Mediterranean Cuisine A celebration of fresh, vibrant ingredients, bold flavours, and a rich culinary heritage

Mediterranean cuisine is a diverse and flavourful culinary tradition that reflects the rich tapestry of cultures surrounding the Mediterranean Sea. Encompassing a wide range of countries, including Spain, Italy, Greece, Turkey, Lebanon, and others. Mediterranean cuisine is characterised by its emphasis on fresh, seasonal ingredients, healthy fats, and bold flavours. This unique culinary style has gained global recognition not only for its delicious taste but also for its potential health benefits. One of the key features of Mediterranean food is its reliance on fresh and locally sourced ingredients. Fruits, vegetables, grains, and legumes form the foundation of many dishes, contributing to a diet that is rich in vitamins, minerals, and fibre. Olive oil, a staple in Mediterranean cooking, is a source of healthy monounsaturated fats and adds a distinctive flavour to many dishes. The region’s inhabitants have long understood the importance of a diet based on these elements for overall health and well-being. Seafood plays a prominent role in Mediterranean cuisine, given the proximity of many Mediterranean countries to the sea. Fish such as salmon, tuna, sardines, and mackerel are frequently featured in dishes. Grilled or baked fish, seasoned with a variety of herbs and spices, showcase the simplicity and freshness that characterise the cuisine. The Mediterranean diet, often associated with longevity and a reduced risk of chronic diseases, has been linked to the consumption of omega-3 fatty acids found in abundance in fatty fish. 8

WINDSOR LOCAL • JANUARY/FEBRUARY 2024

A cornerstone of Mediterranean cuisine is the use of fresh herbs and spices, which contribute to the vibrant and robust flavours of the dishes. Basil, oregano, thyme, rosemary, and parsley are commonly used to enhance the taste of meats, vegetables, and salads. Garlic, a fundamental ingredient, adds depth and aroma to many Mediterranean dishes. The judicious use of these herbs and spices reflects the culinary wisdom passed down through generations, creating a harmonious blend of flavours. The Mediterranean approach to meals emphasises communal dining and the enjoyment of food as a social activity. Mezze, a style of dining that involves sharing a variety of small dishes, is prevalent in many Mediterranean cultures. This allows diners to savour a diverse range of flavours in a single meal, fostering a sense of connection and conviviality. Mezze platters may include hummus, tzatziki, olives, stuffed grape leaves, and an array of other appetizers, providing a delightful and sociable dining experience. WINDSOR LOCAL • JANUARY/FEBRUARY 2024

Pasta, a staple of Italian cuisine, is another key component of Mediterranean food. The use of fresh tomatoes, olive oil, garlic, and herbs in pasta dishes exemplifies the Mediterranean commitment to simple yet flavourful combinations. Mediterranean desserts are often characterised by their use of nuts, honey, and fruits. Baklava, a sweet pastry made of layers of filo pastry, chopped nuts, and honey, is a popular treat in many Mediterranean countries. Tiramisu, a classic Italian dessert, features layers of coffeesoaked ladyfingers and mascarpone cheese, creating a decadent and satisfying end to a meal. The Mediterranean diet has garnered attention from health experts worldwide for its potential cardiovascular benefits. Studies have suggested that the emphasis on olive oil, fruits, vegetables, and fish, along with moderate consumption of wine, may contribute to lower rates of heart disease in Mediterranean populations. The diet’s focus on whole, nutrient-dense foods and the limited intake of processed and red meats align with current recommendations for a healthy lifestyle. Mediterranean cuisine is a celebration of fresh, vibrant ingredients, bold flavours, and a rich culinary heritage. From the sun-drenched shores of Greece to the picturesque landscapes of Italy, the Mediterranean diet offers a diverse and delicious array of dishes that not only satisfy the palate but also promote health and well-being. Whether you’re savouring the simplicity of grilled fish, indulging in the richness of olive oil, or enjoying the conviviality of a mezze feast, Mediterranean food invites you to experience the joy of good food and good company. In the next issue we set off on our Mediterranean Adventure - where do we go first?

Moutabal Aubergine Awesomeness! By far the simplest way to deal with aubergine is to bake or grill it whole then scoop out the insides and turn it into something yummy like this latest aubergine revelation: Moutabal, which is very similar to baba ganoush. This is pure, creamy aubergine awesomeness, perfect for pitta or flatbread and the kind of thing you will want to eat all the time. Which is just as well because it’s extraordinarily easy to make. Method:

Ingredients:

To begin, use a fork to prick the skins of the aubergines several times - this will stop them exploding as they cook.

2 aubergines, 4 tbsp of tahini, 4 tbsp of Greek yoghurt, 1 lemon, juiced, 2 garlic cloves, crushed, 1/2 tsp table salt

Place over a direct flame for 20 minutes (or until soft) until charred all over to help achieve a wonderfully smoky flavour. Allow to cool for 20 minutes.

Optional Garnishes Pomegranate seeds Flat-leaf parsley, chopped Olive oil

Carefully peel the aubergines, placing the flesh into a bowl. Gently stir in the garlic, tahini, yoghurt, lemon juice and salt until combined. Season to taste. Add to serving bowls and scatter over garnishes of your choice. Serve warm or cold with pitta breads.

