turn, Six Senses Krabey Island celebrates nature, be it in the public spaces, where the lanterns and ceiling installations are fashioned on Khmer fish traps, or in the villas, where the furniture legs are modelled on the Romdoul blossom, Cambodia’s national flower. Six Senses, long a front-runner in sustainability, has raised the bar to new heights on Krabey Island. There’s a reverse osmosis plant and crystal water refinery that produces drinking water without any nasty plastic bottles. Energy conservation initiatives such as solar power, low-chemical pool filtration and water recycling are in place. Most of the fruit and vegetables are grown on the organic farm located on the mainland, which is also home to chickens, goats and bees. reserve the next morning left me breathless but dazzled. Perched at the top is the signature spa, which offers treatments ranging from a very serious wellness assessment, which uses biometric screening technology, to a prescriptive multi-day programme. For those who are dedicated sybarites, there’s an extensive menu of indulgent treats, such as the Wild Kashmir facial, which uses turmeric and lavender, or a Khmer Herb massage, the ingredients for which come straight from the spa garden. Just don’t leave the island without experiencing the thrill of a sunrise aerial yoga session at the rooftop shala. A five-minute speedboat ride away is Alila Villas Koh Russey (also known as Bamboo Island) – a very different destination. At first glance, I was wowed by the linearity of the resort. The 50 flat-roofed, gunmetal-grey beachfront pavilions and 13 villas were designed by Singapore-based architect Chioh-Hui Goh who found inspiration in the krama, the patterned cloth widely used in Khmer life. Everywhere there are nods to Cambodia’s heritage, from the latticework of the teak canopy in the open-air reception to the geometric lines of the wooden headboards and cabanas. Even the design of the terraced communal pool is a contemporary interpretation of Angkor Wat temple. Set in 60 acres of verdant tropical vegetation, the resort’s overall footprint covers only 15 per cent of the island, which leaves lots to be explored. But the resort’s star attraction is its two-mile-long stretch of copper-coloured beach, backed by banyan and casuarina trees – something no other resort in Cambodia can offer. All the rooms face the ocean and my time here was spent walking the shoreline, kayaking, paddle boarding, snorkelling and swimming in the sapphire sea. At lunch, the freshest ceviche, served with icy-cold rosé at the Beach Shack, offset the steamy heat. On offer were all sorts of experiences, from pagoda blessings to sunset cruises to excursions to Kampot. My final stop was Shinta Mani Wild, located deep in the Cardamom Mountains, once a stronghold of the Khmer Rouge. An arduous three-hour car journey from Sihanoukville brought me to the entrance of the 865-acre camp, situated between Bokor National Park and Kirirom National Park. Parked inside the gate was a fleet of 1960s US jeeps (used during the Vietnam war). I climbed aboard one and was delivered to a 30m tower to zip-line into Headquarters, aka reception, (there’s a definite vibe of the US television hit MASH going on here, and even the ceiling is US Army surplus camouflage netting). After two zip-line rides – the first over jungle, and the second above the Tmor Rung river and its boisterous waterfall – I touched down in the Landing Zone Bar. A team of gentle-souled, smiling Cambodians manoeuvred me out of my corset-like harness, which was exchanged for a jasmine-scented flannel and a G&T. Ten years and millions of dollars in the making, this insanely wonderful, slightly bonkers creation is the work of Americanborn designer and hotelier Bill Bensley. Asked about the inspiration for the camp, he countered with two questions: “What if Jackie O had gone glamping in this wilderness with the King of Cambodia in the early 60s? What would it have been like?” Exactly like Shinta Mani Wild is the answer. Each of the 15 tents is massive, with a dark koki-wood floor, a four-poster bed, sofas inside and out, antique trunks, an open-air roll-top bath, a dining table and a cocktail bar with a cowhidecovered cold box, filled with champagne, fine wine and local beer. I was given the Jackie O tent (Tent 1), which is pitched 94

