WELCOME... Welcome to our Christmas Special edition of Windsor & Maidenhead Local magazine. At this wonderful time of year when our Windsor town centre becomes a magical blend of historical charm and festive cheer we take a look at how preparations are getting underway at Windsor Castle along the way. We visit Maidenhead and take a look at how the regeneration of the Town over the past few years has resulted in it becoming a vibrant and desirable place to work, live and visit. We showcase the Borough pub and Vanilla Cakes as fine examples of entrepreneurial spirit and new business which has been attracted to the area. Talking of entrepreneurs, I spend Five Minutes With David Wilby, chef patron of Windsor Grill on St Leonards Road, as he talks about his passion for food, friends and the festive season. But to really get the party started, we ‘Get Party Ready’ with Innate, Piya’s Thai Spa and Salon and Sarah Healey Aesthetics, to gear up for the celebrations. We welcome the new Poggenpohl showroom in Marlow with their leading brand of kitchen architecture, and over at Holme Grange, Gayle at Enchanting Glass Designs has a winter wonderland - made of glass! Ideal for unique and beautiful Christmas presents and decorations. We set off on our travels again as part of our three part feature on Italy and visit Venice, the city of canals, and gaze at such wonders as the Bridge of Sighs and St Mark’s Basilica, before checking out Christmas with the animals at London Zoo. We have been busy! Maybe our festive recipes will give you a few ideas for Christmas lunch and also how to ‘set the stage’ with beautiful Christmas table ideas, and when purchasing your festive food and drink don’t forget to shop local and support our independent local businesses and tradespeople whenever possible. In our last issue, we featured the staff and residents of Abbeyfield care home, and I have to say there was so much positive feedback, it really was heartwarming, which is quite apt really as they are on the front cover with a delicious looking mug of hot chocolate with marshmallows, and on the inside back cover they reach out to our readers who may be looking for respite care at this very busy time of year. As we’ve learnt from previous years, it’s a marathon, not a sprint, and the key to surviving the festive season is to create a beauty timeline that leaves you prepped and primed for the best of times, as the most festive and fantastic version of yourself.

Here’s our step-by-step guide to slaying the Christmas season...

Body Scrub & Massage

Prior to your entire bank account being dedicated to last minute gifts and festive outfit shopping, treat yourself to a top-to-toe body scrub. Slough off all the dry skin that’s accumulated thanks to early onset winter, and get your blood flowing and lymph nodes draining as they should. You’ll feel like a new person with your renewed smooth skin.

Facial

Your skin is going to take one for the team as you indulge in drinking too much, and sleeping not nearly enough. To delay the effects of dark under eye circles and dull skin, go for a resurfacing and glow-boosting facial. Hairdressers and barbers become harder to get into than a pair of skinny jeans postmoisturising once we enter December, and you’ll want to make sure you leave plenty of time to get your hair refresh and establish a new washing schedule to suit your event dates. Ladies, (with longer hair) while in the chair, ask your stylist to show you a few easy party hair options you can do in a pinch.

Laser Hair Removal / Wax

Operation: Smooth as a baby seal. If you feel your best when your pits, private parts and pins are hair-free, waxing will offer you the best long-term solution (unless you’ve already had laser). Think about it now, so you can make sure your hairs are long enough to satisfy your waxer and then enjoy 2-3 weeks of smoothness that will see you through to the New Year.

Brow Tint & Shape

CHRISTMAS AT LONDON ZOO London Zoo, located in Regent’s Park, is one of the world’s oldest and most renowned zoological gardens. It was established in 1828, making it the world’s first scientific zoo, and opened its doors to the public in 1847. The zoo was founded by the Zoological Society of London, whose mission was to advance the study of zoology and provide a place for scientific research and public education. Throughout its history, London Zoo has played a significant role in the development of modern zoology and the conservation of endangered species. It has been home to a wide variety of animals, and its collection has grown over the years to include numerous species from around the world. The zoo’s early years were marked by a focus on collecting and studying animals, but it has evolved to prioritise animal welfare, conservation, and education. London Zoo has been involved in various breeding and conservation programs, WINDSOR LOCAL • DECEMBER 2023

contributing to the survival of endangered species. We take a closer look at what is happening today, as our team at Wokingham Local (together with younger family members) visit London Zoo just before the holiday season. An absolute firm favourite was Pengiun Beach, the home of Humboldts Penguins.

