WINE LIST PRODUCTION At LWC Signature Wines we offer a free of charge wine list production service to customers who buy their wines exclusively from LWC. A wine list is most usually the first point of contact a consumers has with the wine offering, bearing this is mind we feel at Signature Wines our Wine List Design facility is dynamic, initiative and truly ahead of the competition taking advantage of this digital age we are in. With the use of an Online Portal an Account Manager or WDM can build a wine list with you, it can be set out in any order you want, every business has different needs and we can tailor our system accordingly. When all the wines have been picked a proposal document can be produced which shows the nuts and bolts of the list, cost price, selling price, margin and gp%. Then comes the fun bit, picking the style and design of the list. With the click of a few keys, before your eyes a pdf of the final list is produced. If you are happy with the list it can be ordered and within a week the lists can be on your tables selling your wines and putting more money in your till. Even bespoke features that are an integrally part of your outlet they can be added.

When helping customers to decide on a wine, a display of surety and confidence will kee them comfortable and happy. It helps to engage with your customer, asking which variet styles, flavours and countries of origin they prefer. Make gentle recommendations to complement their meal, but don’t oversell, and never offer a house brand. The choice mu be firmly in the consumer’s hands. When making suggestions, it’s useful to remember which wines and foods go well togeth For celebrations with light snacks, Champagne and other sparkling wines are the usual preference. White wines go well with seafood dishes. Red wines complement similarly coloured foods, like red meats and dishes in tomato sauce, and also, along with rosés, perfectly supplement a cheese board.

Before serving, make sure that all glasses are spotless. When pouring, never hold your customer’s glass by the bowl: the stem is your handle; everything above it belongs to the drinker.

Always remember that white, rosé and sparkling wines must be served chilled (7-13°c), and reds at room temperature (13-18°c). Chilled wines should be pre-chilled before being brought to the bar fridges; reds should never be served directly from the ce

Julian Reynolds Estate Reserva Red has the honour of scoring 92/100 points on the famous Robert Parker Scale whilst the ‘second’ wine named after his grandfather and son Carlos Reynolds comes very close at 88/100. These wines are a little more ‘special and different’ to the usual run of the mill wines found on most wine lists, but can still be purchased at reasonable prices in order to offer your ‘adventurous’ wine consumers something wonderful and new to try. The vineyard is set in the Alto Alentejo in a place of immense beauty. The one hundred acres of vines are planted on the hilltop, which provides excellent sunlight and drainage critical for the production of quality grapes. Julian and Carlos pay particular care and invest heavily in order to produce the finest grapes possible. They use the viticultural techniques of ‘Vendange en Vert’ ie Green Harvesting in order to reduce the yields of young grapes so that the fruit flavours are concentrated into the remaining bunches and Night-Time harvesting ie when the fruit is at its optimal ripeness, the pickers pick the grapes in the cool night-time temperatures in order for the grapes to retain acidity and fruit balance and to delay fermentation until the fruit reach the winery. These are expensive in time and labour, but are required to produce great wine. If you’ve not ventured into the wines of the Alentejo then this is a great place to start.
