We Morses are known for our ingenuity and hard work, but our syrup’s wonderful aroma is what we are most famous for. You see, there's nothing in the world that smells better than maple cookin'. We only make maple syrup in the springtime, but that wonderful aroma goes on year-round in our Morse Farm kitchen. Vermont Maple

Vermont Maple has been the standard by which all syrups are judged. We think you can taste eight generations of experience in Morse Farm products. Our syrup is 100% pure; a natural sweetener rich in minerals (calcium, potassium and iron), vitamins (B2,B5, B6, and niacin), and of course it’s fat-free!

What’s the difference between syrup grades? It’s all about the taste! True, there’s a difference in the syrup color between the grades, with lighter syrups being Grade A Golden and Grade A Amber, and darker syrups being Grade A Dark and Grade A Very Dark. However, ultimately, taste is what separates the grades, and the best way to decide which to get is to taste them for yourself! We invite you to stop by the Farm to sample them all, although if you’re unable to come the Farm for a taste use the chart provided which explains the differences between the grades.

Grades of Maple Syrup Grade A - Golden:

delightfully delicious, the pale golden color of a late winter's afternoon, Maple syrup at its finest.

Grade A - Amber:

(our most popular) distinctive in taste, and golden in color.

Grade A - Dark:

rich and mellow, with full maple flavor.

Grade A - Very Dark: full bodied and hearty, the cook's favorite.

Maple History Long before my people came to Vermont, our area was blessed with sugar maples, sugar weather and sugar mentality. Native Americans were making maple sugar hundreds of years ago through the long and arduous process of dropping superheated rocks into wooden containers of maple sap. This caused steam to waft away and sweet, natural maple sugar resulted. When the Morses arrived late in the Eighteenth Century, the Indians taught us the maple process.

Maple sugaring has greatly evolved since those days and we now boil sap down to maple syrup instead of maple sugar, making a more universal product. The term “sugaring” has, however, never changed and we remain after seven generations, proud maple sugar makers.

Maple Facts Old timers say that we get a run of sap for every day of January thaw. Most years we get a January thaw and its duration can be measured in one, two, or three days. The sugar season, which occurs mid March thru mid April always consists of one, two, or three runs. On the average, it takes 40 gallons of maple sap to make one gallon of pure maple syrup. We drill one tap hole in each of our maple trees which gives 10 gallons of sap in an average season. Four maple trees, each 40 to 200 years old, are needed to make one gallon of pure maple syrup in an entire season. Maple sap is 2% sugar and weighs 8.35 lbs. per gallon. Maple syrup is 66.9% sugar and weighs 11 lbs. per gallon. One gallon of maple syrup makes seven lbs. of maple sugar. Maple syrup contains 50 calories per Tablespoon. Corn syrup contains 60 calories per Tablespoon.