‘Malai’ means cream and ‘Kofta’ are fried balls of various ingredients, popular not only in Indian cuisine, but also in Middle Eastern, Balkan and Asian meals as well. The most common types of kofta are made with potatoes and mixed vegetables, however, koftas often includes various meats and can be thought of as similar to Italian meatballs or Middle Eastern kebabs. Malai kofta is one of the most soughtafter Indian dishes in restaurants around the world, and for good reason. The dish requires a lot of effort to make, but in the end, it is all worth it. In this delicious restaurant style malai kofta recipe, the kofta are made with paneer and potatoes.

SWEET & SAVOURY

Malai Kofta

Malai Kofta is a delicious dish of fried balls of potato and paneer in a rich and creamy mild gravy made with sweet onions and tomatoes. Crisp on the outside and heavenly smooth on the inside, these tasty fried dumplings are dunked in a smooth, mildly sweet and lighted spiced curry. Method:

Ingredients:

Peel and boil the potato and drain and let it cool. Crumble the paneer and incorporate the mashed potato, spices, and seasonings, mixing well. Onion, ginger, garlic and fragrant Indian spices are sauteed then simmered in a rich sauce made from tomato puree, heavy cream and nut butter. In a pan, heat oil or ghee over medium-low heat. Add onions and a teaspoon of salt. Aim for a deep golden brown, taking about 25 minutes. Next, add ginger and garlic to the onions, cooking until aromatic. Introduce the spices – cumin, coriander, cayenne, cinnamon, and cardamom pods and cook a bit more. Pour in the tomato puree, almond butter, cream, sugar, remaining salt, and water. Let the mixture simmer until the oil surfaces with a shimmer.

Oil, Onions, Ginger & Garlic give our sauce its flavourful base Spices - Cumin powder, coriander & red chilli powder (or cayenne) add depth, making the dish distinctly earthy & warm Tomato Puree lends a tangy, rich depth to the sauce Almond Butter gives our sauce a nutty creaminess Cream adds richness, making the dish luscious Paneer and Potato - Grate paneer & combine with mashed potato to create the soft kofta balls

Roll the potato and cheese mixture into small dumplings to be fried. Reheat the gravy on low, bringing it to a gentle simmer. If necessary, adjust salt to taste. Gently place the fried koftas into the gravy, stirring lightly to coat them and garnish with finely minced cilantro (aka coriander leaves) and some finely-chopped almonds or cashews.

SWEET & SAVOURY

Cardamom THE SWEET & SAVOURY QUEEN OF SPICES Cardamom is a familiar name in the spice world, but if asked to describe its flavour, you may be at a loss for words. This is because this spice has an extremely complex flavour profile, lending itself to both sweet and savoury dishes. As the third most expensive spice in the world (only behind saffron and vanilla), cardamom has made quite a name for itself, even earning the nickname “The Queen of Spices.” From Indian curries to Mediterranean breads, learn how to cook with this prized spice.

cardamom: warm, herbal, citrusy, spicy, and even a bit minty all at the same time - impressive, right?

What is Cardamom?

Cardamom always starts out in the form of a pod. Sometimes, a recipe may call for a whole crushed cardamom pod to be added during cooking, and discarded afterwards, much as you would do with bay leaves. The pods contain hard, black seeds that are usually dried and ground to make a powder. These seeds contain the essential oils that give the spice its distinct flavour. Once the seeds are ground, they begin to lose their flavour quickly. For best results, use ground cardamom close to its purchase date, or better yet, start with whole pods. You can easily grind the seeds down using a mortar and pestle. Many Indian and Indian-inspired dishes call for cardamom, including curry dishes, Kheer (Indian rice pudding), and chai. Indian spice blends such as garam masala also feature cardamom. You’ll also find cardamom adds warmth and depth to baked goods such as cookies, bread pudding, and even cheesecake.

Cardamom is a pod spice in the ginger family that is commonly used in Indian cuisine. Although this spice originated in southern India, today Guatemala is the largest producer of cardamom. The spice can be found as a whole pod, shelled whole seeds, or ground powder and it boasts numerous health benefits as well.

Green Cardamom

This is the more common variety of cardamom. It is often used in sweeter dishes, although it will work in savoury as well. Green cardamom’s flavour is more of what you would imagine when you think of

14

Black Cardamom

With its larger, dark brown pods, black cardamom is more commonly used in savoury dishes due to its smokier flavour. When you see black cardamom called for in a recipe, it’s usually the whole pod that is meant to be used.

RAMBLERS Walking is a fundamental activity that holds significant importance for individuals of all ages, and for older people, it becomes even more crucial. As individuals age, maintaining a regular walking routine can contribute to physical, mental, and emotional well-being. In this discussion, we will explore the multifaceted benefits of walking for older people, emphasizing its positive impact on physical health, cognitive function, social interaction, and overall quality of life. First and foremost, walking is an excellent form of cardiovascular exercise, which is essential for maintaining heart health. Regular walking helps improve circulation, lower blood pressure, and reduce the risk of heart-related diseases. It promotes the efficient functioning of the cardiovascular system, contributing to overall cardiovascular fitness. Additionally, walking aids in weight management, another crucial aspect for older individuals who may face challenges related to metabolism and body composition. By engaging in a consistent walking routine, older people can control their weight, which, in turn, reduces the risk of obesity-related health issues. Also, walking plays a pivotal role in maintaining joint health and flexibility. As people age, joints may become stiffer, and arthritis or other musculoskeletal issues may arise. Walking helps to lubricate the 16

