Welcome to our September edition of Wokingham local magazine, with our main theme ‘Flavours of the World’ which are abundant in and around Wokingham, starting with Bombay Story Indian Kitchen who serve us a ‘real taste of India’ right here on our doorstep. We take our travels to Italy with Angelo, who is Chef and owner of Ruchetta Italian trattoria which serves genuine Italian food, which really is ‘like his mama used to make’. She still sends him ‘tips’ and fine ingredients from their home town in Calabria. Charlie at Stefan’s Butchers has a fabulous new recipe for Italian style fillet steak, so don’t miss that on page 53. His recipes are becoming firm favourites, have you tried one yet?

Care UK, Mobility Your Way and EthicaCBD all have ways of looking after elderly and more vulnerable members of our community and the Rotary Club talk about being ‘friends, family and neighbours.’ We continue our in depth articles when I spend ‘5 minutes with’ Gina and Kasia, who together make up Primelase, based in Crowthorne. Abbie Bell (of Click Style ltd) researched the history and had conversations with several residents for our feature on ‘Village Life in Finchampstead’, which was very well received by the local community, and includes entrepreneurs, education, dance, sports and much more. Local Indian restaurant, Xenuk Tandoori represent ‘flavours of the World’ in Finchampstead with their stylishly refurbished venue, and very warm welcome.

WL: Who and What is Primelase Berkshire?

P: We are Gina and Kasia. We have worked together in the laser and skincare industry for 18 years now. WL: Are you certified professionals?

P: Gina is a NMC (nursing midwifery council) registered midwife, still working in the NHS. Kasia is NVQ level 3 qualified beauty therapist, with Laser Core of Knowledge from 2006. However, our strength is in our years of experience. No matter what qualification you have, it’s the years of treating skin, talking to men and women about their skin, what works and what doesn’t, that is the most valuable. Laser treatments are so accessible now, but they can be ineffective or even be harmful in inexperienced hands. Kasia and I have been fortunate to, over the years, work with the most advanced lasers and devices, alongside medical experts. That has been one big learning curve! We now share that knowledge with our clients.

WL: Are your customers usually young women?

P: Our client base is a real mix of ages. Both men and women, young and old, as well as the trans gender community. Our treatments are suitable for all diversities of gender and skin colour.

WL: What do you mean by ‘Skin Health’?

P: A healthy, glowing complexion makes us appear more healthy, and our skin more youthful. However, it can be lifestyle or some medical conditions that create a problem on the skin.

For example, sun tanning and smoking seriously accelerates the aging process, damaging the cell DNA, making the skin function in an ‘unhealthy way’, causing redness, broken veins and uneven pigment on the skin. With the use of IPL light treatments, we can often erase these signs.

Conditions such as, acne and Rosacea can really affect a person’s self confidence and self esteem. With our Lynton IPL, skincare and skin peels, we can help manage the symptoms, often alongside prescribed medication. Scarring left behind by acne and stretch marks can be improved with microneedling and skin boosters.

Even the most sensitive skin suffering with eczema and Psoriasis can be helped with FDA approved Dermalux LED.

WL: Do you work in collaboration with other health professionals?

P: We are fortunate to have worked alongside some fantastic clinicians that we can refer to when necessary. For example, although we offer a leg thread vein treatment, if I notice that veins are too large or varicose, we can refer to the vastly experienced Dr Steve Tristram.

Kasia and I have done some training with MASCED (melanoma and skin cancer early detection), which has given us the confidence to be able to assess if any lesions on the body should get a medical opinion.

We do offer a skin tag and wart treatment service. For those lesions that the NHS no longer treat, or for cysts or moles that are too big or complex for us, we refer to Simon Thorpe of Thames Valley Aesthetics.

The clients that we have referred to him, have been delighted with their results. We are fortunate to have Simon with us for a monthly minor surgery service. He also offers some aesthetic treatments for us, such as cheek and lip fillers.

WL: Are there any conditions that you cannot assist with?

