Beer boasts

some surprising

health benefits T

o some men, the major food groups include burgers, chicken wings and beer. Whether hanging out with buddies watching a game on TV or firing up the grill for a backyard barbecue, many men prefer beer as their beverage of choice in social settings. Though beer is not something many people associate with health, some might be surprised to learn that beer does provide some notable health benefits. Beer should always be consumed in moderation, but beer fans should know that those cold ones aren’t just refreshing but potentially healthy as well.

Builds bone strength A 2009 study from researchers at Tufts University determined older men and women who consumed one or two drinks daily had higher bone density. Beer contains silicon, which has been linked to bone health. Of the various types of beer, pale ale has been shown to have the highest concentration of silicon, so beer drinkers might want to enjoy a pale ale when having their next beer. Keep in mind, however, having more than two drinks has been linked to increased

risk of bone fractures, so stick to one or two.

Reduces risk for kidney stones

Antioxidant boost Beer contains flavonoids, which are natural antioxidants that help to protect the body from disease. Dark beer contains more flavonoids than other varieties. Beer also contains vitamin B6. This is essential to making hemoglobin, the red protein in blood that also helps ferry oxygen around in the body. More oxygen helps muscles work more efficiently and has other health benefits.

According to the Academy of Nutrition and Dietetics, compounds in hops could help slow the release of calcium from bones, which may prevent kidney stone formation. A study in Finland singled out beer among other alcoholic drinks, finding that each bottle of beer men drank daily lowered their risk of developing kidney stones by 40 percent. Researchers suggest beer’s high water content helps keep the kidneys working and flushing out the system.

Increases mental acuity

Dark beers have roughly one gram of soluble fiber in each 12-ounce serving. Various research suggests that consuming adequate amounts of soluble fiber through a healthy diet can help lower LDL, or “bad,” cholesterol in the blood. Any source of alcohol, including beer or wine, increases the level of good cholesterol in the blood, too. Hops and the malt used in beer making also provide polyphenols, which are heart-healthy antioxidants.

Beer may be associated with hazy thinking and forgetfulness the morning after consumption -- but that’s only when consumers overindulge. A 2005 study published in the New England Journal of Medicine that examined the effects of moderate alcohol consumption on cognitive function found older women who consumed about one drink per day lowered their risk of mental decline by as much as 20 percent when compared to nondrinkers. Such benefits may be applicable to men as well.

Guards against stroke According to researchers at Harvard School of Public Health, moderate amounts of alcohol, including beer, help prevent blood clots that block blood flow to the heart, neck and brain. These clots are contributors to ischemic stroke, which occurs when an artery to the brain is blocked. Beer can also promote relaxation, reduce stress levels and help bring on a more restful sleep. The United States. Department of Agriculture also reviewed various studies that indicate moderate drinkers live longer than nondrinkers due to lower rates of heart disease, stroke and diabetes.

Simple rules for wine and food pairings W

alk into many wine and spirits stores, and you will likely encounter a dizzying array of selections. While wine selections at such stores were once limited to a few well-known brands, many niche and private wineries have begun to make their vintages available to a wider clientele, so now shoppers are treated to both familiar and less well-known options. To novice dinner party hosts, the vast array of wines and flavors can make selecting a bottle or two to accompany a meal a bit more challenging. But one need not be a master sommelier to find the right pairing. The following tips can help anyone select wines to go with their menu or the type of occasion. Work from light to dark. Just as you begin a dinner service with some appetizers and salad before moving to heavier courses, the wine should follow suit. Select lighter wines to accompany the earlier course before opting for deeper, richer wines as the meal progresses. Consider champagne to accompany appetizers and opening courses. Champagne works particularly well with salty foods, which is why it is often a good match for hors d’oeuvres. If your’s is a cocktail party only, you may want to exclusively serve champagne, which typically pairs well with passed finger foods and even bitesized desserts. Opt for sauvignon blanc when you do not want the flavor of the wine to be overwhelmed by the food. Sauvignon blanc works with early courses that pack a flavorful punch. Sauvignon blanc can be grassy or tropical in flavoring, depending on the region in which the grapes were grown. It is commonly described as crisp and fresh in flavor and is often recommended with sushi.