joints, strengthen muscles, and improve flexibility. It is a low-impact exercise that is gentle on the joints, making it an accessible option for older individuals who may not be able to engage in high-intensity activities. Cognitively, walking has been linked to enhanced brain function and a reduced risk of cognitive decline. Research suggests that regular physical activity, including walking, is associated with a lower risk of developing conditions like dementia and Alzheimer’s disease. Walking promotes blood flow to the brain, which can enhance cognitive function, memory, and overall mental clarity. It also provides an opportunity for older individuals to engage in mindfulness, as the rhythmic nature of walking can be meditative and calming. WINDSOR LOCAL • JANUARY/FEBRUARY 2024

In addition to the physical and cognitive benefits, walking fosters social interaction and emotional well-being. For many older individuals, social isolation can be a significant concern, leading to feelings of loneliness and depression. Walking, whether done alone or in groups, provides an opportunity for socialisation. Group walks or walking clubs can be a great way for older people to connect with others, share experiences, and build a sense of community. The emotional benefits of walking extend beyond social interaction; the release of endorphins during physical activity contributes to improved mood and reduced stress levels. Moreover, walking offers a connection to nature and the surrounding environment. Whether strolling through a park, along a beach, or in a neighborhood, being outdoors during a walk provides a change of scenery and exposure to fresh air. This connection with nature can have a positive impact on mental health, contributing to a sense of well-being and relaxation. Walking really is of paramount importance for older people due to its holistic impact on physical health, cognitive function, social interaction, and emotional well-being. Encouraging and supporting regular walking routines for older individuals can significantly contribute to an active, fulfilling, and healthy lifestyle. As a simple and accessible form of exercise, walking stands as a valuable tool for promoting the overall well-being of older individuals, allowing them to age gracefully and enjoy a higher quality of life. The Windsor & District Ramblers open the way for everyone in our local community to enjoy the pleasures of walking and this is what they have to say “We are a walking group for people of all ages living in East Berkshire. We aim to offer an informal and relaxed approach to enjoying the countryside and villages in the east of the county. Occasionally we enjoy a train or coach outing further afield and tackle longer distance paths. Where possible our walks end at a café or pub – a great way to get to know fellow members. Our walks are varied, so you are sure to find something to suit you. We’re a small, friendly group of regular walkers, who share a passion for walking. Our group organises around 10 walks each month. Most of our walks are between 4 and 6 miles - a WINDSOR LOCAL • JANUARY/FEBRUARY 2024

morning’s worth of walking, with the occasional longer hike. We try to vary the days of the week for our walks so that everyone gets a chance to join us. There are four short walks that we do regularly every month. So please come and sample our walks - you can walk two or three times with us before deciding to join the Ramblers – you will be made very welcome.’’ https://www.ramblers.org.uk/windsor-district

A Path to

Stress Relief In the fast-paced and demanding world we live in, stress has become an inevitable part of our daily lives. From work pressures to personal responsibilities, the sources of stress seem endless. However, there’s a beacon of hope that many overlook – exercise. While it may not eliminate all sources of stress, incorporating regular physical activity into our routines can significantly mitigate its impact on our mental and emotional well-being.

The Stress-Exercise Connection:

Exercise has long been recognised for its physical health benefits, but its positive impact on mental health, particularly stress reduction, is equally noteworthy. When we engage in physical activity, our bodies release endorphins – often referred to as “feel-good” hormones. These endorphins act as natural mood lifters, helping to alleviate stress and anxiety. Exercise serves as a powerful distraction from the stressors of daily life. By focusing our minds on the physical activity at hand, we temporarily shift our attention away from the problems causing stress. This mental break can provide a fresh perspective and a renewed sense of control over our thoughts and emotions. 18

The Role of Physical Fitness:

Regular exercise contributes to overall physical fitness, enhancing our body’s ability to handle stress. Cardiovascular activities, such as running or cycling, improve heart health and increase blood flow, ensuring that vital organs receive an optimal supply of oxygen. Strength training exercises build muscle, which not only enhances physical strength but also boosts confidence and resilience in the face of challenges. Maintaining a healthy weight through regular exercise has been linked to improved mental well-being. Individuals who engage in physical activity often report higher levels of self-esteem

WINDSOR LOCAL • JANUARY/FEBRUARY 2024

and a more positive body image, factors that play a crucial role in managing stress.

The Mind-Body Connection:

The mind and body are intricately connected, and exercise acts as a bridge between the two. Mindful movement practices, such as yoga and tai chi, combine physical activity with mental focus and deep breathing. These practices not only improve flexibility and balance but also promote relaxation and stress relief through their meditative aspects. Additionally, aerobic exercises that elevate the heart rate trigger the release of neurotransmitters like serotonin, which contribute to an improved mood and reduced stress levels. The mind-body connection fostered by exercise creates a harmonious balance that strengthens both mental and physical resilience.

