British-Filipino model and TV host Patti Grandidge is not only a delightful face and personality. She’s also the brains (and beauty) behind the latest cupcake sensation, Sweet Patti Cakes. She also counts fashion as one of her passions, which would seemingly be incongruous with food, because of the misconception that fashion models, skinny as they are, have food as their adversary. Patti shares how she makes it work: her success in keeping trim is eating in moderation. Patti’s irresistible cupcakes has variants that bring us back to our childhood with favorites like peanut butter, banana and chocolate, to the sophisticated flavors using hazelnut spread, carrot and coconut. Patti takes the business seriously, managing not only production but logistics, accounting, marketing-including the all-important, social media. Patti has lived in different parts of the world, including the Philippines where everyone has a sweet tooth, to Singapore, Bangkok and Japan where a myriad of culinary tastes abound, and to the United States, known for its abundance of food. She was caught in the middle of the cupcake trend while living in Los Angeles, and even worked at the counter of a famous cupcake brand, where she learned that attention to detail is an important key in the business. All of her sweet discoveries--photos and chronicles --she generously shares in her famous blog, pattispalette.blogspot.com. She gushes that she can live around her passions when she covers fashion on the TV shows she hosts, “HQ,” her second show after “Etcetera,” both on the ETC channel, and with her cupcake business. “My family is from Dumaguete. We wanted to give a proper showcase for Visayan cuisine. Visayan recipes can stand for Cebuano, Ilonggo, Palaweño, and Ormoc recipes. How the menu is composed is a reflection of the Visayas Islands,” said Andrew Masigan who has been in the food and restaurant business for 22 years now. Masigan also points out that The Visayan Room is different from his earlier restaurant XO 46, which serves Filipino heritage cuisine. Highly recommended is the Cebu lechon (roast) belly, Dumaguete express (photographs here) and for dessert Champorado Eh, who had made fans of non-fans of the dish. The Visayan Room’s chef CK Kalaw ensures dishes maintain that homey flavor. The South is just around the corner and it has never tasted this good.

The use of native materials to create a modern yet homey ambience parallels the experience of the food. It is different from the typical turo-turo style or traditional Filipino fiesta-style restaurant. Think lumpia ubod with finely chopped vegetables served in a cone shaped wrapper and dipped in frozen vinegar. Or Wagyu bistek made from the softest Kitayama flat iron steak laid above a croquette of sweet potato (camote). As is with many of us, we leave some space for dessert. And

rightly so because Chef Jackie created an irresistible molten chocolate cake as well as chocolate truffles and pralines with such unique flavors as kalamansi (local lemon), sili (native chili), barako (local coffee) and mango. This bistro has the answer for those who are undecided in their choice of menu hits. As a promotion, it offers for lunch and dinner unlimited dishes freshly cooked upon order and served in beautifully plated tasting portions. The use of native materials to create a modern yet homey ambience parallels the experience of the food.