Humboldts are medium-sized penguins.

They have black heads with a white stripe on either side and pink skin around their eyes and base of the 13


bill. Here are just a few facts - These penguins need to lose heat, rather than conserve it; bare patches beside their bills and large wings help do this. Humboldt penguins preen themselves and other members of the colony; they gather oil from a gland in their tail and apply it to their feathers like a gel. They never chew with their mouth open because they don’t chew at all! Instead they swallow their fish head first. A Humboldt penguin can reach up to 30 miles per hour in the water! Did you know, that penguins can’t fly? On land they are known and loved for their clumsy waddles – but when it comes to swimming, they gracefully “fly” through the water.

Entering the Giraffe House, you find yourself inside the only Victorian building at London Zoo that’s still used for its original purpose – providing a comfortable home for their tallest residents! In the early hours of 25 May 1836, a remarkable procession took place through the streets of London. Four young giraffes were walked by their 14

WINDSOR LOCAL • DECEMBER 2023


attendants from the docks at Blackwall to the Zoo in Regent’s Park, accompanied by a police escort to keep the roads clear. The three males and one female (known as Selim, Mabrouk, Guib-allah and Zaida) had been transported from Sudan by a French trader, Monsieur Thibaut. They were not only the Zoo’s first giraffes, but virtually the first of their species to be seen in England. Their sole predecessor was a female giraffe that had been given to George IV and lived briefly in the royal menagerie at Windsor. Not surprisingly, the giraffes’ arrival at the Zoo caused a public sensation, and providing these new residents with suitable accommodation was a priority. On arrival, the group was initially housed in an elephant barn, but the new Giraffe House was completed for them in June 1837. East and west wings were added to the building 12 years later. The east wing housed the Zoo’s famous hippopotamus Obaysch – the first hippo ever seen in England – and the west wing accommodated eland antelopes, and later, zebras.

it was built, the Giraffe House has rarely been unoccupied. Despite the extensive intervening renovations, it retains a number of original features, including its distinctive tall, rounded stable doors. Now Grade II listed, the Giraffe House is one of the oldest zoo buildings in the world that is still used to house its intended residents.

Christmas at London Zoo is a time of magic and merriment for both the animals and dedicated staff who care for them. As the winter chill blankets the city, the zoo transforms into a festive wonderland. The dedicated keepers, veterinarians, and support staff work tirelessly to ensure the well-being of the animals during this special season. For the animals, Christmas means extra enrichment activities, special treats, and festive decorations in their enclosures. The primates receive holidaythemed puzzles to challenge their intellect, and big cats are given scented trees to stimulate their senses. with their favorite snacks, while the reptiles bask under heat lamps surrounded by twinkling lights. The staff at London Zoo doesn’t miss out on the celebrations either. They gather for a festive meal, sharing stories and laughter, while acknowledging the vital role they play in animal conservation and welfare. It’s a time to reflect on the progress made and set new goals for the year ahead. Christmas at London Zoo is a heartwarming reminder of the dedication, care, and love that both the animals and staff share throughout the year. ROBIN REDBREAST Part of the Christmas Story

Christmas is a time of tradition and magic, and one of the most enchanting symbols of the season is the sight of a little robin redbreast perched on a snowcovered branch. This small and vibrant bird, with its distinctive red breast, holds a special place in the hearts of many during the holiday season. The robin’s association with Christmas dates back to a variety of legends and folklore. One of the most popular tales tells of how the robin got its red breast, a story that often warms the hearts of children and adults alike. Long ago, the world was a much colder and harsher place during the winter months. Snow and ice covered everything, making it difficult for animals to find food and warmth. One especially harsh winter, there was a kind and generous carpenter named Joseph who lived in a small village. Joseph had a wife named Mary who was expecting a baby. The couple had been 16

traveling to Bethlehem, and Mary was soon to give birth to a child who would become the Savior of the world. One cold and snowy night, as Joseph and Mary sought shelter in a stable, they were joined by a host of animals seeking refuge from the winter chill. Among them was a small brown bird with a plain breast. As the night wore on, the temperature continued to drop, and the stable grew colder. The little bird watched as Mary and Joseph tried to stay warm, and it felt a deep sense of sympathy for the expectant couple. The bird knew it had to do something to help. It approached the manger where baby Jesus lay and flapped its wings to create a gentle breeze that blew across the baby, keeping him warm. As the bird continued to do this, it began to feel a burning sensation in its chest. The closer it got to the baby, the more intense the heat in its breast became. WINDSOR LOCAL • DECEMBER 2023


