Welcome to our February issue. The word February is derived from the Latin word ‘Februa’ which means cleansing and purification, and was associated with the Roman rituals undertaken before spring. I wonder if this is where we get the tradition of ‘spring cleaning’ from? It is probably now better known for Valentine’s day, and this year it is also host to the Chinese New Year. Although things can seem a little commercial these days, I found a quote from Charles M Schultz the American cartoonist of ‘Peanut and Snoopy’ fame, that seems to put things into perspective, All you need is love. But a little chocolate now and then doesn’t hurt. Charles M. et your hiking boots at the ready to take part in the inaugural ‘Walking With The Wounded’ fundraising fitness challenge! The Cumbrian Challenge 2013, supported by Helly Hansen, is a demanding 7-13 hour hike through the stunning Lake District countryside. ‘Walking With The Wounded’ raises money to fund the re-training, re-skilling and re-education of wounded service personnel to enable them to find long-term civilian employment and for their first public event, participants are asked to raise vital funds. The event will take place on 18th May 2013 in Glenridding in the Ullswater Valley, where teams of four will be faced with the option of two routes to cater for varying
levels of physical fitness. ‘The Tough’ - a 20k hike over 5 peaks or ‘Tougher’ - a 33k hike over 10 peaks. Whilst trekking amidst the stunning scenery of the Lake District, participants will get to meet and race against the wounded teams from the North Pole, Everest and 2013 South Pole expeditions. Register a team of four for £400 and take up the challenge of competing against inspirational wounded servicemen, make new friends and find out more about what it takes to take part in ‘Walking With The Wounded’ expeditions, in addition to raising essential funds for the charity’s reeducation and training programmes. The minimum age of participants is 16, but each team must include one adult of 21+. The team entry fee will include:
• Food on both Friday and Saturday evenings • A technical training T-Shirt from Helly Hansen • All event administration • Route marshals • Water stops en route • Mountain rescue team support • Suggested training, food and required kit information. ‘Walking With The Wounded’ also ask that participants undertake some fundraising for the Charity, and that each team raises a minimum of £1000, equating to £250 per team member. Around 45% of us will be making new year resolutions this January, but how many of us fall short and throw our resolutions out of the window? One of the most popular resolutions is to lose weight and improve health and fitness, but only 8% of people actually reach their target. This 2013, make your resolution stick! If you are planning on making a new year resolution to improve your health and fitness or lose weight, then starting by setting a realistic goal will help you stick to your resolution. This goal can be as simple as walking up the stairs without feeling breathless, or swimming the length of Lake Windermere. All of us have something we would like to achieve, so pick a goal that is specific and important to you, and one that will keep you motivated. Use these 3 top tips to help you achieve your goals in 2013:

When you have a goal in mind, ensure it is achievable and realistic. This is one of the main reasons people are unsuccessful with resolutions. If your long term goal is to run a marathon, start by setting yourself a 5k or 10k challenge, so the eventual goal doesn’t feel too far away.

Setting yourself a time scale or deadline can help to keep you on track. You would need at least 6 months to train for a marathon, but 2 months to healthily lose a stone in weight (2lbs a week). Also, keeping the goal exciting and refreshing will keep your motivation high. If you plan to join a gym, make the most of the classes available. This will keep your workouts new and invigorating, giving you the enthusiasm to continue.

Keep a record to measure your progress. Take figure measurements before starting a weight loss plan, or time how
long it takes you to walk/run a mile to see your fitness increase. Having a starting base line and taking measurements every 6-8 weeks throughout your resolution, will give you tremendous encouragement to continue with your final goal. With these tips in place, success will be yours! Always remember your final goal. Even on a bad day when you struggle to get out of bed and stay motivated, keep a mental image of achieving your goal and how this makes you feel. Good Luck!