Incorporating Exercise into Daily Life:

The key to using exercise as a stress management tool lies in consistency and finding activities that bring joy. Establishing a routine that includes regular physical activity – whether it’s a morning jog, a lunchtime stroll, or an evening dance class – can help maintain a sense of structure and discipline, counteracting the chaos that often accompanies stress. It’s important to choose activities that align with individual preferences and interests, as enjoyment is a significant factor in sustaining long-term engagement. Whether it’s team sports, solo workouts, or group fitness classes, the variety of exercise options allows individuals to tailor their routines to suit their unique needs. So, while exercise may not provide a complete escape from life’s stressors, its impact on mental and emotional well-being is undeniable. The therapeutic power of exercise lies not only in the physical benefits but also in its ability to cultivate a resilient mind, capable of facing challenges with a positive outlook. By embracing regular physical activity, individuals can empower themselves to navigate the complexities of life with greater ease and grace, ultimately paving the way to a healthier, happier, and less stressed existence. WHAT IT MEANS TO BE A

MAN IN A MODERN WORLD In recent years, there has been a noticeable shift in societal attitudes towards men’s health and personal grooming. Traditionally, the stereotypical image of a man often involved a rugged, unshaven appearance and a nonchalant attitude towards health and grooming. However, contemporary cultural changes, evolving gender norms, and an increased awareness of the importance of self-care have contributed to a growing trend of men taking better care of their health and appearance. One significant factor driving this change is the evolving definition of masculinity. The outdated notion that men should be stoic and dismissive of personal care has given way to a more inclusive understanding of what it means to be a man. Men are increasingly embracing the idea that taking care of oneself is a sign of strength and confidence rather than a compromise of masculinity. The rise of social media has also played a crucial role in shaping perceptions of beauty and grooming for men. Platforms like Instagram and YouTube showcase diverse styles and grooming routines, fostering a culture where men feel encouraged to experiment with different looks and prioritise self-maintenance. Influencers and 20

celebrities openly sharing their grooming routines and promoting healthy lifestyles further contribute to a positive shift in attitudes towards self-care among men. Additionally, the increasing awareness of the impact of lifestyle on overall health has prompted men WINDSOR LOCAL • JANUARY/FEBRUARY 2024

to pay more attention to their well-being. With a wealth of information available on the internet, men are now better informed about the importance of regular exercise, a balanced diet, and stress management. As a result, they are actively seeking ways to incorporate these practices into their daily lives, leading to a more holistic approach to health. The grooming industry has responded to this cultural shift by expanding its offerings for men. Brands now provide a wide range of skincare, haircare, and grooming products tailored to men’s specific needs. This accessibility makes it easier for men to integrate grooming into their routines, reinforcing the idea that self-care is not only acceptable but also essential, hence, the changing perceptions of masculinity, the influence of social media, increased awareness of health implications, and the expanding grooming industry are all contributing factors to why more men are looking after their health and personal grooming. This cultural evolution signifies a positive transformation in societal attitudes, promoting a healthier and more inclusive understanding of what it means to be a man in the modern world. THE POWER OF

RAYNOR MASSAGE Not many people have heard of Raynor Massage. Yet it is one of the most advanced massage therapy styles in the world. The goal of Raynor Massage is to relieve a person of residual tension, or muscle tightness in an area of the body when the body is at rest. So, if you are lying on a massage table and you can feel that your muscles are tight or aching, or muscles are sore when firmly touched, you likely have tension in your body. As we get older, particularly after our 30s, tension tends to build up in our bodies. This increases the probability of sustaining sprain and strain injuries. Raynor Massage is a holistic system of bodywork developed by Naturopath Brandon Raynor. Brandon spent many years studying Eastern modalities such as Ayurvedic Massage, Chinese Medicine, Thai Massage, Reflexology, Shiatsu and Yoga breath work. From an understanding of these, the techniques that form Raynor Massage evolved. 22

Raynor Massage has the concept of bands interconnecting the whole body, known as Raynor Bands. The bands are composed of muscles, tendons, ligaments and other body tissues. Underlying these physical bands are subtle energy systems (chi or prana) similar to Meridians in Chinese Medicine, Sen lines in Thai Massage, or Nadis in Ayurvedic Massage. When the flow of chi or prana is disrupted in the bands, muscles can tighten, bones can shift out of place, or tension can be created in the body. Note that the disruption can be caused physically (e.g. an injury) or emotionally (e.g. mental stress). WINDSOR LOCAL • JANUARY/FEBRUARY 2024

It has been found that the main anchor points for tension are the fingers, toes and head. These are key areas where chi or prana can become stagnated. Raynor Bands run right to the tips of the fingers and toes, and to the top of the head. When diagnosing a person’s tension the areas looked at include the toes (e.g. are they straight or pulled over, are they loose or do they spring back when pushed?), fingers (e.g. do the joints have any lateral movement or are they stiff?), head (e.g. is the scalp tight?), and the muscles of the limbs and back (e.g. when pressed, are they sore?). So, unlike most other types of massages, Raynor Massage places emphasis on fingers, toes, and head. For example, if a person has a tight hamstring the toes are massaged first (where tension is anchored), then the foot and ankle. Once tension has been reduced in these, Raynor Bands running up the back of the leg are massaged, the calf first and then the hamstring area. Once tension is reduced at the anchor points, tension further along the bands can typically be reduced relatively easily. Deep tissue massage, acupressure techniques and massage tools are used. For deep-rooted tension there is a ‘partnership model’ between therapist and client meaning that they work together to achieve successful results. In brief, the therapist gently presses a tool into the toe or finger to bring awareness of the tension to the client (the pressure is never more than the client can handle). At the same time, the client uses deep breathing to “breathe out” the tension. The result is that the toe WINDSOR LOCAL • JANUARY 2024

or finger is loosened up and feels much looser. It doesn’t sound credible, but it works! Raynor Massage has proved to be a very effective way of reducing tension in the body and alleviating ailments such as back pain, headaches, stress, tight muscles and so on. Many of us tend to live with tension, but when removed it’s like having a new body! Further information: www.raynormassage.com