In its efforts to keep the baby warm, the bird’s breast turned from dull brown to a vibrant shade of red. The legend tells us that the bird’s selflessness and compassion not only kept the baby Jesus warm but also brought hope and comfort to the entire stable. The warmth radiating from the bird’s red breast filled the hearts of all present with a sense of peace and joy. Since that miraculous night, the robin redbreast has been forever associated with the spirit of Christmas. Its red breast symbolises the love, sacrifice, and kindness that the holiday season represents. The robin is a reminder that even the smallest of creatures can make a big difference through acts of compassion and selflessness. In many cultures, the robin is considered a harbinger of good luck and a messenger of hope. It is often believed that seeing a robin during the Christmas season is a sign that loved ones who have passed away are watching over us and sending their blessings. In some traditions, the sighting of a robin on Christmas Day itself is considered particularly auspicious and is said to bring a year of good fortune and happiness. As the years have passed, the presence of the robin redbreast has become a cherished part of Christmas traditions around the world. Many people incorporate images of this beloved bird into their holiday decorations, greeting cards, and ornaments. Whether it’s perched on a snowy branch or depicted on a festive plate, the robin’s image evokes a sense of warmth and togetherness during the holiday season. So, when you spot a robin redbreast on a crisp winter’s morning, take a moment to appreciate the beauty of nature and the magic of Christmas. HOW TO DECORATE YOUR HOME FOR

CHRISTMAS

It’s here!

Whether you like it or not the festive season is upon us and whilst the amount of organising this one day takes is like having a second job, as an interior designer I obviously love the opportunity to go bold with the décor. So why do we need to spend time and money decorating our homes for what is effectively one day? Well because the interiors of our homes are actually incredibly emotive. The reason people invest in creating an incredible home, is because they want to feel excited, energised, cocooned etc, a well designed home is like a battery charger for our lives. And decorating our homes for Christmas can ultimately achieve the same emotive response. When you walk into a restaurant, bar, hotel and it is decorated for the Christmas period, it lifts your spirits and instantly puts you in the festive mood. That is why we should get our Santa hats on and add that extra sparkle to our homes.

Go Big Or Go Home

For many people decorating for Christmas equals putting up the tree (either real or fake) in the room with the sofas, adding some lights and decorations and then admiring your handy work or the Kids bunched up attempt. My problem with this approach to decorating is how much time are you actually spending in this room and so the majority of the Christmas period you’re not surrounded with joy and festive décor and it’s all a bit depressing. Most of us actually spend our time in our kitchens and for some of us this space can actually be the biggest room in the house. If you’ve added the tree to your cosy living room, then this room is calling out for some festive cheer. WINDSOR LOCAL • DECEMBER 2023

A second tree is obviously an option and if you have gone for a natural, classically decorated tree for your living room, then this provides an opportunity to go for a completely different look. The kitchen is often a busy space and room for a further tree can be limiting, so how else can you add the sparkle? Well there are often lots of surfaces in a kitchen, the dining table, sideboards and the kitchen island, so adding arrangements of festive flowers and plants, or small trees or even jars of sweets all add to the warm, Christmassy feel.

When we take on a new project, we always remember to look at the spaces from all angles and all heights. It doesn’t matter if you have the most amazing flooring if you’ve left your ceilings completely bare. This is the same with decorating for Christmas, how a home looks from the floor to ceiling is very important. It all comes back to scale and perspective. Hanging Christmas decorations increases the sense of scale and allows your eyeline to be transported around the entire space. Now you can hang whatever you like, wherever you like. My preference is along tall patio, sliding or folding doors. When most of us extend or renovate our homes, we often add large expanses of glass to bring in the light and connect us to our gardens and nature. This provides a brilliant opportunity at Christmas to use them in our decorating schemes. Alternatively a large wall also works well. For the rustic wall we added fairly lights and paper pin wheel decorations that create an incredible impact! You can string fairly lights, stars or even snowflakes and the finished effect is beautiful and magical.

