WELCOME Welcome to our Festive Celebration issue of Wokingham Local magazine. It has once again been a tremendous pleasure to have the friendship and support of our Wokingham local communities and businesses alike. There is so much crammed into this extended, 64 page issue, that I truly feel there is something for everyone. From Show Homes and top design trends to our local tradespeople, from festive wedding fairs to our local shops, we really do have ... Christmas All Wrapped Up! And so, we have a brand new festive season to look forward to this Year, and we are all excited to be celebrating with family and friends, and to raising a well earned ‘toast’ to this last Year! Just think of all the things we missed last year that we are about to enjoy - the Wokingham Winter Carnival, with carol singing and gathering around the Christmas tree as the lights are switched on. A cosy dinner party at CHALK, or a family celebration at our local pubs, maybe the Greyhound Finchampstead? Or maybe, a trip to take the little ones to see Santa and a shopping trip around Holme Grange craft village or our Christmas markets? Then, down to the nitty gritty of planning decorations and food and drinks. Easier said than done, but getting organised early is the key, I believe, to having a stress free Christmas. Here are a couple of tips - Make a list, plan a budget, and start the Christmas shopping early. - Buy Local, of course, from our amazing independent shops, many of whom will sell bespoke and individual gifts. Then to the checklist of the all important food and drink, ensure your turkey or other meats are ordered preferably 4 weeks in advance from Stefan’s butchers. Stock up on the booze and fizz - the Tasting Barn can help you there, and why not order such treats as mince pies and sausage rolls from your favourite local bakery. Now, to the special Christmas eve, and take some time to set the perfect Christmas table, Jessica Cox (designer) helps with that in this issue. Then, breathe and relax, we have done it! Time to put a glass of sherry and a mince pie out for Santa and last but not least, all the team here at Wokingham Local raise a glass to you all. Cheers x

Wokingham Winter Carnival SUNDAY 28TH NOVEMBER 21 ~ 11AM TO 5PM

Wokingham Winter Carnival is a fun day out for the whole family in the Town Centre and surrounding area, including performances in Peach Place. The Town is closed to traffic for the day so children can join in the fun in a totally safe environment. There’s a whole host of street entertainers, music, singing, dancing and the fun of the fair with loads of different rides, whether you’re young or old. Santa will be in his grotto, and for lunch there are stalls offering an amazing choice of food and drink together with crafts and gifts for Christmas shopping. And at the end of the day there will be carol singing – from 4.30pm and the Christmas tree lights will be switched on.

Breathe Richard Welch, professional yoga instructor and organiser of Yoga in the Park, Wokingham, reminds us to ‘breathe’ at this hectic time of Year.

“And breathe…” We offer this advice when someone is overly excited or anxious. We recognise breath as a way to calm mind and emotions. Breath is a powerful tool to promote well-being. It is literally right under our nose. Yet we don’t pay much attention to the breath. Using breath to enhance well-being is an effective practice. It can be done sitting at a traffic lights or in a quiet room. Daily breathing practice is both powerful and healing. Immediate benefits result for body, mind and spirit. In day-to-day life, we are overrun with multitasking, but we are also completely out of touch with our natural breathing patterns. Modern humans tend to take shallow, uneven breaths, using merely 15% of lung capacity. In addition, short, shallow, and fast breathing tells the brain that we are in a desperate situation, ‘fight or flight’ mode while corresponding hormones are released as a result. If one wishes to bring balance and inner peace in such circumstances we should become aware of our breathing and start to slow things down...

This is simple abdominal breathing. See if you can deepen breathing more of the belly moves and less of the chest. To help relax the nerves, breath through the nose and slightly constrict your throat muscles so as you breathe out it sounds as if you are Darth Vader... If you focus a few minutes each day on a regular basis you will notice your breath more in everyday situations. You will notice when it becomes ragged, or you are holding your breath. Awareness is the key. Try to incorporate breath control into a dayto-day activity, taking a shower, a slow walk, cooking, listening to music, and while you are in the activity listen to your breathing. Be aware what are you doing with your breath. Gradually over the days see if you can produce slower deeper breaths while maintaining the activity. So the next time you find yourself in a state of confusion, anxiety, frustration or irritation whether in the office, on the road or at your local super market, etc. give yourself the gift of some deep tummy breaths to calm the body and mind. Simple breath awareness is one of the simplest forms of meditation, but it is also one of the most significant. Take your attention to the diaphragm moving and pushing the tummy out on the inhale and, without jerking, the diaphragm muscle relaxing and tummy returning through the exhale. 12

The Surprising Power Of Sound “After silence, that which comes nearest to expressing the inexpressible is music” Aldous Huxley

