’Shrooming Around Shasta By Aaron Cena Spring is almost here, and for a lot of Siskiyou County residents that means the spring wild mushroom season is right around the corner. There are many species of mushrooms that grow in Siskiyou County in the spring, but the two most targeted by mushroom hunters are Morels and Porcini. Morels are in the genus Morchella, and there are several species that grow in our area. Most mushroom hunters don’t bother trying to identify which Morel they’ve found, because all Morels are edible and incredibly delicious. Morels can be identified by their honeycomb (or pitted) cap, shaped more or less like a pine cone, their cream or white colored stems, and the fact that their caps and stems are completely hollow. If your Morel isn’t hollow, it isn’t a true Morel. Porcini, or Boletus rex-veris, go by several names (Boletus, Porcini, Cep, Penny Bun). They are substantial mushrooms, with rare specimens weighing up to several pounds, and often grow in groups of two or more fused together at the base. They can be difficult to spot for beginners because they often stay hidden in the forest duff with just a hump visible. To identify Porcini, look for a layer of pores underneath the cap instead of gills. The

pores vary in color from white when the mushroom is young, to yellow and finally to olive-green when very mature. The very top of the stem will have a crosshatch pattern called reticulation that looks similar to a fish-net. And Porcini do not change color when bruised. The only toxic look alike has a red pore layer and flesh that turns blue immediately if you cut the mushroom in half. It’s hard to predict exactly when these delicious mushrooms will grow, because it’s totally dependent upon the temperature of the soil, but generally the season runs from about April into July, as mushroom hunters follow the mushrooms into higher elevations. Both of these mushrooms are mycorrhizal, which means they are physically attached to the roots of trees in a relationship that’s beneficial to both. The mushrooms get water and carbohydrates from the trees, and the trees get micro-nutrients that they couldn’t otherwise obtain, making mushrooms vital to a healthy forest. Don’t worry about picking a mushroom, though. It does no more harm than picking an apple because a mushroom is just the fruit body of the living organism, which grows under ground. Mushrooms should not be eaten until they’ve been positively identified. The best way to do that is to show them to an experienced collector. Once you are absolutely certain of your mushroom identification, wild mushrooms are excellent on the table. Because they’re so fresh they’re full of moisture, and the best cooking method is a dry saute. Get your pan hot, then throw in the mushrooms with only a bit of salt (or better yet, soy sauce as a salt substitute). You’ll be astonished at the volume of liquid that the mushrooms release as they cook. Saute on high until all of that liquid has evaporated, then add butter if you like.