There are of course thousands of Christmas decorations in just about every possible colour, so how do you decide on the colour scheme for your festive wonderland? Look to the interior palette of your home, if you have an all white kitchen then you could heighten this with white garlands or snow flakes or oversized white baubles. Alternatively you could opt for a contrasting décor palette of bight, bold decorations, with plenty of sequins and glitter.

The metallic choices in your home can also influence whether you choose to favour silver or gold tones. For this kitchen we designed a bronze liquid metal breakfast bar, the warm brass tones influenced our client to opt for warm gold tones for their Christmas décor. Similarly the copper splash back for this project dictated a bronze tone for the Christmas decorations for this room. I am not a huge advocate for changing decorations every year, so I think choosing a palette and then adding to it is important. Small changes can be impactful but not wasteful. For our second tree I bought oversized, clear baubles that open for décor to be added inside. Each year my children open them up and add a different décor theme, whether it’s feathers, pinecones they’ve found on holiday or some sequins, it provides a new design each year without being wasteful and expensive.

AT WINDSOR CASTLE This year’s Christmas display at Windsor Castle will celebrate the 675th anniversary of the Order of the Garter, the oldest order of chivalry in Britain which was founded in Windsor in 1348. A magnificent 20-foot-high Nordmann Fir tree in St George’s Hall, grown nearby in Windsor Great Park, is the highlight of the Christmas display. This year it will be topped by a specially commissioned sparkling Garter Star to commemorate the anniversary, alongside Coronationthemed decorations to celebrate this special year. Another glistening Christmas tree topped with a Garter Star will be in the Crimson Drawing Room – one of the most elaborate rooms in the Castle. Part of the Semi-State Rooms created as private apartments 24

for George IV, these rooms on the east side of the Castle are still used by members of the Royal Family for official entertaining and are open to visitors over the winter months. In the Waterloo Chamber, the 160-foot-long dining table will be laid with porcelain from the Garter Service, featuring a design inspired by the Garter star and the Order’s motto ‘Honi soit qui mal y pense (Shame on him who thinks evil of it)’. Impressive garlands on the Grand Staircase will greet visitors as they enter the State Apartments, while outside, festive wreaths and foliage will adorn gates and lampposts in the Castle grounds. to a festive menu in the Undercroft Café, available throughout December, where there will be another spectacular tree dressed with sparkling Garter Stars to commemorate the anniversary. Families can participate in craft activities and workshops exploring how the Victorians celebrated Christmas, held at the Learning Centre every Monday, Thursday, Friday, Saturday and Sunday between Saturday, 16 December 2023 and Monday, 1 January 2024. Jacqui Priestley spends 5 Minutes with David Wilby of Windsor Grill eating out, even in the 70s we ate out regularly. As for cooking, that came later, I used to visit my father at work and began spending time with the chefs, I was fascinated by how they worked and put things together.

JP: What gave you the initial idea to become a chef and to open Windsor Grill, here in the heart of Windsor? Based on Windsor’s trendy St Leonards Rd, David Wilby at the iconic Windsor Grill talks to Jacqui Priestley about his passion for food, friends and the festive season. JP: David, can I ask first of all, did you enjoy cooking from an early age?

I certainly enjoyed food from an early age, both my parents were in the industry and food was a very important part of family life, both at home and 26

Two completely different questions, I decided to become a chef about the age of 15, I wrote about 25 letters to every high-profile restaurant and chef I could research about from Mossimann at the Dorchester, Albert Roux at the Gavroche, Michel Bourdin at the Connaught and many others, I received 3 replies (from the named chefs above) all saying I was too young. I ended up working in the kitchen of a small hotel in Warrington, and at college on day release, looking back, this was a good start, the food was not great but the work ethic from the general manager and WINDSOR LOCAL • DECEMBER 2023


sous chef put me in good stead for the future, I quickly traveled south and ended up in London. Windsor Grill came along in 2007, I was in partnership with AWT and Windsor Grill became our sixth restaurant, in 2014 we parted company and I took over Windsor Grill as sole owner, it’s been a bit of a roller coaster, as Covid knocked the wind out of all us restaurateurs but we have managed to get through it with only minor scars.