Sound is powerful. It can be soothing, healing, emotional, transformative. Sound can help us connect and tune in to our deeper selves, peeling away layers of thought, clearing the mind and making space for us to BE in the moment. Sound can awaken memories and boost brain function, research has demonstrated that listening music or singing can give behavioural and emotional benefits to people with dementia. Listening to music or singing can be a balm for the soul lets us drop out of our busy head space and connect to our hearts. Its been shown in studies to boost endorphins and oxytocin - the “love” hormone, reducing stress and easing depression. It can even lower your blood pressure! Take a look below for some of my favourite hidden powers of sound... 1) It’s a natural high Who loves singing along to their favourite songs? Or popping on some tunes whilst you work? Maybe you love playing an instrument, or going out dancing. Studies have shown that when you listen to music you like, your brain releases a “feel-good” cheminal, dopamine, boosting your sense of happiness and wellbeing. 2) Sound is healing So we know music helps makes us happy. Did you know that happiness is good for your health!? The hormal boosts encourged by listening to music, sounds we enjoy or singing decrease the cortisol (the stress hormone) in your system, decreasing chronic stress and the ill effects it produces in the body. Did you know up to 60% of illnesses and diseases are caused by or increased by stress? More music = more happiness = less stress = healthier you!

3) Music and soothing sound improve sleep Listening to relaxing classical music before going to sleep can encourage significantly better quality sleep. Give it a try! 4) It makes you smarter and slows aging Yes, listening to or playing music can help make you smarter. There have been lots of studies over the years that demostrate a link between certain kinds of music or sound and improved cognitive function. You’ve probably heard tips such as classical music helping to boost the brain when studying. One facinating study carried out by University of California Los Angeles (UCLA) looked at the inclusion of Kirtan - yogic devotional chanting - and found that including daily practice along with mat based yoga “activated significant anatomical areas of the brain” AND “increased telomerase, the rejuvenating enzyme that slows cell aging,by 43%, the largest increase ever recorded”! 5) It takes you straight to the heart We spend so much time in our heads, thinking, analysing, problem solving, that sometimes we forget ourselves and lose sight of what truely and deeply matters. We lose sight of who and what we are. And what are we? Love. We are limitless potential for love and compassion. We are the way for the universe to know and love itself. And music has the power to take us straight back to the heart. I’m sure you can think of more! Ben, Craig & David at CHALK restaurant Broad St, Wokingham ‘’FOLLOW YOUR DREAMS ~ NO MATTER WHAT!’’ WL: Can you tell us a little bit about how you came together and about why you decided on ‘Chalk’? C: We’ve all worked together previously at stages throughout our careers. We work well together in our respective areas, and we finally got fed up working hard for others and set up Chalk because we wanted to work hard for ourselves instead. WL: And why Wokingham? C: Wokingham suits our business model and what we’re trying to achieve. We’re looking to offer a quality product (food, drinks and great customer service) and we felt Wokingham, being a lively and vibrant Town at the heart of the Community would be an ideal place for us to have our first restaurant. WL: How challenging has the past year been? C: Very challenging. The last year has really tested us all in every way possible. Personally, collectively as a team and as a business. 18

We really have had everything thrown at us. I think what’s helped us pull through is our experience and working with people (our team and suppliers) who we trust and who we’ve forged even stronger relationships with. WL: What do you think you have learned in the past year that you will take with you into the future? C: VTo follow your dreams no matter what and to believe in yourself and more importantly in those who you trust. WL: What’s the best piece of advice you have ever been given? C: There’s no one piece of advice or silver bullet. Personally what I feel has worked for me has been to confide in those close to me who I trust and use them as sounding boards and take a variety of views and opinions and try find the best solutions and answers. Driving home for Christmas? Winter motoring tips Let’s help you to prepare and take care of your vehicle for the festive season and winter weather

1 Ensure all fluid levels such as, engine oil, coolant, brake and clutch fluid, and screen wash are topped up (top tip, do this on a level surface when the vehicle is cold).

2 With help from a friend, colleague, neighbour, check all the lights are operational and regularly clean the lenses.

3 Check your tyres are inflated to the correct manufacturers recommended pressure and that you have a minimum of 3mm tread remaining (this is crucial for winter).

4 Check the condition of your wipers and washers and try to keep the

screen and wipers clean, do this at least once a week. (Remember, don’t pull the blades off a frozen screen or operate the wipers until you have de-iced the screen.)

5 Prepare for the worst… it’s worth gathering a small kit to keep in your

vehicle for emergencies, a small box which you can fill with goodies such as snacks, bottled water, extra clothing, and blankets in case of an unexpected breakdown.