P: We can help most people. There are conditions that we cannot ‘treat’ but help with the symptoms of, such as women with polycystic ovaries. We are not able to treat the condition, but this is often associated with excess hair, and oily skin, which we can help with. We cannot treat acne or rosacea medically, but IPL, peels and professional skin care greatly helps the symptoms of it.

WL: What are your plans for the future?

P: We have our leg thread vein service starting in September. Part of the treatment requires wearing a compression stocking for a few days. So, better to have treatment in the autumn.

of Back-to-School with young kids

Getting a new school year off to a good start is more about positive attitudes than fresh school supplies. Keep these basics in mind to help the whole family launch a great year.

A is for Adjustment

Switching gears is a challenge for everyone and it will take time to adjust to new schedules and new environments. You can ease your child’s concerns by helping your child know what to expect. Attend your school’s open day or arrange for a visit before school starts.

A is for Attitude

Kids are going to be both excited and nervous when the new school year starts. You probably will be too! But offer a cheerful and upbeat attitude and show confidence for your kids. Let your children know you will be looking forward to hearing about their school day and send them off with a big smile.

B is for Balance

Priorities often get shifted away from family time during the school year in order to keep up with kids’ homework, athletics, and other activities. Take time to plan and organise schedules that leave room for family fun and spontaneous play. And don’t hesitate to stop an activity if it is causing stress or overloading your child’s schedule.

B is for Bedtime and Breakfast

Healthy meals and plenty of rest help make for smoother transitions. The week before school begins is a great time to start a new read-aloud that everyone wants to hear so kids are willing to snuggle up in bed even though it is still light out. Before bed is also a good time to lay out clothes for the next day to avoid rushing through breakfast to get dressed.

C is for Consistency

With everything new at school, routines at home can help soothe your child and create order. Start a bedtime routine appropriate for school nights well before school begins. Talk with your child about after school activities and homework time, and work out a schedule together so that everyone’s needs and expectations are met.

C is for Closeness

Your kids are going to be looking to you for reassurance about their new teacher, new faces in the classroom, and new situations. Address their concerns and talk up the things you know they like about school. You can also help ease anxieties with your own family back-to-school traditions. Choose activities where you get to talk and spend time together, such as a special dinner the night before, a relaxing spa day, or favourite cookies as an after school snack after the first day.

Italian Style

Savoury Pinwheels

A little treat for back-to-school lunch boxes. Easy and fun for the kids to make.

Thank you to the Sunflower After School Club, Year 6 Leavers at The Coombes CoE Primary School for testing this recipe!

Ingredients:

(approx. 12 pinwheels)

1 packet puff pastry (block or ready rolled)

1 small jar red pesto

100g cheese, grated

1 egg, beaten

Method:

l Heat oven to 200C/180C fan/gas 6 (or as pastry packaging instructions)

l Line a baking tray with parchment

l Unfold ready rolled pastry or roll out pastry block to approx. 30cm by 40cm

l Spread layer of pesto sauce over pastry, leaving a 1cm border at edges

l Sprinkle grated cheese over the sauce

l Once filled, roll pastry from the short end to make a sausage

l Chill in the fridge for 10 minutes

l Cut into 12 slices with a knife

l Lay slices, side down on baking parchment

l Lightly brush each pinwheel with beaten egg

When choosing a Sixth Form education it is essential to find the right environment that will arm pupils with the necessary skills to progress to university or the workplace. Sixth Form is the time when students take ownership of their learning and shape their future post-school. Consider finding an establishment that has excellent pastoral care, so that you know your child will get the support and care needed to see them through the pressures of Sixth Form. Mental wellbeing is crucial, especially at this important milestone in a young person’s life, so a school

They also prove advantageous to a university application, or when applying for jobs, both of which can be highly competitive.

How to identify whether the Sixth Form will develop positive characteristics in your child

Things to look out for include programmes such as:

Independent schools often have established alumni connections which allows students to tap into a wealth of experience, making contacts from a broad range of industry sectors.

l Duke of Edinburgh’s Award - Students can improve self-esteem and build confidence through the scheme. Many independent schools run this extracurricular activity.

