As we write this in mid April, we have been lucky with some fantastic weather and the Summer is just around the corner now! This month we have some great features for you to read about local businesses, we visit The White Horse in Old Welwyn and we hear about the Whitwell Steam & Country Fair, a fantastic event in June for all the family. We are very sad to report that Liam Kerrigan and his parents will no longer be running Saveur Restaurant and The Rustic Pub Co, we wish them well and we will hear from Liam next month. LIFE CHANGING OP FOR FIVE-YEAR OLD ONLY AVAILABLE IN THE US! Mrs Feray Souleiman, from Broomans Park, has a five-year-old son with Cerebral Palsy-Spastic Diplegia. In May he will be going to America to have a life changing operation which will hopefully enable him to become independent and one day walk. As a parent, Feray is looking at all the options possible and doing as much research as possible to give her son the best possible chance in life. The operation is called Selective Dorsal Rhizotomy and is done at the St Louis childrens hospital in Missouri. This operation is not available in the UK and on the NHS as they are still examining whether it is economically viable even though there is proof that it is. They do approximately between 3-6 a year here which is privately funded by the family yet, in America, the renowned Dr. Park is doing three a day. So many children have benefited and had their lives changed by this, you only have to look on YouTube to see the before and after videos. Feray contacted us to raise awareness of this operation. Parents whose children have had or who will be undergoing the procedure will be collating a petition and presenting it to Downing Street in the hope that they will review the availability of this operation for children. I wish i hadn’t eaten thaT! Maria Cross has been a practising nutritional therapist since 1994 and has a masters degree in Public Health Food and Nutrition. Over the years she has seen thousands of clients in consultation, and been a lecturer and tutor on the nutritional therapy degree course at the University of Westminster. Her first, coauthored book, Nutrition in Institutions, was published in 2009. Maria’s new book, I Wish I Hadn’t Eaten That, is based on her experiences as a nutritional therapist. It is aimed at people she describes as ‘Perfectly healthy but not very well’, that is, people who are technically healthy but still have a wide range of symptoms ranging from acne to insomnia, from low energy to weight gain. It gives the reader the tools to help identify what might be causing those symptoms, and a guide to making the dietary alterations necessary to achieve total wellness. Do you worry? Last month I talked about anxieties and how they can turn into panic attacks. This resonated with quite a number of people. At the other end of the anxiety scale is worrying.

P

eople who are worriers worry about their school, their job, their kids, their parents, their past and their future. They think ‘what if this happens’ and ‘what if that happens’ and all sorts of other ‘what if’s’. Often they lack confidence and decision making skills. Recently a girl came who loves riding but since she’d had a fall she was worrying unnecessarily. What if she was riding and something frightened him, what if she was on her own, what if she had another fall. She was an experienced rider, she knew the 6

horse had the loveliest temperament and had never bolted before. She knew that at the time it was just an unusual circumstance, but she couldn’t help it, she was worrying. She wasn’t happy riding anymore and was having to think of excuses why she wasn’t going out. Her passion for riding had been replaced with worry, fear and lack of confidence. She was thinking that she should sell her lovely horse. Golfers worry too. They make a duff shot on a hole, miss the ball completely, or it goes somewhere it shouldn’t, and they feel acutely embarrassed and fed up with

themselves. Next thing they start worrying whether they will do it again and sure enough they do! It can become a self fulfilling prophesy. If it continues then over time they lose their confidence and their enjoyment of the game and consider giving it up. Exam times are a classic worry time. What if I am late, what if I haven’t studied enough, what if I run out of time, what if I don’t pass, what if …. Worry can spiral, it can seem irrational but unstoppable. Worriers know well enough that they shouldn’t be worrying but people telling them to relax just makes it worse. Some give in and say ‘I am a born worrier” So, if this sounds like you, what do you do about it? Well, its no point continuing to worry that’s for sure, or burying your head in the sand. It won’t get better that way. Seek some objective help. Family and friends can try but don’t have the objectiveness, nor the skills. Find an experienced person who can work with you to bring things back into perspective, to help let the tenseness go, and not just a listener either.You want someone who you can talk to confidentially, learn from, and you want value for time and money. Whitwell Steam and Country Fair Mansell’s End Farm, Bury Lane, Codicote

