Beef Short Ribs our way!

Feeds: 4 Hungry People Prep Time: 10 Minutes Cooking time: 5 Hours

Ingredients 1 x Rack of Beef Short Ribs (4 Bones) 1 x ‘Stefan’s Seasoning’ Dry Rub BBQ Sauce: 100g x Ketchup 50g x Brown sauce 20g x Molasses Dash Worcester sauce 30g x Brown Sugar Chilli/Cayenne Pepper to taste 1 x Lime, juiced

Method Coat the ribs well with the dry rub and place on a barbecue grilling / smoking rack at 120 degrees C for around 4-5 hours, until very tender. Use a mix of hard wood and lumpwood charcoal. The fat from the ribs will render, the outside blacken and the meat shrink back from bone and swell. This is normal! To make the BBQ sauce, combine all of the above ingredients with a whisk. Scale up as needed for volume, this will keep well covered in the fridge. When ready to serve, baste the ribs with the BBQ sauce for 20-30 minutes until you achieve a glaze.