Co-Educational Learning

Moving to a co-educational environment enables students to increase their interpersonal development. It also better prepares them for engaging with all genders at university, and in daily scenarios.

Boarding

If your child has never boarded at school before it may be worth a try, at least on some occasions whilst they’re studying for exams. This can help to prepare for university, which can often be a major adjustment if your child has not stayed away from home before. Additionally, it helps them to fully immerse themselves into Sixth Form life and take advantage of the numerous extracurricular opportunities.

Teaching style

Independent schools allow students to take advantage of smaller class sizes, leading to more dedicated time and attention, with expert tuition from specialist teachers. Students have the space to share their ideas and ask questions, which also benefits their peers.

TIME IS PRECIOUS

First, I would like to say thanks for taking the time to read this article today. We live in a crazy world that is nonstop, full of attentiongrabbing stimuli and leaves us very distracted at the best of times.

Time is precious and your time today whilst reading this content is valuable to me, so I promise I wont waste your time. Now, before we get into the topic of today which is “3 Tools to own the last quarter of 2023 and master your progress”, I want to share three pieces of feedback from clients who have used these three tools.

I share these quotes to inspire you to read this article, understand the brief summaries of the tools and then implement them into your life. A tool is only as good as the person using them but these tools change lives and today, I am looking forward to sharing these with you. What are we waiting for then? I can only go through the foundational basics of these tools

today but if you would like to chat about them further, please reach out to me when the time is right for you. Let us get this party started and go through each tool one by one...

Tool 1 – 3 things at night tool

This tool really is simple to start with. Last thing at night before you go to sleep, lay down and think about “3 Things” that have made you happy, grateful, positive, ecstatic, giving or to be honest any feeling that you decide. Focus and relive those three moments and leave a nice lasting impression in your mind before your brain does its thing whilst you sleep. When this tool is used daily and with consistency, its short term and long-term effects can be sensational. Give it a go and please reach out should you need some further help.

Tool 2 – What’s Important Now (W.I.N)

Now, this tool when used in the right situation both reactively and proactively can be immensely powerful. Reactively, when feeling in a less resourceful state than normal, repeat the words “What’s Important Now” to yourself and drill out

the distractions and the negativity and it can help you bring you back to the present. Proactively each day, you could also start the day with these words and focus on how you want to present yourself to yourself and the world that day. It is a great behavioural alignment tool and a fantastic tool to being you back to feeling present.

Tool 3 – Personal Responsibility in Daily Excellence (P.R.I.D.E)

Finally, and a favourite tool amongst the many clients that I work with. PRIDE in my eyes stands for Personal Responsibility In Daily Excellence. It is your duty as I believe to take absolute personal responsibility for you and your life. You take responsibility for the positives in your life, and you take responsibility for the negatives in your life. This tool when affirmed to yourself whenever you need it during the day can help bring to the surface what you really need to do in that moment. As with all the tools, fine tuning is important,

and practice is 100% needed but living a life of P.R.I.D.E can yield tremendous results for you and the people you care about.

Like I said above, the article today is just a very brief introduction to the Tools so that you know the tools basics. After knowing comes doing, and after doing, comes owning. My challenge to you today is for you to reread this article and fully know the basics of each tool. Once you have reread them, go out and Implement the Tools. Once you have been doing the tools, go out and own the tools and make them work for you.

As we approach the tax year mid-point, are you on track? Unexpected challenges may have thrown you off-course, or you might need to adapt in this challenging year. Perhaps you’re exceeding expectations and can push yourself further?

Every living creature acts with a goal in mind, whether it’s survival, reproduction, or adaptation to new environments. Similarly, in business, having clear and specific goals can mean the difference between thriving and merely surviving.

Take Amazon in the late 1990s and early 2000s as an example. The dot-com bubble burst, many e-commerce retailers collapsed, and traditional retailers dominated the market. Despite concerns about security, delivery logistics, costs, and shopper trust, Amazon defied the odds. Amazon’s overarching goal was to become the “Earth’s most customercentric company.” By relentlessly focusing on this

objective, they expanded their range, invested in innovative warehousing and shipping solutions, and addressed shopper pain-points with features like one-click ordering and Prime next-day delivery. Their long-term focus, complemented by sub-goals, data-driven improvements, and adaptability, not only revolutionised e-commerce but also made them synonymous with it, even now.