Match delicate seafood dishes with a light wine. Pinot grigio or chablis are delicately flavored and will pair well with seafood. Fish that is served in a rich sauce may be better matched with a heartier chardonnay. Make rose your go-to wine when serving cheese. Although some cheeses work great with white or red, rose is typically a safe bet when serving cheese because of its acidity and fruity character, offering the best of both worlds. Hearty meats, such as steaks and chops, pair well with rich reds. Cabernet sauvignon and bordeaux are great when paired with meat. Malbec and shiraz can hold their own if meats are spiced and extremely flavorful. Rustic wines will work best with rustic recipes. Try to find a wine from the same region from which the meal originated. Pinot noir is a light-bodied red wine that has full flavor and can work with many pasta dishes as well as earthy ingredients, such as mushrooms. Though some people follow a strict personal code regarding wine pairings, your personal tastes should dictate what you ultimately serve. Experimentation can yield an unexpected flavor combination that complements the nuances of both the food and the wine.

Consumers’ appetites for local foods are growing, and restaurants have taken notice. Today, many local businesses, including farms and restaurants, have mutually exclusive relationships that make it possible for local residents to enjoy nutritious, locally produced meals. According to the market research firm Packaged Facts, local foods generated $11.7 billion in sales in 2014 and will climb to $20.2 billion by 2019. Farm-to-table remains a growing trend that benefits farmers, restaurateurs and consumers. This is evidenced by the rising number of farmers markets cropping up in neighborhoods all across the country, as well as the niche offerings by regional food purveyors. The U.S. Department of Agriculture says that, in the last 20 years, the number of farmers markets has grown by more than 350 percent. Many consumers are now choosing “local” for dining at home and when dining out, and this is making a major impact on the nation’s food systems. Foodies as well as industry experts predict that the local foods movement is a permanent and mainstream trend. In 2014, the National Restaurant Association found the desire for local foods dominated its “Top Food Trends.” The most in-demands foods include locally sourced meats and seafood as well as locally sourced produce. Consumers also are interested in farm/ estate-branded foods. Some restaurants are even producing “hyper-local” food, or herbs and produce grown right on the property. As the demand for local foods has evolved, so has the term “local foods.” “Local” can be a wide-ranging term that refers to foods produced in a particular town, state or even region. The 2008 Farm Act defines a “locally or regionally produced agricultural food product” as one that is marketed less than 400 miles from its origin. However, a few states have established more stringent rules that indicate “local” constitutes food produced within the borders of a state or within a small perimeter of the state. The growing preference for locally produced foods is great news for the farmers and small food producers that have long fought for footing among the mega-importers. According to the trade publication Produce Business,

even though “local” does not place limits on the size of the farm, the growing desire among consumers to go local is benefitting many small and midsized farms, as consumers are increasingly buying foods grown closer to where they live. In addition to meats, fruits and vegetables, consumers can find many locally made items that expand the potential for farm-to-table. These include, but are not limited to, artisanal cheeses, wines, beer, baked goods, milk and other dairy, and honey. Local, sustainable foods are in demand, helping not only local restaurants and merchants, but also the small and medium farms that service these establishments.

did you know? According to the National Restaurant Association, seven in 10 consumers say their favorite restaurant foods provide flavors they cannot easily duplicate at home. Perhaps that’s one reason why nine in 10 consumers say they enjoy going out to restaurants. While few would likely be shocked to learn that so many people enjoy dining, the types of restaurants consumers prefer reflects a trend that might not have been so important as recently as a decade ago. The National Restaurant Association notes that 68 percent of consumers surveyed for the organization’s 2016 Pocket Factbook are more likely to visit a restaurant that offers locally produced food items. Locally produced foods not only support the local economy, but also tend to be more eco-friendly, as fewer natural resources must be used up to get them from the farm to the dinner table. That preference for eco-friendly food might also explain why 60 percent of consumers are more likely to choose restaurants that offer ecofriendly foods than establishments that provide no such offerings.

Tipping men and women who work in the food service industry is commonplace in the United States and Canada, where citizens typically tip between 15 and 20 percent when dining out at restaurants. But American and Canadian travelers about to depart for overseas destinations may want to familiarize themselves with the practices regarding gratuities before their planes touch down. Some countries automatically add gratuities onto customers’ bills. For example, the government in Dubai mandates that a 10 percent service charge be added to all hotel, restaurant and bar bills. This service charge is then divided by the staff at the establishment, making the charge the equivalent of a tip. Diners in Morocco, where the gratuity is sometimes included in the bill, might be surprised to learn that a 10 percent tip in that country is considered generous. Tips are included in the bill in Costa Rica, where travelers need not feel obligated to leave any additional gratuities. Service is often included in the bill within the United Kingdom as well, though travelers should inspect the bill before assuming gratuity was included. Visitors to Spain should not feel obligated to leave a gratuity larger than 13 percent, and even a tip in the range of 7 percent is considered acceptable.