JP: Did you have an ambition to become a famous chef and do you have an ambition to be a celebrity chef now?

I never wanted to be famous for the sake of being famous, being well thought of by my peers and the industry because of my ability to cook and manage, yes, but being on the TV was never for me. During my partnership with AWT I did a few bits on tele and hated every minute of it. As for becoming a “celebrity Chef”, NO, we are cooks and kitchen managers! I think the word celebrity is overused these days. When celebrities appear on television these days, I have no idea who most of the people are.

JP: Our special feature in this Christmas Special edition is the Festive Season, what does that entail here at the restaurant for yourself and the team at Windsor Grill?

The busiest month of the year, I had my Christmas menus finished at the end of August. It’s always an odd feeling to sit in my garden at home in 30 degrees surrounded by books with a Christmas theme trying to get into the Christmas mood and write menus. I do it every year and it never gets easier. Christmas at the restaurant is all about organisation, it starts in October, making chutneys, quince paste, Christmas puddings, then in November Christmas pudding ice cream, Rillettes, cranberry sauce etc. we have 3 Christmas menus of various prices, the a la carte menu, special requests and desserts, we don’t normally open for lunch but are happy to for Christmas parties, from 1st December through to 23rd. December is all WINDSOR LOCAL • DECEMBER 2023

hands-on deck, no holidays, very little time off, but we wouldn’t have it any other way, the majority of the customers are in good spirits, the odd one or two, too many spirits, but that’s restaurant life. Then it’s two weeks off for everyone from 24th this year, I don’t do New Year’s Eve, I’ve always found it strange doing New Year’s Eve in restaurants unless you have entertainment.

JP: Where do you gain inspiration for new dishes on the menu?

I own around 1000 cookbooks which I often look through, it’s lovely looking through some of the old ones just to remind you of things from the past, some that have remained timeless, I also travel a lot, and food is a huge part of my holidays, visiting markets, restaurants and again talking to people, also because a lot of my friends are in or have been in the industry, talk around the dining table often reverts back to food.

JP: What is your all-time favorite recipe from your menu?

This is almost impossible to answer as my favorite dish depends on my mood, I spent some time in the states in the late 80s learning about Cajun Creole food, I then opened as head chef the first Cajun Creole restaurant in London. Blackened Prawns with Creole mustard sauce has stayed with me all that time, it’s still on the menu today and as popular as ever, it has a kick to it but the flavours just marry together.

JP: What do you do to relax?

Eat, drink and cook, I still love to eat out with Julia and friends or cook at home, I am at my most comfortable either in a kitchen or sitting round a dining table.

JP: When you are entertaining at home, what dish do you cook to impress?

At home I am the BBQ king, I use it all year round, (saves cleaning the oven) I even cooked Christmas Day Turkey and Ham on it one year in the snow. My food is about flavour, buying the best 28

ingredients and treating them simply. In the winter I tend to cook long and slow at home, 12-hour short ribs, brisket, pork belly etc., in the summer more Mediterranean style, lots of grilled vegetables, fish & meat. Food for me is to share, enjoy with friends, we can sit for hours and just have fun, it’s not about showing off.

JP: What is the single best piece of advice anyone has ever given you?

Many years ago, actually 1980, just as I was coming to London my then Head Chef Peter Griffiths, said to me “good luck, you will be okay, your biggest headache will always be staff, not food, not cooking but staff” Then another friend once told me “It’s not the person you sack that makes your life a misery, but it’s the one you don’t” I have to say, in all my years in kitchens food has never been the issue, both bits of advice were spot on.

JP: If you could sum up what you stand for in one phrase, what would that be? To respect food and treat it simply and with care, let the natural flavours come through.

Christmas Canapés Begin your Christmas feast with these bitesized prawn & spiced yoghurt pappadums and cucumber bites, both of which are also fabulously tasy canapes for your festive parties.