Research shows that setting challenging, measurable goals leads to better results. However, many businesses struggle to articulate their goals, fail to review and adapt them regularly, and misallocate resources.

So what can you do now to harness the power of goal-setting? Start by reviewing your business’s current position. What has gone well in the last six months, what hasn’t, and why? Reassess your longterm goals, are they still relevant? Are you on track to meet them? Next, re-clarify your business’s

purpose, target audience, and how you serve them. Use your reflections and info from reviewing where the business is now and where it’s going to set or confirm long-term and short-term goals that align with your overall direction. A proven approach to writing effective goals is using the SMARTER acronym:

Specific (S): Well-defined and clear. They should answer the questions of what, why, and how. Measurable (M): Quantifiable, so progress can be tracked. Measure what matters.

Achievable (A): Realistic. While it’s essential to set ambitious targets, setting goals that are beyond reach can cause frustration. An achievable goal considers resources, skills, and time frames. What do you need to upskill in or get support on to make your goals achievable?

Relevant (R): Relevant and meaningful, stay focused on what really matters.

Time-Bound (T): Specific deadline or time frame. Setting a deadline helps with urgency and prioritisation. It also encourages regular check-ins and adjustments if needed.

Evaluation (E): Regularly assess progress.

Re-doing (R): Be willing to modify and reset the goal.

Using SMARTER improves focus, motivation, and success in achieving targets. I recommend using this framework to write motivating and clear goals for your business, which can also be shared with any team members and investors. Don’t forget that not all goals have to be financial. They could be about work-life balance, customer satisfaction. Success means different things to different people and businesses. Once you’ve set or reset your goals, it’s important to break them down in to small SMARTER goals or milestones so it doesn’t seem too daunting and so regular progress can be seen and tracked.

Finally, act and track! Ensure that all your efforts align with your goals, whether it’s investments or time allocation. Regularly review progress against your goals, ideally monthly, to allow for necessary adjustments. Setting and staying focused on goals can be challenging, and it’s okay to get support.

Whether it’s a trusted friend, fellow business owner, or a professional qualified coach or mentor like myself, having someone to confide in and trust can make a big difference shaping goals and being accountable to achieve them!

As we reach the tax year midpoint, take a step back and assess your progress. Just as every living creature has a purpose, clear goals are vital for businesses to succeed. Break your big dreams into manageable chunks, stay on course, and don’t hesitate to ask for help.

Push forward, stay adaptable, and keep your eye on the prize. As Amazon showed, success is out there for those who go for it with all they’ve got!

The Rotary Club of Wokingham

James, Could you just explain who and what is the Rotary Club?

Rotary International is a voluntary organization with over 1.4million members worldwide. We are very similar in ethos and values to the Lions and Round Table, in that our main goal is to help others – our motto is “Service above Self”.

The Rotary Club of Wokingham is one of 52 clubs in the Thames Valley “district” which stretches roughly from Swindon up to West London.

Who do you help?

Anyone and everyone! We raise funds for local, national and international charities and we also contribute to Rotary’s worldwide End Polio Now campaign which has managed to eradicate the wild Poliovirus in all but two countries.

How do you raise money?

We generally participate in or organize fundraising events in the local area. Our main fundraising event is the annual fireworks display held at Cantley Park, this is large scale operation as you can imagine, organised in collaboration with the Rotary Club of Easthampstead, the Wokingham Lions and two Unicorns clubs.

We also have a stand at both May Fayre and Winter Carnivals where we run “Play your cards right”, “Lucky Dip” and, of course, our Rotary

pig racing. In December, you’ll see us, collecting outside Tesco, Waitrose and Morrisons in addition to the town centre so as to be able to distribute Christmas food vouchers to Wokingham families.

Are club members volunteers, and what background do they come from?