Designing a home is like painting a canvas – you draw inspiration from various sources, and blend them into your personal masterpiece. That’s the magic of interior design where art, experiences and emotions intertwine to create something truly special. But how do you get started when you want to enhance where you live? Nature’s Canvas – Exploring Landscapes Nature is a playground of inspiration. Whether it’s the serene tranquility of a forest or the vibrant chaos of a bustling city street, these landscapes offer a plethora of design elements. Colours, textures and patterns found in nature can be a great starting point for a captivating design scheme. Think fresh Spring yellows, greens and pinks or Autumnal reds, browns and ochres. And if a colour palette works in nature, chances are it will work in your home. Art’s Influence – Galleries and Brushstrokes Think about that awe-inspiring piece of art you stumbled upon once – the one that made your heart skip a beat. Its colours, textures, and the emotions it evoked can be your guiding light in interior design. Or maybe you already own a beloved painting which you can use as your starting point for the colours in your room. Selecting one of the secondary colours from the artwork and using it as an accent elsewhere in the room will really help pull the different zones together. Personal Passions – Embracing your Interests But let’s zoom in closer to home – your own interests and passions. What do you love? Is it vintage fashion, 24

a particular era in history, or perhaps a specific culture? These passions can be incredible sources of inspiration. A retro vibe from the ‘70s, the elegance of the Victorian era, or the minimalism of Japanese design – all these can influence your design scheme. Bring your Travels Home Then there are those places you’ve visited, the ones etched into your memory – the cosy café tucked away in an alleyway in Paris or the tranquil garden in Kyoto. These places aren’t just locations; they’re feelings. You can borrow elements from these spaces to recreate the atmosphere (the warmth of the café or the serenity of the garden) in your own home. It’s about capturing the essence of those places that resonate deeply within you. Hobbies and Lifestyle – Infusing Personal Touches Don’t underestimate the impact of your hobbies. Are you a bookworm? An avid traveller? A plant enthusiast? Your hobbies can shape your design choices. A well-curated bookshelf, travel-inspired décor, or a lush indoor garden can be integral parts of your design scheme, reflecting your personality and interests.

Understanding your emotional responses But beyond the aesthetics, designing a space is about how you want to feel when you walk into it. Do you seek tranquillity after a hectic day or want an energizing ambience to kickstart your mornings? Your space should be a reflection of your aspirations and emotions. For instance, incorporating soft, earthy tones and natural textures might evoke a sense of calmness and grounding. Or vibrant colours and bold patterns could infuse the space with energy and vitality. Interior Design is an amalgamation of these diverse sources of inspiration. Picture these influences converging like puzzle pieces, forming the foundation of your design canvas; embrace these inspirations, mix them up, experiment, and create a space that resonates with your unique story. After all, your space should be an embodiment of your individuality – a canvas where your story unfolds beautifully.

Digital Delight – Unveiling Online Inspiration Now, let’s not forget the digital world – the virtual treasure chest of ideas. Social media platforms like Pinterest, Instagram, and design blogs are bursting with inspiration. Dive into mood boards, follow interior design influencers and explore designcentric hashtags. You’ll find a universe of design concepts, colour combinations and décor ideas at your fingertips. Beauty in Details – Finding Inspiration in the Small Things And hey, inspiration doesn’t always come from grand sources. Sometimes it’s in the little things – the pattern on a teacup, the texture of a fabric, or even the beautiful packaging design. Keep your eyes open; you never know what might spark that creative flame. WINDSOR LOCAL • JANUARY/FEBRUARY 2024

FEELING INSPIRED by Jessica Cox Design Ltd

There are so many sources of inspiration around us and knowing how to use them within your interior planning is a great way to begin any new design scheme. It is something that I ask all my new clients at the start of a project to collect as many inspirational images as possible, so that I can get to know them and their style – and what they like and dislike. Inspiration can come from the nature around us, the colours in the changing seasons (most people have a favourite) from magazines, social media, even TV and film. I am constantly taking pictures of my surroundings, from the colours in the sky when I’m out walking the dog or a pattern on a menu board from a service station – it is constant! We all know that when you are thinking about getting a new car or upgrading the kitchen you start to pay more attention to other cars on the road or take more note of your friends and family’s kitchens that you are in – this is using inspiration to help build your own ideas, likes and dislikes. It is very rare that when I see a space for the first time that it is a completely blank canvas. Usually there is a piece of furniture, a rug or a piece of artwork that the client would like to keep – and this is something I can then usually base 26

the scheme on. An example of how this works: A piece of artwork (that I bought for £3 from a local charity shop) became the starting point for an entire bedroom scheme.