Spa Review The Macdonald Old England Hotel & Spa The Macdonald Old England Hotel & Spa is located in the centre of Bowness on the shores of Lake Windermere, offering breathtaking views. The hotel combines traditional charm with exceptional facilities, such as its Spa which at just eight years old is a relatively new addition to this impressive 4* hotel. I was lucky enough to experience their new signature treatment, the Forest Pine Herbal Body Wrap. This treatment by leading British spa & skincare brand, Elemis, was developed exclusively for The Old England. This fabulous treatment is a welcome addition to the already impressive spa menu. I was checked in by the spa Manager who was extremely friendly and efficient, he directed me to the changing rooms where a luxurious robe and slippers awaited me. After changing I was taken to a relaxation room with a tribal inspired décor which was fabulous. As I sipped herbal tea and delicious homemade shortbread my lovely therapist came to meet me. She took me to one of the many spacious treatment rooms, which as you would expect was dimly lit offering a sense of calm and had relaxing rain forest sounds played at just the right volume. I was already entering a state of relaxation and the treatment hadn’t even begun!

abdominal breathing techniques, I’m sure that was achieved! Next I was body brushed, this boosts circulation, increases lymphatic drainage and the absorption of oils and exfoliate dead skin cells.

Lakeside Hotel Perfectly positioned on the southern shore of Lake Windermere, the Lakeside Hotel has views as delicious for the eye as the mouth-watering menus they offer. Welcoming staff greet with a smile and will happily show you around the restaurant, answering any questions you may have about the different eating experiences they provide, from bar food to a 5-course dining extravaganza. The hotel itself features some of the original 17th century oak panelling and timbers, mixed with strong vibrant colours and modern touches, rendering it a place to take time to explore. My favourite area of the hotel has to be the spice room, with its bright warm colours and large circular table; perfect for a family gathering or small wedding group! The clear sky over the water in the conservatory facilitates a calm and relaxing place to dine. With a well thought-out menu, the only stress you might encounter will be deciding what to order. We opted for the Braised Shin of Galloway Beef and a Lakeside Club Sandwich. The basket of freshly baked bread and soft butter curls brought to the table was delicious. I could easily have eaten more. However, I had to

leave room for one of their many tempting desserts! One mouthful of the perfectly cooked beef and medley of celeriac, carrots and swede had me hooked. Add to that pancetta and the creamiest mashed potato, served in the cutest copper saucepan, and it was enough to make me clean my plate quite happily. The balsamic dressing, peppery rocket and sweet smoked bacon on the classic club sandwich gave it a modern twist. Elegantly served with handcut chunky chips, this was more than just a sandwich. It was a tastebud tingler and very satisfying. For dessert, we ordered the pannacotta and a layered chocolate mousse and were not disappointed. Served with a poached pear, pear bomb and pear crisp, the pannacotta was perfectly flavoured. The combination of layered chocolate mousse, orange polenta biscuits and fresh raspberries made the mousse an indulgent yet light and refreshing pleasure to eat. The cafetiere of fresh coffee and homemade shortbread biscuits finalised a wonderful lunching experience. I look forward to sampling the Sunday Roast!

Gingerbread has often been associated with love and Valentine’s Day. Gingerbread became so well liked that in 1598, Shakespeare mentioned it in his play Love’s Labour Lost: “An I had but one penny in the world, thou shouldst have it to buy ginger-bread…” The Victorians in particular were fond of expressing their Valentine sentiments on gingerbread shaped into hearts. Of course we have our own local Grasmere gingerbread but since the recipe is a closely guarded secret, why not try this one?
VICKY’s VALENTINE GINGERBREAD HEARTS 255g/9 oz plain flour 2 level teaspoons powdered ginger 175g/6 oz butter 175g/6 oz soft brown sugar Sift the ginger into the plain flower and mix in the sugar Rub in the butter Kneed to form a smooth paste Roll out thinly and shape using a heart shaped pastry cutter Place on a greased baking tray and bake in a warm oven, 160 C, for about 20 minutes until firm and brown. Allow to cool in the tin then ice and decorate.