Yes, all our members are volunteers. Our club currently has 19 members, and was formed in 1952. We are a diverse group of individuals who work together to achieve the same goals and objectives. Most of our members are retired but they have a wide variety of backgrounds – Property Management, Construction, Engineering, Doctors, Dentists, former local jewelers, councilors plus the “younger” members such as myself - an IT Project Manager. We welcome anyone into our club so if you’re interested in volunteering, fundraising and helping others that makes you a perfect candidate to become a Rotarian. As one of our members so eloquently puts it, we are friends, family and neighbours.

What is your main focus for the remainder of 2023, and what do you feel the charity can achieve?

As I write this in July, we have actually just started our Rotary year which will run until 31st June 2024. President Bruce has handed over the “reigns” to President Nick whose focus for the next 12 months is “continuity”. We are going to continue to run the events that have been successful in the last year and plan more social events as this is also a core part of being in Rotary – having fun and fostering the friendships that have formed in over 70 years since the club formed.

What do you like best about Wokingham?

There is a very strong community feel in Wokingham. Everyone is very friendly and willing to help each other. This is demonstrated by the generosity of the public and enables us to donate over £10,000 to worthy causes each year and fund vital projects to help and support others in and around Wokingham.

Who gives you inspiration?

On a personal level, it’s my mum who passed away in 2001. She was a very kind and caring person, always doing lots in the local community. In Rotary terms, I’m inspired by our club members. They are very passionate about helping others in & around Wokingham, and they have a lot of fun doing it! Our existing members make all visitors and prospective Rotarians feel very welcome at club meetings & events, and are open to fresh, new ideas to make the club grow.

Kennet & Avon Canal

The Kennet & Avon Canal, links London with the Bristol Channel, and passes through some spectacular landscapes including Wiltshire and the rolling Cotswolds. Today, thousands of visitors enjoy boating, walking and cycling along the peaceful towpaths of the Kennet & Avon Canal, fondly known as the ‘K&A’. This beautiful waterway is a favourite family weekend escape for locals and a pleasure to discover on a day out for visitors. Along the way there are many places to visit including Caen Hill, Devizes Wharf, Bradford-on-Avon, Newbury Wharf, Reading, Pewsey and many more.

The Kennet and Avon Canal, built at the turn of the 19th century to link London’s waterways with the Bristol Channel, is a shimmering 87 mile-long necklace studded with man-made gems. But the apogee of engineer John Rennie’s genius can be found at the aquatic stairway descending from the Vale of Pewsey to the Avon valley: a series of 29 locks – the UK’s longest continuous flight, dropping half a mile in two – including the 16 tightly packed locks of the Caen Hill Flight.

The Caen Hill car park is an ideal starting point for a day roaming the pathways of central Wiltshire. It takes boats at least four hours to navigate the flight, so it’s best to tackle the gradient on foot.

The wharf at Bradford-on-Avon Wharf was the busiest on the Kennet & Avon Canal during the 1850s. Today, it’s a great place to spot historic canal

features. Bradford on Avon is an architectural treasure chest, with gems including the magnificent 14th century Tithe Barn and striking Town Bridge over the River Avon. The town has many independent shops and places to eat, including the canalside Barge Inn and Mr Salvat’s 17th century coffee room, where customers are served by staff in period clothes.

Back on the towpath, the Canal & River Trust is currently trying to establish a new welcome station. And while they are the charity who are responsible for the care of over 2,000 miles of waterways, including the K&A, working closely with neighbouring charity, the Kennet & Avon Canal Trust at Bradford-on-Avon Wharf. They run a café, information centre and boat trips.

So, do locals and Finchampstead residents commute regularly to nearby towns and into the City? Well, it appears that there is a pletherer of niche, artisan and independent businesses and budding entrepreneurs within the community itself, including Abbie Bell, who is a local new business owner who still lives and infact grew up in Finchampstead. Her business, Click Style, is an online brand which launched in January 2023. The inspiration for the company came after the family renovated a local derelict Edwardian property. When the time came to focus on the hugely exciting part of room interiors, along came the pandemic. With bricks and mortar stores being closed, the family struggled to source quality and exciting products online, so Abbie found the solution in Click Style which offers luxurious and stylish signature interior pieces, designed to help customers create a home as unique as they are. Another resident, Alison Searle, has a similar story to tell.. ‘‘Having moved to the village in 2015 and renovating our house from top to toe, the best thing about being in the village is being able to walk to the park, the school, the pub and shop and having the beautiful countryside on the doorstep.

