BIG THANKS!
Thank you so much for the opportunity to be a model in the September issue of your magazine and at the (Hope Lives) gala. I cannot describe in words how amazing the night was! You are truly an inspiration and you have inspired me in so many ways. Thank you,

BUSINESS SPOTLIGHT
By Angeline Grenz
All four brands are currently at the South College location. The Jeep brand will relocate to a new stand-alone location in 2017.
ON THE JOB
Fort Collins Dodge Chrysler Jeep Ram has experienced phenomenal growth in its almost 8 years. But with great expansion also comes growing pains and the dealership is looking toward 2017 with a plan to expand its footprint—and its service—with a standalone Jeep store. The dealership opened its doors on College Avenue in mid-town Fort Collins in February 2009. The dealership is part of the Dealing Doug family of dealerships owned by Doug Moreland. His local partner, Mike Downey, co-owns the Fort Collins dealership, directing its local growth.
20
The dealership, which originally included Hyundai as well, juggles the needs of four brands within its rather cramped walls and the strident growth of recent years, especially within the Jeep brand, means those walls have grown too close for comfort. In 2017, Fort Collins Dodge Chrysler Jeep Ram plans to move the Jeep brand to a new, stand-alone location nearby. “Jeep is by far our biggest selling brand,” says General Manager Steve Hardy. The new location, the former UBC Lumber building on Mason and Harmony Road, is similar in size to the current dealership location.
They plan to completely renovate the space to create the new Jeep store, with expanded Jeep sales and service. The new store will allow them to build a state-of-the-art showroom and offer more accessories and service capabilities to a brand whose owners love to enhance both its aesthetics and capabilities after-market. There is even the possibility of an outdoor hill to show off Jeeps’ 4x4 prowess. Once the Jeep store is complete, sometime in 2017, the dealership plans to gut their current S. College location and completely renovate the building to create a more modern STYLEMEDIA.COM
dealership with the focus on “creating the biggest truck center in Northern Colorado,” according to Hardy. The renovations will ease a dealership that is bulging at the seams. Currently, Fort Collins leases additional service facility space to ensure it has enough bays to service their customers. Earlier in 2016, additional lot space had to be rented off-site to house their entire inventory. But their true constraint has long been the service department. “Service is our biggest challenge because of space. We have outgrown our capacity and it happened fairly quickly,” says Hardy. “It has made it a challenge to take care of our customers the way we want to.”
buying experience,” says Hardy. “And our customers are pretty darn loyal.” But the buying experience isn’t the end of the story. “You treat customers the way you would want to be treated, but you also treat them well afterward. You can sell anyone a car once. What is really important is what happens after—and we have a lot of repeat and referral buyers. The dealership is also very active in the local community, donating a percentage of proceeds from the sale of each car or truck one month out of every year to the Hope Lives! Lydia Dody Breast Cancer Support Center. They are also frequent sponsors of St. Jude Children’s Hospital and other local charities.
TAKING CARE OF BUSINESS:
HOW TO FIND THEM:
Fort Collins Dodge Chrysler Jeep Ram currently employs 140 people, with a sales force of 27 (including internet sales). Their sales staff is trained to help a customer shop any of their four brands. Last year, the dealership sold 2,876 vehicles; 1,788 new and 1,088 used. The buying landscape has evolved over the years, says Hardy. “We sell many more cars today than we did back in 2009, but what has changed is how many more dealer trades we do.” Today’s buyers, he adds, come in knowing exactly what they want, from make and model right down to color—and they don’t want to settle. The dealership is willing and able to go the distance. They have sourced vehicles for customers from other dealerships as far away as Pittsburg, Washington State and Arkansas.
CLAIM TO FAME:
Fort Collins Dodge Chrysler Jeep Ram’s expansion will create “one of the first, if not the first” stand alone Jeep store in the nation, says Hardy. Previously, Chrysler’s focus was to have their multiple brands under one roof, but with Jeep’s huge popularity of recent years, Chrysler has decided to refocus and separate the brands. Among the Jeep models, Jeep Wrangler is the best seller, followed closely by Jeep Grand Cherokee. Hardy adds that newer models, including the Renegade released in 2015 and the new Cherokee released in 2014 are selling very well at the dealership.

Open Monday through Saturday. Sales: 8:30 a.m. to 8:30 p.m. Service: 7:30 a.m. to 6:00 p.m. Closed on Sundays.

CLOSING THOUGHTS Despite growing three-fold since 2009, Fort Collins Dodge
Chrysler Jeep Ram has managed to retain several employees from
their original workforce. “Our motto,” says Hardy, is ‘Take care of the customer, take care of the employee and everything else takes care of itself.”
“I have been here almost 8 years and it is amazing how many of
the original staff is still here. It is a credit to them and, I feel, a
credit to us,” says Hardy. “We also have Mike Downey’s daughter, Caitlin, and my son, Sam, involved in the dealership. That’s what we are about—the people.”

