FIVE REASONS to choose an independent school for your child’s senior education

Reddam House is a co-educational independent day and boarding school providing an outstanding education to 700 girls and boys aged between 3 months and 18 years old. TECHNICAL WELLBEING Well, it’s back to school, a mix of excitement and apprehension for our youngsters, new teachers, new friends, new challenges, new subjects. One thing that really impresses me is that quite a few schools and academies are adopting wellness and holistic activities, in particular yoga. I wish this was around when I was younger. Children, pre-teen and teen, can benefit considerably from yoga. The teenage brain is both complex and developing quickly. According to the National Institute of Mental Health, the changes to the brain and reproductive system between the ages of 12 and 19 are enormous, and the shifts in reproductive and stress hormones during that time can affect thinking and behaviour. Many of us remember our teen years as a time of high anxiety and depression when we could well have used yoga’s benefits. Learning yoga practices at this stage in development can be a game-changer in dealing with hormonal fluctuations, and yoga will provide teens with lifetime tools and techniques for stress management. WOKINGHAM LOCAL • SEPTEMBER 2022

Teens are dealing with body changes, peer pressure, social media, exam stress, possibly parental conflict etc, whilst the brain’s prefrontal cortex is still maturing, (where we make executive decisions). No wonder they are grumpy sometimes, there is lots going on! A yoga practice is the first step towards repatterning our stress response, it shows us how to respond intelligently and effectively to stressful situations, by using the breath and conscious management of the stress response. Practice, effectively and regularly, and these learned techniques become instinctive, we are able to navigate stormy waters much more effectively. 11


The physical “feel good” element is also important for teenagers. Rather than ploughing through fast fitness focused sequences, most teens respond well to taking time to feel the effects of a yoga posture – whether it’s a challenging arm balance or a calming twist. Explanations of the movement and why a particular movement may cause us to feel a certain way, is of great interest to young connective minds. Girls usually enjoy the flowing movement and boys will throw themselves into arm balances and more strenuous postures, it’s just how they are. I really enjoy teaching teens yoga as they are risk takers, and they still have a reasonable range of movement. I say ‘still’ as I have noticed, over the last few years, just how tight youngsters are generally – it is a concern and something that shows up in a yoga class. The default posture these days is influenced by our addiction to our phones, it’s hardly surprising that youngsters are so tight in their posterior muscles. Yoga might not be what our youngsters think it is, there’s plenty of mis-information out there. I would say if you have difficulty in switching off, or are not comfortable with how you are developing, are carrying some anxiety or even frustration and anger, perhaps lack of confidence or low self-worth, then yoga can help. Yoga is a set of tools that you can use to improve your life, on your own, in your own space – why not call it ‘technical wellbeing’ instead of yoga. If I’d had the opportunity and access to yoga in my school years, with a teacher that could show me the benefits of practice, I really feel it would have helped me to navigate my teens a whole lot better. I commend those schools and academies for providing some technical wellbeing to the next generation and for the youngsters that invest in themselves. Make your health, your wealth. TIME FOR A NEW FISH TANK? Nothing is more exciting than adding new fish to a newly set up aquarium. However, the fish you choose will have a big impact on your tank’s success or failure. Unfortunately, many new fish owners make the wrong choices, lose some or all of their fish right away, and give up on keeping fish. The two biggest errors made when stocking a new aquarium are adding too many fish at a time and choosing the wrong species. Tip the scales in your favor by following these basic, but important, steps. HOW MANY FISH? When you are considering the many beautiful fish at the pet shop, remember one word – moderation. In most cases, only two or three fish should be introduced to a tank initially. Once the nitrogen cycle is established and the tank is stable, additional fish can slowly be added. However, the same rule applies when adding the next round of fish. Moderation: you must add only a few at a time. FACTORS IN CHOOSING FISH Fish owners tend to opt for fish with the most physical appeal. Pretty fish are sometimes acceptable beginner 14

choices, but there are other more important factors to consider. A beginner fish should have these qualities: l T olerates a variety of water conditions, particularly the conditions during startup l Accepts a variety of foods, and are easy to feed l Does not grow to be overly large l Not aggressive l C ompatible with a variety of other fish (unless you’re creating a single species tank) Small schooling fish are generally good first fish, but take care to not add an entire school at once if the tank is new. If you want more than one species, do not start them all at the same time. Instead, build one school up before starting the next species. WOKINGHAM LOCAL • SEPTEMBER 2022