Education and healthcare facilities are wellestablished in Finchampstead, ensuring that residents have access to essential services without having to travel far. Part 1 of our 3 part series on Italy

Naples, located in southern Italy, has a rich and diverse history that spans over 2,800 years. From its ancient Greek origins to its role as a powerful kingdom and its eventual unification with the rest of Italy, Naples has been a centre of culture, trade, and political upheaval. Here is a brief history of Naples through the ages.

The origins of Naples can be traced back to the 9th century BCE when it was founded as a Greek colony known as Neapolis, meaning “new city.” The Greeks established a thriving city-state with an acropolis, temples, and a bustling port. Neapolis flourished under Greek influence, becoming a centre of trade and culture in Magna Graecia.

In the 4th century BCE, Naples fell under Roman control during the Samnite Wars. The Romans recognised the strategic importance of Naples’ port and developed it further, making it an important hub for trade in the region. Under Roman rule, Naples grew in size and prosperity, with grand villas, theatres, and baths being constructed. With the decline of the Western Roman Empire in the 5th century CE, Naples came under the control of various Germanic

tribes, including the Ostrogoths and the Lombards. In the 8th century, Naples became a duchy under the Byzantine Empire, but it faced frequent raids and invasions from Muslim forces.

Spaghetti alle Vongole

The sun is shining and there is so much more to Summer food than just BBQ’s. Try this quick and easy family favourite - Spaghetti alle Vongole. This delicious Venetian clam pasta started life as peasant food, and has become an Italian classic, simple and easy to make, it is ready in minutes.

Ingredients:

350g spaghetti

2 tbsp olive oil, plus extra for drizzling

½ tsp deseeded and finely sliced red chilli

2 garlic cloves, finely sliced 500g small clams, cleaned and rinsed

Good splash dry white wine

2 tbsp finely chopped fresh flatleaf parsley leaves and stems

Method:

Bring a large pan of salted water to the boil and cook the spaghetti for about 7-8 minutes according to the packet instructions until al dente. Meanwhile, heat the olive oil in a large, deep frying pan over a medium heat. Add the chilli and garlic and cook for 3-4 minutes until the garlic is softened but not coloured. Add the cleaned clams to the pan along with the wine. Cover and cook over a fairly high heat for 2-3 minutes until the clams have opened. Remove from the heat, then pick out and discard any clams that haven’t opened.

Drain the spaghetti and add to the pan with the clams, turning gently to combine. Stir in the chopped parsley and drizzle over a little olive oil. Taste, season and serve immediately.

Grilled Seabass

Seabass has a very low fat content and is rich in protein, making it a firm favourite on traditional Italian dinner tables during September, and it is also very popular with local families dining at Ruchetta.

Try this delicious recipe for Grilled Seabass with a tomato, onion and caper sauce.

Ingredients:

500g button onions

5 garlic cloves, peeled & left whole

1 x whole cinnamon stick

1 x 330ml jar of tomato passata

60g capers

100ml extra virgin olive oil

4 x sea bass fillets, pin boned

Sea salt & freshly ground black pepper

Sprinkle of lemon thyme

Method:

Add the whole butter onions, garlic cloves and cinnamon stick to a saucepan and cook over a very low heat with the lid on until slightly softened.

Add the tomatoes and continue cooking for a few more minutes. Stir in the capers, take off the heat and season to taste.

Preheat the grill to medium high heat.

Combine black pepper, salt & lemon thyme in a small bowl and season both sides of the sea bass fillets.

Place the fish under the grill and cook each side for 4 minutes. Remove from the heat and spread some of the sauce over them.