BUSINESS SPOTLIGHT

Cathy Michaels, Donna Sena-Keirns, Deb Groesser are the "three mooseketeer" owners.
ON THE JOB
In an unassuming location on South College, across from REI, sits Blue Moose Art Gallery & Gifts, a magical trove of fine art, jewelry, sculptures, cards, photography and other artistic creations. At the helm are three co-owners, spearheaded by founder Deb Groesser, whose warm, welcoming energy is felt within moments of meeting her. In part, that’s presumably what has made her endeavors so successful. Her first gallery, the Blue Goose, was established in 1991 while she was living in Chester, California. It attracted a slew of local artists and once she moved to Fort Collins five years ago, she
22
turned that gallery into a co-op and it’s been thriving ever since. “We turned it [Blue Goose] over to all the artists and I make three trips back a year to work at the gallery and teach workshops,” Groesser says. “We decided the Blue Goose needed a friend.”
TAKING CARE OF BUSINESS:
Along with partner/bookkeeper Cathy Michaels and jewelry designer/silversmith Donna Sena-Keirns, the trifecta of talented women—or the “three mooseketeers” as they
are affectionately referred to—have attracted over 60 artists who are currently showing their work at the gallery since its October grand opening. About half of the artists in the Blue Moose are local. The other portion of the artwork comes from reputable artists around the country they have worked with for many years, as well as a number of artists from Blue Goose. This entire collection of artists makes it possible to offer such a wide range of quality artwork and styles, which spans the spectrum from gorgeous photography to handmade purses. “We have many artists that send in art and STYLEMEDIA.COM
we’re meeting more artists,” she says. “Since we opened the door and people heard about it, artists have been flocking here. There are not enough galleries in this area for artists and there are so many good artists here. It’s amazing.”
CLAIM TO FAME:
In addition to the intriguing works of art that line the walls, Blue Moose also hosts a variety of workshops, including jewelry making, pottery, acrylic painting, drawing, scarf dying, and watercolor, Groesser’s favorite thing to do. She’s been an artist for over 40 years and loves to share her enthusiasm for art with other people. As explained in the gallery’s statement, “We believe in the magic of art. We believe that art is happiness, joy, community, healing and fun. We believe that the people of Fort Collins deserve and will appreciate and support a quality art gallery, and especially if it’s easy to find, easy to get to and easy to park at. We believe that we can be a positive addition to the Fort Collins community and this can be a win-win for making the quality of life in Fort Collins even better than it already is.”
REASONS TO GO:
So far, they are off to an exceptional start. Upon walking into the gallery, its positive and magnetic feel pulls the curious in and demands inspection. There are so many incredible things to see, feel and dissect— from the artist who does everything with a 64-pack of Crayolas to an 85-year-old Czechoslovakian woman who uses mixed media in all of her creations. The spirit of the artist has a lot to do with how the owners choose who can show in the gallery. “There are a lot of really good artists out there,” she says. “I love people’s energy—really good hearted people. If somebody creates exceptional artwork and they have good energy, we’d want them in the gallery. We STYLE 2016
are always looking for something unique and special that our customers will enjoy buying for their home or office.”
HOW TO FIND THEM:
4032 South College Avenue Fort Collins, CO 80525 970.825.5704 www.facebook.com/ BlueMooseArtGallery
WHEN TO GO:
Monday Through Friday 10 a.m. to 6 p.m. Saturday 10 a.m. to 5 p.m. Sunday 11 a.m. to 4 p.m.
CLOSING THOUGHTS The self-described “cheerleader” of the group, Groesser takes
pride in the creative world she’s manifested for herself. Combined with the brilliant jewelry of Sena-Keirns and business savvy of
Michaels, the Blue Moose is one of Fort Collins’ most exciting new additions.
“I have seen how a fun and welcoming art gallery can bring a
community together in so many positive ways. Our goal is create
that here in Fort Collins,” she says. “People of all ages need to be
surrounded by art for inspiration, beauty and peace. We really like to focus on positive energy. People stop in their tracks when they come in and say, ‘Wow, this place feels good,’ and that makes my heart sing.”