The soft, aged colour of the print became the perfect warm neutral colour for the walls and woodwork in the room. The rich, burgundy mount was the perfect tone for the bed fabric (which is the main focal point of the space). The delicate pink tones from the petals are pulled out of the artwork and found in the feature wallpaper that wraps behind the bed and around three of the walls in the room (inspiration not only for the colour, but for the botanical theme that runs throughout the house) – and finally the green colour of the leaves within the picture are used in the accessories in the bedroom. This all comes together to create a cohesive, thought-out scheme that all came out of one small piece of inexpensive artwork. This idea works with different styles of artwork or fabrics – if you have a

piece that has one dominant colour and two or three other colours – try pulling out one of the background colours to use within the scheme, maybe as a wall colour or sofa fabric, or even with within cushions or accessories around the room. Social media (Instagram, Pinterest, Blogs) can be a great source of inspiration with so much material available, although this can also be quite overwhelming with knowing where to start. By saving images that you like, hopefully you start to see a pattern of similarities or colours that you are drawn to, which helps build an idea of the types of schemes you like. It is always good to keep in mind the end use of the room too, an all-white scheme you love in an image might not work as well in a busy family living space that young children often do arts and crafts in, but you can always look at taking elements of the inspiration and making them work for you – some oversized white frames for the walls or a white cotton throw for the sofa that can be taken off and washed. It’s about finding the inspiration, but making it your own. I hope this helps with how to get started, but most importantly – have fun with finding your inspiration and remember to keep a look out wherever you are!

wallpaper In recent years, wallpaper has made a remarkable comeback, reclaiming its status as a key player in interior design trends. The resurgence of wallpaper can be attributed to a confluence of factors, ranging from innovative design options to a renewed appreciation for sustainability and personalisation. One of the primary reasons for the resurgence of wallpaper is the influx of innovative designs and technologies within the industry. Wallpaper manufacturers have embraced cutting-edge printing techniques and materials, allowing for a diverse range of patterns, textures, and finishes. Advanced printing technologies enable the creation of intricate and detailed designs, including 3D effects, metallic finishes, and even interactive patterns. This infusion of creativity has captured the attention of consumers, making wallpaper a go-to choice for those seeking unique and visually stimulating wall treatments. Sustainability has become an increasingly crucial consideration in design choices, and wallpaper has emerged as a more environmentally friendly 30

option compared to certain paint alternatives. Many wallpaper options are now available in ecofriendly materials, and the production processes are designed to minimise environmental impact. This shift towards sustainability aligns with the growing awareness of ecological issues and the desire to make environmentally conscious choices in home decor. The trend towards personalisation in interior design has also played a pivotal role in wallpaper’s resurgence. Consumers are seeking ways to express their individuality and create spaces that reflect their unique tastes and preferences. Wallpaper provides an ideal canvas for this self-expression, offering an extensive array of designs, colors, and textures. The ability to customise wallpaper allows individuals to tailor their living or working environments, transforming spaces into personalised sanctuaries. Texture and depth are integral elements in contemporary design, and wallpaper excels in providing both. Modern wallpaper options often boast textured surfaces or layered designs that add a three-dimensional quality to walls. This visual WINDSOR LOCAL • JANUARY/FEBRUARY 2024

appeal enhances the overall aesthetic of a room, contributing to a sense of depth and sophistication. As a result, wallpaper has become a favoured choice for those seeking to create visually dynamic and engaging interiors. Nostalgia and retro trends have a powerful influence on design preferences, and wallpaper from bygone eras has made a triumphant return. Vintage patterns and styles have been revitalized and reintroduced, evoking a sense of nostalgia while adding a touch of timeless elegance to contemporary spaces. The marriage of old and new in wallpaper design resonates with individuals who appreciate the fusion of tradition and modernity in their homes. Artistic and mural wallpapers have become WINDSOR LOCAL • JANUARY/FEBRUARY 2024

particularly popular, allowing individuals to turn their walls into captivating works of art. This trend goes beyond conventional wallpaper patterns, enabling people to express their creativity on a larger scale. Mural wallpapers can serve as focal points, transforming entire rooms into immersive and visually striking environments. Ease of installation and removal has also contributed to the resurgence of wallpaper. Modern wallpapers are designed with user-friendly features, making them more accessible for DIY enthusiasts. The convenience of installing and, if necessary, removing wallpaper has appealed to those who want to embark on home improvement projects without the need for extensive professional assistance. Social media has played a pivotal role in spreading the popularity of wallpaper trends. Design influencers and enthusiasts frequently showcase their homes and projects on platforms like Instagram and Pinterest, creating a ripple effect that introduces new design ideas to a global audience. The visual appeal of well-designed wallpaper has become a staple in online design communities, further fueling the resurgence of this versatile and expressive wall treatment. In reality, the resurgence of wallpaper can be attributed to a perfect storm of innovative designs, sustainability considerations, personalisation trends, and the timeless allure of texture and nostalgia. As individuals continue to seek unique and meaningful ways to enhance their living spaces, wallpaper stands as a versatile and vibrant option at the forefront of contemporary interior design trends. 31

FEBRUARY GARDENS February gardens awaken with a quiet but determined energy, signaling the gradual end of winter’s slumber. Despite the lingering chill in the air, nature begins to stir, offering a preview of the vibrant life that will soon burst forth. In these early days of February, gardeners eagerly anticipate the arrival of spring, finding solace and joy in the subtle signs of renewal.

