allergens Current legislation requires all UK food businesses to provide essential allergy information on foods that contain any of these 14 known allergens. In your venue, you’ll need to communicate to your customers where they can find this information.

Gluten Gluten intolerance is caused by the body’s inablity to break down gluten, a protein in wheat and grains. Coeliac disease is a digestive condition caused by gluten intolerance.

Eggs Egg allergy is a hypersensitivity to dietary substances from the yolk or whites of eggs, causing an overreaction of the immune system.

Fish Finned fish can cause severe allergic reactions and is usually a lifelong allergy. More than half of all people who are allergic to one type of fish are also allergic to other fish so allergists often advise patients to avoid all fish.

Nuts Nut allergy is a hypersensitivity to dietary substances from tree nuts causing an overreaction of the immune system which may lead to severe physical symptoms. This tends to be a lifelong allergy.

Celery Allergy to celeriac (the celery root) is more common than to celery stick, although both can cause severe reactions. Symptoms vary from mild, such as oral allergy syndrome, to anaphylactic shock. Celery allergy is rarer in the UK than across Europe.

Sulphur Dioxide Sulphur dioxide can cause allergy-like symptoms in people with underlying asthma and allergic rhinitis. The most common reaction is wheezing, tight chest and cough, which can be severe and distressing.

Mustard The symptoms of mustard allergy may come on rapidly, usually within minutes but sometimes up to two hours. Severe cases of a mustard allergy can cause anaphylaxis.

Shellfish and mullusc Along with peanuts and tree nuts, shellfish are some of the most frequent triggers of anaphylactic reactions. As shellfish and molluscs contain the same type of proteins some people may react to both food groups. Allergy to molluscs are reported less frequently than allergy to shellfish.

Lupin The lupin is well known as a popular garden flower. Allergy to lupin has been recognised in mainland Europe where lupinflour is used commonly in food products. It is used less frequently in the UK. Allergic reactions to lupin cause similar symptoms seen with other food allergens.

Milk A milk allergy is an adverse immune reaction to one or more of the constituents of milk from any animal. Immediate signs and symptoms might include hives, vomiting, shortness or breath or coughing.

Soy Soy allergy is a hypersensitivity to dietary substances from soy causing an overreaction of the immune system. Symptoms of soy allergy are typically mild, although anaphylaxis is possible.

Sesame Sesame allergy is a hypersensitivity to dietary substances from sesame seeds causing an overreaction of the immune system. It’s lesser known than peanut allergies.

Lactose Lactose intolerance is not a food allergy but occurs in individuals who lack the enzyme lactase, which is needed to digest the milk sugar lactose. Common symptoms are diarrhoea, wind/flatulence and general discomfort.

Peanuts Peanut allergy is a hypersensitivity reaction to dietary substances from peanuts causing an overreaction of the immune system. It is a type of allergy distinct from tree nut allergies.

Natasha’s Law

New food allergen labelling laws As of 1 October 2021, Natasha’s Law will come into effect and it’s essential that you and your business are prepared What is it?

This legislation comes into force in England, Wales and Northern Ireland. Similar changes are expected to be introduced in Scotland by Food Standards Scotland. It is called Natasha’s Law after 15-year old Natasha Ednan-Laperouse died after unknowingly eating sesame seeds in a sandwich which was not clearly labelled.

What’s included?

If you prepare food on site for sale and package it ready for customers, such as pre-packaged sandwiches, salads and cakes, this applies to you.

What’s exempt?

According to the Food Standards Agency, any food that is packaged after being ordered by the customer or isn’t in packaging is exempt and doesn’t need this new labelling. However, you must be able to tell customers what allergens are in the products if you are asked.

What should labels say?

Labels should clearly state the name of the product, followed by the ingredients. If the product includes any of the 14 allergens (see page 04 for the full list), they should be clearly highlighted in bold, capitals or underlined. If there is a risk of a food product being affected by allergen cross contamination, the label should also include ‘May contain milk’ or ‘Not suitable for someone with a milk allergy’.

How do I prepare?

Follow this handy checklist to make sure you’re ready for when Natasha’s Law comes into force on 1 October 20211

Carry out an audit

Review all of your suppliers and the ingredients and products you’re receiving from them. What information is available and in what format? Is it easy to make sure this information is carefully detailed on the label? Talk to your suppliers about any changes you think they need to make. Don’t forget to consider seasonal ingredients you may use throughout the year.