Make better choices when dining out

Dining out can make for an enjoyable evening or afternoon. Many people enjoy sampling different cuisines, and eating out removes the pressure and the work required when preparing meals at home.

As the number of people dining out continues to increase, many people find themselves looking for ways to stay focused on healthy eating when they are not the ones preparing their meals. The following are a handful of ways diners can stay healthy without giving up their love of dining out.

· Don’t arrive at the restaurant too hungry. Eat a small and filling snack before going to a restaurant. Eating a snack ahead of time will prevent you from overeating once your food arrives. An apple, protein bar or some crackers and cheese are good options.

· Fill up on water. When the server comes to take your drink order, ask for some water if it’s not already on the table. The symptoms of dehydration mimic those of hunger. Also, drinking water before and during your meal will help you to feel full and decrease the likelihood that you will overeat. · Engage in conversation. Bring someone with you to the restaurant so you can share some lively conversation. The more time you spend talking, the longer it will take to eat, giving your body time to digest and prevent overeating. · Choose the right foods. When perusing the menu, look for foods cooked a certain way. Broiled and grilled meats are healthier than fried foods, and steamed vegetables contain plenty of vitamins and

minerals your body needs to stay healthy. Avoid heavy cream sauces, lots of cheese and fatty meats. Ask if you can substitute fresh vegetables or brown rice for unhealthy sides or white rice. · Eat more seafood. Seafood is not only flavorful, but healthy as well. Eating certain fish gives your body the right types of fats to help the neurological system function properly and fuel your brain. · Avoid dining out as a reaction to stress. Don’t go out to a restaurant if you are feeling stressed or rushed, especially if you use food as a coping mechanism. You may end up rushing through your meal and eating more than you intended. · Divide your meal. Share a plate with others or ask for a to-go container when your course is served. This allows you to set aside some leftovers before you start to eat, reducing the likelihood that you will overeat. Dining out is a favorite activity for many people, and diners can take several steps to make their dining experiences healthier.

Love for sushi continues to grow With origins in China and Japan, sushi is an Eastern delicacy. However, there is no denying the popularity of sushi elsewhere in the world, particularly in North America. As with many ancient foods, sushi’s origins have an element of mystery to them. The original type of sushi is believed to have first been developed in southeast Asia before spreading to southern China. Sushi was eventually introduced to Japan around the 8th century, where it would evolve into the type of sushi many people enjoy today. According to The History Kitchen, a division of PBS Food, one origin story for sushi involves an ancient Japanese wives’ tale. According to that tale, an elderly woman began hiding her pots of rice in osprey nests, fearing that thieves would steal them. When she collected her pots, she found the rice had begun to ferment. She also discovered that fish scraps from the osprey’s meal had mixed into the rice. Upon sampling the mixture, she found the rice helped to preserve the fish. She also found that the resulting meal was tasty. Early Chinese sushi involved fermenting fish on rice to preserve it. The rice was thrown away and the fish was eaten when desired. The Japanese took their own approach to sushi, deciding to eat the rice with the fish. Sushi innovator Matsumoto Yoshiichi began seasoning the sushi rice with rice wine vinegar. This made it possible to eat the sushi immediately, instead of waiting months for it to ferment. Through the years, enterprising individuals began selling sushi to others. In the 19th century, rather than wrapping the fish in rice, sellers placed it on beds of rice and sometimes other ingredients. This presentation of sushi, credited to a man named Hanaya Yohei, became very popular. This type of sushi is called “nigiri sushi” (finger sushi). After World War II, the sushi style of presenting fish was adopted by western cultures. Sushi preparation and dining is an art form that continues to evolve. New influences have changed sushi even more by marrying traditional recipes with “fusion” styles. Demand for sushi continues to increase. According to Statistic Brain’s sushi industry statistics, there are 16,000 sushi restaurants outside of Japan, with close to 4,000 in the United States alone. What began as a method of preserving food has transformed into a billion-dollar industry.