The Jolly Wayne Wagner S a n t a C la us C om e s To O l d Town By Kyle Eustice
Posted up at the quaint FoCo Cafe, 73-year-old Wayne Wagner and musical partner fill the air with the sounds of an acoustic guitar and concertina, an accordion-like instrument he taught himself to play. It’s a gig the Fort Collins resident has every Monday and one he clearly loves to do, however, this is not his only role. During the holiday season, Wagner uses his naturally white head of hair and long, white beard to play Santa Claus, something he’s done for almost 30 years. Interestingly enough, it all started in 1993 with a washing machine. “My wife and I advertised a washing machine that we were giving away to anyone who would take it,” Wagner explains over coffee. “A lady called me from Evans and said, ‘Well, I’ll take it.’ We were STYLE 2016
living in Greeley at the time. So I put it in the truck and hauled it over to her. As I was unloading the truck, she said, ‘Have you ever thought about playing Santa Claus?’” Of course, the answer was "no." It’s not something the average person really considers, but the woman’s father just happened to play the jolly St. Nick in California and thought Wagner would be perfect for the job. When he heard he could make upwards of $25,000 in 30 days, the retired history and Spanish teacher jumped at the opportunity. At the time, he had been working in Boulder as a coordinator for the Junior Ranger Program with the City of Boulder. Eldon Kott, the woman’s father, came to take his head shot to see what would happen. Not surprisingly, the gregarious
Wagner was given the job and that began his nearly three decade stint as Santa Claus with his base in Fort Collins, “The first year I ever did this was in Fort Collins on a part-time basis for Noerr Programs, and later I worked in Corpus Christi, Texas, in a mall that had no air conditioning,” he explains. “It had broken down and they insisted I still wear the big Santa coat, so my wife bagged me with ice from head to toe. They would sling all these kids onto my lap like a bag of beans. It was crazy.” After that, he was placed in Arlington, Virginia in Pentagon City at Fashion City Mall, which was “one metro stop from the Pentagon,” he says. He worked there for three full seasons. “It was an upscale mall with no children's stores and it was easy paced, so there
25
26
STYLEMEDIA.COM
was lots of time to see the Smithsonian. I loved it,” he says. “I was treated like a professional colleague not like some hired lap dog, so I felt very good about it." Sometimes he and his wife of 42 years would find themselves staying at places like the Ritz Carlton for 37 days in various cities while he worked as Mr. Claus. Regardless, he would always wind up back in Fort Collins, where he can be found at Santa’s Workshop in Old Town Square these days. “This is a fun job," he says. “There’s a little anxiety leading up to it because there’s so much to do, but I love talking with the children. They are absolutely on their best behavior when they’re around me, which is very nice. So all of these beautiful little children are behaving like angels and I have a fun time reading stories to them." Wagner’s Santa duties began in early November and he will work through Christmas until 4 p.m. He’s not hard to miss. With his homemade custom Santa Claus suit and cherubic face, he's a commanding presence. Coupled with his obvious excitement for the season, he’s one of Old Town’s most beloved figures. “It’s a nice time of year,” he says. “I always tell the children the reason all of this happens is because as the days grow darker and the nights grow colder, we don’t have enough brightness or light in our lives, so down through the ages a wonderful celebration was started.” Kyle Eustice moved to Fort Collins two years ago with her husband Paul Lukes and chihuahuas Paco and Petey. As a published writer for nearly 10 years, her work can be found from New York City to Los Angeles. STYLE 2016

Ultimate THE
H I D E AWAY By Lynette Chilcoat
From the moment one enters through the wide, ornate doors at the Humphrey home north of Windsor, the feeling of luxury abounds. Stepping across the threshold, a majestic great room awaits.
44
STYLEMEDIA.COM
Adrian Jones, owner of Frameworks Timber, played an instrumental role in how the epic proportions are presented in a seamless way. “We installed heavy timber elements throughout the house,” says Jones. “That includes the great room as well as the rest of the house, such as in the kitchen and the outdoor entry and patio. What made this project interesting was in a home that has that much heavy timber you have to be proactively paying attention to all the design components. There’s a significant amount of coordinating which needed to happen in order to make this home outstanding.” The impressive space supported by substantial wooden beams notwithstanding, there’s a distinct impression of coming home to a warm, inviting retreat. The whole is brought together as a grand mountain lodge might be, yet this 16,000 squarefoot estate houses not a plethora of travelers from abroad, but a family of six - Jim and Kirsten Humphrey along with their four children. Their living quarters speak of camaraderie and conversational settings, with pockets of comfortable chairs and couches for gathering together at nearly every sweep of the eye. The Humphrey’s home is not, in that manner, a private oasis to be hidden away, but indeed STYLE 2016
somewhere to host galas galore. “We’re both happy with areas we’ve created,” mentions Kirsten. “There are places people can congregate without feeling overwhelmed.” Jim himself, owner of an environmental industrial services business, notes that the custom-built structure, furnished with a combination of opulence infused with rustic character, “was all built around family.” To the left, leading to the lower level, radiates a broad spiral staircase in honeyed wood tones bordered by cast iron railings. A extended lighting fixture dangles from the ceiling in the open curve. Consisting of metal leaves intertwined amongst themselves, the fixture appears as natural as a summer’s woodland grove, as if it had indeed grown there during a vibrant rain shower. After introductions to both the Humphreys and the builder, Chris Jones of Synergy Construction Management, LLC, Kirsten leads the way on an informative tour. Her pleasant chatter and modest pride infuse the entire residence with a cheerful, relaxed vibe. Spanning three-and-a-half years from land purchase to move in, the attention to detail is intensive. For example, there’s a convenient built-in docking station for electronic devices, with marked