Check your software

The more you can automate, the less room there is for human error. Is your system suitable for the new changes to labelling? Is your printer capable of creating the volume of labels needed by the new legislation?

Education and training

Ensure all staff are aware of the new laws and what is required of them as everyone needs to be aware of these changes.

Trial run

Have a trial run of your new processes to ensure they’re seamless before 1 October.

Take stock

Carry out a full review of all changes made to ensure everything is running smoothly.

Clean bill of health Offering nutritious meals can result in healthier profits so what are you waiting for?

One of the leading trends in Foodservice and On Trade is health and it’s not going away anytime soon. Consumers are always looking for ways to enjoy a meal out but without going overboard on calories, fat, sugar or salt. There is a real need for hospitality venues to support consumer demand for healthier eating and the good news is, it’s easier than you think. Here’s just a few suggestions to boost your venue’s health credentials: l Add salad to sandwiches and rolls l Add vegetables to sauces, soups, curries and casseroles l Offer high-fibre options such as brown pasta, rice or bread l Offer a choice of starchy sides such as rice and jacket potatoes as well as chips l Serve sauces and dressings on the side l Use spray oils l Grill, bake and steam where possible l Choose leaner cuts of meat and remove visible fat

A new law on high in fat, salt and sugar (HFSS) foods will soon arrive in the UK. If you’re a venue with more than 50 employees, have a sales area larger than 2,000 square feet or belong to a franchise, you will need to change where you keep your HFSS items, such as confectionery, crisps and soft drinks. The law comes into force in April 2022, so read all about it at brws.it/hfss

Make kids menus healthier

When describing dishes on your menu, use words such as ‘fresh’, ‘zesty’, ‘crisp’ or ‘light’ to tempt customers

Offering more balanced meals will not only increase the healthiness of your menu but it will score brownie points with parents too. Here’s just a few ideas: l Include protein, starchy carbohydrates and a portion of fruit, vegetables or salad in each meal l Don’t use salt in cooking l Use colourful fruit and vegetables in your menu l Offer water and milk alongside other drink choices l Use reduced salt/sugar options where they’re available l Get creative with fruit-based desserts

On Trade trends We caught up with CGA, an insight and research consultancy specialising in the On Trade sector, to find wha ’s hot and what’s not

Changing habits

Wine continued to perform a little behind other key categories – but overall confidence and expectation for the future was generally positive. Months of subsequent lockdown and on-trade closure significantly altered the consumer habits of many drinkers, and this has all contributed towards changes to the drinks category landscape. Since hospitality reopened, consumers have been drawn to those serves that they weren’t easily able to enjoy at home, such as draught lager, shots and cocktails.

On the up l Premium is definitely the theme for the sector, with premium wines, beers and spirits, all performing well as customers retain the treating mindset. l Cocktails tap into consumers celebratory moods and so liqueurs and speciality brands such as Aperol, did particularly well and gained share of spirits. The most popular mainstream cocktail is the Pornstar Martini which has led to increased sales premium branded vanilla flavoured vodkas. l Premium spirits continue to appeal, in particular, flavoured gins which now represent around half of all gin sales. l Draught beers are leading the way in the beer category, with draught world lager most in demand. In particular Spanish and Italian lagers are performing well after the Euros l Premium beers continue to grow share as consumers look for high-quality serves not

Get your range right l As consumers remain keen to celebrate their return to socialising outside the house, there is a notable role for sparklers to play. These consumers are more likely to visit the sector for special or treat occasions than average GB drinkers. l Wine consumers are seeking more premium, high-quality wines following the 2021 reopening. Compared to the average GB consumer, wine drinkers find more value in the quality of their drink which goes hand in hand with higher price points and spend expectations. l Country of origin has grown in importance during the period that venues reopened over the summer of 2020 with around half of all GB consumers typically choosing wine from Australia, New Zealand, France or Italy. l New Zealand and Argentina are faring well with consumers at the more premium

Part of this premium shift can be put down to the concept of ‘treat spend’. l While more traditional food-led occasions remain crucial for the category, for those businesses that wish to re-focus wine within the wet-led occasion they should look to promote sparkling wines, spritzer and wine-based cocktails as these are the most likely to offer additional sales opportunities. l Suppliers need to demonstrate how their wines fall into wine consumers’ favourite choices to compete for a listing on menus. They can do this through showcasing how their style/ varietal/region falls in the drinker’s preference but can also highlight any other attributes their wine has which is likely to resonate, such as brands rated highly for their quality credentials or local provenance.