Tetras, for instance, are a schooling fish to avoid in any new tank. Most are more sensitive to water conditions than other fish, and often will not survive the initial start-up cycle. It’s generally best to wait until the tank is mature before adding Tetras. GOOD FIRST FISH Barbs: Cherry, Gold, Rosy, Ruby, Purple, and Tico Barbs are good. Avoid Tinfoil and Spanner Barbs due to size, and avoid Tiger Barbs because they tend to nip and be quarrelsome. Danios: Zebra, Leopard, and Pearl Danios are good. Avoid Giant Danios, due to their size. Rasboras: Harlequins and Scissortails are good choices. Catfish (some varieties): Bronze or Gold Corys, Spotted Cory, Bandit Cory, and Panda Cory, are good. Avoid Plecos unless you have a large tank or have a local pet shop that will take them back when they get too large for your tank. Rainbowfish: Boesmans, Neon, and Celebes are all good. White Cloud Mountain Minnows Although the list seems small, there is quite a variety to choose from. Once your tank matures, you can branch out into other species of fish. WRONG FIRST FISH If you are wondering why your favorite fish isn’t on the “good first fish” list, here are some popular fish that you should not add to your new freshwater aquarium. Catfish (some varieties): Many catfish are sensitive to the start-up cycle, or they grow too large to be good first fish. For example, the common Pleco is a hardy fish, but it grows to be very large. The Otocinclus is small but very sensitive to toxins that are usually present in a newly started tank. Goldfish: Goldfish are cold-water fish that produce copious amounts of waste, which means that they require a larger tank all to themselves; and yet, the proverbial goldfish bowl is not an ideal home for the goldfish. If you want a goldfish, give it a nice roomy tank of just goldfish. Live bearing fish: If you have children, you may be tempted to get live bearing fish. special conditions (most notably salt in the water) and are more susceptible to disease, they are not ideal first fish. If you do opt for live-bearing fish, choose one species only. AT THE FISH SHOP Now that you’ve decided on the species of fish, there is one more important step – choosing healthy individuals. When you go to the shop, don’t accept just any fish. Look them over carefully. Avoid fish with wounds or nipped fins as they are likely to be more susceptible to disease. Check the eyes; cloudy eyes are a sign of poor water conditions and or disease. Also avoid fish with sunken bellies, as they have been chronically underfed and may be suffering from a disease. 15

GETTING A PET Pets come in all shapes and sizes. From a 30g Russian Dwarf hamster to a 75kg Great Dane dog, people enjoy the company of these extremes and everything in between in their homes. But if you are new to pet ownership or thinking of adding to your furry family members, how do you choose which pet would be best for you?

Training a puppy to follow commands and behave in a reliable manner takes months of constant work which continues into adulthood. Are you at home during the day or will you need someone to check in on your dog or a walker to take them out? Cats and small mammals require less of your time but should still have dedicated time each day for play and interaction as well as feeding, grooming, cleaning litter trays and enclosures.

What space do you have?

Medium and large dog breeds need a decent size of enclosed garden to play and run around in. Is there enough room in your home for pet beds, toys, food and drink bowls, litter trays or even a hutch?

Who else lives in the household?

Here are some things to think about:

If small children are present or planned for, consider how different breeds of dog are likely to accept or fit in around them. In most circumstances cats are not happy about new puppies or kittens entering their household – although they will usually learn to tolerate them!

Dogs in particular need a big commitment of time. Healthy adult dogs should be walked for 30-60 minutes twice daily depending on the breed. Some breeds need a very active lifestyle, and you should be prepared to walk miles and miles with 18

Puppies can be very expensive to buy initially but the ongoing costs of a pet are more important to think about as these will be lifelong. For a medium breed dog, the initial set up costs are around £400 and ongoing is likely to be £75-100 per month. WOKINGHAM LOCAL • SEPTEMBER 2022


Unexpected veterinary care can add to this significantly and we always recommend people take out pet health insurance to cover these costs if they might struggle to find money at short notice. For example, emergency surgery and after care for a dog or cat with a broken leg or gut obstruction is likely to cost £2000-3000.