bins below where each child temporarily stores homework and other school projects. Or, in between kitchen and informal dining area, a frosted glass cupboard holds plates and bowls. Not unusual unto itself, yet there are access doors on either side. When in the kitchen, clean dishes can be placed within. When in the dining room, those same dishes can be easily removed. Whereas the timeline and level of specificity might require the patience of a monk in some, Kirsten was up to the task. She worked closely hand-in-hand with the builder and an interior designer to ensure every step of the process closely mirrored their vision. “I loved making all those decisions,” said Kirsten, who is detailed-oriented and innovative in her roles as a stay-at-home mom and artist. In the master bed and bath, a gas fireplace and tub that fills from an unique ceiling spigot await. The walk-in closet has its own stacked laundry facilities. Jim is a collector: of guitars, cars and firearms. In the music room, his collection of guitars (which he of course plays) is a cool inclusion, as are the aspects of both floors made of reclaimed 100-year-old barn wood and copper roofing walls. The reclaimed wood floor theme is depicted STYLE 2016
prodigiously throughout the house. According to Todd Rohls, owner of Siena Wood Floors, “the historic planks are a random mixture of reclaimed timber from old buildings. There are five species included upstairs: red oak, white oak, beech, birch and poplar — as well as a variety of widths, ranging from 4-inches to 8-inches. Not everyone is going to have it, that’s for sure.” Jim’s garage - there’s more than one - is not merely clean, but gleams. Collectible vehicles sit innocuously in the capacious area. Nary a speck of dust, leafy detritus or cobweb is in evidence within this most ultimate of guy chambers. One wall showcases Americana artwork above rectangular windows overlooking another, lower level where the family’s touring RV is situated in a covered bay like a placid behemoth. The floor literally sparkles with golden mica chips impregnated within the sturdy multicoat polyaspartic floor surface. John Dengler and Associates, the architectural firm who designed the home in contemporary western fashion, likens the dwelling to a mountain home yet with estate qualities. “Since it was to be spread out, we wanted to figure out where the best place to put it would be on the 73-acre lot,” says Dengler. “We settled on a northwestern knoll, so that it looked like part of the
47
48
STYLEMEDIA.COM
land rather than just setting on top.” Another aspect was when Dengler, faced with oversized RV parking for the family bus, “took what could have been a very large garage, but sunk it so that it blends and works with the home. It’s not so dominant.” Also, “instead of one big home, we built a mass of smaller architectural spaces.” A three-tiered deck spans the entire length of the southern backside of the house, with amenities such as a pool, hot tub, landscaped creek and fire pit. “All of the outdoor living space needed to flow well from indoors to out,” adds Dengler. “It’s very easy for things to feel overwhelming, but by bringing outdoor elements inside, there’s an inviting feel to it. Overall, it’s a beautiful home that looks like it fits with the land.” The kids have their own east wing, the girls on the main level, the boys down below. Neutral tones and brown trim abound throughout the interior, yet the girl’s bedrooms are trimmed in white for a lighter, more feminine appeal. One is decorated in subdued denim and lace, while the other allows for brighter, lively colors. One of the boy’s rooms has a downhill skiing theme, the other is focused more on sports. Both boy and girl suites have common ‘Jack and Jill’ bathrooms for connectivity. Aneka Kerlin of Aneka Interiors, Inc. worked closely with Kirsten for over twoand-a-half years on designing “everything from floor to ceiling, figuring out how to make it all flow and remain unique,” says Kerlin. “That includes cabinets, lighting and plumbing fixtures, tile, mirrors and more. We would do space planning in each area, ensuring that every room stands alone yet corresponds to neighboring rooms. “It’s such a magnificent home with so many defining features,” adds Kerlin. For example, she says, “I love how the dining room ceiling feels. It has a hammered copper look, but is wallpaper.” STYLE 2016
In all, scattered throughout the house are two guest suites, nine bathrooms, and a formal dining room, in addition to the family’s everyday one. Extra’s include a butler’s pantry, sunroom, along with bar, wine, mud, and two game rooms, as well as a theater. In addition, two secret places - a locked safe room for the firearms as well as a separate, hidden hallway - complete the scene. A genuine collaborative effort was necessary to pull all of this together. Built in stages, the biggest challenge overall was “managing the shortage of skilled labor,” says Chris Jones, commenting that scheduling could be a nightmare. “Also, the reality of the business is that things created on paper can’t always be executed as drawn during vertical construction. Snags and unforeseen realities always come up. That’s part of the process, figuring out what works and what doesn’t. That’s why a strong team composed of the architect, structural engineer, interior designer, builder, and other consultants is critical. Equally as critical is having open conversations with the owner, keeping them in the loop as to hiccups and changes along the way.” Builder, Chris Jones, and the homeowner’s formed a quality relationship that helped to offset all issues that arose during construction. “We spent a lot of time chatting about everything,” adds Chris Jones. “If you spend that time with someone, you get to know their needs. You grow to understand what is wanted through discussions. Everything from there is transparent and fluent.” “People feel comfortable here,” emphasizes Jim. “As big as the house is, it’s homey and welcoming. It wouldn’t be worth having if the people you love can’t enjoy it. It would mean nothing without family and friends.” Lynette Chilcoat, a freelance writer based out of Loveland, owns Chilcoat Custom Literary. She was privileged to tour the Humphrey’s home.

