Local boy has life changing operation in the US
Following on from our story about a local 5 year old boy with cerebral palsy who was flying to America for life changing surgery called Selective Dorsal Rhizotomy. The operation was performed successfully in May by Dr. Park at St. Louis hospital in Missouri. The operation provides children with the ability to walk, permanently reduce spasticity and have flat feet. Emre Souleiman was tip toeing like a ballerina unable to walk or stand independently and using a Kaye walker and just dragging his feet. Since the operation he is walking properly with an assisted device until his legs build up more strength and the Dr. Park has given a prognosis that Emre will walk independently within 6 to 12 months. This is amazing in itself. This technique is not available in the UK and so three to four British families a week are going to America to have this operation done which costs £28,000 however with travelling, hotel and physio. LOCAL CYCLISTS SADDLE UP FOR TOUR DE FRANCE ADVENTURE
Local adventurers Liz Gouldie and Dulcie Buckenham from the Wellington in Old Welwyn are preparing to get on their bikes and cycle more than 470km from London to Paris on one of the greatest cycling experiences in Europe for Macmillan Cancer Support. The 4-day challenge from 17-21 August will see Liz and Dulcie passing through the picturesque Kent countryside, across the Channel and continuing through the medieval market towns of Northern France. They’ll pass the famous battle grounds of the Somme and Agincourt and finish at the majestic Eiffel Tower. Dulcie says “I’m really looking forward to the challenge of cycling through such amazing countryside, whilst also doing my bit for such a worthy cause. I decided to take part because my experiences of working as a dietician with patients with various types and stages of cancer have given me an appreciation of the phenomenal support provided by Macmillan. We hope to raise more than £3,000 At least 65% of all money received will benefit Macmillan cancer Support, the balance being spent on the costs of the participant’s trip. 100% of any sum raised over £1400 per participant will benefit Macmillan cancer support. Variety and Horse riding The fun in Marilyn Tuck’s work is the variety. People see her for all sorts of things: snoring, teeth grinding, and sleeping; flying, needles, thunder and claustro phobias; finding, mending and improving relationships; and, as she mentioned before, emotional stressy stuff that brings on anxiety, anger, sadness, comfort eating, drinking and smoking. Often entwined these can be unpicked and leave a person really pleasantly changed within a few weeks, or a few months. The trick is motivation, want to do it, ask for help, and then let it happen.
I
love working with sports and creative people too. They so know what they want to improve. Whether it be a better lap time, a more consistent round of golf, a new technique, dealing with self-consciousness during a performance, a higher note sung, focus to finish a book… there is so much fun in helping them achieve. This brings me to horse riding. I admire people with horses, they have the tenacity and figures to prove their daily commitment and responsibility. However, I do have riders come who have lost confidence, are scared, anxious and not riding. They are thinking about 6
having to sell their horse, and yet they really want to ride. Jo was one such person. Her lovely, patient, horse was spooked one day, and took off. She couldn’t stop him. It was really frightening, she very nearly fell off. After that she was fearful about riding him out on her own. That was three months ago. As well as acute anxiety she also felt guilt and anger that she hadn’t controlled him. Someone at the stable had been to see me about her fear of cantering and was really appreciative of the results. She and Jo talked and Jo gave me a call. I always take the time to get the
full picture. Jo was all tense. We needed to release some negative tension and started the process with some tapping on her energy lines. EFT (emotional Freedom Technique) works a treat for emotional release. She came back for her second session and reported how much calmer she had been, including a riding lesson that went really well, some unusually calm behaviour at home and at work. She was feeling pretty pleased with herself already. In her second session we dealt with the horse incident and this brought up another anxiety issue from way back. She felt the release and it felt good. She once again left smiling. I was proud of her, she was ready for this. Hypnotherapy followed a week later and she was able to go riding afterwards on her own and feel more in control. Our next goal is to deal with her fear of riding without stirrups. I have no doubt that her new confidence will ensure she enjoys riding, and over time various other things she hadn’t even anticipated will improve too. This is such positive work! The Station
This month we revisited the Station Knebworth.
