iF lipino Pride ‘I am proud of Filipino

adaptability and resilience. We’re still standing despite all the crap we go through. Seriously. And we can sing our socks off. For sure.’ CARLOS CELDRAN, cultural activist and performance artist. Celdran organizes tours around the city with the aim of “trying to change the way you see Manila, one day at a time.” TIP: Appreciate what the metropolis can offer in terms of history and sights through a Celdran walking tour namely the tours of Intramuros, the historic walled city, the architectural Imelda tour and the window shopping flea market tour at Evangelista Street. Everyday except Mondays. The Living Room, Unit 24, North Syquia Apartments, 1991 MH del Pilar, Malate, Manila, T: 484-4945, M: (0920) 909-2021, E: celdrantours@ hotmail.com, www.carlosceldran.com.

‘Filipinos have an amazing

colourful lifestyle and culture — basically Malay and Chinese influenced by the Spanish and Americans over the years. What I most love about the Filipino is their innate talent for music, service and excellent hospitality. ‘It is an art to fuse what they’ve learned from all the other cultures and putting their “Filipino sauce” over it. It is what makes them so unique and absolutely beautiful... like a halo halo.’ LIA CORSTEN, general manager of Netherlandsbased Dance Therapy, which handles the career of one of the world’s top DJs, Ferry Corsten (www. ferrycorsten.com). TIP: Check out the chops of Filipino DJs fused with live musicians at So What? at the M Cafe every Thursday. Expect soul jazz bombs, floor-shaking drum breaks with organ grooves, scratchy guitars, saxophone licks and nu jazz breaks and more. Museum Café, G/F Greenbelt 4, Makati Ave. cor. Dela Rosa St., Ayala Center, Makati City, T: 757-3000

Filipino Flavors

//menu by Tonette Lee

FILIPINO FOOD IS STILL FAR OFF from world domination, but for Filipinos to appreciate their own and share the best local flavors with visitors and guests is a good step towards that direction.

KANIN CLUB Paseo de Santa Rosa, Santa Rosa, Laguna. T: (049) 544-0332 Westgate, Alabang, Muntinlupa, T: 771-1400 UP-AyalaLand Technohub, Commonwealth Ave., Quezon City, T: 332-5978 Top restaurant in Asia, Miele Guide 2008/2009 Bridging the gap between Filipino fiesta food and daily home fare is Kanin Club. From its outstation beginnings in Sta. Rosa, Laguna this Filipino restaurant offers a pleasing variety of dishes one occasionally yearns for, but is too lazy to cook at home. What Kanin Club does best is present traditional Filipino food in very unique ways. Sinigang, our almost national dish, makes two separate appearances—as the highly recognizable steaming meat, vegetable and sour broth mix, and an interesting fried rice dish called Sinigang Sinangag. The latter is a head-scratcher: tangy fried rice, served with vegetable fritters and thin slices of pork belly, a real conversation starter. Try also the wide variety of “crispy’s” available on the menu—crispy taenga, crispy liempo, crispy beef ribs, including crispy dinuguan, Kanin Club’s take on the native pork blood stew, using crisp-fried pork pieces instead of the innards. Do not miss the tapa ni Ana, binukadkad na tilapia, turron halo-halo, and the patola in olive oil. Two or three dishes plus their eat-all-you-kanin ought to do it for five or six people, as the servings are quite large-sized, and prices reasonable at this restaurant with a sense of humor.

MILKY WAY CAFÉ Since 1962 2/F, Milky Way Bldg. 900 Arnaiz Ave. (formerly Pasay Road) cor. Paseo de Roxas, Makati, T: 843-4124, 843-7124 The Milky Way brand has been in existence since God was in short pants, and it stands as the last bastion of Filipino flavors on the Makati street. Pampango-bred diners would possibly recognize the pancit luglug as one of the tastier versions in Metro Manila today. A quick merienda of pancit luglug, tokwa’t baboy, and dinuguan with puto, capped off by Milky Way Halo-halo will turn itself into your dinner for the day. Go with friends, because the selection will make limiting your order to one or two dishes difficult. Try the crispy hito with bagoong and mustasa (the bagoong seems to be a concession to urbanites who may not be familiar with Pampanga’s fermented rice), the kare-kare, and a junior sized crispy pata. Stop by the store by the stairs, where you’ll find the local popped corn and chicharon snacks of your schooldays. Photos courtesy of http://cafe.milkywayrestaurant.com/