TOWNHOMES AT LIBRARY PARK By Lynette Chilcoat
As the population continues to grow in Colorado and land becomes a prime commodity along the Front Range, it simply makes sense to build not out, but up. Such is the case with the Townhomes at Library Park located in Fort Collins’ Old Town District. The ten units are not stacked one on top of the other, as is the case in a classic style of residential living in levels, but rather built side by side, with each individual home built in layers. The common sense approach of building tier upon tier is a logical step toward a combination of smart space utilization and a low maintenance lifestyle, along with beneficial access to city resources. Begin by pulling through coded gates into a ground-floor garage and entryway. The immediate choice is to take either an awaiting glass tube elevator or a spiraled staircase higher. On the second level, the living, dining and kitchen areas await, along with a powder room half-bath. The open floor plan is as inviting as the plethora of windows allowing natural light to grace what STYLE 2016
is often considered the most popular place in any home. From there, to the third level, are bedroom suites. The guest room has a shared full bath. Next to the master bedroom is another full luxury bathroom with walk-in closet included. To call this latter room a closet, though, is like referring to a cantaloupe as an apricot. In sheer square footage alone, this once-upon-a-time humble wardrobe section of the house takes on grand proportions. Easily able to hold more than clothes, convenient laundry facilities are located here, with room to spare. The top floor is an added caveat. There’s plenty of storage space for outdoor furniture, which will be needed for the lovely wrap-around deck, a nice surprise leading to the observation of sunrises, sunsets and spectacular stargazing. A special place to sit peacefully or entertain guests in crisp, open air, this particular unit’s raised paver deck offers idyllic million-dollar scenery. To the west are historic buildings and rolling foothills, to the north is an
unending horizon. And that’s just the show model. Each townhouse is unique from the others, with slightly different detail aspects that make all of them individualized statements. “This project is fairly contemporary in design,” says Brad Florin, CEO of NoCo Townhomes, Inc.. “We began by looking to downtown Denver where the trend is to build townhomes because land is too valuable. But this way people can still have the single family dwelling experience.” The intent was to bring that concept to Fort Collins, where the downtown corridor could be opened to modern, cutting-edge residential property. As the developers proceeded forward, what was discovered is that many elements came into play for people considering homeownership in the urban core region. Multiple themes arose to help in decision-making. “In addition to low maintenance, buyers want to live downtown, where there is easy access to everything within walking distance if they don’t wish to drive,”
61
says Florin. “This includes The Max stop around the corner and nearby CSU. They didn’t want to take care of yards. The railroad tracks were a big issue, also. Yes, you can still hear the horns, but they’re subdued. More importantly, nothing shakes. This locale has a good neighborhood feel. It’s quiet, with no hustle and bustle.” For those who pre-purchased before construction began, they had the option of choosing interior design selections. Otherwise, the development team, along with a professional designer, made the decisions about actual interior details based on extensive research. “We worked for about a year on floor plans and met with approximately 20 prospective buyers,” adds Florin of the process to understand the perceived needs of future homeowners. “Landscaping is taken care of, there is a tankless natural gas hot water heater for continuous hot water, and an Energy Recovery Ventilator (ERV ) to supply better air quality as well as a humidifier.” A few other amenities available are a floor-to-ceiling pantry with an
62
astronomical amount of shelves, naturallook wood floors, white brickwork tile around the gas fireplace or wet bar (depending on the unit), and a great “Colorado” room. Richard Woodward, a young professional, was drawn to buy one of these townhouses “because it has a high-level of quality and a superb location. Plus, it’s one of the quietest parts of Old Town, next to a park.” He was impressed by the stylish aspect of the design, as well. “I like that the units have a more contemporary feel than whatever else I could buy,” says Woodward. “The convenience of new is good for me. I didn’t want surprises or the headaches of updating an older home. The finishes are top of the line and I went with inviting color choices. I wanted to keep it bright so chose nice gray and white tile, and warm wood flooring throughout. I feel it is a huge value due to the superior location and unparalleled finishes.” Echoing much of Woodward’s thoughts, Dave Edwards agreed with Woodward’s insights.