A
rriving on a Tuesday evening around 7.30pm to sample the food.There were people outside playing Pétanque and a few tables of people inside dining and enjoying a drink.We were met by Kim who made us feel at home and showed us to our table. I started with West Country Crab Cakes in Coriander Breadcrumbs with Red Pepper & Chilli dipping sauce and a Dressed Salad Garnish. These crispy cakes were stuffed with tasty crab meat inside and the spicy sauce was a perfect compliment without being too hot. My friend Adam had the Home-made Duck & Hoisin Spring Rolls with Spring Onions and Hoisin Dipping Sauce. The rolls were of good size, packed with duck and the sauce was thick and full of flavour. Both starters were well presented and a great start to the meal. For the main course I had a 14oz Bone-in Rib Steak cooked Blue with Skin-on Chips, Onion Wings, Watercress, Grilled Plum Tomato and a Field Mushroom.The steak came
out cooked just as I asked, it was a big and tender piece of meat and I was offered a sample of three sauces to try - Green Peppercorn & Cognac, Classic Béarnaise and Portobello Mushroom & English Mustard Diane, although all three were delicious the Mushroom and English Mustard Diane was a favourite for me. Adam had Chicken & Prosciutto from the choice of specials - a chicken breast stuffed with goats cheese, sun dried tomatoes and spinach, wrapped in prosciutto and served on Rocket Mash with a Tomato and Herb Dressing with Pesto.This dish was beautifully presented and offered a fantastic combination of flavours with the chicken. Although we were stuffed, we left a little room for pudding which was an easy decision to make - the Pub Pudding Sharing Board offering Three scrumptious puddings on one board:White Chocolate & Pistachio Cheesecake; Sticky Dark Chocolate & Walnut Brownie and Waffles with Raspberry Compote, a small jug of cream and two small bowls of
ice-cream.The brownie and waffles were warm and went really well with the ice-cream, the cheesecake was also delicious.This was a pudding of epic proportions, amazing value at just £6.25 and would make a suitable desert for a family of four to share. It is great to see how Kim and Peter are settling in and how their passion and enthusiasm has spread to their staff who really looked after us. They have created a really welcoming, family atmosphere and the quality of the food is unbelievable for the price. Starters range from £2.95 to £3.95, main dishes from £5.95 to £12.95 and you can enjoy 2 meals for £8.95 all day from Monday to Friday from a selection of 9 dishes. stablished in 1982, Acoline Water Softeners is an independent family run business that sells, maintains and repairs Water Softeners and drinking water filters.The business was setup by the parents of Graham Wilkes. At the age of 14, Graham started helping his parents with the business at weekends and school holidays. Hard water costs more in soaps, detergents and shampoos as it is harder to lather and clothes become dull and lose their bounce. It also leaves unpleasant scum tidemarks in baths and sinks and on dishes. Softened water can greatly improve certain skin conditions such as eczema, psoriasis and dry skin. Both skin and hair will feel softer and hair will be left shinier and more manageable.The elements in your kettle and dishwasher will shine like new and you will spend a lot less 18

Cod & Pancetta Fishcakes with Catalan-style Spinach Salad
This beautiful, healthy fishcake recipe is great all year round, but benefits in summer from seasonal produce. The salad; a superstar dish in itself is a delicious marriage of Spanish ingredients which packs a punch of flavour and is easily my favourite salad dish. Serves 2. PrepARATION: 70 minutes. Cooking: 15 minutes. Fishcakes 3 large Maris Piper Potatoes 400g Fresh Cod fillets 100g Pancetta (or cooked bacon lardons) 2 Spring Onions ½ Lemon 1 Stick Lemongrass 1 Pint Milk 3 Eggs 4 slices Seeded Brown Bread Salt & Fresh Milled Pepper 4 tbsp Extra Virgin Olive Oil Salad 200g Fresh Spinach 60g Raisins 1 Red Apple 1 tbsp Extra Virgin Olive Oil 1 Fresh Red Chilli (optional) 30g Pine Nuts Accompaniment Fresh Chives Crème Fraiche Lemon Wedges 22
First, boil your potatoes and make a mash. Don’t season or add milk, nor worry if it’s not completely ‘lump-free’. Season the fish and place in a baking dish. Poach in the oven with the milk at 180 degrees for 20 minutes. Finely chop the Spring Onions, Lemongrass and Pancetta and put in a mixing bowl. Once cooked, allow the fish to cool, drain off the milk, remove the skin and flake into the mixing bowl. Add the mash and mix together with the juice of half a lemon, a few pinches of salt and freshly milled pepper. Zest a little of the rind into the mix as well for a deeper ‘lemon-ey’ taste. Whisk 3 eggs for 30 seconds, toast the bread, cool and blitz in a blender to make crumbs. The seeds in the bread will add a good crunch and won’t absorb as much oil. Divide the mix into 6 fishcakes, breadcrumb by dusting with flour, dipping in the egg, and then coating in breadcrumbs. Heat the Olive Oil on a low heat in a shallow pan and brown fishcakes either side. Remove from the oil, pat with kitchen paper to remove excess oil and bake in the oven for a further 6-8 minutes. To make your salad, remove the seeds and chop the chilli as small as you can. Use your discretion with how much you use; you don’t want it to be spicy, but if used in the right quantity, chillies can emphasise the flavours in any dish. Warm the oil in a saucepan, add the Pine Nuts, chopped Apple and whole Raisins. Throw in some chilli. Mix Crème Fraiche with chopped chives and a squeeze of lemon and put in a dipping pot. Here comes the important part... Remove from the heat completely; make sure the rest of your dish is ready and add the spinach to the pan. Mix quickly so that the Spinach heats, but does not wilt and reduce to nothing. Build in a deep dish with the fishcakes on top, a dollop of the Chive Crème Fraiche and a wedge of lemon.