Should you buy a puppy/kitten or take on a rescue?

Buying from a breeder: Ensure they are a reputable and licensed breeder. Look for registration with The Kennel Club or Governing Council of the Cat Fancy. Check puppies or kittens have had the correct health checks for inherited diseases. You should always have the opportunity to see a puppy or kitten with their mother and other litter mates. Has it been socialised and used to living in a family home with sights, smells, noises, children and other pets? What is the temperament of the mother? Research the health problems that are more likely

to affect specific breeds like breathing difficulties, allergic skin disease, joint dysplasia and heart disease. Taking on a rescue pet: There are many rescue centres which import dogs from abroad to be rehomed. While these dogs do need someone to care for them, many are emotionally traumatised and need a lot of behavioural support and training to settle into their new environment. There is also a high risk of them having exotic diseases which need life long veterinary care. Before looking abroad, always check UK rehoming centres and charities. Want to dance down the aisle? Be my guest. Group singalongs are becoming very popular in celebrant weddings. One particularly moving ceremony featured a gospel choir singing ‘Oh Happy Day’ and the guests (and myself) couldn’t help but join in. It was a truly joyous and uplifting occasion. Of course, you may prefer a more understated ceremony, and symbolic elements can add a really personal touch whilst providing an opportunity for some of your guests and family members to join in. Many couples opt for a fairly traditional wedding ceremony with a contemporary twist – they write their own vows, include their children, and choose readings that they have a meaningful connection with. 22

On Your Bike! Avanti Cycling is a cycling organisation that delivers Bikeability courses in Wokingham schools and provides adult training, leads rides and gives advice. Cycling is a hugely enjoyable activity: you get out in the sun and gain complete independence from the restrictions of traffic and cars. It is cheap and fast. You get free exercise and enjoyment from the experience. We all love cycling both to get around and for pleasure. When we train children in schools it is a completely transformative experience for them. For the first time in their lives, they get asked to make their own decisions. Up to that time they have been told what to do and when to do it by parents, teachers and other adults. On a cycling course they can gain independence, learning how to make decisions on how to interact with drivers and where to go. It is an amazing experience for them and the instructors. 26

If you meet a group of children training, we apologise for any disruption to your day, but please drive normally, overtake where you can - children need to learn in realistic road conditions. Cycling instructors are an integral part of that experience. Teaching children is hugely rewarding and enjoyable. We get the children who really want to be on their bikes and want to learn. Children always return to their classes excited and having learnt lots. Instructors working for us are paid to do something they really enjoy, if you think you might be a good instructor please contact us - we’ll train you. BOATING ON THE THAMES

WHERE CAN YOU GO BOATING IN THE UK? As an island, us Brits are lucky enough to be spoilt for choice when it comes to choosing a destination for a beautiful boating holiday. For those experienced boaters who want to explore the coast, Falmouth (the UK’s premier seaport), Eastbourne (apparently the “UK’s sunniest town”), and Southwold (in the heart of the Suffolk Coast National Nature Reserve) are all popular choices. Caernarfon in Wales (the 13th century castle is a UNESCO World Heritage Site) and Islay (known as the “Queen of the Hebrides”) in Scotland also desirable locations. For those people looking for a gentler inland waterways experience, there are countless rivers to sail upon, as well as 96 canals, across England and Wales – however, for this article I’ll be focusing on my home turf – Thames boating holidays. CAN YOU BOAT ALONG THE THAMES? The Thames is just over 215 miles long – from the source of the river near Kemble in southern Gloucestershire, to the end, which is situated between Whitstable in Kent and Foulness Point in Essex. The non-tidal Thames, which is the distance from the source of the river to Teddington in west London, measures 147 miles. You can navigate the Thames from Lechlade in Gloucestershire. 30