You don’t seem to hear very much about Quaker schools but then grandiose self-promotion isn’t very Quakerly. A little research reveals some interesting facts. LUCKLEY HOUSE I have been so pleased to welcome pupils into a number of year groups this September, and of course in to Year 7 in particular. I am delighted to see our pupils settling into life at Luckley so quickly. Having our pupils back at school has really made the site come alive again and it’s a great treat to walk around the ground listening to them laugh and seeing them learn. At Luckley we are aware that coming to a new school is a big step for anyone, and so we work to ensure that pupils have a chance to get to know the school and each other even before they start term. I have asked our Year 7 how they found the first few weeks of term and this is what they had to say: “Life at Luckley is exciting to say the least. Every day is an adventure, with plenty to do. I settled in easily, as everyone is kind and very helpful. The teachers encouraged us to make friends, which caused us to have strong bonds between everyone. I have only been at Luckley for a couple weeks, and I already think of it as a second home. You could not feel more comfortable at this school if you tried!” Simi A, Year 7 38

PANGBOURNE COLLEGE Welcomes New Year 7 Pupils

Dunbar Housemaster, Dr Ian Hart explains how our new pupils (and parents) have been settling in

“This September we welcomed 27 Year 7 pupils into Dunbar, which is our boarding house for day and boarding pupils in Years 7 and 8. Set away from the senior houses, Dunbar is equipped with games, a kitchen and quiet spaces, and is a wonderful place for our pupils to socialise with their new friends. The pupils are supervised by a fantastic group of staff which includes an Assistant Housemaster, Visiting Tutor and Matron.

For the first two days of term, our Dunbar pupils had a fantastic time exploring the 230-acre campus with a hike around the perimeter, and a treasure hunt around the college, finding the answers to questions such as ‘When was the college founded?’ (the answer is 1917!). They also enjoyed a range of activities and crafts including table football, pool, craft-making and 5-a-side football, not to mention bouncing on the trampoline and playing the drums. The first full week of term saw the start of academic lessons and we’ve been delighted with how well our pupils have adapted to senior school. At Pangbourne, we are well known for our caring community, so it’s just as important to us that the parents settle in and feel that they are part of the school too. So far this term we have hosted a Dunbar family football match and an informal drinks party. Everyone has really enjoyed getting to know one another and becoming part of ‘Team Pangbourne’.”

The Christmas Table

Arguably the most important mealtime of the year – the Christmas Day feast. Whether it’s for two or twenty, setting the table should be extra special, and with the tips below and a bit of planning you can create a unique scene to impress the guests! Start with a white or light neutral tablecloth. It is timeless and can be used all year round, but also makes a great base to experiment with lots of different colour schemes. Then pick your theme. Having a defined theme makes your table look extra special and creates a ‘polished’ look. Whether it’s traditional with reds, greens and tartans, luxe with metallic finishes and jewel colours, a winter wonderland with crisp whites, blues and silver or rustic and nature inspired with foraged greenery, linen and wood – picking a theme and building on it will give your table a professional edge. Then add a centrepiece. Ensure your table is the centre of attention with a striking centrepiece. For a quick and easy touch, a Christmas wreath can sit on the centre of the table filled with candles. Add delicious smelling dried fruits and cinnamon with eucalyptus for added decoration that smells beautiful and festive. If space is tight, pick tall candelabras or vases with narrow bases so you can still see across the table and have plenty of space for the food. Vases can be filled with flowers, ornaments, or pinecones – have fun experimenting! Another effective way to create a centrepiece is to use a small mirror (or mirrored tile) and top with a selection of glass candlesticks in different shapes and sizes, then surround with foliage or baubles that coordinate with your colour scheme. The mirror will create a lovely glow from the candlelight above.

Focus on the tableware. Layer your table look with charger plates or placemats. For a quick and simple placemat take an A3 size sheet of white paper, fold it up and cut out a design (a great activity for the kids to help with too) unfold, and iron smooth for a decorative snowflake effect placemat! Once the placemats and chargers are in place add your crockery and glassware. Plain white china is ideal as it can be instantly transformed with a few festive touches. It’s worth having two sets of china so that you can layer your plates for an indulgent look; a charger layered with a dinner, side plate and bowl sets the scene perfectly and is then finished with a napkin to suit your scheme. When it comes to laying the cutlery – put the main course knife and fork either side of the charger plate, then put the starter knife and fork on the outside. Place the dessert fork at the top (handle left) with the spoon above (handle right). Then add the glasses above the knives. Use your best crystal cut pieces for a luxe addition or try tying a piece of ribbon or adding foliage to the stems of the wine glasses to add to the overall look. Time for the finishing touches. Adding some personality and fun to the table with homemade crackers, creative placenames, or individual small gifts is a lovely way to add to the theme and to welcome each guest. Why not add a personalised bauble to each setting which acts as a placename but also as a thoughtful gift for your guests to take away with them too… Most importantly have fun with the decorating! Gingerbread Martini A great post dinner drink to settle down with and slowly drift off, creamy and dreamy Ingredients: 50ml = 2 shots Vanilla Vodka ~ 6.25ml = ¼ shot Gingerbread Syrup 37.5ml = 1 & ½ shots of Milk ~ 37.5ml = 1 & ½ shots of Double Cream Take all ingredients shake over ice and strain into a Martini glass. Use cinnamon powder as garnish, if you sprinkle cinnamon over a flame it will spark and adds to the effect of the performance.