For the prawn pappadums 200g (3/4 cup) Greek-style natural yoghurt 1 1/2 tbsp mango chutney, 1 tsp Lime Pickle 1 cucumber, finely chopped 2 tbsp chopped fresh coriander 1 small fresh red chilli, thinly sliced 20 mini pappadums 20 (about 350g) small cooked and peeled prawns

Method: It couldn’t be simpler; combine the yoghurt, mango chutney and lime pickle in a bowl. Then in a seperate bowl, combine the cucumber, coriander and chilli. Assemble with a teaspoon of yoghurt mixture on to the pappadums, and top with the prawns and cucumber mixture, and serve. Delicious.

For the cucumber bites

2 cucumbers, 1 avocado, stoned, peeled 80g marinated feta, drained, 1 tbsp thyme leaves 1 tbsp chopped chives, 1 tbsp lemon juice 1 tsp finely grated lemon rind, 1 tbsp olive oil 2 tbsp baby capers, drained

Method: Cut cucumbers into 2-3cm slices and scoop about half the seeds from the centre of each cucumber slice to make a cavity. Then place the avocado, feta, thyme leaves, chives and lemon rind in a food processor. Process until almost smooth, add the lemon juice and process again, then season. Pipe or spoon the mixture into the cavity. Briefly fry the capers in hot oil for 3 or minutes and drain before sprinking over the cucumber bites. WINDSOR LOCAL • DECEMBER 2023

Broccoli Cheese Fresh or frozen broccoli can be used for this delicious, comforting broccoli cheese gratin. The cheese sauce is simple but spiked with mustard for added depth of flavour. Serve as the perfect side dish to your Christmas Turkey or as a tasty Boxing Day supper.

Ingredients:

150g frozen broccoli florets 20g unsalted butter 20g plain flour 150ml pint milk 60g mature cheddar, coarsely grated 1 tsp English mustard or wholegrain mustard salt and freshly ground black pepper

Preheat the oven to 220C/200C Fan/Gas 7.

Cook the broccoli in boiling water for about 3 minutes or until just cooked through, then drain well and place in a small ovenproof dish. Melt the butter over a medium heat, add the flour and cook, stirring constantly, for 1 minute. Gradually add the milk, whisking well, until you have a smooth sauce. Continue to |cook over a medium–low heat, stirring often, until the sauce has thickened slightly. Remove from the heat, add the grated cheese and mustard, a pinch of salt and some black pepper. Stir until the cheese is melted and well combined. Pour the cheese sauce over the broccoli and bake for 20–25 minutes, until the sauce is bubbling with golden patches on top.

Christmas Beef Wellington The ultimate indulgence...

Ingredients Beef fillet 1 kg, English mustard 30 g, Chestnut mushrooms 700 g, Chestnuts 100 g, Fresh thyme 10 g, 8 slices of Parma ham, 1 sheet of puff pastry, 1 egg, Olive oil, Salt & Pepper

Method Beef Wellington has to be the ultimate indulgence during your Christmas dinner. Start with the beef fillet, and the important thing is to sear it first. Season your fillet with salt and pepper, then take a hot pan, pour some olive oil and place the beef into the pan and fry the beef until it is nicely coloured. Take the beef out of the pan and place on the plate. Then, slightly brush your beef with English mustard, as this gives a bit of a heat. While the beef fillet is resting, prepare the filling. Take 700 g of chestnut mushrooms and place them into the blender, and add a chopped clove of garlic. Season with salt and pepper and blitz. Christmas wouldn’t be Christmas without chestnuts, so next add 100 g of chestnuts to the mushrooms and blitz again. Once the mixture is finally chopped, cook it in a hot dry pan. This removes the water from the mushrooms and intensifies the flavor. Add 10 g of fresh thyme. When all the liquid is dried off, remove the filling from the pan and leave to cool. Next, start assembling the Wellington. Stage one is wrapping the beef fillet. Place the kitchen film over the board. Put 8 slices of Parma ham on the kitchen film. Add a little touch of pepper. Then, spread your mushroom filling over the Parma ham. Use the back of the spoon to spread it nice and thinly. Then, lay the beef on top and very carefully fold that over. Wrap the beef nicely and carefully. Push and roll it nice and tight. The tighter it is the more perfect the shape. Then, place the beef into the fridge for 15 minutes to firm up. Once it is set, it is ready for the final wrap. Place your kitchen film on the board and put the puff pastry on to it. Put your beef in the center and very carefully roll the puff pastry over the beef until two edges meet. Trim off the excess pastry and twist the ends together to ensure that the beef is completely sealed in its pastry case. To give the pastry a golden-brown color when it bakes, brush it with an egg yolk. Sprinkle some salt over the pastry, to ensure it becomes lovely and crispy. Bake in the oven at 200 degrees for around 35 minutes. When ready, let your Wellington rest for 10 minutes. There you go – the best Christmas Beef Wellington, ever. Serve with: green beans, brussell sprouts with chestnuts, carrot puree, crispy roast potatoes, and gravy – or red wine jus? Well, it is Christmas! 31