DO YOU NEED A LICENCE TO TAKE A BOAT ON THE THAMES? If you want to cruise down the length of the Thames, or in fact any stretch, your vessel will need to be registered with the Environment Agency. This organisation oversees the Thames, as well as those rivers situated across East Anglia and the River Medway. As we are based in Wargrave, this is where our customers and visitors obtain their licences from. If you keep a boat on the Thames, you will need to renew your licence each year, however you can buy a visitor registration or licence for shorter periods, which is perfect for holidays. WHAT TOWNS AND VILLAGES DOES THE THAMES FLOW THROUGH? There is an abundance of beautiful villages and towns on the Thames that holidaymakers will be able to explore. Cricklade, Wiltshire: Cricklade is the first town you come across if you’re travelling down the length of the Thames – however, please note that this stretch isn’t navigable by motorboat, with river users normally opting for canoes. Known as the southern gateway to the Cotswolds, this town has been described as an “excellent base for walkers and visitors to the Cotswold area and Cotswold Water Park, which boasts 140 lakes”. Interesting fact: Cricklade was the home of The Royal Mint from 979 to 1100. Top pubs: The Red Lion is situated just off the Thames path and dates back to the early 1600s. Lechlade, Gloucestershire: The market town of Lechlade is situated at the southern borders of the Cotswolds where the Rivers Coln and Leach join the Thames. The town marks the first navigable point of the famous river. Interesting fact: Stones used in buildings such as St Paul’s Cathedral were transported from the quarries at Taynton to Lechlade, where they were put into barges and transported downstream. Top pubs: The Crown Inn has open fires and real ales – a perfect combination for cosy evenings. Kelmscott, Oxfordshire: Kelmscott is a very quiet village on the Thames, but it is steeped in history. St George’s Church dates to the 12th century, whilst Kelmscott Manor attracts thousands of visitors a year. Interesting fact: The Manor was described by William Morris as “Heaven on Earth”. Top pubs: The Plough Inn has a 4.5 rating on Trip Advisor for good reason. Rooms are available too! WOKINGHAM LOCAL • SEPTEMBER 2022

Radcot, Oxfordshire: One of the smallest villages on the Thames, but the bridge at Radcot is one of the river’s oldest crossing points. It was originally an old packhorse bridge on the main wool export route from Northampton. Interesting fact: Radcot was the site of a fierce battle in 1387. Top pubs: Ye Olde Swan is open daily with homecooked food and refreshments available in its cosy bar. Oxford, Oxfordshire: Oxford needs no introduction – it is home to the world-famous university and one of the UK’s most prosperous cities. Visitors will want to spend time viewing the amazing architecture, fantastic restaurants and independent shops. Oxford also incorporates the riverside community of Osney and the infamously low Osney Bridge. Those boats looking to pass under Osney Bridge should be aware that it measures just 2.28 metres or 7 feet 6 inches in height. Interesting fact: Oxford is known as the “City of Dreaming Spiers”. Top pubs: There are just too many to talk about! 31


Wargrave, Berkshire: This large village, listed in the Domesday Book in 1086, is just one lock upstream from Henley. Wargrave is also the home of Val Wyatt Marine – and our team loves the beautiful surroundings and sense of community. Interesting fact: The St George and Dragon was previously owned by the Wyatt family. In fact, the company first operated next to the pub, from 1845 until 1937. Top pub: Yes, The St George and Dragon – a great venue for after work drinks in the summer… Henley-on-Thames, Oxfordshire: A local website describes Henley as “one of the most beautiful towns in England” – and who are we to disagree? Henley is famous for its world-renowned regatta, being home to the Leander Club, and having a gold post-box (to commemorate Team GB’s rowing medals at the 2012 Olympics). Val Wyatt Marine is one of the nearest full-service marinas to the town. Interesting fact: Henley Royal Regatta was established in 1839. Top pubs: There’s plenty of choice, but The Anchor and The Three Tuns are popular. Marlow, Buckinghamshire: Marlow is a picturesque town on the banks of the Thames. If you are disembarking, you might choose to treat yourself to dinner at one of Tom Kerridge’s eateries – The Hand and Flowers or The Coach. Interesting fact: Marlow is the home of five-time Olympic rowing champion Steve Redgrave. Top pubs: There’s plenty to choose from but The Ship and The Chequers are recommended by locals. 32