“First and foremost, we’ve lived in Old Town for 15 years,” Edwards says of he and his wife, Paula, who’ve been intrinsically involved with the community during that time period. The appeal of buying their Townhome at Library Park “afforded us that same lifestyle with less to maintain. Plus the library and park are right here, but it’s just a few blocks to the energy of Old Town, which is sort of everybody’s neighborhood. We have intersected with friends from all over the region here.” One of the key features for the Edwards is “the four stories, yet connected by an allglass elevator.” The elevator experience is not a new one to the retired couple. Their previous custom home, which has been gifted to CSU, was three stories with an elevator, as well. For these fortunate homebuyers, their premium new residences will be move-in ready as of February 2017. Lynette Chilcoat, a freelance writer based out of Loveland, owns Chilcoat Cusom Literary. Decadent Desserts By Malini Bartels
The wonders of desserts created with simple ingredients can surprise the palate and satisfy cravings. A few favorites from local restaurants made the top of the list when it comes to the most decadent of them all. A meal is not complete unless topped off with something sweet at the end. Some of the best of the best in local fare have it down to a science and are willing to share their secrets.
DESSERTS
On the south side of town, tucked away between a sandwich shop and a cyclery is Domenic’s Bistro at 931 East Harmony Road in Fort Collins. It’s there where you will find the perfect soufflé – rich, warm, chocolaty, and stunning. Chris Myrick, executive chef at Dominic’s loves their classic recipe “It is simple and beautiful, but if not executed correctly, will not rise to its “airy” heavenliness,” mentions Myrick. “We have had it on our menu for 10 years and have not changed the recipe at all.” Domenic’s timeless sweet is always served with vanilla ice cream. The decadent treat should be on your mind from the moment you walk into the restaurant; you’ll need to place your order in advance to ensure it’s hot out of the oven, fully raised, and just in time for dessert!

THE DEFINITIVE CHOCOLATE SOUFFLÉ INGREDIENTS:
• • • • • •
8 ounces semisweet chocolate 6 ounces butter ½ cup cocoa powder 10 egg whites ½ cup granulated sugar Butter and sugar to coat ramekins
DIRECTIONS:
1. In a large bowl, melt butter, semisweet chocolate, and cocoa powder over a steam bath; stirring as needed. 2. While chocolate is melting, separate 10 eggs and place the whites in a large bowl. 3. Butter the inside of eight 8-ounce soufflé ramekins and coat evenly with sugar, pouring out any excess sugar. 4. Once the chocolate is melted, keep warm while whipping 10 egg whites into soft peaks. 5. Gradually add ½ cup sugar once bubbles begin forming, do not over whip. 6. Gently fold egg whites into chocolate mixture trying to retain as much air as possible. 7. Place the mixture inside the soufflé ramekins, leveling with the top of the cup. 8. Refrigerate for best results (mixture can remain in refrigerator for several days). Bake in a preheated 425°F oven for 15-20 minutes and carefully remove when done. 9. Serve warm with vanilla ice cream and enjoy!
POT DE CRÈME Amelia Mouton, head chef at Restaurant 415 located at 415 S. Mason Street in Fort Collins, has a practical approach when it comes to desserts. “All of our desserts are simple because we don't have the line space to have a pastry chef on. We had to create a dessert menu that servers can grab and go and don't have to worry about in any way.” One of Restaurant 415’s house mottos is keep is simple. That motto has paid off! The featured dessert is 415’s Pot de Crème. It’s not a simple pudding, it’s not a cake, it's not a family recipe or plain-Jane custard. It’s absolute chocolate satisfaction. “The inspiration came from a dessert I had at Tartine in San Francisco,” says Mouton. “I had a similar chocolate pudding there that I loved!” Mouton created the recipe and her friend Sadie More helped her get it right for large quantities. She says people love this dessert because it brings people back to their childhood. “It's a grown up version of chocolate pudding. Creamy, light, you can't quite decide if it's a mousse or a pudding…decadent without being too much!” The chocolate pot de crème has been on the menu since they opened in 2012. “It's a fan favorite it's here to stay!” In the summer, the dessert stays the same although they make a mixed berry vanilla bean custard that has a similar mouth feel. “It's served with house made fresh whipped cream on top and a sprinkle of cocoa powder! Simple and delicious!” CONT. PG. 68

The Best Gifts Come From the Kitchen By Malini Bartels
It’s always the thought that counts… but it never hurts to also be delicious! Question: What do you give someone who has everything? Answer: Something tasty, unique, and homemade. If you bake it, they will eat it. At least, that’s the goal when giving someone a scrumptious treat straight from your home kitchen. But even if you aren’t the most marvelous chef, gift giving of the culinary variety can be fun, thoughtful, useful, and attractive. “Customizing a culinary gift makes it more special than something generic,” mentions Jim Hewitt, owner of the kitchen super boutique in Old Town. “It shows that you put a lot of thought into it and therefore means more.” The Cupboard at 152 South College Avenue in Fort Collins is by far a onestop-shop when it comes to gift-giving baked and cooked goods. Their skilled staff is always happy to shrink wrap or cellophane wrap any assortment of
