Ingredients Method
1 x Rack of Beef Short Ribs (4 Bones) 1 x ‘Stefan’s Seasoning’ Dry Rub BBQ Sauce: 100g x Ketchup 50g x Brown sauce 20g x Molasses Dash Worcester sauce 30g x Brown Sugar Chilli/Cayenne Pepper to taste 1 x Lime, juiced l Coat the ribs well with the dry rub and place on a barbecue grilling / smoking rack at 120 degrees C for around 4-5 hours, until very tender.
Use a mix of hard wood and lumpwood charcoal. l The fat from the ribs will render, the outside blacken and the meat shrink back from bone and swell. This is normal! l To make the BBQ sauce, combine all of the above ingredients with a whisk. l Scale up as needed for volume, this will keep well covered in the fridge. l When ready to serve, baste the ribs with the BBQ sauce for 20-30 minutes until you achieve a glaze.
Serve with a fennel slaw, beans and a cold beer... The Ultimate Summer Barbeque!