Windsor, Berkshire: Sitting proudly in the heart of the town, Windsor Castle is the preferred home of the Queen. There are plenty of things to explore, including The Savill Garden, Windsor Great Park and Legoland Windsor Resort. Interesting fact: The Old King’s Head in Church Street bears a plaque recording the warrant for the execution of Charles I in 1648. Top pubs: You won’t go thirsty in Windsor, there are so many to chose from. Teddington, London: A suburb in south-west London, Teddington was named the best place to live in London by The Sunday Times – so it is worth a visit! Many people swim in the river during the summer. Interesting fact: The Thames measures approximately 100m in width at Teddington. Top pubs: The Sunday Roasts at The Abercorn Arms have won rave reviews. London: When sailing through London, you’ll pass through Hammersmith, Putney (watch out for rowers!), Battersea, Westminster, the City, Canary Wharf, the Isle of Dogs and Greenwich, before heading out to the North Sea. CAN YOU MOOR YOUR BOAT ON THE THAMES? Yes. If you’re boating down the Thames there are several short-stay and visitor mooring sites provided by The Environment Agency and other local authorities, which allows holidaymakers use of the local amenities. Most of the land along the Thames is private, and moorings may be made available by the relevant landowners. Five Minutes With: Jessica Cox ~ Jessica Cox Design Jacqui Priestley, owner and editor of Wokingham Local spends 5 minutes with Jessica Cox, entrepreneur and owner of Jessica Cox Design, a residential and commercial interior design company based in the South of England. WL: What inspired you to become an interior designer? Talk to us about the journey from starting out to becoming an awardwinning designer. JC: From a young age I was very interested in design, and it was after receiving a secondhand dolls house one birthday - I then spent all the time that I could redecorating and renovating the rooms and then rearranging the furniture constantly! This grew into a passion and after studying and lots of years of hard work it became my career, one which I absolutely love and feel very grateful to be able to do every day. WL: Were you artistic as a child? JC: I was always drawing, taking photos, and WOKINGHAM LOCAL • SEPTEMBER 2022

experimenting with crafting as a child (although I imagine some of the ‘projects’ are a bit questionable now) but it was all part of being creative and developing skills. Sketching and taking photos are a big part of what I do now, as well as occasionally painting artwork for clients if I struggle to find the right piece for a space. And crafting fancy dress costumes with objects from around the house is a challenge I’ll always gladly accept. WL: Tell us about a project or two from your portfolio that you’re most proud of and why? JC: I recently designed the space for the ‘Fiona Parry Boutique’ which is in Wokingham and part of the new development in Elms Walk. Being able to get to 37


know and help a local business transfer and develop into a shop space was amazing and I am so proud of how it looks now. It also helps that the clothes in the shop are lovely too – it makes my job easier when the merchandise looks so good! WL: What’s your most recent work been? JC: I have recently finished an agile working space at Bracknell and Wokingham College, a new café space that again was a project helping a first-time business owner, works on a new rock-climbing centre in Gloucester are well underway as well as transforming office spaces in London - and of course my many local residential clients too. It’s been a very busy time here at JCD! WL: What is your own personal favourite design style? JC: I think styles develop and change with time, naturally I am influenced by trends and new advances in the industry – but I will always try to be complementary to the environment and style 38

of property of each individual project, which I think is so important. Having said that, I will always try and incorporate natural textures, lots of greenery and some form of coloured velvet in most schemes – my coloured velvet sofas have become a bit of a trademark. WL: What do you do to relax when you are not interior designing? JC: Well, I am currently working on my own home renovation which takes up any spare time WOKINGHAM LOCAL • SEPTEMBER 2022


I do have – so it’s pretty much interior design all day, every day! I love it though and as much as it is my job it’s also my hobby so for me so I guess you could call it relaxing too (but remind me of that when I am next covered in concrete dust). Working on my own renovation projects gives me great experience for helping clients and puts me in the best position to advise on everything from digging foundations right through to hanging artwork in a finished space. WL: What do you like most about Wokingham? JC: Wokingham is a fantastic area – the mix of independent shops, restaurants and cafes is great and there is a such a lovely community feel. Everything you need for day or night all in one place – or as I like to say, from coffees through to cocktails! WL: What does the future hold for Jessica Cox Design, what is your ambition? JC: I would love to work on a boutique hotel project, with each room styled differently. Designing a hotel WOKINGHAM LOCAL • SEPTEMBER 2022