Redan’s Chocolate Orange A twist on the Espresso Martini, and yes it tastes like the famous chocolate orange! Ingredients: 25ml = 1 shot Vanilla Vodka ~ 12.5ml = ½ shot of Cointreau or Triple Sec 12.5ml = ½ shot Kahala ~ 10ml Sugar Syrup (Gomme) ~ 62.5ml = 2 & ½ shots fresh espresso Take all ingredients, shake over ice and strain through a tea strainer to get that amazing foamy effect, pour into a chilled martini glass and garnish with grated chocolate of your choice, enjoy!!

Christmas Beef Wellington The ultimate indulgence...

Ingredients Beef fillet 1 kg, English mustard 30 g, Chestnut mushrooms 700 g, Chestnuts 100 g, Fresh thyme 10 g, 8 slices of Parma ham, 1 sheet of puff pastry, 1 egg, Olive oil, Salt & Pepper

Method Beef Wellington has to be the ultimate indulgence during your Christmas dinner. Start with the beef fillet, and the important thing is to sear it first. Season your fillet with salt and pepper, then take a hot pan, pour some olive oil and place the beef into the pan and fry the beef until it is nicely coloured. Take the beef out of the pan and place on the plate. Then, slightly brush your beef with English mustard, as this gives a bit of a heat. While the beef fillet is resting, prepare the filling. Take 700 g of chestnut mushrooms and place them into the blender, and add a chopped clove of garlic. Season with salt and pepper and blitz. Christmas wouldn’t be Christmas without chestnuts, so next add 100 g of chestnuts to the mushrooms and blitz again. Once the mixture is finally chopped, cook it in a hot dry pan. This removes the water from the mushrooms and intensifies the flavor. Add 10 g of fresh thyme. When all the liquid is dried off, remove the filling from the pan and leave to cool. Next, start assembling the Wellington. Stage one is wrapping the beef fillet. Place the kitchen film over the board. Put 8 slices of Parma ham on the kitchen film. Add a little touch of pepper. Then, spread your mushroom filling over the Parma ham. Use the back of the spoon to spread it nice and thinly. Then, lay the beef on top and very carefully fold that over. Wrap the beef nicely and carefully. Push and roll it nice and tight. The tighter it is the more perfect the shape. Then, place the beef into the fridge for 15 minutes to firm up. Once it is set, it is ready for the final wrap. Place your kitchen film on the board and put the puff pastry on to it. Put your beef in the center and very carefully roll the puff pastry over the beef until two edges meet. Trim off the excess pastry and twist the ends together to ensure that the beef is completely sealed in its pastry case. To give the pastry a golden-brown color when it bakes, brush it with an egg yolk. Sprinkle some salt over the pastry, to ensure it becomes lovely and crispy. Bake in the oven at 200 degrees for around 35 minutes. When ready, let your Wellington rest for 10 minutes. There you go – the best Christmas Beef Wellington, ever. Serve with: green beans, brussell sprouts with chestnuts, carrot puree, crispy roast potatoes, and gravy – or red wine jus? Well, it is Christmas! 53

A DECADENT CHRISTMAS DESSERT... READY IN UNDER 10 MINS!

Boozy, Chocolatey Cherry Trifle Ingredients

Method

350g pitted cherries

Combine the cherries and Marsala in a bowl and set aside. Meanwhile, place half the cream in a small saucepan over medium heat and bring to a simmer. Break 150g chocolate into pieces and add to cream, stirring until the chocolate ganache is smooth and combined. Set aside to cool.

1/3 cup (80ml) sweet Marsala wine 600ml thickened cream 200g dark chocolate 200g creme fraiche

Whisk creme fraiche, icing sugar and remaining 300ml cream to soft peaks.

To assemble the trifle, divide half the panettone among 6 x 1-cup (250ml) glasses and gently press into the bases. Top with half the cherries and a little of their soaking liquid. Spoon over half the ganache, then half the creme fraiche mixture. Repeat the process, finishing with the remaining creme fraiche mixture. Drizzle over remaining ganache, shave over remaining 50g chocolate and dust with icing sugar to serve.
