Welcome New Golf Members

KEM JACKSON, LOCC OFFICE MANAGER

We are gearing up for another exciting year of golf at Lakewood Oaks Country Club. Again this year, we are able to give you a login for the memberonly side of our website so you can make tee times. I’ll set up a member number and have it linked to the master account for those family members you wish to use it. Please email me at kem@logc.org if you would like to have a separate login for tee times. We also have a feature for profile photo that syncs with our point-ofsale software, and we ask that members add a profile photo to their account. We appreciate you taking the time to do this, as it will help staff recognize members. As always, if you have any questions about your account, would like to sign up for automatic ACH payments or would like your statement emailed to you, contact me at kem@logc.org.

Please Welcome Our New Members!

CHEF’S WHIM: RECIPE OF THE MONTH

Potato Nests

With Easter approaching, I thought this might be a fun recipe for Easter Brunch or as an elegant appetizer. Get creative and enjoy!

Ingredients

• 2 thick slices deli ham (about 4 ounces) • 16 ounces (about 3 ½ cups) frozen, shredded hash browns, thawed • Kosher salt and freshly ground black pepper • 8 ounces cream cheese, room temperature

Directions

1. Position two racks in the top and bottom thirds of the oven and preheat at 425 degrees. Spray the muffin sines with cooking spray and set aside. 2. Cut the ham into small matchsticks similar to size of the hash browns. Set aside and reserve 1/3 cup of the ham. Mix the remaining ham, hash browns, 1 teaspoon salt and some pepper in a bowl. Divide the mixture evenly among the sprayed cups, using about 1 rounded tablespoon each. Press the mixture in a thin layer across the bottom and up the sides of each cup to make a nest, leaving the edges uneven and jagged. 3. Bake, rotating the pans halfway through, until the nests are dark brown around the tips and golden and crisp on the outside, about 25 minutes. 4. Meanwhile, beat the cream cheese, lemon zest, milk, ½ teaspoon salt and some pepper together in a medium bowl with an electric mixer on medium-high speed. Scrape the mixture into a resealable plastic bag, cut off the tip and set aside. 5. When the nests are ready, remove them from the oven and let sit until they are cool enough to handle, about 10 minutes. Carefully lift the nests out of the tins and transfer to a cookie sheet. Pipe the filling evenly among the nests. This may be done ahead; the nests can be set aside at room temperature until ready to serve, up to two hours. 6. When ready to serve, heat the nests until the cream cheese is warm and the potatoes are crisp, about 7 minutes. Meanwhile bring a small pot of water to boil. Add the frozen peas and cook until they are warm, not shriveled, 5-6 minutes. Drain the peas in a colander, shaking to remove excess water. 7. Transfer nests to a serving platter. Top each with ¼ teaspoon of the reserved ham, 3 peas and about ¼ teaspoon chopped chives. Sprinkle with paprika, if desired, and serve immediately.

• Finely grated zest of one lemon • 2 tablespoons milk • ¼ cup frozen peas • 1 tablespoons chopped chives • Paprika, for serving

WGA / MGA

WGA (LOWGA)

The Lakewood Oaks Women Golf Association (LOWGA) is a great way to get involved with fellow members through participation in fun golf and social events.

All ladies are welcome to join. We have a wide range of abilities and handicaps in LOWGA.

Tee times on Wednesday mornings and some Saturdays are set aside through the Pro Shop for organized ladies golf events. We have numerous popular events throughout the season, some are individual and others are team oriented. There are several dates which we offer guest days where your guests are invited to play at a reduced rate.

The camradery of this group of ladies is amazing. So many great friendships have been forged throughout the years. They support one another in golf, as well as in personal life.

We look forward to meeting all women interested in joining a fun group that just happens to enjoy golf.

If you have any questions, please feel free to contact me at vpyoung98@gmail.com. I would love to meet you, and I look forward to seeing you on the golf course!