room is very different to a bedroom at home, the scheme can be bolder and more luxurious – as it’s a space that you aren’t in everyday, but for what is hopefully an occasional treat – and selecting all the different elements to help with this would be a challenge, but one that I would be excited to take on. It’s always been on my goals list ever since I started Jessica Cox Design and I am constantly saving ideas and photographing inspiration ready for the dream job! I would also really welcome working with local business owners to help create spaces that reflect them and their businesses. The importance of a well-designed space can never be underestimated, and is proven to increase sales and productivity, so working with a designer can really help achieve your goals. September the 16th is just around the corner, and this is how Mexican Independence Day is celebrated around the world... Mexican Independence Day is celebrated on September 16 by Mexicans and people of Mexican ancestry around the world. It falls on the same date every year, honoring the country’s fight for independence from Spain, specifically the moment a famed priest gave the “El Grito de Dolores” battle cry. Mexico’s War for Independence from Spain lasted for over 11 years, but September 16, 1810 is the date universally regarded as the nation’s Independence Day. No surprise, the festivities are remarkable and take place not only in major Mexican cities like Jalisco and Mexico City, but around the world. As one of the country’s biggest holidays, along with the Day of the Dead, and Revolution Day (which celebrates the Mexican Revolution in the early 20th century), Independence Day means massive street parades, dancing, plenty of signature dishes, and rodeos. Independence Day is observed nationwide, with schools and businesses closed in observance. Phrases like “Viva Mexico” or “Viva la independencia nacional” are heard from crowds on the streets.

Tasty, tangy, spicy – what’s not to love about Mexican food? Whether you want to enjoy an enchilada, or tear into a taco, Mexican is made even better when it’s enjoyed with a great bunch of friends. Here’s our most delicious Mexican food you can whip up for your next fiesta... You could ‘wing it’ with spicy chicken wings with corn salsa with quick smart nachos - ready in a flash - a great easy dinner combo!

Bacon & Cheese Jalapeño Poppers Ingredients

Method

2 1/4 tsp extra virgin olive oil, plus extra for shallow-frying

Step 1 Heat 2 teaspoons oil in a small frying pan over medium-high heat. Add bacon. Cook, stirring occasionally, for 4 minutes or until lightly browned and crisp. Transfer to paper towel to drain. Reserve 2 tablespoons bacon.

175g shortcut bacon rashers, finely chopped 1 garlic clove, crushed 250g cream cheese, softened 2 green onions, thinly sliced 1 tbsp finely chopped fresh oregano leaves 1/3 cup grated tasty cheese 20 fresh jalapeno chillies 1/3 cup plain flour 2 eggs, lightly beaten 1 1/4 cups panko breadcrumbs 1 cup plain Greek-style yoghurt, to serve

Step 2 Combine garlic, cream cheese, onion, oregano, tasty cheese and remaining bacon in a bowl. Season with salt and pepper. Step 3 Cut a slit lengthways down one side of each chilli. Open out slightly. Discard seeds and membrane. Fill each chilli with about 2 teaspoons cream cheese mixture. Close slit. Step 4 Place flour, eggs and breadcrumbs in separate shallow bowls. Coat chillies in flour, shaking off excess. Dip in egg, then in breadcrumbs to coat. Place on a large tray. Step 5 Pour enough extra oil into a large deep frying pan to come 5mm up side of pan. Heat over medium-high heat. Shallow-fry chillies, in batches, turning, for 3 to 4 minutes or until golden. Transfer to a tray lined with paper towel to drain. Step 6 Place yoghurt in a small bowl. Sprinkle with 1/4 of the reserved bacon. Drizzle with remaining oil. Transfer chillies to a serving dish. Sprinkle with remaining bacon. Serve with yoghurt.

Chorizo Frittata

This easy-to-cook frittata features a classic South American flavour combination of chorizo and potato. Ingredients

Method

1 (about 225g) potato, cut into 2cm pieces

Step 1 Preheat grill on high. Cook the potato in a saucepan of salted boiling water for 7-8 minutes or until tender. Drain.