72
goodies and gadgets you find around the store, creating a one-of-a-kind, personalized gift that’s useful for years to come. It’s also a nice way to encourage a new skill for someone that’s timid about cooking and baking. The foodie paradise has boxes, bags, Ball jars, twine, foil wrappers and decorative tags to create the perfect gift for any food lover. “I’ve even seen cookie cutters added to the bow for a nice touch,” says Hewitt. “It’s something the gift recipient can use and it looks great!” “It’s fun to use a baking dish or skillet as a base and fill it with everything someone will need to create a certain dish,” says Hewitt. “It’s really an all-in-one gift!” Some of the more popular gift items this year is a Moscow Mule copper mug filled with ingredients needed to make the trendy drink. Edible glitter and sprinkles in the favorite color of your special someone is another way to tailor a gift. Fudge and nut brittle are wonderful
gifts during the holidays. When purchasing nuts of different varieties it is more affordable in bulk. They can also be tricky to make without a candy thermometer (another great gift idea), so it’s a fantastic way to show someone you know your way around a kitchen. Hewitt stresses the significance of including the recipe of the homemade goodie with your gift, “When the recipient has the recipe, they will think of you every time they make it.” Festive recipe cards with hand-written instructions for making the scrumptious treat you just lovingly packaged is a great way to indicate that you trust that friend with a long-time family secret or treasured technique. So pick up the necessary tools for making decadent treats that are easily packaged and even more easily devoured for that hard to buy for friend or relative. Here are a few popular recipes:

THE BEST FUDGE EVER
Source: www.yammiesnoshery.com INGREDIENTS • 1 stick of salted butter (1/2 cup) • 5 oz. can of evaporated milk (or 10 tablespoons if you only have a big can) • 1/4 cup corn syrup • 2 1/2 cups granulated sugar • 7 oz. jar of marshmallow creme or 2 cups mini marshmallows • 1 1/2 cups semi-sweet chocolate chips • 1 tablespoon vanilla • 1 cup nuts (optional) HOW TO MAKE THIS RECIPE 1. Line an 8x8 inch square pan with parchment paper and grease it lightly. 2. Place the chocolate chips and vanilla in a large bowl. Set aside. 3. Combine the butter, milk, syrup, and sugar in a medium pot (it should come about half way up the sides of the pan). Cook on medium heat. 4. Bring the mixture to a boil, stirring constantly until it reaches 234ºF (known as "the soft ball stage") on a candy thermometer. (or you can test if it's done by putting a spoonful of the boiling mixture into a cup of ice water. If you form it into a soft ball, it's ready). 5. Remove from the heat and stir in the marshmallows or marshmallow creme until the mixture is smooth. 6. Pour the mixture over the chocolate chips and stir until all the chocolate is melted and the mixture is smooth. Add the nuts if using. 7. Pour the mixture into the prepared pan and cool completely before cutting. STYLE 2016

THE BEST-EVER NUT BRITTLE
Source: www.foodandwine.com
INGREDIENTS • 2 cups sugar • 1/2 cup water • 1 stick unsalted butter • 1/3 cup light corn syrup • 1/2 teaspoon baking soda • 12 ounces roasted salted peanuts, cashews, pistachios and/or pecans • Fleur de sel or crushed Maldon sea salt HOW TO MAKE THIS RECIPE 1. In a large saucepan, combine the sugar, water, butter and corn syrup and bring to a boil. 2. Cook over moderately high heat, stirring occasionally, until the caramel is light brown and registers 300°F on a candy thermometer – this will take about 10 minutes. 3. Remove from the heat and carefully stir in the baking soda. The mixture will bubble. Stir in the nuts, then immediately scrape the brittle onto a large rimmed, nonstick baking sheet. 4. Using the back of a large spoon (oil it lightly if it sticks), spread the brittle into a thin, even layer. Sprinkle with salt. 5. Let cool completely, about 30 minutes. Break the brittle into large shards. The brittle can be stored in an airtight container at room temperature for up to 1 month. Malini Bartels works at The Music District. Small Town Christmas Celebrations AC R O SS CO LO R A D O By Heidi Kerr-Schlaefer
It’s easy to get into the spirit of the holidays in Colorado. From a chocolate, cheese and wine festival in Ouray to a ethereal candlelight parade in Golden, our state’s small towns embrace Christmas with zeal. Golden, Colorado, has one of the most beautiful traditions in the state. Their Candlelight Parade marks the beginning of Olde Golden Christmas, an entire month of holiday happenings punctuated by three Christmas Parades held this year on Saturday, December 3, 10 and 17. The Candlelight Parade brings thousands of revelers to town to walk Golden’s Main Street while holding candles and singing carols. We attended last year’s Candlelight Parade and it was a truly restorative experience.