on boulders exhilaratingly close to a rushing river. Over the door hangs a photograph of Jackie taken on her 1967 visit to Cambodia. It’s with these details that Bensley has so brilliantly achieved his goal of marrying the glamour of royalty with the romance of colonial-style safari travel. For the intrepid guest, Shinta Mani Wild is nirvana. My adventure butler, Yi, organized an action-filled, adrenalinfuelled few days, all detailed on a sheet of rolled parchment and illustrated with a watercolour rendering of the camp. My first morning was spent learning tenkara, the Japanese meditative art of fly-fishing, with Mongolian expert Tulga. With his help I became the first guest to catch a danio, a small freshwater fish. The next morning, I joined the Wildlife Alliance’s poacher patrol doing their rounds on motorbikes in this river valley. Their mission is to protect the wildlife and forests from animal poaching and illegal logging. There was also swimming, foraging with the chef, spotting gibbons, bird watching and camera trapping with the head botanist, and Yi turned out to be a dab hand in a kayak. Heading home after nearly three weeks, I felt blessed. I had seen the temples of Angkor, visited the hat-trick of new five-star properties and zip-lined for the first time. But, most importantly, I had discovered the remarkable metamorphosis of a once wartorn country into a vibrant yet unspoiled destination. onfession time: I have a dirty secret. A clandestine compulsion played out in magazines burrowed under my bed, images saved in folders on my phone, and webpages covertly bookmarked. And now I know I’m not alone. You probably have the same desires; the same adrenaline rush and flutter of excitement that comes with the sight of your wildest fantasies being played out in front of you – a New York loft, a Mayfair townhouse, a summer home in St Tropez... I’m talking, of course, about property porn. From Grand Designs to Homes Under the Hammer, the human instinct of curiosity — or, perhaps better described as nosiness — is never more prevalent than when looking into the literal windows of other people’s lives. An interiors magazine is a curtain twitcher’s dream; a home improvement programme a snooper’s paradise. It’s the same fascination that probably drove you to flick to the property section of this very magazine first (thanks for coming back to the wordy stuff ); the very same intrigue that forces people to stop and gawk at the windows of estate agents. It’s also what spawned a new book by Phaidon, which looks through the keyholes of the homes of some of the top creatives from the past 100 years. Interior designer Roger de Cabrol began his career as an assistant to Salvador Dalí – and the Surrealist artist’s influence has clearly stayed with him. In de Cabrol’s New York loft apartment, which was completed in 2014, red velvet stiletto chairs and heart-shaped bookends bring a pleasing air of whimsy to the space.

Julia Morgan was one of America’s most important female architects – she was the first to be licensed in California and designed more than 700 buildings. Hearst Castle, built for magazine magnate William Randolph Hearst, kept her occupied for 28 years – it was completed in 1947.

“The well-furnished mind of Karl Lagerfeld needs an ever-changing stage... He seems to reinvent himself through his homes” 17th-century home in Berkshire is a remodelling of the cluttered chic championed in his early Habitat stores. Even Salvador Dalí’s fisherman’s cottage in Spain is as you would expect from the master of Surrealism — in the living room, above a tasteful but otherwise simple antique suite, are three life-sized taxidermy geese. In other cases, the choice of design is surprising. Gilbert & George, whose distinctly colourful graphic-style collages are brash, noisy and attention-grabbing, have decorated their Spitalfields-based home in an homage to the 18th-century, with lead paint, period plastering techniques and furniture previously owned by Gothic Revival architect Augustus Pugin. The house is kept meticulously neat, the artists say, to allow them to channel the “chaos and filth” into their artworks instead. In Rome, king of monochrome Karl Lagerfeld requested that interior designer Andrée Putman create him a wood-panelled bathroom, with Fortuny fabric and furniture from the Wiener Werkstätte. The only hint that this is the home of Chanel’s late creative director is a stack of ivory towels, embroidered with a simple black KL monogram. According to writer Cathy Horyn, since Karl Lagerfeld arrived in Paris in the 1950s, he lived in more than 20 residences. “The well-furnished mind of Karl Lagerfeld needs an ever-changing stage... He seems to reinvent himself through his homes,” she wrote. In essence, our homes are truly a reflection of ourselves, a private hole in which to burrow, relax and decorate as we please. “And then he or she will most likely take a photograph and post it on Instagram,” writes Norwich in the book’s introduction. “Why not? Is it conspicuous consumerism, flagrant status-seeking? Or isn’t feathering a nest the best kind of soldiering on, showing how the harmonies of one’s own can soothe an inharmonious world?”

Interior designer Ashley Hicks’ London home is located in the Albany, an apartment block next to the Royal Academy of Arts that was once home to Lord Byron. Hicks inherited the apartment from his father David, although little remains of the original design. Instead, Hicks’ preferred jewel-tone colour palette reigns supreme, complemented by his eclectic curios and giant cast-resin gemstones.

This Mississippi mansion was one of Richard Keith Langham’s first projects, completed more than 30 years ago. Following Hurricane Katrina in 2011, the designer refurbished the property. Today, the same opulent design is found throughout the house.