1 tbsp olive oil 1 chorizo sausage, thinly sliced 1/2 small red onion, halved, thinly sliced 55g (1/4 cup) coarsely chopped chargrilled pepper 4 eggs 80ml (1/3 cup) thickened cream 25g (1/4 cup) coarsely grated cheddar 1 tsp fresh thyme leaves Mixed salad leaves, to serve Crusty bread, to serve

Step 2 Heat 2 teaspoons of oil in a 15cm (base measurement) non-stick frying pan over medium heat. Cook the potato, stirring, for 5 minutes or until golden. Transfer to a plate. Add the chorizo to the pan. Cook, stirring, for 2-3 minutes or until golden. Transfer to a plate lined with paper towel. Step 3 Heat remaining oil over low heat. Cook the onion for 8 minutes or until soft. Add potato, chorizo and capsicum . Stir to combine. Step 4 Whisk eggs , cream and cheddar in a jug. Pour over chorizo mixture and top with thyme . Cook for 8 minutes or until the mixture starts to set around the edges. Place frittata under grill. Cook for 3-5 minutes or until set. Serve with salad leaves and crusty bread .

Is it possible to consider Mexican food without immediately thinking tortillas? This family pleasing recipe for Mexican tortilla pies is a firm favourite. Keep this meal on hand for all those after school kids’ activites - and without creating more work in the kitchen!

Mexican Tortilla Pies

Ingredients

Method

1 tsp oil

Step 1 Preheat oven to 200°C/180°C. Spray a 6-hole, 3/4-cup capacity deep bun/ muffin tray with oil. Microwave tortillas on high for 1 minute or until warm. Press 1 tortilla into each muffin hole (overlapping tortilla on 1 side to fit). Spray with oil. Bake for 8 minutes or until golden. Cool in pan for 20 minutes.

240g packet flour tortillas 1 small red onion, finely chopped 500g lean beef mince 1 tsp chilli powder 1 beef stockcube 300g can Condensed Tomato Soup 420g can kidney beans, drained, rinsed 1 small carrot, peeled, grated 1/2 cup grated cheese Guacamole 1 large avocado, mashed 2 tsp lemon juice

Step 2 Meanwhile, spray a large frying pan with oil. Heat over medium-high heat. Add onion. Cook for 3 to 4 minutes or until softened. Add mince. Cook, stirring with a wooden spoon to break up mince, for 5 minutes or until browned. Add chilli powder and stock cube. Cook, stirring, for 1 minute. Add soup, beans, carrot and 1/3 cup cold water. Bring to the boil. Reduce heat to medium-low. Simmer for 10 to 12 minutes or until thickened. Step 3 Make guacamole. Combine avocado and lemon juice in a bowl. Season with salt and pepper. Step 4 Spoon mince mixture into tortilla cases. Dollop with guacamole. Sprinkle with cheese. Serve.

In today’s short article, I want to light a fuse in that amazing mind of yours and that fuse is the fuse of motivation and positive vibes. What do you want from the second half of 2022? What would you love to achieve that would change your life forever and the lives of your loved ones? I truly do believe that excellent things happen to people that do excellent things and that the habit of excellence is within everyone’s reach. You have woken up today and this magazine and article for whatever reason, have come into contact with you. What are you going to do with this moment? How are you going to let this moment create a ripple of positivity and momentum in your life moving forward? 48