76
I recommend staying in town after the walk to experience a variety of festive activities. Stroll through Clear Creek History Park and enjoy holiday lights, live music, historic demonstrations and roasted chestnuts. Children can meet with Santa Claus at the Golden Visitors Center and enjoy a hot cider. And speaking of Santa, he’s in Golden for three Saturdays in December for the Olde Golden Christmas Parade. He’s joined by cowboys on horseback, floats, marching bands, vintage cars and elves on unicycles. Even the Grinch makes a weekly appearance. After the parade, spend Saturday in Golden being entertained by Victorian carolers, barbershop quartets and doing a little
Christmas shopping at their many locally owned retail outlets. For more information about Olde Golden Christmas go to VisitGolden.com. Colorado’s answer to a European alpine village is Ouray, and this little town knows how to do the holidays. Their seven week WinterFest celebration kicks off in November, and it ends with the Ouray Ice Festival in mid-January. One of the highlights of WinterFest is the Ouray Wine, Chocolate & Cheese Festival on December 12, 2016. This annual event features Colorado-made products, and in addition to wine, chocolate and cheese, includes spirits from local distiller KJ Wood Distillers as well as regional arts and crafts. Whether you come to browse their STYLEMEDIA.COM
one-of-a-kind boutiques or to soak in one of their mineral hot spring pools, Ouray makes a memorable holiday escape. While the Ouray Hot Springs Pool is closed for renovations this winter, several hotels feature hot springs fed pools that can be used by guests and day visitors. Learn more about Ouray and see the entire WinterFest schedule at OurayColorado.com. Many Coloradans are familiar with the Georgetown Christmas Market. After all, it’s a wonderful way to spend a December day. The lesser known, Christmas at Hamill House, however, is a more intimate holiday experience. Happening on the evenings of December 10 and 17, 2016, Christmas at The Hamill House is an authentic Victorian Christmas celebration complete with a traditional lighting of the Christmas tree, a yule log, wassail toasts and carols. Hamill House is a restored 19th Century house, and one of Historic Georgetown’s two museums. The other is Alpine Hose #2, a firehouse constructed between 1875 and 1880. After the first part of Christmas at Hamill House is complete, guests will depart for the Hotel de Paris, Georgetown’s magnificent hotel museum, one of the best museums of its kind in the Rocky Mountain Region. Here, they will enjoy a multiple course meal and a traditional reading of “Twas the Night Before Christmas.” To find out how to participate in Christmas at Hamill House, visit HistoricGeorgetown.org. One of Colorado’s best Christmas towns is Breckenridge. It lights up during the holidays, and the town’s Victorian facade makes it a merry place to visit during Christmas festivals. One such event is Race of the Santas, one of the most unique holiday events in the state, it occurs annually on the first Saturday in December. Whether you participate or not, the sight of 500 Santas running down Breckenridge’s Main Street is not one you’ll soon forget. Racers can walk, run or skip the six block race. Six blocks may sound easy, but at nearly 10,000 feet above sea level, the Race of the Santas is no cake walk. The Lighting of Breckenridge and the Handmade Holiday Craft Market take place on the same weekend. On any given December weekend in STYLE 2016

Breckenridge, visitors will be regaled with Christmas carolers who roam the streets. And if you’ve longed to take a holiday horse and carriage ride, this is the place to do it. For all holiday happenings in Breckenridge visit GoBreck.com. Cripple Creek, Colorado may be best known as a gambling town, but for those who love the state’s vibrant mining history, it’s a must-visit. Gold Camp Christmas takes place in Cripple Creek and the nearby town of Victor. Both towns are postcard perfect Christmas towns, especially if you’re lucky enough to be visiting during a snowfall like we did several winters ago. Gold Camp Christmas, December 9 to 11, 2016, is an opportunity to experience a unique outing to view “Holiday Headframe Lighting” throughout Cripple Creek and Victor. The area mine headframes, the structural frame above an underground mine shaft, are lit up with huge Christmas light displays. Visitors can drive the tour in their own car or take a guided excursion of the headframe light displays from the Aspen Mine Center in Cripple Creek. Other Gold Camp Christmas festivities over the weekend include a parade, skating around the Christmas tree, crafts for children, free hot chocolate and cider and lots more. If you want to experience the holidays in one of Colorado’s most history-laden towns, go to VisitCrippleCreek.com. While some people love Christmas, others are fanatical about New Year’s Eve. Colorado’s ski resorts like to whoop it up on New Year’s Eve, and fireworks shows and on slope torch light parades occur throughout the state. In places like Winter Park and Snowmass, if you can ski, you can participate in these on slope processions. For a family-friendly New Year’s Eve event, check out the annual celebration at Glenwood Hot Springs. Once a year, on New Year’s Eve, this historic hot springs pool stays open until 1 a.m. This is an alcohol-free event making it perfect for the entire family. Learn more at HotSpringsPool.com.