As the month unfolds, the first rays of sunlight pierce through the gray clouds, casting a gentle warmth upon the garden. Snowdrops, those resilient harbingers of spring, push through the frost-covered soil, their delicate white blossoms nodding in the breeze. These small flowers, often referred to as the “fair maids of February,” bring a sense of hope and renewal to the garden, reassuring gardeners that winter’s grip is loosening. The awakening garden is a canvas painted with muted hues, where the earthy tones of dormant plants begin to merge with the emerging greens. Crocuses, with their vivid purple, white, and yellow petals, join the floral orchestra, creating a stunning contrast against the remnants of winter’s monochrome palette. Their blooms seem to defy the lingering frost, a testament to nature’s resilience and the unstoppable march of the seasons. February gardens are not only about flowers; they are also a stage for the awakening of trees and shrubs. Buds, tightly closed during the cold winter months, begin to swell and unfurl. Bare branches, once stark against the winter sky, take on a subtle fuzziness as 32

tiny leaves begin to emerge. The garden transforms into a delicate dance of shapes and textures, as nature orchestrates its grand spectacle of rebirth. Gardeners, armed with pruners and trowels, become active participants in this unfolding dram a. It’s a time for careful inspection and preparation. The removal of winter debris, the clearing of pathways, and the gentle pruning of shrubs are all acts of devotion to the garden’s well-being. As the soil softens with each passing day, it becomes a welcoming canvas for new plantings, promising a future tapestry of color and fragrance. WINDSOR LOCAL • JANUARY/FEBRUARY 2024

February is a month of contrasts in the garden. While some plants push forward with determination, others remain in a state of dormancy, their awakening postponed until the warmth of later spring. This interplay of life and dormancy creates a nuanced landscape, where the past and the future coexist in a delicate balance. In the midst of this transition, birds return to the garden with cheerful melodies. Robins hop along the thawing ground, searching for earthworms and insects. The subtle symphony of birdsong becomes a soundtrack to the garden’s awakening, adding another layer to the sensory experience. Bird feeders attract a diverse array of visitors, their vibrant plumage adding splashes of color to the evolving scene. February also marks the time for early vegetables to be sown indoors. The promise of fresh greens and crisp vegetables motivates gardeners to start seeds in anticipation of the growing season ahead. Seed trays become miniature nurseries, each tiny sprout a testament to the potential contained within the confines of a small seed. 34

As the days lengthen, the garden becomes a place of transition. Shadows cast by the low-angled sun create patterns on the thawing ground. The air, though still cool, carries a hint of milder days to come. Gardeners, now armed with a sense of purpose and the knowledge that winter’s grasp is waning, approach their tasks with renewed enthusiasm. WINDSOR LOCAL • JANUARY/FEBRUARY 2024

In these February gardens, hope blooms alongside the snowdrops and crocuses. The earth, awakening from its winter slumber, offers a glimpse of the vibrant tapestry that will unfold in the coming months. February is a month of anticipation, a prelude to the riot of colours and scents that will define the garden’s peak. As the days progress, the garden becomes a stage for nature’s grand performance, and those who tend to it are privileged witnesses to the magic of rebirth.

PUGLIA

A TREASURED DESTINATION Part 3 of our 3 part series on Italy

Puglia, a picturesque region in southern Italy, boasts a captivating network of caves that bear witness to centuries of history and geology. Among these, the Castellana Caves stand out as a natural wonder, with mesmerising stalactite and stalagmite formations sculpted by water over millennia. The Grotta Zinzulusa, nestled along the Adriatic coastline, offers a unique experience with its underwater sections and intricate limestone galleries. Adding to the intrigue is the Crypt of the Original Sin, a small cave church in Matera adorned with stunning frescoes. These caves not only showcase the region’s geological evolution but also serve as cultural treasures, echoing stories of ancient civilisations and human ingenuity. Exploring Puglia’s caves offers a glimpse into both the Earth’s past and the rich heritage of Italy’s southern landscapes. In the 1950s, Puglia’s houses exuded a unique sassiness, blending traditional architectural elements with a dash of modernity. Characterised by whitewashed walls, curved lines, and ornate wrought-iron balconies, these homes encapsulated 40

the region’s vibrant spirit. Amidst olive groves and coastal towns, the sassy houses of Puglia exuded a lively charm that mirrored the era’s sense of optimism. As Italy transitioned into a new age, these homes stood as testaments to Puglia’s rich history while embracing contemporary design influences, becoming timeless symbols of the region’s cultural and architectural evolution. More recently Puglia’s alluring landscapes and timeless allure found a cinematic stage in 2021 with James Bond’s “No Time to Die.” The region’s sun-soaked shores, rustic trulli villages, and the ancient mystique of Matera provided a stunning backdrop to 007’s high-stakes exploits. As Bond navigated through Puglia’s labyrinthine alleys and along its dramatic coastline, the region’s rich history and architectural wonders added depth to the film’s narrative. Puglia’s enchanting fusion of natural beauty and cultural heritage seamlessly intertwined with the world of espionage, leaving an indelible mark on the cinematic portrayal of James Bond’s thrilling adventures. Perhaps we should do as Italians do in Puglia, which is affectionately known as Italy’s “heel,”as it has become a cherished holiday haven for Italians. Its sun-drenched Adriatic and Ionian coasts host pristine beaches, drawing families and sunseekers. The whimsical trulli of Alberobello and Baroque beauty of Lecce attract culture enthusiasts, while the robust wine country and olive groves captivate epicureans. Puglia’s charming villages, like Polignano a Mare, offer romantic escapes, and its vibrant festivals showcase local traditions. Italians flock here for relaxed vacations, savoring regional cuisine and basking in the Mediterranean ambiance. Puglia’s authentic allure, diverse landscapes, and warm hospitality make it a treasured destination for modern Italian holidaymakers. 41