Ingredients 1 tablespoon olive oil 1 medium onion sliced 1 red pepper sliced 1 green pepper sliced 1 teaspoon chilli flakes 3 cloves garlic crushed or grated 3 cm ginger grated 3 teaspoons garam masala 2 teaspoons turmeric optional 500 g leftover cooked turkey shredded or cubed 350 ml passata (or chopped tinned tomatoes) 200 ml coconut milk Salt and pepper to taste

Method: Place the oil, onions and peppers in a wide, deep pan and cook over a gentle heat (lid on) for about 5 minutes, or until softened but not brown.

Add the chilli, garlic, ginger, garam masala and turmeric and fry gently for 2 more minutes (add a very small splash of water if it gets too dry). Add the turkey, passata, coconut milk, salt and pepper and bring to the boil. Turn down low and simmer for 10 minutes until the sauce has thickened slightly and the turkey is piping hot all the way through. Serve with rice and naans and all your favourite accompaniments.

The renovation of Maidenhead town centre over the past five years has been a transformative journey that has revitalised the heart of this historic town. One of the most visible changes has been the modernisation of the town’s infrastructure. The roads and public transportation systems have undergone extensive upgrades to ease traffic congestion and enhance accessibility. The Maidenhead station, a crucial hub for commuters, has received a major facelift, making it a more welcoming and efficient transport gateway. The physical appearance of Maidenhead town centre has also seen a dramatic transformation. The Christmas Cocktail - Chai Espresso Martini We are celebrating the holiday season with this cozy Chai Espresso Martini. Homemade vanilla chai and honey simple syrup, mixed with the classic espresso martini ingredients of vodka, Kahlúa, and a shot of espresso. A shot of coconut milk makes the drink a touch creamy and just that much more delicious. This is the perfect subtle twist on the classic espresso martini cocktail. It’s a delicious festive treat to cap off the night. The chai syrup is the extra special holiday touch to this martini. It’s also so simple to make. You basically brew chai tea, then add honey and vanilla to create a simple syrup. The syrup will make enough for about six cocktails. This is awesome to have on

hand for anyunannounced guests… or if you just want to make yourself a fancy holiday martini. It’s not too sweet, perfectly spiced with warming flavors of chai, and just lightly hinted with vanilla. Shake the chai honey syrup with vodka, Kahlúa, a shot of espresso, and a shot of coconut milk. You’ll get a sweet martini with just the right amount of espresso, hints of vanilla, and a little creaminess too. Oh so GOOD! The key to a good espresso martini is all in that frothy top. I know it might seem like a hard thing to achieve, but it’s actually very easy. You just need to really shake the drink together with ice for a good minute to create the froth. The harder you shake, the more froth you’ll get.

VENICE CITY OF CANALS Part 2 of our 3 part series on Italy

Venice has long been a captivating tourist destination for the past century, attracting visitors with its unique blend of history, culture, and breathtaking beauty. Its appeal lies in its iconic canals, stunning architecture, and rich artistic heritage. Over the last 100 years, Venice has evolved as a thriving tourist hub, undergoing both challenges and transformations. In the early 20th century, Venice’s allure as a tourist destination was already well-established. The city’s timeless charm drew writers, artists, and intellectuals, including Ernest Hemingway and Thomas Mann. The Grand Canal and St. Mark’s Square were major draws, as visitors explored the intricate waterways and admired the city’s Gothic and Renaissance architecture. During the mid-20th century, Venice faced challenges related to flooding and infrastructure 42