T
here is very little in the global calendar of festivals that can rival the colour, passion, noise and sheer spectacle of Chinese New Year. This year, the festivities begin on 10th February 2013 and the ‘Year of the Snake’ will chase out the ‘Year of the Dragon’. The ‘Year of the Snake’ may not sound particularly appealing to us in the West, but to the Chinese, a person born in the year of the Snake in the family is auspicious and a good omen. A snake in the family means you will not starve as these people are said to be good at business and self-sacrificing. They are also keen, intelligent, wise, intuitive, introspective and refined. However, while they can be exciting, they also have a dark side – so watch out snake lovers! Snakes are not overly emotional. They can appear cunning and reticent and are not always great communicators. You are a snake if you were born in the twelve months after Chinese New Year, in 1929, 1941, 1953, 1965, 1977, 1989 and 2001. Chinese New Year is also known as Spring Festival or Lunar New Year and although its origins are not clear, what is certain is that it is a very old celebration, dating back at least 4500 years, and one that started because of superstition and fear. The story, as it was handed down through generations, tells of a terrifying monster that went by the name of Nian (meaning year). Every winter, Nian would become ravenous and leave the sea to feed on people, two or three at a time. This monster, with the body of an ox and the head of a lion, also killed farm animals and harmed property. One day, a wise old man persuaded his village that the monster was scared of the colour red, the appearance of fire and loud noise. From then on, the people of China celebrated every New Year’s Eve as the ‘passing of the Nian’ and were able to vanquish Nian by lighting lanterns, decorating their houses and streets in red and gold, and setting off fireworks. So, fireworks are an important part of Chinese New Year. Fireworks were invented in China approximately 2000 years ago. Initially, ‘crack’ bamboo was used, which produced a loud cracking noise when it was thrown on the fire to drive away evil. Later, around 1232, the Chinese experimented with gunpowder filled tubes which they attached to arrows and launched with bows. But, they soon discovered that gunpowder tubes could launch themselves if set alight, when they produced even more noise and fire! Another important tradition for the Chinese is a lavish New Year’s Eve dinner of many courses, which reunites friends and family who have travelled from afar. The food, including fish, pork and chicken, tends
to be symbolic. Nian gao for example, is a sweet sticky rice cake made in layers representing a sweet life in abundance. Noodles signify long life and are not supposed to be cut up. Clams and spring rolls lead to wealth, whilst whole chickens are served to represent family togetherness. Another tradition you might recognise, is currently being screened on television as an advert by a wellknown bank. Red packets or envelopes containing money are given to the young by older adults. It is believed that red envelopes suppress evil within children and ensure a long, healthy life.

They hold parades and public celebrations all over the country with the largest of these being held in London, Leeds, Birmingham, Sheffield and Manchester. This year, the Manchester celebrations, renowned nationally for their character and size, will take place on Sunday 10th February in Chinatown and around Faulkner Street, where they promise to be a riot of colour and noise with a fabulous firework display in the evening. In 2012, it is estimated that 70,000 people joined in the celebrations, sampling the street parties and family friendly atmosphere, in addition to enjoying the fairground rides, the market stalls, authentic food, street performances and the 175 foot paper dragon weaving its way from Albert Square to Chinatown. This year, there will be even more spectacle as it is promised that the lion dance will be the most impressive ever performed in the UK. The bright eyes, shaggy-maned, ornately decorated lions which dodge and dance to percussive music are intended to summon good luck and fortune. They chase away ghosts, evil spirits and Nian. If there is any part of the past twelve months that you would like to have banished, then attending the celebrations for Chinese New Year in Manchester is an absolute must. Chinese Recipe: Quick and Easy New Year Rice • Measure out enough rice for the number of meals required • Measure one and a half times the water. • Fill a roomy saucepan with the rice and a teaspoon of salt. • Boil furiously and then turn right down and cover (for dry rice) or leave uncovered (for sticky rice) for approximately 8-10 minutes. Stir only with a metal fork. • Add a cupful of frozen peas and boil for 2 minutes. Do not rinse. • Heat oil (peanut or sesame is best but you can use sunflower) in a wok or large frying pan. • Stir fry bacon, chicken, pork or prawns until cooked through and crisp. Add peppers, mushrooms, onions or any other vegetables you would like to use, along with some garlic and a tablespoon of Chinese 5-spice. • Beat two eggs and pour into the pan. Stir as they set. Add the rice and toss everything together. Add soy sauce to taste. Enjoy!

Adding tactile soft furnishings such as faux fur, silks, satins, velvets and lace will work best with the addition of a few personal well chosen romantic accessories such as art you have chosen together or photos of your special memories. In terms of scheme colours our advice would be that if you like light and bright you can’t go wrong with gold, white and rich creams but for a real feeling of real romance use deep jewel tones of reds, purples and green that say passion and excitement or black
and dark greys for a deep and moody atmosphere. If you have time other furnishing style tips include spending time together to source an eclectic mixture of gorgeous second-hand and antique furniture pieces to sit with modern. Anything in a French style works and luxury bronze or gilt finishes, creams painted, black gloss or shiny silver are perfect. Whatever you choose furniturewise, adding a chaise longue or statement upholstered arm chair will most definitely set the tone of romance within your bedroom. Glamorous screens are right on trend this year and a great way to divide and create sections to a room as well as a fun way to tease your partner. It is also a useful piece of furniture if you are

