AS THE FIRST OFFERING OF 24/7’S NEW SERIES ON chefs profiles, the spotlight swings its focus on Chef J. Gamboa. Educated in University of Massachusetts at Amherst and the Culinary Institute of America, he is the man behind some of the most established restaurants in the city. Read on to get a glimpse of his thoughts on dining, food, and ingredients that should never make it into the kitchen. When did you get interested in becoming a chef? I started young because my family is in the restaurant business. When I was a kid, my siblings and I would go to my mom’s restaurant, Milky Way, during weekends or summers and help out. We would watch the candy store or open soft drink bottles.

The stars of the menu include the Mushroom Burger and Malunggay Pesto Pasta with Herb Chicken. They also have a choice selection of wines and alcoholic drinks for those who want to experience a different kind of oasis after office hours. Cocktail hours are from 5:00 p.m. until 8:00 p.m. Mondays through Fridays.

How would you describe the restaurant business? For us, it is like a family atmosphere. Restaurants are places where fun and happy times happen. We really want it to be a place where people are entertained to get a true dining experience. Do you have any favorite ingredients? I don’t have any favorite ingredients to work with. As long as it is of good quality, I am pretty flexible. I try out new things. For example, if there is a new cut of beef, I don’t shy away from it. There are some things that I would not cook with. Endangered animals are definitely something to stay away from.

With its interesting food, relaxing ambiance, spacious interiors, accessibility from the business district and free wifi to boot, this new bistro cafĂŠ shall soon be a favorite spot for the weary warrior of the concrete jungle.

How has your style of cooking evolved? I don’t really think about that. I have always maintained proper cooking and serving. But I did notice that people are looking for food that is healthier. That does not mean that you only offer greens in the menu. It is about making small changes that will give the people options. Are there any trends in the way Filipinos enjoy their food? Customers have become more demanding when it comes to food. Before, presentation did not matter as much as it does now. I think it is because of the way media such as magazines and the internet exposes them to how good food can be. Travel is also more accessible. I think all of these things contribute to people knowing their food better.

Educated in University of Massachusetts at Amherst and the Culinary Institute of America, he is the man behind some of the most established restaurants in the city. Read on to get a glimpse of his thoughts on dining, food, and ingredients that should never make it into the kitchen. When did you get interested in becoming a chef? I started young because my family is in the restaurant business. When I was a kid, my siblings and I would go to my mom’s restaurant, Milky Way, during weekends or summers and help out. We would watch the candy store or open soft drink bottles.

The stars of the menu include the Mushroom Burger and Malunggay Pesto Pasta with Herb Chicken. They also have a choice selection of wines and alcoholic drinks for those who want to experience a different kind of oasis after office hours. Cocktail hours are from 5:00 p.m. until 8:00 p.m. Mondays through Fridays.

How would you describe the restaurant business? For us, it is like a family atmosphere. Restaurants are places where fun and happy times happen. We really want it to be a place where people are entertained to get a true dining experience. Do you have any favorite ingredients? I don’t have any favorite ingredients to work with. As long as it is of good quality, I am pretty flexible. I try out new things. For example, if there is a new cut of beef, I don’t shy away from it. There are some things that I would not cook with. Endangered animals are definitely something to stay away from.

How has your style of cooking evolved? I don’t really think about that. I have always maintained proper cooking and serving. But I did notice that people are looking for food that is healthier. That does not mean that you only offer greens in the menu. It is about making small changes that will give the people options. Are there any trends in the way Filipinos enjoy their food? Customers have become more demanding when it comes to food. Before, presentation did not matter as much as it does now. I think it is because of the way media such as magazines and the internet exposes them to how good food can be. Travel is also more accessible. I think all of these things contribute to people knowing their food better.