In the 11th century, the Normans, led by Roger I, conquered Naples and established the Kingdom of Sicily. Naples became the capital of the kingdom, and under Norman rule, it experienced a period of cultural and economic growth. The Norman kings built impressive castles and churches, blending Norman, Arab, and Byzantine influences. Naples continued to flourish during the Angevin dynasty in the 13th century. The city became a vibrant center of Renaissance culture, attracting artists, scholars, and architects. However, the rule of the Angevins came to an end in 1442 when Alfonso V of Aragon, known as Alfonso the Magnanimous, conquered Naples and established the Kingdom of Naples. Under Spanish rule, Naples experienced a golden age in the 16th and 17th centuries. The city became a major European cultural centre, attracting renowned artists such as Caravaggio and Bernini. However, Spanish rule also brought economic exploitation and oppressive policies, leading to a series of revolts and uprisings.

In the 18th century, Naples came under the rule of the Bourbon dynasty, which sought to modernise the city and promote economic development. King Charles III initiated various reforms, improving infrastructure and promoting education. Naples became one of the largest and most populous cities in Europe, renowned for its vibrant music and theatre scene. In the 19th century, Naples played a significant role in the Italian unification movement.

Giuseppe Garibaldi and his volunteers, known as the “Thousand,” marched from Sicily to Naples in 1860, capturing the city and eventually leading to the unification of Italy under King Victor Emmanuel II.

During the 20th century, Naples faced challenges

such as economic decline, political corruption, and organised crime. However, the city has also undergone revitalisation efforts, preserving its historical landmarks and promoting tourism. Today, Naples remains a city with a distinct identity, blending ancient history with vibrant modern life. Its historical sites, such as the ruins of Pompeii and Herculaneum, the Royal Palace of Naples, and the Castel dell’Ovo, attract visitors from around the world. Naples’ rich cultural heritage, delicious cuisine, and lively street life continue to make it a fascinating destination.

Naples is famous for its culinary delights, and one of the most iconic foods associated with the city is pizza. Naples is considered the birthplace of pizza as we know it today, and the traditional Neapolitan pizza is known for its thin, soft, and chewy crust, simple toppings such as San Marzano tomatoes, fresh mozzarella cheese, basil, and olive oil.

In addition to pizza, Naples is also known for its pasta dishes, including spaghetti alle vongole (spaghetti with clams), spaghetti aglio e olio (spaghetti with garlic and oil), and pasta alla Genovese (pasta with a slow-cooked onion and meat sauce). Other popular Neapolitan dishes include parmigiana di melanzane (eggplant Parmesan), frittata di maccheroni (a pasta omelette), and seafood specialties like zuppa di pesce (fish soup) and pezzogna alla napoletana (red sea bream Neapolitan style). It is also renowned for its street food, with staples like sfogliatelle (flaky pastry filled with sweet ricotta), babà (rum-soaked sponge cake), and arancini (fried rice balls with various fillings) being popular choices.

SEARED Fillet Steak

WITH ITALIAN PIZZAIOLA SAUCE

Ingredients:

4 x 175g fillet steaks, cut 4cm thick

3 tbsp olive oil, plus extra

2 garlic cloves, finely chopped

450g vine-ripened tomatoes, skinned, deseeded and coarsely chopped

Leaves from 3 sprigs fresh oregano, finely chopped

1 tbsp capers, drained and rinsed

4 handfuls Florette Wild Roquette, or similar

Method:

Brush the steaks lightly with a little oil and season. Heat a cast-iron griddle or frying pan over a high heat.

Once smoking hot, add the steaks and reduce the heat to medium-high. Cook for 2 minutes on each side for rare, or 21/2 minutes on each side for medium-rare. Rest the steaks somewhere warm.

Meanwhile, put 3 tablespoons oil and the garlic in a medium frying pan over a high heat.

Once the garlic sizzles, add the tomatoes and oregano and cook for 2 minutes, shaking the pan every now and then. Season.

Spoon the sauce onto warmed plates and scatter with capers. Place the steaks on top and garnish with the rocket to serve.

Simple and delicious.