I

n 1995 Nick Hill built a barn at Waterhall Farm,Whitwell, to house his bygone days agricultural machinery.These were all powered by stationary steam engines and mounted on trailers, so that they could be exhibited at local shows. As a result of this it was decided to have a get-together at Waterhall each year, using Nick’s machinery and Nick’s friends would bring along their tractors, stationary engines and sometimes a traction engine. The popularity of the event grew so rapidly that in 1998 a much bigger event was held in a 16

large paddock at Waterhall Farm and became the first “Whitwell Steam and Country Fair”.There was a funfair, including steam driven gallopers, a beer tent, and refreshments, some trade stands, along with traction engines, tractors, stationary engines, cars and commercial vehicles. Although the weather was not brilliant, the event proved a great success.The following year it was felt that the rally needed even more space so a much larger site was made available courtesy of the Bowes Lyon family at St Paul’s Walden, conveniently near the

Strathmore Arms pub. During its nine-year stay at St Paul’s Walden, the rally continued to grow with more exhibitors, entertainment, rides, food stalls, craft tents etc. Because of the agricultural requirements for this site, in 2008 they moved to a new site at Mansells Farm, in Codicote. The rally is held in aid of funds for MacMillan Cancer Support and since 1998 has generated tens of thousands of pounds for the charity. Last year alone they were able to make a donation to MacMillan of £2000. Over the years the number and variety of exhibits has continued to grow and it is now a major event on the National Traction Engine Trust Rally. Every year the number of steam engines being exhibited increases. Last year they had over 100 tractors, numerous stationary engines, classic cars and commercial vehicles.There

is also a large funfair, even more numerous trade and charity and craft stands, food stalls and not forgetting the beer tent. Among the crafts you can see demonstrations of thatching, hurdle making, chainsaw sculpture owl displays and other interesting crafts. The fair is a real day out for the whole family with something of interest for everyone.There is a programme in the main arena which includes a parade of the big steamers, miniature steamers, vintage cars, motor cycles, tractors gun dog demonstrations. There is even a chance after the parade of the large engines to make a donation to MacMillan and have a drive of one! This is a real favourite with the children (and a few parents as well). To run an event of this size

takes a lot of organisation and manpower and this is provided by a committee of local volunteers including the original team who started the event back in 1995. There is also a stalwart team of volunteers from all walks of life, who assist in various roles, during the two days of the rally and in the week leading up to it, which ensure the event will continue to be a success and raise even more, much needed funds for MacMillan. Even though it has moved to Codicote, the event is still

very much a Whitwell affair and despite the geographical change still remains the Whitwell Steam and County Fair. The show has something for everyone.Whether you’re a steam fanatic, an exhibitor, a vintage car enthusiast, a collector or simply want a fun day out then go along and see them.What can be better than knowing you’re contributing to a worthwhile cause while soaking up the atmosphere?

eep an eye on the light, if the sun is in the subjects face, spin them around and try to keep the sun behind them. Watch out for stray shadows casting over your subjects. Also check the background if you’re outside, nothing worse than a stray bin or traffic cone ruining the shot. Don’t be afraid to get mobile and get close to your subjects. There maybe fear in their eyes in the first few shots but this doesn’t last.The beautiful thing with digital is that you can delete the rubbish ones. Get close and fill the frame as much as you can, head and shoulders is all you need for a good portrait. Remember the eyes

are the focus, frame them two thirds up and avoid dead space. Take the camera off the comforting green button auto setting and experiment with the semi-automatic functions. Digital costs nothing to take so be brave, experiment and see what you can achieve. Leaving the camera on auto restricts what you can do artistically. Avoid flash if possible, if unavoidable leave as much distance as you can between you and the subjects, give the flash a chance to bounce and diffuse. Maybe cover the flash with some opaque tape, which can reduce the harshness making the light softer and more diffuse.