Motivation is the push that gets people going and I truly feel that it is the start that stops most people. If you are reading this article and wanting more from life and feeling pumped to be the best version of YOU, then keep reading. I want you to take 5 minutes today and write down all the things you are most proud of and write down all the things that make you tick, that make you feel hyped for life and get you to jump out of bed in the morning. The list may be small, the list may be big, I don’t care… but what I do care about is that you realise you have so much to offer and that the world needs amazing people like YOU operating at your best. What does your best self look like? Have you been living your best life recently? What one step could you take right now to start that ripple effect? A ripple in nature is an amazing moment, life changes in that instant. What would happen if you made that choice right now to be better, to do better, to talk better about yourself, to make decisions that create lasting change for you and your loved ones moving forward? Do what you love and you will have the best life ever! My tips for living your best life all revolve around work/life balance, working hard but also playing hard whilst looking after your mental well being. I used to work in the corporate world and learnt the hard way all of my time and efforts were given to my company there wasn’t much time for me outside of work. As a child I used to have lots of hobbies, played the cornet, was a Girl Guide, participated in a local dramatics company singing and even ran for a local club, but when I started work and got married I dropped the majority of them. Life took over and I hadn’t realised I’d stopped doing things I loved for the sake of work. After many years I was at risk of redundancy and although I wasn’t made redundant it did make me realise that my whole life revolves around work and married life no hobbies/me time. Hobbies are a great way to help you live your best life you get a better balance. If you choose a hobby that you can lose yourself in it gives you the head space and reserves to deal with everyday trials and tribulations, whilst enabling you to switch off for those few hours that you are engaged with the hobby. I found fused glass did this for me, after a busy day I’d come home cut some glass become creative and do something completely different to the day job but also relax and unwind. My hobby meant I went out and met other fellow artists and also different types of people when at craft fairs. It helped grow me as a person and to become more confident and to plant a seed about my future and to start my dream to be able to teach others about the benefits of working with glass. BUILDING STRONG AND MEANINGFUL RELATIONSHIPS Throughout a 30 year corporate career I always struggled to find benefit in attending external ‘networking events’. Perhaps it was my introverted preference, perhaps it was because I found them fake, transactional and all I’d do is have a relatively meaningless chat over a cold cup of coffee with someone who just wanted to give me their business card. Or perhaps it was simply that there really wasn’t any benefit to me at that time. But I did network, it’s just I called it ‘creating relationships with key stakeholders’ instead. Within my network we would build common understanding and trust - leading to work across multiple teams being delivered quicker, easier and more effectively. It was clear that investing time in identifying and building these relationships would pay off, with an increase in stakeholder confidence, quicker problem solving and more efficient decision making. Wind the clock forward to the present day, and as a small business owner I knew I’d have to engage with external networking, so I shelved my ‘views’ and attended various business networking guest events. And it’s fair to say - ‘I’ve seen the light’ ! I’m now building strong and meaningful relationships with other small business owners, and 50

have very quickly learnt that a powerful network is essential to growing my business. So much so that I’m now part of a friendly, committed and motivated professional networking group that puts the emphasis on sharing, connecting and growing together – and having a bit of fun along the way! Business networking groups can differ greatly in their aims, and so it’s important to find the right one for you and your business. Networking, when done well, is the art of building and maintaining strong mutually beneficial relationships with others, based on trust. A network where you can learn something new, or where you can add value by sharing information or expertise that will benefit others. So, there is a clear benefit and power in networking. If, like me, the word ‘networking’ sends shivers down your spine then use a different word. But take time to identify who’s in your network and perhaps who you’d benefit from being connected with. MY LITTLE ARTIST These days my little scribbler has turned into a genuine artist. All those incomprehensible scribbles are taking distinct forms now, and he is busy drawing various cars, trucks and busses and colouring them all day. He draws race cars that are super flat to the road or have wing shapes in the back, and then the busses with extra wheels in the rear; some have flat fronts and some in L-shape. He observes something new in the vehicles outside, keeps that in mind and starts pouring it all on paper as soon as he comes home. Looking at his drawings, his aunt gifted him an extensive set of colour pencils. Here is the twist, though. The other day he used those pencils in a very different way. He arranged them in a circle to make a ‘sun’ and filled the inside with cars. Pretty creative for his age, I thought. He is only 4 years old. “Isn’t it beautiful, Mama?

Let me take a picture of it.” He said. In my mind, I am thinking, “Is he trying to copy me?” I am a photographer by passion and profession. And just as I would pick up my camera when I see something beautiful, he runs to grab his Daddy’s phone. He knew he needed to grow up a little to lift Mom’s heavy camera. And so the phone works. And then what he did really surprised me. He took pictures of his sun art that he made with cars and pencils; bending down on his knees; standing up from the top; turning around to get a different perspective; just like I would. That’s when I knew I had to capture this moment of his own life story in my shutter, I had just seen a glimpse of me in him, and I couldn’t be happier... Pranali Patil - Pranali Patil Photography