not that confident in getting undressed in front of your date! If your bedroom is smaller than you would like then a simple touch is to add a beautiful framed mirror to reflect light and add depth to the room. A full length dressing mirror leaning against the wall is our recommendation but to make best use of mirrors carefully place candles of all shapes and sizes to reflect flames into the room. Well thought out lighting is an essential starting point when thinking about redesigning or improving your room with romance in mind, ideally choose dimmable and soft lighting options with a switch next to the bed or some feature bedside table lamps either side of the bed if you love that exclusive hotel feel. Lighting helps to get the ambience right and is essential to getting you in the mood for romance. For a quick installation a set or two of fairy lights can give the room some twinkly magic without breaking the bank balance. To make your room cosy and to keep the warmth in and the light out great window dressings are important. Use plush fabrics and luxurious deep colour tones ideally and use curtains which are weighty and interlined to stop the light peering in so you can go from day time to play time with a swish of the curtains. Sheer fabrics will also give the room a soft and inviting atmosphere and are a brilliant alternative to expensive curtains, giving you the freedom to layer colours to match and co-ordinate with your room scheme. If you do nothing else a good
quality mattress and some luxury bed linen are a great place to invest. Try a bit of Feng Shui and create some environmental harmony by having a move round in your room. Particularly bear in mind the bed position and if possible place it so it doesn’t directly face the door as it gives a feeling of being exposed. If you have a bit of a budget and are wanting something really special for your cosy evenings in then why not look into a wood burner installation or some of the fabulous electric versions on the market. Matching the dressing of your window with the dressing of your bed really helps create a finished hotel style look. Again use deep rich tones of red silk, velvet and satin fabrics for layered throws on the bed for that added extra comfort. Lots of different shades in the colours of romance, love and passion work best. Maybe add a canopy or curtains above the bed for added luxury. Heart shaped velvet and silk cushions, scented decorations and glass trinket boxes will accentuate the look of love within your home. Pile your bed high with a variety of shaped boudoir cushions to provide a sensual centre point for the room and don’t worry about them not matching as a mixture of
shapes, styles and patterns looks better than straight lines. Flooring wise, we would recommend a deep-pile shag carpet but if your budget doesn’t allow this, then a rug is a cheaper and just-as-sexy alternative. To indulge your senses we recommend purchasing some sensual fragrances by way of a perfume lamp or incense to permeate the room with delicious scent, we would advise to use evocative vanilla and cocoa or aroma of jasmine, cinnamon, ginger, rose and patchouli, all reputed aphrodisiacs! For those final boutique retreat touches, add a vase of red roses either side of your bed on the bedside tables, along with a few delicately placed rose petals on the bed, some champers, of course a box of delicious chocolates and a compilation of well chosen tunes and there you have it. This month 3CA’s, Stuart Jones gives some food for thought on the year ahead To me, February is the start of the New Year - an idea many business owners will share. It’s difficult to celebrate the New Year when you haven’t filled in your tax return and you have a large tax bill to pay at the end of the month! Hopefully, all that is behind us now and we can carry on with the rest of the year. Looking ahead though, I believe 2013 will be a better year for small businesses. Public concerns about multinationals and their tax avoiding antics should feed through to small business both in extra sales and better treatment by politicians, both nationally and locally. But we cannot just sit back, cross our fingers and wait for this to happen. Years of recession have
eroded the optimism we all had when we set up in business. Worse still, attitudes at the top trickle downwards. Too many opportunities are missed because of poor service and inattention to detail. I’ve lost count of the number of times I’ve been undercharged in pubs and restaurants or walked next door because the staff have been “too busy” to serve me. New Year’s Day is my birthday and we were staying in our caravan in a holiday area (not the Lakes). My wife phoned 20 pubs/restaurants to book an evening meal but they were either closed or not serving food on New Year’s Day! Eventually, she found one. When we arrived it was packed. The demand is obviously there. Success isn’t about cost
cutting; it’s about selling more and making more profit. If you’re not open or don’t stock it, you won’t sell it. And, as it’s the New Year it’s the time for resolutions. Why not base them around changing our business attitudes for the good? Brushing up on winter driving with Kankku
I have seen the orange Kankku 4x4s around a lot over the years but I arrived at the office in Windermere uncertain what to expect other than I was about to have an off-road winter driving experience. What I got was a superb lesson in safer driving as well as having a lot of fun in the process. I was met by Nick who owns the Windermere Autocentre as well as Kankku and step one was a reminder of some of the basic winter driving tips. We all know most of these but it is worth remembering to check the anti-freeze, windscreen wash, lights, battery and wipers. Your battery is more likely to fail in these temperatures, as are your windscreen wipers so keep them in good working order. Importantly – check your tyre tread. Whilst 1.6mm is the legal limit and that is fine in dry weather, in the wet and particularly winter conditions, you need at least 3mm. So far, so good. No surprises there. Then it stepped up a gear. Apparently putting winter tyres on an “ordinary” car will give about the same performance as a 4x4. Winter tyres are recommended below 7 degrees centigrade and there are places (including