Don’t be frightened to move around, it may look rubbish one way, by moving your position only slightly you can get better results. Experiment by changing the height of the shot, getting down low works great for kids and shots taken standing on a chair looking down are also fun. Wareside Wines David and Daphne Briscoe have always had a passion for fine wines and their dream has been to grow and produce their own wine.

I

n 2005 David and Daphne moved to the village of Wareside and the house had a one acre paddock attached which was classified as agricultural. This was the perfect opportunity for them to realise their dream, they found a contact who had planted a vineyard in Broxbourne and he helped prepare and plant their vineyard and advise the best type of grapes to grow suited to the local climate and soil. Together they prepared the field, rabbit proofed it, put the trellis work in and planted vines in April 2006.The first crop was in October 2008 which yielded a tiny amount of 300 kgs producing 200 bottles of wine which was enjoyed by friends and family. In 2009 they produced almost 2 tonnes of grapes and began selling their wines to the local community. Half of the crop was Bacchus (a German white grape variety which is a cross between Riesling, Muller Thurgau and Silvaner varietals).This grape 26

is very suited to the English climate needing a long growing season and as we don’t get a lot of sun, it allows the grapes to mature slowly.The Bacchus grape produces an aromatic light but full flavoured wine which is quite low in alcohol with lots of interesting flavours and is characteristically English in style. I am assured it is equally as good as a light French wine from the Loire valley. The other half of the crop was Pinot Noir, a red grape varietal used to produce full flavoured wines such as Burgundy. The Pinot Noir grape is also one of the major components of champagne; the other being Chardonnay. The buds on the vines burst in late April and over the next 6 to 8 weeks produce foliage and then flower which after pollination then go on to produce grapes. Grapes begin to form and can be clearly seen at the end of July and ripen during August and September, taking about 100 days from pollination

to harvest.The levels of acidity and sugar in the grapes are measured regularly and when they reach the optimum point for flavour and good fermentation they are picked.The harvest usually happens mid October and is when the logistical operation begins. If the ripe grapes are left unpicked for too long, they are irresistible to insects and birds. At this time of year they are also very susceptible to plant diseases caused by moulds and fungus. David and Daphne aim to pick all of the grapes as quickly as possible when ripe and preferably in one day working long hours.There is a very short window from picking to get them over to the winery to ensure to avoid spoiling; the grapes are taken to Maidenhead to a small well equipped specialist winery for crushing and fermentation. The juice is extracted and then the fermentation process begins.The wine becomes available for bottling in December when it is labelled and released for sale in March. The Sparkling wine is different and is made using traditional Methode Champenoise; the Pinot Noir comes in from here in Wareside, the Chardonnay grapes from Surrenden Vineyard in Kent. Both grapes go do Maidenhead and are initially fermented separately.They are then blended together and left in tanks. After the initial bottling, a second cold fermentation takes place in the bottle by adding yeast and a little sugar to the bottle and corking.The bottles are put on lees and they are gently rotated for 2 years.They are then disgorged (a process where bottles are placed upside down forcing the yeast and sediment to fall to the neck of the bottle where it is frozen and pulled out before the bottle is topped up). Now you have a finished bottle and a cork is put in with wire around it.The longer you leave it, the better the flavour will be. This method is time consuming and expensive but produces a wine of great quality. English Sparkling wines produced by this method are winning awards competing against the best that France can produce. The first English Fizz was 2008 vintage and was released in December 2010; it will continue to improve in flavour for at least 5 years. David’s career has been in International 28

Pharmaceutical Sales and he visited South Africa for the first time in 1995. He loved the country and became good friends with a Dr in Johannesburg who also liked wine.They often spoke about owning a vineyard in the Cape and in 2006 after setting up the vineyard in Ware; there was an opportunity to buy another vineyard in Robertson (1.5 hours from Cape Town).They bought 80 acres which already had 30 acres planted with vines.They currently take small amounts of the best grapes to produce special boutique style wines in South Africa and then sell them in the UK.Their “retirement� plan is to spend 6 months in Hertfordshire and 6 months in South Africa managing the vineyards and aiming to produce the best quality small quantity wines . Currently the South African production is two red wines made from Cabernet Franc and Cabernet Sauvignon and a white Sauvignon Blanc all under the Vierkoppen label.
