Meat Secrets
On dining room tables across America, the star of the holiday meal is the meat. Turkey, duck, ham or steaks — you can’t go wrong in wowing your guests with a perfectly executed meat dish. Fittingly, a lot of pressure is on the cook to prepare, cook and carve the meat in just the right way. Follow the tips below to make sure you pull off the meat dish your guests are anticipating.
Roasting Tips There are all sorts of fancy cooking methods for meat, but one of the most tried and true is the simple roast. Especially good for large cuts of meat, the basic roast will leave your meat juicy and tender. Be sure that your meat is at least 2 inches thick. The meat depends on its own juices to provide some of the flavor and extra juiciness, so roasting too thin a piece can be counterproductive.
The steps to a perfect roast: • Place the meat fat side up on a rack in an open roaster; • Do not add water, as the meat will use its own juices;
• Allow the meat to stand for 15 minutes before carving.
Carving Tips Different meats pose different challenges when it comes time for carving. A succulent pot roast is best carved against the grain of the meat for the ultimate cut. The turkey, on the other hand, is best cut into different segments to appease your white meat and dark meat fans. Roasts, turkeys and whole chickens benefit from 15 minutes of standing time to allow them to finish cooking. Meat is also easier to carve after it stands, and will not lose its juices like it would if cut immediately out of the oven. You can either carve at the table or on a large cutting board with a well at one end to hold the juice. Use a long, sharpened carving knife to slice the meat and a long-handled fork to keep your cuts straight and steady.

How to Brine a Turkey Brining is similar to marinating, but is primarily focused on moistening the meat as opposed to adding flavor. Brining your turkey prior to cooking will help ensure you end up with a deliciously moist and flavor-packed turkey for your next gathering.

The first step in the process is selecting your brine recipe. The Spice Islands® Turkey Brine Kit is the perfect pairing for a juicy, flavorful Butterball® turkey that works for any occasion. Once you’ve selected your brine you’ll need to: Purchase a fresh turkey to eliminate the need to thaw, or completely thaw a frozen turkey. The night before roasting, remove the giblets and turkey neck.
Rinse the turkey inside and out. • Prepare your brine. Be sure to mix ingredients until all of the salt is dissolved. If your brine is heated, be sure to cool it to room temperature before brining. • Place your turkey, breast down, in a large container made of food-grade plastic, stainless steel, glass, or a brining bag. Be sure the container will fit in your fridge.
DID YOU KNOW? As a rule of thumb, you should brine your turkey 45 to 60 minutes per pound.

• Add brine, covering the entire turkey.
• 12 lbs. or less
• Place in the refrigerator for the specified period of time.
• 12 to 14 lbs. 9 to 14 hrs.
• Remove turkey from brine after recommended time. Rinse and pat dry with paper towels. Cook turkey as desired.

Communities Can Celebrate Local Businesses Small businesses benefit communities by boosting the local economy
Owning a business is the goal of many would-be entrepreneurs. Being your own boss has certain perks, including making your own hours and not having to report to anyone but yourself. But owning a business is a lot of work, especially for new business owners trying to get their businesses off the ground. According to Bloomberg, eight out of 10 entrepreneurs who start businesses fail within 18 months of opening their doors. The Small Business Association indicates the numbers are not so dire, saying 30 percent of new businesses fail in the first two years of operation; 50 percent during the first five years; and 66 percent during the first 10. Local businesses face an uphill battle to survive, but there are many things residents can do to support these valuable additions to their communities.
Shop locally Shopping locally not only supports local businesses, but it also contributes to the local economy. Shopping locally keeps money in the community, which can benefit everyone. Shopping locally produces a trickle-down effect, as local businesses that are thriving may patronize other local businesses, and so on. This, in turn, helps grow other businesses in the community, making it a nicer place to live and work.

Holiday shopping dominates many people’s free time between the day after Thanksgiving and the final days before Christmas. While many people may shop ‘til they drop on Black Friday and Cyber Monday, those days still account for a relatively small amount of the hundreds of billions of dollars that are spent each holiday season. Shoppers now have a bevy of options at their disposal as they embark on holiday shopping season. Traditional in-store retailers are still around, and online shopping continues to grow in popularity with each holiday season. But many holiday shoppers are looking to buy local this holiday season, and such a decision can pay a host of dividends for both shoppers and the communities they call home.
Buying local benefits your local economy Studies from Civic Economics, an economics and strategics planning firm, found that independent, locally-owned retailers return a far greater percentage of their revenue into their local
economies than national chain stores. One such study examined the disparity between revenue recirculation among independent, locally-owned businesses in Raleigh, North Carolina, versus four major national chains in the city. The former recirculated 51.1 percent of revenue into the local economy, while the latter recirculated less than 14 percent. Similar results were discovered in many cities, indicating that buying local not only benefits local business owners, but also the communities those owners and their customers call home.
Buying local creates jobs in your community One of the biggest ways local business owners in Raleigh recirculated their revenue in the local economy was job creation. While national chains also create jobs, such jobs only benefit your community if the chains are located within your community. If your local mall is a considerable drive away, chances are the chains within that mall are not employing many of your fellow community

Don’t forget that people are focused on each other and their time together during the holidays. No one is going to notice if you make a few mistakes in a recipe or forget to grab a certain decoration. Keep that in mind to help you avoid stressing over every single party detail.
Plan Ahead If you wait until the morning of your holiday party to start every recipe, stress is inevitable. A smart strategy is to get started a day early on the desserts and side items that can comfortably rest in the refrigerator without losing their flavor or freshness. There are plenty of makeahead recipes or even storebought extras that can help keep your stress level to a minimum. You can incorporate a lot of small, finger-food items that not only make for easy preparation and overnight storage but easy cleanup as well.
Consider a Potluck The traditional holiday meal may be comprised of grandma whipping up the appetizers, main course, desserts and drinks, but it doesn’t have to be that way. Let guests know ahead of time that you’re going with a potluck party format. Have everyone bring a main dish and dessert — and make sure everyone knows what others are bringing.