Educated in University of Massachusetts at Amherst and the Culinary Institute of America, he is the man behind some of the most established restaurants in the city. Read on to get a glimpse of his thoughts on dining, food, and ingredients that should never make it into the kitchen. When did you get interested in becoming a chef? I started young because my family is in the restaurant business. When I was a kid, my siblings and I would go to my mom’s restaurant, Milky Way, during weekends or summers and help out. We would watch the candy store or open soft drink bottles. How would you describe the restaurant business? For us, it is like a family atmosphere. Restaurants are places where fun and happy times happen. We really want it to be a place where people are entertained to get a true dining experience. Do you have any favorite ingredients? I don’t have any favorite ingredients to work with. As long as it is of good quality, I am pretty flexible. I try out new things. For example, if there is a new cut of beef, I don’t shy away from it. There are some things that I would not cook with. Endangered animals are definitely something to stay away from. How has your style of cooking evolved? I don’t really think about that. I have always maintained proper cooking and serving. But I did notice that people are looking for food that is healthier. That does not mean that you only offer greens in the menu. It is about making small changes that will give the people options. Are there any trends in the way Filipinos enjoy their food? Customers have become more demanding when it comes to food. Before, presentation did not matter as much as it does now. I think it is because of the way media such as magazines and the internet exposes them to how good food can be. Travel is also more accessible. I think all of these things contribute to people knowing their food better.

Educated in University of Massachusetts at Amherst and the Culinary Institute of America, he is the man behind some of the most established restaurants in the city. Read on to get a glimpse of his thoughts on dining, food, and ingredients that should never make it into the kitchen. When did you get interested in becoming a chef? I started young because my family is in the restaurant business. When I was a kid, my siblings and I would go to my mom’s restaurant, Milky Way, during weekends or summers and help out. We would watch the candy store or open soft drink bottles. How would you describe the restaurant business? For us, it is like a family atmosphere. Restaurants are places where fun and happy times happen. We really want it to be a place where people are entertained to get a true dining experience. Do you have any favorite ingredients? I don’t have any favorite ingredients to work with. As long as it is of good quality, I am pretty flexible. I try out new things. For example, if there is a new cut of beef, I don’t shy away from it. There are some things that I would not cook with. Endangered animals are definitely something to stay away from. How has your style of cooking evolved? I don’t really think about that. I have always maintained proper cooking and serving. But I did notice that people are looking for food that is healthier. That does not mean that you only offer greens in the menu. It is about making small changes that will give the people options. Are there any trends in the way Filipinos enjoy their food? Customers have become more demanding when it comes to food. Before, presentation did not matter as much as it does now. I think it is because of the way media such as magazines and the internet exposes them to how good food can be. Travel is also more accessible. I think all of these things contribute to people knowing their food better.

'(()*+, MEET SOME OF THE GREATS IN THE CULINARY SCENE

AS THE FIRST OFFERING OF 24/7’S NEW SERIES ON chefs profiles, the spotlight swings its focus on Chef J. Gamboa. Educated in University of Massachusetts at Amherst and the Culinary Institute of America, he is the man behind some of the most established restaurants in the city. Read on to get a glimpse of his thoughts on dining, food, and ingredients that should never make it into the kitchen. When did you get interested in becoming a chef? I started young because my family is in the restaurant business. When I was a kid, my siblings and I would go to my mom’s restaurant, Milky Way, during weekends or summers and help out. We would watch the candy store or open soft drink bottles.

The stars of the menu include the Mushroom Burger and Malunggay Pesto Pasta with Herb Chicken. They also have a choice selection of wines and alcoholic drinks for those who want to experience a different kind of oasis after office hours. Cocktail hours are from 5:00 p.m. until 8:00 p.m. Mondays through Fridays.

How would you describe the restaurant business? For us, it is like a family atmosphere. Restaurants are places where fun and happy times happen. We really want it to be a place where people are entertained to get a true dining experience. Do you have any favorite ingredients? I don’t have any favorite ingredients to work with. As long as it is of good quality, I am pretty flexible. I try out new things. For example, if there is a new cut of beef, I don’t shy away from it. There are some things that I would not cook with. Endangered animals are definitely something to stay away from.

With its interesting food, relaxing ambiance, spacious interiors, accessibility from the business district and free wifi to boot, this new bistro cafĂŠ shall soon be a favorite spot for the weary warrior of the concrete jungle.

How has your style of cooking evolved? I don’t really think about that. I have always maintained proper cooking and serving. But I did notice that people are looking for food that is healthier. That does not mean that you only offer greens in the menu. It is about making small changes that will give the people options. Are there any trends in the way Filipinos enjoy their food? Customers have become more demanding when it comes to food. Before, presentation did not matter as much as it does now. I think it is because of the way media such as magazines and the internet exposes them to how good food can be. Travel is also more accessible. I think all of these things contribute to people knowing their food better.