decay. The notorious acqua alta, or high water, threatened the city, and efforts to mitigate this issue led to the construction of the MOSE project, a series of movable barriers designed to protect the lagoon. Despite these challenges, tourists continued to flock to Venice, enchanted by its beauty and unique atmosphere. Let’s take a look at a couple of the most famous landmarks. The Bridge of Sighs is an iconic structure in Venice, Italy, known for its exquisite architecture and rich history. Built in 1602, this arched limestone bridge connects the Doge’s Palace to the city’s historic prison. The name “Bridge of Sighs” comes from the belief that prisoners would sigh as they crossed it, taking their last glimpse of the beautiful city before imprisonment. This enchanting bridge is a symbol of both freedom and captivity, capturing the duality of human experience. Its delicate tracery and ornate details make it a favorite spot for tourists, offering breathtaking views of the canals and Venice’s timeless charm. St. Mark’s Basilica is an iconic and historic church renowned for its stunning architecture and rich cultural significance. Built in the 9th century, it showcases a unique blend of Byzantine and Gothic architectural styles. The basilica’s exterior features intricate mosaics and sculptures, while the interior boasts a wealth of golden mosaics, marble columns, and exquisite artwork. The church has played a central role in Venetian history, serving as a symbol of the city’s wealth and power during its maritime heyday. Today, it remains a must-visit attraction for tourists and a testament to Venice’s grandeur. The late 20th century saw an increase in tourism as international travel became more accessible. Venice’s appeal as a romantic and historic destination grew, with tourists from around the world coming to experience gondola rides, explore the intricate alleyways, and enjoy Venetian cuisine. The city became a symbol of Italy’s cultural heritage, a place where art, music, and history converged. However, this surge in tourism brought its own set of issues. The sheer volume of visitors put immense pressure on Venice’s infrastructure, leading to overcrowding and straining the delicate balance between preserving the city’s heritage and catering to tourists. move away from the city center due to rising living costs and changes in the local economy, which became heavily reliant on tourism. In recent years, the 21st century has witnessed a push for sustainable tourism in Venice. Local authorities and organisations have sought to address the challenges posed by mass tourism while preserving the city’s unique character. Regulations have been put in place to control visitor numbers, such as limiting cruise ship access to the city center, imposing fines on those who swim in the canals, and encouraging responsible travel. Venice has also adapted to the changing demands of tourists. While its classic attractions remain popular, there’s a 44

growing interest in experiencing the city beyond the well-trodden paths. Travelers are seeking authentic local experiences, from attending traditional Venetian festivals to exploring the less-visited districts like Cannaregio and Dorsoduro. Cannaregio is one of the six historic districts, or sestieri, in Venice, and where we chose to stay during our visit. Located in the northern part of the city, it offers a unique and authentic Venetian experience away from the bustling tourist crowds. The district is known for its picturesque canals, charming bridges, and historic architecture. Cannaregio is home to the famous Venetian Ghetto, one of the world’s first ghettos for Jewish residents, with a rich history and cultural significance. The neighborhood boasts the stunning Ca’ d’Oro, a Venetian Gothic palace turned museum, and the vibrant Strada Nova, a bustling street lined with shops, restaurants, and cafes. You can explore the peaceful canals, historic churches, and local markets, immersing themselves in the daily life of Venetians. Cannaregio offers a quieter, more authentic side of Venice, making it a captivating destination for travelers seeking a genuine Venetian experience. Cultural events and art exhibitions, like the Venice Biennale, continue to draw a global audience, showcasing the city’s enduring relevance in the world of art and culture. Furthermore, the preservation of Venice’s architectural heritage remains a priority, with ongoing efforts to restore and maintain historic buildings and landmarks. The culinary scene has also evolved, with a greater emphasis on authentic Venetian cuisine. Visitors can savor fresh seafood, cicchetti (Venetian tapas), and regional wines at traditional bacari (wine bars), immersing themselves in the local food culture. Venice’s role as a tourist destination over the last century reflects the delicate balance between the preservation of its rich heritage and the demands of a global tourism industry. While the city has faced challenges like overcrowding and environmental concerns, it has also adapted and evolved. So what I discovered on my recent trip is that Venice strives to offer an authentic and sustainable experience embracing its unique history, its culture, and its artistic legacy.