WINDSOR CASTLE Inside Windsor Castle: the history, interiors and secrets of the oldest royal home It is the largest inhabited castle in the world and has more than 1,000 sumptuous rooms, historic treasures and beautiful grounds. Windsor Castle has been a favourite royal residence since its foundations were laid around 900 years ago – and it’s not hard to see why. With crenulated fortifications, turrets, towers and moats, it is the prototype for a quintessential English castle. Read on to take a look at Windsor Castle’s fascinating history and the secrets behind its walls... As you would expect, the castle’s origins go way back in the timeline of important British history - it has housed 39 monarchs over the centuries, making it the oldest continuously occupied castle in the world. Windsor was founded after the Norman Conquest by William the Conqueror in around 1070. The fortress was strategically placed on the banks of the River Thames to protect London from the West and also because of its proximity to the royal hunting ground, Windsor Great Park. The Castle includes the State Apartments that are used today by the Royal Family, the historical rooms that were built for Charles II and private apartments created for George IV. There are many famous, must-see moments within these spectacular rooms, like the colossal Waterloo Chamber, magnificent Crimson Drawing Room and impressive Grand Staircase. With so much royal history and splendour it is possible to walk straight past some amazing treasures, so here are a few to look out for. The ceremonial rooms are the main State Apartments that are used today by the Royal Family. Within these rooms the monarch 42

hosts official visits by Heads of State from other countries, investitures, and awards ceremonies, where British men and women are recognised for their achievements. Perhaps the most striking room is the Grand Reception Room. With its chandeliers and gilding it was once used as the main ballroom in the Castle. One object you can’t miss in this room is the large malachite urn, presented to Queen Victoria by Tsar Nicholas I in 1839, and one of the largest examples outside Russia. Looking around the gold-covered walls and ceilings it’s hard to believe that this room was so severely damaged in the fire of 1992. The room was painstakingly repaired to its former glory, which you can see today. The Green Drawing Room. In 1992 a fire at Windsor Castle severely damaged the Semi-State Rooms, including the Green Drawing Room. By good fortune however, the contents of the rooms had been removed at the time. Each room was subsequently restored to its nineteenth-century appearance using the original designs supplied to George IV. Here it is looking splendid! Among the treasures to be seen are the suits of armour on display at Windsor Castle are the ones made for Henry VIII, which is big, shiny and very impressive, and the this splendid Japanese IWAI YOZAEMON which has been described as ‘Indian Armor’. This understated armour was sent to James I of England by Tokugawa Hidetada, third son of Tokugawa Ieyasu, who ruled as the second shōgun of the Tokugawa dynasty from 1605 to 1623. Some sources have suggested that the armour may once have been owned by Takeda Katsuyori (1546 – 82), a daimyō who had fought, and lost, against Tokugawa Ieyasu at the Battle of Tenmokuzan in 1582. Of course a visit to the Castle wouldn’t be complete without ‘greeting the guards’. Grab your chance to witness the Changing of the Guard ceremony where the new guard replaces the old in a colourful spectacle. The ceremony can be watched by Castle visitors on Thursdays and Saturdays. The guards arrive at the Castle just before 11:00am. So, is Windsor Castle worth a visit? Yes, absolutely. Steeped in history, it is the oldest and largest inhabited castle in the world, offering stunning architecture, beautiful gardens with breathtaking views of the Thames, and the iconic St. George’s Chapel. The State Apartments showcase royal opulence, providing a captivating glimpse into the British monarchy’s rich heritage. A captivating blend of history and regal splendor awaits! https://www.rct.uk/visit/windsor-castle/top-things-to-seeand-do-at-windsor-castle#/ WINDSOR LOCAL • JANUARY/FEBRUARY 2024

chinese new year Courage, Ambition, and Dominance - The Chinese Year of the Dragon (February 10th) is one of the most anticipated and revered periods in the Chinese zodiac cycle. In 2024, the majestic Dragon takes centre stage, bringing with it a sense of power, vitality, and transformation. This mythical creature symbolizes strength, good fortune, and intelligence, making the year ahead a time of both challenges and opportunities. The Dragon is the only mythical animal in the Chinese zodiac, and its presence is often associated with the emperor and imperial power. People born in the Year of the Dragon are believed to inherit the dragon’s traits of courage, ambition, and dominance. As 2024 unfolds, these characteristics are likely to influence global events and individual destinies. In Chinese culture, the dragon is also linked to rain, which is essential for agriculture and prosperity. Consequently, the Year of the Dragon is often considered a time of abundance and fertility.