the Autocentre) that will store your tyres for you between winter and summer. The difference between normal and winter tyres is not the depth of tread but actually the compound the tyre is made from. Winter tyres have more “give” in them that helps them grip. Then a question that seemed bizarre. Do you know how your vehicle works? This is not about how the indicators or satellite navigation work or where the oil goes but actually how your car distributes power. It may not be how you think it does, even in a 4x4. It does not necessarily follow that power goes to the wheels that have the most grip. In fact in some cases

it is the opposite so you have to control what your car does with the power it has whatever the conditions. So much for theory. Then it went to a practical demonstration in a Land Rover Defender propped up on a jack in the Autocentre. If I had not seen how the power/wheel distribution worked I do not think I would have believed it. How to test it? We headed off road near Tarn Hows to put the Land Rover (and me) through its paces. This was educational but lots of fun too. Kankku do not just do great off-road experiences but offer really skilled driving courses that improve your driving skills and knowledge. As I tackled icy slopes up and down 09 27/1/09 15:43 Page 51 I learnt how to use braking and accelerating at the same time to really tighten control of the vehicle; how to accelerate in some instances when the vehicle is sliding; how to use the “diff lock” to its best effect and even how to driveKankku uphill by just being in gear and not Customer Name: Ad touching the accelerator. the time I stayed in control, I could handle all these situations with the expert advice I was being given. But it was with a knowledge that an hour before I did not have. The instruction was excellent and I left the Kankku experience feeling I would be a much more informed and therefore better driver in difficult conditions as a result. I had not expected to learn so much. It was not just a fun off-road experience but a learning one as well.

Let the wind blow through your hair this Summer with Jaguar’s new soft top
The New F-TYPE Jaguar (by Tom Harrison) More than 50 years after the ‘E-TYPE’ took the world by storm, Jaguar is finally ready to launch its twenty-first century successor…..The ‘F-TYPE’. And you can understand why it has taken Jaguar so long to plan a successor to the car so mesmerising that Enzo Ferrari himself labelled it “the most beautiful… ever made.” Ian Callum, Jaguar’s chief designer, has been tasked with this ambitious project and is reluctant to make comparisons to the E-TYPE. This is a new car and Jaguar wants people to know that. Scheduled for manufacture early next year, the F-TYPE is a two-seater sports car designed to deliver a pure and exceptional driving experience. Visually, it looks stunning. A new design for the traditional Jaguar convertible sports car with sharper, cleaner lines and featuring a deployable spoiler and door handles. The interior is smart and sophisticated, yet sensible. Designed like a cockpit, all the controls are logically grouped for the driver’s convenience. The F-TYPE is available in three models: The Standard, the Sport, and the V8 S. Both the Standard and Sport are powered by Jaguar’s new 3.0-litre V6

supercharged petrol engine in 340bhp and 380bhp respectively. For those who want something with a bit more edge, then the V8 S model comes with (as you might expect) a 5.0-litre V8 supercharged petrol engine, producing a staggering 495bhp! The V8S reaches 60mph in 4.2 seconds, with a blistering top speed of 186mph! Its ‘Intelligent Stop/Start’ system is another great addition. When the car comes to a halt and the driver’s foot is placed on the brake, the engine shuts down, immediately restarting once the brake is released. If the engine is shutting down and the driver needs to move again, the ‘change of mind’ function allows the driver to carry on as normal.
